Abstract
Pentachlorophenol (PCP) is a ubiquitous emerging persistent organic pollutant detected in the environment and foodstuffs. Despite the dietary intake of PCP being performed using surveillance data, the assessment does not consider the bioaccessibility and bioavailability of PCP. Pork, beef, pork liver, chicken and freshwater fish Ctenopharyngodon Idella-fortified by three levels of PCP were processed by RIVM and the Caco-2 cell model after steaming, boiling and pan-frying, and PCP in foods and digestive juices were detected using isotope dilution-UPLC-MS/MS. The culinary treatment and food matrix were significantly influenced (p < 0.05) in terms of the bioaccessibility and bioavailability of PCP. Pan-frying was a significant factor (p < 0.05) influencing the digestion and absorption of PCP in foods, with the following bioaccessibility: pork (81.37-90.36%), beef (72.09-83.63%), pork liver (69.11-78.07%), chicken (63.43-75.52%) and freshwater fish (60.27-72.14%). The bioavailability was as follows: pork (49.39-63.41%), beef (40.32-53.43%), pork liver (33.63-47.11%), chicken (30.63-40.83%) and freshwater fish (17.14-27.09%). Pork and beef with higher fat content were a key factor in facilitating the notable PCP bioaccessibility and bioavailability (p < 0.05). Further, the exposure of PCP to the population was significantly reduced by 42.70-98.46% after the consideration of bioaccessibility and bioavailability, with no potential health risk. It can improve the accuracy of risk assessment for PCP.

Abstract
Cadmium (Cd) contamination of soil can strongly impact human health through the food chain due to uptake by crop plants. Inorganic immobilizing agents such as silicates and phosphates have been shown to effectively reduce Cd transfer from the soil to cereal crops. However, the effects of such agents on total Cd and its bioaccessibility in leafy vegetables are not yet known. Pak choi (Brassica rapa L. ssp. chinensis) was here selected as a representative leafy vegetable to be tested in pots to reveal the effects of silicate-phosphate amendments on soil Cd chemical fractions, total plant Cd levels, and plant bioaccessibility. The collected Cd contaminated soil was mixed with control soil at 1:0, 1:1, 1:4, 0:1 with a view to Cd high/moderate/mild/control soil samples. Three heavy metal-immobilizing agents: wollastonite (W), potassium tripolyphosphate (KTPP), and sodium hexametaphosphate (SHMP) were added to the soil in order to get four different treatment groups, i.e., control (CK), application of wollastonite alone (W), wollastonite co-applied with KTPP (WKTPP), application of wollastonite co-applied with SHMP (WSHMP) for remediation of soils with different levels of Cd contamination. All three treatments increased the effective bio-Cd concentration in the soils with varying levels of contamination, except for W under moderate and heavy Cd contamination. The total Cd concentration in pak choi plants grown in mildly Cd-contaminated soil was elevated by 86.2% after WKTPP treatment compared to the control treatment could function as a phytoremediation aid for mildly Cd-contaminated soil. Using an in vitro digestion method (physiologically based extraction test) combined with transmission electron microscopy, silicate and phosphorus agents were found to reduce the bioaccessibility of Cd in pak choi by up to 66.13% with WSHMP treatment. Application of silicate alone reduced soil bio-Cd concentration through the formation of insoluble complexes and silanol groups with Cd, but the addition of phosphate may have facilitated Cd translocation into pak choi by first co-precipitating with Ca in wollastonite while simultaneously altering soil pH. Meanwhile, wollastonite and phosphate treatments may cause Cd to be firmly enclosed in the cell wall in an insoluble form, reducing its translocation to edible parts and decreasing the bioaccessibility of Cd in pak choi. This study contributes to the mitigation of Cd bioaccessibility in pak choi by reducing soil Cd concentration through in situ remediation and will help us to extend the effects of wollastonite and phosphate on Cd bioaccessibility to other common vegetables. Therefore, this study thus reveals effective strategies for the remediation of soil Cd and the reduction of Cd bioaccessibility in crops based on two indicators: total Cd and Cd bioaccessibility. Our findings contribute to the development of methods for safer cultivation of commonly consumed leafy vegetables and for soil remediation.

Abstract
To reduce the health risks of exposure to Cd and Pb in wheat, a field experiment was conducted to investigate the differences in Cd and Pb bioaccessibility among the grains of 11 wheat cultivars and their relationships with the nutrient compositions of grains. The grain concentrations (Cd: 0.14-0.56 mg kg-1, Pb: 0.08-0.39 mg kg-1) and bioaccessibility (5.28-57.43% and 0.72-7.72% for Cd and Pb in the intestinal phase, respectively) of Cd and Pb differed significantly among the 11 cultivars. A safe wheat cultivar (Shannong16) with a relatively low health risk and the lowest grain Cd and Pb concentrations was selected. Ca, Mg, phytate, and methionine played key roles in affecting Cd and Pb bioaccessibility in wheat, with Ca and phytate significantly negatively correlated with Cd and Pb bioaccessibility. These findings can be used to optimize the selection strategy for safe wheat cultivars for healthy grain production in Cd-polluted farmland.

