Abstract
Ruminants play a critical role in our food system by converting plant biomass that humans cannot or choose not to consume into edible high-quality food. However, ruminant excreta is a significant source of nitrous oxide (N2O), a potent greenhouse gas with a long-term global warming potential 298 times that of carbon dioxide. Natural phytochemicals or forages containing phytochemicals have shown the potential to improve the efficiency of nitrogen (N) utilization and decrease N2O emissions from the excreta of ruminants. Dietary inclusion of tannins can shift more of the excreted N to the feces, alter the urinary N composition and consequently reduce N2O emissions from excreta. Essential oils or saponins could inhibit rumen ammonia production and decrease urinary N excretion. In grazed pastures, large amounts of glucosinolates or aucubin can be introduced into pasture soils when animals consume plants rich in these compounds and then excrete them or their metabolites in the urine or feces. If inhibitory compounds are excreted in the urine, they would be directly applied to the urine patch to reduce nitrification and subsequent N2O emissions. The phytochemicals' role in sustainable ruminant production is undeniable, but much uncertainty remains. Inconsistency, transient effects, and adverse effects limit the effectiveness of these phytochemicals for reducing N losses. In this review, we will identify some current phytochemicals found in feed that have the potential to manipulate ruminant N excretion or mitigate N2O production and deliberate the challenges and opportunities associated with using phytochemicals or forages rich in phytochemicals as dietary strategies for reducing N excretion and excreta-derived N2O emissions.

Abstract
The agro-livestock sector produces about one third of global greenhouse gas (GHG) emissions. Since more energy is needed to meet the growing demand for food and the industrial revolution in agriculture, renewable energy sources could improve access to energy resources and energy security, reduce dependence on fossil fuels, and reduce GHG emissions. Hydrogen production is a promising energy technology, but its deployment in the global energy system is lagging. Here, we analyzed the theoretical and practical application of green hydrogen generated by electrolysis of water, powered by renewable energy sources, in the agro-livestock sector. Green hydrogen is at an early stage of development in most applications, and barriers to its large-scale deployment remain. Appropriate policies and financial incentives could make it a profitable technology for the future.

Abstract
BACKGROUND The most used protein sources in ruminant nutrition are considered as having negative impacts in terms of environmental sustainability and competition with human nutrition. Therefore, the investigation of alternative and sustainable feedstuffs is becoming a priority in ruminant production systems. RESULTS This trial was designed to evaluate eight full-fat insect meals (Acheta domesticus - ACD; Alphitobius diaperinus - ALD; Blatta lateralis - BL; Gryllus bimaculatus - GB; Grylloides sygillatus - GS; Hermetia illucens - HI; Musca domestica - MD; and Tenebrio molitor - TM) as potential protein and lipid sources in ruminant nutrition. Fermentation parameters and fatty acids (FA) of rumen digesta after 24-h in vitro ruminal incubation of the tested insect meals were measured and compared with those of three plant-based meals (soybean meal, rapeseed meal and sunflower meal) and fishmeal (FM). Similarly to FM, the insect meals led to a significantly lower total gas production (on average, 1.75 vs. 4.64 mmol/g dry matter-DM), methane production (on average, 0.33 vs. 0.91 mmol/g DM), volatile FA production (on average, 4.12 vs. 7.53 mmol/g DM), and in vitro organic matter disappearance (on average, 0.32 vs. 0.59 g/g) than those observed for the plant meals. The insect meals also led to lower ammonia of rumen fluid, when expressed as a proportion of total N (on average, 0.74 vs. 0.52 for the plant and insect meals, respectively), which could be an advantage provided that intestinal digestibility is high. Differences in ruminal fermentation parameters between the insect meals could be partially explained by their chitin, crude protein and ether extract contents, as well as by their FA profile. In particular, high content of polyunsaturated FA, or C12:0 (in HI), seems to partially inhibit the ruminal fermentations. CONCLUSIONS The tested full-fat insect meals appear to be potentially an interesting protein and lipid source for ruminants, alternative to the less sustainable and commonly used ones of plant origin. The FA profile of the rumen digesta of ACD, ALD, GB, GS and TM, being rich in n-6 polyunsaturated FA, could be interesting to improve the quality of ruminant-derived food products.

