Abstract
BACKGROUND A prebiotic is defined as an indigestible feed substance that beneficially affects the host by selectively stimulating the growth and/or activity of one or a limited number of bacteria in the large intestine, thereby improving host health and products. OBJECTIVES This study was conducted to determine the effects of supplementing prebiotic fructooligosaccharide (FOS) to the diets of Hy-Line W-36 laying hens. METHODS A total of 168 Hy-Line W-36 laying hens were allocated to four dietary levels of FOS (0, 1.0, 2.0, 3.0 g/kg diet), 6 replicates of 7 birds each during 63-74. The experiment was performed using a completely randomized design. RESULTS Productive performance was not significantly affected by the FOS supplementation. Body weight gain was linearly decreased with increasing FOS levels in the diet (p < 0.01). However, eggshell strength, shell thickness and Ca and p percentages were not significantly affected, as were anti-sheep red blood cell titres, blood parameters and blood metabolites. In the first period of the experiment (63-65 weeks), shape index and Haugh unit at the dose of 3.0 g/kg FOS were significantly increased and decreased in comparison with control, respectively (p < 0.05). In the third and fourth periods (69-71 and 72-74 weeks of age), the FOS had no significant effect on the internal egg quality traits. Furthermore, FOS had a linear decrease in the most saturated fatty acids (SFAs), including myristic, palmitic, margaric and stearic fatty acids; some of the mono-un-SFA (MUFA; palmitoleic and ginkgolic acids), and poly-unsaturated fatty acids (γ-linolenic and eicosatrienoic). CONCLUSIONS Supplementing different levels of FOS to the diet of commercial laying hens had no significant effect on the layers' performance, immune response and blood parameters, whereas there was a significant effect on some of the internal egg quality traits and egg yolk fatty acid contents.

Abstract
The purpose of this study was to evaluate how cannabis-derived nonindustrial hemp seed (HS) inclusion in laying hen diets, as well as treatment duration, affected the fatty acid (FA) profile, cholesterol level, and tocopherol composition of egg yolks. Ninety-six (n = 96) Lohmann Brown classic laying hens were randomly assigned to one of the four groups: control (standard diet) and HS-containing diets (10% HS, 20% HS, and 30% HS). The study was conducted for a period of 4 months. The findings demonstrated that the FA profile and the tocopherol composition are strongly impacted by the addition of HS to the diet of laying hens (p < 0.05), but the cholesterol content remained unaffected. The increase in the dose of cannabis incorporated into the hen's diet (HS-30% group) led to a significant increase in the amounts of the polyunsaturated fatty acids n-3 and n-6 content of egg yolk. This enrichment was accompanied by a considerable decrease in the n-6/n-3 ratio (p < 0.001) from 8.19 to 4.88, on day 84 of the experiment. The total tocopherol content significantly increased (p < 0.05) from 281.44 (control) to 327.02 μg/g yolk (HS-30%) on day 84. Finally, in the context of warfare, these seeds might be used as a feed additive for laying hens to produce higher nutritive value eggs with affordable prices.

Abstract
Since the early 1950s, antibiotics have been used in poultry for improving
feed efficiency and growth performance. Nevertheless, various side effects have
appeared, such as antibiotic resistance, antibiotic residues in eggs and meat, and
imbalance of beneficial intestinal bacteria. Consequently, it is essential to find other
alternatives that include probiotics that improve poultry production. Probiotics are live
microorganisms administered in adequate doses and improve host health. Probiotics are
available to be used as feed additives, increasing the availability of the nutrients for
enhanced growth by digesting the feed properly. Immunity and meat and egg quality
can be improved by supplementation of probiotics in poultry feed. Furthermore, the
major reason for using probiotics as feed additives is that they can compete with
various infectious diseases causing pathogens in poultry's gastrointestinal tract. Hence,
this chapter focuses on the types and mechanisms of action of probiotics and their
benefits, by feed supplementation, for poultry health and production.