Abstract
Beans and vegetables are consumed with cereals in India on daily basis. The aim of the study was to assess carcinogenic and non-carcinogenic risk of heavy metals in cooked beans and cooked vegetables consumed by adults (18-59 years) and elderly (≥60 years) subjects from two districts (Ludhiana and Bathinda) of Punjab. A total of 150 households were selected from 30 different locations covering both rural and urban areas. The mean daily consumption of beans and vegetables in Ludhiana was recorded as 35.09 and 215.93 g, respectively. The corresponding figures in Bathinda were observed as 26.85 and 230.54 g. The average amounts of arsenic, cadmium, lead, and mercury were 1.44 × 10-5, 8.21 × 10-5, 1.30 × 10-3, and 2.61 × 10-7 mg/kg for cooked vegetables in urban households of Ludhiana district, respectively. The corresponding values for rural households were 1.53 × 10-5, 5.58 × 10-5, and 2.98 × 10-4 mg/kg while mercury was not detected. The mean chronic daily intake (CDI) of arsenic from cooked beans was significantly (p ≤ .001) higher in urban adult males of Ludhiana (7.74 × 10-9 mg/kg/day) and Bathinda (5.31 × 10-9 mg/kg/day) compared to their rural counterparts. Similar trend was observed in CDI of heavy metals from vegetables. The mean CDI of cadmium from cooked vegetables in urban adult females of Ludhiana (3.76 × 10-7 mg/kg/day) was significantly (p ≤ .001) higher than their rural counterparts and both urban and rural adult females of Bathinda. The study concluded that the subjects of both districts were found safe from non-carcinogenic and carcinogenic risk associated with heavy metals present in cooked beans and vegetables, except for urban subjects and rural adult subjects of Ludhiana district who had cancer risk due to cadmium present in cooked vegetable samples.

Abstract
Assessing the health risks of sensitive population, such as children and teenagers, through multiple exposure routes (MERs) such as ingestion, inhalation, and dermal contact is critical for policy creation that protects or reduces exposure to pollutants for all populations. Heavy metal (HM) contents in food and environmental media in Beijing, capital of China, were collected. Furthermore, on the basis of considering the bioavailability of HMs, we evaluated the multiple environmental routes and health risks to HMs in children and teenagers of eight age groups (2-<3, 3-<4, 4-<5, 5-<6, 6-<9, 9-<12, 12-<15, and 15-<18) in Beijing, China by Monte Carlo simulation approach. The main findings are as follows: lead exposure in children aged 2-<3 years exceeds the exposure dose (0.3 μg·kg-1·d-1) of 0.5 point reduction in intelligence quotient. Moreover, children aged 2-<3 and 6-<9 years have relatively high non-carcinogenic risk (NCR) of 1.32 and 1.30, respectively. The carcinogenic risk (CR) for children aged 6-<9 and 9-<12 years is 2.73×10-6 and 2.39×10-6, respectively. Specifically, the contributions of oral ingestion, dermal contact, and inhalation to the NCR were 69.5%, 18.9%, and 11.6%, respectively. Moreover, the combined NCR contributions of copper, cadmium, mercury, and arsenic (As) were about 69.4%. The contributions of the above three routes to the CR were 93.4%, 4.1%, and 2.5%, in that order, with the largest CR contribution of As being about 92.0%. This study can provide new ideas for accurately assessing the exposure and health risks of HMs in the population, and we believe that it is necessary to update the national standards for food and soil based on the bioavailability of HMs.

Abstract
Arsenic (As) is easily accumulated in wild Boletus. However, the accurate health risks and adverse effects of As on humans were largely unknown. In this study, we analyzed the total concentration, bioavailability, and speciation of As in dried wild boletus from some typical high geochemical background areas using an in vitro digestion/Caco-2 model. The health risk assessment, enterotoxicity, and risk prevention strategy after consumption of As-contaminated wild Boletus were further investigated. The results showed that the average concentration of As was 3.41-95.87 mg/kg dw, being 1.29-56.3 folds of the Chinese food safety standard limit. DMA and MMA were the dominant chemical forms in raw and cooked boletus, while their total (3.76-281 mg/kg) and bioaccessible (0.69-153 mg/kg) concentrations decreased to 0.05-9.27 mg/kg and 0.01-2.38 mg/kg after cooking. The EDI value of total As was higher than the WHO/FAO limit value, while the bioaccessible or bioavailable EDI suggested no health risks. However, the intestinal extracts of raw wild boletus triggered cytotoxicity, inflammation, cell apoptosis, and DNA damage in Caco-2 cells, indicating existing health risk assessment models based on total, bioaccessible, or bioavailable As may be not accurate enough. Given that, the bioavailability, species, and cytotoxicity should be systematically considered in accurate risk assessment. In addition, cooking mitigated the enterotoxicity along with decreasing the total and bioavailable DMA and MMA in wild boletus, suggesting that cooking could be a simple and effective way to decrease the health risks of consumption of As-contaminated wild boletus.

In this work, the total content of seven metallic elements (Fe, Cu, Zn, Mg, Pb, Ni, and Co) in common edible herbs was determined and related to their bioaccessibility by an in vitro human digestion model. Specifically, the unified bioaccessibility protocol developed by the BioAccessibility Research Group of Europe (BARGE) was used to determine the release of each element during gastric and gastrointestinal digestion. The results show that Fe, Zn, and Mg are released during gastric digestion (34-57% Fe, 28-80% Zn, 79-95% Mg), but their overall bioaccessibility is reduced in the gastrointestinal tract (<30%). On the contrary, Cu is more bioaccessible during gastrointestinal digestion (38-60%). Pb, Ni, and Co exhibited similar bioaccessibility in both gastric and gastrointestinal fluids. Principle component analysis of the data shows that the classification of the nutritional value of herbs differs between the total and the gastrointestinal concentration, suggesting that the total concentration alone is not an adequate indicator for drawing secure conclusions concerning the nutritional benefits of edible plant species.

