Abstract
Assessing the health risks of sensitive population, such as children and teenagers, through multiple exposure routes (MERs) such as ingestion, inhalation, and dermal contact is critical for policy creation that protects or reduces exposure to pollutants for all populations. Heavy metal (HM) contents in food and environmental media in Beijing, capital of China, were collected. Furthermore, on the basis of considering the bioavailability of HMs, we evaluated the multiple environmental routes and health risks to HMs in children and teenagers of eight age groups (2-<3, 3-<4, 4-<5, 5-<6, 6-<9, 9-<12, 12-<15, and 15-<18) in Beijing, China by Monte Carlo simulation approach. The main findings are as follows: lead exposure in children aged 2-<3 years exceeds the exposure dose (0.3 μg·kg-1·d-1) of 0.5 point reduction in intelligence quotient. Moreover, children aged 2-<3 and 6-<9 years have relatively high non-carcinogenic risk (NCR) of 1.32 and 1.30, respectively. The carcinogenic risk (CR) for children aged 6-<9 and 9-<12 years is 2.73×10-6 and 2.39×10-6, respectively. Specifically, the contributions of oral ingestion, dermal contact, and inhalation to the NCR were 69.5%, 18.9%, and 11.6%, respectively. Moreover, the combined NCR contributions of copper, cadmium, mercury, and arsenic (As) were about 69.4%. The contributions of the above three routes to the CR were 93.4%, 4.1%, and 2.5%, in that order, with the largest CR contribution of As being about 92.0%. This study can provide new ideas for accurately assessing the exposure and health risks of HMs in the population, and we believe that it is necessary to update the national standards for food and soil based on the bioavailability of HMs.

Abstract
Seafood is well recognized as a major source of Long Chain n-3 Polyunsaturated Fatty Acids (LC n-3 PUFA, especially ecosapentaenoic acid, i.e. EPA and docosaheaxaenoic acid, i.e. DHA) and essential trace elements (As, Cu, Fe, Mn, Se, and Zn). It is also a source of non-essential trace elements (Ag, Cd, Hg, Pb) that can be deleterious for health even at low concentrations. Edible parts of sixteen species (fish, cephalopods, crustaceans and bivalves) of great importance in the Pertuis Charentais region, one of the main shellfish farming and fishing areas along the french coastline, were sampled in winter and analyzed to determine their fatty acid (FA) composition and trace element concentrations. Based on these analyses, a suite of indices was calculated to estimate risk and benefit of seafood consumption: the n-6/n-3 ratio, the atherogenic index, the thrombogenic index, the EPA + DHA daily recommended portion, as well as the maximum safe consumption. The results showed that fish contributed the most to LC n-3 PUFA supply, while bivalves and crustaceans were more beneficial in essential trace elements. Whatever the species, the concentrations of non-essential elements were not limiting for seafood consumption, as important amounts of the analyzed species can be eaten daily or weekly before becoming hazardous to consumers. Yet, concentrations of Hg in dogfish and seabass can become a concern for frequent seafood consumers (>three meals a week), confirming that varying seafood items is a key point for consumers to optimize the benefits of diverse seafood resources. Considering FA composition, whiting and pilchard are the most beneficial fish species for human diet, while surmullet was the least beneficial one. However, using an index integrating the relative risk due to Hg content, the surmullet appears as one of the most beneficial. This study provides a temporal shot of the quality of marine resources consumed in winter period in the studied area and highlights the complexity of a quantitative risk and benefit assessment with respect to the biochemical attributes of selected seafood.

Abstract
We aim to assess the risks of renal dysfunction and osteoporosis that is attributed to the seawater acidification caused cadmium (Cd) level increase in human consumed shellfish. A physiology-based pharmacokinetic model was used to estimate Cd concentrations in urine and blood among shellfish-only consumers and among the general population. We used the benchmark dose (BMD) method to determine the threshold limits of Cd in urine for renal dysfunction and in blood for osteoporosis for assessing the human health risk. Our results revealed that seawater acidification could increase the Cd accumulation in shellfish by 10-13% compared to the situations under current pH levels. Under the lower seawater pH level, the daily intake of Cd could increase by 21%-67% among shellfish-only consumers, and by 13%-17% among the general population. Our findings indicated that seawater acidification would lead to a marginal increase in Cd intake among humans in shellfish-only consumers. The results of BMDs of urinary Cd showed that the threshold limits for renal dysfunction at 5% were 3.00 μg g-1 in males and 12.35 μg g-1 in females. For osteoporosis, the estimated BMDs of blood Cd were 7.95 μg L-1 in males and 1.23 μg L-1 in females. These results of the risk of Cd intake showed that the consumption of Cd-contaminated shellfish in the general population is largely unaffected by changes in seawater pH levels. Notably, the potential impact of seawater acidification on renal dysfunction for males in shellfish-only consumers face a 14% increase of risk.

