Unraveling the Sense of Smell (Nobel Lecture)

Activity-dependent formation of the topographic map and the critical period in the development of mammalian olfactory system

Neural activity influences every aspect of nervous system development. In olfactory systems, sensory neurons expressing the same odorant receptor project their axons to stereotypically positioned glomeruli, forming a spatial map of odorant receptors in the olfactory bulb. As individual odors activate unique combinations of glomeruli, this map forms the basis for encoding olfactory information. The establishment of this stereotypical olfactory map requires coordinated regulation of axon guidance molecules instructed by spontaneous activity. Recent studies show that sensory experiences also modify innervation patterns in the olfactory bulb, especially during a critical period of the olfactory system development. This review examines evidence in the field to suggest potential mechanisms by which various aspects of neural activity regulate axon targeting. We also discuss the precise functions served by neural plasticity during the critical period.

The Scent Enriched Primate

Zoos worldwide play an important role in both in situ and ex situ conservation via efforts such as providing breeding programmes and reintroductions into the wild. Zoo populations are crucial as a buffer against extinction. However, a mismatch between the wild and zoo environments can lead to psychological as well as physiological health issues, such as stress, boredom, diabetes, and obesity. These problems, in turn, can impact the reproductive success of individuals. Consequently, some primate species have reduced breeding success when housed in zoos compared to their wild counterparts. To prevent the onset of behavioural, physiological, and cognitive negative effects and to continually improve the welfare of their animals, zoos widely implement different types of environmental enrichment. There are many forms enrichment can take, such as feeding, puzzles and training, but sensory enrichments, including implementing the use of scents, are currently understudied. Scent enrichments are less utilized despite multiple research studies showing that they may have positive effects on welfare for zoo-housed animal species, including non-human primates. Despite being traditionally considered to be microsmatic, various lines of evidence suggest that olfaction plays a larger role in primates than previously thought. This review therefore focuses on scent-based enrichment and the specifics of captive primates.

Optical sensor arrays for the detection and discrimination of natural products

Covering: up to the end of 2022Natural products (NPs) have found uses in medicine, food, cosmetics, materials science, environmental protection, and other fields related to our life. Their beneficial properties along with potential toxicities make the detection and discrimination of NPs crucial for their applications. Owing to the merits of low cost and simple operation, optical sensor arrays, including colorimetric and fluorometric sensor arrays, have been widely applied in the detection of small molecule NPs and discrimination of structurally similar small molecule NPs or complex mixtures of NPs. This review provides a brief introduction to the optical sensor array and focuses on its progress toward the detection and discrimination of NPs. We summarized the design principle of sensor arrays toward various NPs (i.e., saccharides and polyhydroxy compounds, organic acids, flavonoids, organic sulfur compounds, amines, amino acids, and saponins) based on their functional groups and characteristic chemical properties, along with representative examples. Moreover, the challenges and potential directions for further research of optical sensor arrays for NPs are proposed.

Artificial Olfactory Signal Modulation for Detection in Changing Environments

Animals have evolved to sense in complex environments through both modulation behavior including sniffing as well as sophisticated neural processing including memory and neuromodulation. Here, we explore thermal modulation of chemically diverse sensor arrays, where response patterns are based on partitioning of odorants across the array. The differential response patterns contain information about the chemical nature of the odorant for identification. By transitioning away from well-defined concentration modulation, traditionally used in the field, to thermal modulation, it is possible to capture both diagnostic patterns as well as intensity information in complex environments. This performance is demonstrated with carbon-black based, chemically diverse sensor arrays, that are thermally modulated with light at 25 mHz exposed to different analytes of varying concentrations.

Bio-inspired polymer array vapor sensor with dual signals of fluorescence intensity and wavelength shift

Organic vapor sensors based on polymer owing to their tunable molecular structures and designable functions have attracted considerable research interest. However, detecting multiple organic vapors with high accuracy and a low detection limit is still challenging. Herein, inspired by the mammalian olfactory recognition system, organic vapor sensors based on one-dimensional microfilament array structures with a wide range of sensing gases are demonstrated. By introducing aggregation-induced emission (AIE) molecules, sensors possess dual-optical sensing mechanisms of variation in fluorescence intensity and wavelength. By virtue of the synergistic effects of dual signals, superb accuracy and incredibly low detection limit are achieved for identifying analytes. In particular, the polymer/AIE microfilament array can detect acetone vapor down to 0.03% of saturated vapor pressure. In the saturated vapor of acetone, the fluorescence intensity of the sensor arrays was reduced by 53.7%, while the fluorescence wavelength was red-shifted by 21 nm. Combined with the principal component analysis (PCA) algorithm, the polymer/AIE molecular sensor arrays accomplished the classification and identification of acetone, ethanol, methylene chloride, toluene, and benzene. This bioinspired approach with dual sensing signals may broaden practical applications to high-performance gas sensors for precise molecular detection.

Chemical Constituents of Essential Oils Used in Olfactory Training: Focus on COVID-19 Induced Olfactory Dysfunction

The recent increase in the number of patients with post-viral olfactory dysfunction (PVOD) following the outbreak of COVID-19 has raised the general interest in and concern about olfactory dysfunction. At present, no clear method of treatment for PVOD has been established. Currently the most well-known method to improve the symptoms of olfactory dysfunction is "olfactory training" using essential oils. The essential oils used in olfactory training typically include rose, lemon, clove, and eucalyptus, which were selected based on the odor prism hypothesis proposed by Hans Henning in 1916. He classified odors based on six primary categories or dimensions and suggested that any olfactory stimulus fits into his smell prism, a three-dimensional space. The term "olfactory training" has been used based on the concept of training olfactory sensory neurons to relearn and distinguish olfactory stimuli. However, other mechanisms might contribute to how olfactory training can improve the recovery of the olfactory sense. Possibly, the essential oils contain chemical constituents with bioactive properties that facilitate the recovery of the olfactory sense by suppressing inflammation and enhancing regeneration. In this review, we summarize the chemical constituents of the essential oils of rose, lemon, clove, and eucalyptus and raise the possibility that the chemical constituents with bioactive properties are involved in improving the symptoms of olfactory dysfunction. We also propose that other essential oils that contain chemical constituents with anti-inflammatory effects and have binding affinity with SARS-CoV-2 can be new candidates to test their efficiencies in facilitating the recovery.

Are Multiple Chemosensory Systems Accountable for COVID-19 Outcome?

