Abstract
Mineral composition in milk can affect its nutritional as well as physio-chemical properties of milk and is considered an important trait in the evaluation of milk quality. The composition and concentration of milk minerals could be altered with natural source of variation including nutrition and genetics. The effect of diet on milk minerals is well studied. However, genetic effects on the milk minerals have recently gained the attention. This review provides an overview of the genetic variation of milk minerals, and the genomic regions associated with mineral concentration in the milk are also discussed. The difference of milk minerals between breeds and the genetic parameters including heritability estimates and correlation among minerals indicates that milk minerals are under strong genetic control. Recently, the genome-wide association study (GWAS) has explored several regions associated with milk minerals and thus provides a new genetic source for improving the milk quality through genomics-assisted breeding. Hence, a combination of the qualitative and molecular approaches can be exploited to improving the nutritional quality of cattle milk in terms of its mineral composition.

Abstract
In the present study, a ternary phase solvent extraction combined with dispersive liquid-liquid microextraction was developed for the extraction of diazinon, haloxyfop-R-methyl, hexaconazole, diniconazole, and triticonazole from cheese samples. The extracted analytes were determined using gas chromatography. In this work, first, the analytes were extracted into an organic phase and then enriched using a dispersive liquid-liquid microextraction. Deep eutectic solvent-based ferrofluid was synthesized and used as an extraction solvent in the dispersive liquid-liquid microextraction step, which makes the method fast and green. After optimization of experimental conditions, under the best extraction conditions, limits of detection and quantification were found in the ranges of 0.18-0.39 and 0.6-1.3 ng g-1, respectively. Enrichment factors and extraction recoveries of the analytes ranged from 138-156 and 69-78%, respectively. In the end, the proposed method was successfully applied to assess the studied pesticides in cheese samples.

Abstract
The characteristics of dairy products, such as texture, color, flavor, and nutritional profile, are significantly influenced by the presence of milk fat. However, saturated fatty acids account for 65% of total milk fat. With increased health awareness and regulatory recommendations, consumer preferences have evolved toward low/no saturated fat food products. Reducing the saturated fat content of dairy products to meet market demands is an urgent yet challenging task, as it may compromise product quality and increase production costs. In this regard, oleogels have emerged as a viable milk fat replacement in dairy foods. This review focuses on recent advances in oleogel systems and explores their potential for incorporation into dairy products as a milk fat substitute. Overall, it can be concluded that oleogel can be a potential alternative to replace milk fat fully or partially in the product matrix to improve nutritional profile by mimicking similar rheological and textural product characteristics as milk fat. Furthermore, the impact of consuming oleogel-based dairy foods on digestibility and gut health is also discussed. A thorough comprehension of the application of oleogels in dairy products will provide an opportunity for the dairy sector to develop applications that will appeal to the changing consumer needs.

Abstract
Type 2 diabetes mellitus (T2DM) is a major cause of morbidity and mortality, and it is a major risk factor for the early onset of cardiovascular diseases (CVDs). More than genetics, food, physical activity, walkability, and air pollution are lifestyle factors, which have the greatest impact on T2DM. Certain diets have been shown to be associated with lower T2DM and cardiovascular risk. Diminishing added sugar and processed fats and increasing antioxidant-rich vegetable and fruit intake has often been highlighted, as in the Mediterranean diet. However, less is known about the interest of proteins in low-fat dairy and whey in particular, which have great potential to improve T2DM and could be used safely as a part of a multi-target strategy. This review discusses all the biochemical and clinical aspects of the benefits of high-quality whey, which is now considered a functional food, for prevention and improvement of T2DM and CVDs by insulin- and non-insulin-dependent mechanisms.

Abstract
Buffalo milk contains more polyunsaturated fatty acids than bovine milk. However, it is not clear about the effects of buffalo milk and bovine milk on lipid metabolism. In this study, a mouse model was used to explore the effects of buffalo milk and bovine milk on lipid metabolism in mice. The experiment was divided into three groups: a control group on a normal diet; a bovine milk group infused with bovine milk; a buffalo milk group infused with buffalo milk. We fed three groups of mice (n = 6) for 6 weeks. These results showed that bovine milk and buffalo milk had no effect on body weight gain. Bovine milk increased the content of ApoA1, ApoB and glucose in serum, compared with the control group, but buffalo milk has no profound change in serum ApoB. Remarkably, buffalo milk decreased the content of total cholesterol (TC) and triglyceride (TG) in the liver lipid profile, and also downregulated the expression of the carnitine palmitoyltransferase 2 (Cpt2) gene involved in the fatty acid oxidation in the liver. This study also found that bovine milk and buffalo milk did not cause the expression of pro-inflammatory factors in serum and colon tissues. This experiment proved that buffalo milk has beneficial effects on the regulation of lipid metabolism, and also does not affect the normal growth and pro-inflammatory response of the colon in mice. It provides a theoretical basis for future in-depth research on the special functions of buffalo milk and the development of buffalo milk functional foods.

Abstract
Background: This study aims to investigate the associations between dietary patterns (breakfast, egg, dairy products, and sugared beverage intake frequencies) and physical fitness among Chinese children and adolescents in Shaanxi Province. METHODS: Data were extracted from the Chinese National Survey on Students’ Constitution and Health (CNSSCH). The study ultimately included 7305 participants (48.4% male, 51.6% female) aged 6–22 in Shaanxi Province, China. Multiple linear regression was used to examine the association of the frequency of breakfast, egg, dairy product, and sugared beverage intakes with physical fitness. RESULTS: The frequency of breakfast, egg, and dairy product intakes were all independently and positively associated with the level of physical fitness. The frequency of sugared beverage intake was negatively associated with the level of physical fitness. CONCLUSION: Healthier dietary patterns (i.e., higher breakfast, egg, and dairy product intakes and lower sugared beverage intake) were associated with greater physical fitness. Specifically, maintaining a healthy dietary pattern of breakfast, egg, and dairy product intakes can positively affect the strength and endurance performance of children and adolescents. Increased dairy product intake plays a crucial part in boosting the physical fitness total scores of children and adolescents.