Abstract
The source apportionment and transfer of Pb in a paddy soil-rice-human system within the Jiulong River Basin in southeast China was investigated by analyzing (1) the chemical fractionation of Pb in paddy soils using a modified BCR four-step sequential extraction procedure, and (2) the bioaccessibility of Pb in both paddy soils and rice grains using a Simple Bioaccessibility Extraction Test method. In addition, a qualitative Pb isotopic model was used in combination with IsoSource software to quantify the contribution of potential Pb sources. The results show the enrichment of Pb in agro-ecosystems in the Jiulong River Basin. Contaminant Pb in paddy soils was mainly present in the reducible (42.9%) and the residual fractions (27.1%). The average bioaccessibility of Pb in rice grains was significantly higher than that in paddy soil, with values of 77.85% and 37.44%, respectively. Lead in paddy soils was primarily derived from agricultural (35.3%), natural (25.5%), industrial (24.5%) and coal combustion sources (14.7%), while Pb in rice grains was primarily derived from coal combustion (54.1%), agricultural (35.1%), industrial (6.0%) and natural sources (4.8%). The bioaccessible Pb was mainly derived from anthropogenic sources [agricultural (42.3% for soil and 25.3% for grain) and coal combustion sources (25.3% for soil and 59.3% for grain)]. Lead isotopic ratios are an effective tracer of Pb transfer from potential sources to rice plants and within the rice plants. Rice plants absorb Pb from the soil and the atmosphere through the roots and leaves, respectively. Most of the Pb was accumulated in roots. The integrated use of chemical fractionation, bioaccessibility and Pb isotopic data provides an effective method to study the source apportionment and transfer characteristics of Pb in paddy soil-rice-human systems.

Abstract
Humans are mainly exposed to cadmium (Cd) due to the rice consumption, however there exist considerable differences across rice cultivars in terms of Cd absorption and accumulation in the grains, and subsequent release after digestion (bioaccessibility), as well as uptake by Caco-2 cells of humans (bioavailability). This study comprised of field and lab simulation trials where in the field, firstly 39 mid-rice cultivars were screened for their phytoremediation potential coupled with safe production in relation to uptake and translocation of Cd. Lower Cd concentrations (˂0.2 mg kg-1) in polished rice of 74 % cultivars were ascribed to the increased root to straw translocation indicating that straw may acquire higher accumulation of Cd. Furthermore, the ionomic profile demonstrated that the spatial distribution of metals in different rice organs corresponds to the plant growth morphology. In the second year, in vitro-in vivo assay model was employed to assess the bioaccessibility and bioavailability of Cd in polished rice and to further estimate the daily Cd intake by humans through rice grains. The results of bioaccessibility and bioavailability assays and daily estimated Cd intake presented the corresponding values of 39.02-59.76 %, 8.69-24.26 %, and 0.0185-0.9713 μg kg-1 body weight day-1, respectively. There exists a strong connection between total Cd and bioaccessible Cd to humans (R2 = 0.94, P < 0.01). Polynomial fitting (R2 = 0.91, P < 0.01) showed a better statistically significant correlation between total Cd contents and bioavailable levels, suggesting that in vitro-in vivo assays should be considered in future studies. The results of field experiments and in vitro-in vivo assays recommended the Tianyouhuazhan (MR-29), Heliangyou1hao (MR-17), and Yongyou15 (MR-1) as suitable mid-rice cultivars for the phytoremediation of slightly Cd contaminated soils coupled with rice agro-production due to their high nutritional value and low total and bioavailable Cd for human.

Abstract
Effect of different fermentation methods on heavy metal bioaccessibilities in wheat flour is undetermined. In this work, gastric and gastrointestinal heavy metal bioaccessibility in wheat flour products (control-wheat dough, T1-mantou made with normally fermented dough, T2-mantou made with over-fermented dough and T3-mantou made with over-fermented dough + Na2CO3) made from two wheat flour samples (NX and QD) was assessed via a modified physiologically-based extraction test. Cadmium, Zn and Mn bioaccessibility in the gastric phase (GP) was greater than in the gastrointestinal phase (GIP), yet the opposite was observed for Cu (p < 0.05). Lead bioaccessibility in the GIP of the QD sample was 1.37-4.08 times greater than that in the GP, while only the control had greater bioaccessibility in the GIP than that in the GP (p < 0.05) for the NX sample. Treatments T2 and T3 had greater Cd, Cu, Zn and Mn bioaccessibilities than the control and T1 in the GP (p < 0.05). In the GIP, however, only T3 had greater Mn bioaccessibility than the control for the NX sample. Enhanced degradation of the heavy metal-phytate following over-fermentation may have led to greater heavy metal bioaccessibility. Results should help food processors reduce human absorption of excessive heavy metals present in wheat flour foods.

Abstract
A variety of important major and trace elements may competitively inhibit cadmium (Cd) absorption in human cells and reduce Cd toxicity. However, the impact of essential elements on the cytotoxicity of metals can be difficult to quantify and anticipate. Cd acute toxicity to Caco-2 cell viability was studied in culture solutions and modeled by a biotic ligand model (BLM). The individual effects of the cations potassium (K+), calcium (Ca2+), magnesium (Mg2+), ferrous ion(Fe2+), zinc (Zn2+) and manganese (Mn2+) on Cd toxicity were also investigated. The results indicated that the toxicity of Cd in culture solutions to cell viability declined with increasing concentrations of Zn2+ and Mn2+ in the solutions, while K+, Ca2 +, Mg2 + and Fe2+ had no significant effect. Using the BLM, the stability constants for the binding of Cd2 +, Zn2+, and Mn2+ to biotic ligands were determined to be logKCdBL = 5.76, logKZnBL = 4.39 and logKMnBL = 5.31, respectively. Moreover, it was calculated that 51% occupancy of the biotic ligand sites for Cd by Cd was required to cause a 50% reduction in Caco-2 cell viability. A BLM was successfully established using the estimated constants to predict the Cd cytotoxicity to Caco-2 cell viability as a function of solution characteristics, so that the effective concentrations that reduced cell viability by 50% (EC50) could be predicted by the BLM within 1.6 fold changes of the observed EC50. The application's viability and precision for foretelling Cd toxicity in Caco-2 cells are discussed.

