Abstract
Texture and sensory studies at various temperatures are important in evaluating and improving the functionality of butter. While literature is scarce, we evaluated and compared the effect of temperature (5-25°C) on the texture, rheological and sensory properties of commercial butter samples (salted, unsalted, cultured, and spreadable) from the New Zealand market. In addition, the instrumental analyses were compared with the sensory evaluation, to understand the possibility of using instrumental analysis to evaluate consumer liking for different butters. Butter type, temperature, and their type-temperature interaction exhibited significant differences for all instrumental textural parameters. As expected, higher temperature produced softer butter that was more spreadable, liquid-like, less adhesive, less cohesive, had lower storage modulus (G') and lower loss modulus (G″) with the melting of milk fat crystals; however, the rate of change varied for the different butter samples. We have established meltability as the parameter for evaluating butter selection for different applications. The spreadable butter sample exhibited the lowest hardness and G', and highest spreadability (p < .05) at all temperatures, owing to its low solid fat content and the abundance of low-melting triglycerides. The cultured butter sample had the highest melting point, owing to compositional differences. The instrumental and sensory texture analyses were highly correlated, indicating the comparative effectiveness of both approaches for studying the effects of different temperatures on butter textural properties. Overall, our findings provide detailed reference to the dairy industry for butter manufacture, considering variation in fatty acid composition, texture analysis, rheology, and sensory analysis, over the range of storage/usage temperatures.

Abstract
Greenhouse gas emission from the activities of all productive sectors is currently a topic of foremost importance. The major contributors in the livestock sector are ruminants, especially dairy cows. This study aimed to evaluate and compare 21 equations for predicting enteric methane emissions (EME) developed on the basis of milk traits and fatty acid profiles, which were selected from 46 retrieved through a literature review. We compiled a reference database of the detailed fatty acid profiles, determined by GC, of 992 lactating cows from 85 herds under 4 different dairy management systems. The cows were classified according to DIM, parity order, and dairy system. This database was the basis on which we estimated EME using the selected equations. The EME traits estimated were methane yield (20.63 ± 2.26 g/kg DMI, 7 equations), methane intensity (16.05 ± 2.76 g/kg of corrected milk, 4 equations), and daily methane production (385.4 ± 68.2 g/d, 10 equations). Methane production was also indirectly calculated by multiplying the daily corrected milk yield by the methane intensity (416.6 ± 134.7 g/d, 4 equations). We also tested for the effects of DIM, parity, and dairy system (as a correction factor) on the estimates. In general, we observed little consistency among the EME estimates obtained from the different equations, with exception of those obtained from meta-analyses of a range of data from different research centers. We found all the EME predictions to be highly affected by the sources of variation included in the statistical model: DIM significantly affected the results of 19 of the 21 equations, and parity order influenced the results of 13. Different patterns were observed for different equations with only some of them in accordance with expectations based on the cow's physiology. Finally, the best predictions of daily methane production were obtained when a measure of milk yield was included in the equation or when the estimate was indirectly calculated from daily milk yield and methane intensity.

Abstract
Cow's milk and dairy products are the primary sources of OBCFAs, which have beneficial health properties. The goal of this study was to identify the factors that influence the content of OBCFAs in cow's milk and to indicate which OBCFAs can serve as biomarkers for fermentation processes. The content of OBCFAs in milk depends on the species of ruminants, with studies showing that this varies between 3.33% (in goat's milk) and 5.02% (in buffalo's milk). These differences also stem from the animals' energy balance, lactation phases, forage-to-concentrate ratio, and the presence of bioactive compounds in feeds, as well as management practices and environmental conditions. The OBCFAs in milk fat mainly come from rumen bacteria, but can also be synthesized de novo in the mammary gland, making them potentially useful noninvasive indicators of rumen fermentation. The concentration of BCFA is lower in colostrum and transitional milk than in full lactation milk. The proportions of total OBCFAs are higher in first- and second-parity cows. The most effective predictors of the biohydrogenation of fatty acids in the rumen are likely C18:2 cis-9, trans-11, iso-C16:0, and iso-C13:0. OBCFAs have been identified as potential biomarkers for rumen function, because their synthesis depends on specific bacteria. Strong predictors of subclinical ruminal acidosis include iso-C14:0, iso-C13:0, and C15:0. The concentration of ∑ OBCFA >C16 in milk is associated with fat mobilization and serves as a significant marker of the energy balance in cows.

Abstract
Flaxseed is the richest source of secoisolariciresinol diglucoside, which is converted by ruminal microorganisms primarily to the mammalian lignan enterolactone. Our objective was to investigate the effect of diets containing soybean meal or flaxseed meal (FM) supplemented with sucrose, flaxseed oil, or both on milk enterolactone concentration and yield, diversity and relative abundance of ruminal bacterial taxa, ruminal fermentation profile, production performance, milk fatty acid (FA) yield, and nutrient utilization in dairy cows. Sixteen Holstein cows [8 multiparous (4 ruminally-cannulated) and 8 primiparous] averaging (mean ± SD) 134 ± 54.1 DIM and 679 ± 78.9 kg of BW in the beginning of the study were assigned to treatment sequences in a replicated 4 × 4 Latin square design. Each experimental period lasted 25 d with 18 d for diet adaptation and 7 d for data and sample collection. Diets were formulated to contain a 60:40 forage:concentrate ratio and included (DM basis): 1) 8% soybean meal and 23% ground corn (SBM), 2) 15% FM, 10.7% ground corn, and 5% sucrose (FLX+S), 3) 15% FM, 15.4% ground corn, and 3% flaxseed oil (FLX+O), and 4) 15% FM, 10.2% ground corn, 5% sucrose, and 3% flaxseed oil (FLX+SO). Compared with SBM, the concentration and yield of milk enterolactone increased in cows fed the FM diets, but did not differ among FLX+S, FLX+O, and FLX+SO. The relative abundances of the phyla Firmicutes, Verrucomicrobiota, and Actinobacteriota and those of the bacterial genera Lachnospiraceae NK3A20 group, Eubacterium coprostanoligenes group, Anaeromusa-Anaeroarcus, WCHB1-41, and p-251-o5 decreased, whereas Prevotella and NK4A214 group increased when comparing SBM against at least 1 diet containing FM. Furthermore, the relative abundances of Firmicutes and Actinobacteriota and those of Prevotella, Lachnospiraceae NK3A20 group, Eubacterium coprostanoligenes group, Acetitomaculum, Lachnospiraceae unclassified, NK4A214 group, and Anaeromusa-Anaeroarcus changed (increased or decreased) across the FLX+S, FLX+O, and FLX+SO diets. However, all these changes in the relative abundance of the ruminal bacterial taxa were not conclusively associated with the effect of diets on milk enterolactone. Diets did not affect ruminal pH and concentrations of NH3-N and total VFA. Dry matter intake and yields of milk, milk fat, and milk true protein all decreased in cows fed FLX+O or FLX+SO. Yields of milk total odd-chain FA, branched-chain FA, total < 16C FA, and total 16C FA all decreased with feeding FLX+O and FLX+SO. The apparent total-tract digestibilities of DM and OM were lowest in the FLX+S and FLX+O diets, with CP and ADF digestibilities lowest in cows receiving FLX+S or FLX+O, respectively. Urinary excretion of total N was lowest with feeding SBM. Contrarily, diets did not affect the urinary excretion of total purine derivatives. In brief, despite the effect of diets on the relative abundance of several ruminal microbiota phyla and genera, we were unable to conclusively associate these changes with increased milk enterolactone in FM-containing diets versus SBM.

Abstract
Chia (Salvia hispanica L.) seed (CS) and Pumpkin (Cucurbita moschata) seed (PS) are used in ruminant diets as energy sources. The current experiment studied the impact of dietary inclusion of CS and PS on nutrient intake and digestibility, milk yield, and milk composition of dairy sheep. Twelve primiparous Texel × Suffolk ewes [70 ± 5 days in milk (DIM); 0.320 ± 0.029 kg milk yield] were distributed in a 4 × 3 Latin square design and fed either a butter-based control diet [CON; 13 g/kg dry matter] or two diets with 61 g/kg DM of either CS or PS. Dietary inclusion of CS and PS did not alter live weight (p >0.1) and DM intake (p >0.1). However, compared to the CON, dietary inclusion of both CS and PS increased the digestibility of neutral detergent fiber (p <0.001) and acid detergent lignin (p < 0.001). Milk production (p = 0.001), fat-corrected milk (p < 0.001), and feed efficiency (p < 0.001) were enhanced with PS, while the highest milk protein yield (p < 0.05) and lactose yield (p < 0.001) were for CS-fed ewes. Compared to the CON diet, the ingestion of either CS and/or PS decreased (p < 0.001) the C16:0 in milk. Moreover, both CS and PS tended to enhance the content of C18:3n6 (p > 0.05) and C18:3n3 (p > 0.05). Overall short-term feeding of CS and/or PS (up to 6.1% DM of diet) not only maintains the production performance and digestibility of nutrients but also positively modifies the milk FA composition.