Abstract
Assessing the consumer’s awareness of the diet-health relationship, this study presents the fatty acid composition of cow’s milk available on Bulgarian market. Over a 5-year period, 100 samples of pasteurised cow’s milk and 135 samples cow’s yogurt were analysed by gas chromatography (ISO 15885:2002). The saturated fatty acids predominated - average amount 70.1% for milk and 71.1% for yogurt. The unsaturated fatty acids proportions were 29.9% and 28.9% respectively. Seasonal variations in the fatty acid composition of milk were detected, due to feeding practices. Non-milk fat was identified in 5 yogurt samples, while all pasteurised milk samples were not adulterated. This study provides the first scientific information for fatty acid composition of cow’s milk on Bulgarian market with respect to dietary intake estimation.

Abstract
Milk extracellular vesicles (EVs) are rich in abundant bioactive macromolecules, such as glycoconjugates, proteins, lipids and nucleic acids, and these vesicles might transmit signals to human consumers. However, it remains to be determined whether milk EVs import new pathogens to humans or are beneficial for human health. Here, C57BL/6 female and male mice were randomly divided into 4 EV dose levels (0, 1.5 × 109 p g-1, 1.0 × 1010 p g-1 and 1.5 × 1010 p g-1). Based on the alterations in body weight, the control group (0 p g-1, PBS) and the middle treatment group (1.0 × 1010 p g-1) were chosen for further analysis of the effects of EVs on the gut microbiota and blood metabolites in mice, by 16S rRNA gene sequencing and untargeted metabolomics, respectively. We found that milk EVs increased the abundance of "beneficial" microbes such as Akkermansia, Muribaculum and Turicibacter, while decreased the level of "harmful" bacteria Desulfovibrio. Serum metabolites showed that EVs mainly changed the lipid and amino acid metabolism, and especially increased several serum anti-inflammatory factors, which might be beneficial for inflammation and other metabolic diseases. The results of KEGG analysis suggested that the enriched pathways were the intestinal immune network for IgA production, retinol metabolism, and D-glutamine and D-glutamate metabolism. Taken together, the positive effect of milk EVs on serum nutrient metabolism without promoting "harmful" bacterial colonization in female and male mice may indicate that they are safe bioactive molecules, and some of the changes they induce may provide protection against certain diseases.

Abstract
OBJECTIVES In India, although nutritional conditions have improved, a high prevalence of anthropometric failure is still reported in children. Unfortunately, there are knowledge gaps surrounding nutrient and anthropometric shortcomings as well as dietary patterns. More than half of children are consuming a vegetarian diet. This study aimed to evaluate the effects of dietary adequacy levels on anthropometric failure in 5772 vegetarian children (ages 6-23 mo) satisfying minimum dietary diversity. METHODS Data were collected from the National Family Health Survey 2015-16. We created three food combinations: maximum adequacy (dairy and four food groups), medium adequacy (dairy and three food groups), and minimum adequacy (four food groups excluding dairy). We calculated odds ratios (ORs) for the association between dietary adequacy levels and anthropometric failures with 95% confidence intervals (CIs) using logistic regression models. The modification effect of breastfeeding status was also explored. RESULTS Approximately 35% of children had stunted growth. ORs showed a significant increase in the risk of anthropometric failure, notably wasting, and underweight in children with minimum-adequacy diets (OR, 1.46; 95% CI, 1.15-1.86) compared with children with maximum-adequacy diets. Those associations were more pronounced among children who were not breastfed (OR, 2.44; 95% CI, 1.19-5.00) than among children who were (OR, 1.35; 95% CI, 1.04-1.74; P value for the interaction = 0.07). Similar associations were observed for wasting among children who were not breastfed (OR, 2.82; 95% CI, 1.34-5.95) and who were breastfed(OR, 1.12; 95% CI, 0.85-1.5; P value for the interaction = 0.03). CONCLUSIONS Dairy is an essential source of nutrients that are required for healthy growth and development in children younger than 2 y, even if they satisfy minimum dietary diversity conditions in India.

Abstract
Measuring the mineral composition of milk is of major interest in the dairy sector. This study aims to develop and validate robust multi-breed and multi-country models predicting the major minerals through milk mid-infrared spectrometry using partial least square regressions. A total of 1281 samples coming from five countries were analyzed to obtain spectra and in ICP-AES to measure the mineral reference contents. Models were built from records coming from four countries (n = 1181) and validated using records from the fifth country, Austria (n = 100). The importance of including local samples was tested by integrating 30 Austrian samples in the model while validating with the remaining 70 samples. The best performances were achieved using this second set of models, confirming the need to cover the spectral variability of a country before making a prediction. Validation root mean square errors were 54.56, 63.60, 7.30, 59.87, and 152.89 mg/kg for Na, Ca, Mg, P, and K, respectively. The built models were applied on the Walloon milk recording large-scale spectral database, including 3,510,077. The large-scale predictions on this dairy herd improvement database provide new insight regarding the minerals' variability in the population, as well as the effect of parity, stage of lactation, breeds, and seasons.