Abstract
Simple Summary The mitigation of the environmental impact of animal production is a global objective, and innovation can provide new strategies and technologies to support the transition toward a more sustainable livestock system. Using patent data analysis to identify innovation dynamics, we explored the sector of feed additives to reduce methane emissions in ruminants. We found that this innovation sector is recent and rapidly expanding, with the European Union representing the center of innovation. The most promising inventions are related to the use of beneficial microorganisms (probiotics) and plant-based extracts. Abstract An important challenge for livestock systems is the mitigation of environmental impacts while ensuring food security, and feed additives are considered as one of the most promising mitigation strategies. This study analyzed the innovation landscape of feed additives to reduce methane emissions in ruminants. The analysis is based on patent data to evaluate the development, scientific importance, and market-level impact of the innovations in this field. The results reveal that the EU is on the innovation frontier, with substantial and quality patent production. The innovation field is dominated by private players, characterized by high specificity in the R&D pipeline. Additives derived from plant or botanical extracts, together with 3-nitrooxypropanol (3-NOP), represent the emerging innovations, indicating a clear orientation toward more sustainable livestock systems. Despite the regulatory and semantic limitations related to the use of patent databases, data reveal a growing innovation activity at global level, which could lead to macroeconomic benefits for the entire livestock sector.

Abstract
Simple Summary Comparison of bacterial diversity and composition of feces from cows and goats offered the same pasture-based diet revealed that the animal species had no effect on bacterial species richness and diversity, but significantly affected species evenness. Both diet and host species influence the gut microbiome. Abstract The aim of this study was to compare the diversity and composition of fecal bacteria in goats and cows offered the same diet and to evaluate the influence of animal species on the gut microbiome. A total of 17 female goats (Blond Adamellan) and 16 female cows (Brown Swiss) kept on an organic farm were fed pasture and hay. Bacterial structure in feces was examined by high-throughput sequencing using the V4–V5 region of the 16S rRNA gene. The Alpha diversity measurements of the bacterial community showed no statistical differences in species richness and diversity between the two groups of ruminants. However, the Pielou evenness index revealed a significant difference and showed higher species evenness in cows compared to goats. Beta diversity measurements showed statistical dissimilarities and significant clustering of bacterial composition between goats and cows. Firmicutes were the dominant phylum in both goats and cows, followed by Bacteroidetes, Proteobacteria, and Spirochaetes. Linear discriminant analysis with effect size (LEfSe) showed a total of 36 significantly different taxa between goats and cows. Notably, the relative abundance of Ruminococcaceae UCG-005, Christensenellaceae R-7 group, Ruminococcaceae UCG-010, Ruminococcaceae UCG-009, Ruminococcaceae UCG-013, Ruminococcaceae UCG-014, Ruminococcus 1, Ruminococcaceae UCG-002, Lachnospiraceae NK4A136 group, Treponema 2, Lachnospiraceae AC2044 group, and Bacillus was higher in goats compared to cows. In contrast, the relative abundance of Turicibacter, Solibacillus, Alloprevotella, Prevotellaceae UCG-001, Negativibacillus, Lachnospiraceae UCG-006, and Eubacterium hallii group was higher in cows compared with goats. Our results suggest that diet shapes the bacterial community in feces, but the host species has a significant impact on community structure, as reflected primarily in the relative abundance of certain taxa.

Abstract
Egypt already has conditions in summer that cause heat stress for livestock, and predicted climate changes suggest that these will be exacerbated over the course of this century. As well, extreme climatic events make the mitigation of climate change difficult but important to understand. Apart from neonates, farm animals have upper critical temperatures in the region of 25–30 °C, whereas temperatures in summer regularly exceed 40 °C for prolonged periods. The temperature and humidity data were collected half hourly to calculate Temperature Humidity Indices and demonstrate that Egyptian livestock at two centers of livestock production in the country would experience heat stress in summer for extended periods of each day. The impact of rising temperatures on livestock in Egypt was reviewed, where extensive resources to mitigate the impact are not often available. It was found that, although there are some prospects to mitigate some heat stress, by using agroforestry systems of production for example, these are unlikely to have a major impact, and reduced food security may ensue over the course of this century.