Abstract
Simple Summary This study aimed to investigate the impact of three dietary balanced protein levels on laying hens, during the rearing and laying phases. The performance and body composition were monitored at 7, 11, 15, and 18 weeks old, while for the laying phase the responses were monitored every 28 days, from 19–102 weeks of age. The dietary protein applied in this study did not affect the responses evaluated in the rearing phase, but it clearly affected the long-term egg production. Overall, the egg production of hens consuming a high protein diet was superior compared to hens in the lower protein group and similar results were observed for body weight and body composition. The benefits of this study were to demonstrate the dynamic traits of laying hens in the long-term egg production cycle in three dietary balanced protein scenarios as similar data could not be found elsewhere. Abstract The objective of this study was to evaluate laying hens from 8 to 102 weeks old, regarding their changes in performance, body composition, and egg components produced in three scenarios of nutrition. Three treatments designed to contain different levels of balanced protein (BP) were randomly assigned to the experimental units, performing ten replicates per treatment with 20 birds each. A standard feed was formulated to meet hen requirements and the ideal ratio between essential amino acids. Then, two experimental feeds were formulated to contain 20% above or below the dietary BP used in the standard feed. The responses evaluated were cumulated feed intake (g), daily feed intake (g/day), body weight (g), body composition (g of protein, fat, and ash), hen-housed egg production (%/hen-housed), egg production (%), egg weight (g), egg mass (g), and egg components (percentages of yolk, albumen, and eggshell). The dietary BP influenced the body composition, egg production, egg weight, and egg mass of white laying hens. The increase in dietary BP was related to an increase in body contents and egg weight, whereas hens consuming the low dietary balanced protein presented a lower body weight, leaner, and produced smaller eggs.

Abstract
Background and Aim: Duck eggs have high cholesterol levels; inulin addition combined with probiotic is known in several studies to lower cholesterol, while maintaining egg production capacity and blood hematology. This study aimed to investigate the effect of the addition of synbiotic preparations on egg production, egg quality, and hematology of Pengging ducks.
Materials and Methods: A total of 200 female Pengging ducks aged 75 weeks (late production phase) and weighing 1467±90.87 g were maintained in litter cages, each measuring 1×1 ducks. The treatment included the addition of synbiotics between the inulin of gembili tuber (Dioscorea esculenta L. and Lactobacillus plantarum Ina CC B76) as follows: T0=control feed ("farmer feed"), T1=control feed+synbiotics 1 mL/100 g, T2=control feed+synbiotics 1.5 mL/g, and T3=control feed+synbiotics 2 mL/100 g in the feed. A completely randomized design was used in this study. The production performance, physical and chemical qualities of eggs, and hematological parameters of Pengging ducks were evaluated.
Results: The addition of synbiotics had no significant impact on the production performance, physical and chemical qualities of eggs, and hematological parameters (p>0.05), except for the egg yolk cholesterol content. The cholesterol content decreased significantly (p<0.05) with T2 and T3 treatments, but they had no significant effect (p>0.05). A significant decrease (p<0.01) in cholesterol levels was observed when the synbiotic dose was given at 1.5 ml/100 g feed (T2). However, there was no further decrease in cholesterol level when the synbiotic dose was increased to 2 ml/100g fed (T3).
Conclusion: The addition of synbiotics preparations at 1.5 mL/100 g reduced the cholesterol content but did not improve egg production, egg physical quality, and hematology of Pengging ducks.

