Abstract
Selenium (Se) is a naturally occurring essential micronutrient that is required for human health. Selenium supports cellular antioxidant defense and possesses bioeffects such as anti-inflammation, anti-cancer, anti-diabetic, and cardiovascular and liver protective effects arising from Se-enhanced cellular antioxidant activity. Past studies on Se have focused on elucidating Se speciation in foods, biofortification strategies to produce Se-enriched foods to address Se deficiency in the population, and the biochemical activities of Se in health. The bioavailability and toxicity of Se are closely correlated to its chemical forms and may exhibit varying effects on body physiology. Selenium exists in inorganic and organic forms, in which inorganic Se such as sodium selenite and sodium selenate is more widely available. However, it is a challenge for safe and effective supplementation considering inorganic Se low bioavailability and high cytotoxicity. Organic Se, by contrast, exhibits higher bioavailability and lower toxicity and has a more diverse composition and structure. Organic Se exists as selenoamino acids and selenoproteins, but recent research has provided evidence that it also exists as selenosugars, selenopolysaccharides, and possibly as selenoflavonoids. Different food categories contain various Se compounds, and their Se profiles vary significantly. Therefore, it is necessary to delineate Se speciation in foods to understand their impact on health. This comprehensive review documents our knowledge of the recent uncovering of the existence of selenosugars and selenopolysaccharides and the putative evidence for selenoflavonoids. The bioavailability and bioactivities of these food-derived organic Se compounds are highlighted, in addition to their composition, structural features, and structure-activity relationships.

Abstract
The intricate balance between the beneficial and harmful effects of selenium (Se) intake means that its quantification in food needs to be done correctly. Therefore, in this review, we systematized 105 articles to identify the most studied methodologies, analytical techniques, and food matrices. Among the analytical techniques employed, inductively coupled plasma mass spectrometry (ICP-MS) (n = 29) emerged as the most commonly used method. The most prevalent hydrolysis methodology to digest Se in food matrices involved the use of nitric acid combined with ultrasound, which improved both the yield and digestion time. Optimal recovery values were achieved when total Se quantification accounted for the sum of Se(IV) and Se(VI) (94.4-99.4%) and for SeCys (88-96.5%). These findings are relevant for advancing methodological approaches, and their results emphasize the importance of developing alternative, faster, and lower-cost protocols for Se quantification in foods and beverages.

Abstract
Selenium uptake and its content in soybean grains are affected by Se application methods. This study evaluated the impact of Se foliar application combined with a multi-nutrient fertilizer (MNF) on soybean, establishing a Se threshold to better understand the relationship between Se content in grains and yield of two genotypes (58I60 Lança and M5917). Two trials were conducted in a 4 × 2 factorial design: four Se rates (0, 10, 40, 80 g Se ha-1) and two methods of foliar Se application (Se combined or not with MNF). Foliar fertilizers were applied twice, at phenological stages of beginning of pod development and grain filling. Grain yield increased with the application of MNF, yet Se rates increased Se contents linearly up to 80 g Se ha-1, regardless of the use of MNF. Lança and M5917 genotypes had grain Se critical thresholds of 1.0 and 3.0 mg kg-1, respectively. The application of Se favored higher contents of K, P, and S in grains of genotype Lança and higher contents of Mn and Fe in grains of genotype M5917. Our findings highlight the importance of addressing different Se fertilization strategies as well as genotypic variations when assessing the effects of Se on soybean yield and grain quality.

Abstract
Selenium (Se) is an essential metalloid and is categorized as emerging anthropogenic contaminant released to the environment. The rise of Se release into the environment has raised concern about its bioaccumulation, toxicity, and potential to cause serious damages to aquatic and terrestrial ecosystem. Therefore, it is extremely important to monitor Se level in environment on a regular basis. Understanding Se release, anthropogenic sources, and environmental behavior is critical for developing an effective Se containment strategy. The ongoing efforts of Se remediation have mostly emphasized monitoring and remediation as an independent topics of research. However, our paper has integrated both by explaining the attributes of monitoring on effective scale followed by a candid review of widespread technological options available with specific focus on Se removal from environmental media. Another novel approach demonstrated in the article is the presentation of an overwhelming evidence of limitations that various researchers are confronted with to overcome achieving effective remediation. Furthermore, we followed a holistic approach to discuss ways to remediate Se for cleaner environment especially related to introducing weak magnetic field for ZVI reactivity enhancement. We linked this phenomenal process to electrokinetics and presented convincing facts in support of Se remediation, which has led to emerge 'membrane technology', as another viable option for remediation. Hence, an interesting, innovative and future oriented review is presented, which will undoubtedly seek attention from global researchers.

Abstract
Arsenic (As) and Cadmium (Cd) are toxic to rice plants. However, selenium (Se) has the potential to regulate As and Cd toxicity. The present study aimed to evaluate the co-exposure to As5+ and Se6+ species in two rice cultivars, BRS Pampa and EPAGRI 108. The plants were divided into six groups and cultivated until complete maturation of the grains, under greenhouse conditions. Regarding total As and inorganic As (i-As) accumulation in grains, the highest concentrations were found for BRS Pampa. For Se, EPAGRI 108 presented the highest concentration of inorganic and organic Se (i-Se and o-Se). The exposure assessments showed that Se biofortification can mitigate the As accumulation in rice and, consequently, the risk of As and Cd toxicity in grains for human consumption. The combined effect of As and Se in rice plants could represent an alternative to biofortify this food in a safe way and with a higher percentage of bioavailable Se. Although Se is able to mitigate As toxicity in rice plants, in the present study we showed that co-exposure in different cultivars under the same growing conditions may present different responses to As and Se exposure.