Increasing dietary calcium intake of children and their parents: a randomised controlled trial. Public Health Nutr 2021; 24:3075-3086. Abstract
OBJECTIVE Approximately 25 % of Canadian children aged 4-8 years fail to meet the recommended dietary allowance (RDA) of calcium (Ca). Young children's food choices are primarily determined by their parents. No interventions have directly targeted parents as a medium through which to increase children's Ca consumption. This study compared the effectiveness of a Ca-specific intervention targeted towards parents, with generic dietary advice on the Ca consumption of children aged 4-10 years. DESIGN A parallel two-arm randomised controlled trial was conducted. SETTING The study was conducted across Canada. Both conditions received information on the RDA of Ca and an index of intake requirements. Material sent to the intervention condition included behavioural strategies to increase dietary Ca consumption, information on the benefits of dietary Ca intake and messages addressing perceived barriers to the consumption of Ca-rich foods. PARTICIPANTS A total of 239 parents (93 % mothers) of children aged 4-10 years who consumed less than the RDA of Ca were randomly assigned in a 1:1 allocation ratio. RESULTS There was a significant increase in total Ca intake and Ca from dairy for children at weeks 8, 34 and 52 (P ≤ 0·001) in both conditions. Parental Ca intake and amount spent on dairy products did not significantly increase following the intervention. CONCLUSIONS Provision of daily Ca requirements with regular reminders could impact parents' delivery of Ca-rich foods to their children. This finding is important for public health messaging as it suggests that parents are a potent medium through which to promote Ca intake in children.

Abstract
The behavior of fat globules during the gastric digestion of raw and pasteurized cow, goat, and sheep whole milks was studied using a human gastric simulator. Microstructural and physicochemical analysis revealed that, initially, the coagulation of the milks in the human gastric simulator resulted in the majority of the milk fat globules being entrapped within the curd. As the digestion progressed, the proportion of fat globules entrapped within the aggregated protein matrix (curd) decreased; there was also some flocculation as well as coalescence of the fat globules within the curd. The liberation of the entrapped fat globules from the curd to the liquid phase of the chyme was strongly dependent on the disintegration and hydrolysis of the structured casein network. Surprisingly, the fat globules released (or already present) into the liquid phase of the chyme were not as extensively coalesced as those remaining within the curd. These phenomena were observed to be similar for the raw and pasteurized whole milk of all species. The pasteurized whole milks from all species formed relatively less structured coagula compared with their raw milk counterparts, leading to a greater extent of protein breakdown and, thus, higher proportions of fat release from the pasteurized milk curds. This study provides a deeper understanding of how the curd-forming properties of different mammalian milks in the gastric environment provide controlled delivery of nutrients (such as protein and fat).

Abstract
Dairy consumption has been associated with decreased risk of metabolic syndrome (MetS) in previous studies, but the association may be different according to each type of dairy products and its subgroups. Thus, we conducted an updated meta-analysis of observational studies to examine the association between various dairy products and risk of MetS. The PubMed and Web of Science databases were searched for eligible studies published up to February 2021. In addition, we included unpublished results from Korea National Health and Nutrition Examination Survey, 2013-2018, including 23,319 Korean adults and the elderly. A total of 35 studies (12 cohort studies and 25 cross-sectional studies) with 398,877 subjects were included in the meta-analysis. The pooled relative risks (RR) of MetS for the highest versus lowest categories of dairy consumption was 0.80 [95% confidence interval (CI): 0.72-0.88]. For the type of dairy products, there were also significant inverse associations with milk (RR: 0.83; 95% CI: 0.78-0.89) and yogurt consumption (RR: 0.89; 95% CI: 0.83-0.95). For cheese consumption, however, no significant association was found (RR: 0.98; 95% CI: 0.86-1.11). Our findings suggest that milk and yogurt consumption is inversely associated with the risk of MetS, but not cheese consumption.

Abstract
Recent discoveries in the “omics” field and the growing focus on preventive health have opened new avenues for personalized nutrition (PN), which is becoming an important theme in the strategic plans of organizations that are active in healthcare, food, and nutrition research. PN holds great potential for individual health optimization, disease management, public health interventions, and product innovation. However, there are still multiple challenges to overcome before PN can be truly embraced by the public and healthcare stakeholders. The diagnosis and management of lactose intolerance (LI), a common condition with a strong inter-individual component, is explored as an interesting example for the potential role of these technologies and the challenges of PN. From the development of genetic and metabolomic LI diagnostic tests that can be carried out in the home, to advances in the understanding of LI pathology and individualized treatment optimization, PN in LI care has shown substantial progress. However, there are still many research gaps to address, including the understanding of epigenetic regulation of lactase expression and how lactose is metabolized by the gut microbiota, in order to achieve better LI detection and effective therapeutic interventions to reverse the potential health consequences of LI.

Abstract
Fluid milk consumption among children has declined for decades. Adequate consumption of milk and dairy products, especially during childhood, has beneficial health outcomes for growth, development, and reduced risk of osteoporosis, hypertension, obesity, and cancer during adulthood. Satisfaction with milk flavor, perceived health benefits derived from milk, and habit are primary drivers of lifelong milk consumption. Child preferences and attitudes for milk may differ from those of adults, and as such, understanding and fulfilling the needs of children is crucial to reverse the decline in milk consumption. School meal programs make fluid milk accessible to millions of children each day; however, regulations and school lunch procurement systems in the United States sometimes make it difficult to provide novel or value-added milk products in these programs. Total consumption of all milk types in US schools declined by 14.2% from 2008 to 2017, and the percentage of children participating in the school lunch program has also declined. This decline has also been driven by declining average daily participation in the school meal program and may also reflect children's dissatisfaction with the sensory characteristics and the form of milk offered in schools. The change in form of milk offered in schools to lower fat and lower added sugar content in the United States has been driven by government-mandated school lunch calorie and fat requirements. This review describes the current milk consumption trends among children; the structure and basic requirements of the school lunch program in total and for milk; and the intrinsic, extrinsic, and environmental factors that influence child perception, preference, and consumption of fluid milk in the US school system.