Abstract
The contamination of cadmium (Cd) in agro-products causes major concern because of its potential dietary risks. In this study, a total of 647 pepper samples from 21 provinces in China were randomly collected according to the distribution of pepper production. Cd pollution levels in Chinses pepper and its health risks were evaluated based on bioaccessibility, which was measured by the physiologically based extraction test (PBET). The results showed that Cd concentration in all pepper ranged from 0.002 to 1.470 mg/kg, with an average of 0.222 mg/kg and a median of 0.132 mg/kg. The highest daily intake of Cd was observed in the female child group (4.037 × 10-5 mg/kg bw/day), which accounted for 4% of the maximum daily permissible dose - 0.001 mg/kg bw/day. The target hazard quotients of Cd were all lower than 1, indicating low potential non-carcinogenic health risks to residents via the consumption of pepper. Notably, carcinogenic risk values suggested potential adverse health effects to adults, while after considering the bioaccessibility of Cd in pepper (mean of 43.07%), those values had fallen under the acceptable level (1 × 10-4). This may indicate that dietary risk assessment of heavy metals in crops could not be conducted just based on their content; the bioaccessibility of metals is also an important factor for consideration.

Abstract
Although hydroxyapatite (HAP) can prominently lower Cd uptake by celery from Cd-polluted soil, its high application rates in reality may lead to high cost and potential environmental risk. Therefore, we aimed to clarify whether combined amendments of HAP and another low-cost material (hydrated lime, corn straw-derived biochar, or zeolite) with reduced application rate of each single amendment could significantly decrease Cd transfer in soil-celery-human system without side effect on celery growth through a pot experiment. Results revealed that adding biochar, HAP, zeolite, or combined amendments had no obvious side effect on celery growth, while adding 0.3% hydrated lime significantly decreased fresh edible celery yield by 69.0%. Conversely, adding 0.5% HAP + 0.05% hydrated lime increased fresh edible celery yield by 39.8%. Additionally, adding HAP, zeolite, or hydrated lime rather than adding biochar effectively decreased total and bioaccessible Cd in edible celery. Similarly, HAP + hydrated lime and HAP + zeolite were much more efficient than HAP + biochar in lowering Cd transfer in soil-celery-human system. The total and bioaccessible Cd in edible celery were even reduced by over 50.0% after adding HAP + hydrated lime or HAP + zeolite at low rates. Considering the effects on celery growth and Cd transfer, HAP + hydrated lime and HAP + zeolite have the potential in remediating soil Cd contamination.

Abstract
BackgroundHeavy metal(loid)s are frequently detected in vegetables posing potential human health risks, especially for those grown around mining areas. However, the oral bioaccessibility and gingival cytotoxicity of heavy metals in wild vegetables remain unclear.MethodsIn this study, we assessed the total and bioaccessible Cr, As, Cd, Pb, and Ni in four wild vegetables from mining areas in Southwest China. In addition, the cytotoxicity and underlying mechanisms of vegetable saliva extracts on human gingival epithelial cells (HGEC) were studied.ResultsThe Plantago asiatica L. (PAL) showed the highest bioaccessible Cr, As, Cd, and Pb, while the greatest bioaccessible Ni was in Taraxacum mongolicum (TMM). The Pteridium aquilinum (PAM), Chenopodium album L. (CAL), and TMM extracts decreased cell viability, induced apoptosis, caused DNA damage, and disrupted associated gene expressions. However, PAL extracts which have the highest bioaccessible heavy metals did not present adverse effects on HGEC, which may be due to its inhibition of apoptosis by upregulating p53 and Bcl-2.ConclusionOur results indicated that polluted vegetable intake caused toxic effects on human gingiva. The heavy metals in vegetables were not positively related to human health risks. Collectively, both bioaccessibility and toxic data should be considered for accurate risk assessment.

Abstract
Concerns have been raised regarding toxic-element (arsenic, cadmium, lead, and mercury) contamination of commercially available infant foods around the world. Young children are vulnerable to the effects of toxic elements, based on higher absorption levels and potentially poorer detoxification capacities. Toxic-element exposures in early life exact high societal costs, but it is unclear how much dietary exposure to these elements contributes to adverse health outcomes. Well-designed epidemiological studies conducted in different geographical and socioeconomic contexts need to estimate dietary toxicant exposure in young children and to determine whether causal links exist between toxicants in children's diets and health outcomes. This commentary outlines the methodological considerations and data needs to advance such research.

Abstract
Accumulation and concomitant risk of metals in plastic-shed soil (PSS)-vegetable system around industrial areas have attracted growing public concern recently, while limited studies have focused on human bioaccessible metals in various plastic-shed vegetables and health risk calculated using bioaccessible metals. Previous studies showed that intensive farming and industrial activities could prominently affect metal migration from PSS to vegetables via altering PSS pH, total and bioavailable metal contents. In contrast, whether changes in PSS pH and metal contents control bioaccessible metals in vegetables and health risk is still unknown. For PSS management and sustainable plastic-shed vegetable production in the areas with rapid industrialization, 41 PSS and 32 plastic-shed vegetable samples were sampled from the industrial areas of Yangtze River Delta, China to systematically clarify the specific connections among anthropogenic activities, soil pH and metal contents, and metal transfer and health risk in PSS-vegetable-human system. The results indicated that Cr and Cd contents in 15.6% and 9.38% of vegetable samples exceeded the allowable limits in China. Tolerable cancer risk existed and was mainly induced by bioaccessible Cr in vegetables. Decreased PSS pH mainly caused by heavy use of nitrogen fertilizers increased bioavailable Ni, Cd, Zn, Pb, and Cu in PSS and subsequently enhanced their total and bioaccessible contents in vegetables. Prominent Cr accumulation in PSS induced by industrial wastewater irrigation exacerbated Cr uptake by vegetables, which increased bioaccessible Cr in vegetables and contributed greatly to cancer risk. To reduce transfer and health risk especially of Cd and Cr in the food chain, some appropriate measures related to source control and remediation should be proposed for preventing and mitigating PSS acidification and Cr accumulation.

