Abstract
The aim of the study was to determine the changes occurring in the eggs of helmeted guinea fowl (Numida meleagris) from free-range farming in relation to the laying season and storage time. The experimental material consisted of 360 guinea fowl eggs, collected in the first, second and third laying seasons and stored for 7, 14 and 21 days. After each period, physical and physicochemical characteristics of the eggs were determined, as well as the basic chemical composition and mineral content of the albumen and yolk and the yolk fatty acid profile. The age of the guinea fowls affected certain physical parameters of the eggs. The egg weight, shape index and shell thickness increased with the age of the laying hens; however, a decrease in the proportion of shell in the egg was demonstrated. Storage time had a significant effect on egg weight, weight loss during storage and air cell height. Significant differences were found in the chemical composition of guinea fowl eggs depending on the age of the laying hens. Eggs obtained from older laying hens were characterized by higher yolk fat content and lower ash content, while the albumen contained higher water content and lower ash content. During the three-year laying period, changes were observed in the mineral composition of the eggs. The fatty acid profile underwent significant changes; however, no important differences were observed in the total content of SFA, MUFA, PUFA and n-6 fatty acids. Conversely, significant differences were found for n-3 acids and the n-6/n-3 ratio. Eggs in the first and second laying seasons exhibited the most favorable composition. The slow dynamics of changes occurring in successive laying seasons and egg storage time indicated that the raw material studied was safe and could be used by consumers.

Abstract
In recent years, the free-range system for laying hens has increased, driven by societal sensitivity to animal welfare. This study aimed to comparatively analyze the total lipid, cholesterol, and fatty acid composition of egg yolks of late-age laying hens reared in enriched cages (C) and the free-range system (FR). Eggs were collected from Lohmann Brown Classic hens at the 68th, 70th, 72nd, and 74th week of age. The concentrations of total lipids and cholesterol were not affected (p > 0.05) by either factor. Egg yolk from the FR group showed lower (p < 0.01) monounsaturated fatty acids and higher (p < 0.01) polyunsaturated fatty acid (PUFA) compared with that of the C group. From a nutritional point of view, the PUFA n-6/n-3 and the PUFA/SFA ratios of egg yolk from the FR group were favorably lower and higher (p < 0.01) compared with the C one. Conversely, hen age did not affect (p > 0.05) the fatty acid composition of yolks. Interactions between factors were found for total n-3 and n-6 PUFA and the n-6/n-3 ratio (p < 0.01), as well as the thrombogenic index (p < 0.05). In conclusion, the results confirmed that the free-range system may improve the nutritional yolk fatty acid profile and its positive impact on human health.

Abstract
Quail housing and diet significantly impact egg yield and quality. This study assessed the impact of diets and housing arrangements on Japanese quail's egg production, egg index, and quality. In two trials, birds were reared in cages and on the floor with a commercial layer diet (CLD), and an experimental diet (ED) for 32 weeks. Compared to floor-reared birds, cage birds achieved 50% egg production and sexual maturity first. With dietary effects, the CLD diet showed similar results. Furthermore, their feed efficiency, hen house egg production (HHEP), and hen day egg production (HDEP) were significantly higher in cage birds that consumed CLD. Bird livability was unaffected by the housing system, while birds fed CLD had longer lifespans. The housing system had no discernible effects on egg dry matter (DM), crude protein (CP), crude fat (CF), or ash percentage. Nevertheless, the egg albumen's DM, CP, ash%, yolk's DM, CP, and CF were greater in the birds fed CLD. Barring shell thickness, weight, and Haugh unit, birds raised in cages exhibited higher egg exterior index values. Besides the yolk ratio, yolk index, and albumen weight ratio, birds given CLD exhibited enhanced egg interior quality. Ultimately, the most optimal egg production performance, improved egg quality, and prolonged lifespan of Japanese quail were obtained with cage raising and feeding practices utilizing CLD.

Abstract
Regular welfare monitoring throughout rearing of pullets may help to identify problems early and take counteractions timely, which helps in guaranteeing good welfare. The aims of our observational study were (i) to establish and test a welfare monitoring system that can be used during (short) routine veterinary and technical staff visits for pullet flocks, (ii) to use the monitoring system to investigate variability between flocks and (iii) to analyse factors that potentially affect pullets' body weight, uniformity in body weight and mortality. The developed monitoring system tries to minimise the time required while not losing important information. Age-specific recording sheets comprise animal-based indicators of welfare and relevant environmental factors (housing, management, care) to allow for identifying causes of problems and targeted action. Finally, the system was implemented in a cross-sectional study and data collected in 100 flocks (67 organic, 33 conventional) on 28 rearing farms in Austria. Linear mixed models were used to identify factors influencing body weight, uniformity and mortality, both including all flocks (A) and only organic flocks (O) and a linear regression model with all flocks to investigate associations within animal-based indicators. High variability was found between flocks in animal-based indicators. Body weight was higher when the pre-rearing period was shorter (p ≤ 0.001, A&O), with higher intensities of light (p = 0.012, O), with only one compared to more stockpersons (p ≤ 0.007, A&O), with a higher number of flock visits per day (p ≤ 0.018, A&O), and a lower avoidance distance (p = 0.034, A). Body weight uniformity increased, with age and decreased with the duration of the light period (p = 0.046, A), and, amongst others, was higher on organic farms (farming type; p = 0.041). The latter may reflect a more uniform level of welfare due to a lower stocking density and lowered effects of social competition. Within organic flocks mortality was lower if pullets had access to a covered veranda (p = 0.025) resulting in an overall lower stocking density inside the barn, while in the model including all farms mortality was higher in cases where a disease had been diagnosed. We conclude that our monitoring system can easily be implemented in regular veterinary and technical staff visits, but could also be used by the farmers'. Several easy-to-record animal-based indicators of animal welfare could be analysed more frequently to increase early detection of problems. Implementation of such a routine-based monitoring system with easy-to-assess animal-based parameters and input measures can contribute to better animal health and welfare in pullets.