Abstract
Simple Summary The primary goal of global poultry production is to optimize the amount of chicken produced per square meter of floor area. Consequently, stocking density (SD) and curcumin supplementation on broiler performance were investigated. Our results revealed that supplemental curcumin improved birds’ growth, behaviours, and immunity by lowering oxidative stress, enhancing humoral immune response, and modulating the suppression of growth-related gene expressions in broilers raised in high stocking density circumstances. Abstract Curcumin’s antioxidant properties reduce free radicals and may improve broiler growth. Therefore, the influence of stocking density (SD) and administration of curcumin in the diet on broiler performance was explored to clarify the impact of HSD and curcumin on the performance of growth, behavioural patterns, haematological, oxidant/antioxidant parameters, immunity markers, and the growth-related genes expression in broiler chickens. A total of 200 broiler chickens (Cobb 500, 2-weeks old) were allotted into 4 groups; SD (moderate and high) and curcumin (100 and 200 mg/kg diet)-supplemented HSD, respectively. Behavioural observations were performed. After a 28-day experimental period, tissue and blood samples were collected for analysis. Expressions of mRNA for insulin-like growth factor-1 (IGF-1), growth hormone receptor (GHR), myostatin (MSTN), and leptin in liver tissues were examined. HSD birds exhibited lower growth performance measurements, haematological parameters, circulating 3,5,3-triiodothyronine and thyroxine levels, antioxidant activities (GSH-Px, catalase, superoxide dismutase), immunoglobulins (A, G, M), and hepatic GHR and IGF-1 expression values. However, HSD birds even had an increment of serum corticosterone, malondialdehyde, pro-inflammatory cytokine (TNF-a, IL-2, IL-6) levels, hepatic leptin and MSTN expression. Moreover, HSD decreased drinking, feeding, crouching, body care, and increased standing and walking behaviour. The addition of curcumin, particularly at a 200 mg/kg diet, alleviated the effect of HSD through amending growth-related gene expression in the chickens. In conclusion, curcumin can enhance birds’ growth performance, behavioural patterns, and immunity by reducing oxidative stress and up-regulating the growth-related gene expressions of broilers under stressful conditions due to a high stocking density.

Abstract
Globally, ruminant production contributes immensely to the supply of the highest quality and quantity of proteins for human consumption, sustenance of livelihoods, and attainment of food security. Nevertheless, the phasing out of antibiotics in animal production has posed a myriad of challenges, including poor growth, performance and nutrient utilization, pathogen colonization, dysbiosis, and food safety issues in ruminants. Probiotics (direct-fed microbials), comprising live microbial strains that confer health and nutritional benefits to the host when administered in appropriate quantities, are emerging as a viable, safe, natural and sustainable alternative to antibiotics. Although the mechanisms of action exerted by probiotics on ruminants are not well elucidated, dietary probiotic dosage to ruminants enhances development and maturation, growth and performance, milk production and composition, nutrient digestibility, feed efficiency, pathogen reduction, and mitigation of gastrointestinal diseases. However, the beneficial response to probiotic supplementation in ruminants is not consistent, being dependent on the microbial strain selected, combination of strains, dose, time and frequency of supplementation, diet, animal breed, physiological stage, husbandry practice, and farm management. Nonetheless, several studies have recently reported beneficial effects of probiotics on ruminant performance, health and production. This review conclusively re-iterates the need for probiotics inclusion for the sustainability of ruminant production. Considering the role that ruminants play in food production and employment, global acceptance of sustainable ruminant production through supplementation with probiotics will undoubtedly ensure food security and food safety for the world. © 2021 Society of Chemical Industry.

Abstract
A sustainable ruminant production system ensures economically viable livestock systems that meet the current and future demands of animal products as well as the environmental safety of current and future generations. The study analyzed the determinants of ruminant farmers' use of sustainable production practices for climate change adaptation and mitigation in Enugu State, Nigeria. Multistage sampling procedure was used to select ninety six (96) ruminant farmers that constituted the sample for the study. Semi-structured interview schedule with open ended questions was used in data collection. Data were analyzed using multiple regression and Pearson Moment Correlation statistics. Access to veterinary services (t = 2.056, p = 0.044), monthly household income (t = 3.582, p = 0.001) and annual income from ruminant production (t = −2.635, p = 0.011) were socio-economic factors that significantly influenced use of sustainable practices. The adjusted R- square implies that the three factors were able to explain 24% of variance in use of sustainable practices. There is a significant positive correlation (r = 0.426, p = 0.000) between knowledge level of farmers and their use of sustainable production practices. Schemes for financial inclusion such as payment for ecosystem services can spur farmers to adopt mitigation strategies. Improved climate change knowledge can enhance ruminant farmer's resilience to the increasing impacts of climate change.