Age of Laying Hens Significantly Influences the Content of Nutritionally Vital Lipophilic Compounds in Eggs. Foods 2020; 10:foods10010022. Abstract
This study aimed to comparatively analyze the carotenoids, tocopherols, fatty acids, and sterols (e.g., cholesterol) in the eggs of laying hens of early (24 weeks), intermediate (42 weeks), and late age (74 weeks), utilizing high-performance liquid chromatography (HPLC), gas chromatography (GC), and GC–mass spectrometry (MS). The results revealed the significantly (p < 0.05) highest content of nutritionally vital compounds (per g of egg yolk, fresh weight), which included (all-E-)-lutein (21.8 µg), (all-E-)-zeaxanthin (13.4 µg), α-tocopherol (76.5 µg), oleic acid (C18:1n9c; 83.3 mg), α-linolenic acid (C18:3n3; 0.68 mg), γ-linolenic acid (C18:3n6; 0.47 mg), arachidonic acid (C20:4n6; 8.11 mg), docosahexaenoic acid (DHA; C22:6n3; 2.06 mg), and total monounsaturated fatty acids (MUFAs; 94.7 mg) and n-3 polyunsaturated fatty acids (PUFAs; 2.74 mg) in the eggs of early-age laying hens compared to intermediate and late-age. Surprisingly, cholesterol was not significantly different in the eggs obtained from the different age groups. In contrast, the fat quality indices, including the lowest atherogenic index (AI) and thrombogenic index (TI) values and high hypocholesterolemic/hypercholesterolemic (h/H) fatty acid ratio, indicated the health-beneficial potential associated with fat intake from the eggs of intermediate and late-age laying hens. Overall, the results of the present investigation suggest that eggs from early-age laying hens can be recommended for a higher intake of antioxidant carotenoids and tocopherols, while the eggs from intermediate and late-age hens can be recommended for the intake of good quality fats.

Abstract
The aim of the current study was to evaluate egg production, quality, and apparent retention (AR) of components in response to a multi-dose application of a single strain Bacillus subtilis (SSB; DSM29784) in a corn-soybean meal basal diet fed to hens (19 to 48 wk of age). The treatments consisted of a basal diet with either no probiotic (control, CON), 1.1E+08 (low, LSSB), 2.2E+08 (medium, MSSB) or 1.1E+09 (high, HSSB) CFU/kg of diet. A total of 336, 19-wk old Shaver White layers were used at a stocking density of 7 and 6 hens/replicate-cage in layer I (week-19 to 28) and layer II (week-29 to 48) phases, respectively. Evaluated variables included feed intake (FI), body weight (BW), feed conversion ratio (FCR), egg production, weight, mass, and egg quality (shell thickness, shell breaking strength, albumen height (AH), and Haugh unit (HU)). Excreta was collected at the end of week-28 for AR of components and apparent metabolizable energy (AME). Supplementation of SSB increased (P = 0.008) FI during peak egg-lay (week-24) and BW increased linearly (P = 0.019) in early layer II (week-32). In layer I, LSSB compared with CON increased EM (g/egg) by 3.3% (P = 0.049). In layer II, SSB inclusion tended to improve FCR (linear, P = 0.094; g FI: g EM). Although shell breaking strength was lowest at week-20 with HSSB (4.518 vs. 4.889 kgf for HSSB vs. CON; P = 0.045), AH and HU were improved at higher dose of SSB, in both phases (P ≤ 0.005). Apparent retention of dry matter, AME, and minerals were improved (P < 0.0001) in a dose response. Hence, while the low dose of B. subtilis DSM29784 improved hen performance and maintained egg quality in both phases, a higher dose of SSB improved the interior protein quality of eggs (AH and HU).