Abstract
The incidence and mortality rates of lung cancer are among the highest in the world. Traditional treatment methods include surgery, chemotherapy, and radiotherapy. Although rapid progress has been achieved in the past decade, treatment limitations remain. It is therefore imperative to identify safer and more effective therapeutic methods, and research is currently being conducted to identify more efficient and less harmful drugs. In recent years, the discovery of antitumor drugs based on the essential trace element selenium (Se) has provided good prospects for lung cancer treatments. In particular, compared to inorganic Se (Inorg-Se) and organic Se (Org-Se), Se nanomedicine (Se nanoparticles; SeNPs) shows much higher bioavailability and antioxidant activity and lower toxicity. SeNPs can also be used as a drug delivery carrier to better regulate protein and DNA biosynthesis and protein kinase C activity, thus playing a role in inhibiting cancer cell proliferation. SeNPs can also effectively activate antigen-presenting cells to stimulate cell immunity, exert regulatory effects on innate and regulatory immunity, and enhance lung cancer immunotherapy. This review summarizes the application of Se-based species and materials in lung cancer diagnosis, including fluorescence, MR, CT, photoacoustic imaging and other diagnostic methods, as well as treatments, including direct killing, radiosensitization, chemotherapeutic sensitization, photothermodynamics, and enhanced immunotherapy. In addition, the application prospects and challenges of Se-based drugs in lung cancer are examined, as well as their forecasted future clinical applications and sustainable development.

Abstract
Total selenium (Se) and Se species concentrations were determined in 50 infant formulas and milk samples commercialized in Brazil and Belgium. Infant formula categories were starter, follow-up, specialized and plant-based (soy and rice), while milk samples included whole, skimmed, semi-skimmed and plant-based products. Total Se content was determined by Inductively Coupled Plasma Mass Spectrometry (ICP-MS), after microwave digestion. An enzymatic extraction method was applied to evaluate the Se species, mostly selenomethionine (SeMet), Se(IV) and Se(VI), through High Performance Liquid Chromatography coupled to ICP-MS (LC-ICP-MS). Starters and follow-up samples presented the highest total Se concentrations and values up to 30 µg/kg were observed in the reconstituted product. The lowest level (below the LOQ = 10 µg/kg) was verified in an anti-regurgitation specialized formula. The relative agreement between the measured total Se and the Se content declared on the label varied from 55 % to 317 %. Concentrations in infant formulas were not markedly different from concentrations in milk except for rice and oat milk samples that showed values below the LOQ. SeMet was the main species found in milks, while in infant formulas the species concentrations varied according to the product. The daily intake (DI) of Se via infant formula consumption was calculated and compared with the Adequate Intake (AI) value and the Dietary Reference Intake (DRI) established by the EFSA NDA Panel and ANVISA, respectively. Estimated maximum intakes of total Se obtained for reconstituted infant formula were 40.6 mg/day, corresponding to 400 % and 202 % of the DRI and AI, respectively.

Abstract
As an essential trace element in the human body, selenium (Se) has various physiological activities, such as antioxidant and anticancer activity. Selenium-enriched proteins/peptides (SePs/SePPs) are the primary forms of Se in plants and animals, and they are the vital carriers of its physiological activities. On the basis of current research, this review systematically describes the extraction methods (aqueous, alkaline, enzymatic, auxiliary, etc.) and detection methods (HPLC-MS/MS, GC-ICP-MS, etc.) for SePs/SePPs in plants. Their bioavailability and bioactivity, and the effect of processing are also included. Our review provides a comprehensive understanding and theoretical guidance for the utilization of selenium-enriched proteins/peptides.

Abstract
Oxidative damage induced by ethanol and its metabolites is one of the factors that fuels the development of alcoholic liver disease (ALD). Selenium (Se) is an effective cofactor for glutathione peroxidase (GPx), and has antioxidant effects that improve ALD. In patients with ALD, ethanol-induced oxidative damage inhibits the synthesis of related Se-containing proteins such as: selenoprotein P (Sepp1), albumin (ALB), and GPx in the liver, thus decreasing the overall Se level in patients. Both Se deficiency and excess can affect the expression of GPx, resulting in damage to the antioxidant defense system. This damage enhances oxidative stress by increasing the levels of reactive oxygen species (ROS) in the body, which aggravates the inflammatory response, lipid metabolism disorder, and lipid peroxidation and worsens ALD symptoms. A cascade of oxidative damages caused by ALD will deplete selenium deposition in the body, stimulate the expression of Gpx1, Sepp1, and Gpx4, and thus mobilize systemic selenoproteins, which can restore GPx activity in the hepatocytes of ALD patients, reduce the levels of reactive oxygen species and alleviate oxidative stress, the inflammatory response, lipid metabolism disorder, and lipid peroxidation, thus helping to mitigate ALD. This review provides a reference for future ALD studies that evaluate the regulation of Se levels and contributes to studies on the potential pathological mechanisms of Se imbalance in ALD.

Abstract
Selenium is an essential trace element that maintains normal brain function, mainly due its antioxidant properties. Although the amount of Se in the body is tightly regulated by the liver, both an excess of and deficiency in Se can modulate the cellular redox status and affect the homeostasis of other essential elements for both humans and animals. The aim of this study was to determine the effect of inorganic selenium excess on oxidative stress and iron homeostasis in brain and liver of laboratory BALB/c mice, which were supplemented with Na2SeO3 solution (0.2 mg and 0.4 mg Se/kg body weight) for 8 weeks. The content of the lipid peroxidation product malondialdehyde and antioxidant enzyme catalase activity/gene expression were used as markers of oxidative damage and were evaluated by spectrophotometric assays. Selenium and iron concentrations were determined by inductively coupled plasma mass spectrometry (ICP-MS). Catalase gene expression was analyzed by qRT-PCR and ΔΔCt methods. Our results showed that doses of 0.2 mg Se and 0.4 mg Se caused a relatively low accumulation of Se in the brain of mice; however, it induced a 10-fold increase in its accumulation in the liver and also increased iron accumulation in both tested organs. Both doses of Se increased the content of malondialdehyde as well as decreased catalase activity in the liver, while the 0.4 mg Se dose has also activated catalase gene expression. Brain of mice exposed to 0.2 mg Se showed reduced lipid peroxidation; however, the exposure to 0.4 mg of Se increased the catalase activity as well as gene expression. One may conclude that exposure to both doses of Se caused the accumulation of this micronutrient in mice brain and liver and have also provided a disrupting effect on the levels of iron. Both doses of Se have triggered oxidative liver damage. In the brain, the effect of Se was dose dependent, where −0.2 mg of Se provided antioxidant activity, which was observed through a decrease in lipid peroxidation. On the contrary, the 0.4 mg dose increased brain catalase activity as well as gene expression, which may have contributed to maintaining brain lipid peroxidation at the control level.