Abstract
The global consumption, notably in developing countries, and production of beef are increasing continuously, and this requires the industry to improve performance and to reduce the environmental impact of the production chain. Since the improvement in efficiency and the highest impacts occur at farm level, it is appropriate to focus on the profitability and environmental sustainability of these enterprises. In many areas of the world, beef production is economically and socially relevant because it accounts for a significant portion of the agricultural production and represents a vital economic activity in mountain and hill districts of many regions, where few alternatives for other agricultural production exist. Due to the important role in the agricultural and food economy worldwide, the future of the beef industry is linked to the reduction of ecological impacts, mainly adopting the agroecological mitigation practices, and the simultaneous improvement of production performances and of product quality. This review analyses the technical and managerial solutions currently available to increase the efficiency of the beef industry and, at the same time, to reduce its environmental impacts in response to the growing concerns and awareness of citizens and consumers.

Abstract
Fungal protease FPII was found to hydrolyse sheep β-lactoglobulin (β-Lg), and the hydrolysate exhibited substantial antioxidant and ACE inhibition bioactivities. From analysis of the peptide sequences in the hydrolysate in relation to bioactivity, synthetic peptides corresponding to four regions of sequence in β-Lg (LAFNPTQLEGQCHV, DTDYKKYLLF, LDAQSAPLRVY and VEELKPTPE) were analysed for bioactivity. Additional synthetic peptides were designed to examine the bioactivity of different parts of the above four sequences, and the effect of amino acid substitutions on bioactivity. The results show that parts of the peptide sequences contribute differently to bioactivity and substitution of amino acids has a substantial effect on antioxidant and ACE inhibition activities.

Abstract
Simple Summary Animal breeding must be seen within sustainability that includes human health and the health of the planet (ecology), without neglecting the economic and ethical aspects. The relationship with human health is dual, since in the absence of food of animal origin there is malnutrition, but excesses increase non-communicable diseases. However, animal farming is considered a cause of serious environmental impact, as well as a cause of suffering for animals (ethics). Therefore, it is proposed to modify the diet in relation to foods of animal origin, properly reducing them in rich countries, but increasing them in poor ones. To reduce the environmental impact of the animals, they must be reduced in number, but the quantities of food needed imply an increase in productivity and efficiency. Their good health is fundamental for these last objectives: to fight infectious and parasitic diseases, but also to ensure optimal feeding and living conditions to guarantee their welfare. Abstract In order to discuss the concepts of animal health and sustainability, we must remind ourselves that ASF (animal source foods) can play a large role in human health, but that animals are assumed to have a negative role in the environment. Indeed, ASF can compromise human health, both in excess and in deficiency, so a proper amount of them is important. In addition, the environmental impact of farmed animals: land occupation, greenhouse gas (GHG) emissions, energy use and water utilization, acidification and eutrophication, must be minimized by reducing ASF consumption, as well as by increasing productivity. To achieve this, besides genetics, feeding and good management, the hygienic-sanitary and comfort conditions that ensure good health and welfare are essential. Impaired animal health can cause zoonosis and food-borne diseases and be responsible for economic and socio-economic losses (lower production-productivity and profitability) with consequential effects on the planet’s health too, and there are big differences between developing and developed countries. In the former, a prevalence of endemic infectious diseases and parasites is observed, and there is a lack of tools to restrain them; in the latter there is a decline of the above diseases, but an increase of stress-related diseases. Their reduction is equally important but requires a different strategy. In developing countries, the strategy should be to facilitate the availability of prevention and treatment means, while in developed countries it is necessary to use drugs correctly (to reduce residues, especially antimicrobials which are associated with important resistance risks to antibiotics) and improve the living conditions of animals (welfare).