Abstract
This study was conducted to determine the impact of different feed additives on reproductive performance, egg quality, intestinal morphology, and blood metabolic profile of broiler breeder with different egg-laying rate. A total of 512 AA broiler breeders (48 wk old) were used in a 2 × 4 factorial design which encompassed 2 egg-laying rate levels [average (AR) and low (LR)] and 4 different dietary groups [control (no additive), 6 × 108 CFU/kg Enterococcus faecium (EF), 200 mg/kg apple pectic oligosaccharide (APO), and 1,000 mg/kg tributyrin (TRI)]. As expected, the LR breeders presented higher egg weight, eggshell thickness (P < 0.05), and feed conversion ratio as well as lower egg-laying and qualified egg rate than the AR breeders (P < 0.01). Dietary supplementation with the 3 additives improved egg weight (P ≤ 0.01). Dietary APO addition improved albumen height and Haugh units (P < 0.05) in both AR and LR breeders. Compared with APO and TRI, dietary EF addition increased eggshell thickness (P ≤ 0.01). An effect of the egg-laying rate and dietary additives on eggshell thickness (P < 0.01) was noted, with the addition of EF enhancing the eggshell thickness, which is more pronounced in the AR group. The duodenum of AR breeders presented a lower crypt depth and a higher villus/crypt ratio (P < 0.05); moreover, an effect of the laying rate and dietary additives on crypt depth was noted (P < 0.05), with the addition of APO to the diet resulting in a lower crypt depth. Compared with the APO and TRI, dietary EF addition increased follicle-stimulating hormone (FSH) level in serum (P < 0.05). Overall, the results gathered in this study indicate that LR breeders have lower production performance, eggshell thickness and decreased gastrointestinal tract functionality in compared with the AR breeders. Dietary supplementation with APO might improve albumen quality and decrease duodenal morphology, while EF improved eggshell quality and FSH secretion, and the improvement was more pronounced in the breeders with an average egg-laying rate.

Abstract
This study was conducted in quails to evaluate the probiotic potential of Pichia pastoris X-33, cultivated in parboiled rice effluent supplemented with biodiesel glycerol or in standard medium Yeast Extract–Peptone–Dextrose (YPD). Forty-days-old female quails were divided into three treatments: T1 (Control) received a basal diet without P. pastoris; T2 (Pichia Effluent) received a basal diet supplemented with P. pastoris grown in parboiled rice effluent and biodiesel glycerol, and T3 (Pichia YPD) received a basal diet supplemented with P. pastoris produced in YPD. The birds were vaccinated against Newcastle Disease (NDV), Avian Infectious Bronchitis (IBV), and Gumboro Disease on days 1 and 28. The following parameters were analyzed: performance, egg quality, humoral immune response to the vaccines, organ weight, and intestinal morphometry. P. pastoris grown in YPD increased egg weight (p < 0.05). The lowest liver weight on day 14 was obtained in Pichia Effluent, whereas both P. pastoris supplemented groups had the lowest duodenum weights on day 14. Besides that, livers and duodenums presented no morphological changes in any of the three treatments. Supplementation of P. pastoris modulated the immune system of the birds, increasing anti-IBV, anti-NDV, and anti-Gumboro antibodies levels compared to the Control (p < 0.05). In conclusion, quail’s immune response was improved by Pichia pastoris X-33, either it was grown in YPD or industrial residues, and the egg weight increased with Pichia pastoris X-33 grown in YPD, thereby demonstrating to be a promising probiotic for poultry.

Abstract
Egg is an encapsulated source of macro and micronutrients that meet all requirements to support embryonic development until hatching. The perfect balance and diversity in its nutrients along with its high digestibility and its affordable price has put the egg in the spotlight as a basic food for humans. However, egg still has to face many years of nutritionist recommendations aiming at restricting egg consumption to limit cardiovascular diseases incidence. Most experimental, clinical, and epidemiologic studies concluded that there was no evidence of a correlation between dietary cholesterol brought by eggs and an increase in plasma total-cholesterol. Egg remains a food product of high nutritional quality for adults including elderly people and children and is extensively consumed worldwide. In parallel, there is compelling evidence that egg also contains many and still-unexplored bioactive compounds, which may be of high interest in preventing/curing diseases. This review will give an overview of (1) the main nutritional characteristics of chicken egg, (2) emerging data related to egg bioactive compounds, and (3) some factors affecting egg composition including a comparison of nutritional value between eggs from various domestic species.

