Abstract
To simplify fast-growth broiler welfare assessments and use them as a benchmarking tool, decision trees were used to identify iceberg indicators discriminating flocks passing/failing welfare assessments as with the complete AWIN protocol. A dataset was constructed with data from 57 flocks and 3 previous projects. A final flock assessment score, previously not included in the dataset, was calculated and used as the benchmarking assessment classifier (pass/fail). A decision tree to classify flocks was built using the Chi-square Automatic Interaction Detection (CHAID) criterion. Cost-complexity pruning, and tenfold cross-validation were used. The final decision tree included cumulative mortality (%), immobile, lame birds (%), and birds with back wounds (%). Values were (mean ± se) 2.77 ± 0.14%, 0.16 ± 0.02%, 0.25 ± 0.02%, and 0.003 ± 0.001% for flocks passing the assessment; and 4.39 ± 0.49%, 0.24 ± 0.05%, 0.49 ± 0.09%, and 0.015 ± 0.006% for flocks failing. Cumulative mortality had the highest relative importance. The validated model correctly predicted 80.70% of benchmarking assessment outcomes. Model specificity was 0.8696; sensitivity was 0.5455. Decision trees can be useful to simplify welfare assessments. Model improvements will be possible as more information becomes available, and predictions are based on more samples.

Abstract
To be sold in the United States, meat, poultry, and seafood products made from cultured cells must be labeled with a "common or usual name" to help consumers understand what they are purchasing. The terms "Cultured," "Cultivated," "Cell-Cultured," "Cell-Cultivated," "Cell-Based" and a control (without a common or usual name) were tested using an online experiment. Two regulatory criteria were assessed: that the term distinguishes the novel products from conventional products, and appropriately signals allergenicity. Three consumer acceptance criteria were assessed: that the term is seen as appropriate, does not disparage the novel or conventional products, nor elicit perceptions that the products are unsafe, unhealthy, or not nutritious. Each term was shown on packages of frozen Beef Filets, Beef Burgers, Chicken Breasts, Chicken Burgers, Atlantic Salmon Fillets, and Salmon Burgers. A representative sample of 4385 Americans (18 + ) were randomly assigned to view a single product with a single term or the control. Consumers' ability to distinguish tested terms from conventional products differed by product category. "Cultured" and "Cultivated" failed to adequately differentiate the novel products from "Wild-Caught and Farm-Raised" salmon products. "Cultivated" failed to differentiate the novel Beef Filet product from "Grass-Fed" Beef Filets. "Cell-Cultured," "Cell-Cultivated," and "Cell-Based" each signaled that the products were different from conventional products across the proteins, and signaled allergenicity, meeting the two key regulatory criteria. They were not significantly different on most consumer perception measures. However, "Cell-Cultured" may have slightly better consumer acceptance across the novel beef, chicken, and salmon products, recommending its universal adoption.

Abstract
Introduction Antibiotics are being used in humans and animals for treatment and control of bacterial infections. Excessive use of antibiotics in the production of poultry is a popular practice, but it poses serious health issues by transferring resistance from farm to humans via food or direct exposure. Study Objective The objective of this study was to carry out a comparison of the resistance and sensitivity profile of isolated isolates from sewage of toilets that were in use of workers inside the farm and from sewage of household toilets. Methodology In this study, a total of 320 sewage samples were collected. The antibiotic susceptibility profile was checked by Kirby-Bauer disc diffusion method, and the statistical analysis was carried out by MS excel. Chi-square test was performed to determine whether the antibiograms from two sample types were statistically different from each other or not. Results From 320 sewage samples, a total of 296 bacterial isolates were isolated among which the leading bacterium was E. coli. The proportion of resistance, ESBL production and MDR was significantly higher in bacteria isolated from sewage of toilets under use of poultry farm workers as compared to the sewage from domestic use toilets. Conclusion Resistance significantly increased in the bacteria isolated from toilets under use of poultry farm workers as compared to the ones isolated from control sewage samples.

Abstract
Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Abstract
Nature of reform to animal welfare legislation in Australia has commonly been attributed to increasing alignment with the ‘communities’ expectations’, implying that the community has power in driving legislative change. Yet, despite this assertion there has been no publicly available information disclosing the nature of these ‘expectations’, or the methodology used to determine public stance. However, based on previous sociological research, as well as legal reforms that have taken place to increase maximum penalties for animal welfare offences, it is probable that the community expects harsher penalties for offences. Using representative sampling of the Australian public, this study provides an assessment of current community expectations of animal welfare law enforcement. A total of 2152 individuals participated in the survey. There was strong support for sentences for animal cruelty being higher in magnitude (50% support). However, a large proportion (84%) were in favour of alternate penalties such as prohibiting offenders from owning animals in the future. There was also a belief that current prosecution rates were too low with 80% of respondents agreeing to this assertion. Collectively, this suggests a greater support for preventing animal cruelty through a stronger enforcement model rather than punishing animal cruelty offenders through harsher sentences. This potentially indicates a shift in public opinion towards a more proactive approach to animal welfare, rather than a reactive approach to animal cruelty.