Abstract
A meta-analysis was conducted with an aim to quantify the beneficial effects of nine different dietary rumen modulating strategies which includes: the use of plant-based bioactive compounds (saponin, tannins, oils, and ether extract), feed additives (nitrate, biochar, seaweed, and 3-nitroxy propanol), and diet manipulation (concentrate feeding) on rumen fermentation, enteric methane (CH4) production (g/day), CH4 yield (g/kg dry matter intake) and CH4 emission intensity (g/kg meat or milk), and production performance parameters (the average daily gain, milk yield and milk quality) of ruminant livestock. The dataset was constructed by compiling global data from 110 refereed publications on in vivo studies conducted in ruminants from 2005 to 2023 and anlayzed using a meta-analytical approach.. Of these dietary rumen manipulation strategies, saponin and biochar reduced CH4 production on average by 21%. Equally, CH4 yield was reduced by 15% on average in response to nitrate, oils, and 3-nitroxy propanol (3-NOP). In dairy ruminants, nitrate, oils, and 3-NOP reduced the intensity of CH4 emission (CH4 in g/kg milk) on average by 28.7%. Tannins and 3-NOP increased on average ruminal propionate and butyrate while reducing the acetate:propionate (A:P) ratio by 12%, 13.5% and 13%, respectively. Oils increased propionate by 2% while reducing butyrate and the A:P ratio by 2.9% and 3.8%, respectively. Use of 3-NOP increased the production of milk fat (g/kg DMI) by 15% whereas oils improved the yield of milk fat and protein (kg/d) by 16% and 20%, respectively. On the other hand, concentrate feeding improved dry matter intake and milk yield (g/kg DMI) by 23.4% and 19%, respectively. However, feed efficiency was not affected by any of the dietary rumen modulating strategies. Generally, the use of nitrate, saponin, oils, biochar and 3-NOP were effective as CH4 mitigating strategies, and specifically oils and 3-NOP provided a co-benefit of improving production parameters in ruminant livestock. Equally concentrate feeding improved production parameters in ruminant livestock without any significant effect on enteric methane emission. Therefore, it is advisable to refine further these strategies through life cycle assessment or modelling approaches to accurately capture their influence on farm-scale production, profitability and net greenhouse gas emissions. The adoption of the most viable, region-specific strategies should be based on factors such as the availability and cost of the strategy in the region, the specific goals to be achieved, and the cost-benefit ratio associated with implementing these strategies in ruminant livestock production systems.

Abstract
OBJECTIVE The present study aimed to evaluate the effects of extruded and unextruded feeding on the performance, milk composition, digestibility and ruminal fermentation of dairy cows through a meta-analysis. METHODS The database was compiled from 53 studies in Scopus and PubMed. The data were analyzed using a random effects model in OpenMEE software. Extruded feed was grouped as the experiment group while and the others as control group. The bias of publication in the main parameter of dairy performance was evaluated by a funnel plot. RESULTS The result showed that extruded feed enhanced the milk yield, dry matter and crude protein digestibility, butyrate and valerate acid production (p<0.05). Meanwhile, the extruded feed significantly decreased the milk fat and protein concentration (p<0.05). Also, the iso-butyrate and iso-valerate in unextruded feeding was significantly higher than the extruded feed (p<0.05). CONCLUSION It was concluded from the meta-analysis that extruded feed effectively improved the milk production and milk lactose concentration, dry matter and protein digestibility, but not the milk fat and protein concentration.

Abstract
Enteric fermentation from dairy cows is a major source of methane. Significantly and rapidly reducing those emissions would be a powerful lever to mitigate climate change. For a given productivity level, introducing fodder with high sources of n-3 content, such as grass or linseed, in the feed ration of dairy cows both improves the milk nutritional profile and reduces enteric methane emissions per liter. Changing cows' diet may represent additional costs for dairy farmers and calls for the implementation of payments for environmental services to support the transition. This paper analyzes 2 design elements influencing the effectiveness of a payment conditioned toward the reduction of enteric methane emissions: (1) the choice of emission indicator capturing the effect of farmers' practices, and (2) the payment amount relative to the additional milk production costs incurred. Using representative farm-level economic data from the French farm accountancy data network, we compare enteric methane emissions per liter of milk calculated with an Intergovernmental Panel on Climate Change Tier 2 method, to baseline emissions from a Tier 3 method accounting for diet effects. We also quantify the additional milk production costs of integrating more grass in the fodder systems by estimating variable cost functions for different dairy systems in France. Our results show the relevance of using an emission indicator sensitive to diet effects, and that the significance and direction of the additional costs for producing milk with a diet containing more grass differ according to the production basin and the current share of grasslands in the fodder crop rotation. We emphasize the importance of developing payments for environmental services with well-defined environmental indicators accounting for the technical problems addressed, and the need to better characterize heterogeneous funding requirements for supporting a large-scale adoption of more environment-friendly practices by farmers.

Abstract
Interest in organic cows' milk has increased due to the perceived superior nutritional quality and improved sustainability and animal welfare. However, there is a lack of simultaneous assessments on the influence of organic dairy practices and dietary and breed drivers on productivity, feed efficiency, health parameters, and nutritional milk quality at the herd level. This work aimed to assess the impact of organic vs. conventional management and month on milk yield and basic composition, herd feed efficiency, health parameters, and milk fatty acid (FA) composition. Milk samples (n = 800) were collected monthly from the bulk tanks of 67 dairy farms (26 organic and 41 conventional) between January and December 2019. Data on breed and feeding practices were gathered via farm questionnaires. The samples were analyzed for their basic composition and FA profile using Fourier transform infrared spectroscopy (FTIR) and gas chromatography (GC), respectively. The data were analyzed using a linear mixed model, repeated measures design and multivariate redundancy analysis (RDA). The conventional farms had higher yields (kg/cow per day) of milk (+7.3 kg), fat (+0.27 kg), and protein (+0.25 kg) and higher contents (g/kg milk) of protein, casein, lactose, and urea. The conventional farms produced more milk (+0.22 kg), fat (+8.6 g), and protein (+8.1 g) per kg offered dry matter (DM). The organic farms produced more milk per kg of offered non-grazing and concentrate DM offered, respectively (+0.5 kg and +1.23 kg), and fat (+20.1 g and +51 g) and protein (+17 g and +42 g). The organic milk had a higher concentration of saturated fatty acid (SFA; +14 g/kg total FA), polyunsaturated fatty acid (PUFA; +2.4 g/kg total FA), and nutritionally beneficial FA alpha linolenic acid (ALNA; +14 g/kg total FA), rumenic acid (RA; +14 g/kg total FA), and eicosapentaenoic acid (EPA; +14 g/kg total FA); the conventional milk had higher concentrations of monounsaturated FA (MUFA; +16 g/kg total FA). Although the conventional farms were more efficient in converting the overall diet into milk, fat, and protein, the organic farms showed better efficiency in converting conserved forages and concentrates into milk, fat, and protein as a result of reduced concentrate feeding. Considering the relatively small differences in the FA profiles between the systems, increased pasture intake can benefit farm sustainability without negatively impacting consumer nutrition and health.