Abstract
Previous studies have focused on total cadmium (Cd) accumulation in rice or its transformation in soil, but only a few have examined the entire soil-rice-human system. This study investigated the Cd bioaccessibility and bioavailability for humans from grains of early rice cultivars grown in a Cd-polluted field and further combined with multi-traits to discover and evaluate the optimum safe production and phytoremediation potential cultivars. The results revealed that Cd concentration in polished rice was <0.20 mg kg-1 in 79 % of early rice cultivars, implying that Cd levels in rice might be reduced by cultivar selection. Furthermore, the higher values of root to straw translocation factor indicates the maximal accumulation of Cd in straw and with highest soil to straw accumulation factor (>1.0) in 66.67 % of cultivars. However, bioaccessibility and bioavailability varied greatly among cultivars with corresponding values ranging from 5.68 to 7.67 % and 1.87 to 5.71 ng g-1, respectively. Despite the fact that polynomial fitting revealed a statistically significant relationship between Cd content in polished rice and bioavailable Cd in humans (R2 = 0.718, P = 0.025), poor goodness of fit for bioaccessibility, bioavailability, and toxicity varied even within low-Cd accumulating cultivars. As a result of multi trait analysis and bioavailability, Zhuliangyou4024 (ER-9), Lingliangyou211 (ER-3), and Yonxian15 (ER-28) were found to be the three best early rice cultivars with higher essential nutrients, less total and bioavailable Cd, and relative high phytoremediation potential and are suitable for healthy rice production and soil remediation.

Abstract
The bioaccessibility and bioavailability of different cadmium (Cd) levels (low: 7.31 mg/kg, medium: 24.20 mg/kg, high: 41.64 mg/kg) in Boletus griseus were evaluated by establishing a bionic digestive system in vitro. The results showed that the bioaccessibility of high Cd level by gastrointestinal digestion was significantly higher than other two levels. Further, colonic digestion significantly increased the bioaccessibilities of low Cd level (p < 0.05). After intestinal flora fermentation, the bioaccessibilities of different Cd levels significantly decreased (p < 0.05), and high and medium Cd levels had no significant difference (p > 0.05). A Caco-2 monolayer cell model was established to evaluate the bioavailability of Cd. The bioavailabilities of low and high Cd levels by gastrointestinal digestion were 8.75 and 10.58%, and the bioavailabilities increased by 38.17% and 5.20% after colonic digestion, respectively. Furthermore, Cd could affect diversity, composition, and balance of intestinal flora, and the relative abundances of several genera were correlation with Cd levels in B. griseus.

Abstract
The incorporation of sustainable protein sources in animal feeding is a growing trend. So far, no study has investigated in vitro digestion of meat, from broilers fed microalgae, in a human model. This research aimed to evaluate the effect of incorporating Chlorella vulgaris in the broilers diet on human protein digestibility, and mineral bioaccessibility. The study used 240 male Ross 308 broilers randomly allocated to groups fed a control diet or a diet where soybean meal was replaced with 10% (CV10%), 15% (CV15%), or 20% (CV15%) of C. vulgaris for 40 days. The microalga supplementation increased the protein and lowered the fat content in the muscle. Results on the percentages of amino acids highlighted that arginine and threonine proportions increased and lysine and cysteine proportions decreased with microalga inclusion. CV15% and CV20% meat had higher amount of K, Ca, Mg, P, and Fe in raw breasts, improving the nutrient composition of the meat. Cooking caused a decrease in Na and K and an increase in other minerals. CV20% had higher bioaccessibility of K, Ca, Mg, P, and Mg, compared to the control. Replacing soybean meal in broiler feed with higher concentrations of C. vugaris could improve the digestibility of meat protein and minerals.

Abstract
Rice is a recognized source of cadmium (Cd) exposure. In this study, a total of 102 rice samples were obtained from main producing rice regions of China, and the bioavailability of Cd in rice were assessed by using an in vitro digestion method combined with a Caco-2 cell monolayer model. The results revealed that the average (range of) concentration of Cd in the rice samples was 0.2840 (0.0123-2.4710) mg/kg, and the average (range of) bioavailability of Cd in the rice samples was 23.94% (7.47-39.73%). We analyzed the recent rice consumption data and calculated the target hazard quotients (THQs) to evaluate the noncarcinogenic health risk of Cd in rice consumption for adults and children, respectively. We suggested that the most of investigated regions showed low risks of Cd in rice for general population, and the regions of Cd in rice near the limit deserves might be attracted more attention after taking bioavailability into account. PRACTICAL APPLICATION: The cadmium content of rice itself will affect its corresponding bioavailability to a certain extent. By studying the in vitro bioavailability of cadmium rice with different pollution levels, it is helpful for the dose selection of animal experiments or toxicity tests, and finally, we may provide some references for the establishment of appropriate treatment scheme of rice Cd poisoning.

Abstract
In the present study, the oral bioavailability of cadmium (Cd) in earthworms and leeches was investigated through in vitro physiologically based extraction test (PBET) digestion/Caco2 and MDKC cell models. We are the first to create an innovative assessment strategy which has capacity to offer a more precise evaluation of Cd-associated health risks in traditional animal medicines (TAMs), by combinational usage of bioavailable Cd levels, the duration and frequency of the exposure to TAMs obtained by questionnaire data, as well as safety factor of TAMs. Our data showed that the percentage of bioavailability for Caco-2 cells in earthworms and leeches ranged from 3.29 to 14.17% and 4.32 to 12.61%, respectively. The percentage of bioavailability of MDCK cells in earthworms and leeches ranged from 4.83 to 15.74% and 6.53 to 15.04%, respectively. After adjusting by the bioavailability of Cd to target hazard quotient (THQ), excitingly, our findings manifested that the health risks induced by the ingestion of earthworms and leeches were acceptable in the clinic. Our key findings suggest that bioavailability characterization cannot be ruled out and health risks should be assessed on the basis of the bioavailable Cd levels rather than total levels. Our novel strategy provides insight into the bio-accumulation of Cd in organisms as well as a more realistic and accurate assessment of Cd-associated health risks in TAMs, with the main purpose of improving public health by scientifically using TAMs.