Abstract
Background This systematic review and meta-analysis aimed to assess the effects of whey protein on serum lipoproteins and glycemic status in patients with metabolic syndrome (MetS) and related disorders. Methods Online databases, such as Web of Science, Cochrane Library, PubMed and Scopus were systematically searched by two independent authors from inception until 30th April 2020 for English randomized clinical trials investigating the efficacy of whey protein administration in subjects with Mets or related conditions on the parameters of glycemic and lipid control compared to certain control. In order to evaluate the included studies’ methodological quality, Cochrane Collaboration risk of bias tool was applied. Using Cochrane’s Q test and I-square (I2) statistic, the included trials’ heterogeneity was also examined. Using a random-effects model, data were pooled, and weighted mean difference (WMD) was considered as the overall effect size. Results Twenty-two studies were selected to be included in this meta-analysis. Consumption of whey protein resulted in significant reduction of HbA1c (WMD: -0.15; 95% CI: − 0.29, − 0.01) insulin (WMD: -0.94; 95% CI: − 1.68, − 0.21) and homeostasis model assessment-estimated insulin resistance (HOMA-IR) (WMD: -0.20; 95% CI: − 0.36, − 0.05). A significant reduction in triglycerides levels (WMD: -17.12; 95% CI: − 26.52, − 7.72), total cholesterol (WMD: -10.88; 95% CI -18.60, − 3.17), LDL-cholesterol levels (WMD: -8.47 95% CI: − 16.59, − 0.36) and total cholesterol/HDL-cholesterol ratio (WMD: -0.26; 95% CI: − 0.41, − 0.10) was found as well. Conclusions This meta-analysis suggests that supplementation with whey protein had beneficial effect on several indicators of glycemic control and lipid parameters in patients with MetS and related conditions.

Abstract
The effects of the lactation period, breed, and feed on amino acids profile of mare’s milk were investigated. The feed contained two major essential amino acids (EAAs) leucine (7.31 – 10.3 g.kg-1) and arginine (6.37 – 9.59 g.kg-1); it also included minor EAAs methionine (2.11 – 3.05 g.kg-1) and histidine (2.48 – 3.60 g.kg-1). Glu+Gln, Asp+Asn, and proline, major nonessential amino acids (NEAAs), constituted approximately 60% of total NEAAs (TNEAAs). The ratio of total EAAs to NEAAs ranged from 1:1.2 to 1:1.4. Amino acids (AA) content throughout all milk samples varied due to mare’s different conditions and lactation days. Except for the 1P milk sample, total AA content in the 2 – 8Ps specimens caused by differences in breed oscillated from the 2nd to 28th day of lactation within the following limits: 21.9 – 54.6 g.kg-1, 33.6 – 70.7 g.kg-1, 38.1 – 71.2 g.kg-1, 29.46 – 74.2 g.kg-1, 52.2 – 87.1 g.kg-1, 37.9 – 70.3 g.kg-1 and 26.4 – 64.5 g.kg-1, respectively. In relation to TEAAs in milk, the highest EAAs levels were reached in arginine, leucine and lysine ranging between 2.41 – 4.35 g.kg-1, 3.36 – 5.59 g.kg-1 and 2.72 – 4.80 g.kg-1, respectively, while the lowest AAs amounts were indicated in histidine and methionine, 0.91 – 1.58 g.kg-1 and 1.23 – 2.04 g.kg-1 respectively. Total NEAAs content was slightly higher than that of EAAs; the TNEAAs to TEAAs ratio was 1:0.9 proximately. Glu+Gln, Asp+Asn and proline were determined as major NEAAs of milk ranging between, 6.77 – 11.0 g.kg-1, 3.21 – 5.60 g.kg-1 and 1.25 – 2.18 g.kg-1, respectively; levels of NEAAs such as cysteine and glycine oscillated between 0.89 – 1.52 g.kg-1 and 0.64 – 1.15 g.kg-1, respectively. The average TAAs contents caused by breed differences were 62.8 g.kg-1, 42.8 g.kg-1, 44.7 g.kg-1 and 44.8 g.kg-1, respectively, on the 2nd, 5th, 10th, and 28th lactation days.

Abstract
The net action of ruminal bacteria and endogenous bovine enzymes are responsible for cow's milk having the most complex fatty acid profiles among common foods. About 40 monounsaturated fatty acids below 1.5% w/w are known. Analysis of trace and ultratrace fatty acids is a challenge to the highest resolution chromatography even with prior fractionation. We employ solvent-mediated covalent adduct chemical ionization (CACI) tandem mass spectrometry (MS/MS) to enable rapid, unambiguous identification of unsaturated fatty acid methyl esters (FAME) at high sensitivity. Fifty-four monounsaturated fatty acids (C10-24) were completely characterized, with the discovery of 15 novel fatty acids including nine at ultratrace levels 10-100 ppm, g/106 g fatty acids (lowest concentration 19:1n-6 (10 ± 11 ppm, w/w (0.001%, w/w))). Ultratrace monoenes were typically odd chain lengths and all analyzed in a single 20 min analysis. These data establish the abundance of 15 new monoene fatty acids in bovine milkfat and a strategy for rapid unambiguous analysis of ultratrace monounsaturated fatty acids.

Abstract
Skeletal muscle aging manifests as a decline in muscle quantity and quality that accelerates with aging, increasing the risk of sarcopenia. Sarcopenia is characterized by a loss of muscle strength and mass, and contributes to adverse health outcomes in older adults. Intervention studies have shown that sarcopenia may be treated by higher protein intake in combination with resistance exercise (RE). In comparison, less is known about the role of whole protein-containing foods in preventing or treating sarcopenia. Liquid milk contains multiple nutrients and bioactive components that may be beneficial for muscle, including proteins for muscle anabolism that, alone or with RE, may have myoprotective properties. However, there is a lack of evidence about the role of milk and its effects on muscle aging. This narrative review considers evidence from three observational and eight intervention studies that used milk or fortified milk, with or without exercise, as an intervention to promote muscle health and function in older adults (aged 50–99 years). The observational studies showed no association between higher habitual milk consumption and muscle-related outcomes. The results of intervention studies using fortified milk in relation to elements of sarcopenia were also negative, with further inconclusive results from the studies using a combination of (fortified) milk and exercise. Although milk contains nutrients that may be myoprotective, current evidence does not show beneficial effects of milk on muscle health in older adults. This could be due to high habitual protein intakes (>1.0 g/kg BW/d) in study participants, differences in the type of milk (low-fat vs whole) and timing of milk consumption, length of interventions, as well as differences in the sarcopenia status of participants in trials. Adequately powered intervention studies of individuals likely to benefit are needed to test the effectiveness of a whole food approach, including milk, for healthy muscle aging.