Chemosensory systems (olfaction, taste, trigeminus nerve, solitary chemoreceptor cells, neuroendocrine pulmonary cells, and carotid body, etc.) detect molecules outside or inside our body and may share common molecular markers. In addition to the impairment of taste and olfaction, the detection of the internal chemical environment may also be incapacitated by COVID-19. If this is the case, different consequences can be expected. (1) In some patients, hypoxia does not trigger distressing dyspnea ("silent" hypoxia): Long-term follow-up may determine whether silent hypoxia is related to malfunctioning of carotid body chemoreceptors. Moreover, taste/olfaction and oxygen chemoreceptors may be hit simultaneously: Testing olfaction, taste, and oxygen chemoreceptor functions in the early stages of COVID-19 allows one to unravel their connections and trace the recovery path. (2) Solitary chemosensory cells are also involved in the regulation of the innate mucosal immune response: If these cells are affected in some COVID-19 patients, the mucosal innate immune response would be dysregulated, opening one up to massive infection, thus explaining why COVID-19 has lethal consequences in some patients. Similar to taste and olfaction, oxygen chemosensory function can be easily tested with a non-invasive procedure in humans, while functional tests for solitary chemosensory or pulmonary neuroendocrine cells are not available, and autoptic investigation is required to ascertain their involvement.

COVID-19 Anosmia: High Prevalence, Plural Neuropathogenic Mechanisms, and Scarce Neurotropism of SARS-CoV-2?

Severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) is the causative pathogen of coronavirus disease 2019 (COVID-19). It is known as a respiratory virus, but SARS-CoV-2 appears equally, or even more, infectious for the olfactory epithelium (OE) than for the respiratory epithelium in the nasal cavity. In light of the small area of the OE relative to the respiratory epithelium, the high prevalence of olfactory dysfunctions (ODs) in COVID-19 has been bewildering and has attracted much attention. This review aims to first examine the cytological and molecular biological characteristics of the OE, especially the microvillous apical surfaces of sustentacular cells and the abundant SARS-CoV-2 receptor molecules thereof, that may underlie the high susceptibility of this neuroepithelium to SARS-CoV-2 infection and damages. The possibility of SARS-CoV-2 neurotropism, or the lack of it, is then analyzed with regard to the expression of the receptor (angiotensin-converting enzyme 2) or priming protease (transmembrane serine protease 2), and cellular targets of infection. Neuropathology of COVID-19 in the OE, olfactory bulb, and other related neural structures are also reviewed. Toward the end, we present our perspectives regarding possible mechanisms of SARS-CoV-2 neuropathogenesis and ODs, in the absence of substantial viral infection of neurons. Plausible causes for persistent ODs in some COVID-19 convalescents are also examined.

Modification of the Peripheral Olfactory System by Electronic Cigarettes

Electronic cigarettes (e-cigs) are used by millions of adolescents and adults worldwide. Commercial e-liquids typically contain flavorants, propylene glycol, and vegetable glycerin with or without nicotine. These chemical constituents are detected and evaluated by chemosensory systems to guide and modulate vaping behavior and product choices of e-cig users. The flavorants in e-liquids are marketing tools. They evoke sensory percepts of appealing flavors through activation of chemical sensory systems to promote the initiation and sustained use of e-cigs. The vast majority of flavorants in e-liquids are volatile odorants, and as such, the olfactory system plays a dominant role in perceiving these molecules that enter the nasal cavity either orthonasally or retronasally during vaping. In addition to flavorants, e-cig aerosol contains a variety of by-products generated through heating the e-liquids, including odorous irritants, toxicants, and heavy metals. These harmful substances can directly and adversely impact the main olfactory epithelium (MOE). In this article, we first discuss the olfactory contribution to e-cig flavor perception. We then provide information on MOE cell types and their major functions in olfaction and epithelial maintenance. Olfactory detection of flavorants, nicotine, and odorous irritants and toxicants are also discussed. Finally, we discuss the cumulated data on modification of the MOE by flavorant exposure and toxicological impacts of formaldehyde, acrolein, and heavy metals. Together, the information presented in this overview may provide insight into how e-cig exposure may modify the olfactory system and adversely impact human health through the alteration of the chemosensory factor driving e-cig use behavior and product selections. © 2021 American Physiological Society. Possible Use of Phytochemicals for Recovery from COVID-19-Induced Anosmia and Ageusia

The year 2020 became the year of the outbreak of coronavirus, SARS-CoV-2, which escalated into a worldwide pandemic and continued into 2021. One of the unique symptoms of the SARS-CoV-2 disease, COVID-19, is the loss of chemical senses, i.e., smell and taste. Smell training is one of the methods used in facilitating recovery of the olfactory sense, and it uses essential oils of lemon, rose, clove, and eucalyptus. These essential oils were not selected based on their chemical constituents. Although scientific studies have shown that they improve recovery, there may be better combinations for facilitating recovery. Many phytochemicals have bioactive properties with anti-inflammatory and anti-viral effects. In this review, we describe the chemical compounds with anti- inflammatory and anti-viral effects, and we list the plants that contain these chemical compounds. We expand the review from terpenes to the less volatile flavonoids in order to propose a combination of essential oils and diets that can be used to develop a new taste training method, as there has been no taste training so far. Finally, we discuss the possible use of these in clinical settings.

Cannabinoids Regulate Sensory Processing in Early Olfactory and Visual Neural Circuits

Our sensory systems such as the olfactory and visual systems are the target of neuromodulatory regulation. This neuromodulation starts at the level of sensory receptors and extends into cortical processing. A relatively new group of neuromodulators includes cannabinoids. These form a group of chemical substances that are found in the cannabis plant. Δ9-tetrahydrocannabinol (THC) and cannabidiol (CBD) are the main cannabinoids. THC acts in the brain and nervous system like the chemical substances that our body produces, the endogenous cannabinoids or endocannabinoids, also nicknamed the brain's own cannabis. While the function of the endocannabinoid system is understood fairly well in limbic structures such as the hippocampus and the amygdala, this signaling system is less well understood in the olfactory pathway and the visual system. Here, we describe and compare endocannabinoids as signaling molecules in the early processing centers of the olfactory and visual system, the olfactory bulb, and the retina, and the relevance of the endocannabinoid system for synaptic plasticity.

Can SARS-CoV-2 infect the central nervous system via the olfactory bulb or the blood-brain barrier?

Severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) emerged in Wuhan, China in December 2019. On February 11, the World Health Organization (WHO) announced the name for the new illness caused by SARS-CoV-2: COVID-19. By March 11, the outbreak of COVID-19 was declared a pandemic by the WHO. This virus has extensively altered daily life for many across the globe, while claiming hundreds of thousands of lives. While fundamentally a respiratory illness, many infected individuals experience symptoms that involve the central nervous system (CNS). It is likely that many of these symptoms are the result of the virus residing outside of the CNS. However, the current evidence does indicate that the SARS-CoV-2 virus can use olfactory neurons (or other nerve tracts) to travel from the periphery into the CNS, and that the virus may also enter the brain through the blood-brain barrier (BBB). We discuss how the virus may use established infection mechanisms (ACE2, NRP1, TMPRSS2, furin and Cathepsin L), as well mechanisms still under consideration (BASIGIN) to infect and spread throughout the CNS. Confirming the impact of the virus on the CNS will be crucial in dealing with the long-term consequences of the epidemic.

The Sniffing Kidney: Roles for Renal Olfactory Receptors in Health and Disease

Olfactory receptors (ORs) represent the largest gene family in the human genome. Despite their name, functions exist for these receptors outside of the nose. Among the tissues known to take advantage of OR signaling is the kidney. From mouse to man, the list of renal ORs continues to expand, and they have now been linked to a variety of processes involved in the maintenance of renal homeostasis, including the modulation of blood pressure, response to acidemia, and the development of diabetes. In this review, we highlight the recent progress made on the growing appreciation for renal ORs in physiology and pathophysiology.

Perfume and Flavor Engineering: A Chemical Engineering Perspective

In the last two decades, scientific methodologies for the prediction of the design, performance and classification of fragrance mixtures have been developed at the Laboratory of Separation and Reaction Engineering. This review intends to give an overview of such developments. It all started with the question: what do we smell? The Perfumery Ternary Diagram enables us to determine the dominant odor for each perfume composition. Evaporation and 1D diffusion model is analyzed based on vapor-liquid equilibrium and Fick's law for diffusion giving access to perfume performance parameters. The effect of matrix and skin is addressed and the trail of perfumes analyzed. Classification of perfumes with the perfumery radar is discussed. The methodology is extended to flavor and taste engineering. Finally, future research directions are suggested.

The Role of Knockout Olfactory Receptor Genes in Odor Discrimination

To date, little is known about the role of olfactory receptor (OR) genes on smell performance. Thanks to the availability of whole-genome sequencing data of 802 samples, we identified 41 knockout (KO) OR genes (i.e., carriers of Loss of Function variants) and evaluated their effect on odor discrimination in 218 Italian individuals through recursive partitioning analysis. Furthermore, we checked the expression of these genes in human and mouse tissues using publicly available data and the presence of organ-related diseases in human KO (HKO) individuals for OR expressed in non-olfactory tissues (Fisher test). The recursive partitioning analysis showed that age and the high number (burden) of OR-KO genes impact the worsening of odor discrimination (p-value < 0.05). Human expression data showed that 33/41 OR genes are expressed in the olfactory system (OS) and 27 in other tissues. Sixty putative mouse homologs of the 41 humans ORs have been identified, 58 of which are expressed in the OS and 37 in other tissues. No association between OR-KO individuals and pathologies has been detected. In conclusion, our work highlights the role of the burden of OR-KO genes in worse odor discrimination.

The Zonal Organization of Odorant Receptor Gene Choice in the Main Olfactory Epithelium of the Mouse

A mature olfactory sensory neuron (OSN) of the main olfactory epithelium (MOE) typically expresses one allele of one odorant receptor (OR) gene. It is widely thought that the great majority of the 1,141 intact mouse OR genes are expressed in one of four MOE zones (or bands or stripes), which are largely non-overlapping. Here, we develop a multiplex method to map, in 3D and MOE-wide, the expression areas of multiple OR genes in individual, non-genetically modified mice by three-color fluorescence in situ hybridization, semi-automated image segmentation, and 3D reconstruction. We classify the expression areas of 68 OR genes into 9 zones. These zones are highly overlapping and strikingly complex when viewed in 3D reconstructions. There could well be more zones. We propose that zones reflect distinct OSN types that are each restricted in their choice to a subset of the OR gene repertoire.

The Optoelectronic Nose

How does one tell the difference between one molecule or mixture of molecules from another? Chemical sensing seeks to probe physical or chemical properties of molecular or ionic species (i.e., analytes) and transform that information into a useful and distinguishable output. The olfactory system of animals is the prototype of chemical sensing. Even for human beings (who are generally more visual than olfactory creatures), the sense of smell is one of our most basic capabilities, and we can discriminate among many thousands, and possibly even billions, of different odors. The chemical specificity of the olfactory system does not come from specific receptors for specific analytes (i.e., the traditional lock-and-key model of enzyme-substrate interactions), but rather olfaction uses pattern recognition of the combined responses of several hundred olfactory receptors.In analogy to olfaction, colorimetric sensor arrays provide high dimensional data from the color changes of chemically responsive colorants as they are exposed to analytes. These colorants include pH responsive dyes, Lewis acid/base indicators, redox dyes, vapochromics, and surface-modified silver nanoparticles. The color difference maps so created provide chemical sensing with high sensitivity (often down to ppb levels), impressive discrimination among very similar analytes, and exquisite fingerprinting of extremely similar mixtures over a wide range of analyte types, both in the gas and liquid phases. Such colorimetric arrays probe a wide range of the chemical reactivity of analytes, rather than the limited dimensionality of physical properties (e.g., mass) or physisorption (e.g., traditional electronic noses). Our sensor arrays are disposable and simple to produce by either inkjet or robotic dip-pen printing onto the surface of porous polymer membranes or even paper.Design of both sensor arrays and optical readers for their analysis has advanced to a fully self-contained pocket-sized instrument, the optoelectronic nose. Quantitative analysis requires appropriate chemometric methods for pattern recognition of data with inherently high dimensionality, e.g., hierarchical cluster analysis and support vector machines. A wide range of applications for the colorimetric sensor arrays has been developed, including personal dosimetry of toxic industrial chemicals, detection of explosives or fire accelerants, monitoring pollutants for artwork and cultural heritage preservation, quality control of foods and beverages, rapid identification of bacteria and fungi, and detection of disease biomarkers in breath or urine. The development of portable, high-accuracy instrumentation using standard imaging devices with the capability of onboard, real-time analysis has had substantial progress and increasingly meets the expectations for real-world use.