Abstract
In French Guiana were detected high lead (Pb) levels in blood of Amerindian people. Lead exposure is a serious hazard that can affect the cognitive and behavior development. People can be exposed to Pb through occupational and environmental sources. Fingerprinting based on stable Pb isotopes in environmental media is often used to trace natural and anthropogenic sources but is rarely paired with blood data. The objective of this study was to determine the main factors associated with high Blood Lead Levels (BLL). Soil, manioc tubers, food bowls, beverages, wild games, lead pellets and children blood were sampled in small villages along the Oyapock River. children BLL ranged between 5.7 and 35 µg dL-1, all exceeding 5 µg dL-1, the reference value proposed in epidemiologic studies for lead poisoning. Among the different dietary sources, manioc tubers and large game contained elevated Pb concentrations while manioc-based dishes were diluted. The isotopes ratios (207Pb/206Pb and 208Pb/206Pb) of children blood overlapped these of lead shots and meals. These first results confirm for the first time, the diary consumption of manioc-based food as the main contributor to Amerindian children's BLL in French Guiana, but don't exclude the occasional exposure to lead bullets by hunting activities. This is a specific health concern, since previous studies have shown that these same villagers present high levels of mercury (Hg). These communities are indeed subject to a double exposure to neurotoxic metals, Hg and Pb, both through their diet. The farming activity is based on manioc growing, and explaining that this ancestral practice can induce serious health risks for the child's development may seriously affect their food balance and cultural cohesion.

Abstract
The correlation of in vitro and in vivo assays for determining bioavailable Cd amounts in vegetables is limited. Herein, the correlations between Cd relative bioavailability (Cd-RBA) in rat models and Cd bioaccessibility in four in vitro assays were examined in vegetables. Results showed that the combined liver plus kidney data provided the appropriate endpoint and was used as a biomarker to estimate Cd-RBA. The Cd-RBA was negatively correlated with the mole ratio of Ca/Cd and Fe/Cd in vegetables. Strong in vivo-in vitro correlations were found from physiologically based extraction test (PBET) and in vitro gastrointestinal (IVG) (R2 = 0.66-0.69). We concluded that PBET and IVG were optimal models for Cd-RBA determination in vegetables. The nutritional elements in the vegetables could affect Cd absorption. Furthermore, the Cd bioavailability in vegetables should be considered because risk estimates solely based on the total Cd concentration in vegetables would overestimate Cd intake.

Abstract
The critical health risks caused by cadmium (Cd) via dietary exposure are commonly assessed by detecting Cd concentrations in foods. Differently, in this study, the bioaccessibility and bioavailability of Cd in major local harvests were introduced to assess the dietary exposure of local residents from a high-level environmental Cd region. The results indicated that certain Cd was released into the digestive juice after in vitro digestion with a bioaccessibility of 20-63% for rice and 3-32% for leafy vegetables, and the released portion was partially absorbed by Caco-2 cells with a bioavailability of 2-21% for rice and 0.2-13% for leafy vegetables. The results obtained from the toxicokinetic model revealed that the predicted urinary Cd values from the estimated daily intake (EDI) of Cd, which accounted for bioaccessibility and bioavailability, were consistent with the actual measured values, and the EDIs were considerably lower than the acceptable daily intake. This suggests that the bioaccessibility and bioavailability adjusted dietary Cd exposure should be more precise. The key issues addressed in our study implores that a potential health risk cannot be neglected in people with high consumption of rice from high-level zone.

Abstract
Cadmium (Cd) is a widespread heavy metal pollutant in the environment that damages human health. In this study, the bioaccessibility and bioavailability of Cd in different Cd-contaminated rice (low pollution level cadmium rice (Rice-L, 0.111 mg/kg), medium pollution level cadmium rice (Rice-M, 0.400 mg/kg), and high pollution level cadmium rice (Rice-H, 0.655 mg/kg)) were estimated and determined by an in vitro digestion model Rijksinstituut voor volksgezondheiden milieu (RIVM), Caco-2 cell model, and mouse model. The results indicated that Cd in the oral cavity (15.65-28.28%) displayed the lowest bioaccessibility comparing with small intestine (90.04-94.73%) and the stomach (99.30-100.70%) in vitro after cooking. In addition, the results showed that the bioaccessibility of Cd in CdCl2 , CdCl2 +normal rice (Rice-N), Rice-H, Rice-M, Rice-L group were 99.29%, 92.57%, 90.04%, 94.73%, and 91.11%, respectively; the in vitro bioavailability of Cd in CdCl2 , CdCl2 +Rice-N, Rice-H, Rice-M, and Rice-L group were 27.50%, 20.78%, 21.90%, 26.90%, 36.46%, respectively, we found that the group of CdCl2 is significantly higher than CdCl2 +Rice-N and Rice-H (p < 0.05), while the targets hazard quotient (THQ) value of rice ingested without considering the in vitro bioavailability is 2.7-4.6 times than the THQ value with considered and the relative bioavailability (RBA) of Cd in Rice-L, Rice-M, Rice-H are 80.25%, 64.32%, and 60.91%, respectively. These results indicate that the rice substrate has impact on the bioaccessibility and bioavailability of Cd, and might overestimate the health risks of Cd if bioavailability was not considered. PRACTICAL APPLICATION: Studying the bioaccessibility and bioavailability of cadmium in rice is a promising strategy to obtain a more accurate human health risk assessment of cadmium exposure in rice, as well as provide a theoretical basis for the formulation of cadmium limit standard in grain, which was also conducive to the rational and full utilization of rice resources in China.