Abstract
This study evaluates the effect of housing environment on the egg quality characteristics of brown egg layers as many different environments are currently used in the industry. Battery cages, barren colony cages, enriched colony cages, cage-free, and free-range environments were evaluated. Overall, all egg quality measurements were affected by housing environment (p < 0.01) except for vitelline membrane strength, elasticity, and egg solids. Eggshells and yolks were lightest in barren colony cages and darkest from free-range hens (p < 0.0001). Free-range eggs were heavier than eggs from all other environments (p < 0.0001). Cage-free eggs had lower albumen height and Haugh units than other environments (p < 0.0001). Lastly, cage-free and free-range eggs had stronger eggshells than the other environments (p < 0.0001), and free-range eggs had more elastic eggshells than eggs from conventional battery cages and barren colony cages (p < 0.01). Access to the range seemed to give free-range hens different nutritional advantages, which allowed for the darker yolks and shells. Furthermore, eggs from barren colony cages seemed to exhibit more negative characteristics. Simply adding enrichments to colony cages did not improve or detract from egg quality. From this research, it appears that, as the industry moves toward extensive environments, the egg quality of brown egg layers will improve.

Abstract
Consumer demand for retail cage-free eggs is driving the layer industry towards greater use of extensive housing environments. However, there is limited research on how these environments affect egg production characteristics of brown egg layers, as was the focus of this study. Five housing environments were evaluated under typical industry conditions, including conventional cages, enrichable colony cages, enriched colony cages, cage-free and free-range. Three different brown egg laying strains were housed in the different housing environments and managed according to standard husbandry practices and stocking densities. Data collection for the strains began at 17 weeks of age, with a base period of 28 days for feed weigh backs and egg quality assessments. Housing environment had a highly significant (p < 0.0001) effect on all egg production characteristics measured, including egg production rates (% hen-day and % hen-housed), feed consumption (g/bird/day), feed conversion (egg g/feed g), and mortality rate (%) as well as percent grade A, B, and loss. Previous research revealed better egg production metrics for white egg layers in caged environments than extensive environments. In contrast, we observed brown egg layers had optimum production results for the free-range housing environments, and the poorest performance in enrichable colony cages.

Abstract
This study aimed to assess the changes in the oxidative status of six genotypes of free-range laying hens during cold, thermoneutral, and hot periods by measuring the levels of lipid peroxidation (LPO), total glutathione (tGSH), and the activity of antioxidant enzymes catalase (CAT), superoxide dismutase (SOD), and glutathione peroxidase (GPx) in erythrocyte suspension, in relation with their egg production. Two identical experiments were conducted in two consecutive years. Thermal stress adversely affected the oxidative status of hens. The induced OS is expressed by an increase in LPO and the activities of antioxidant enzymes SOD and GPx during cold and hot periods and a decrease in CAT and tGSH during the cold period in both years. The factor “temperature period”, compared to “year” and “genotype”, had the most significant influence on all biochemical parameters (p < 0.001). Significant phenotypic correlations (p < 0.05) were detected among studied biochemical parameters, except between SOD and tGSH. The chicken genotypes showed differences in their susceptibility to OS and this had an effect on egg production—from 37.87% to 74.93%. The OS is genotypically specific and can play a significant role in determining welfare and egg production in free-range systems.

Abstract
The effect of storage time at a temperature of 8°C on the direction and dynamics of changes in quality traits of eggs was investigated in shelled table eggs obtained from different egg production systems (cage system – CS, barn system – BS, free-range system – FRS). After 7, 14 and 28 d of storage, eggs from each housing system were tested for physical characteristics and for cholesterol content and fatty acid profile in the yolk. The weight of eggs from all studied housing systems declined with storage duration. The rate of weight loss was smallest in eggs from CS (P<0.05). Storage duration influenced eggshell traits but the rate and direction of these changes did not differ among the studied housing systems. Albumen height and Haugh unit score for eggs from rearing systems under study declined during storage (P<0.05). The greatest reduction of albumen height (18.85%) after the storage period was observed for CS eggs and the lowest (13.24%) for FRS eggs (P<0.05). No effect of storage duration on yolk colour intensity was observed for eggs from all the studied housing systems (P>0.05). Albumen pH increased with storage duration in eggs from all the egg production systems (P<0.05). The increase in the yolk pH during storage was the highest in FRS eggs and the lowest in the CS eggs. The storage duration of eggs from the different housing systems did not significantly influence albumen foaming capacity but adversely affected foam stability. There was no impact of storage duration of eggs from different housing systems on cholesterol content in the yolk. Eggs obtained from the different housing systems showed diverse fatty acid profiles in the yolk but this parameter did not significantly change during storage (P>0.05).