Abstract
Bioaccessibility study is of great significance to the health risk assessment of trace elements in the seafood. In this work, the most consumed crab (Portunus trituberculatus) in coastal area of Shandong, China was analyzed to study the distribution and the bioaccessibility of cadmium (Cd) in the edible tissues of crab, and the dietary risk from consumption of crab was also evaluated. Results showed that the content of Cd in the whole edible tissues of 109 crab specimens ranged from 0.052 to 8.89 mg/kg ww (wet weight) with mean of 2.26 mg/kg ww. The Cd content in 85% of the crab samples was higher than the national food safety limits (0.5 mg/kg ww) of China. The gender study indicated that there was no significant difference in Cd content in total edible tissues between the males and females (p > 0.05). Cadmium was highly concentrated in the brown meat with mean value of 4.13 mg/kg ww, which was about 5 times higher than that in the white meat (0.75 mg/kg ww). The bioaccessibility of Cd ranged from 48.1 to 71.0% in the white and brown meat. The risk assessment based on the bioaccessibility of Cd revealed that the consumption of the edible crab brown and white meat for adults should be limited in 0.13 kg and 1.56 kg per week respectively.

Abstract
The New Zealand arrow squids, Nototodarus gouldi and N. sloanii, play an important role in the marine food web, and are both economically important fishery species. This study compares trace element concentrations (As, Cd, Co, Cr, Cu, Fe, Hg, Ni, Mn, Pb, U, and Zn) in these animals from different fishing locations within New Zealand's Exclusive Economic Zone (Auckland Islands, Chatham Rise, Dunedin, Golden Bay, Taranaki, and West Coast of the South Island). Muscular mantle (the tissue usually consumed by humans) and digestive gland tissue (the primary organ for trace element accumulation) concentrations were compared among regions, revealing size, species, and sampling location effects. Overall, N. gouldi had higher concentrations of As and Zn. The Taranaki region had the highest concentrations for Cd, Co, Cu, and Zn in both tissues analysed. To assess the bioaccessibility of these trace elements to humans, an in-vitro digestion simulation experiment was conducted, revealing bioavailable concentrations overall below the maximum levels presently considered tolerable for human consumption. However, the in-vitro digestion had no observable effect upon Cd concentrations in arrow squid mantle tissue (implying that the measured concentrations are bioaccessible to humans), and revealed that Cd had the highest potential impact on marine food webs and human health. Digestive gland concentrations in particular indicate that arrow squids can be considered important vectors for trace element transfer to top predators (mean concentration for Cd: 123 ± 148 μg g-1 dw), with region-specific differences.

Abstract
Element bioaccessibility consists of the fraction of the element that is mobilized from food matrices into digestive extractants. The degree of bioaccessibility of a toxic metal is a fundamental consideration in estimating its bioavailability. In addition, gaining a better understanding of the essential elements released into the gastro intestinal fluids allows a more thorough assessment of the health benefits of food matrices in the field of nutrition science. In the present study, an in vitro digestion model simulating gastro-intestinal digestion (GID) was used to investigate the bioaccessibility of stable elements in mixed leaf salad and 210Po in various foods (meat, seafood, vegetables). The simulation was carried out over three phases: after a pre-treatment with a saliva solution, raw and cooked seafood samples were subjected to a complete simulated gastrointestinal digestion (gastric digestion followed by bile-pancreas digestion). The 210Po bioaccessibility was found to range from 16.2±9.39% to 62.8±17.7% and from 6.26±2.15% to 67.5±13.1% for raw and cooked food respectively. Moreover, bioaccessibility could not be determined for As, Cd, Ce, Co, Cr, Hg, La, Pb, Sb, Sn, Te, Th, Tl, Ti, U. It proved to be poor (1-16%) for Al, Fe and S; fair (40-50%) for Cu, P, and Si; and high (>50%) for Ba, Ca, K, Mg, Mn, Ni, Rb, Sr, Zn. The results show that bioaccessibility varies according to the chemical form of the element in the food as well as the matrix composition.

Abstract
The freshwater polyculture pond culturing occupied an important position in the aquaculture industry. Accumulation of trace metals was investigated in water, sediments, and fish (Carassius auratus, Cyprinus carpio, Ctenopharyngodon idellus) from typical polyculture ponds in Chengdu, China. The results showed most of the pond water in Chengdu were safe for fish cultivation. The Cd and Cr concentrations in sediment samples from sites S3, S4, and S9 which were near the industrial park and road with a high traffic volume were higher than those of the other sites. Cu, Cr, Fe, Zn, Mn, Ni, and Pb in sediments were unpolluted, while Cd was unpolluted to moderately polluted due to anthropogenic activities. Cu, Cd, and Pb in fish pond sediment of Chengdu had higher potential mobility under normal environmental circumstances. The trace metal concentrations in liver of three fish species were all higher than those in muscle tissues. The order of bioaccumulation factor (BAF) values for trace metals was Cr > Cu > Pb > Zn > Cd > Ni > 20. The concentrations of Cu, Cd, Pb, Zn, and Cr in the muscle of three fish species were all below the local and international maximum permissible levels. The target hazard quotient (THQ) and hazard index (HI) of trace metals in aquaculture fish ponds in Chengdu were lower than 1, which indicated that the consumption of grass, crucian, and common carp cultivated in the aquaculture ponds of Chengdu pose no health risk to the residents.