Kaleidoscopic fluorescent arrays for machine-learning-based point-of-care chemical sensing

Multiplexed analysis allows simultaneous measurements of multiple targets, improving the detection sensitivity and accuracy. However, highly multiplexed analysis has been challenging for point-of-care (POC) sensing, which requires a simple, portable, robust, and affordable detection system. In this work, we developed paper-based POC sensing arrays consisting of kaleidoscopic fluorescent compounds. Using an indolizine structure as a fluorescent core skeleton, named Kaleidolizine (KIz), a library of 75 different fluorescent KIz derivatives were designed and synthesized. These KIz derivatives are simultaneously excited by a single ultraviolet (UV) light source and emit diverse fluorescence colors and intensities. For multiplexed POC sensing system, fluorescent compounds array on cellulose paper was prepared and the pattern of fluorescence changes of KIz on array were specific to target chemicals adsorbed on that paper. Furthermore, we developed a machine-learning algorithm for automated, rapid analysis of color and intensity changes of individual sensing arrays. We showed that the paper sensor arrays could differentiate 35 different volatile organic compounds using a smartphone-based handheld detection system. Powered by the custom-developed machine-learning algorithm, we achieved the detection accuracy of 97% in the VOC detection. The highly multiplexed paper sensor could have favorable applications for monitoring a broad-range of environmental toxins, heavy metals, explosives, pathogens.

Rational Design of Semiconductor-Based Chemiresistors and their Libraries for Next-Generation Artificial Olfaction

Artificial olfaction based on gas sensor arrays aims to substitute for, support, and surpass human olfaction. Like mammalian olfaction, a larger number of sensors and more signal processing are crucial for strengthening artificial olfaction. Due to rapid progress in computing capabilities and machine-learning algorithms, on-demand high-performance artificial olfaction that can eclipse human olfaction becomes inevitable once diverse and versatile gas sensing materials are provided. Here, rational strategies to design a myriad of different semiconductor-based chemiresistors and to grow gas sensing libraries enough to identify a wide range of odors and gases are reviewed, discussed, and suggested. Key approaches include the use of p-type oxide semiconductors, multinary perovskite and spinel oxides, carbon-based materials, metal chalcogenides, their heterostructures, as well as heterocomposites as distinctive sensing materials, the utilization of bilayer sensor design, the design of robust sensing materials, and the high-throughput screening of sensing materials. In addition, the state-of-the-art and key issues in the implementation of electronic noses are discussed. Finally, a perspective on chemiresistive sensing materials for next-generation artificial olfaction is provided.

The Sensing Liver: Localization and Ligands for Hepatic Murine Olfactory and Taste Receptors

Sensory receptors, including olfactory receptors (ORs), taste receptors (TRs), and opsins (Opns) have recently been found in a variety of non-sensory tissues where they have distinct physiological functions. As G protein-coupled receptors (GPCRs), these proteins can serve as important chemosensors by sensing and interpreting chemical cues in the environment. We reasoned that the liver, the largest metabolic organ in the body, is primed to take advantage of some of these sensory receptors in order to sense and regulate blood content and metabolism. In this study, we report the expression of novel hepatic sensory receptors - including 7 ORs, 6 bitter TRs, and 1 Opn - identified through a systematic molecular biology screening approach. We further determined that several of these receptors are expressed within hepatocytes, the parenchymal cells of the liver. Finally, we uncovered several agonists of the previously orphaned hepatic ORs. These compounds fall under two classes: methylpyrazines and monoterpenes. In particular, the latter chemicals are plant and fungal-derived compounds with known hepatic protective effects. Collectively, this study sheds light on the chemosensory functions of the liver and unveils potentially important regulators of hepatic homeostasis.

Differential Expression of Mucins in Murine Olfactory Versus Respiratory Epithelium

Mucins are a key component of the surface mucus overlying airway epithelium. Given the different functions of the olfactory and respiratory epithelia, we hypothesized that mucins would be differentially expressed between these 2 areas. Secondarily, we evaluated for potential changes in mucin expression with radiation exposure, given the clinical observations of nasal dryness, altered mucus rheology, and smell loss in radiated patients. Immunofluorescence staining was performed to evaluate expression of mucins 1, 2, 5AC, and 5B in nasal respiratory and olfactory epithelia of control mice and 1 week after exposure to 8 Gy of radiation. Mucins 1, 5AC, and 5B exhibited differential expression patterns between olfactory and respiratory epithelium (RE) while mucin 2 showed no difference. In the olfactory epithelium (OE), mucin 1 was located in a lattice-like pattern around gaps corresponding to dendritic knobs of olfactory sensory neurons, whereas in RE it was intermittently expressed by surface goblet cells. Mucin 5AC was expressed by subepithelial glands in both epithelial types but to a higher degree in the OE. Mucin 5B was expressed by submucosal glands in OE and by surface epithelial cells in RE. At 1-week after exposure to single-dose 8 Gy of radiation, no qualitative effects were seen on mucin expression. Our findings demonstrate that murine OE and RE express mucins differently, and characteristic patterns of mucins 1, 5AC, and 5B can be used to define the underlying epithelium. Radiation (8 Gy) does not appear to affect mucin expression at 1 week.

Peptides, DNA and MIPs in Gas Sensing. From the Realization of the Sensors to Sample Analysis

Detection and monitoring of volatiles is a challenging and fascinating issue in environmental analysis, agriculture and food quality, process control in industry, as well as in 'point of care' diagnostics. Gas chromatographic approaches remain the reference method for the analysis of volatile organic compounds (VOCs); however, gas sensors (GSs), with their advantages of low cost and no or very little sample preparation, have become a reality. Gas sensors can be used singularly or in array format (e.g., e-noses); coupling data output with multivariate statical treatment allows un-target analysis of samples headspace. Within this frame, the use of new binding elements as recognition/interaction elements in gas sensing is a challenging hot-topic that allowed unexpected advancement. In this review, the latest development of gas sensors and gas sensor arrays, realized using peptides, molecularly imprinted polymers and DNA is reported. This work is focused on the description of the strategies used for the GSs development, the sensing elements function, the sensors array set-up, and the application in real cases.