Abstract
Probiotics prove useful in correcting and preventing numerous health conditions, including those having severe impact on society, e.g., obesity and cancer. Notably, these capabilities of probiotics appear to be associated with their antioxidant properties. The mechanisms of antioxidant action of probiotics range from immediate biochemical scavenging of reactive substances to induction of signaling events leading to increased capacity of the host's cytoprotective systems. Since the antioxidant effects of probiotics significantly vary in types and details, a broad selection of methods of assessment of these properties is required in order to identify, characterize, and develop novel probiotics for medical purposes, as well as to explain the mechanisms of action of probiotics already in use in healthcare. This review revises the versatile toolbox, which can be used to assess the antioxidant properties of probiotics.

Abstract
1. This study was conducted to investigate the effect of multi-strain probiotic (containing Lactobacillus acidophilus 2.5 × 107 cfu/g, Lactobacillus casei 2.5 × 107 cfu/g, Bifidobacterium thermophilum 2.5 × 107 cfu/g and Enterococcus faecium 2.5 × 107 cfu/g) and single-strain probiotic (Pediococcus acidilactici 1 × 1010 cfu/g) on broiler breeder performance and gastrointestinal health. 2. A completely randomised trial was conducted using 300 broiler breeder hens (Ross 308) aged 51 weeks old which were randomly allocated to 1 of 5 dietary treatments with 6 replicates per treatment in a 10 week trial. Treatments included (1) the basal diet a negative control, (2) basal diet supplemented with 0.1 g/kg multi-strain probiotic (MS), (3) basal diet supplemented with 0.1 g/kg single-strain probiotic (SS), (4) basal diet supplemented with 0.1 g/kg of both of probiotics (MS+ SS) and (5) positive control basal diet supplemented with 0.5 g/kg oxytetracycline antibiotic (OX). 3. Body weight, egg production, yolk weight, eggshell thickness and weight, Haugh unit, fertility and hatchability were determined. Results showed that dietary treatments had no significant effect on total hen house or total hatching egg production, egg weight, yolk colour index, shell weight, mortality, body weight, fertility, hatchability, oviduct and stroma weight or number of large and small yellow follicles (P > 0.05). None of the jejunum morphological parameters, apparent ileal digestibility of protein and ileal Lactobacillus population were influenced by supplemental probiotics (P > 0.05), although ileum Escherichia coli count was reduced by inclusion of dietary probiotics (P < 0.05). 4. It was concluded that although both probiotic treatments reduced coliforms, they did not improve broiler breeder performance or gastrointestinal tract (GIT) function.

Abstract
Polyphenols in Eucalyptus leaves (PE) were value resources due to various pharmacological activities, but data on the effect on laying hens are very scare. This study was conducted to determine the effect of PE on the laying performance, egg traits, meat quality, antioxidant status and liver tissues of laying hens. One hundred and twenty 256-day-old Yueqinhuang laying hens were randomly assigned to four treatment groups (different levels of PE at 0, 0.5, 0.8 and 1.2 g/kg diet) for 63 days with 15 replicates per group. Addition of 0.8 g/kg PE not only improved the egg trait by increasing the eggshell thickness and decreasing MDA production and cholesterol content in the egg yolk, but also significantly enhanced meat quality of hens, as suggested by the increase pH45 min (p < .01) and a* value, and decrease drip loss rate (p < .01). Meanwhile, under acute ethanol-induced oxidative damage condition, supplementation of 0.8 g/kg PE enhanced the serum antioxidant status by increasing enzymatic activities (GSH-PX, T-SOD, T-AOC), inhibited oxidative damage and provided protective effect to liver tissue. In conclusion, addition of 0.8 g/kg PE not only improved the egg traits and meat quality without obvious adverse effects, but also increased the serum antioxidant status of the hens and protected their liver tissue from ethanol-induced oxidative damage. This study indicated that PE could be utilized as an effective feed additive for laying hens to improve health performance and egg traits.