Abstract
The consumption of crustaceans is correlated with certain health risks, particularly due to several highly toxic elements they contain, including cadmium (Cd). Although Cd content in one sole crab generally exceeds the total weekly recommended intake of cadmium as established by EFSA (especially in brown meat), efficient modern strategies to reduce Cd content in crabs still have not yet been developed. The objective of this research was therefore to evaluate the potential use of ultrasound technology in combination with temperature (50°-80 °C) with the purpose of releasing Cd from brown crab (Cancer pagurus), thereby reducing the Cd content in its meat. Female crabs were immersed in a water bath at 50, 65, and 80 °C in presence or absence of ultrasound; Cd concentration in the water was monitored along time. At the end of the process, Cd content in brown and white crab meat was likewise quantified. Treatment temperature did not bear an influence on the release of Cd in absence of ultrasound, but proved to be an important variable when ultrasound assisted the process. Ultrasound increased Cd release rates 8.7-, 2.1- and 2.7-fold in conjunction with the treatments at 50, 65 and 80 °C, respectively. The maximum percentage of Cd extracted (22.8%) was observed at 50 °C for an ultrasound input power of 200 W. These results have demonstrated for the first time that the application of ultrasound during the crab-cooking process could serve as an effective physical procedure for reducing the Cd content of crabs, thereby improving the product's safety for consumers.

Abstract
In recent years, elevated metal discharges have seriously affected the health of many estuarine ecosystems in China. This study examined the influences of metal pollution on the growth and reproduction of razor clam, Sinonovacula constricta. An eight-month field experiment was conducted at two sites with different contamination levels in Jiulong River Estuary of Southern China. Concentrations of Ag, As, Cd, Cr, Cu, Ni, Pb and Zn in seawater, suspended particles, surface sediments, and clams, as well as the clam growth and gonad condition were simultaneously determined on a monthly basis. Over the 8-month period, Ag, Cu and Ni concentrations in the clams were significantly higher at the more polluted site, whereas the concentrations of other metals were rather comparable between the two sites. Comparison of the 8-month pattern of metal concentrations among different compartments suggested that Ag, As, Cd, Cu and Zn bioaccumulation in the clams was mainly derived from ingestion of suspended particles, whereas Cr and Ni accumulation was mainly from the waterborne uptake. The growth of clams in the more polluted site was depressed and there was no significant growth after 4 months of transplantation, which was mainly caused by Cu and Ag accumulation in the clam tissues. Correspondingly, the gonad somatic index was also lower at the more polluted site. Our study demonstrated a significant impact of multi-metal pollution on the growth and reproduction of clams in an estuary. Simultaneous measurements of metal bioaccumulation were important for the interpretation of metal toxicity observed in the field.

Abstract
This study aimed to identify new biomarkers for metal exposure in two bivalve species. Suppressive Subtractive Hybridization (SSH) was employed to evaluate the transcriptomic response of Cerastoderma edule and Ruditapes philippinarum to metal pollution. Protein synthesis and catalytic activity were the most affected metabolic processes in C. edule and R. philippinarum, respectively. Also, different genes responded to the effect of contamination in each species. The different response observed in both species reinforces the importance of including more than one bioindicator species in risk assessment studies. These results provide the basis for new studies, which are necessary for further validation of the use of the identified genes as molecular biomarkers for metal exposure.

Abstract
Bioaccumulation kinetics of five dissolved metals were determined in the mangrove oyster Crassostrea gasar, using corresponding radiotracers ((54)Mn, (57)Co, (65)Zn, (109)Cd and (110m)Ag). Additionally, their bioaccessibility to human consumers was estimated. Results indicated that over a 14-day exposure (54)Mn and (57)Co were linearly concentrated in oysters whereas (109)Cd, (65)Zn and (110m)Ag were starting to saturate (steady-state not reached). Whole-body concentration factors at 14 days (CF14d in toto) ranged from 187 ± 65 to 629 ± 179 with the lowest bioconcentration capacity for Co and the highest for Ag. Depuration kinetics were best described by a double-exponential model with associated biological half-lives ranging from 26 days (Ag) to almost 8 months (Zn and Cd). Bioaccessible fraction of the studied elements was estimated using in vitro digestions, which suggested that oysters consumed seasoned with lemon enhanced the accessibility of Cd, Mn and Zn to human consumers, but not Ag and Co.

Abstract
Freshwater crayfish, the world's third largest crustacean species, has been reported to accumulate high levels of metals, while the current knowledge of potential risk associated with crayfish consumption lags behind that of finfish. We provide the first estimate of human health risk associated with crayfish (Procambarus clarkii) consumption in China, the world's largest producer and consumer of crayfish. We performed Monte Carlo Simulation on a standard risk model parameterized with local data on metal concentrations, bioaccessibility (φ), crayfish consumption rate, and consumer body mass. Bioaccessibility of metals in crayfish was found to be variable (68-95%) and metal-specific, suggesting a potential influence of metal bioaccessibility on effective metal intake. However, sensitivity analysis suggested risk of metals via crayfish consumption was predominantly explained by consumption rate (explaining >92% of total risk estimate variability), rather than metals concentration, bioaccessibility, or body mass. Mean metal concentrations (As, Cd, Cu, Ni, Pb, Se and Zn) in surveyed crayfish samples from 12 provinces in China conformed to national safety standards. However, risk calculation of φ-modified hazard quotient (HQ) and hazard index (HI) suggested that crayfish metals may pose a health risk for very high rate consumers, with a HI of over 24 for the highest rate consumers. Additionally, the φ-modified increased lifetime risk (ILTR) for carcinogenic effects due to the presence of As was above the acceptable level (10(-5)) for both the median (ILTR=2.5×10(-5)) and 90th percentile (ILTR=1.8×10(-4)), highlighting the relatively high risk of As in crayfish. Our results suggest a need to consider crayfish when assessing human dietary exposure to metals and associated health risks, especially for high crayfish-consuming populations, such as in China, USA and Sweden.