Identification of key odorants in complex mixtures occurring in nature

Covering: up to 2019Soon after the birth of gas chromatography, mass spectrometry and olfactometry were used as detectors, which allowed impressive development to be achieved in the area of odorant determinations. Since the mid-80s, structured methods of gas chromatography-olfactometry have appeared, allowing the determination of which odor constituents play a key role in materials. Progressively, numerous strategies have been proposed for sample preparation from raw materials, the representativeness evaluation of extracts, the identification of odor constituents, their quantification, and subsequently, the recombination of the key odorants to mimic the initial odor. However, the multiplicity of options at each stage of the analysis leads to a confusing landscape in this field, and thus, the present review aims at critically presenting the available options. For each step, the most frequently used alternatives are described, together with their strengths and weaknesses based on theoretical and experimental justifications according to the literature. These techniques are exemplified by many applications in the literature on aromas, fragrances and essential oils, with the initial focus on wine odorants, followed by a short overview on the molecular diversity of key odorants, which illustrates most of the facets and complexities of odor studies, including the issues raised by odorant interactions such as synergies.

Generalization and Discrimination of Molecularly Similar Odorants in Detection Canines and the Influence of Training

Operationally-deployed canine detectors are often trained on one or a limited number of materials representing a single target odor, and training frequently occurs using materials of a high purity grade in controlled scenarios with minimal other background odors. Conversely, in the field, canine detectors are expected to generalize and identify variations of the target odor, while discriminating from similar extraneous or background odors. This exemplifies the balance between generalization and discrimination required for effective canine detectors. This research explored the tendency for detection canines to generalize or discriminate between similar odorants. Two groups of related odorants were used in two separate studies; (1) odorants of similar functional groups with differing carbon chains, and (2) odorants of similar carbon chain length but differing functional groups. Within each odorant set, the effect of training was addressed by incrementally increasing the number of odorants each canine was trained to detect. Initially, discrimination increased with increasing molecular dissimilarity in both odorant groups. After further training on additional related odorants, generalization increased across the set of odorants of the same carbon chain length, but there were no significant changes in either generalization or discrimination across the set of odorants of the same functional group. The results suggest that the canines in this study were more likely to generalize across compounds of the same chain length with differing functional group than across compounds of the same functional group, but differing chain lengths. Furthermore, some variation in performance between individual canines indicated that the tendency to generalize differed with experience, breed, and other factors affecting olfaction.

Sustentacular Cell Enwrapment of Olfactory Receptor Neuronal Dendrites: An Update

The pseudostratified olfactory epithelium (OE) may histologically appear relatively simple, but the cytological relations among its cell types, especially those between olfactory receptor neurons (ORNs) and olfactory sustentacular cells (OSCs), prove more complex and variable than previously believed. Adding to the complexity is the short lifespan, persistent neurogenesis, and continuous rewiring of the ORNs. Contrary to the common belief that ORN dendrites are mostly positioned between OSCs, recent findings indicate a sustentacular cell enwrapped configuration for a majority of mature ORN dendrites at the superficial layer of the OE. After vertically sprouting out from the borderlines between OSCs, most of the immature ORN dendrites undergo a process of sideways migration and terminal maturation to become completely invaginated into and enwrapped by OSCs. Trailing the course of the dendritic sideways migration is the mesodendrite (mesentery of the enwrapped dendrite) made of closely apposed, cell junction connected plasma membrane layers of neighboring folds of the host sustentacular cell. Only a minority of the mature ORN dendrites at the OE apical surface are found at the borderlines between OSCs (unwrapped). Below I give a brief update on the cytoarchitectonic relations between the ORNs and OSCs of the OE. Emphasis is placed on the enwrapment of ORN dendrites by OSCs, on the sideways migration of immature ORN dendrites after emerging from the OE surface, and on the terminal maturation of the ORNs. Functional implications of ORN dendrite enwrapment and a comparison with myelination or Remak’s bundling of axons or axodendrites in the central and peripheral nervous system are also discussed.

Cross-Reactive, Self-Encoded Polymer Film Arrays for Sensor Applications

The development of chemical sensors continues to be an active area of research, especially the development of a practical electronic nose. Here, we present a spectroscopic chemical sensor based on an array of 64 self-encoded polymer films deposited on a microfabricated silicon substrate. The polymer arrays were analyzed by FTIR and Raman spectroscopy before and after exposure to a series of organic volatiles to monitor changes in their vibrational fingerprints. We show here that the spectroscopic changes of self-encoded polymer films can be used to distinguish between volatile organic analytes. Changes induced in the sensor arrays by the analyte vapor were denoted by a spectroscopic response of the self-encoded polymer sensors and transformed into a response pattern by multivariate data analysis using partial least squares regression. The results indicated that the polymer sensors provide a unique and reproducible pattern for each analyte vapor and can potentially be used in the fabrication of a novel electronic nose device.

Nudging to get our food choices on a sustainable track

Food production is one of the major contributors to environmental damage. Adaptations in our food choices are needed to preserve resources for the needs of future generations. More sustainable consumption patterns have been encouraged by economic incentives, laws, education and communication campaigns. Nonetheless, consumers still find difficulties in trying to change their current food habits. This review takes a behavioural approach in encouraging sustainable food choices among consumers. From a nudging perspective, many behavioural changes can be encouraged in a non-obtrusive way by adapting the complex food environment in which consumers are operating. These interventions do not restrict consumers' choices but rather adapt the choice architecture wherein food decisions are made. Drawing on the literature from diverse theoretical perspectives, we provide an overview of the application of nudging for more sustainable food choices and highlight where more research is needed. More specifically, we discuss research that used nudging to engender cognitive impact (i.e. the use of labels or visibility enhancements), affective responses (i.e. sensorial and social influence cues) and behavioural effects (i.e. adjustments in convenience and product size). We conclude that this review only shows the tip of the iceberg of the research on nudging and sustainable consumption that is likely forthcoming in the next few years, following the successes of nudging applications in other domains. Nonetheless, each individual nudging intervention requires careful examination. Personal predispositions towards the environment should be considered when designing interventions, demonstrating the complementarity of nudging with education on sustainable consumption.

Critical review of electronic nose and tongue instruments prospects in pharmaceutical analysis

Electronic nose (enose, EN) and electronic tongue (etongue, ET) have been designed to simulate human senses of smell and taste in the best possible way. The signals acquired from a sensor array, combined with suitable data analysis system, are the basis for holistic analysis of samples. The efficiency of these instruments, regarding classification, discrimination, detection, monitoring and analytics of samples in different types of matrices, is utilized in many fields of science and industry, offering numerous practical applications. Popularity of both types of devices significantly increased during the last decade, mainly due to improvement of their sensitivity and selectivity. The electronic senses have been employed in pharmaceutical sciences for, among others, formulation development and quality assurance. This paper contains a review of some particular applications of EN and ET based instruments in pharmaceutical industry. In addition, development prospects and a critical summary of the state of art in the field were also surveyed.