Abstract
Simple Summary Recent studies show that N6-methyladenosine (m6A) modification, the most common RNA chemical modification, influences the modification, processing, transport, and translation of RNA. N6-methyladenosine is an epigenetic modification that influences skeletal myogenesis and skeletal muscle development. However, the N6-methyladenosine modification profile and its function during poultry muscle development is unclear, and there is only one report about m6A modification in ducks, which focuses on duck hepatitis A virus infection. Here, we compared the m6A modification profiles between E13 (embryonic day 13) and E19 (embryonic day 19) in duck breast muscle differentiation using MeRIP-seq, and evaluated the expression profile of the methyl transferase METTL14 and its cofactors during breast muscle development. This is the first study of N6-methyladenosine modification patterns in duck muscle tissue. The current study not only elucidates the regulation mechanisms of duck skeletal muscle development, but also lays the groundwork for studying the role of RNA modification in poultry muscle development. Abstract N6-Methyladenosine is a reversible epigenetic modification that influences muscle development. However, the m6A modification profile during poultry skeletal muscle development is poorly understood. Here, we utilized m6A-specific methylated RNA immunoprecipitation sequencing to identify m6A sites during two stages of breast muscle development in ducks: embryonic days 13 (E13) and E19. MeRIP-seq detected 19,024 and 18,081 m6A peaks in the E13 and E19 groups, respectively. Similarly to m6A distribution in mammalian transcripts, our results revealed GGACU as the main m6A motif in duck breast muscle; they also revealed that m6A peaks are mainly enriched near the stop codons. In addition, motif sequence analysis and gene expression analysis demonstrated that m6A modification in duck embryo skeletal muscles may be mediated by the methyltransferase-like 14. GO and KEGG analysis showed that m6A peaks containing genes at E19 were mainly enriched in muscle-differentiation- and muscle-growth-related pathways, whereas m6A peaks containing genes in E13 were mainly enriched in embryonic development and cell proliferation pathways. Combined analysis of MeRIP-seq and RNA-seq showed that the mRNA expression may be affected by m6A modification. Moreover, qRT-PCR analysis of the expression of METTL14 and its cofactors (WTAP, ZC3H13, RBM15 and VIRMA) during duck embryonic skeletal muscle development in breast and leg muscle samples revealed a significant downward trend as the developmental age progressed. Our results demonstrated that m6A mRNA methylation modifications control muscle development in ducks. This is the first study of m6A modification patterns in duck muscle tissue development, and it lays the foundation for the study of the effects of RNA modification on poultry skeletal muscle development.

Abstract
It has been proposed that terminology on commercially available eggs can impact the manner in which the eggs are discussed and ultimately consumer support. In this paper we tested if the label of ‘furnished cage’ eggs is a barrier for its support in Australia. Furthermore, we examined if educational interventions could change support and the way furnished cages were discussed. Survey participants (n = 1,157) were recruited by a stratified random sample of Australian adults. The participants were surveyed on their demographics, attitudes toward the poultry industry and animal welfare, and their egg buying behavior. Participants were randomly assigned to one of four treatment groups; two control groups and two educational groups. Participants were shown one of three videos, the control groups were shown a video with general information about chickens, the educated groups were shown one of two almost identical videos that educated them on aspects of the egg-laying industry in Australia, and the welfare implications of different housing systems including furnished systems. The only difference between the two educational videos was the name given to the furnished housing system; one group was introduced to furnished cages, the other was introduced to furnished coops. Educated participants were more likely to support furnished eggs and discuss them more positively than the control groups. When asked to discuss their support for furnished systems, control group participants exposed to the term cage were more likely to discuss the impacts of caged environments than the other treatment groups. The study suggests any negative impacts of housing system terminology can be mitigated through educational interventions.

Abstract
1. The study was carried out to evaluate the effect of stocking density on performance, litter moisture, Eimeria oocyst shedding, intestinal and foot lesions in broilers.2. A total of 192 1-d-old male Cobb broilers were distributed with three different stocking densities (6, 8 or 10 chickens/m2) with outdoor access and eight replicates in a completely randomised design over two periods. Productive parameters were measured from 3 to 7 weeks of age.3. Oocyst counts (OPG) in both excreta and litter were performed at 3, 4 and 5 weeks of age. Intestinal and foot pad lesions were evaluated at 7 weeks old. The stocking density of 6 birds/m2 had the highest body weights (P < 0.05) (2129 ± 37.67, 2759 ± 50.82 and 3167 ± 75.64 g at weeks 5, 6 and 7 of age, respectively).4. Feed intake decreased with increasing stocking density at week 3 (r = -0.57), 4 (r = -0.48), 5 (r = -0.84), 6 (r = -0.68) and 7 (r = -0.65) of age (P < 0.05). Birds with stocking densities of 8 and 10/m2 consumed, respectively, up to 11% and 19.5% less feed than the lower stocking density groups.5. Stocking density affected (P < 0.05) feed conversion (1.61, 1.49 and 1.46) and litter moisture (40.88, 52.60 and 56.19%) at 3 weeks of age. Neither carcase yield nor mortality was different between densities (P > 0.05). Likewise, there was no effect of stocking density on OPG neither in excreta nor in litter, intestinal lesions, or foot pad and hock injuries (P > 0.05).6. In conclusion, the higher stocking density decreased both the feed intake and the live weight in broilers, but there were no effects in the number of Eimeria OPG in excreta or litter, neither intestinal lesions nor in foot pad injuries.