Abstract
Food chain modeling is often used to assess the risks of chemical contaminants to wildlife. In modeling efforts, bioaccessibility from different dietary components is assumed to be similar. The present study explored potential differences in the in vitro bioaccessibility of metals from a range of insect orders, which are common components of the diet of insectivorous bats, and assessed the implications of this for environmental exposure assessment. Bioaccessibility of metals was assessed using an in vitro gastric model simulating gastric and intestinal conditions of insectivorous bats. In vitro-derived metal bioaccessibility was found to differ significantly across insect orders. Bioaccessibility was found to be greatest in Coleoptera, followed by Lepidoptera and Diptera. To establish the implications for risk assessment, a spatially explicit risk model was employed that included and excluded in vitro bioaccessibility data; to examine the daily oral exposure of metals to 14 bat species. The results show that when bioaccessibility data are included in the model, metal exposure predictions across species are changed and that the ranking of bat species, in terms of metal exposure, are altered. The authors recommend that in vitro bioaccessibility data begin to be employed when establishing the risks of contaminants to wildlife species.

Abstract
BACKGROUND Due to pedogeochemical background and anthropogenic sources, heavy metal contamination of soil is a widespread problem in some parts of Zanjan province located in North West Iran. In this study an affected area located near National Iranian Lead and Zinc Company (NILZ) was selected for detailed study. METHODOLOGY Thirty soil samples and eighteen leaf samples were collected and analyzed for heavy metal contamination by Inductively Coupled Plasma-Optical Emission Spectroscopy (ICP-OES). Both soil and plant samples were found to be basically polluted by Pb (72.60 and 97.11), Zn (546.47 and 166.61), and Cd (1.80 and 1.55) mg. kg(-1) respectively. High concentrations of these elements in soil and plant species signifies possible health risks to humans. The distribution maps drawn using Arc GIS (10) show high concentrations of these toxic metals around Dizajabaad village. To assess vulnerability and health risks of metal concentrations in human bodies' twenty nine fingernail samples were also collected from people living in this village. RESULTS AND DISCUSSION Analysis for different heavy metal contents of nail samples reveals very high levels of the same toxic elements (Pb = 15.15, Cd = 1.18, As = 15.47, Zn = 68.46 and Ni = 18.22 mg. kg(-1)) compared with samples collected from an unaffected area and available values indicated in the literature. Further, high concentration of heavy metals in the nail samples suggests long term exposure of inhabitants to these toxic metals.

Abstract
The Hong Kong oysters Crassostrea hongkongensis are widely farmed in the estuarine waters of Southern China, but they accumulate Cu and Zn to alarmingly high concentrations in the soft tissues. Health risks of seafood consumption are related to contaminants such as toxic metals which are bioaccessible to humans. In the present study, we investigated the oral bioaccessibility of five toxic metals (Ag, Pb, Cd, Cu and Zn) in contaminated oysters collected from different locations of a large estuary in southern China. In all oysters, total Zn concentration was the highest whereas total Pb concentration was the lowest. Among the five metals, Ag had the lowest oral bioaccessibility (38.9-60.8%), whereas Cu and Zn had the highest bioaccessibility (72.3-93.1%). Significant negative correlation was observed between metal bioaccessibility and metal concentration in the oysters for Ag, Cd, and Cu. We found that the oral bioaccessibility of the five metals was positively correlated with their trophically available metal fraction (TAM) in the oyster tissues, and negatively correlated with metal distribution in the cellular debris. Thus, metal partitioning in the TAM and cellular debris controlled the oral bioaccessibility to humans. Given the dependence of oral bioaccessibility on tissue metal contamination, bioaccessibility needs to be incorporated in the risk assessments of contaminated shellfish.

Abstract
Bioaccessibility represents the maximum amount of pollutant ingested with food that is available for intestinal absorption. The measurement of bioaccessibility can achieve a more accurate risk assessment. Thus, in this study, the bioaccessibility of raw/microwave-cooked store-bought food including carrot, potato, white radish, lotus root, sweet corn, long grain rice, soybean, fleshy prawn, eastern oyster, kelp, and common carp were investigated by applying an in vitro digestion method. A validated microwave digestion/ICP-MS method was applied for determining the concentration of Cd. In this study, the concentration of Cd ranged 3.7-215.8 μg/kg fw in which carrot contained the lowest Cd while the fleshy prawn contained the highest Cd. There are no statistical differences of Cd content in microwave-cooked food and raw food except potato, lotus root, and eastern oyster. Cd in most of the cooked food materials was less bioaccessible than in raw food except sweet corn, potato, and kelp. The bioaccessibility of Cd was around 100 % in either raw or cooked potatoes. Microwave cooking caused the decreasing of bioaccessibility around 0-68 %, depending on different food matrix. Maximal decreasing of Cd bioaccessibility occurred in common carp. Thus, microwave cooking could be a feasible strategy for decreasing Cd bioaccessibility. In addition, the Cd dissolution in oral, gastric, and small intestine phase was different in different food matrix. For most of the investigated food items, Cd was largely migrated either into the oral phase (carrot, potato, white radish, lotus root, raw soybean, kelp, and common carp) or into the gastric phase (sweet corn, cooked soybean, rice, fleshy prawn, and eastern oyster). Our findings will have significant implications for food processing aiming to decrease the absorption of Cd and risk assessment analysis improvements. Further study is needed to use the animal model to validate these results.