Abstract
In the current study, we first investigated a method for directly transforming
lactose into galacto-oligosaccharides (GOS) for manufacturing low-lactose and
GOS-enriched skim milk (GSM) and then evaluated its prebiotic potential by
inoculating five strains of Bifidobacterium spp. In addition,
fermented GSM (FGSM) was prepared using a potentially probiotic
Lactobacillus strain and its fermentation characteristics
and antioxidant capacities were determined. We found that GOS in GSM were
metabolized by all five Bifidobacterium strains after
incubation and promoted their growth. The levels of antioxidant activities
including radical scavenging activities and 3-hydroxy-3-methylglutaryl-CoA
reductase inhibition rate in GSM were significantly increased by fermentation
with the probiotic Lactobacillus strain. Moreover, thirty-nine
featured peptides in FGSM was detected. In particular, six peptides derived from
β-casein, two peptides originated from αs1-casein and
κ-casein were newly identified, respectively. Our findings indicate that
GSM can potentially be used as a prebiotic substrate and FGSM can potentially
prevent oxidative stress during the production of synbiotic fermented milk in
the food industry.

Abstract
The aim of this study was to quantify the major sources of variation in the levels of 15 minerals in individual milk samples collected from cows raised in multibreed dairy herds. The herds (n = 27) were classified into 2 categories, according to milk productivity. Milk productivity was based on the net energy of lactating cows' average daily milk yield. Milk samples were collected from 240 cows of 6 different breeds: 3 specialized dairy (Holstein-Friesian, Brown Swiss, and Jersey) and 3 dual-purpose (Simmental, Rendena, and Alpine Grey). The samples were analyzed for macro-elements (Na, Mg, P, S, K, and Ca), essential micro-elements (Mn, Fe, Cu, Zn, and Se), and environmental micro-elements (B, Si, Sr, and Sn), using inductively coupled plasma-optical emission spectrometry. Data were analyzed using a linear mixed model that included fixed effects of days in milk (DIM), parity, breed, and herd productivity, and a random effect of herd-date within productivity level. Results showed that the effect of herd-date varied across minerals. It was especially large for environmental minerals (ranging from 47 to 91% of total variance) and ranged from 11 to 61% for macrominerals and essential microminerals. Milk samples collected from farms with a high level of herd productivity had a richer mineral profile than samples from low-productivity herds. Parity only influenced macrominerals, with the exception of S and Ca, while DIM influenced almost all minerals, with a few exceptions among the environmental elements. Differences in mineral profile were small between specialized and dual-purpose breeds, but they were large within the group of the specialized cows. These breed differences were reduced after adjusting for milk quality and yield, particularly in the case of milk Mg, S, Ca, Mn, and Zn levels. Milk samples from the Jersey and Brown Swiss cows had higher mineral levels (Sn excluded) than milk from the Holstein-Friesian cows; the other breeds of Alpine origin produced milk of intermediate quality. Our findings suggest that breed has a stronger effect on macrominerals and some of the essential microminerals than herd productivity, parity, and DIM. The modification of the mineral profile in milk seems possible for many minerals, but it likely depends on genetics (e.g., breed, selection) and on environmental and management factors in variable proportions according to the mineral considered.

Abstract
This study aimed to examine the phenotypic variation observed in fine milk components, the use of mid-infrared (MIR) spectroscopy to predict these components, and the correlations with other milk production traits. A total of 4116 milk samples were collected from 414 dairy cows from 44 Canadian herds. Overall 3117 samples were analyzed for casein micelle size, 986 and 937 for total and soluble calcium, respectively, and 2054 for lactoferrin. Individual milk MIR spectra were obtained. Linear mixed models with repeated records were used to test the effects of herd nested within breed, breed, days in milk class, parity, and season on milk components. Lactoferrin content in milk increased with stage of lactation and parity number. Prediction equations were developed by partial least squares regression to predict each milk component using MIR spectroscopy, with the greatest coefficient of determination achieved for lactoferrin (0.55). Pearson correlation coefficients for lactoferrin with somatic cell score and protein percentage were 0.49% and 0.40%, respectively. The estimated correlation increased to 0.53% for predicted lactoferrin and protein percentage. The examined fine milk components exhibited variation, but low accuracies for their MIR prediction may limit the utility of this technology for their phenotyping.

Abstract
Origin and quality identification in dairy products is an important issue and also an extremely challenging and complex experimental procedure. The objective of the present work was to compare the metabolite profile of the lipid fraction of organic and conventional bovine milk using NMR metabolomics analysis. 1H-NMR and 1D TOCSY NMR methods of analysis were performed on extracted lipid fraction of lyophilized milk. For this purpose, 14 organic and 16 conventional retail milk samples were collected monthly, and 64 bulk-tank (58 conventional and 6 organics) milk samples were collected over a 14-month longitudinal study in Cyprus. Data were treated with multivariate methods (PCA, PLS-DA). Minor components were identified and quantified, and modification of the currently used equations is proposed. A significantly increased % content of conjugated (9-cis, 11-trans)18:2 linoleic acid (CLA), α-linolenic acid, linoleic acid, allylic protons and total unsaturated fatty acids (UFA) and decreased % content for caproleic acid were observed in the organic samples compared to the conventional ones. The present work confirms that lipid profile is affected by contrasting management system (organic vs. conventional), and supports the potential of NMR-based metabolomics for the rapid analysis and authentication of the milk from its lipid profile.