Anatomy of the olfactory mucosa

The classic notion that humans are microsmatic animals was born from comparative anatomy studies showing the reduction in the size of both the olfactory bulbs and the limbic brain relative to the whole brain. However, the human olfactory system contains a number of neurons comparable to that of most other mammals, and humans have exquisite olfactory abilities. Major advances in molecular and genetic research have resulted in the identification of extremely large gene families that express receptors for sensing odors. Such advances have led to a renaissance of studies focused on both human and nonhuman aspects of olfactory physiology and function. Evidence that olfactory dysfunction is among the earliest signs of a number of neurodegenerative and neuropsychiatric disorders has led to considerable interest in the use of olfactory epithelial biopsies for potentially identifying such disorders. Moreover, the unique features of the olfactory ensheathing cells have made the olfactory mucosa a promising and unexpected source of cells for treating spinal cord injuries and other neural injuries in which cell guidance is critical. The olfactory system of humans and other primates differs in many ways from that of other species. In this chapter we provide an overview of the anatomy of not only the human olfactory mucosa but of mucosae from a range of mammals from which more detailed information is available. Basic information regarding the general organization of the olfactory mucosa, including its receptor cells and the large number of other cell types critical for their maintenance and function, is provided. Cross-species comparisons are made when appropriate. The polemic issue of the human vomeronasal organ in both the adult and fetus is discussed, along with recent findings regarding olfactory subsystems within the nose of a number of mammals (e.g., the septal organ and Grüneberg ganglion).

Renal olfactory receptor 1393 contributes to the progression of type 2 diabetes in a diet-induced obesity model

Olfactory receptors are G protein-coupled receptors that serve to detect odorants in the nose. Additionally, these receptors are expressed in other tissues, where they have functions outside the canonical smell response. Olfactory receptor 1393 (Olfr1393) was recently identified as a novel regulator of Na⁺-glucose cotransporter 1 (Sglt1) localization in the renal proximal tubule. Glucose reabsorption in the proximal tubule (via Sglt1 and Sglt2) has emerged as an important contributor to the development of diabetes. Inhibition of Sglt2 is accepted as a viable therapeutic treatment option for patients with type 2 diabetes and has been shown to delay development of diabetic kidney disease. We hypothesized that Olfr1393 may contribute to the progression of type 2 diabetes, particularly the development of hyperfiltration, which has been linked to increased Na⁺ reabsorption in the proximal tubule via the Sglts. To test this hypothesis, Olfr1393 wild-type (WT) and knockout (KO) mice were challenged with a high-fat diet to induce early-stage type 2 diabetes. After 16 wk on the high-fat diet, fasting blood glucose values were increased and glucose tolerance was impaired in the male WT mice. Both of these effects were significantly blunted in the male KO mice. In addition, male and female WT mice developed diabetes-induced hyperfiltration, which was attenuated in the Olfr1393 KO mice and corresponded with a reduction in luminal expression of Sglt2. Collectively, these data indicate that renal Olfr1393 can contribute to the progression of type 2 diabetes, likely as a regulator of Na⁺-glucose cotransport in the proximal tubule.

How to be rational about empirical success in ongoing science: The case of the quantum nose and its critics

Empirical success is a central criterion for scientific decision-making. Yet its understanding in philosophical studies of science deserves renewed attention: Should philosophers think differently about the advancement of science when they deal with the uncertainty of outcome in ongoing research in comparison with historical episodes? This paper argues that normative appeals to empirical success in the evaluation of competing scientific explanations can result in unreliable conclusions, especially when we are looking at the changeability of direction in unsettled investigations. The challenges we encounter arise from the inherent dynamics of disciplinary and experimental objectives in research practice. In this paper we discuss how these dynamics inform the evaluation of empirical success by analyzing three of its requirements: data accommodation, instrumental reliability, and predictive power. We conclude that the assessment of empirical success in developing inquiry is set against the background of a model's interactive success and prospective value in an experimental context. Our argument is exemplified by the analysis of an apparent controversy surrounding the model of a quantum nose in research on olfaction. Notably, the public narrative of this controversy rests on a distorted perspective on measures of empirical success.

Can the Electron-Accepting Properties of Odorants Be Involved in Their Recognition by the Olfactory System?

The present study examines the possible importance of the electron-accepting properties of odorant molecules and, in particular, the formation and decay of temporary negative ions via low-energy electron attachment as a possible contribution toward understanding odorant recognition by olfactory receptors (ORs). Fragments formed by dissociative electron attachment (DEA) of mustard oil odorants represented by a series of isothiocyanates are studied experimentally using DEA spectroscopy and DFT calculations. Relative intensities for the most abundant fragment species, S^- and SCN^-, are found to be characteristic of structurally similar odorants under investigation. This novel approach for the investigation of odorants may contribute to understanding the initial stages of the olfactory process and may provide a means to distinguish between odorants and their interactions with the olfactory receptor system.

Supramolecular functional assemblies: dynamic membrane transporters and peptide nanotubular composites

The fabrication of functional molecular devices constitutes one of the most important current challenges for chemical sciences. The complex processes accomplished by living systems continuously demand the assistance of non-covalent interactions between molecular building blocks. Additionally, these building blocks (proteins, membranes, nucleotides) are also constituted by self-assembled structures. Therefore, supramolecular chemistry is the discipline required to understand the properties of the minimal self-assembled building blocks of living systems and to develop new functional smart materials. In the first part of this feature article, we highlight selected examples of the preparation of supramolecular membrane transporters with special emphasis on the application of dynamic covalent bonds. In the second section of the paper we review recent breakthroughs in the preparation of peptide nanotube hybrids with functional applications. The development of these devices constitutes an exciting process from where we can learn how to understand and manipulate supramolecular functional assemblies.

The present review describes recent advances in the development of an artificial nose system based on olfactory receptors and various sensing platforms. The kind of artificial nose, the production of olfactory receptors, the sensor platform for signal conversion and the application of the artificial nose system based on olfactory receptors and various sensing platforms are presented. The associated transduction modes are also discussed. The paper presents a review of the latest achievements and a critical evaluation of the state of the art in the field of artificial nose systems.