Abstract
In this study, the intestinal permeability of metal(loid)s (MLs) such as arsenic (As), cadmium (Cd), lead (Pb) and mercury (Hg) was examined, as influenced by gut microbes and chelating agents using an in vitro gastrointestinal/Caco-2 cell intestinal epithelium model. The results showed that in the presence of gut microbes or chelating agents, there was a significant decrease in the permeability of MLs (As-7.5%, Cd-6.3%, Pb-7.9% and Hg-8.2%) as measured by apparent permeability coefficient value (Papp), with differences in ML retention and complexation amongst the chelants and the gut microbes. The decrease in ML permeability varied amongst the MLs. Chelating agents reduce intestinal absorption of MLs by forming complexes thereby making them less permeable. In the case of gut bacteria, the decrease in the intestinal permeability of MLs may be associated to a direct protection of the intestinal barrier against the MLs or indirect intestinal ML sequestration by the gut bacteria through adsorption on bacterial surface. Thus, both gut microbes and chelating agents can be used to decrease the intestinal permeability of MLs, thereby mitigating their toxicity.

Abstract
Green leafy vegetables are economical and nutritious, but they may be contaminated with heavy metals. In this study, we assessed the total and bioaccessible concentrations of As, Cd, Pb and Cr in a popular vegetable cabbage (Brassica oleracea) from four major producing cities in Yunnan, Southwest China. With the mean concentrations of As, Cd, Pb and Cr being 0.24, 0.20, 0.32 and 1.28 mg kg-1, the As, Cd and Pb concentrations were within the limits of 0.2-0.5 mg kg-1 based on Chinese National Standards and the WHO/FAO, but Cr concentration was 2.6-times greater than the limit of 0.5 mg kg-1. Based on an in vitro bioaccessibility assay of the Solubility Bioaccessibility Research Consortium (SBRC), As bioaccessibility was the lowest at 11% while those of Cd, Pb and Cr were much greater at 68-87%. The estimated daily intake (EDI) of metals through cabbage ingestion was similar for children and adults. Among the four metals, only Cr's EDI at 2.29-1.87 exceeded 1 based on total and bioaccessible concentrations. The high Cr concentration at 1.28 mg kg-1 coupled with its high bioaccessibility at 67.5% makes Cr of concern in cabbage. However, human gastrointestinal cells exposed to the gastric digesta with high bioaccessible heavy metals and risky EDI, showed no obvious cytotoxicity, indicating that existing models based on total or bioaccessible heavy metals may overestimate their human health risk. Taken together, to accurately assess the human health risk of heavy metals in cabbage, both total/bioaccessible concentrations and the gastrointestinal cell responses should be considered.

Abstract
Smelting activities are an important source of heavy metals in soil. More seriously, oral ingestion of crops growing in contaminated soil potentially cause harmful effects on human health. The main purpose of this study is to apply the in vitro model (PBET) and Monte Carlo Simulation (MSC) to the health risk assessment process in order to more accurately and realistically evaluate health risks of residents eating contaminated potato. Results indicated in the raw and cooked potato, the bioaccessibility of Pb was 65.9% and 74.5%, and that of Cd was 79.6% and 61.7%, respectively. Additionally, the bioaccessible hazard quotient (BHQ) was less than the permitted level except for the BHQ of Pb for children. This indicated there wasn't potential non-carcinogenic risk for most potato-consumers but the dietary exposure risk for local children cannot be neglected. Sensitivity analysis showed that the bioaccessibility and ingestion rate appeared decisive with respect to potentially deleterious health effects.

Abstract
Rice, a staple food for half the world's population, easily accumulates arsenic (As). Research on As distribution in rice protein and starch and its relationship with rice As bioaccessibility remains limited. This study investigated As distribution, chemical composition, As bioaccessibility and speciation in rice by continuous extraction and in vitro digestion. Of the total As, 87.5-94.5% was in rice protein and 5.0-9.8% in rice starch. The As amount in different protein fractions decreased as follows: glutelin > globulin > albumin > prolamin. As(V), As(III) and DMA in rice were more bioaccessible in the small intestinal phase than the gastric phase, and almost all As(V) dissolved in the small intestinal phase. Bioaccessible As in gastrointestinal digestive solution and As mass in protein fractions (albumin, globulin, and glutelin) were significantly positively correlated (p < 0.05). These results illuminate the bioaccessibility of As to humans consuming As-contaminated rice and avoid overassessment.

Abstract
Perchlorate, a persistent pollutant, interferes with iodine uptake by the thyroid. Perchlorate exposure mainly occurs through ingested food; understanding the bioaccessibility and bioavailability of perchlorate in foods facilitate more accurate human health risk assessments. An in vitro digestion/Caco-2 cell model was used for this research. The bioaccessibility of perchlorate in the control group, lettuce, rice and formula was 93.45%, 70.14%, 70.25%, and 63.68%, respectively. The bioavailability of perchlorate was as follows: control group, 43.45%; rice, 37.17%; lettuce, 35.13%; and formula, 30.72%. The absorptive apparent permeability coefficient (Papp) of the control, lettuce, rice, and formula was 30-101 nm/s, 32-65 nm/s, 54-161 nm/s, and 41-88 nm/s, respectively. The results suggested that the risk from perchlorate was overestimated only when considering the content of perchlorate in foods and that the presence of food matrices reduced perchlorate bioavailability by differing degrees.

Abstract
Soil is considered as a sink for heavy metals. Human health is severely affected by the continuous intake of toxic heavy metals even in a very low concentration. In the present experiment, we determined the influence of nutritional status including control (fasted condition), glucose (fed state), plant protein (fed state), animal protein (fed state) and calcium (fed state) on soil cadmium (Cd) and copper (Cu) bioaccessibility using physiologically-based extraction test (PBET) method together with simulator of the human intestinal microbial ecosystem (SHIME) model. The bioaccessibility of Cd was 1.06-73.58%, 0.44-54.79% and 0-17.78% and Cu was 3.81-67.32%, 4.98-71.14%, and 0-17.54% in the phase-I, phase-II and Phase-III respectively (in this study gastric phase, small intestinal phase and colon phase were considered as phase-I, phase-II and Phase-III respectively). The outcomes showed that, the average Cd bioaccessibility was higher with animal protein addition compared with other treatments in different phases. So, the effect of animal protein on Cd bioaccessibility was higher than other treatments in the phase-I, phase-II and phase-III. Due to the addition of plant protein, the higher average bioaccessibility of Cu was noticed in phase-I and phase-II in comparison to other treatments. However, in phase-III, the higher average bioaccessibility of Cu was found due to control treatment comparing with other treatments. Therefore, the influence of plant protein was higher than other nutrients on Cu bioaccessibility in the phase-I and phase-II. Moreover, other nutrients showed variable influence on Cd and Cu bioaccessibility. So, nutritional status has a significant effect on bioaccessibility as well as human health risk assessment.