Abstract
This study was conducted to determine the effect of housing environment and laying hen strain on performance, egg quality, and microbiology of the cloaca and eggshell. A total of 1,152 Hy-Line Brown (HB) and Hy-Line W-36 White Leghorn (W-36) hens were used. All hens were kept in conventional cages (CC) from 18 to 32 wk of age and then moved to either enriched colony cages (EC) or free-range (FR) pens or continued in CC. Hens were randomly allocated into a 2 × 3 factorial arrangement of 2 laying hen strains (brown and white) and 3 housing environments (CC, EC, and FR) in a split plot in time (hen age) design. The experiment was conducted from 32 to 85 wk of age. The experiment was divided into 2 phases: early phase (32-51 wk of age) and late phase (52-85 wk of age). A 3-way interaction was observed for hen day egg production (HDEP) among housing environments, hen strain, and bird age in the early phase (P = 0.004) as well as in the late phase (P < 0.0001). In both of the phases, HDEP was higher in CC and FR than in EC. Hy-Line W-36 hens raised in EC had the lowest HDEP compared to other treatments. A 3-way interaction was observed for feed intake (FI; P = 0.017) and feed conversion ratio (FCR) in the late phase (P < 0.0001). The lowest FI and highest FCR were observed in EC for W-36 hens. Free-range hens performed in-between for eggshell quality when compared to CC and EC while HB had better egg quality than W-36. Free-range hens had higher cloacal bacterial counts for aerobes, anaerobes, and coliforms than CC and EC. Higher eggshell bacterial contamination was observed in eggs from FR versus eggs from CC and EC. These results indicate that both housing environment and laying hen strain affect performance and egg quality as well as cloacal and eggshell microbiology. Further studies should be conducted to determine food safety and economic impacts when using different hen strains and housing environments.

The present study compared the fatty acid profile and some physical parameters of eggs from hens reared according to the organic system at the beginning of the first and second laying cycle. A total of 1080 eggs were analysed at the beginning of the first (from the 28th to 30th week of age) and the second (from the 78th to 80th week of age) laying cycle. It was found that the hen ages influenced the egg weight, egg surface area, yolk proportion, and eggshell colour. Albumen and eggshell proportion, albumen, yolk index, Haugh unit score, and eggshell strength were lower in eggs from older hens compared with those produced from younger layers. Monounsaturated fatty acids were found in higher amounts than saturated fatty acids and polyunsaturated fatty acids in egg yolks of eggs from layers only at the beginning of the second laying cycle. The PUFAn-6/n-3 ratio, saturation, atherogenic, and thrombogenic indices were significantly lower in the egg yolks from older hens compared to younger layers. These findings (regarding the eggs from the older ones) prove that it is practical to utilize them in the organic farming system during a period of two years.

Abstract
The currently used poultry farming methods, which aim to maximise economic profit, are based on ever new technological solutions that improve flock management and increase bird performance. However, they do not always meet the natural needs of birds. Every housing method and technological solution currently in use is faced with some issues, such as social stress, adverse temperature/ humidity conditions, risk of zoonoses, and behavioural pathologies, which determine poultry performance and welfare. Disregard for animal welfare involves not only ethical but also practical aspects, because well-being and housing comfort translate into better weight gains, health and productivity of the birds. The studies reported here suggest that every production system, despite the many welfare-improving aspects, causes numerous behavioural, productivity and health abnormalities in laying hens. Therefore, further research is needed to identify various risk factors for the purpose of improving housing systems and increasing the welfare of hens.

Abstract
<b>The aim of study was to analyze the impact of the utility type, age and rearing system of hens on egg quality traits and the enzymatic activity of egg albumen lysozyme (LA). The material consisted of 120 eggs from two genotypes of hens: Hy-Line Brown and parent stock of Ross 308. Laying-type hens were reared divided into 2 systems: intensive (litter, balanced feed) and extensive (open runs, farm fodders). The second source of material was hens age (29, 33, 41, 53 and 70 wks) of the parent stock.. Stocks were differentiated in terms of the hens age (29, 33, 41, 53 and 70 wks). Eggs quality traits and LA were evaluated.
The LA of was higher in eggs from laying than from broiler breeder hens. It decreased with the hens’ age and increased with albumen mass, it was also positively correlated with albumen height and Haugh's units. The rearing system considerably modified mass of egg and albumen and the dense albumen height, but does not affect the LA.

Abstract
The present study was designed to study the effects of conventional and free range systems on egg quality attributes, fatty acid profile, and cholesterol contents of laying hen. Two hundred and forty R1 cross of Rhode Island Red (RIR) × Fyoumi (F) layers during the peak production were divided into two groups and reared in two different housing systems (free range vs. conventional systems). The statistical analysis of the results revealed that the housing system (modification of diet) significantly (p < 0.05) affected egg quality, fatty acid profile, and cholesterol contents. The highest (p < 0.05) whole egg and albumen weights were recorded for eggs produced in a conventional system and higher yolk weight and shell thickness were recorded in free range hens. Significantly (p < 0.05) lower concentration of saturated and higher concentration of mono- and polyunsaturated fatty acids were observed in eggs produced under a free range system. In addition, higher level of total omega-3 fatty acids and higher ratio of omega-6 to omega-3 fatty acids were observed in free range eggs as compared to those in the conventional system. From the results of the present study, we concluded that eggs produced from Rhode Island Red × Fyoumi laying hens in a free range system are qualitatively superior compared to those in the conventional system.