Abstract
Ranging area use by domestic poultry is not always optimal and differences in it exist on the levels of breed, flock and individual bird. Outdoor shelters are usually not protective for all weather parameters and may not fulfil a protective role to all birds within the flock all time, if individuals are sensitive to different weather conditions. The aim of this study was to investigate associations between different weather parameters and the use of the range by individual Green-legged Partridge and Sasso C44 chickens. In August 2018, 60 birds per genetic strain were housed in groups of 10 from wks 5 to 10, under conditions exceeding minimal EU requirements of organic meat chicken production. Birds in each pen had access to an outdoor range that was video-recorded during the experiment to obtain frequencies of individual birds' use of the ranges. Weather data were collected each minute throughout the whole experiment by an automatic weather station. In each pen, birds tagged individually with a laminated color tag, had access to an outdoor range that was video-recorded during the experiment. Frequencies of individual birds' use of the ranges were manually obtained from the recordings. Univariate and multivariate linear regression models were used to investigate the associations between the variables. The results showed significant associations between weather parameters and range use for one third of Green-legged Partridge and Sasso chickens (n = 21 in both breeds). Between breeds, range use associations with different weather parameters were identified. Negative associations with relative humidity occurred most frequently in Green-legged Partridges (n = 8; R2 from 0.1 to 0.17), while positive associations with atmospheric pressure (n = 7; R2 from 0.09 to 0.17) were most common in Sasso chickens. Further investigations into the reasons behind individual sensitivity of meat-purpose chickens to specific weather conditions would increase the understanding of their preferences and needs, which over time will improve animal welfare.

Abstract
As poultry production and consumption have increased in the last decade, so have consumers' concerns about intensified production methods and the impacts they have on animal welfare. At the same time, poultry consumption has increased and enjoys great popularity. Also, a shift in consumers' consumption behavior can be observed as nowadays most consumers purchase chicken cuts, especially breast filets, rather than whole animals, mostly due to convenience and taste. Although consumer concerns have increased, market shares of alternative poultry products, i.e., those that are produced under higher standards compared to conventional products, remain comparably low. One of the main reasons are the large differences in prices. The higher prices for alternative chicken products such as organic result partly from increased production costs on farm level. Besides, consumer preferences for chicken cuts intensify cost differences. While alternative chicken breasts (e.g., organically produced) might be valued by some consumers, other cuts such as wings or thighs are not and are therefore sent into the conventional market. In these cases, the breasts need to remunerate all additional costs. Analyzing consumers' concerns about production methods and learning about consumers' obstacles to buy whole chickens might offer farmers greater possibilities to succeed in alternative markets. Therefore, the purpose of this study was to gain insights into consumers' chicken consumption behaviors, how consumers imagine an ideal chicken farm and whether they would be willing to purchase a whole chicken from this ideal farm. Three focus group discussions (total n = 30) with German consumers were held online in June 2020. The results show that participants associate the ideal chicken farm with four main characteristics: good husbandry system, positive economic impact for the farmer, high transparency, and proximate location of the farm in the same geographical region. However, willingness to purchase a whole chicken, even from the ideal farm, remains low due to mainly convenience reasons and daily routines.