Abstract
BACKGROUND Calcium intake during early adolescence falls short of requirements for maximum bone accretion. Parents and the home food environment potentially influence children's calcium intakes. This study aimed to quantify parental psychosocial factors (PSF) predicting calcium intakes of Asian, Hispanic, and non-Hispanic white (NHW) early adolescent children from a parental perspective. METHODS This was a cross-sectional study involving the administration of a validated calcium-specific food frequency questionnaire to a convenience sample of children aged 10-13 years and the primary individual responsible for food acquisition in the child's household. Based on Social Cognitive Theory, parental factors potentially associated with children's calcium intake were also assessed via parent questionnaires. The total study sample consisted of 633 parent-child pairs (Asian = 110, Hispanic = 239, NHW = 284). Questionnaires were completed at community-based centers/sites. Outcome measures were the association between parent-child calcium (mg), milk (cups/day), and soda (cans/day) intakes and the predictive value of significant parental PSF towards calcium intakes of their children. Sex-adjusted linear regression and multivariate analyses were performed. RESULTS Calcium intakes of parent-child pairs were positively associated among all ethnic groups (r = 0.296; P < 0.001). Soda intakes were positively associated among Hispanic parent-child pairs only (r = 0.343; P < 0.001). Home availability of calcium-rich foods (CRF), parental rules and expectations for their child's intake of beverages, and parents' calcium intake/role modeling were positively associated with children's calcium intake and overwhelmed all other PSF in multivariate analyses. Significant cultural differences were observed. Parental role modeling was a significant factor among Hispanic dyads only. Multivariate models explained 19-21% of the variance in children's calcium intakes. CONCLUSIONS Nutrition interventions to improve children's calcium intakes should focus on parents and provide guidance on improving home availability of CRF and increasing rules and expectations for the consumption of CRF. Among Hispanic families, interventions promoting parental modeling of desired dietary behaviors may be most successful.

Abstract
PURPOSE Mammographic density is a strong risk factor for breast cancer. Although diet is associated with breast cancer risk, there are limited studies linking adult diet, including milk intake, with mammographic density. Here, we investigate the association of milk intake with mammographic density in premenopausal women. METHODS We analyzed data from 375 cancer-free premenopausal women who had routine screening mammography at Washington University School of Medicine, St. Louis, Missouri in 2016. We used Volpara to measure volumetric percent density, dense volume, and non-dense volume. We collected information on recent milk intake (past 12 months), and categorized skim milk and low/reduced-fat milk intake into 4 groups: < 1/week, 1/week, 2-6 times/week, ≥ 1/day, while whole and soy milk intake were categorized into 2 groups: < 1/week, ≥ 1/week. We used multivariable linear regression model to evaluate the associations of milk intake and log-transformed volumetric percent density, dense volume, and non-dense volume. RESULTS In multivariable analyses, volumetric percent density was 20% (p-value = 0.003) lower in the 1/week group, 14% (p-value = 0.047) lower in the 2-6/week group, and 12% (p-value = 0.144) lower in the ≥ 1/day group (p-trend = 0.011) compared with women who consumed low/reduced-fat milk < 1/week. Attenuated and non-significant associations were observed for low/reduced-fat milk intake and dense volume. There were no associations of whole, skim, and soy milk intake with volumetric percent density and dense volume. CONCLUSIONS Recent low/reduced-fat milk intake was inversely associated with volumetric percent density in premenopausal women. Studies on childhood and adolescent milk intake and adult mammographic density in premenopausal women are needed.

Abstract
Milk has long been recognized to constitute a complete, well-balanced source of the nutrients and energy required to ensure the proper postnatal growth and development of infants. A growing body of evidence suggests the positive effects of dairy products and particularly of milk proteins on linear growth also in older children, both healthy or during recovery from malnutrition. This evidence led the way to the performance of extensive research aimed to delineate the components of milk and the mechanisms acting to make milk so effective. The present review summarizes the current knowledge regarding the influence of milk and its proteins on linear growth in healthy and malnourished children, focusing also on other important aspects of healthy growth, including bone health, weight status, and body composition.

Compared to CM, the mean δ13C and δ15N values were lower in OM, whereas the mean α-tocopherol and nutritionally desirable FA contents were higher in OM. Furthermore, δ13C, δ15N, and FA contents vary significantly with the season in OM, whereas α-tocopherol does not show a specific seasonal trend in either OM or CM. Chemometric approaches provided reliable chemical markers, notably C18:3n-3, C18:2n-6, and δ13Cbulk-milk, for accurate OM discrimination according to sampling season. Our findings elucidate milk nutritional quality issues and also provide valuable insight into the control of fraudulent OM labeling in Korea, with potential application in other countries.

Abstract
Listeria monocytogenes is an important foodborne pathogen which its data in Iranian dairy products is limited. A total of 545 samples of traditional dairy products (raw milk, traditional cheese, traditional butter, traditional curd, and traditional ice cream) were collected from traditional dairy shops located in Yazd, Iran. L. monocytogenes was isolated, and positive samples were confirmed by polymerase chain reaction. Antibiotic sensitivity test was conducted to determine the antibiotic resistance. Listeria species were isolated from 11.7% samples. 4.03% samples were identified as L. monocytogenes, 5.6% as L. innocua, 1.8% as L. seeligeri, and 0.18% L. murrayi. All L. monocytogenes isolates were resistant to tetracycline, chloramphenicol, penicillin, and amoxicillin/clavulanic acid. Consumption of raw milk and its traditional products prepared inadequate heat treatment and the lack of appropriate control measures might lead to serious health problems. As our results show, the Iranian food safety authorities should set up an effective standard to screen all susceptible food for the presence of Listeria spp.