Abstract
BACKGROUND Approximately 0.5-1 billion people worldwide face the risk of selenium (Se) deficiency because of the low Se concentration in their diets. Broccoli can accumulate Se and comprises a source of daily Se supplement for humans. Se biofortification is an effective strategy for enhancing Se content in crops. In the present study, the effects of Se yeast and selenite application on the Se content and nutrient quality of broccoli were investigated. RESULTS Broccoli growth was promoted by Se yeast but inhibited by selenite. The total Se content of broccoli florets remarkably increased with increasing exogenous Se fertilizer concentrations. The main Se species in broccoli florets were methyl-selenocysteine and selenomethionine, and their contents were significantly higher under Se yeast treatments than under selenite treatments. Se(VI) was detected only under selenite treatments. Se yeast and selenite had different influences on soluble sugar, soluble protein, vitamin C and free amino acid contents in broccoli florets. The total phenolic acid and glucosinolate contents were substantially increased by Se yeast and selenite, although the total flavonoid content was reduced by Se yeast. Tests on antioxidant enzyme activities revealed that several antioxidant enzymes (catalase, peroxidase, superoxide dismutase and glutathione peroxidase) responded to Se yeast and selenite treatments. CONCLUSION Se yeast is preferred over selenite for maximizing Se uptake and nutrient accumulation in Se-rich broccoli cultivation. However, an extremely high Se content in broccoli florets cannot be directly consumed by humans, although they can be processed into Se supplements. © 2021 Society of Chemical Industry.

Abstract
Birds are principally exposed to selenium (Se) through their diet. In long-lived and top predator seabirds, such as the giant petrel, extremely high concentrations of Se are found. Selenium speciation in biota has aroused great interest in recent years; however, there is a lack of information about the chemical form of Se in (sea)birds. The majority of publications focus on the growth performance and antioxidant status in broilers in relation to Se dietary supplementation. The present work combines elemental and molecular mass spectrometry for the characterization of Se species in wild (sea)birds. A set of eight giant petrels (Macronectes sp.) with a broad age range from the Southern Ocean were studied. Selenoneine, a Se-analogue of ergothioneine, was identified for the first time in wild avian species. This novel Se-compound, previously reported in fish, constitutes the major Se species in the water-soluble fraction of all of the internal tissues and blood samples analyzed. The levels of selenoneine found in giant petrels are the highest reported in animal tissues until now, supporting the trophic transfer in the marine food web. The characterization of selenoneine in the brain, representing between 78 and 88% of the total Se, suggests a crucial role in the nervous system. The dramatic decrease of selenoneine (from 68 to 3%) with an increase of Hg concentrations in the liver strongly supports the hypothesis of its key role in Hg detoxification.

Abstract
During the last few decades, contamination of selenium (Se) in groundwater has turned out to be a major environmental concern to provide safe drinking water. The content of selenium in such contaminated water might range from 400 to 700 μg/L, where bringing it down to a safe level of 40 μg/L for municipal water supply employing appropriate methodologies is a major challenge for the global researcher communities. The current review focuses mostly on the governing selenium remediation technologies such as coagulation-flocculation, electrocoagulation, bioremediation, membrane-based approaches, adsorption, electro-kinetics, chemical precipitation, and reduction methods. This study emphasizes on the development of a variety of low-cost adsorbents and metal oxides for the selenium decontamination from groundwater as a cutting-edge technology development along with their applicability, and environmental concerns. Moreover, after the removal, the recovery methodologies using appropriate materials are analyzed which is the need of the hour for the reutilization of selenium in different processing industries for the generation of high valued products. From the literature survey, it has been found that hematite modified magnetic nanoparticles (MNP) efficiently adsorb Se (IV) (25.0 mg/g) from contaminated groundwater. MNP@hematite reduced Se (IV) concentration from 100 g/L to 10 g/L in 10 min at pH 4-9 using a dosage of 1 g/L. In 15 min, the magnetic adsorbent can be recycled and regenerated using a 10 mM NaOH solution. The adsorption and desorption efficiencies were over 97% and 82% for five consecutive cycles, respectively. To encourage the notion towards scale-up, a techno-economic evaluation with possible environmentally sensitive policy analysis has been introduced in this article to introspect the aspects of sustainability. This type of assessment is anticipated to be extremely encouraging to convey crucial recommendations to the scientific communities in order to produce high efficiency selenium elimination and further recovery from contaminated groundwater.

Abstract
Selenium (Se) has become an increasingly serious water contamination concern worldwide. It is an essential micronutrient for humans and animals, however, can be extremely toxic if taken in excess. Sorption can be an effective treatment for Se removal from a wide range of water matrices. However, despite the synthesis and application of numerous adsorbents for remediation of aqueous Se, there has been no comprehensive review of the sorption capacities of various natural and synthesized sorbents. Herein, literature from 2010 to 2021 considering Se remediation using 112 adsorbents has been critically reviewed and presented in several comprehensive tables including: clay minerals and waste materials (presented in Table 1); zero-valent iron, iron oxides, and binary iron-based adsorbents (Table 2); other metals-based adsorbents (Table 3); carbon-based adsorbents (Table 4); and other adsorbents (Table 5). Each of these tables, and their relevant sections, summarizes preparation/modification methods, sorption capacities of various Se adsorbents, and proposed model/mechanisms of adsorption. Furthermore, future perspectives have been provided to assist in filling noted research gaps for the development of efficient Se adsorbents for real-world applications. This review will help in preliminary screening of various sorbent media to set up Se treatment technologies for a variety of end-users worldwide.