Abstract
Despite the intensive genetic selection in modern poultry, variability of domestic fowl phenotypes has remained, especially in breeds adapted to local conditions. The relevance of this variability to the chicken outdoor ranging activities remains unknown. The aim of this study was to investigate if external features were associated with the ranging frequency of the 48 female chickens from each of the 2 breeds: Sasso and Green-legged Partridge. In each of 6 single-breed pens, 8 hens and 2 roosters were housed under conditions of EU requirements for organic meat chicken production, including free access to an outdoor range, from wk 5 to 10 of age. The birds were video-recorded during the experiment to obtain frequencies of individual birds' use of the ranges. Comb size (length and height) was measured using a digital ruler, while the sizes of the dark area of neck plumage and beak were processed and analyzed using ImageJ software. The same traits were scored using direct visual assessment by a trained observer on a scale of 1-3. In addition, the eye color of the bird was recorded. Statistical analysis was conducted independently for each breed using regression models, ANOVAs and Spearman correlations. Significant positive associations between neck plumage (P < 0.01), beak darkness (P = 0.03) measurements, comb length (P < 0.01) and comb height (P < 0.01) and frequency of range use were identified for Sasso. Sasso hens scored with darkest neck plumage (P = 0.03) and biggest comb size (P = 0.04) ranged the most, while their external features were significantly and positively correlated between each other, except beak darkness and comb length. No significant associations between ranging and external features were found in Green-legged Partridge birds, except that their comb height was significantly and positively correlated with neck plumage and beak darkness (r = 0.39 and 0.33, respectively). In some genetic strains, better understanding of the associations between chickens’ external features with ranging behavior could contribute to improve selection programs and bird welfare, assuring production of breeding stock suitable for outdoor conditions.

Abstract
Public events such as state fairs provide valuable opportunities to provide informal animal welfare education, possibly changing people's decisions regarding animal welfare. This study evaluated whether an interactive animal-free exhibit increased visitors' self-reported knowledge and stated behavioral intentions related to animal welfare. The exhibit featured information about the behavior and welfare of cattle, sheep, pigs, goats, poultry, horses, cats and dogs. Survey data were collected at two events in the Midwestern United States (Purdue University Spring Fest (FEST): n = 32; Indiana State Fair (FAIR): n = 49 valid responses). Most people agreed and strongly agreed (FEST: 60.00%; FAIR: 74.47%) that they learned new information and would consider this information when making decisions (FAIR: 70.37%; FAIR: 76.19). Most people (FEST: 67.86%; FAIR: 71.11%) also stated that they had a better understanding of animal welfare after visiting the exhibit. These findings indicate that an animal welfare exhibit can positively influence visitors' self-reported knowledge and stated decisions about animal welfare. Future research is needed to examine the long-term impacts of animal welfare exhibits on knowledge retention, decisions and behavior.

Abstract
Simple Summary ‘Good animal welfare’ has evolved in recent decades to recognise behavioural, physiological and health factors, acknowledging that an animal may have good clinical health and be productive, though their welfare may be poor. The five freedoms and domains of animal welfare provide internationally recognised frameworks against which to evaluate practices to shape evidence-based standards which recognise both the physical and mental health needs of animals to provide a balanced view of an animal’s ability to cope in its environment. Whilst there are many techniques to measure animal welfare, the challenge lies with how best to align these with future changes in definitions and expectations, advances in science, legislative requirements and technology improvements. Substantial literature discusses the use of technology for improving animal monitoring, management and productivity on and off farm, though little has been published in relation to using such technologies to support legislative compliance and drive overall improvements in animal welfare. This article discusses the current legislation around animal welfare (with a focus on the Australian red meat sector); the impact of public expectation of welfare standards and production practices; and the current and future opportunity for on-animal sensors to support animal welfare, monitoring, management and compliance. Abstract The five freedoms and, more recently, the five domains of animal welfare provide internationally recognised frameworks to evaluate animal welfare practices which recognise both the physical and mental wellbeing needs of animals, providing a balanced view of their ability to cope in their environment. Whilst there are many techniques to measure animal welfare, the challenge lies with how best to align these with future changes in definitions and expectations, advances in science, legislative requirements, and technology improvements. Furthermore, enforcement of current animal welfare legislation in relation to livestock in Australia and the reliance on self-audits for accreditation schemes, challenges our ability to objectively measure animal welfare. On-animal sensors have enormous potential to address animal welfare concerns and assist with legislative compliance, through continuous measurement and monitoring of an animal’s behavioural state and location being reflective of their wellbeing. As reliable animal welfare measures evolve and the cost of on-animal sensors reduce, technology adoption will increase as the benefits across the supply chain are realised. Future adoption of on-animal sensors by producers will primarily depend on a value proposition for their business being clear; algorithm development to ensure measures are valid and reliable; increases in producer knowledge, willingness, and trust in data governance; and improvements in data transmission and connectivity.

Abstract
The Australian and global chicken meat industries have benefited from rapid improvements in the efficiency of chicken meat production that have been predominantly achieved through genetic selection, optimisation of bird nutrition and improved bird health. However, this has also resulted in morphological changes in the bird with an increase in the prevalence of leg health disorders. Compromised leg health can cause pain and lameness and bodes poorly for bird wellbeing, bird mortality, and economic returns. There are also implications for the consumer who is increasingly mindful of animal welfare and is demanding more welfare friendly products. Accurate on-farm assessment of bird leg health has challenges due to the diversity of leg disorders and the variety of techniques used to assess their severity and impact. Overall prevalence of leg disorders shows great variability between properties (farms) and flocks. Opportunities to improve bird leg health have been the focus of considerable research which has frequently included an evaluation of environmental enrichment as a means to reduce lameness and improve bird mobility. To this end, currently in Australia, 78% of chicken meat is produced under the conditions of the Australian RSPCA Approved Farming Scheme, which requires perches in the birds’ environment. However, the value of perches in providing enrichment and improving bird welfare is unclear. Therefore, this review explores animal welfare and consumer attitudes towards meat chicken welfare, describes leg disorders, outlines techniques for assessing leg health and discusses opportunities to enrich the birds’ environment to improve bird mobility and leg health.