Abstract
It is difficult to objectively assess the chronic effects of housing systems on livestock and particularly on laying hens. However, this seems to be important in the context of animal welfare. Therefore, we conducted the present study in order to compare the effect of two different housing conditions, single cage (SC) and floor pen (FP), on the morphology of the adrenal gland. A higher amount of interrenal cells, which secrete stress hormones, can lead to a difference in the relation of adrenal and interrenal cells, which could be interpreted as an indication of chronic stress. For this purpose, adrenal glands were extracted, prepared, stained and examined by microscopy, and total area of the cut, total area of interrenal cells and total area of adrenal cells were measured. As a result, all laying hens had a higher percentage of interrenal cells than adrenal cells (FP: interrenal cells/adrenal cells = 78.37%/21.63%; SC: 80.00%/20.00%). The median of adrenal-interrenal ratio did not differ significantly (FP = 0.2503, SC = 0.2499), while the variation of the ratio between laying hens in FP and SC showed a slight tendency of a higher ratio in adrenal glands of FP (p < 0.0870). Body weight and adrenal-interrenal ratio were significantly negatively correlated in laying hens in FP (rS = -0.943, p < 0.0048) but not in SC (rS = -0.162, p = 0.7283). There was no significant correlation between body weight and total cell area for interrenal cells or adrenal cells. Body weight was significantly lower for laying hens kept in SC than for laying hens kept in FP (p < 0.0001). Due to the present results, it can be concluded that keeping laying hens in single cages can have a negative effect on body weight.

Simple Summary In recent years, consumers have shown increased interest in healthy and safe food produced under improved animal welfare standards. Therefore, production systems proving outdoor access have gained popularity, increasing the need for knowledge on genotypes suitable for free-range systems. This study aimed to investigate the suitability of two Turkish layer genotypes, Atak-S (brown) and Atabey (white), in a free-range system. We evaluated laying performance, egg quality parameters, and yolk fatty acid profile. The egg production was higher in Atabey than Atak-S, whereas the eggs from Atak-S hens tended to be heavier and had a stronger shell structure than eggs from Atabey hens. Furthermore, eggs from Atabey hens had improved egg yolk and albumen content compared to eggs from Atak-S hens. The total saturated fatty acid content in yolk was higher in Atabey eggs than in Atak-S eggs at 56 weeks of age, whereas a higher yolk color score was observed in Atak-S eggs than in Atabey eggs. Our results could help free-range egg producers to improve production, as well as satisfy consumer demands regarding egg quality in organic production. Abstract Consumer interest in buying eggs from animal welfare-friendly systems with outdoor access is increasing, leading to an increase in the need for knowledge on genotypes suitable for free-range systems. Two Turkish laying hen genotypes, Atak-S (brown, n = 210) and Atabey (white, n = 210), were reared in a free-range system from 19–72 weeks of age, and their suitability for the system was assessed based on laying performance, egg quality, and yolk fatty acid profile. Mean hen-day and hen-housed egg production were found to be higher in Atabey than Atak-S (p < 0.01). The brown eggs from Atak-S hens tended to be heavier than the white eggs from Atabey hens (p < 0.01). Brown eggs obtained from Atak-S hens had a stronger shell structure (p < 0.01), while white eggs from Atabey hens had higher mean yolk index, albumen index, and Haugh unit than brown eggs (p < 0.05). At 56 weeks of age, total saturated fatty acid content in yolk was higher in white eggs than in brown eggs (p < 0.01). These findings related to genotype could help free-range egg producers in their choices for more profitable production and for meeting consumer demands on egg quality and egg yolk fatty acid levels.

Simple Summary The loss of biodiversity is a matter of great concern worldwide. In the agricultural sector, the industrialization of livestock farming and the wide-spread use of highly selected hybrids, especially in developed countries, has led to the progressive extinction of many native breeds in these contexts. Nowadays, safeguarding poultry biodiversity is a key objective in all developed countries, Italy included. As a part of a large cross-sectional national project called ‘Conservation of biodiversity in Italian poultry breeds’, a questionnaire was designed to evaluate the diffusion of native chicken breeds and their relative product markets. The data reveal the poor diffusion of native breeds despite the existence of a niche market for their products. Indeed, increasing consumer concern about conventional production practices and the growing demand for alternative poultry products, which can fetch high retail prices, should be leveraged to encourage the diffusion of native chicken breeds in alternative poultry farming. An important knock-on effect would be the preservation of biodiversity. Abstract The intensive use of high-performing strains in poultry production has led to the extinction of several autochthonous chicken breeds and, consequently, loss of genetic variability. Interest in saving biodiversity is growing rapidly and has become a major objective worldwide. The aim of this study was to shed light on the production trends of native Italian poultry breeds and the related market. A questionnaire, which asked about the production cycles, the number of animals and table eggs produced per year and their retail prices was completed by 121 breeders across Italy. The surveyed breeders were divided into two categories: breeders conducting an agrozootechnical farm, referred to as ‘farmers’ (F); and breeders keeping chickens as backyard poultry, referred to as ‘fancy breeders’ (FB). Analysis of the data acquired indicated that animals were mainly slaughtered between 6 and 12 months of age, with F processing more animals per year. The same production trend was observed for table eggs. The recorded retail prices of native chicken products were higher than those for conventional products, but similar to those reported for valuable niche poultry products, such as the Poulet de Bresse in France and organic eggs. Knowledge about these highly valuable markets should be used to encourage the use of local breeds in alternative poultry farming and help protect biodiversity.