Abstract
Seleno-amino acids are safe, health-promoting compounds for humans. Numerous studies have focused on the forms and metabolism of seleno-amino acids in vegetables. Based on research progress on seleno-amino acids, we provide insights into the production of selenium-enriched vegetables with high seleno-amino acids contents. To ensure safe and effective intake of selenium, several issues need to be addressed, including (1) how to improve the accumulation of seleno-amino acids and (2) how to control the total selenium and seleno-amino acids contents in vegetables. The combined use of plant factories with artificial lighting and multiple analytical technologies may help to resolve these issues. Moreover, we propose a Precise Control of Selenium Content production system, which has the potential to produce vegetables with specified amounts of selenium and high proportions of seleno-amino acids.

Abstract
This study aims at the assessment of mercury (Hg)-selenium (Se) antagonism in fish. For this purpose, rainbow trout fish (Oncorhynchus mykiss) were exposed to methylmercury (MeHg) under controlled conditions, in the presence or absence of selenomethionine (SeMet) using an in-house prepared diet (enriched with MeHg and SeMet at 0.2 μg/g and 5.0 μg/g, respectively). The total duration of the exposure study was 3 months. Fish was sampled and analysed for total Se (SeT) and total mercury (HgT) content after 1, 2 and 3 months of exposure. Six feeding protocols were compared, depending on the exposure type: (i) no MeHg nor SeMet exposure (control group); (ii) exposure to SeMet solely; (iii) exposure to MeHg solely; (iv) exposure to both MeHg and SeMet; (v) exposure first to MeHg during 1 month and then to SeMet during 2 months and (vi), exposure to SeMet during 1 month and then to MeHg for 2 months. The levels of SeT and HgT in the fish (control and supplemented with MeHg/SeMet) were measured by inductively coupled plasma-mass spectrometry (ICPMS). Steadily (linear) bioaccumulation of MeHg in the fish muscle occurred when the fish were exposed individually to this species during the period. The bioaccumulation of MeHg is diminished when the fish are firstly exposed to SeMet and then to MeHg, hence indicating the MeHg detoxification due to SeMet supplementation.

Abstract
Selenium (Se) is a micronutrient involved in important health functions and it has been suggested to shape gut microbiota. Limited information on Se assimilation by gut microbes and the possible link with selenoproteins are available. For this purpose, conventional and gut microbiota-depleted BALB/c mice were fed a Se-supplemented diet. The absolute quantification of mice plasma selenoproteins was performed for the first time using heteroatom-tagged proteomics. The gut microbiota profile was analyzed by 16S rRNA gene sequencing. Se-supplementation modulated the concentration of the antioxidant glutathione peroxidase and the Se-transporter selenoalbumin as well as the metal homeostasis, being influenced by microbiota disruption, which suggests an intertwined mechanism. Se also modulated microbiota diversity and richness and increased the relative abundance of some health-relevant taxa (e.g., families Christensenellaceae, Ruminococcaceae, and Lactobacillus genus). This study demonstrated the potential beneficial effects of Se on gut microbiota, especially after antibiotic-treatment and the first associations between specific bacteria and plasma selenoproteins.

Abstract
The association between selenium and peptide in gastric cancer is an important research topic. The present study reported the facile synthesis of anticancer bioactive peptide (ACBP)-functionalized selenium (ACBP-S-Se) particles with enhanced anticancer activities and a detailed mechanistic evaluation of their ability to regulate oxidative stress in vitro. Structural and chemical characterizations were revealed by ultraviolet absorption, Fourier transform infrared, X-ray photoelectron, nuclear magnetic resonance carbon and hydrogen, energy dispersive X-ray spectroscopy and inductively coupled plasma mass spectrometry, as well as scanning electron microscopy. Sulfhydrylation modifications of ACBP were achieved with Sacetylmercaptosuccinic anhydride via chemical absorption. After the polypeptide was modified by sulfhydrylation, the ACBP chain was linked to sulfhydryl groups by amide bonds to form the ACBP-chelated selenium complex. Two gastric cancer cell lines (MKN-45 and MKN-74 cells) demonstrated high susceptibility to ACBP-S-Se particles and displayed significantly decreased proliferation ability following treatment. The results suggested that the bioactive peptide-chelated selenium particles effectively inhibited the proliferation of MKN-45 and MKN-74 cells in vitro. The genes encoding CDK inhibitor 1A (CDKN1A), cyclin B1, thioredoxin (TXN) and mitogen-activated protein kinase kinase kinase 5 are associated with regulation of oxidative stress, while CDKN1A and TXN protect cells by decreasing oxidative stress and promoting cell growth arrest. Therefore, ACBP-S-Se may be an ideal chemotherapeutic candidate for human cancer, especially gastric cancer.

Abstract
A new and efficient reversed-phase high-performance liquid chromatography-inductively coupled plasma-optical emission spectrometry method was developed for the simultaneous separation and determination of SeO3 2- and seleno-dl-methionine in kefir grains. For the system, limits of detection and quantitation values for SeO3 2- and seleno-dl-methionine were calculated as 0.52/1.73 mg/kg (as Se) and 0.26/0.87 mg/kg (as Se), respectively. After performing the system analytical performance, recovery experiment was done for kefir grains and percent recovery results for SeO3 2- and seleno-dl-methionine were calculated as 98.4 ± 0.8% and 93.6 ± 1.0%, respectively. It followed by the feeding studies that the kefir grains were exposed to three different concentrations of SeO3 2- (20, 30, and 50 mg/kg) for approximately 4 days at room temperature to investigate the conversion/non-conversion of SeO3 2- to seleno-dl-methionine. Next, the fed grains were extracted with tetramethylammonium hydroxide pentahydrate solution (20%, w/w) and then sent to the developed system. There was no detectable seleno-dl-methionine found in fed kefir grains at different concentrations of SeO3 2- while inorganic or elemental selenium in the fed kefir grains was determined between 1579.5 - 3116.0 mg/kg (as Se). Selenium species in the kefir grains samples was found in the form of SeO3 2- proved by using an anion exchange column.