Abstract
The concentrations of four human essential trace elements [iron (Fe), manganese (Mn), zinc (Zn), chromium (Cr)] and non-essential elements [cadmium (Cd), lead (Pb), arsenic (As), and mercury (Hg)] in eighteen animal-based foods including meat, fish, and shellfish collected from markets in Shanghai, China, were analyzed, and the associated human daily intake and uptake considering bioaccessibility were estimated. The mean concentration ranges for eight trace elements measured in the foods were 3.98-131µgg(-1) for Fe, 0.437-18.5µgg(-1) for Mn, 5.47-53.8µgg(-1) for Zn, none detected-0.101µgg(-1) for Cr, 2.88×10(-4)-2.48×10(-2)µgg(-1) for Cd, 1.18×10(-3)-0.747µgg(-1) for Pb, none detected-0.498µgg(-1) for As, and 8.98×10(-4)-6.52×10(-2)µgg(-1) for Hg. The highest mean concentrations of four human essential elements were all found in shellfish. For all the trace elements, the observed mean concentrations are mostly in agreement with the reported values around the world. The total daily intake of trace elements via ingestion of animal-based food via an average Shanghai resident was estimated as 7371µgd(-1) for the human essential elements and 13.0µgd(-1) for the human non-essential elements, but the uptake decreased to 4826µgd(-1) and 6.90µgd(-1), respectively, after trace element bioaccessibility was considered. Livestock and fish for human essential and non-essential elements, respectively, were the main contributor, no matter whether the bioaccessibility was considered or not. Risk estimations showed that the intake and uptake of a signal trace element for an average Shanghai resident via ingestion animal-based foods from Shanghai markets do not exceed the recommended dietary allowance values; consequently, a health risk situation is not indicated.

Abstract
Ruditapes philippinarum, a species native from the Indo-Pacific region, was introduced in Europe at the beginning of the 1970s for culture purposes, leading to a massive decrease of the native species Ruditapes decussatus and a high increase of R. philippinarum yields in Europe. Bivalves can accumulate high amounts of metals and thus easily reach concentrations that are toxic not only to themselves but also to consumers. Since differences in the accumulation of pollutants may exist between bivalve species, different health risks may be overcome. For this reason, the level of metals in seafood raises public health concerns, and international organisations like European Food Safety Authority, United States Food and Drug Administration, and Food Standards Australia and New Zealand (FSANZ) set maximum levels (MLs), above which edible seafood cannot be marketed. In order to evaluate the risk associated with the consumption of R. philippinarum and R. decussatus, both clam species were collected in the same site in Ria de Aveiro and the concentration of eight elements determined in organisms before and after a 48-h depuration period. Results evidence that even at low contaminated areas, the MLs for some elements can easily be achieved. The concentrations of As were above the reference values for FSANZ, and the provisional tolerable weekly intake (PTWI) is exceeded for As when more than 0.5 kg of R. decussatus and 0.9 kg of R. philippinarum clam flesh is consumed, in 1 week, by an adult (70 kg). When comparing with other systems worldwide, consumers of depurated clams from this coastal system have a similar or lower risk of exceeding the PTWI for Cd, As, Pb, and Hg. The recently introduced clam, R. philippinarum, accumulates lower amounts of the most health-threatening elements (less than 71 % of Cd, 40 % of As, and 20 % of Hg) than the native R. decussatus, except for Pb. R. philippinarum also reduces more the element burden when subjected to depuration than R. decussatus. Moreover, R. philippinarum allocates a lower proportion of the accumulated elements in the soluble fraction, where they are readily available. Thus, it is safer to consume R. philippinarum than R. decussatus, except when clams come from areas heavily polluted by Pb.

Abstract
The role of cadmium (Cd) bioaccessibility in risk assessment is less well studied. The aim of this study was to assess human health risk to Cd through inhalation and seafood consumption by incorporating bioaccessibility. The relationships between trophically available Cd and bioaccessibility were constructed based on available experimental data. We estimated Cd concentrations in human urine and blood via daily intake from seafood consumption and inhalation based on a physiologically-based pharmacokinetic (PBPK) model. A Hill-based dose-response model was used to assess human renal dysfunction and peripheral arterial disease risks for long-term Cd exposure. Here we showed that fish had higher bioaccessibility (~83.7%) than that of shellfish (~73.2%) for human ingestion. Our results indicated that glomerular and tubular damage among different genders and smokers ranged from 18.03 to 18.18%. Our analysis showed that nonsmokers had 50% probability of peripheral arterial disease level exceeding from 3.28 to 8.80%. Smoking populations had 2-3 folds higher morbidity risk of peripheral arterial disease than those of nonsmokers. Our study concluded that the adverse effects of Cd exposure are exacerbated when high seafood consumption coincides with cigarette smoking. Our work provides a framework that could more accurately address risk dose dependency of Cd hazard.