Abstract
The aim of this study was to investigate the effect of additional enrichment materials (EMs; pecking stones and alfalfa bales) on the occurrence of plumage damage, skin injuries, and toe injuries, with an emphasis on the possible differences between commercial hybrid strains of laying hens. During rearing (weeks 1-18, 16 compartments, 4000 pullets) and laying periods (weeks 21-72, 24 compartments, 2808 hens) in a littered housing system, EMs were permanently provided to the study groups (EXP), while control groups (CON) did not receive additional EM. In a two-factorial study design (two groups with four strains) with 351 hens per variant, the brown egg-laying Lohmann Brown classic (LB) and Bovans Brown (BB) strains as well as the white egg-laying Lohmann Selected Leghorn classic (LSL) and Dekalb White (DW) strains were investigated. Compared to the CON, the EXP showed reduced body mass during rearing (p < 0.001) and reduced albumen consistency in the laying period (p < 0.001). Regarding integument condition, the LSL in the EXP showed more toe injuries than in the CON (p = 0.018). Remarkably, genotype-environment interactions between strains and groups were evident (p < 0.001). In groups with an EM supply, plumage damage decreased in LB (p ≤ 0.033) and LSL (p ≤ 0.005) but increased in BB (p ≤ 0.003). Moreover, there were fewer skin injuries in LSL (p = 0.001) but more in BB (p = 0.001) in groups with access to EM. In view of the diverging effects between strains, future practical recommendations for laying hen husbandry should be strain-specific.

Eggs are of considerable importance in feeding the population, as they are a relatively inexpensive and complex food source of very high biological value. The daily animal protein requirement for the human body can be covered with eggs in the cheapest way and with the lowest environmental impact. As animal welfare, as well as environmental and health awareness issues, become increasingly prominent in developed countries, consumer demand for eggs has also changed significantly in recent years, with an increasing number of consumers buying eggs produced in non-cage housing systems. In recent years, cage housing has been more frequently debated in EU member states. An initiative was launched in 2018 to end cage housing technologies and the sale of eggs produced in this way. However, in addition to animal welfare, a number of other factors need to be considered in relation to sustainable production. For this reason, the aim of this research is to provide a comprehensive overview of the sustainability issues of various housing technologies, as well as quality factors affecting consumer health and egg consumption based on the relevant international references and databases. Although there is a growing demand for products produced in non-cage housing systems due to the increasing relevance of environmental protection, health awareness and animal welfare issues in Western societies, research has shown that non-caged production is not the best solution for environmentally, socially and economically sustainable egg production.

Abstract
During their lifespan, chickens are confronted with a wide range of acute and chronic stressors in their housing environment that may threaten their welfare and health by modulating the immune system. Especially chronic stressful conditions can exceed the individual's allostatic load, with negative consequences for immunity. A fully functional immune system is mandatory for health and welfare and, consequently, also for high productivity and safe animal products. This review provides a comprehensive overview of the impact of housing form, light regime as well as aerial ammonia and hydrogen sulfide concentrations on the immune system in chickens. Certain housing conditions are clearly associated with immunological alterations which potentially impair the success of vaccinations or affect disease susceptibility. Such poor conditions counteract sustainable poultry production. This review also outlines current knowledge gaps and provides recommendations for future research.

Abstract
The present work was carried out to investigate the influences of housing system and dietary essential oils (EOs) supplementation to laying hens on the productive performance, egg quality, immunity, antioxidant parameters, and hematology. A factorial arrangement (2 × 4) was performed, including 2 housing systems and 4 different types of EOs (without EOs, thymol, carvacrol, and euganol) during the production stages (from 28–78 wk of age). Birds were randomly divided into 2 groups with each of 2,000 birds. The first group was moved to laying cages while the second group was a floor reared. Each group was randomly divided into 4 groups (5 replicates of 100 birds each): The first were considered as a control group, and the second, third, and fourth groups were treated with thymol, carvacrol, and euganol EO, respectively. The results showed that hens reared in cage system had higher egg weight (P < 0.05), egg production, egg mass, and feed intake and better feed conversion ratio (P < 0.001) than those reared in the floor system. Blood picture values (except white blood cells), phagocytic index, phagocytic activity, and blood chemistry parameters (except calcium, phosphorus, and urea values) of laying hens were not affected (P > 0.05) by housing system. The groups fed EOs showed a rapid improvement (P < 0.001) in the egg production%, egg weight, egg mass, and egg quality. Thymol group had the highest egg production (P < 0.001). Thymol and eugenol groups had the highest egg weight, egg mass, and egg quality (P < 0.001). The groups fed diets containing thymol or eugenol consumed lower feed and had better feed conversion ratio (P < 0.001) than the control group. Immunity indices (phagocytic activity [P < 0.05], avian influenza [AIH5 and AIH9], P < 0.001) were improved with the presence of EOs in the laying hen diet. These results strongly suggest that dietary EO supplementation could be a successful attempt to improve the productive performance, egg quality, and immunity of laying hens.

Abstract
In poultry production, the intensive use of high-performing hybrid animals led to loss of genetic variability and a consequent lower response to climatic change and disease. Poultry biodiversity is seriously threatened, and its safeguard is a strong objective in developed countries. According to the FAO, which emphasized the importance of native breeds for its country of origin, the aim of this study was to present the first contribution on eggs quality for endangered the Siciliana chicken breed and deepen knowledge on the local Livorno breed. At 20 weeks of age, 108 laying hens (54 Siciliana breed and 54 Livorno breed) were divided into six homogeneous groups of 18 hens each and reared according to requirements imposed by the EC Regulation 889/08 for organic production. The production cycle was controlled over one year, and egg production was recorded daily by group. Eggs were collected, weighted, and measured. Physico-chemical parameter and fatty acids profile were analyzed and nutritional indexes calculated. The statistical model included the effects of breed (Siciliana, Livorno). Egg production was 190 egg/head for Siciliana and 180 for Livorno group. The results showed similar values for Siciliana and Livorno egg quality, highlighting several valuable quality traits from these breeds which might be taken into account for conservation programs.