Abstract
This review answers the question of why selenium is such an important trace element in the human diet. Daily dietary intake of selenium and its content in various food products is discussed in this paper, as well as the effects of its deficiency and excess in the body. Moreover, the biological activity of selenium, which it performs mainly through selenoproteins, is discussed. These specific proteins are responsible for thyroid hormone management, fertility, the aging process, and immunity, but their key role is to maintain a redox balance in cells. Furthermore, taking into account world news and the current SARS-CoV-2 virus pandemic, the impact of selenium on the course of COVID-19 is also discussed. Another worldwide problem is the number of new cancer cases and cancer-related mortality. Thus, the last part of the article discusses the impact of selenium on cancer risk based on clinical trials (including NPC and SELECT), systematic reviews, and meta-analyses. Additionally, this review discusses the possible mechanisms of selenium action that prevent cancer development.

Abstract
Selenosugars are a group of sugar derivatives of great structural diversity (e.g., molar masses, selenium oxidation state, and selenium binding), obtained as a result of biosynthesis, chemical modification of natural compounds, or chemical synthesis. Seleno-monosaccharides and disaccharides are known to be non-toxic products of the natural metabolism of selenium compounds in mammals. In the case of the selenium-containing polysaccharides of natural origin, their formation is also postulated as a form of detoxification of excess selenium in microorganisms, mushroom, and plants. The valency of selenium in selenium-containing polysaccharides can be: 0 (encapsulated nano-selenium), IV (selenites of polysaccharides), or II (selenoglycosides or selenium built into the sugar ring to replace oxygen). The great interest in Se-polysaccharides results from the expected synergy between selenium and polysaccharides. Several plant- and mushroom-derived polysaccharides are potent macromolecules with antitumor, immunomodulatory, antioxidant, and other biological properties. Selenium, a trace element of fundamental importance to human health, has been shown to possess several analogous functions. The mechanism by which selenium exerts anticancer and immunomodulatory activity differs from that of polysaccharide fractions, but a similar pharmacological effect suggests a possible synergy of these two agents. Various functions of Se-polysaccharides have been explored, including antitumor, immune-enhancement, antioxidant, antidiabetic, anti-inflammatory, hepatoprotective, and neuroprotective activities. Due to being non-toxic or much less toxic than inorganic selenium compounds, Se-polysaccharides are potential dietary supplements that could be used, e.g., in chemoprevention.

Abstract
Selenium (Se) presents a dual role to human body, harmful or beneficial, depending on its concentration. The exposure to this element has been associated to coal mining. Health risk assessment allows estimating and evaluating the risks that environmental hazards pose to vulnerable groups of populations. The present study aimed to analyze the risk of exposure to Se through multiple exposure pathways in children living in Candiota city, where the largest coal reserve of Brazil is located. Data from previous environmental (air, soil, drinking water, and food) and population parameters (age, weight, and food intake) were used to assess the health risk, which was calculated with real values (extracted from the population) and fixed reference values, based on the USEPA recommendation. Most of the children had low health risk (HQ < 1); however, in the most conservative scenarios (higher Se values in the different matrices), there was a high health risk in both scenarios, using population data or the USEPA parameters. The mean HQ using reference values was twice higher than using real values. Se content in air, soil, and drinking water did not represent important average daily dose in both scenarios. While, food intake was a main source of Se exposure, contributing with 96.9% of total Se intake. The findings of this study reinforce the importance of food intake for exposure to Se and the difference between HQs using population measures and fixed parameters of the USEPA highlights the need for adaptations to local scenarios for a better dimensioning of toxicological risk management actions.

Abstract
Selenium (Se) is necessary for several physiological functions in the human body; however, high concentrations of this element in coal mining areas raise the possibility of Se-related health risks. Children are much more vulnerable and at risk to environmental hazards than adults. The largest coal mining area of Brazil is located in the city of Candiota, where previous studies point to significant urinary Se concentrations among children. Food intake is the main Se source. The study aimed to evaluate dietary Se intake, as well as urinary Se excretion and classic symptoms of Se intoxication among children from Candiota and a control city in the same region. A cross-sectional study was carried out, with participation from 242 children between 6 and 12 years old in two cities in Rio Grande do Sul state, Brazil. Socioeconomic variables, dietary intake, and Se toxicity symptoms were evaluated through a structured questionnaire, and urinary Se levels were measured. Children from both cities had normal levels of Se intake and urinary excretion; however, children from Candiota had significantly higher levels of Se in both parameters in relation to the control city, especially for Se urinary excretion. There was low prevalence of Se toxicity symptoms. We conclude that coal mining activities may increase Se intake in children and consequently its urinary excretion.

Abstract
Background:
Selenium’s popularity in a wide variety of products and industries means
that it has, unfortunately, become a common environmental pollutant, particularly from sources such
as industrial wastewater discharge and agricultural runoff.
Objective:
Quantification of the selenium (IV) ion content of natural water sources via atomic fluorescence
spectrophotometry (AFS) was performed using hollow ZnO microflowers as the enriched
materials. The hollow ZnO microflowers were prepared via a hydrothermal method with polystyrene
(PS) microspheres as the template.
Methods:
Since the pH of the selenium (IV) solution is known to influence the degree of adsorption
onto the sorbent, both the acidity of adsorption and elution were studied at various pH values to obtain
the adsorption isotherm and adsorption capacity of the sorbent. AFS was used to quantify the
amount of selenium ion that was present in the samples. The structure of the hollow ZnO microflowers
was characterized using XRD, SEM, and TEM characterization methodologies.
Results:
When the pH was between 6.0 and 7.0, the percentage of Se (IV) adsorption was as high as
93%. It was found that the amount of Se (IV) that was eluted from the sorbent exceeded 96% with
5.0 mL of a 0.01 mol L−1 NaOH solution over the course of 10 minutes. The maximum adsorption
capacity was 31.5, 31.8, and 32.0 mg·g−1 at 273, 333, and 353 K, respectively.
Conclusion:
The LOD for Se (IV) detection via enrichment was achieved at 0.006 μg L−1 with a linear
range between 0.1 and 200 μg L−1. Thus, this method is applicable to the analysis of natural water
samples and GBW(E)080394.