Abstract
Milk fatty acid composition has gained the interest of both manufacturers and consumers during recent years. The present paper aimed to perform an analysis of C14:0, C16:0, C18:0, C18:1, saturated (SFA), monounsaturated (MUFA), polyunsaturated (PUFA) and short chain fatty acid (SCFA) concentration in cow's milk in relation to the type of ration, parity, lactation phase and season. Cows' milk from animals being fed total mixed rations, including corn silage, had higher C14:0, C16:0 and SFA concentrations than those being fed pasture-based rations but lower concentrations of C18:0 and PUFA. Comparing to 1st parity cows, 2nd and 3rd parity animals had higher SFA and SCFA concentrations in milk. With respect to spring, C14:0, C16:0 and SFA concentrations increased in summer, autumn and winter while MUFA, PUFA and SCFA concentrations decreased. Considering the lactation phase, C14:0, C16:0 and SFA concentrations decreased in fresh cows with ketosis comparing to healthy fresh cows and increased in peak, mid and late lactation. C18:0, C18:1 and MUFA follow the opposite trend. The milk fatty acid profile varies significantly through the studied effects. The fact that the fatty acid profile is associated with animal health, organoleptic properties of milk or even methane production highlights the importance of studying factors that affect its variation.

Abstract
Optimization of host performance in cattle may be achieved through programming of the rumen microbiome. Thus, understanding maternal influences on the development of the calf rumen microbiome is critical. We hypothesized that there exists a shared microbial profile between the cow and calf rumen microbiomes from birth through weaning. Specifically, our objective was to relate the calf's meconium and rumen fluid microbiomes in early life to that of the cow rumen fluid prior to parturition and at weaning. Rumen fluid was collected from multiparous Angus crossbred cows (n = 10) prior to parturition and at weaning. Immediately following the parturition, meconium and rumen fluid were collected from the calf. Rumen fluid was collected again from the calf on day 2, day 28, and at weaning. The rumen fluid microbial profile and subsequent volatile fatty acid (VFA) profile were characterized using 16S rRNA sequencing and gas liquid chromatography, respectively. Microbial data was analyzed using QIIME2 and the GLM procedure of SAS was used to analyze the VFA profile. Alpha diversity was similar in the early gut microbiome (meconium, rumen fluid at birth and day 2; q ≥ 0.12) and between the cow and calf at weaning (q ≥ 0.06). Microbial composition, determined by beta diversity, differed in the early rumen microbiome (rumen fluid at birth, day 2, and day 28; q ≤ 0.04), and VFA profiles complimented these results. There were similarities in composition between meconium, rumen fluid at birth, and rumen fluid from the cow at weaning (q ≥ 0.09). These data indicate successive development of the rumen microbiome and stabilization over time. Similarities between meconium and rumen fluid at birth potentially indicates in utero colonization of the calf gastrointestinal tract. Similarities in composition between the early calf rumen microbiome and the cow at weaning prompt an interesting comparison and area for future consideration in terms of identifying at what stage of gestation might colonization begin. Overall, this study provides insight into similarities between the cow and calf microbiomes and may be helpful in developing hypotheses for the pathway of colonization and programming potential in the early gut.

Reduction of Enteric Methane Emissions in Heifers Fed Tropical Grass-Based Rations Supplemented with Palm Oil. FERMENTATION-BASEL 2022. Abstract
Vegetable oils have been shown to reduce enteric methane (CH4) production by up to 20%. However, when the level of incorporation exceeds the threshold of 70 g/kg DM, dry matter intake (DMI) and nutrient digestibility may be reduced. The objective of this study was to determine the effects of the incorporation of three levels of palm oil (PO) on enteric CH4 emissions, rumen fermentation and apparent digestibility in heifers fed low-quality grass. Four rumen-cannulated heifers (Bos taurus × Bos indicus) were randomly assigned to four treatments: control (CON) and three increasing PO levels: 20, 40 and 60 g/kg in a 4 × 4 Latin square design with four periods of 22 days (14 days of adaptation to the ration), 5 days of feces and rumen fluid sampling (day 18, 4 h postprandial) and the last 3 days for measurements of CH4 in respiration chambers. With the exception of CP (p = 0.04), starch (p = 0.002) and EE (p < 0.001), the intake of nutrients was not affected by the inclusion of PO (p > 0.05). The apparent digestibility (AD) of nutrients was not affected by the inclusion of PO (p > 0.05), except for starch, which reduced its AD as the PO level was increased (p < 0.05). The gross energy intake was higher in PO-containing rations (p = 0.001), on the other hand, the digestible energy intake was similar between treatments (p > 0.05). In situ ruminal digestion kinetics and the potential degradability remained unchanged (p > 0.05), however, the effective degradability decreased with the inclusion of PO in the rations (p < 0.05). The ruminal pH and molar proportions of acetic, isovaleric and valeric acid were not different between treatments (p > 0.05). The ruminal concentration of propionic acid increased as the PO level increased, reaching its highest molar proportion with 60 g/kg PO (p < 0.05), however, the acetic/propionic ratio and the molar proportions of butyric acid and isobutyric acid decreased as the PO level increased (p < 0.05). The total daily CH4 production was lower in diets containing 20, 40 and 60 g/kg PO compared to the CON diet (p < 0.001). The production of CH4 per kg DMI and DOMI was greater (p < 0.05) for the CON diet compared to all three rations containing PO. The emission intensity, Ym, energy lost as CH4, emission factor (EF) and kg CO2 eq/year were reduced as an effect of the inclusion of PO (p < 0.05). Based on the results obtained, it is concluded that the incorporation of PO in cattle rations has the potential to reduce enteric methane emissions by 4% for every 10 g/kg PO in the ration, without affecting DMI, apparent digestibility or the consumption of digestible nutrient fractions.

Abstract
Oilseed supplementation is a strategy to improve milk production and milk composition in dairy cows; however, the response to this approach is inconsistent. Thus, the aim of this study was to evaluate the effect of oilseed supplementation on milk production and milk composition in dairy cows via a meta-analysis and meta-regression. A comprehensive and structured search was performed using the following electronic databases: Google Scholar, Primo-UAEH and PubMed. The response variables were: milk yield (MY), atherogenic index (AI), Σ omega-3 PUFA, Σ omega-6 PUFA, fat, protein, lactose, linoleic acid (LA), linolenic acid (LNA), oleic acid (OA), vaccenic acid (VA), conjugated linoleic acid (CLA), unsaturated fatty acid (UFA) and saturated fatty acid (SFA) contents. The explanatory variables were breed, lactation stage (first, second, and third), oilseed type (linseed, soybean, rapeseed, cottonseed, and sunflower), way (whole, extruded, ground, and roasted), dietary inclusion level, difference of the LA, LNA, OA, forage and NDF of supplemented and control rations, washout period and experimental design. A meta-analysis was performed with the “meta” package of the statistical program R. A meta-regression analysis was applied to explore the sources of heretogeneity. The inclusion of oilseeds in dairy cow rations had a positive effect on CLA (+0.27 g 100 g−1 fatty acids (FA); p < 0.0001), VA (+1.03 g 100 g−1 FA; p < 0.0001), OA (+3.44 g 100 g−1 FA; p < 0.0001), LNA (+0.28 g 100 g−1 FA; p < 0.0001) and UFA (+8.32 g 100 g−1 FA; p < 0.0001), and negative effects on AI (−1.01; p < 0.0001), SFA (−6.51; p < 0.0001), fat milk (−0.11%; p < 0.001) and protein milk (−0.04%; p < 0.007). Fat content was affected by animal breed, lactation stage, type and processing of oilseed and dietary NDF and LA contents. CLA, LA, OA and UFA, desirable FA milk components, were affected by type, processing, and the intake of oilseed; additionally, the concentrations of CLA and VA are affected by washout and design. Oilseed supplementation in dairy cow rations has a positive effect on desirable milk components for human consumption. However, animal response to oilseed supplementation depends on explanatory variables related to experimental design, animal characteristics and the type of oilseed.

Abstract
Conjugated linoleic acid (CLA), has been shown to have protective effects against various diseases, such as obesity, arteriosclerosis, diabetes, chronic inflammatory diseases, and cancer. This fatty acid in ruminants results from two processes, biohydrogenation, which takes place in the rumen, and de novo synthesis, carried out in the mammary gland, and it has linoleic and α-linolenic acids as its precursors. The amounts of precursors in the diets of animals are related to the amounts of CLA in milk. In the literature review, it was found that the milk of cows fed fresh forage has a higher amount of CLA because they have a higher amount of linoleic acid and α-linolenic acid compared to other foods used in the diets of cows. The amount of CLA precursors in pastures can be increased through agronomic practices, such as nitrogen fertilization, and regrowth age. It is also a technique used to increase the amount of CLA in milk to obtain a greater benefit regarding its nutritional value.