Abstract
The aim of this study was to compare egg quality, carcass, meat characteristics, and bone properties of Taihang chickens in 2 different housing systems at various ages. A total of 168 birds were selected and randomly allocated to 2 groups at 23 wks and raised in conventional cage (CC) or flattening on floor (FF) housing system, respectively. FF hens' egg weight, albumen height, and Haugh unit were higher (P < 0.05), and yolk weight was lower (P < 0.001) than those of the CC hens. Egg quantity of FF hens was higher than that of the CC hens (P < 0.01). The FF hens' weight (P < 0.05) and breast meat percent (P < 0.01) were higher than those of the CC hens. The highest live body and carcass weight were observed at 57 wk (both P < 0.01), whereas the highest semieviscerated percentage (P < 0.01) and meat weight of breast and thigh (P < 0.05) were shown at 49 wk. The highest eviscerated percentage and thigh meat were displayed at 41 and 32 wk, respectively (P < 0.01). For meat color, the lightness of both breast and thigh meat in the FF group was significantly reduced compared with those of the CC group (P < 0.01 and P < 0.05). FF hens' humerus weight and breaking strength (both P < 0.01) and tibia breaking strength (P < 0.05) were significantly higher than those of the CC hens. Femur breaking strength was significantly affected by hens' age (P < 0.01). Egg weight, albumen height, Haugh unit, yolk color (all P < 0.01), pH of thigh meat, semieviscerated, and eviscerated weight (all P < 0.05) were influenced by the interaction of housing system and age, whereas no change in moisture loss rate, meat color, shearing force, and bone quality was found (P > 0.05). In summary, in the 2 housing systems, hens' age and their interaction could affect slaughter performance, quality of egg, meat, and bone of Taihang chickens. In addition, the results of the present study support a theoretical basis for the development and utilization of Taihang chickens in accordance with the FF system.

Abstract
Context
In Australia and many other countries, free-range eggs can be sold at significantly higher prices than cage eggs. Mislabelling cage eggs as free-range eggs and vice versa has been documented, and has a significant impact on consumer trust and egg consumption. The development of methods to identify eggs produced from different production systems is necessary to satisfy consumer demand.
Aims
The objective of this study was to determine whether eggshell mineral composition could be used as a way to differentiate eggs originating from each production system. Our hypothesis was that birds with access to soil would have higher levels of trace minerals in shells.
Methods
Eggs were randomly collected from six commercial caged and six commercial free-range flocks in Australia. Twelve eggshell samples from each flock were analysed for mineral composition (Ca, P, Mg, Na, Al, B, Cu, Mn, Fe, K, S and Zn) by using inductively coupled plasma-optical emission spectrometry.
Key results
The results showed that free-range eggshells contained significantly higher contents of macro-minerals (P, Mg and Na) but lower contents of micro-minerals (Cu, Fe, K, S and Mn) than the cage eggshells (P < 0.05). For all minerals measured, a high variability was noted within and between production systems.
Conclusions
Analysis of eggshell mineral composition may not be effective for determining the origin of eggs.
Implications
Systematic studies of the bird’s environment, including analysis of mineral composition in diets, pastures, soil and drinking water are required for comprehensive evaluation of the influences of production systems of laying hens on mineral composition of eggs and eggshells.

Abstract
RESUMO O experimento foi realizado no setor de avicultura/UFRRJ, utilizando 348 galinhas semipesadas (linhagem Dekalb Brown), com 52 semanas de idade, criadas sob dois sistemas de produção: cage-free e em gaiolas. Os dados obtidos pela análise físico-química e microbiológica dos ovos e a resistência óssea à quebra foram submetidos à análise de variância. No caso de ocorrerem efeitos dos diferentes sistemas de produção, foi aplicado o teste de Tukey a 5% de probabilidade para comparação das médias. A qualidade físico-química foi igualmente favorecida pelos dois sistemas de produção, indicando que as circunstâncias experimentais propiciaram condições adequadas para a formação de ovos de boa qualidade. O sistema de gaiola não desfavoreceu as características ósseas das galinhas, apontando que, em densidades adequadas, a gaiola pode não exercer um fator prejudicial para a qualidade óssea. O sistema de produção cage-free piorou a contaminação da casca, comprovando que ovos postos em ninhos são mais contaminados em comparação aos produzidos em gaiolas.

Abstract
Previous study in our lab showed that indigenous Xianju chickens from free-range system (FRS) under summer conditions had lower egg production than those from conventional cage rearing system (CRS). The objective of this study was to preliminarily determine the FRS-dependent mechanism of depressing laying performance according to determining the effect of rearing systems on reproductive hormones secretion and their receptors mRNA expression in Xianju chickens reared under summer conditions. A total of 360 indigenous Xianju chickens were randomly allocated to CRS and FRS groups, each of which included 5 replicates of 36 hens. The experiment lasted between 21 and 29 wk of age. We found that the ovarian weight, numbers of small yellow follicles, and large white follicles in the FRS group were lower than those in the CRS group (P < 0.05). Changing from CRS to FRS increased serum concentrations of prolactin and decreased serum-luteinizing hormone and progesterone levels (P < 0.05). Gene expressions in the preovulatory follicles from FRS hens were upregulated for prolactin receptor and downregulated for luteinizing hormone receptor and progesterone receptor, compared to those from CRS hens (P < 0.05). It can be concluded that changing from CRS to FRS in the current experimental conditions depressed egg production traits in Xianju chickens by inducing a synergistic activity of reproductive hormones and the gene expressions of their receptors.