Abstract
1. The objective of this study was to evaluate specific sensory attributes of chicken meat from different production systems to evaluate the emotional responses related to information available on the packages, as well as to investigate consumers' perceptions regarding this information.2. The survey was conducted using the Temporal Dominance of Sensations analysis, which identified differences in taste and texture between samples belonging to the organic, conventional and natural systems.3. The specific emotional lexicon for chicken meat, defined by the consumers through the EmoSemio questionnaire, provided a list of positive emotions for packages that indicated some type of information about the rearing or feeding system.4. The qualitative data obtained using the Attitude Questionnaire demonstrated that packaging and labelling are not self-explanatory, posing more doubts for the consumer at the time of purchase. It was shown that packaging and labelling were extrinsic attributes that influenced the evaluation and acceptability of products. Besides that, consumers were interested in buying products that attest to animal welfare, provided that the price is attractive.5. Poultry companies can have a greater chance of making their products more attractive if they learn more about the attitude and expectations of the consumer in relation to the products, as well as the importance of the animal welfare attributes that are communicated.

Abstract
Despite consumers' belief that access to an outdoor range improves chicken welfare, still little is known about whether this is true and whether individual ranging profiles relate to the birds' welfare. The aim of the present study was to identify and compare welfare issues of the traditional broiler hybrid Sasso and the Polish heritage chicken Green-legged Partridge, having outdoor access, and examine if the birds' welfare status was associated with the ranging profile: outdoor-preferring, moderate-outdoor, and indoor-preferring. In August 2018, 60 non-beak trimmed birds per genetic strain were housed in groups of 10 from weeks 5 to 10, under conditions exceeding EU requirements of organic meat chicken production. Each pen had access to an individual outdoor range that was video-recorded continuously to obtain frequencies of individual birds' use of the ranges. Plumage condition, comb pecking wounds, skin injuries, dirtiness, toe damage, eye pathologies, footpad dermatitis, hock burns, respiratory infections, diarrhea, and walking difficulties were assessed at the end of the experiment. Statistical analysis was conducted applying generalized linear mixed models, with binomial distribution and logit link using SAS software, applying breed and ranging profile as fixed factors and their interaction, with pen as random factor. A tendency for more respiratory infections was observed in Sasso birds from each ranging profile, as compared to matching ranging profiles presented by Green-legged Partridges (outdoor-preferring: P = 0.0012; moderate-outdoor: P < 0.0001; and indoor-preferring: P = 0.0247). Indoor-preferring Green-legged Partridges tended to present more respiratory infections, as compared to the 2 other ranging profiles within the breed (outdoor-preferring: P = 0.0291; moderate-outdoor: P = 0.0448). Regardless of the breed, toe damages were more frequent in indoor-preferring birds, as compared to other ranging profiles (P = 0.017). It remains unknown whether the use of outdoor areas prevents development of welfare issues or if birds with a suboptimal welfare condition become indoor-preferring individuals.

Abstract
Understanding consumers' perceptions toward chicken meat safety and quality could provide valuable information to public health educators since it is the most consumed meat. This study explores perceptions of a group of South African consumers on the safety and quality of chicken meat based on intrinsic and extrinsic attributes and identifies related safety risks. Data were collected through a web-based survey (863 participants). A substantial proportion of consumers considered supermarkets as the most trusted outlets to sell safe and good quality chicken (compared with butcheries, wholesalers, farmers' markets, street vendors, or "other retailers"). The majority of respondents (53%) most trusted refrigerated chicken to be of good quality compared with 36% trusting frozen chicken or 11% chicken at room temperature. Frozen chicken was considered most safe by 48% of consumers while 43% regarded refrigerated chicken as most safe. At point of purchase and home, smell, use-by date, sell-by date, and color were perceived as important attributes when judging chicken safety and quality. Consumers considered the absence of brine use and growth-promoting hormones in chicken feed as relatively important. The majority of consumers can be classified as highly involved during purchasing. It is essential that consumers apply safe chicken handling practices from point of purchase to consumption, irrespective of the type of retailer, perceived sensory characteristics, and date labels to reduce or eliminate microbial risks. Addressing consumer's knowledge and expectations regarding factors such as growth-promoting hormones and free range may improve safety and quality perceptions. PRACTICAL APPLICATION: This study gives insight into perceptions of a group of South African consumers toward safety and quality of chicken meat. Understanding consumers' perceptions can provide valuable information to public health educators since chicken meat is a common vehicle for Salmonella spp. and Campylobacter spp., which are human pathogens. Additionally, this information can assist the chicken industry to meet consumer expectations.