Tracking traumatic head injuries with the chemical senses

Chemosensory disorders, primarily olfactory, have diagnostic significance for prevalent human illnesses, but the multitude of smells makes measuring function appear daunting. The olfactory system operates under dynamic natural sensing conditions in which many individual odor chemicals are waxing and waning. Yet, in experimentally controlled simulations, mixture-component selective adaptation shows individual or shared prominent characteristic odors are detected but molecular stimulus features are not. As in other biological chemical signaling systems, including taste, odors activate dedicated receptors (OR). Given rapid OR adaptation with the passage of time, individual odor recognition is momentary. Receptive dendrites of the nearly 400 genetically variable human-OR in the olfactory epithelium critically project axons to the olfactory bulb through perforations in the cribriform plate of the skull. Analytic chemical-quality codes detect single odor-mixture components. However, identities of no more than 3 or 4 most salient odors are perceived due to central mixture-suppression, the mutual inhibition among diverse olfactory-bulb or cortical neurons. The componental codes allow olfaction to readily discern odor quality and valence of a wide range of unrelated chemicals, a few at a time. Head trauma may result in a partial or complete loss of smell and facial trauma a loss of taste-nerve function. Testing smell could plot the course of recovery from chronic traumatic encephalopathies that prevail in contact sports. Measuring brain function with olfaction would provide simpler and more direct monitoring of prognosis than biochemical sensors.

Cutting Edge Methods for Non-Invasive Disease Diagnosis Using E-Tongue and E-Nose Devices

Biomimetic cross-reactive sensor arrays (B-CRSAs) have been used to detect and diagnose a wide variety of diseases including metabolic disorders, mental health diseases, and cancer by analyzing both vapor and liquid patient samples. Technological advancements over the past decade have made these systems selective, sensitive, and affordable. To date, devices for non-invasive and accurate disease diagnosis have seen rapid improvement, suggesting a feasible alternative to current standards for medical diagnostics. This review provides an overview of the most recent B-CRSAs for diagnostics (also referred to electronic noses and tongues in the literature) and an outlook for future technological development.

Recognition of the Component Odors in Mixtures

Natural olfactory stimuli are volatile-chemical mixtures in which relative perceptual saliencies determine which odor-components are identified. Odor identification also depends on rapid selective adaptation, as shown for 4 odor stimuli in an earlier experimental simulation of natural conditions. Adapt-test pairs of mixtures of water-soluble, distinct odor stimuli with chemical features in common were studied. Identification decreased for adapted components but increased for unadapted mixture-suppressed components, showing compound identities were retained, not degraded to individual molecular features. Four additional odor stimuli, 1 with 2 perceptible odor notes, and an added "water-adapted" control tested whether this finding would generalize to other 4-compound sets. Selective adaptation of mixtures of the compounds (odors): 3 mM benzaldehyde (cherry), 5 mM maltol (caramel), 1 mM guaiacol (smoke), and 4 mM methyl anthranilate (grape-smoke) again reciprocally unmasked odors of mixture-suppressed components in 2-, 3-, and 4-component mixtures with 2 exceptions. The cherry note of "benzaldehyde" (itself) and the shared note of "methyl anthranilate and guaiacol" (together) were more readily identified. The pervasive mixture-component dominance and dynamic perceptual salience may be mediated through peripheral adaptation and central mutual inhibition of neural responses. Originating in individual olfactory receptor variants, it limits odor identification and provides analytic properties for momentary recognition of a few remaining mixture-components.

Validity Examination of the Dissipative Quantum Model of Olfaction

Despite some inconclusive experimental evidences for the vibrational model of olfaction, the validity of the model has not been examined yet and therefore it suffers from the lack of conclusive experimental support. Here, we generalize the model and propose a numerical analysis of the dissipative odorant-mediated inelastic electron tunneling mechanism of olfaction, to be used as a potential examination in experiments. Our analysis gives several predictions on the model such as efficiency of elastic and inelastic tunneling of electrons through odorants, sensitivity thresholds in terms of temperature and pressure, isotopic effect on sensitivity, and the chiral recognition for discrimination between the similar and different scents. Our predictions should yield new knowledge to design new experimental protocols for testing the validity of the model.

The role of metals in mammalian olfaction of low molecular weight organosulfur compounds

Covering: up to the end of 2017While suggestions concerning the possible role of metals in olfaction and taste date back 50 years, only recently has it been possible to confirm these proposals with experiments involving individual olfactory receptors (ORs). A detailed discussion of recent experimental results demonstrating the key role of metals in enhancing the response of human and other vertebrate ORs to specific odorants is presented against the backdrop of our knowledge of how the sense of smell functions both at the molecular and whole animal levels. This review emphasizes the role of metals in the detection of low molecular weight thiols, sulfides, and other organosulfur compounds, including those found in strong-smelling animal excretions and plant volatiles, and those used in gas odorization. Alternative theories of olfaction are described, with evidence favoring the modified "shape" theory. The use of quantum mechanical/molecular modeling (QM/MM), site-directed mutagenesis and saturation-transfer-difference (STD) NMR is discussed, providing support for biological studies of mouse and human receptors, MOR244-3 and OR OR2T11, respectively. Copper is bound at the active site of MOR244-3 by cysteine and histidine, while cysteine, histidine and methionine are involved with OR2T11. The binding pockets of these two receptors are found in different locations in the three-dimensional seven transmembrane models. Another recently deorphaned human olfactory receptor, OR2M3, highly selective for a thiol from onions, and a broadly-tuned thiol receptor, OR1A1, are also discussed. Other topics covered include the effects of nanoparticles and heavy metal toxicants on vertebrate and fish ORs, intranasal zinc products and the loss of smell (anosmia).

Pragmatic evaluation of odour emissions from a rendering plant in southern Brazil

In the food industry and linked activities, environmental impacts relate mainly to the generation of liquid and gaseous effluents. Rendering plants, which process animal by-products, are strongly associated with malodorous emissions. Thus, effective odour-control technologies are required to minimise odour annoyance in nearby communities and thereby public complaints. In this paper, the effectiveness of a biofilter for the treatment of odours from a meat-rendering plant located in southern Brazil was evaluated based on German guideline VDI 3477:2004-11. Samples were collected upstream and downstream of the gas treatment system using a pragmatic approach in order to minimise the cost of such a study. Odour concentration was determined according to European standard EN 13725:2003. The results showed an OER of 8.82 × 10⁸ ou_E h^-1 and odour removal efficiency lower than the established benchmark set by SEMA Resolution 054/2006, taken as reference for being the only Brazilian regulation to establish quantitative odour emission criteria. Enhancement of the biofiltration system and/or association with other odour abatement technologies are required to increase odour removal, limit impacts and comply with regulatory requirements. The paper also includes a discussion on the current odour regulation in Brazil.