Abstract
This study was conducted to investigate the performance of laying hens and to determine possible age-related changes on external and internal quality traits of their eggs and synthesis of heat shock protein 70 kDa (HSP70) in the conventional cage and organic rearing systems. For this purpose, 4 different Bovans White hybrid flocks of the same age were monitored in each of these two systems for 52 weeks. While a total of 360 eggs were examined to determine the effects of rearing system and age (30 and 60 weeks) on egg quality traits, 48 liver tissue samples were examined for the analysis of HSP70. Egg production (hen-day) and dirty egg ratio were higher in the organic rearing system (P<0.05). The age at 50% yield, the age at peak of lay, and peak production rate were calculated as 156, 218.75 days and 95.98% in the conventional system, and 155.75, 201.50 days, and 96.56% in the organic system, respectively (P>0.05). While egg weight, albumen weight, yolk weight, shell weight, shape index, and yolk colour were higher in the organic system, the crude ash ratio of eggshell and shell ratio were higher in the conventional system (P<0.05). It was also found that the egg weight, albumen weight, yolk weight, shell weight, and the percentage of yolk were higher at 60 weeks of age (P<0.001). The percentage of shell and albumen, shape index, and yolk colour were higher at 30 weeks of age (P<0.001). The interactions between rearing system and age were statistically significant in terms of shell thickness, shape index, crude ash ratio, and yolk colour (P<0.001). Stress protein (HSP70) level was affected only by the rearing system and was higher in the organic system (P<0.001). As a result, the organic system can be considered as advantageous in terms of egg production and quality traits and the eggs of young hens exhibited better properties. The high level of HSP70 in the organic system could indicate that hens were affected by the environmental conditions at higher rates and/or the hens reared in the organic system had a stronger antioxidant defence system.

Abstract
The present study investigated the effect of the type of alternative housing system, and genotype and age of laying hens on physical traits of egg shell and contents. It was demonstrated that alternative housing system type influenced egg weight and shape, and eggshell color and yolk color intensity. Eggs from free-range system were heavier and were characterized by more intense yolk color. No effect of alternative housing system type on albumen height, value of Haugh units (HU value) and presence of meat and blood spots was noted. Hen genotype had a significant effect on egg weight and eggshell color intensity in each of the alternative housing systems tested in this study. Hy-line Brown hens laid heavier eggs than hens of native breeds. Genotype was also observed to affect egg content traits (albumen height, HU values and presence of meat and blood spots). Independently of the type of alternative housing system, most blood and meat spots were noted in eggs of hens laying brown-shelled eggs, i.e. R-11 and Hy-line Brown layers. Laying hen age significantly impacted on egg weight, yolk percentage, eggshell traits (color intensity, weight, thickness and strength) and egg content traits (HU value, yolk weight and color intensity, presence of meat and blood spots). Older hens laid heavier eggs with a greater yolk percentage but with thinner eggshell.

Abstract. The aim of the study was to evaluate the usefulness of hybrids derived from Greenleg Partridge cocks and Rhode Island Red (GPR) hens for an extensive rearing system (RS), with special emphasis on high-quality table eggs. Newly created hybrids were compared to Hy-Line Brown (HLB) hens. The experiment was carried out with a total of 2400 hens. Both hybrid types (H's) were divided into two equal groups according to the rearing system: intensive (I) and extensive (E). The traits analysed in hens were body weight at the 8th, 16th, and 33rd weeks of age; laying production; and feed intake. At the 33rd week of a bird's age, egg quality was evaluated. The results of the study showed different reaction of the hybrids to the rearing system. This may confirm better usefulness of GPR for extensive farming and HLB hens for intensive methods of rearing. Furthermore, it can be concluded that the extensive system had a positive impact on the productivity of GPR birds.

Abstract
Owing to the higher demands for avoiding medication and antibiotics, health status of the production animals plays an important role in the poultry industry, especially in organic poultry systems. Immunity plays a major role in keeping the host free from disease, and it is evident that the host's genetic make-up influences immunity and disease resistance/susceptibility in chickens. Previously, breeding strategies aimed at selection for resistance against specific diseases with the risk of creating less disease resistance against other pathogens. Changing breeding strategies towards selection of chickens with a more general and broad disease resistance or robustness may therefore improve the overall health status, animal welfare, and food security in the poultry production. The aim of this study was therefore to compare the immunocompetence of the presumed "robust" Hellevad chickens with two chicken lines widely used in organic production, Bovans Brown (Bovans) and Hisex White (Hisex). The chickens were subjected to a routine vaccination program comprising one parasite and four viral vaccines. The current study indicates that considerable differences in immunocompetence may exist between commercial layer lines used in organic production. The Hellevad chickens were found to have higher body weight at the end of the experiment (17 weeks of age) than the other two lines. Furthermore, Hellevad and Hisex chickens were found to have higher levels of humoral innate immunity with regard to sample to positive ratio of natural antibodies in serum and concentration of mannose-binding lectin in serum as compared to Bovans. Moreover, indications of an inflammatory response were observed in the Bovans at week 5, corresponding to 1 week after vaccination with live infectious bursal disease virus. With regard to adaptive immune parameters such as IgY concentration in blood and infectious bursal disease virus (IBDV)-specific antibody titres, the Hellevad and Hisex chickens had lower levels than the Bovans. How the differences observed in growth and immune parameters in the three chicken lines influence the immune protection against infection needs to be studied further.