Abstract
Public concern for farm animal welfare is growing. However, high welfare purchases require consumers to make sense of often confusing labels. This study aims to investigate consumers' preferences for higher welfare products with on-package animal welfare labels and to explore whether providing consumers with detailed information about the welfare conditions behind on-package animal welfare labels could have a positive influence on farm animal welfare. The survey was conducted online and involved participants (N = 1612) being randomly assigned into one of two-treatment groups: (1) an animal welfare label and (2) an animal welfare label with details about the welfare standards signified by that label. Participants were asked their intentions to purchase products with varying animal welfare labels. Participants were also surveyed with an adapted version of the Animal Attitude Scale that measured pro-welfare attitudes, resulting in an Animal Empathy Score (AES), a series of demographics questions, and to rate the welfare of pigs, chickens and laying hens in Australian food production. The results revealed that the provision of additional information significantly increased intention to purchase higher than conventional welfare products. The empathy measures revealed that younger participants, females and those with lower household incomes all had significantly higher AES. Moreover, AES was associated with intent to purchase higher welfare products. No interaction terms were significant, suggesting that the positive influence of information on purchase intentions is not dependent on participants' pro-welfare attitudes. Given animal welfare is market-driven in countries such as Australia, the findings suggest that providing farm animal welfare information at the point-of-purchase could boost appreciation and demand for higher than conventional welfare products.

Abstract
The article presents the results of the effect of partial replacement of mixed feeds with organic concentrate based on dry bird droppings (DBD) on the preservation of quail, quantitative and qualitative rates of egg productivity. For the laboratory experiment, 5 experimental groups of Manchurian quail were formed by the analogous pair comparison method. The quail of the control group consumed all-in-one feed (AF), for the quail of the experimental groups (I, II, III, and IV) part of the AF – 10, 15, 20 and 25 % by weight – was replaced with organic concentrate. Results of studies reveal that the introduction of 10 % of organic concentrate into the AF contributed to improved feed intake and livestock safety, increased egg productivity and reduced feed consumption per unit of output. With respect to the indicators of biological usefulness, toxicological and sanitary-epidemiological safety, quail eggs treated with the organic concentrate met the requirements of GOST and TR TS 021/2011 “On food safety”.

Abstract
Continuous sampling provides the most complete data set for behavioral research; however, it often requires a prohibitive investment of time and labor. The objectives of this study were to validate behavioral observation methods of young broiler chickens using 1) 7 scan sampling intervals (0.5, 1, 3, 5, 10, 15, and 30 min) and 2) an automated tracking software program (EthoVision XT 14) compared to continuous behavioral observation, considered the gold standard for behavior observation. Ten 19-day-old Ross 708 broiler cockerels were included in this study. All behavior was video recorded over an 8-h period, and data were collected using a continuous sampling methodology. The same video files were utilized for analysis for scan sampling and automated tracking software analysis. For both analyses, the following criteria were used to identify which method accurately reflected the true duration and frequency for each behavior, as determined by continuous observation: R2 ≥ 0.9, slope was not different from 1 (P > 0.05), and intercept was not different from 0 (P > 0.05). Active, eating, drinking, and maintenance behaviors were accurately estimated with 0.5-min scan sample intervals. Active, inactive, eating, and maintenance behaviors were accurately estimated with 1-min scan sample intervals. Inactive behavior was accurately estimated with 5-min scan sample intervals. The remainder of sampling intervals examined did not provide accurate estimates, and no scan sampling interval accurately estimated the number of behavior bouts. The automated tracking software was able to accurately detect true duration of inactive behavior but was unable to accurately detect activity. The results of this study suggest that high-frequency behaviors can be accurately observed with instantaneous scan sampling up to 1-min intervals. Automated tracking software can accurately identify inactivity in young broiler chickens, but further behavior identification will require refinement.

Abstract
Public knowledge of the poultry industry is limited, yet attitudes towards the industry shape consumer behavior and influence the attractiveness of poultry careers and future study. This study assessed an online learning program contextualizing STEM learning within poultry science which was designed to increase poultry knowledge and interest. High school student participants (n = 169) across 16 classes (n = 12 teachers) in Indiana completed seven 30-min online modules during the fall 2018 semester. This case study used a mixed-methods, sequential explanatory design. Student knowledge and interest in poultry and teacher perceptions of the program were examined using quantitative measures. The study's qualitative portion assessed perceptions of the learning experience and comprised open-ended student and teacher survey questions and a teacher focus group. Qualitative data suggested that students' poultry knowledge, including awareness of the industry and related careers, was improved following the modules. Paired t-tests showed moderate to large effect sizes regarding increases in content quiz scores following each module (P < 0.001, Cohen's d = 0.45 to 0.80). Students' mean interest in poultry was initially low and remained statistically similar upon completion of the program (M = 1.84, 1.87; p = 0.67). Student and teacher statements indicated that design features of the program enhanced interest for some students. Other students did not perceive the program and its poultry science topics to be interesting or relevant to their lives. Results from this study can be used to inform the creation of effective poultry learning resources to contribute to workforce development and enhance the industry's public image.