Abstract
Background The World Health Organization has introduced osteoporosis as the fourth main enemy of mankind. Self care has served as a new trend in health care. Objective Educational intervention for osteoporosis related preventive self care in female university students using the Orem model. Methods This study is a controlled filed trial, carried out with female students of Islamic Azad University, Shahrekord Branch, Iran, from October 28, 2014 to November 15, 2016. Two-stage random stratified sampling was performed and the data were collected through a validated questionnaire developed by the researcher for osteoporosis preventive self-care based on the Orem model. The intervention group received education about osteoporosis preventive self-care through two months training, as per the dimensions in the Orem model. For statistical analysis, independent-samples t-test and paired t-test were used in SPSS version 23. Results As revealed, mean scores for self-care agency, self-care demand, self-care operation structures and total self-care in the intervention group were significantly different before and after the intervention (p=0.014, p<0.001, p=0.002, and p<0.001, respectively). Accordingly, educational intervention seems to be effective in promoting self-care for the prevention of osteoporosis. While the control group, showed no significant difference in any of the above-mentioned aspects before and after intervention (p=0.90, p=0.53, p=0.51, and p= 0.97, respectively). Conclusion The results are in favor of the effects of educational intervention on osteoporosis preventive self-care among female students. It can be suggested that education during a woman’s young age, can be very beneficial for the prevention of osteoporosis in the future. Abstract
It has been suggested that a greater dairy consumption, particularly of milk, may have contributed in lowering the prevalence of metabolic syndrome (MetS). A cross-sectional analysis was conducted to examine the association between milk consumption and MetS, and its components among Korean adults aged 40–69. A total of 130,420 subjects (43,682 men and 86,738 women) from the Health Examinees Study were selected for the final analysis. Milk consumption was estimated using a validated 106-item food frequency questionnaire. MetS was defined using the National Cholesterol Education Program, Adult Treatment Panel III (NCEP III). Logistic regression analyses were performed to calculate the odds ratios (ORs) and 95% confidence intervals (CIs) between milk consumption and MetS after adjusting for potential confounders. In this study, the average milk consumption was 77.9 g/day, with the overall prevalence of MetS being 26.1% (29.1% in men and 24.6% in women). We found that the prevalence of the MetS was significantly lower in subjects with higher milk consumption (p < 0.0001). Adjusted OR for MetS was significantly lower in the highest milk consumption category (≥1 serving/day among men; ≥2 serving/day among women) than those in the lowest milk consumption category (OR: 0.92 95%CI: 0.86–0.99, p trend = 0.0160 in men; OR: 0.68, 95%CI: 0.60–0.76, p trend < 0.0001 in women). Overall, higher milk consumption was inversely associated with the MetS components: elevated waist circumference, elevated triglyceride, and reduced high-density lipoprotein cholesterol (HDL-C) (all p trend < 0.05). This study concludes that higher milk consumption is associated with the lower odds of MetS in Korean adults.

Abstract
OBJECTIVE Dairy products contain essential nutrients to ensure healthy growth and bone development in children. However, a significant proportion of children in developed countries fail to consume the daily recommended intake of dairy products. Parents are the gatekeepers of familial nutritional intake and represent a potential vehicle through which to increase dairy consumption in children. As such, formative research was conducted to gain insight into parents' perceived barriers to and benefits of purchasing and consuming dairy products and to develop innovative message content that could be utilized in future public health campaigns. DESIGN Seven in-depth group interviews were conducted in two phases between February and May 2015. SETTING Interviews were conducted in local recreational centres and libraries in British Columbia, Canada. SUBJECTS Mothers (n 21, mean age 38 (sd 5) years) and fathers (n 9, mean age 38 (sd 3) years) of children aged 4-10 years. RESULTS Parents perceived both positive and negative physical outcomes associated with consuming dairy. Lack of trustworthy information was a frequently discussed barrier theme to purchasing and consuming dairy products. Mothers were concerned about the cost of dairy products. Differences in purchasing and consumption strategies were reported between parents of children who consumed adequate dairy and those who did not. Parents believed the most appropriate communication channel was through print material. CONCLUSIONS Messages targeting parents, as a means of increasing dairy consumption in children, should address barriers identified by parents. In addition, practical tips should be provided to promote purchasing and consumption of dairy products.

Abstract
BACKGROUND Circulating biomarkers of dairy fat provide objective measures of dairy fat intake and facilitate conclusions relevant to populations with different diets and susceptibility to cardiovascular diseases (CVD). OBJECTIVE To assess the relationship between circulating pentadecanoic acid (15:0), heptadecanoic acid (17:0) and trans-palmitoleic acid (trans-16:1n-7) and the risk of CVD. METHODS Pubmed, Medline and Embase were searched for prospective cohort studies of the relationship between biomarkers of dairy fat and CVD risk, which included coronary heart disease (CHD), stroke, heart failure and CVD mortality, supplemented by bibliographies of retrieved articles and previous reviews. For each study, relative risks (RR) and 95% confidence intervals (CI) were extracted and pooled with the random effect model. RESULTS Thirteen studies involving 7,680 CVD cases were included. The pooled RRs of the risk of CVD for the top third vs. bottom third 15:0, 17:0 and trans-16:1n-7 level were 0.94 (95%CI: 0.77-1.15), 0.82 (95% CI: 0.68-0.99) and 0.82 (95% CI: 0.67-1.02), respectively. Subgroup analysis indicated that there were no associations between the concentration of 15:0 with CHD and stroke, but a negative relationship with heart failure (RR = 0.72, 95% CI: 0.55-0.95). Null association was observed between circulating 17:0 and trans-16:1n-7 level and subtypes of CVD except for only one study which reported a negative relationship between 17:0 and heart failure. CONCLUSION Higher dairy fat exposure is not associated with an increased risk of CVD.