Abstract
The aim of this study was to compare the dynamic changes of egg selenium (Se) deposition and deposition efficiency and to evaluate the efficacy of selenium-enriched yeast (SY) in laying hens over the 84 d feeding period after SY supplementation. A total of one thousand one hundred fifty-two 30-wk-old, Hy-Line Brown hens were randomly assigned to 1 of 6 groups (192 laying hens per group) with 6 replicates of 32 birds each, fed a basal diet (without Se supplementation), basal diet with 0.3 mg/kg of Se from sodium selenite (SS) or basal diets with 0.1, 0.2, 0.3, or 0.4 mg/kg of Se from SY, respectively. The results showed that the Se concentrations in the eggs and breasts from hens fed a SY-supplemented diet were significantly higher than those from hens fed a SS-supplemented diet or a basal diet (P < 0.001). There was a positive linear and quadratic correlation between Se concentrations in the eggs from hens fed a SY-supplemented diet and dietary Se supplementation on days 28, 56, and 84 (r2 = 0.931, 0.932, 0.976, P < 0.001; r2 = 0.946, 0.935, 0.976, P < 0.001), respectively. The Se deposition efficiency in whole eggs from hens fed a basal or SY-supplemented diet weresignificantly higher than those in eggs from hens fed a SS-supplemented diet on days 28, 56, and 84 (P < 0.001), respectively. In addition, there was a positive linear and quadratic correlation between Se concentrations in the eggs from hens fed SY-supplemented diet (r2 = 0.655, 0.779, 0.874, 0.781, P < 0.001; r2 = 0.666, 0.863, 0.944, 0.781, P < 0.001) or SS-supplemented diet (r2 = 0.363, P = 0.002; r2 = 0.440, P = 0.002) and number of feeding days. In conclusion, the organic Se from SY has higher bioavailability and deposition efficiency of Se in whole eggs as compared with inorganic Se from SS. The Se concentrations and Se deposition efficiency in the eggs increased from hens fed a SS- or SY-supplemented diet but decreased from hens fed a basal diet with the extension of the experimental duration. The results indicate that the dietary Se supplementation from SY should be limited to a maximum of 0.1 mg Se/kg complete feed when the eggs and meat produced from hens fed a SY-supplemented diet are used as food for humans directly, whereas up to 0.4 mg/kg organic Se from SY can be used to supplement the diets for laying hens when the products are used as raw materials for producing Se-enriched food.

Abstract
Selenium (Se) at very low doses has important functions for humans. Unfortunately, the low levels of Se in soils in various regions of the world have implemented the agronomic biofortification of crops by applying Se-enriched fertilizers (mainly based on selenate). Lately, the use of nanofertilizers is growing in interest as their low size reduces the amount of chemicals and minimizes nutrient losses in comparison with conventional bulk fertilizers. However, the knowledge on their fate and environmental impact is still scarce. This study aims to evaluate the biotransformation of chitosan-modified Se nanoparticles (Ch-SeNPs) as well as their effect on the metabolism of essential metals (Fe, Cu, Zn and Mo) when applied to hydroponic cultivation of R. sativus and B. juncea. In house-synthesized Ch-SeNPs were characterized in both synthesis and hydroponic culture media by transmission electron microscopy (TEM), dynamic light scattering (DLS) and nanoparticle tracking analysis (NTA). The composition of one-tenth strength Hoagland's solution did not affect the size, shape and concentration in number of particles per mL of Ch-SeNPs. The plants were grown inside a box at 25 °C during the months of May-July in 2018. After a week of treatment with Ch-SeNPs, plants were harvested and divided into roots and aerial part. The biotransformation of Ch-SeNPs was evaluated through a process of enzymatic hydrolysis and subsequent analysis by HPLC-ICP-MS and HPLC-ESI-MS/MS. The results confirmed the transformation of Ch-SeNPs to seleno-amino acids: Selenomethionine (SeMet), Semethylselenocysteine (SeMetSeCys) and ɣ-glutamyl-Se-MetSeCys. Moreover, Multiple-way analysis of variance (ANOVA) and principal component analysis (PCA) showed that, regardless the plant species, Ch-SeNPs supplementation affected the absorption of Zn.

Abstract
Selenium is an essential trace element in human health and therefore its concentration in biological samples (biofluids and tissues) is used as an indicator of health and nutritional status. In humans, selenium's biological activity occurs through the 25 identified selenoproteins. As total selenium concentration encompasses both functional selenoproteins, small selenocompounds and other selenium-binding proteins, selenium speciation, rather than total concentration, is critical in order to assess functional selenium. Previously, quantitative analysis of selenoproteins required laborious techniques that were often slow and costly. However, more recent advancements in tandem mass spectrometry have facilitated the qualitative and quantitative identification of these proteins. In light of the current alternatives for understanding selenium biochemistry, we aim to provide a review of the modern applications of electrospray ionisation mass spectrometry (ESI-MS) as an alternative to inductively coupled plasma mass spectrometry (ICP-MS) for qualitative and quantitative selenium speciation.

Abstract
Lung cancer (LC) is the second most common cause of death in men after prostate cancer, and the third most recurrent type of tumor in women after breast and colon cancers. Unfortunately, when LC symptoms begin to appear, the disease is already in an advanced stage and the survival rate only reaches 2%. Thus, there is an urgent need for early diagnosis of LC using specific biomarkers, as well as effective therapies and strategies against LC. On the other hand, the influence of metals on more than 50% of proteins is responsible for their catalytic properties or structure, and their presence in molecules is determined in many cases by the genome. Research has shown that redox metal dysregulation could be the basis for the onset and progression of LC disease. Moreover, metals can interact between them through antagonistic, synergistic and competitive mechanisms, and for this reason metals ratios and correlations in LC should be explored. One of the most studied antagonists against the toxic action of metals is selenium, which plays key roles in medicine, especially related to selenoproteins. The study of potential biomarkers able to diagnose the disease in early stage is conditioned by the development of new analytical methodologies. In this sense, omic methodologies like metallomics, proteomics and metabolomics can greatly assist in the discovery of biomarkers for LC early diagnosis.