Abstract
Since differences in metal accumulation may exist between bivalve species, the aim of this study was to assess the impact of cadmium (Cd) on Ruditapes decussatus and Ruditapes philippinarum. For this, the Cd accumulation, mortality rates and biochemical responses were analysed in the two species after 5days of exposure, under laboratory-controlled conditions. The concentration of Cd that caused 50% of mortality on clams was two-times higher in R. decussatus than in R. philippinarum. For both species, higher percentage (84.5-98.2%) of the Cd was in the insoluble fraction, but the Cd concentration in solution was 3 to 8 times higher in R. decussatus. Nevertheless, R. philippinarum presented higher oxidative stress and higher CAT activity. The paradox observed between the two clams can be explained by the higher capacity of R. decussatus to increase the expression of MTs when exposed to Cd.

Abstract
A continuous leaching method, coupled online with inductively coupled plasma mass spectrometry (ICP-MS) was used on seafood samples to assess the maximum bioaccessibility of several trace elements. The method indeed involves continuous leaching of the food sample by artificial saliva and gastric juice, successively, where this exposition of the food to fresh reagent drives the dissolution equilibrium to the right. Leaching with intestinal juice had to be omitted because it resulted in clogging problems. The experimental apparatus includes a mini-column of powdered sample, which is directly connected to the nebulizer of an ICP-MS instrument. The on-line approach allows a quick assessment of the maximum bioaccessibility of elements of interest by monitoring the real-time release of elements by a given reagent. The method was applied to determine the bioaccessibility of four toxic elements (Al, Cd, Hg, and Pb) and of four essential elements (V, Mn, Cu, and Zn) in certified reference materials and in actual seafood samples. In all cases, mass balance was verified by carrying out the total digestion of the remaining residue from the mini-column and the relationship between total concentration and bioaccessibility was examined.

Abstract
BACKGROUND Black scabbard fish (Aphanopus carbo Lowe, 1839) is a deep-water fish resource that is highly appreciated in southern European countries and can accumulate high levels of mercury in the muscle. Currently, European legislation establishes limits for the presence of toxic contaminants in raw seafood, despite these products are generally cooked before consumption. In addition, there is still a lack of information concerning the nutritional quality and contaminants available in cooked products. Therefore, the aim of this study was to assess the effect of sex, maturation stages and three common cooking practices (steaming, grilling and frying) on the toxic elements (Hg, As, Cd and Pb) and nutritional value (chemical, elemental and fatty acid composition) of black scabbard fish. RESULTS Few variations occurred between sexes and maturation stages, particularly in fatty acid and elemental content. Concerning cooked black scabbard fish, the greatest differences occurred in fried and grilled samples, attaining higher Hg levels, whereas steamed fish composition was closer to raw black scabbard fish. CONCLUSION Raw and cooked black scabbard fish can be considered as a very good source of essential nutrients such as n-3 PUFA, proteins, macro and trace elements. Yet, when the fish is grilled, the Hg content may be above the limits set by EU. Considering the alterations occurred during the cooking processes, steaming seems the best procedure to cook this species.

Abstract
Commercial and recreational harvesting of shellfish within the coastal systems is usually very extensive. Since these ecosystems are frequently subjected to contamination, namely from agricultural, urban and industrial activities, and shellfish generally display a high capacity to bioaccumulate metals, populations may be at risk in terms of toxic metal exposure as a consequence of the harvesting and ingestion of near shore coastal marine organisms. Shellfish is regularly tested for concentrations of metals and other contaminants by legal authorities for commercial purposes, but although health officials use total metal as standards of food safety, only a part of the metal accumulated in shellfish is available to be assimilated and to cause toxic effect. In order to elucidate these issues an investigation on cockles inhabiting the Aveiro estuary was conducted. Element levels in sediments and wild Cerastoderma edule from sampling areas with different levels of contamination were measured; total element burden of cockles was related to accessible fraction for assimilation (TAM); element concentrations in wild C. edule were compared to EFSA (European Food Safe Authorities), USFDA (United States Food and Drug Administration) and FSANZ (Food Standards Australia and New Zealand) maximum levels (MLs); and the amount of cockle flesh needed to be consumed to exceed provisional tolerable weekly intake (PTWI) was determined. The present work showed that although sediment metal and metalloid contamination in Aveiro estuary is low the concentration of elements in C. edule does not reflect the contamination of the sediment. Aluminium (Al) and mercury (Hg) were the less and nickel (Ni), lead (Pb), zinc (Zn) and cadmium (Cd) were the most bioaccumulated metals by cockles. Comparison of MLs from international organisations with the concentration of elements in C. edule showed that arsenic (As) and Pb exceeded standard levels. The ingestion of less than 1 kg for As and 1.5 kg for Pb of cockles would result in exceeding the PTWI threshold (0.015 and 0.025 mg kg⁻¹ week⁻¹ respectively) in any of the areas considered in the study. Cd and Al also appear to be limiting elements for human consumption. Indeed, consumption of more than 3.1 kg and 2.1 kg of whole cockle soft part from one of the study areas during a single week would lead to exceedance of the recommended PTWI value for Cd (0.007 mg kg⁻¹ week⁻¹) and Al (7 mg kg⁻¹ week⁻¹) respectively. The health concerns to humans from cockle consumption from Aveiro estuary are discussed.