Abstract
For dairy cattle, the period involving a shift from late pregnancy to early lactation termed transition or periparturient is an excruciating phase. Health-related disorders are likely to happen in this time frame. Timely postpartum and metabolic adjustments to this new physical state demands correct management strategies to fulfill the cow's needs for a successful transition to this phase. Among the management strategies, one of the most researched methods for managing transition-related stress is nutritional supplementation. Dietary components directly or indirectly affect the expression of various genes that are believed to be involved in various stress-related responses during this phase. Nutrigenomics, an interdisciplinary approach that combines nutritional science with omics technologies, opens new avenues for studying the genome's complicated interactions with food. This revolutionary technique emphasizes the importance of food-gene interactions on various physiological and metabolic mechanisms. In animal sciences, nutrigenomics aims to promote the welfare of livestock animals and enhance their commercially important qualities through nutritional interventions. To this end, an increasing volume of research shows that nutritional supplementation can be effectively used to manage the metabolic stress dairy cows undergo during the transition period. These nutritional supplements, including polyunsaturated fatty acids, vitamins, dietary amino acids, and phytochemicals, have been shown to modulate energy homeostasis through different pathways, leading to addressing metabolic issues in transition cows.

Abstract
Previous work has demonstrated some benefit from alternative breeds in low-input dairying, although there has been no systematic analysis of the simultaneous effect of Jersey crossbreeding on productivity, health, fertility parameters or milk nutritional quality. This work aimed to understand the effects of, and interactions/interrelations between, dairy cow genotypes (Holstein-Friesian (HF), Holstein-Friesian × Jersey crossbreds (HF × J)) and season (spring, summer, autumn) on milk yield; basic composition; feed efficiency, health, and fertility parameters; and milk fatty acid (FA) profiles. Milk samples (n = 219) and breed/diet data were collected from 74 cows in four UK low-input dairy farms between March and October 2012. HF × J cows produced milk with more fat (+ 3.2 g/kg milk), protein (+ 2.9 g/kg milk) and casein (+ 2.7 g/kg milk); and showed higher feed, fat, and protein efficiency (expressed as milk, fat and protein outputs per kg DMI) than HF cows. Milk from HF × J cows contained more C4:0 (+ 2.6 g/kg FA), C6:0 (+ 1.9 g/kg FA), C8:0 (+ 1.3 g/kg FA), C10:0 (+ 3.0 g/kg FA), C12:0 (+ 3.7 g/kg FA), C14:0 (+ 4.6 g/kg FA) and saturated FA (SFA; + 27.3 g/kg milk) and less monounsaturated FA (MUFA; -23.7 g/kg milk) and polyunsaturated FA (− 22.3 g/kg milk). There was no significant difference for most health and fertility parameters, but HF × J cows had shorter calving interval (by 39 days). The superior feed, fat and protein efficiency of HF × J cows, as well as shorter calving interval can be considered beneficial for the financial sustainability of low-input dairy farms; and using such alternative breeds in crossbreeding schemes may be recommended. Although statistically significant, it is difficult to determine if differences observed between HF and HF × J cows in fat composition are likely to impact human health, considering average population dairy fat intakes and the relatively small difference. Thus, the HF × J cow could be used in low-input dairying to improve efficiency and productivity without impacting milk nutritional properties.

Abstract
Enteric methane (CH4) emissions produced by microbial fermentation in the rumen resulting in the emission of greenhouse gases (GHG) into the atmosphere. The GHG emissions reduction from the livestock industry can be attained by increasing production efficiency and improving feed efficiency, by lowering the emission intensity of production, or by combining the two. In this work, information was compiled from peer-reviewed studies to analyze CH4 emissions calculated per unit of milk production, energy-corrected milk (ECM), average daily gain (ADG), dry matter intake (DMI), and gross energy intake (GEI), and related emissions to rumen fermentation profiles (volatile fatty acids [VFA], hydrogen [H2]) and microflora activities in the rumen of beef and dairy cattle. For dairy cattle, there was a positive correlation (p < 0.001) between CH4 emissions and DMI (R2 = 0.44), milk production (R2 = 0.37; p < 0.001), ECM (R2 = 0.46), GEI (R2 = 0.50), and acetate/propionate (A/P) ratio (R2 = 0.45). For beef cattle, CH4 emissions were positively correlated (p < 0.05−0.001) with DMI (R2 = 0.37) and GEI (R2 = 0.74). Additionally, the ADG (R2 = 0.19; p < 0.01) and A/P ratio (R2 = 0.15; p < 0.05) were significantly associated with CH4 emission in beef steers. This information may lead to cost-effective methods to reduce enteric CH4 production from cattle. We conclude that enteric CH4 emissions per unit of ECM, GEI, and ADG, as well as rumen fermentation profiles, show great potential for estimating enteric CH4 emissions.

Abstract
The purpose of this study was to investigate the effects of linseed supplementation on milk yield and quality, serum biochemistry and, in particular, to evaluate its possible effects on the production of odd- and branched-chain fatty acids (OBCFA) in the milk of Cilentana grazing goats. Twelve pregnant Cilentana dairy goats were divided into two groups (CTR, control, and LIN, linseed supplementation group). After kidding, the goats had free access to the pasture and both groups received a supplement of 400 g/head of concentrate, but the one administered to the LIN group was characterized by the addition of linseed (in a ratio of 20% as fed) to the ingredients. During the trial, milk samples were taken from April to August in order to evaluate milk production, composition, and fatty acid profile. In addition, blood samples were taken for evaluating the effects of linseed supplementation on goats’ health status. The health status of the goats was not influenced by the linseed supplementation, as confirmed by blood analyses. Concerning the effects on milk, the supplementation positively affected (p < 0.001) milk production and fat percentage and the fatty acid profile was markedly influenced by the lipid supplementation. In particular, milk from the LIN group was characterized by significantly lower concentrations of saturated fatty acids (FA; p < 0.001) and higher proportions of monounsaturated FA, polyunsaturated FA, and conjugated linoleic acids (CLAs) than milk from the CTR group (p < 0.001). In contrast, the OBCFA were negatively influenced by the linseed supplementation (p < 0.0001). Further studies are needed to test the effects of different fat sources and other nutrients on the diets.

Abstract
Methane emission is not included in the current breeding goals for dairy cattle mainly due to the expense and difficulty in obtaining sufficient data to generate accurate estimates of the relevant traits. While several models have been developed to predict methane emission from milk spectra using reference methane data obtained by the respiration chamber, SF6 and sniffer methods, the prediction of methane emission from milk mid-infrared (MIR) spectra using reference methane data collected by the GreenFeed system has not yet been explored. Methane emission was monitored for 151 cows using the GreenFeed system. Prediction models were developed for daily and average (for the trial period of 12 or 14 days) methane production (g/d), yield (g/kg DM intake (DMI)) and intensity (g/kg of fat- and protein-corrected milk) using partial least squares regression. The predictions were evaluated in 100 repeated validation cycles, where animals were randomly partitioned into training (80%) and testing (20%) populations for each cycle. The best performing model was observed for average methane intensity using MIR, parity and DMI with validation coefficient of determination (R2val) and RMSE of prediction of 0.66 and 4.7 g/kg of fat- and protein-corrected milk, respectively. The accuracy of the best models for average methane production and average methane yield were poor (R2val = 0.28 and 0.12, respectively). A lower accuracy of prediction was observed for methane intensity and production (R2val = 0.42 and 0.17) when daily records were used while prediction for methane yield was comparable to that for average methane yield (R2val = 0.16). Our results suggest the potential to predict methane intensity with moderate accuracy. In this case, prediction models for average methane values were generally better than for daily measures when using the GreenFeed system to obtain reference methane emission measurements.

Abstract
Although there are many studies on the importance of fatty acids (FA) in our diet and on the influence of dairy diets on FA metabolism, only a few investigate their predictive capacity to discriminate the type, amount and conservation method of farm forages. This research quantifies differences in milk FA concentrations and, using a supervised factorial discriminant analysis, assesses potential biomarkers when replacing maize with other silages, grass/lucerne hays or fresh grass. The statistical modelling identified three main clusters of milk FA profiles associated with silages, hays and fresh grass as dominant roughages. The main implication of a dairy cow feeding system based on poliphytic forages from permanent meadows is enhancing milk’s nutritional quality due to an increase in beneficial omega-3 polyunsaturated FA, conjugated linoleic acids and odd chain FA, compared to feeding maize silage. The study also identified a small but powerful and reliable pool of milk FA that can act as biomarkers to authenticate feeding systems: C16:1 c-9, C17:0, C18:0, C18:3 c-9, c-12, c-15, C18:1 c-9, C18:1 t-11 and C20:0.