Abstract
Hazelnut peel (HNP), a by-product from the chocolate industry, is considered to be a suitable ingredient to be included in the diet of ruminants. This study aimed to evaluate the effect of feeding dairy ewes with a diet containing HNP on ripened cheese quality, including fatty acid (FA) profile, cholesterol, and tocopherol content, as well as stability during storage under commercial conditions. In total, 10 experimental cheeses were produced with bulk milk obtained from ewes fed a commercial concentrate (C group; n = 5) or a concentrate containing 36% HNP in dry matter (HNP group; n = 5). After 40 days of aging, each cheese was sub-sampled into three slices: one was analyzed immediately (C0 and HNP0), and the other two were refrigerated and analyzed after seven days (C7 and HNP7) and 14 days (C14 and HNP14), respectively. Compared to C, HNP cheese had more than twice as many tocopherols and mono-unsaturated FA and respectively 38% and 24% less of cholesterol and saturated FA. Tocopherols and cholesterol levels remained rather stable up to 14 days of storage regardless of the experimental group, suggesting no cholesterol oxidation. Therefore, the inclusion of HNP in ewe diets could be a valid resource to produce cheese with a healthier lipid profile and higher tocopherols content.

Abstract
The study was designed to investigate the effects of cryopreservation on bovine, ovine, and goat sperm motility, acrosome structure, enzyme activity, and fertilization ability. Percentage of sperm with hyaluronidase enzyme (HYD) activity was detected by a modified sodium hyaluronate-gelatin membrane. The N-α-benzoyl-DL-arginine-p-nitroanilide (BNPNA) method was used to assess the sperm acrosome enzyme (ACE). The mean percentage of sperm acrosome integrity dropped significantly (P < 0.01) after cryopreservation. The ACE activity of bovine sperm (100.48) was higher (P < 0.01) than that of ovine (57.88) or goat sperm (50.30), while the percentage of sperm with HYD activity of bovine (71.10%) and ovine (67.60%) sperm was higher than that of goat sperm (58.52%) after cryopreservation (P < 0.01). Sperm motility was positively correlated with the activity of the two acrosome enzymes before and after cryopreservation (P < 0.01). Cryopreservation had a negative effect on acrosomal morphology, motility, and acrosomal enzyme activity in their sperm. The fertilization ability of ovine and goat sperm decreased significantly after cryopreservation, but that of frozen bovine sperm did not differ significantly when compared with fresh sperm. There was no significant difference between ovine and goat sperm indices, except for percentage of sperm with HYD activity.

Abstract
Simple Summary Animal welfare is a very important issue. One of the tasks of researchers is to provide explanations and possible solutions to questions arising from non-experts. This work analyzes part of the extensive literature on relationships between selection and domestic, mainly farm, animals’ behavior and deals with some very important themes, such as the role of regulations, domestication, and selection. Abstract The concept of welfare applied to farm animals has undergone a remarkable evolution. The growing awareness of citizens pushes farmers to guarantee the highest possible level of welfare to their animals. New perspectives could be opened for animal welfare reasoning around the concept of domestic, especially farm, animals as partial human artifacts. Therefore, it is important to understand how much a particular behavior of a farm animal is far from the natural one of its ancestors. This paper is a contribution to better understand the role of genetics of the farm animals on their behavior. This means that the naïve approach to animal welfare regarding returning animals to their natural state should be challenged and that welfare assessment should be considered.

Abstract
Reproductive performance is a key determinant for the efficiency of goat production. Regular monitoring of reproductive efficiency is essential to assess management and to avoid financial losses due to poor performance. To allow more objective measurement and comparisons over time, we propose a novel quantitative approach for defining annual reproductive performance by combining common performance indicators into a goat flock index. Commonly used reproductive performance measures were collected from 242 goat flocks in four districts in dryland of Ethiopia between July 2018 and February 2019. Principal component analysis (PCA) was performed to identify biologically meaningful latent components that explain annual reproductive output (ARO) and annual reproductive wastage (ARW). Together with the remaining annual reproductive performance measures, the ARO and ARW components were included in a PCA to derive an algorithm for a goat annual reproductive performance index (G-ARPI). One component representing variation in kidding interval, PCARO1 and PCARW1 was extracted and normalized to a 10-scale value. The flocks were classified into good performing (15.63%) with index > 8.5, moderately performing (48.21%) with index values ranging from 6.5 to 8.5 and poor performing (36.16%) with index < 6.5. Good performing flocks have higher scores for reproductive output measures, lower scores for reproductive wastage and lower kidding interval. The proposed G-ARPI can be used as an objective tool to compare reproductive performance between management systems, evaluate the costs of poor reproductive management and will be useful for economic models that aim to identify the most cost-efficient intervention option and monitor the impact of interventions. We present here the index for goat production in dryland systems in Ethiopia; the approach can easily be adapted to other production systems elsewhere.