Abstract
BACKGROUND Predatory fish tend to accumulate high levels of mercury (Hg). Food safety assessment of these fish has been carried out on the raw product. However, the evaluation of the risk from Hg concentrations in raw fish might be modified if cooking and bioaccessibility (the contaminant fraction that solubilises from its matrix during gastrointestinal digestion and becomes available for intestinal absorption) were taken into account. Data on Hg bioaccessibility in raw predatory fish sold in Spain are scarce and no research on Hg bioaccessibility in cooked fish is available. The aim of the present study was to evaluate Hg bioaccessibility in various kinds of cooked predatory fish sold in Spain to estimate their health risk. RESULTS Both Hg and bioaccessible Hg concentrations were analysed in raw and cooked fish (swordfish, tope shark, bonito and tuna). There were no changes in Hg concentrations during cooking. However, Hg bioaccessibility decreased significantly after cooking (42 ± 26% in raw fish and 26 ± 16% in cooked fish), thus reducing in swordfish and tope shark the Hg concentration to which the human organism would be exposed. CONCLUSION In future, cooking and bioaccessibility should be considered in risk assessment of Hg concentrations in predatory fish.

Abstract
Bioaccessibility, the fraction of an element solubilized during gastrointestinal digestion and available for absorption, is a factor that should be considered when evaluating the health risk of contaminants from food. Static and dynamic models that mimic human physiological conditions have been used to evaluate bioaccessibility. This preliminary study compares the bioaccessibility of arsenic (As), cadmium (Cd), lead (Pb) and mercury (Hg) in two food certified reference materials (CRMs) (seaweed: Fucus sp., IAEA-140/TM; Lobster hepatopancreas: TORT-2), using two in vitro gastrointestinal digestion methods: a static method (SM) and a dynamic multicompartment method (TIM-1). There are significant differences (p<0.05) between the bioaccessible values of As, Cd, Pb and Hg obtained by SM and TIM-1 in the two CRMs. The specific form in which the elements studied are present in the CRM may help to explain the bioaccessibility values obtained.

Abstract
In this review, we address the identification of residual chemical hazards in shellfish collected from the marine environment or in marketed shellfish. Data, assembled on the concentration of contaminants detected, were compared with the appropriate regulatory and food safety standards. Moreover, data on human exposure and body burden levels were evaluated in the context of potential health risks.Shellfish farming is a common industry along European coasts. The primary types of shellfish consumed in France are oysters, mussels, king scallops, winkles,whelks, cockles, clams, and other scallops. Shellfish filter large volumes of water to extract their food and are excellent bioaccumulators. Metals and other pollutants that exist in the marine environment partition into particular organs, according to their individual chemical characteristics. In shellfish, accumulation often occurs in the digestive gland, which plays a role in assimilation, excretion, and detoxification of contaminants. The concentrations of chemical contaminants in bivalve mollusks are known to fluctuate with the seasons.European regulations limit the amount and type of contaminants that can appear in foodstuffs. Current European standards regulate the levels of micro-biological agents, phycotoxins, and some chemical contaminants in food. Since 2006, these regulations have been compiled into the "Hygiene Package." Bivalve mollusks must comply with maximum levels of certain contaminants as follows:lead (1.5 mg kg-1), cadmium (1 mg kg-1), mercury (0.5 mg kg-1), dioxins (4 pg g-1 and dioxins + DL-PCBs 8 pg g-1), and benzo[a]pyrene (10 μp.g kg-1).In this review, we identify the levels of major contaminants that exist in shellfish(collected from the marine environment and/or in marketed shellfish). The follow-ing contaminants are among those that are profiled: Cd, Pb, Hg, As, Ni, Cr, V,Mn, Cu, Zn, Co, Se, Mg, Mo, radionuclides, benzo[a]pyrene, PCBs, dioxins and furans, PAHs, TBT, HCB, dieldrin, DDT, lindane, triazines, PBDE, and chlorinated paraffins.In France, the results of contaminant monitoring have indicated that Cd, but not lead (< 0.26 mg kg-1) or mercury (< 0.003 mg kg-1), has had some non-compliances. Detections for PCBs and dioxins in shellfish were far below the regulatory thresholds in oysters (< 0.6 pg g-l), mussels (< 0.6 pg g-1), and king scallops (< 0.4 pg g-1). The benzo[a]pyrene concentration in marketed mussels and farmed shellfish does not exceed the regulatory threshold. Some monitoring data are available on shellfish flesh contamination for unregulated organic contaminants.Of about 100 existing organo stannic compounds, residues of the mono-, di-, and tributyltin (MBT, DBT, and TBT) and mono-, di-, and triphenyltin (MPT, DPT,and TPT) compounds are the most frequently detected in fishery products. Octyltins are not found in fishery products. Some bivalve mollusks show arsenic levels up to 15.8 mg kg-1. It seems that the levels of arsenic in the environment derive less from bioaccumulation, than from whether the arsenic is in an organic or an inorganic form. In regard to the other metals, levels of zinc and magnesium are higher in oysters than in mussels.To protect shellfish from chemical contamination, programs have been established to monitor water masses along coastal areas. The French monitoring network(ROCCH) focuses on environmental matrices that accumulate contaminants. These include both biota and sediment. Example contaminants were studied in a French coastal lagoon (Arcachon Bay) and in an estuary (Bay of Seine), and these were used to illustrate the usefulness of the monitoring programs. Twenty-one pesticidal and biocidal active substances were detected in the waters of Arcachon Bay during the summers from 1999 to 2003, at concentrations ranging from a few nanograms per liter to several hundred nanograms per liter. Most of the detected substances were herbicides, including some that are now banned. Organotin compounds have been detected in similarly semi-enclosed waters elsewhere (bays, estuaries, and harbors).However, the mean concentrations of cadmium, mercury, lead, and benzo[a]pyrene,in transplanted mussels, were below the regulatory limits.In 2007, the mean daily consumption of shellfish in the general French population was estimated to be 4.5 g in adults; however, a wide variation occurs by region and season (INCA 2 study). Tabulated as a proportion of the diet, shellfish consumption represents only 0.16% of overall solid food intake. However, the INCA 2 survey was not well suited to estimating shellfish consumption because of the small number of shellfish consumers sampled. In contrast, the mean consumption rate of bivalve mollusks among adult high consumers of fish and seafood products, i.e., adults who eat fish or seafood at least twice a week, was estimated to be 153 g week-1 (8 kg yr-1). The highest mean consumption is for king scallops (39 g week-1), followed by oysters (34 g week-1) and mussels (22 g week-1). Thus, for high seafood consumers, the contribution of shellfish to inorganic contaminant levels is 1-10% TWI or PTWI for Cd, MeHg, and Sn (up to 19% for Sn), and the arsenic body burden is higher for 22% of individuals studied.The human health risks associated with consuming chemical contaminants in shellfish are difficult to assess for several reasons: effects may only surface after long-term exposure (chronic risk), exposures may be discontinuous, and contamination may derive from multiple sources (food, air, occupational exposure, etc.).Therefore, it is not possible to attribute a high body burden specifically to shellfish consumption even if seafood is a major dietary contributor of any contaminant, e.g.,arsenic and mercury.The data assembled in this review provide the arguments for maintaining the chemical contaminant monitoring programs for shellfish. Moreover, the results presented herein suggest that monitoring programs should be extended to other chemicals that are suspected of presenting a risk to consumers, as illustrated by the high concentration reported for arsenic (in urine) of high consumers of seafood products from the CALIPSO study. In addition, the research conducted in shellfish-farming areas of Arcachon Bay highlights the need to monitor TBT and PAH contamination levels to ensure that these chemical pollutants do not migrate from the harbor to oyster farms.Finally, we have concluded that shellfish contamination from seawater offers a rather low risk to the general French population, because shellfish do not constitute a major contributor to dietary exposure of chemical contaminants. Notwithstanding,consumer vigilance is necessary among regular shellfish consumers, and especially for those residing in fishing communities, for pregnant and breast-feeding women,and for very young children.