Abstract
Lipid metabolism plays an important role in the energy economy of ruminants. However, its interactions of fat, rumen fermentation, gas emission, and microorganisms are not yet clear. This study evaluated the effect of adding raw oilseeds to high-forage diets on in vitro ruminal fermentation, gas composition, and microbial profile. Three isoenergetic and isoproteic experimental diets were designed and used as fermentation substrate: control treatment (CON group) was the basal diet lacking oilseeds, the other two treatments were the basal diet supplemented by 100 g/kg dry matter (DM) raw whole soybean (S group) and 50 g/kg DM raw flaxseed (F group), respectively. Data showed that the acetate, butyrate, and total VFA concentration of culture fluids in the S group were lower (p < 0.05) than in the F group. There was a tendency to a higher level (p = 0.094) of propionate concentration in the F group compared with the other two groups. The gas production in the F group was higher (p < 0.05) than in the control group. There was a lower abundance of Sutterella (p < 0.05) and a greater abundance of Butyrivibrio (p < 0.05) in both of the two oilseed treatments. Methanobrevibacter (p = 0.078) in the F group was the lowest. Our results suggested that CH4 emission could be inhibited with flaxseed supplementation by propionate production metabolism, biohydrogenation of unsaturated fatty acid (FA), and toxicity to Methanobrevibacter, while regarding soybean seed supplementation, the emission of CH4 was more likely to be reduced through biohydrogenation of unsaturated FA modulated by Butyrivibrio.

Abstract
Research is ongoing to find nutritional methane (CH4) mitigation strategies with persistent effects that can be applied to grazing ruminants. Lipid addition to dairy cow diets has shown potential as means to decrease CH4 emissions. This study evaluated the effects of oilseeds on CH4 emission and production performance of grazing lactating dairy cows. Sixty Holstein Friesian cows grazing pasture were randomly allocated to 1 of 4 treatments (n = 15): supplemented with concentrate without oilseeds (CON), with whole cottonseed (CTS), rapeseed (RPS) or linseed (LNS). Oilseeds were supplemented during weeks 1-16 (spring period) and 17-22 (summer period), and the autumn period (wk 23-27) was used to evaluate treatment carryover effects. Cows fed CTS decreased CH4 yield by 14% compared to CON in spring, but these effects did not persist after 19 weeks of supplementation (summer). Compared to CON, RPS decreased milk yield and CTS increased milk fat concentration in both spring and summer. In summer, CTS also increased milk protein concentration but decreased milk yield, compared to CON. In spring, compared to CON, CTS decreased most milk medium-chain fatty acids (FA; 8:0, 12:0, 14:0 and 15:0) and increased stearic, linoleic and rumenic FA, and LNS increased CLA FA. There were no carry-over effects into the autumn period. In conclusion, supplementation of grazing dairy cows with whole oilseeds resulted in mild effects on methane emissions and animal performance. In particular, supplementing with CTS can decrease CH4 yield without affecting milk production, albeit with a mild and transient CH4 decrease effect. Long term studies conducted under grazing conditions are important to provide a comprehensive overview of how proposed nutritional CH4 mitigation strategies affect productivity, sustainability and consumer health aspects.

Effect of Linseeds and Hemp Seeds on Milk Production, Energy and Nitrogen Balance, and Methane Emissions in the Dairy Goat. Animals (Basel) 2021; 11:ani11092717. Abstract
Simple Summary The inclusion of whole oilseeds in the diets of ruminants can be a useful strategy for reducing methane emissions and improving milk quality. This study evaluated the effects of the inclusion of whole hemp seeds or linseeds in the diet of dairy goats. The results showed that neither seed caused a reduction in methane emission or an increase in milk yield, but both seeds improved the milk quality in terms of fatty acid composition. Abstract The effect of whole linseeds or hemp seeds on milk production, energy and nitrogen balance, and methane emission was studied in 12 Alpine goats using respiration chambers. Diets tested were a control diet (C) and two diets supplemented with whole linseeds (L) or hemp seeds (H) at 9.3% on a dry matter (DM) basis. DM intake was similar among treatments, whereas DM and organic matter digestibility were lower for L compared to C. Milk yield (2.30 kg/d on average) and rumen fermentation profile were not affected by treatments. Treatment also did not affect the milk composition, with the exception of fat, which was higher in H and L compared to C (4.21, 3.94, and 3.20%, respectively). Oilseed supplementation caused a reduction in the concentration of de novo fatty acids (FA) (41.1, 48.8, and 64.1% of FA, for L, H, and C, respectively). Moreover, L and H diets reduced the sum of saturated FA, and increased monounsaturated FA, whereas only the L diet increased the concentration of polyunsaturated FA. Regarding methane production, and nitrogen and energy balances, no differences were registered among the diets. Our research indicates that including whole linseeds and hemp seeds in the dairy goat diet is an effective strategy for increasing milk fat content and positively modifying the milk FA composition, without a change in nitrogen and energy balances, but also without a reduction in enteric methane emission.

Abstract
Feed is the main factor impacting the composition and quality of milk of dairy animals. Therefore, the present review explores the effects of feed and nutrition on milk fat content and levels of healthy fatty acids (FA) in milk consumed by humans. Milk and dairy products are two main sources of healthy and unhealthy FA in human nutrition. The concentrations of FA in milk depend mainly on diets; therefore, milk FA concentrations and ratios can be greatly altered by some feeding strategies. Dietary supplementation of the diets of dairy livestock with vegetable seeds or oils, microalgae and phytogenic feed additives, and feeding of some grasses can enhance the contents of healthy FA, including n-3 FA, α-linolenic acid, conjugated linoleic acid (CLA) and, generally, unsaturated FA in milk and dairy products. Enrichment of milk with healthy FA may make milk a source of anticarcenogens (CLA and polyphenols) for human health. This review, therefore, focusses on the current research findings on enrichment of milk with healthy FA and summarizes some effective supplementation strategies to alter milk FA profile.

Abstract
Metabolome profiling in biological fluids is an interesting approach for exploring markers of methane emissions in ruminants. In this study, a multiplatform metabolomics approach was used for investigating changes in milk metabolic profiles related to methanogenesis in dairy cows. For this purpose, 25 primiparous Holstein cows at similar lactation stage were fed the same diet supplemented with (treated, n = 12) or without (control, n = 13) a specific antimethanogenic additive that reduced enteric methane production by 23% with no changes in intake, milk production, and health status. The study lasted 6 wk, with sampling and measures performed in wk 5 and 6. Milk samples were analyzed using 4 complementary analytical methods, including 2 untargeted (nuclear magnetic resonance and liquid chromatography coupled to a quadrupole-time-of-flight mass spectrometer) and 2 targeted (liquid chromatography-tandem mass spectrometry and gas chromatography coupled to a flame ionization detector) approaches. After filtration, variable selection and normalization data from each analytical platform were then analyzed using multivariate orthogonal partial least square discriminant analysis. All 4 analytical methods were able to differentiate cows from treated and control groups. Overall, 38 discriminant metabolites were identified, which affected 10 metabolic pathways including methane metabolism. Some of these metabolites such as dimethylsulfoxide, dimethylsulfone, and citramalic acid, detected by nuclear magnetic resonance or liquid chromatography-mass spectrometry methods, originated from the rumen microbiota or had a microbial-host animal co-metabolism that could be associated with methanogenesis. Also, discriminant milk fatty acids detected by targeted gas chromatography were mostly of ruminal microbial origin. Other metabolites and metabolic pathways significantly affected were associated with AA metabolism. These findings provide new insight on the potential role of milk metabolites as indicators of enteric methane modifications in dairy cows.