Abstract
Simple Summary The objective of the project was to evaluate speciation of selenium (Se) in various tissues (the liver, heart, or muscles) obtained from lambs fed with a diet enriched with an inorganic and organic chemical form of Se (i.e., selenite and Se-enriched yeast, respectively). Abstract Identification and quantification of the selenium species in biological tissues is imperative, considering the need to properly understand its metabolism and its importance in various field of sciences, especially nutrition science. Although a number of studies deals with the speciation of selenium, speciation analysis is still far from being a routine task, and so far strongly depends on the type of the samples. We present a study aimed to examine speciation analysis of Se in tissues of livers, muscles, and hearts obtained from lambs, namely in liver, muscle, and heart. The studied lambs were fed with the diet enriched with an inorganic (as sodium selenate) and organic chemical form of Se (as Se-enriched yeast) compounds with simultaneous addition of fish oil (FO) and carnosic acid (CA). The first part of the work was focused on the optimization of the extraction procedure of selenium compounds from tissues. Next, hyphenated high performance liquid chromatography and inductively coupled plasma mass spectrometry (HPLC–ICP–MS) was used for the identification of five seleno-compounds—Se-methionine (SeMet), Se-cystine (SeCys2), Se-methyl-Se-cysteine (SeMetSeCys), and Se(IV) and Se(VI). Verification of the identified seleno-compounds was achieved using triple-quadrupole mass spectrometer coupled to high performance liquid chromatography (HPLC–ESI–MS/MS). The applied procedure allowed for quantitative analysis of SeMet, SeCys2, and SeMetSeCys, in biological tissues. The developed analytical protocol is feasible for speciation analysis of small molecular seleno-compounds in animals samples.

Abstract
1. This study was conducted to determine the effect of different sources of selenium (Se) on breast and liver tissue deposition, apparent metabolisable energy (AME), growth performance and antioxidant status of broilers, measured as Se content in liver and breast tissues and glutathione peroxidase (GSH-Px) in blood, when used in 0-35 d broiler chicken diets. 2. A total of 200 male Ross 308 broilers were used in the feeding trial, which comprised two dietary phases, a starter from 0 to 21 d and finisher from 21 to 35 d of age. Four treatments with 10 replications each were used. A control diet (C) was formulated that was sufficient in protein and energy (230 and 215 g/kg of crude protein and 12.67 and 13.11 MJ/kg of metabolisable energy, respectively), for both phases, but contained background Se only from the feed ingredients. Diet 2 (IS) was supplemented with 10.35 g/t inorganic, elemental source of Se. Diet 3 (SY) was supplemented with 136.36 g/t selenised yeast, an organic source derived from Saccharomyces cerevisiae. Diet 4 (SS) was supplemented with 0.666 g/t sodium selenite, an inorganic source. 3. Birds fed the SY diet consumed less and weighed less than those fed IS or C (P < 0.05; 0-35 d of age), but there was no difference compared to birds fed SS diets. There were no differences in FCR or dietary AME between broilers fed different Se sources. All diets containing supplementary Se increased concentrations in the liver and breast muscle, and for GSH-Px levels in blood compared to birds fed the C diet (P < 0.001). Birds fed SY diets had greater Se levels in liver and breast tissues compared to birds fed any of the other diets (P < 0.001). 4. Diets supplemented with Se had variable effects on broiler growth performances and antioxidant status. Feeding Se from a yeast source has higher transfer into breast tissues. Feeding different sources and levels of Se to birds in a more challenging situation to induce oxidative stress may bring more conclusive results.

Abstract
(1) Background: In this review, we provide information published in recent years on the chemical forms, main biological functions and especially on antioxidant and prooxidant activities of selenium. The main focus is put on the impact of selenoproteins on maintaining cellular redox balance and anticancerogenic function. Moreover, we summarize data on chemotherapeutic application of redox active selenium compounds. (2) Methods: In the first section, main aspects of metabolism and redox activity of selenium compounds is reviewed. The second outlines multiple biological functions, asserted when selenium is incorporated into the structure of selenoproteins. The final section focuses on anticancer activity of selenium and chemotherapeutic application of redox active selenium compounds as well. (3) Results: optimal dietary level of selenium ensures its proper antioxidant and anticancer activity. We pay special attention to antioxidant activities of selenium compounds, especially selenoproteins, and their importance in antioxidant defence. It is worth noting, that data on selenium anticancer properties is still contraversive. Moreover, selenium compounds as chemotherapeutic agents usually are used at supranutritional doses. (4) Conclusions: Selenium play a vital role for many organism systems due to its incorporation into selenoproteins structure. Selenium possesses antioxidant activity at optimal doses, while at supranutritional doses, it displays prooxidant activity. Redox active selenium compounds can be used for cancer treatment; recently special attention is put to selenium containing nanoparticles.

Abstract
BACKGROUND Selenium (Se) is an essential element in the human body that plays an important role in numerous fundamental physiological functions. However, the distribution of Se in the environment varies widely resulting in this element being available in a large concentration range in the ecosystem, and thus, in the human body. Urinary Se is a biomarker considered to be involved in adaptive mechanisms that help prevent health problems. OBJECTIVES The purpose of the present study was to conduct a systematic review to identify studies reporting the status of urinary Se in healthy children and create a global map. METHODS A literature search was conducted using MEDLINE (United States National Library of Medicine), Web of Science, Toxicology Bibliographic Information (TOXLINE), Latin-American and Caribbean Literature on Health Sciences (LILACS), and the grey literature. This study was registered in PROSPERO (international prospective register of systematic reviews) and was conducted in accordance with the PRISMA guidelines. RESULTS We identified 322 relevant articles, out of which 15 were included in this systematic review. The study identified a total of 4038 healthy children worldwide with urinary Se concentrations from 7.7 to 145.0 μg/L. CONCLUSION This is a pioneering study that provides evidence for the presence of Se in the urine of healthy children; we have shown that the available data is restricted to a small number of individuals and specific groups. Furthermore, there is a lack of information on urinary Se, especially in Latin America, Africa, and Asia.