Abstract
This study hypothesizes that melatonin with exogenous progesterone (CIDR) can improve follicular, luteal, ovarian and uterine haemodynamic of heat-stressed cows. Holstein cows (N = 12) studied for two spontaneous oestrous cycles during winter then divided equally during summer into the CIDR group received CIDR for 7 days and the melatonin group (Mel) received three injections of melatonin (75 mg/head) at the CIDR insertion, removal and ovulation days. Blood samples were collected to assay oestradiol (E2), progesterone (P4) and nitric oxide (NO). On day 0 (Ovulation), Mel had more small follicles (p < .05), higher ipsilateral and contralateral ovarian arteries (Ov.A.) peak systolic velocity (PSV), higher ipsilateral uterine artery (Ut.A.) PSV (p = .031) and blood flow volume (BFV), also Mel elevated contralateral Ut.A. PSV and BFV (p < .0001) but lowered contra Ut.A. pulsatility index (PI, p < .0001), E2 (p < .01) and NO (p < .0001). Mel increased the corpus luteum diameter (CL, p < .001), coloured area (p < .007) and P4 (p < .0001) on day 5 and reduced them (p < .05; p < .01) on Day 14. On day 10, Mel obtained CL diameter (p < .03) and coloured area (p < .002) of spontaneous that was higher than CIDR and decreased P4 (p < .003). Mel increased CL diameter, area and coloured area and decreased them thereafter. Mel increased the ipsilateral ovarian and uterine arteries PSV and BFV before ovulation and until day 8. Mel increased P4 and decreased NO until days 6 and 14. In conclusion, the improvement in follicular, luteal, ovarian and uterine haemodynamic and the decrease of NO production proved our hypothesis Melatonin doses higher than 75 mg/head is recommended to improve the heat-stressed cow's fertility.

Abstract
New approaches are needed to improve the sustainability of feed production and utilization by ruminants. Promising approaches include increased use of buffaloes for more sustainable milk production, and arbuscular mycorrhizal fungi (AMF) to reduce crop production input needs. However, studies assessing the effect of crops grown in the presence of AMF on rumen microbial utilization are limited. Based on current knowledge, we hypothesized that maize grain grown on AMF-inoculated soil affected ruminal fermentation and microbiota, and that this effect differed between buffalo and cattle. A dietary cross-over study (four weeks per diet) was conducted using rumen-cannulated cattle (n = 5) and buffalo (n = 6) to assess the effect of maize grain (3.9% (w/v) of diet) grown on soil with or without AMF (15 kg/ha) on ruminal fermentation and microbiota. Production of maize on AMF-treated soil did not affect any of the assessed ruminal fermentation parameters, microbial concentrations, or prokaryotic community composition (using prokaryotic 16S rRNA gene sequence analysis). In contrast, host type had numerous effects. Protozoal counts, lactate, total VFA and isobutyrate, were significantly higher in buffaloes compared to cattle. Conversely, butyrate was significantly lower in buffaloes than in cattle. Host type explained 9.3% of the total variation in prokaryotic community composition, and relative abundance of nine amplicon sequence variants significantly differed between host types. These findings indicate that AMF treatment of maize crops has no detrimental impact on the value of the resulting maize grains as a ruminant feed, and provides additional insight into rumen-based differences between cattle and buffalo.