Abstract
A study was conducted to investigate the effects of 3 different rearing systems [free range ( FR: ), semi-intensive ( SI: ), and confinement ( CF: )] on blood biochemical profile and immune response in 4 varieties of Aseel chicken [Lakha ( LK: ), Mushki ( MS: ), Peshawari ( PW: ) and Sindhi ( SN: )] for 10 wk duration (7 to 16 wk). At the age of 6 wk, in total, 180 cockerels were assigned to 12 treatment groups, 3 (rearing system) × 4 (Aseel chicken variety) factorial arrangement in 7 randomized complete blocks, replicated 3 times with 5 birds in each replicate (45 birds of each variety; 60 birds in each rearing system; 36 total replicates). Blood samples were collected through brachial vein at the end of wk 16. After laboratory analysis, the recorded data for blood biochemical profile and immune response were analyzed by using 2-way ANOVA under factorial arrangement. The results showed higher (P < 0.05) plasma glucose and total protein in birds under CF. Titer against Newcastle disease virus ( NDV: ) and infectious bronchitis virus ( IBV: ) was found to be greater (P < 0.05) in SI and FR, respectively. Peshawari birds indicated higher (P < 0.05) concentration of glucose, total protein, albumin, uric acid, creatinine, and titers to NDV and IBV. Birds of LK and SN varieties also indicated maximum antibody titer against NDV and IBV, respectively. Cholesterol level was found to be greater (P < 0.05) in birds of LK and SN. Interaction of SN with FR revealed maximum (P < 0.05) cholesterol whereas interaction of PW with SI indicated maximum antibody titer against NDV. The results highlight that CF rearing system expediently affects glucose and total protein levels in birds; SI and FR confer maximum antibody titers to NDV and IBV. Birds of PW variety indicated higher glucose, total protein, albumin, uric acid, and creatinine, the lowest cholesterol under FR and the enhanced antibody titer against NDV and IBV.

The objectives of this study were to investigate the effects of a specific melon concentrate on oviduct antioxidant defenses and egg characteristics of laying hens.Lohmann Brown hens were assigned to 2 treatment groups (n = 16 in each). One group was supplemented with the melon concentrate (26 mg/kg of feed) during 6 wk. The other group was composed of untreated hens, which served as control. Eggs were collected, weighed (yolk, albumen, shell), and analyzed (Haugh unit and albumen pH relevant for egg freshness) at the end of the supplementation period. Antioxidant status was evaluated in the oviduct measuring antioxidant enzymes by western blotting.This study demonstrated that the melon concentrate could ameliorate egg weight, and particularly yolk contribution to egg weight and egg shell weight. An increase in endogenous antioxidant defenses in the oviduct after this melon concentrate supplementation could explain the better egg characteristics. The improvement of egg quality, due to melon concentrate, may have important economic implications for future breeding programs, particularly if these effects generalize from hens to other poultry species, or even other livestock animal species.

Abstract
Background Eggs are an important source of food due to its favorable effects on human health derived from the protein, fats, minerals, vitamins and bioactive components. We studied the effects of source of eggs in the retail market on fatty acids, lipid profiles and antioxidant status in eggs. Methods Eggs from four sources named A, B, C, and D in the retail market were collected to determine fatty acid, total lipid, and cholesterol profiles; hypocholesterolemic, atherogenic and thrombotic indices; antioxidant status (e.g., of malondialdehyde); and total antioxidant capacity in the whole edible parts of eggs (albumen + yolk) and egg yolk. Samples were collected four times and pooled over times to represent 5 and 10 samples per source for determinations of fatty acids and determinations of lipid profiles and antioxidant status, respectively. Results Fatty acid, total lipid, and cholesterol profiles; hypocholesterolemic, atherogenic and thrombotic indices; presence of malondialdehyde; and total antioxidant capacity in the whole edible parts of eggs and egg yolk showed significant differences (P ≥ 0.05) among different sources of eggs in retail market. Source D showed higher levels of saturated fatty acids (SFA) and linoleic and monounsaturated fatty acid (MUFA)/polyunsaturated fatty acid (PUFA) ratio but lower levels of MUFA and linolenic, arachidonic, eicosapentaeonic (EPA), decohexaenoic (DHA), and total ω9 fatty acids and lower unsaturated fatty acids (UFA)/SFA ratio. Similar trend was shown in fatty acids profiles of the whole edible parts of eggs. On the other hand, total cholesterol, low density lipoprotein (LDL), LDL/high density lipoprotein (HDL) ratio, and atherogenic and thrombogenic indices and total antioxidant capacity of source D were significantly higher than those of other source, but levels of hypocholesterolemic index, and malondialdehyde levels were lower for source D. Conclusion Eggs in the retail market in Jeddah city, Saudi Arabia, from May to August 2015 showed a different pattern of fatty acid and cholesterol profiles; hypocholesterolemic, atherogenic, and thrombogenic indices; and antioxidant status, which might reflect the nutritional and husbandry practice of laying hens. This can affect the nutritional values of eggs, and hence, customer benefits, suggesting the need for standardization and quality control based on nutrient index values.