Abstract
As recently applicable, there are few studies on the impact of using nano-selenium (nano-Se) on varied fish species. Where nothing reachable focused on its impact on tilapias so, the present analysis evaluated the efficacy of using nano-Se in tilapias on immune response, antioxidant defense compared by conventional Se form. 480 O. niloticus fingerlings were haphazardly grouped firstly into three groups with four replicates of each. The control one (CT) was fed on a basal diet. The second and third one supplemented with 0.7 mg/kg-1 Se and nano-Se respectively for ten weeks. At the start day of the ninth week, two replicates from each group were injected by Streptococcus iniae where, the remaining replicates stand without challenge. Enhancement of growth performance measurements were noted in nano-Se compared to Se or CT groups. Existed anemia in S. iniae tilapias became alleviated by using nano-Se that also, improves the alteration of leucogram induced by challenge. Elevation of aminotransferases, alkaline phosphatase, lactate dehydrogenase (ALT, AST, ALP and LDH) and creatinine in Se and CT challenged replicates that seemed nearly normal by using nano-Se. Usage of nano-Se showed more powerful antioxidant activities than Se. There were an expansion of immunoglobulin M, lysozymes, glutathione peroxidase, nitric oxide, superoxide dismutase and catalase (IgM, LYZ, GPx, NO, SOD, CAT) and their related gene expression in nano-Se with contrast in Se or CT challenged groups. Nile tilapias challenged by S. iniae disclosed substantial expansion in the percentage of mortality in CT challenged fish (93.33%), followed by the group supplemented with Se (73.33%), whereas the lowermost one at fish supplemented by nano-Se (26.66%). The mortalities have been stopped from the 5th, 12th and 14th days in, nano-Se, Se and CT respectively. It can be concluded that using of Se 0.7 mg/kg-1induce immunosuppressive, antioxidant, liver and kidneys negative impact on tilapias where the same dose from nano-Se was more potent immunomodulating and antioxidant. Also it is attend in counteracting the serious impact induced by S. iniae challenge.

Abstract
Introduction: Selenium plays many key roles in health especially in connection with cancer and neurodegenerative diseases. However, it needs to be appreciated that the essentiality/toxicity of selenium depends on both, a narrow range of concentration and the chemical specie involved. In this context, selenoproteins are essential biomolecules against these disorders, mainly due to its antioxidant action. To this end, analytical methodologies may allow identifying and quantifying individual selenospecies in human biofluids and tissues. Areas covered: This review focus on the role of selenoproteins in medicine, with special emphasis in cancer and neurodegenerative diseases, considering the possible link with gut microbiota. In particular, this article reviews the analytical techniques and procedures recently developed for the absolute quantification of selenoproteins and selenometabolites in human biofluids and tissues. Expert commentary: The beneficial role of selenium in human health has been extensively studied and reviewed. However, several challenges remain unsolved as discussed in this article: (i) speciation of selenium (especially selenoproteins) in cancer and neurodegenerative disease patients; (ii) supplementation of selenium in humans using functional foods and nutraceuticals; (iii) the link between selenium and selenoproteins expression and the gut microbiota and (iv) analytical methods and pitfalls for the absolute quantification of selenoproteins and selenometabolites.

Abstract
Selenium (Se) is an essential trace element for human nutrition and a key component of selenoproteins having fundamental biological and nutraceutical functions. We currently examined lettuce biofortification with Se in an open-gas-exchange growth chamber using closed soilless cultivation for delivering Se-rich food. Morphometric traits, minerals, phenolic acids, and carotenoids of two differently pigmented Salanova cultivars were evaluated in response to six Se concentrations (0-40 μM) delivered as sodium selenate in the nutrient solution. All treatments reduced green lettuce fresh yield slightly (9%), while a decrease in red lettuce was observed only at 32 and 40 μM Se (11 and 21% respectively). Leaf Se content increased in both cultivars, with the red accumulating 57% more Se than the green. At 16 μM Se all detected phenolic acids increased, moreover a substantial increase in anthocyanins (184%) was recorded in red Salanova. Selenium applications slightly reduced the carotenoids content of green Salanova, whereas in red Salanova treated with 32 μM Se violaxanthin + neoxanthin, lutein and β-cryptoxanthin spiked by 38.6, 27.4, and 23.1%, respectively. Lettuce constitutes an ideal target crop for selenium biofortification and closed soilless cultivation comprises an effective tool for producing Se-enriched foods of high nutraceutical value.

Abstract
Selenium (Se) is an indispensable microelement in our diet and health issues resulting from deficiencies are well documented. Se-containing food supplements are available on the market including Se-enriched Chlorella vulgaris (Se-Chlorella) which accumulates Se in the form of Se-amino acids (Se-AAs). Despite its popular uses, data about the bioaccessibility of Se-AAs from Se-Chlorella are completely missing. In the present study, gastrointestinal digestion times were optimized and the in vitro bioaccessibility of Se-AAs in Se-Chlorella, Se-yeast, a commercially available Se-enriched food supplement (Se-supplement) and Se rich foods (Se-foods) were compared. Higher bioaccessibility was found in Se-Chlorella (∼49%) as compared to Se-yeast (∼21%), Se-supplement (∼32%) and Se-foods. The methods used in production of Se-Chlorella biomass were also investigated. We found that disintegration increased bioaccessibility whereas the drying process had no effect. Similarly, temperature treatment by microwave oven also increased bioaccessibility whereas boiling water did not.

Abstract
AIM To clarify the effects of selenium (Se), parameters related to oxidative issues, as well as the antioxidant response were investigated on an autochthonous wine yeast strain. METHODS AND RESULTS Antioxidant enzyme activity, gel electrophoresis, Western blot and MDA level were used to investigate the effects of different concentration of Se in wine yeast. We found that Se is able to affect the enzymatic activities of catalase (CAT), glutathione peroxidase (GPx) and superoxide dismutase (SOD). An increase in lipid peroxidation was observed in a dose-dependent manner of (Se), thus, indicating the occurrence of cell membrane damage. Additionally, Se induced post-translational oxidative modifications of proteins, especially oxidation of thiol groups (both reversible and irreversible) and protein carbonylation (irreversible oxidation). CONCLUSION These results obtained could further the understanding the effect of different concentration of Se in wine yeast strain with which Se affect the enzymatic activities and induces some post-translational modifications of proteins. SIGNIFICANCE AND IMPACT OF THE STUDY The understanding of mechanisms regulating the response of wine yeast to Se is important for future work using selenized yeast as enriched Se supplements in human nutrition.