Abstract
Meat consumption and public concern for farm animal welfare are increasing, despite limited public understanding of agriculture and animal welfare. Turkey is important in U.S. holiday meal traditions and turkey meat is a frequently consumed processed product (i.e., lunchmeat). However, little is known about public perceptions and knowledge of commercial turkeys. An online survey was administered to 1,695 respondents in November 2018 to examine U.S. (1) demographic factors affecting meat consumption, selection of labeled meat products, and concern for animal welfare, (2) public knowledge of turkeys, and (3) concerns regarding the welfare of turkeys and other species. A total of 95% of respondents consumed meat and 10% hunted for some of the meat they consumed. Meat consumption frequency depended on region of residence, income level, gender, age, and whether respondents hunted. Of the meat consumers, 86% purchased turkey products. More meat consumers looked for the USDA organic label (39%) and the Non Genetically Modified Organism (GMO) project label (38%) than animal-welfare food labels (14%) when buying meat products. More pet owners (39%) than non-pet owners (25%) looked for animal welfare food labels. Being a pet owner increased the probability of being concerned about farm animal welfare. Concern for the commercial turkey was similar to concern for other farm animal species; self-reported knowledge of turkey production was low (mean score 2.64; scale of 1 to 7, 7 = highest). Turkey welfare concerns (mean score; rank from 1 to 5; 5 = least concerning) included poor nutrition (2.471) and illness (2.508), followed by housing (2.732), hot or cold weather (3.308) and transportation (3.981). Turkey welfare attributes that respondents cared the most about (mean score; scale of 1–5, 5 = cared the least) included space to move around (2.366), followed by veterinary health and wellness (2.680), ability to perform natural behavior (2.812), no feather loss or visible injuries (3.304), and decreased aggression (3.837). Demographic factors are important determinants of meat consumption and animal welfare concern. Public knowledge of turkey production is limited, despite a large percentage of the population purchasing turkey products.

Abstract
Background Coccidiosis represents a serious threat to the poultry industry, affecting production and causing high morbidity, mortality and significant costs resulting from treatment and prophylaxis. In-feed anticoccidials have been used for decades for managing avian coccidiosis and were very effective until drug resistance emerged. The use of natural remedies has become a promising alternative in combating coccidiosis in chickens. Therefore, the purpose of the present study was to assess the efficiency of a commercial herbal formula (H), as oral liquid preparations, in experimental chicken coccidiosis. Methods Two independent controlled battery experiments (BE1 and BE2) were designed and the product was tested in 3 different formulas (H1, H2 and H3): H1 contained a propylene glycol extract of Allium sativum and Thymus serpyllum; H2 contained Origanum vulgare, Satureja hortensis and Chelidonium majus; and H3 contained Allium sativum, Urtica dioica, Inula helenium, Glycyrrhiza glabra, Rosmarinus officinalis, Chelidonium majus, Thymus serpyllum, Tanacetum vulgare and Coriandrum sativum. Chickens were divided into five groups for each BE as follows: (i) uninfected untreated control (UU1, UU2); (ii) infected untreated control (IU1, IU2); (iii) infected treated with amprolium (ITA1, ITA2); and (iv, v) two experimental groups infected treated with H1 (ITH1) and H2 (ITH2) formulas in the BE1 and with H3 (ITH3-5 and ITH3-10) formula in the BE2. The chickens from infected groups were challenged with 5000 (BE1) and 50,000 (BE2) sporulated oocysts of Eimeria spp. (E. acervulina, E. tenella and E. maxima), respectively. The anticoccidial efficacy was assessed by recording the following: oocysts output (OPG), lesion score (LS), weight gain (WG), feed conversion ratio (FCR) and anticoccidial index (ACI). Additionally, polyphenolics and flavonoids (caffeic-chlorogenic acid, apigenin, kaempferol, luteolin, quercitin, quercitrin) from herb extracts found in H3 formula were determined by the liquid chromatography-tandem mass spectrometry (LC-MS/MS) method. Results H1 and H2 reduced the WG, and increased the FCR and OPG compared with controls. H1 reduced the duodenal lesions, whilst H2 reduced the caecal lesions, compared with control. H3 decreased the OPG of Eimeria spp., reduced the total lesion score and improved the zootechnical performance (weight gain and feed conversion ratio). According to ACI value, H1 and H2 had no efficacy on Eimeria spp. infection, but H3 had good to marked anticoccidial effect, the ACI being slightly greater in the group ITH3-5. According to the results of LC-MS/MS, the concentration of polyphenols in H3 formula was the highest, the sum of chlorogenic acid and caffeic acid being 914.9 µg/ml. Conclusions H3 formula is a promising natural anticoccidial and field trials are recommended in order to validate the obtained data. Simple Summary The potential to improve stakeholders’ knowledge of animal welfare in the livestock industries through training programs and its influence on their attitudes to livestock welfare is unclear. Stakeholders in East and Southeast Asia responded to a questionnaire on their knowledge of animal welfare considerations during livestock transport and slaughter, as well as indicating their attitudes towards the welfare of livestock at these times. They then received training, after which their knowledge scores increased. Knowledge scores had few connections to attitudes, but whether the respondents were certain or not about their attitudes to livestock welfare was most likely to have the strongest correlation to knowledge. Regional differences were evident and suggested that these differences should be considered in future training provisions. Abstract The World Organisation for Animal Health (OIE) sets standards and guidelines for international animal welfare for the international livestock trade. The growing economic advancement in the East and Southeast Asian region suggested the potential benefit of a research study to examine stakeholders’ understanding of animal welfare during the transport and slaughter of livestock. A survey of stakeholders’ knowledge of livestock welfare in the transport and slaughter industries was conducted in four Southeast Asian countries, Malaysia, China, Vietnam and Thailand, in association with trainer and stakeholder workshops conducted in each country. The attitudes of participants towards animal welfare during slaughter and transport were also identified. Knowledge scores were in accordance with the respondents’ assessment of their own knowledge level. The biggest knowledge improvement was among Thai respondents, who tended to be younger and less experienced than in other countries. The respondents with the biggest improvement in knowledge scores were most likely to be involved in the dairy industry and least likely to be involved in the sheep and goat industries, with meat processors and those involved in pig or poultry production intermediate. The respondents who obtained their knowledge from multiple sources had most knowledge, but it increased the least after training. Connections between attitudes to improving animal welfare and knowledge were limited, being mainly confined to ambivalent responses about their attitudes. The study suggests that knowledge can be improved in animal welfare training programs focused on livestock welfare around transport and slaughter, but that local cultural backgrounds must be considered in designing the program.