Abstract
Methane (CH4) emissions pose a serious problem for the environmental sustainability of ruminant production. The aim of the present study was to explore the usefulness of the intramuscular fatty acid (FA) profile to estimate CH4 production of lambs fattened under intensive feeding systems. A statistical regression analysis of intramuscular FA derived from ruminal metabolism was carried out to assess the best predictive model of CH4 production (g/d) in lambs fed with different diets. CH4 was calculated with three distinct equations based on organic matter digestibility (OMD) at maintenance feeding levels. The OMD of the experimental diets was determined in an in vivo digestibility trial by means of the indicator method. Regression models were obtained by stepwise regression analysis. The three optimized models showed high adjusted coefficients of determination (R2adj = 0.74-0.93) and concordance correlation coefficients (CCC = 0.89-0.98), as well as small root mean square prediction errors (RMSPE = 0.29-0.40 g/d). The best single predictor was vaccenic acid (trans-11 C18:1), a bioactive FA that is formed in the rumen to a different extent depending on dietary composition. Based on our data and further published lamb research, we propose a novel regression model for CH4 production with excellent outcomes: CH4 (g/d) = -1.98 (±1.284)-0.87 (±0.231) × trans-11 C18:1 + 0.79 (±0.045) × BW (R2adj = 0.97; RMSPE = 0.76 g/d; CCC = 0.98). In conclusion, these results indicate that specific intramuscular FA and average BW during fattening could be useful to predict CH4 production of lambs fed high concentrate diets.

Abstract
BACKGROUND A robust proxy for estimating methane (CH4 ) emissions of individual dairy cows would be valuable especially for selective breeding. This study aimed to improve the robustness and accuracy of prediction models that estimate daily CH4 emissions from milk Fourier transform mid-infrared (FT-MIR) spectra by (i) increasing the reference dataset and (ii) adjusting for routinely recorded phenotypic information. Prediction equations for CH4 were developed using a combined dataset including daily CH4 measurements (n = 1089; g d-1 ) collected using the SF6 tracer technique (n = 513) and measurements using respiration chambers (RC, n = 576). Furthermore, in addition to the milk FT-MIR spectra, the variables of milk yield (MY) on the test day, parity (P) and breed (B) of cows were included in the regression analysis as explanatory variables. RESULTS Models developed based on a combined RC and SF6 dataset predicted the expected pattern in CH4 values (in g d-1 ) during a lactation cycle, namely an increase during the first weeks after calving followed by a gradual decrease until the end of lactation. The model including MY, P and B information provided the best prediction results (cross-validation statistics: R2 = 0.68 and standard error = 57 g CH4 d-1 ). CONCLUSIONS The models developed accounted for more of the observed variability in CH4 emissions than previously developed models and thus were considered more robust. This approach is suitable for large-scale studies (e.g. animal genetic evaluation) where robustness is paramount for accurate predictions across a range of animal conditions. © 2020 Society of Chemical Industry.

Abstract
An experiment was conducted to determine the effects of two levels of rumen undegradable protein (RUP) without or with whole or extruded flaxseed on milk yield, milk component, milk fatty acids (FAs) profile and plasma metabolites in transition ewes. Three weeks before and after lambing, seventy-two Baluchi ewes were used in a completely randomized design with a 3 × 2 factorial arrangement of treatments. The treatments contained 1) no flaxseed + 20% RUP (no flaxseed, low RUP [NFLR]); 2) no flaxseed + 40% RUP (no flaxseed, high RUP [NFHR]); 3) 10% whole flaxseed + 20% RUP (whole flaxseed, low RUP [WFLR]); 4) 10% whole flaxseed + 40% RUP (whole flaxseed, high RUP [WFHR]); 5) 10% extruded flaxseed + 20% RUP (extruded flaxseed, low RUP [EFLR]), and 6) 10% extruded flaxseed + 40% RUP (extruded flaxseed, high RUP [EFHR]). Ewes fed 10% extruded flaxseed exhibited higher (p < 0.001) dry matter intake (DMI) and colostrum yield (p < 0.1) compared to other treatments. Two types of flaxseed and RUP levels had no significant effect on milk yield, but milk fat and protein contents decreased and increased in diets containing 40% RUP, respectively. Ewes fed extruded flaxseed produced milk with lower concentrations of saturated fatty acids (SFA) and higher α-linolenic and linoleic acids and also polyunsaturated fatty acids (PUFA) compared to other groups (p < 0.05). During post-lambing, the ewes fed diets containing flaxseed exhibited higher concentration of serum non-esterified FAs (NEFA) compared to diets without flaxseed (p < 0.01). The concentration of serum β-hydroxybutyric acid (BHBA) decreased in the diets containing flaxseed types at pre-lambing, but increased in diets containing extruded flaxseed at post-lambing (p < 0.01). The serum glucose concentration of ewes (pre and post-lambing) which consumed diets containing extruded flaxseed or 40% RUP increased, but blood urea concentration was elevated following supplementation of diet with whole flaxseed or 40% RUP (p < 0.001). In conclusion, utilization of 10% extruded flaxseed in the diets of transition ewes had positive effects on animal performance with favorable changes in milk FAs profile. However, there is no considerable advantage to supply more than 20% RUP level in the diet of transition dairy sheep.

Simple Summary Currently, functional foods are gaining widespread attention. Polyunsaturated fatty acids (PUFA) and antioxidant compounds have beneficial effects on health. It is possible to increase the concentration of these compounds in the milk obtained from dairy cows by manipulating their diets, thereby improving milk quality and consequently the health of animals and humans who consume this milk. Annatto seed (Bixa orellana L.) is a source of antioxidants, whereas linseed oil is rich in omega 3 fatty acid. We evaluated the inclusion of annatto seeds and linseed oil in the diets of dairy cows and their effects on dry matter intake (DMI), nutrient digestibility, milk yield, milk composition and antioxidant capacity in milk and blood. There was no effect of treatment on nutrient digestibility and antioxidant capacity, but the addition of annatto seeds decreased DMI and milk production and linseed oil supplementation reduced milk fat content. Abstract This study aimed to evaluate the effects of annatto seeds, linseed oil and their combination on DMI, apparent total tract digestibility, antioxidant capacity and milk composition of dairy cows. Four lactating Holstein cows (120 ± 43 days in milk; 15.98 ± 2.02 kg of milk/day, mean ± SD) were allocated in a 4 × 4 Latin square with a 2 × 2 factorial arrangement (with or without annatto seeds at 15 g/kg of dry matter (DM); with or without linseed oil at 30 g/kg of DM) and provided four different diets: control (no annatto seeds or linseed oil); annatto seeds (15 g/kg of DM); linseed oil (30 g/kg of DM); and a combination of both annatto seeds and linseed oil. Annatto seeds reduced DM intake, and milk yield, protein and lactose, but increased content of fat, total solids and short chain fatty acid, with no effect on total antioxidant capacity of milk. Linseed oil supplementation decreased medium chain fatty acid proportion and n-6/n-3 ratio, conversely it increased long chain fatty acids and n-3 fatty acid content of milk, ether extract intake and total-tract digestibility. Thus, linseed oil supplementation in dairy cow diets improved the milk FA profile but decreased milk fat concentration, whereas annatto seeds did not influence antioxidant capacity and depressed feed intake and milk yield.

Abstract
Worldwide milk production is predominantly founded on indoor, high-concentrate feeding systems, whereas pasture-based feeding systems are most common in New Zealand and Ireland but have received greater attention recently in countries utilizing conventional systems. Consumer interest in 'pasture-fed' dairy products has also increased, arising from environmental, ethical, and nutritional concerns. A substantial body of research exists describing the effect of different feeding strategies on the composition of milk, with several recent studies focusing on the comparison of pasture- and concentrate-based feeding regimes. Significant variation is typically observed in the gross composition of milk produced from different supplemental feeds, but various changes in the discrete composition of macromolecular components in milk have also been associated with dietary influence, particularly in relation to the fatty acid profile. Changes in milk composition have also been shown to have implications for milk and dairy product processability, functionality and sensory properties. Methods to determine the traceability of dairy products or verify marketing claims such as 'pasture-fed' have also been established, based on compositional variation due to diet. This review explores the effects of feed types on milk composition and quality, along with the ultimate effect of diet-induced changes on milk and dairy product functionality, with particular emphasis placed on pasture- and concentrate-based feeding systems.