Abstract
The rumen harbors a complex microbial mixture of archaea, bacteria, protozoa, and fungi that efficiently breakdown plant biomass and its complex dietary carbohydrates into soluble sugars that can be fermented and subsequently converted into metabolites and nutrients utilized by the host animal. While rumen bacterial populations have been well documented, only a fraction of the rumen eukarya are taxonomically and functionally characterized, despite the recognition that they contribute to the cellulolytic phenotype of the rumen microbiota. To investigate how anaerobic fungi actively engage in digestion of recalcitrant fiber that is resistant to degradation, we resolved genome-centric metaproteome and metatranscriptome datasets generated from switchgrass samples incubated for 48 h in nylon bags within the rumen of cannulated dairy cows. Across a gene catalog covering anaerobic rumen bacteria, fungi and viruses, a significant portion of the detected proteins originated from fungal populations. Intriguingly, the carbohydrate-active enzyme (CAZyme) profile suggested a domain-specific functional specialization, with bacterial populations primarily engaged in the degradation of hemicelluloses, whereas fungi were inferred to target recalcitrant cellulose structures via the detection of a number of endo- and exo-acting enzymes belonging to the glycoside hydrolase (GH) family 5, 6, 8, and 48. Notably, members of the GH48 family were amongst the highest abundant CAZymes and detected representatives from this family also included dockerin domains that are associated with fungal cellulosomes. A eukaryote-selected metatranscriptome further reinforced the contribution of uncultured fungi in the ruminal degradation of recalcitrant fibers. These findings elucidate the intricate networks of in situ recalcitrant fiber deconstruction, and importantly, suggest that the anaerobic rumen fungi contribute a specific set of CAZymes that complement the enzyme repertoire provided by the specialized plant cell wall degrading rumen bacteria.

Abstract
Milk fatty acid (FA) profile is a clear example of complex and multiple correlated traits whose genetic basis is difficult to assess. Although genome-wide association (GWA) studies have been successful in the identification of significant genetic variants for complex traits, when correlated phenotypes are analysed separately, the outcomes are difficult to compare and interpret in a metabolic context. Here, we performed a multivariate factor analysis (MFA) on Italian Simmental and Italian Holstein milk fat profiles to extract latent unobserved factors able to explain correlation structure and common metabolic function among different FAs. Individual factor scores obtained by MFA were used to perform a single-SNP based GWA. In both breeds, MFA was able to extract ten latent factors with specific biological meaning, notably: de novo synthesis, desaturation activity and biohydrogenation. The GWA result confirmed the increased power of joint association analysis on multiple correlated traits and allowed us to identify major candidate genes with well-documented function consistent with the metabolic classification of factors obtained, such as DGAT1, FASN and SCD.

Abstract
Sperm cryopreservation represents a powerful tool for livestock breeding. Several efforts have been made to improve the efficiency of sperm cryopreservation in different ruminant species. However, a significant amount of sperm still suffers considerable cryodamage, which may affect sperm quality and fertility. Recently, the use of different “omics” technologies in sperm cryobiology, especially proteomics studies, has led to a better understanding of the molecular modifications induced by sperm cryopreservation, facilitating the identification of different freezability biomarkers and certain proteins that can be added before cryopreservation to enhance sperm cryosurvival. This review provides an updated overview of the molecular mechanisms involved in sperm cryodamage, which are in part responsible for the structural, functional and fertility changes observed in frozen–thawed ruminant sperm. Moreover, the molecular basis of those factors that can affect the sperm freezing resilience of different ruminant species is also discussed as well as the molecular aspects of those novel strategies that have been developed to reduce sperm cryodamage, including new cryoprotectants, antioxidants, proteins, nanoparticles and vitrification.

Abstract
The identification of genomic regions and candidate genes associated with milk fatty acids contributes to better understand the underlying biology of these traits and enables breeders to modify milk fat composition through genetic selection. The main objectives of this study were: (1) to perform genome-wide association analyses for five groups of milk fatty acids in Holstein cattle using a high-density (777K) SNP panel; and (2) to compare the results of GWAS accounting (or not) for the DGAT1 gene effect as a covariate in the statistical model. The five groups of milk fatty acids analyzed were: (1) saturated (SFA); (2) unsaturated (UFA); (3) short-chain (SCFA); (4) medium-chain (MCFA); and (5) long-chain (LCFA) fatty acids. When DGAT1 was not fitted as a covariate in the model, significant SNPs and candidate genes were identified on BTA5, BTA6, BTA14, BTA16, and BTA19. When fitting the DGAT1 gene in the model, only the MGST1 and PLBD1 genes were identified. Thus, this study suggests that the DGAT1 gene accounts for most of the variability in milk fatty acid composition and the PLBD1 and MGST1 genes are important additional candidate genes in Holstein cattle.