Abstract
This study used hair and nails to biomonitor heavy metals (Pb, Cd, Cr and Cu) from geological source and exposure through regular fish consumption among children in Lake Victoria, Kenya. Concentration of Pb and Cu in water reflected anthropogenic pathways, while Cd and Cr reflected accumulation from the catchment basin. Higher concentration of heavy metals in the nails samples than the hair samples suggested longer term exposure. The estimated intake of Cd and Cr from fish in one site associated with high concentration of the metals from geological source was appreciably above the respective recommended daily allowance, signifying possible health risks to humans. Significant correlations between Pb, Cd and Cu in hair, nails and heavy metals from fish consumed suggested fish consumption as possible pathway of heavy metals in humans. Possible health risks from heavy metals were likely due to consumption of higher quantities of fish and from geological basins.

Abstract
Cadmium (Cd), mercury (Hg), arsenic (As), lead (Pb) and tin (Sn) concentrations were determined using ICP-MS in soft tissues (wet wt.) from whole greenshell mussels (Perna canaliculus) collected from Urapukapuka-Rawhiti Island, Opua Marina, Waitangi Bridge and Opua Wharf from the Bay of Islands, northern New Zealand (NZ). All samples had metal concentrations well below the Food Standards Australia and New Zealand (FSANZ) maximum limits and were comparable to, or less than, concentrations observed in previous NZ studies. Based on the average values detected in the current study, the concentrations of heavy metals ingested in a 'typical diet' containing greenshell mussels are below the provisional tolerable weekly intake (PTWI). However, Māori (indigenous people of New Zealand), Pacific Islanders and Asians consume a far greater quantity of seafood (and therefore heavy metals) than the general public of New Zealand and could potentially consume enough shellfish to exceed the PTWI for Cd (but not for Hg, As, Pb or Sn). Although our results, based on the current PTWIs, indicate no significant health risk to greenshell mussel consumers in this region, PTWIs change over time; concentrations which were thought to be safe are later found to be harmful. Additionally, differences in individual human susceptibilities to various toxins could increase the risk of harm for consumers with low tolerance to heavy metals. We suggest that a survey of the frequency, amount and species consumed by groups whose diet may be largely shellfish-based is required to enable a more comprehensive risk assessment to be made.