Abstract
Milk products are an important component of human diets, with beneficial effects for human health, but also one of the major sources of nutritionally undesirable saturated fatty acids (SFA). Recent discoveries showing the importance of the rumen microbiome on dairy cattle health, metabolism and performance highlight that milk composition, and potentially milk SFA content, may also be associated with microorganisms, their genes and their activities. Understanding these mechanisms can be used for the development of cost-effective strategies for the production of milk with less SFA. This work aimed to compare the rumen microbiome between cows producing milk with contrasting FA profile and identify potentially responsible metabolic-related microbial mechanisms. Forty eight Holstein dairy cows were fed the same total mixed ration under the same housing conditions. Milk and rumen fluid samples were collected from all cows for the analysis of fatty acid profiles (by gas chromatography), the abundances of rumen microbiome communities and genes (by whole-genome-shotgun metagenomics), and rumen metabolome (using 500 MHz nuclear magnetic resonance). The following groups: (i) 24 High-SFA (66.9-74.4% total FA) vs. 24 Low-SFA (60.2-66.6%% total FA) cows, and (ii) 8 extreme High-SFA (69.9-74.4% total FA) vs. 8 extreme Low-SFA (60.2-64.0% total FA) were compared. Rumen of cows producing milk with more SFA were characterized by higher abundances of the lactic acid bacteria Lactobacillus, Leuconostoc, and Weissella, the acetogenic Proteobacteria Acetobacter and Kozakia, Mycobacterium, two fungi (Cutaneotrichosporon and Cyphellophora), and at a lesser extent Methanobrevibacter and the protist Nannochloropsis. Cows carrying genes correlated with milk FA also had higher concentrations of butyrate, propionate and tyrosine and lower concentrations of xanthine and hypoxanthine in the rumen. Abundances of rumen microbial genes were able to explain between 76 and 94% on the variation of the most abundant milk FA. Metagenomics and metabolomics analyses highlighted that cows producing milk with contrasting FA profile under the same diet, also differ in their rumen metabolic activities in relation to adaptation to reduced rumen pH, carbohydrate fermentation, and protein synthesis and metabolism.

Abstract
Sub-Saharan African (SSA) countries consist of ~200 million livestock owners who utilise marginal rangelands as a feed resource base for their animals. These rangelands offer various resources to the communities and are in-turn vulnerable to climate change related challenges. Currently, information on greenhouse gases (GHG) emission from SSA rangelands is heavily dependent on the generic values generated by the Intergovernmental Panel on Climate Change (IPCC) Tier I trajectories on various aspects of the environment. There is, therefore, a need to identify research gaps between the dynamics and influences of environmental components, highlight their magnitude and potential aggregate contribution towards GHG emission in an SSA context. Rangeland sustainability, weather patterns, soils, plant biodiversity, and current methods used to measure GHG emission from rangelands are influenced by institutional, community, and national policy frameworks. Various intertwined environmental components exist within the SSA rangeland ecosystems and research has not extensively covered such interactions. It is crucial to generate a database that includes information of in-situ trajectories on GHG emission from soil properties, vegetation image maps using remote sensing and geographic information system, plant biodiversity indices, climatology, and animal husbandry aspects.

Abstract
The study aimed to evaluate the effects of linseed and oregano supplementation to the diet of goats on fatty acid profile and sensory properties of Padraccio, a typical cheese produced during spring through summer in the Basilicata region (southern Italy). Extruded linseed and dried oregano inflorescences were integrated in the pelleted concentrate supplementation (500 g/head per day) in 21 grazing goats that were randomly assigned, 7 per group, to the following experimental treatments: concentrate, concentrate with addition of linseed, and concentrate with addition of linseed and oregano. Pooled milk from each group was used in cheesemaking. From a nutritional perspective, integration of extruded linseed in the goat diet improved the fatty acid profile of Padraccio cheese. Moreover, the cheese from this group evidenced the highest scoring on color, flavor, texture, and overall liking.

Abstract
Low-input (LI) dairy farming, relying heavily on grazing, is increasing in popularity for perceived sustainability, welfare, and milk nutritional quality benefits. However, there is little research into the breed suitability for these systems. The popular Holstein–Friesians are not well-suited to LI production as, to achieve their potential high yields, they require high levels of concentrate intakes and veterinary inputs. Holstein–Friesians were traditionally bred for high milk yields, which often correlate negatively with functional traits, such as fertility and health. This drives the need for alternative breed choices, and UK dairy farmers use several crossbreeding practices. Additionally, classic measures of production efficiency (kilogram feed per liter of milk) are not the sole priority in LI systems, which also aim for improved health, fertility, forage conversion, and milk quality. This study aimed to explore the effect of breeding strategy on LI and organic production in dairy systems, collecting data from 17 farms throughout England and Wales: 7 organic and 10 low-input conventional systems with both purebred and crossbred cows from different breeds. Records from 1,070 cows were collected, including background data, health, fertility, breeding, and parity. Additionally, milk was analyzed on four occasions (autumn 2011 and winter, spring, and summer 2012). Principal components analysis was used to visualize the effect of management, Farm ID, and stage of lactation on LI production. The analysis clustered cows by Farm ID, showing that individual management practice on each farm had the greatest impact on various production traits. Cows were allocated a composite score based on their yield, health records, and milk fatty acid profile, and a linear mixed-effects model indicated (p < 0.01) that crossbred New Zealand Friesian cows scored highest, whereas Dairy Shorthorn cows scored the lowest. This paper highlights weaknesses in current breeding programs for LI and organic farms in the UK, in terms of the alignment of breeds with husbandry practices. Additional research is needed to explore any gene by environment interactions to meet the true potential of individual cows and certain breeds under LI and organic management.

Abstract
There is scarce information on whether inhibition of rumen methanogenesis induces metabolic changes on the host ruminant. Understanding these possible changes is important for the acceptance of methane-reducing practices by producers. In this study we explored the changes in plasma profiles associated with the reduction of methane emissions. Plasma samples were collected from lactating primiparous Holstein cows fed the same diet with (Treated, n = 12) or without (Control, n = 13) an anti-methanogenic feed additive for six weeks. Daily methane emissions (CH4, g/d) were reduced by 23% in the Treated group with no changes in milk production, feed intake, body weight, and biochemical indicators of health status. Plasma metabolome analyses were performed using untargeted [nuclear magnetic resonance (NMR) and liquid chromatography-mass spectrometry (LC–MS)] and targeted (LC–MS/MS) approaches. We identified 48 discriminant metabolites. Some metabolites mainly of microbial origin such as dimethylsulfone, formic acid and metabolites containing methylated groups like stachydrine, can be related to rumen methanogenesis and can potentially be used as markers. The other discriminant metabolites are produced by the host or have a mixed microbial-host origin. These metabolites, which increased in treated cows, belong to general pathways of amino acids and energy metabolism suggesting a systemic non-negative effect on the animal.

Abstract
This study aimed to infer the genetic parameters of five enteric methane emissions (EME) predicted from milk infrared spectra (13 models). The reference values were estimated from milk fatty acid profiles (chromatography), individual model-cheese, and daily milk yield of 1158 Brown Swiss cows (85 farms). Genetic parameters were estimated, under a Bayesian framework, for EME reference traits and their infrared predictions. Heritability of predicted EME traits were similar to EME reference values for methane yield (CH4/DM: 0.232-0.317) and methane intensity per kg of corrected milk (CH4/CM: 0.177-0.279), smaller per kg cheese solids (CH4/SO: 0.093-0.165), but greater per kg fresh cheese (CH4/CU: 0.203-0.267) and for methane production (dCH4: 0.195-0.232). We found good additive genetic correlations between infrared-predicted methane intensities and the reference values (0.73 to 0.93), less favorable values for CH4/DM (0.45-0.60), and very variable for dCH4 according to the prediction method (0.22 to 0.98). Easy-to-measure milk infrared-predicted EME traits, particularly CH4/CM, CH4/CU and dCH4, could be considered in breeding programs aimed at the improvement of milk ecological footprint.

Abstract
This study evaluated the effect of flax meal (FM) and barley rootlets (BR) in Holstein dairy cows compound feeds (CFs) in order to assess their effects on the quality (physico-chemical parameters and fatty acids composition) and quantity (yield) of raw milk. The trial used a number of 15 multiparous Holstein dairy cows, at 27 weeks midlactation stage, averaging 624.19 kg of BW, with an initial average milk yield of 22.36 litres/day. The cows were divided in 3 groups (C, FM and FMBR diet, respectively), for 63 days. Cows were fed twice/day, and received a basic concentrate mix (corn, soybean meal, sunflower meal and wheat bran) and roughage (alfalfa hay and corn silage). The use of FM in dairy cows' CFs resulted significant increase of milk fatty acids (FA) and milk yield. At the end of the trial for both experimental groups (FM and FMBR), the C18: 3n3 FA was significantly higher, (0.526% and 0.522% vs. 0.23% C group of total FAMEs), representing a good source of n3. This indicates that the fatty acid addition from FM was favourable to the C18: 3n3 fatty acid in milk.