Abstract
Simple Summary The lack of a consistent approval process for animal welfare claims in the US has allowed for misleading labeling of meat, eggs, and dairy. Products that do have meaningful welfare certifications tend to be more expensive. We administered a survey to determine consumers’ attitudes towards welfare certifications and the willingness to pay for foods from animals raised under more humane conditions. Most respondents (78%) thought it was important to know that animal-welfare assessments are conducted by an independent third party or the federal government (and not only the industry producer). The majority of respondents would be willing to pay extra for foods with a trustworthy welfare certification both in supermarkets and in restaurants. Our findings underscore the importance of eliminating fraudulent or misleading claims that can erode consumer trust and suggest that retailers can best serve consumers who are interested in higher welfare products by stocking products with certifications that convey meaningful information on the animal welfare standards from the source farms. Abstract This survey research sampled 1000 US (United States) consumers of meat, eggs, and dairy on their attitudes towards the welfare of farm animals and the willingness to pay for products with trustworthy welfare certifications. Most respondents (70%) reported paying attention to labels that indicate how the animals were raised and 78% believed there should be an objective third party to ensure farm animal welfare. The weighted average of the marginal willingness to pay for products raised under a trustworthy welfare certification was $0.79 for eggs (a 32% premium) and $0.96 for 1 lb. of chicken breast (a 48% premium). In addition, 57% of respondents reported they would be likely to choose a restaurant because it serves welfare-certified animal products and are also willing to pay ≥$5.00 extra per entrée. These findings suggest that many US consumers, particularly millennials, would be willing to seek out higher welfare products if they trust the label claims.

Abstract
Animal welfare is an increasingly global initiative, which makes the intricate business of operating across borders of particular relevance to the movement. There is, however, a distinct absence of literature dedicated to investigating operational strategies that are more likely to result in the success of international animal welfare initiatives. In addition to this, opportunities exist to investigate the human aspects of animal welfare, parallel to the growing field of animal-based science. This study aimed to begin addressing these gaps by conducting semi structured interviews with 15 leaders of some of the largest international animal welfare charities. Leaders were asked to describe their experiences of successful and unsuccessful initiatives within the animal welfare movement. Thematic analysis was then conducted to identify recurring concepts and extrapolate potentially applicable information. Engaging stakeholders and communities in locally-led and culturally respectful ways were discussed, as was the importance of knowledge, moderation, flexibility, and mutual benefits. The dangers of attacking personal and cultural identity are also highlighted and discussed. Key quotes and examples are presented, supplemented with mind maps as a tool to more readily apply the findings of the study in strategy development.