The Hitchhiker's guide to the rhinencephalon

Pathology of the rhinencephalon has been a subject of interest in the fields of neurodegenerative diseases, trauma, epilepsy and other neurological conditions. Most of what is known about the human rhinencephalon comes from comparative anatomy studies in other mammals and histological studies in primates. Functional imaging studies can provide new and important insight into the function of the rhinencephalon in humans but have limited spatial resolution, limiting its contribution to the study of the anatomy of the human rhinencephalon. In this study we aim to provide a brief and objective review of the anatomy of this important and often overlooked area of the nervous system.

Distorted Coarse Axon Targeting and Reduced Dendrite Connectivity Underlie Dysosmia after Olfactory Axon Injury

The glomerular map in the olfactory bulb (OB) is the basis for odor recognition. Once established during development, the glomerular map is stably maintained throughout the life of an animal despite the continuous turnover of olfactory sensory neurons (OSNs). However, traumatic damage to OSN axons in the adult often leads to dysosmia, a qualitative and quantitative change in olfaction in humans. A mouse model of dysosmia has previously indicated that there is an altered glomerular map in the OB after the OSN axon injury; however, the underlying mechanisms that cause the map distortion remain unknown. In this study, we examined how the glomerular map is disturbed and how the odor information processing in the OB is affected in the dysosmia model mice. We found that the anterior–posterior coarse targeting of OSN axons is disrupted after OSN axon injury, while the local axon sorting mechanisms remained. We also found that the connectivity of mitral/tufted cell dendrites is reduced after injury, leading to attenuated odor responses in mitral/tufted cells. These results suggest that existing OSN axons are an essential scaffold for maintaining the integrity of the olfactory circuit, both OSN axons and mitral/tufted cell dendrites, in the adult.

Smelling Sulfur: Copper and Silver Regulate the Response of Human Odorant Receptor OR2T11 to Low-Molecular-Weight Thiols

Mammalian survival depends on ultrasensitive olfactory detection of volatile sulfur compounds, since these compounds can signal the presence of rancid food, O₂ depleted atmospheres, and predators (through carnivore excretions). Skunks exploit this sensitivity with their noxious spray. In commerce, natural and liquefied gases are odorized with t-BuSH and EtSH, respectively, as warnings. The 100-million-fold difference in olfactory perception between structurally similar EtSH and EtOH has long puzzled those studying olfaction. Mammals detect thiols and other odorants using odorant receptors (ORs), members of the family of seven transmembrane G-protein-coupled receptors (GPCRs). Understanding the regulator cofactors and response of ORs is particularly challenging due to the lack of X-ray structural models. Here, we combine computational modeling and site-directed mutagenesis with saturation transfer difference (STD) NMR spectroscopy and measurements of the receptor response profiles. We find that human thiol receptor OR2T11 responds specifically to gas odorants t-BuSH and EtSH requiring ionic copper for its robust activation and that this role of copper is mimicked by ionic and nanoparticulate silver. While copper is both an essential nutrient for life and, in excess, a hallmark of various pathologies and neurodegenerative diseases, its involvement in human olfaction has not been previously demonstrated. When screened against a series of alcohols, thiols, sulfides, and metal-coordinating ligands, OR2T11 responds with enhancement by copper to the mouse semiochemical CH₃SCH₂SH and derivatives, to four-membered cyclic sulfide thietane and to one- to four-carbon straight- and branched-chain and five-carbon branched-chain thiols but not to longer chain thiols, suggesting compact receptor dimensions. Alcohols are unreactive.

Artificial Nose Technology: Status and Prospects in Diagnostics

Biomimetic crossreactive sensor arrays have been used to detect and analyze a wide variety of vapor and liquid components in applications such as food science, public health and safety, and diagnostics. As technology has advanced over the past three decades, these systems have become selective, sensitive, and affordable. Currently, the need for noninvasive and accurate devices for early disease diagnosis remains a challenge. This Opinion article provides an overview of the various types of biomimetic crossreactive sensor arrays (also referred to as electronic noses or tongues in the literature), their current use and future directions, and an outlook for future technological development.

mSWI/SNF (BAF) Complexes Are Indispensable for the Neurogenesis and Development of Embryonic Olfactory Epithelium

Neurogenesis is a key developmental event through which neurons are generated from neural stem/progenitor cells. Chromatin remodeling BAF (mSWI/SNF) complexes have been reported to play essential roles in the neurogenesis of the central nervous system. However, whether BAF complexes are required for neuron generation in the olfactory system is unknown. Here, we identified onscBAF and ornBAF complexes, which are specifically present in olfactory neural stem cells (oNSCs) and olfactory receptor neurons (ORNs), respectively. We demonstrated that BAF155 subunit is highly expressed in both oNSCs and ORNs, whereas high expression of BAF170 subunit is observed only in ORNs. We report that conditional deletion of BAF155, a core subunit in both onscBAF and ornBAF complexes, causes impaired proliferation of oNSCs as well as defective maturation and axonogenesis of ORNs in the developing olfactory epithelium (OE), while the high expression of BAF170 is important for maturation of ORNs. Interestingly, in the absence of BAF complexes in BAF155/BAF170 double-conditional knockout mice (dcKO), OE is not specified. Mechanistically, BAF complex is required for normal activation of Pax6-dependent transcriptional activity in stem cells/progenitors of the OE. Bioelectronic nose: Current status and perspectives

A characteristic feature of human and animal organs of smell is the ability to identify hundreds of thousands of odours. It is accompanied by particular smell sensations, which are a basic source of information about odour mixture. The main structural elements of biological smell systems are the olfactory receptors. Small differences in a structure of odorous molecules (odorants) can lead to significant change of odour, which is due to the fact that each of the olfactory receptors is coded with different gene and usually corresponds to different type of odour. Discovery and characterisation of the gene family coding the olfactory receptors contributed to the elaboration and development of the electronic smell systems, the so-called bioelectronic noses. The olfactory receptors are employed as a biological element in this type of instruments. An electronic system includes a converter part, which allows measurement and processing of generated signals. A suitable data analysis system is also required to visualise the results. Application potentialities of the bioelectronic noses are focused on the fields of economy and science where highly selective and sensitive analysis of odorous substances is required. The paper presents a review of the latest achievements and critical evaluation of the state of art in the field of bioelectronic noses.