Abstract
Simple Summary Considered that all sheep milk in Italy is destined for cheese processing, traits describing rennet coagulation aptitude should be among the most important selection goals for dairy breeds. To reduce the costs and logistics related to the large-scale recording of these traits, mid-infrared (MIR) spectroscopy could be conveniently used to generate reliable predictions without any additional cost. The aims of this research were to predict the milk coagulation properties (MCP) and individual cheese yield (ILCY) in sheep by MIR spectrometry using partial least squares regression (PLS), and to compare different data pre-treatment procedures. The prediction results observed in the present study, although moderate, suggest the possibility of adding novel phenotypes (e.g., MCP and ILCY) in breeding schemes for dairy sheep breeds. Mid-infrared spectroscopy coupled with PLS regression could allow the prediction of phenotypes at the population level without additional costs. Abstract The objectives of this study were (i) the prediction of sheep milk coagulation properties (MCP) and individual laboratory cheese yield (ILCY) from mid-infrared (MIR) spectra by using partial least squares (PLS) regression, and (ii) the comparison of different data pre-treatments on prediction accuracy. Individual milk samples of 970 Sarda breed ewes were analyzed for rennet coagulation time (RCT), curd-firming time (k20), and curd firmness (a30) using the Formagraph instrument; ILCY was measured by micro-manufacturing assays. An Furier-transform Infrared (FTIR) milk-analyzer was used for the estimation of the milk gross composition and the recording of MIR spectrum. The dataset (n = 859, after the exclusion of 111 noncoagulating samples) was divided into two sub-datasets: the data of 700 ewes were used to estimate prediction model parameters, and the data of 159 ewes were used to validate the model. Four prediction scenarios were compared in the validation, differing for the use of whole or reduced MIR spectrum and the use of raw or corrected data (locally weighted scatterplot smoothing). PLS prediction statistics were moderate. The use of the reduced MIR spectrum yielded the best results for the considered traits, whereas the data correction improved the prediction ability only when the whole MIR spectrum was used. In conclusion, PLS achieves good accuracy of prediction, in particular for ILCY and RCT, and it may enable increasing the number of traits to be included in breeding programs for dairy sheep without additional costs and logistics.

Abstract
The addition of polyphenol extracts in ruminant diets is an effective strategy to modulate rumen microflora. The aim of this in vitro trial was to study the effects of chestnut tannin extract (CHT), vescalagin (VES) and gallic acid (GAL) on dietary fibre degradability and on the dimethyl acetals (DMA) profile and microbial community composition of rumen liquor. Four diets (basal diet; basal diet plus CHT; basal diet plus VES; basal diet plus GAL) were fermented for 24 h using ewe rumen liquor. At the end of the fermentation, the microbial communities were characterized by sequencing the 16S rRNA gene. The DMA profile was analyzed by gas chromatography. Chestnut tannin extract did not affect fibre degradability, whereas VES and GAL showed a detrimental effect. The presence of CHT, VES and GAL influenced the concentration of several DMA (i.e., 12:0, 13:0, 14:0, 15:0, 18:0 and 18:1 trans-11), whereas the composition of the microbial community was marginally affected. The inclusion of CHT led to the enrichment of the genera Anaerovibrio, Bibersteinia, Escherichia/Shigella, Pseudobutyrivibrio and Streptococcus. The results of this study support the hypothesis that the activity of CHT is due to the synergistic effect of all components rather than the property of a single component.

Abstract
Citrus and grapes are the most widely grown fruits globally, with one-third of total production used for juice and wine making. The juice and winemaking processes generate large quantities of solid organic wastes including citrus pulp and grape pomace. These fruit wastes pose serious economic, environmental, and social challenges, especially in low-to-middle-income countries due to financial, technological, and infrastructural limitations. They are, however, rich in valuable compounds which can be utilized in the ruminant livestock industry as novel, economical, and natural sources of cellulose, polyunsaturated fatty acids, and phytochemicals, which have nutritional, anthelmintic, antioxidant, and antimicrobial properties. Despite citrus and grape fruit wastes having such potential, they remain underexploited by the livestock industry in low-to-middle-income countries owing to lack of finance, skills, technology, and infrastructure. Inclusion of these fruit wastes in ruminant diets could combine the desirable effects of enhancing animal nutrition, health, welfare, production, and meat quality attributes with the prevention of challenges associated with their disposal into the environment. The current review explores the valorization potential of citrus and winery wastes as dietary supplements to sustainably enhance ruminant animal nutrition, health, welfare, production, and meat quality.