Abstract
This study aimed at optimizing the manufacturing conditions of a milk beverage supplemented with coffee, and monitoring its physicochemical and sensory properties during storage. Raw milk, skim milk powder, coffee extract, and emulsifiers were used to manufacture the beverage. Two sucrose fatty acid esters, F110 and F160, were identified as suitable emulsifiers. The optimum conditions for the beverage manufacture, which can satisfy two conditions at the same time, determined by response surface methodology (RSM), were 5,000 rpm primary homogenization speed and 0.207% sucrose fatty acid emulsifier addition. The particle size and zeta-potential of the beverage under the optimum condition were 190.1 nm and - 25.94±0.06 mV, respectively. In comparison study between F110 added group (GF110) and F160 added group (GF160) during storage, all samples maintained its pH around 6.6 to 6.7, and there was no significant difference (p<0.05). In addition, GF110 showed significantly higher zeta-potential than GF160 (p<0.05). The particle size of GF110 and GF160 were approximately 190.1 and 223.1 nm, respectively at initial. However, size distribution of the GF160 tended to increase during storage. Moreover, increase of the particle size in GF160 was observed in microphotographs of it during storage. The L* values gradually decreased within all groups, whereas the a* and b* values did not show significant variations (p<0.05). Compared with GF160, bitterness, floating cream, and rancid flavor were more pronounced in the GF110. Based on the result obtained from the present study, it appears that the sucrose fatty acid ester F110 is more suitable emulsifier when it comes to manufacturing this beverage than the F160, and also contributes to extending product shelf-life.

Abstract
Milk minerals and coagulation properties are important for both consumers and processors, and they can aid in increasing milk added value. However, large-scale monitoring of these traits is hampered by expensive and time-consuming reference analyses. The objective of the present study was to develop prediction models for major mineral contents (Ca, K, Mg, Na, and P) and milk coagulation properties (MCP: rennet coagulation time, curd-firming time, and curd firmness) using mid-infrared spectroscopy. Individual milk samples (n=923) of Holstein-Friesian, Brown Swiss, Alpine Grey, and Simmental cows were collected from single-breed herds between January and December 2014. Reference analysis for the determination of both mineral contents and MCP was undertaken with standardized methods. For each milk sample, the mid-infrared spectrum in the range from 900 to 5,000cm(-1) was stored. Prediction models were calibrated using partial least squares regression coupled with a wavenumber selection technique called uninformative variable elimination, to improve model accuracy, and validated both internally and externally. The average reduction of wavenumbers used in partial least squares regression was 80%, which was accompanied by an average increment of 20% of the explained variance in external validation. The proportion of explained variance in external validation was about 70% for P, K, Ca, and Mg, and it was lower (40%) for Na. Milk coagulation properties prediction models explained between 54% (rennet coagulation time) and 56% (curd-firming time) of the total variance in external validation. The ratio of standard deviation of each trait to the respective root mean square error of prediction, which is an indicator of the predictive ability of an equation, suggested that the developed models might be effective for screening and collection of milk minerals and coagulation properties at the population level. Although prediction equations were not accurate enough to be proposed for analytic purposes, mid-infrared spectroscopy predictions could be evaluated as phenotypic information to genetically improve milk minerals and MCP on a large scale.

Abstract
Intervention strategies to increase calcium intake of parents and young adolescent children could be improved by identifying psychosocial factors influencing intake. The objective was to develop a tool to assess factors related to calcium intake among parents and Hispanic, Asian, and non-Hispanic white young adolescent children (10-13 years) meeting acceptable standards for psychometric properties. A parent questionnaire was constructed from interviews conducted to identify factors. Parents (n = 166) in the United States completed the questionnaire, with seventy-one completing it twice. Two constructs (Attitudes/Preferences and Social/Environmental) were identified and described by eighteen subscales with Cronbach's alpha levels from .50 to .79. Test-retest coefficients ranged from .68 to .85 (p < .001). Several subscales were statistically significantly associated with parent characteristics consistent with theory and published literature. This tool shows promise as a valid and reliable measure of factors associated with calcium-rich food intake among parents and young adolescent children.

Abstract
Milk, cheese, yogurt, and other dairy products have long been known to provide good nutrition. Major healthful contributors to the diets of many people include the protein, minerals, vitamins, and fatty acids present in milk. Recent studies have shown that consumption of dairy products appears to be beneficial in muscle building, lowering blood pressure and low-density lipoprotein cholesterol, and preventing tooth decay, diabetes, cancer, and obesity. Additional benefits might be provided by organic milk and by probiotic microorganisms using milk products as a vehicle. New research on dairy products and nutrition will improve our understanding of the connections between these products, the bioactive compounds in them, and their effects on the human body.

Abstract
BACKGROUND Adequate daily milk and dairy products intake seems to an important for adolescents' health. This study aimed to identify the high-risk group adolescents who did not meet the recommended daily serving milk and dairy products and indeed to find out associated factors relating to their nutrition behaviors. METHODS This cross sectional study was carried out on 7th grade students, in Tabriz, East Azerbaijan province, Iran. An anonymous self-administrated questionnaire including items on perceived social support, physical activity, and sedentary behaviors was administered. In addition a valid food frequency questionnaire (FFQ) measuring daily milk products serving intake as a main outcome measure was completed for each respondent. Logistic regression analysis was applied to examine the association between milk and dairy products consumption and independents variables. RESULTS In all 402 students (51.5 % female) participated in the study. The mean age of students was 12.9 (SD = 0.49) years. The average daily intake of milk and dairy products was 1.64 (SD = 0.78) servings per day. Overall 14.2 % of adolescents (18.8 % of girls, and 9.2 % of boys, p = 0.006) reported consumption of the recommended daily milk and dairy products serving per day. The results indicated that gender boys (OR for boys = 2.41, 95 % CI = 1.25-4.67), mother age (OR for age group 40-55 years = 2.52, 95 % CI = 1.18-5.38), poor perceived emotional family support, (OR = 1.10, 95 % CI = 1.05-3.61), and poor perceived practical family support (OR = 2.04, 95 % CI = 1.18-4.17) were the most significant contributing factors to low level milk and dairy products intake in adolescents. CONCLUSION The findings indicated that adolescents did not take the recommended daily amount of milk and dairy products and this appeared to be strongly related to low perceived family support. To achieve the recommended daily milk and dairy products serving consumption, family involvements in any programs that specifically address emotional and practical support for promoting daily milk and dairy products intake among adolescents are suggested.