Abstract
High-throughput phenotyping technologies are growing in importance in livestock systems due to their ability to generate real-time, non-invasive, and accurate animal-level information. Collecting such individual-level information can generate novel traits and potentially improve animal selection and management decisions in livestock operations. One of the most relevant tools used in the dairy and beef industry to predict complex traits is infrared spectrometry, which is based on the analysis of the interaction between electromagnetic radiation and matter. The infrared electromagnetic radiation spans an enormous range of wavelengths and frequencies known as the electromagnetic spectrum. The spectrum is divided into different regions, with near- and mid-infrared regions being the main spectral regions used in livestock applications. The advantage of using infrared spectrometry includes speed, non-destructive measurement, and great potential for on-line analysis. This paper aims to review the use of mid- and near-infrared spectrometry techniques as tools to predict complex dairy and beef phenotypes, such as milk composition, feed efficiency, methane emission, fertility, energy balance, health status, and meat quality traits. Although several research studies have used these technologies to predict a wide range of phenotypes, most of them are based on Partial Least Squares (PLS) and did not considered other machine learning (ML) techniques to improve prediction quality. Therefore, we will discuss the role of analytical methods employed on spectral data to improve the predictive ability for complex traits in livestock operations. Furthermore, we will discuss different approaches to reduce data dimensionality and the impact of validation strategies on predictive quality.

Abstract
We evaluated the between-cow (b-cow) variation and repeatability in omasal and milk fatty acids (FA) related to methane (CH4) emission. The dataset was originated from 9 studies with rumen-cannulated dairy cows conducted using either a switch-back or a Latin square design. Production of CH4 per mole of VFA (Y_CH4VFA) was calculated based on VFA stoichiometry. Experiment, diet within experiment, period within experiment, and cow within experiment were considered as random factors. Empirical models were developed between the variables of interest by univariate and bivariate mixed model regression analysis. The variation associated with diet was higher than the b-cow variation with low repeatability (< 0.25) for milk odd- and branch-chain FA (OBCFA). Similarly, for de novo synthesized milk FA, diet variation was ~ 3-fold greater than the b-cow variation; repeatability for these FA was moderate to high (0.34-0.58). Also, for both cis-9 C18:1 and cis-9 cis-12 cis-15 C18:3 diet variation was more than double the b-cow variation, but repeatability was moderate. Among the de novo milk FA, C4:0 was positively related with stoichiometric Y_CH4VFA, while for OBCFA, anteiso C15:0 and C15:0 were negatively related with it. Notably, when analyzing the relationship between omasal FA and milk FA we observed positive intercept estimates for all the OBCFA, which may indicate endogenous post-ruminal synthesis of these FA, most likely in the mammary gland. For milk iso C13:0, iso C15:0, anteiso C15:0, and C15:0 were positively influenced by omasal proportion of their respective FA and by energy balance. In contrast, the concentration of milk C17:0, iso C18:0, C18:0, cis-11 C18:1, and cis-9 cis-12 cis-15 C18:3 were positively influenced by omasal proportion of their respective FA but negatively related to calculated energy balance. Our findings demonstrate that for most milk FA examined, a larger variation is attributed to diet than b-cow differences with low to moderate repeatability. While some milk FA were positively or negatively related with Y_CH4VFA, there was a pronounced effect of calculated energy balance on these estimates. Additionally, even though OBCFA have been indicated as markers of rumen function, our results suggest that endogenous synthesis of these FA may occur, which therefore, may limit the utilization of milk FA as a proxy for CH4 predictions for cows fed the same diet.

Abstract
Simple Summary Grape marc comprises the skins, seeds and stems of grapes remaining after grapes are pressed to make wine. Globally, about nine million tonnes of grape marc are produced annually. However, little is known about the comparative nutritional value of grape marc from red and white grapes and their effects on milk production and methane emissions when fed to dairy cows. Our experiment assessed the potential role of grape marc as a feed source for the grazing based, Australian dairy industry. We fed diets based on harvested perennial ryegrass to lactating dairy cows and compared milk production and methane emissions when grape marc from either red or white grapes was substituted for some of the perennial ryegrass. Diets containing grape marc from either red or white grapes equally decreased milk yields by approximately 10% and methane emissions by 15%. When fed to dairy cows, grape marc reduces methane emissions but at the cost of decreased milk production. The effects on methane emissions were mainly mediated by the high concentrations of lignin and fat in grape marc while decreased milk production was due to decreased intake of metabolizable energy. Abstract Globally, annual production of grape marc (GM), the residue of skins, seeds and stems remaining after making wine, has been estimated to be approximately nine million tonnes. No previous studies have compared effects on milk production and methane emissions when GM from either red or white grapes was fed to dairy cows. This experiment examines the effects of partial replacement of a perennial ryegrass (Lolium perenne L.) based diet with GM from either red or white grapes on yield and composition of milk and methane emissions. Thirty-two Holstein dairy cows in early lactation were offered either a control diet containing 15.0 kg dry matter (DM) of freshly harvested perennial ryegrass and 5.2 kg of a concentrate mix, or a diet similar to the control diet but with 5 kg DM of ryegrass replaced with 5 kg DM of GM from red grapes (RGM), or a diet similar to the RGM diet except the GM was from white grapes (WGM). Individual cow feed intakes, milk yields, and methane emissions were measured. Both diets containing GM decreased milk yields by approximately 10% and methane emissions by 15%. When fed to dairy cows, GM reduces methane emissions but at the cost of decreased milk production.

Abstract
Researching the distinguishing factors of nutritional milk quality is key to sustainable production and addresses increasing media and scientific scrutiny regarding human health effects and ecological impacts of dairy products. Modern Western diets have high omega-6 relative to omega-3 fatty acid (FA) consumption. This ratio in milk can be manipulated by management practices; increasing forage in dairy diets raises omega-3 in milk. Whilst studies identify higher concentrations of nutritionally beneficial FAs in organic dairy, milk from 100% forage-fed cows in the UK has not been investigated. This study explores differences in FA composition between supermarket conventional and organic and Pasture for Life Association (PFLA) milk, collected in April, July and October, 2017. PFLA milk had higher concentrations of conjugated linoleic acid (+94%) and omega-3 (+92%) than conventional milk. Additionally, concentrations of palmitic acid (+11%), omega-6 (+69%) and the ratio of omega-6/omega-3 (+201%) were higher in conventional than PFLA milk. PFLA milk had higher concentrations of alpha-linolenic acid (+39%), conjugated linoleic acid (+30%) and omega-3 (+21%) and lower concentrations of omega-6 (−36%) and a lower ratio of omega-6/omega-3 (−44%) than organic milk. This supports previous studies and demonstrates the scope to improve milk FA profiles further for potential health benefits through pasture-based management.

Abstract
This study quantifies the effects of extruded linseed and soybean (ELS) dietary supplementation on milk yield, composition, and fatty acid profiles, as well as first-service conception rate in Holstein dairy cows. Seventy-eight open Holstein dairy cows were divided into two groups: (1) a control, which received a basal diet; and (2) a test group, which received a basal diet supplemented with the ELS (650 g/kg of extruded linseed and 150 g/kg of extruded soybean) at a rate of 100 g/kg. In the ELS group, milk yield per day and solid not fat (SNF) yield increased by 3.26% and 0.88%, respectively, in relation to the control. Percentage milk fat decreased significantly by 1.4% in the ELS group when compared with the control. The ELS supplement resulted in a decrease in saturated fatty acids (SFAs) and an increase in monounsaturated (MUFAs) and polyunsaturated fatty acids (PUFAs) in milk. In conclusion, the supplementation of dairy cow feed with 100 g/kg of ELS increases milk yield and milk unsaturated fatty acids (especially MUFAs and PUFAs). ELS supplementation also causes a decrease in percentage fat and SFA levels but does not affect the first-service conception rate or the incidence rate of mastitis.