Abstract
The determination of mycotoxins content in food is not sufficient for the prediction of their potential in vivo cytotoxicity because it does not reflect their bioavailability and mutual interactions within complex matrices, which may significantly alter the toxic effects. Moreover, many mycotoxins undergo biotransformation and metabolization during the intestinal absorption process. Biotransformation is predominantly the conversion of mycotoxins meditated by cytochrome P450 and other enzymes. This should transform the toxins to nontoxic metabolites but it may possibly result in unexpectedly high toxicity. Therefore, the verification of biotransformation and bioavailability provides valuable information to correctly interpret occurrence data and biomonitoring results. Among all of the methods available, the in vitro models using monolayer formed by epithelial cells from the human colon (Caco-2 cell) have been extensively used for evaluating the permeability, bioavailability, intestinal transport, and metabolism of toxic and biologically active compounds. Here, the strengths and limitations of both in vivo and in vitro techniques used to determine bioavailability are reviewed, along with current detailed data about biotransformation of mycotoxins. Furthermore, the molecular mechanism of mycotoxin effects is also discussed regarding the disorder of intestinal barrier integrity induced by mycotoxins.

Abstract
Cadmium (Cd) contamination in rice grain is common worldwide. This study investigated the effect of degree of milling (DM) on the reduction of Cd in cooked rice grain and porridge (rice-to-water ratios 1:1.6 and 1:10, respectively) and Cd in vitro bioaccessibility. Cd-contaminated rice grains with DMs of 20%, 15%, and 0% were cooked and then subjected to successive digestion in a gastrointestinal environment model. Simulated-digestion juices, including saliva, gastric juice, duodenal juice, and bile juice, were used. The degree of gelatinization of cooked rice was measured and the morphological characteristics of the grain were also examined. The results showed that the Cd in vitro bioaccessibility, although less than 50% in all samples, was gradually increased with an increase of DM. The detected Cd bioaccessibility was higher at half meals (reduced grain content) when compared with full meals (full grain content). As DM increased, the surface of cooked rice grain and porridge became smoother, and the amount of fiber, fat droplets, and starch granules were gradually decreased, whereas degree of gelatinization increased. The results indicate that DM affects the Cd in vitro bioaccessibility in cooked rice by altering the gelatinization of starch. PRACTICAL APPLICATION: Degree of milling (DM) significantly influenced the in vitro bioaccessibility of cadmium (Cd) in cooked rice. This work may offer a potential solution to the rice grain with high Cd content because a limited DM will allow a low bioaccessibility of Cd.

Abstract
Bioaccessibility study is of great significance to the health risk assessment of trace elements in the seafood. In this work, the most consumed crab (Portunus trituberculatus) in coastal area of Shandong, China was analyzed to study the distribution and the bioaccessibility of cadmium (Cd) in the edible tissues of crab, and the dietary risk from consumption of crab was also evaluated. Results showed that the content of Cd in the whole edible tissues of 109 crab specimens ranged from 0.052 to 8.89 mg/kg ww (wet weight) with mean of 2.26 mg/kg ww. The Cd content in 85% of the crab samples was higher than the national food safety limits (0.5 mg/kg ww) of China. The gender study indicated that there was no significant difference in Cd content in total edible tissues between the males and females (p > 0.05). Cadmium was highly concentrated in the brown meat with mean value of 4.13 mg/kg ww, which was about 5 times higher than that in the white meat (0.75 mg/kg ww). The bioaccessibility of Cd ranged from 48.1 to 71.0% in the white and brown meat. The risk assessment based on the bioaccessibility of Cd revealed that the consumption of the edible crab brown and white meat for adults should be limited in 0.13 kg and 1.56 kg per week respectively.

Abstract
Trace elements such as selenium (Se) and zinc (Zn) are essential elements in the human body, while cadmium (Cd) has no physiological function. A high proportion of people consume dietary supplements to enhance the performance of the body or alter the nutrient contents within the body. Therefore, this study was conducted to evaluate the interaction effects of several popular dietary supplements on the bioaccessibility of Se, Zn and Cd in rice with the hope of identifying dietary supplements that can increase rice Se and Zn bioaccessibility but decrease rice Cd bioaccessibility. The results from in vitro gastrointestinal simulation tests showed that the bioaccessibility of these elements in rice was in the order of Cd (52.07%) > Zn (36.63%) > Se (10.19%) during the gastric phase and Zn (26.82%) > Cd (18.72%) > Se (14.70%) during the intestinal phase. The bioaccessibility of Se during the intestinal phase was greater than that during the gastric phase, and the bioaccessibility of Zn and Cd were the opposite. The bioaccessibility of Se significantly increased in response to vitamin C (VC), vitamin E (VE), vitamin B6 (VB6) and vitamin B9 (VB9), especially VC, which also increased the bioaccessibility of Zn and decreased that of Cd. Procyanidins (OPC), methionine (Met) and coenzyme Q10 (Q10) significantly reduced the bioaccessibility of Se. These results suggest that the reasonable use of dietary supplements can effectively regulate the in vivo contents of trace elements, which provide valuable information for developing health interventions to address problems for specific people, especially selenium-deficient people.

Abstract
Commercial mineral clays that claim to have healing properties are also known to contain trace amounts of heavy metals, albeit the risk of consuming many of them is not entirely known. The primary objective of this study was to evaluate the in vitro bioaccessibility and bioavailability of Arsenic (As), Cadmium (Cd) and Lead (Pb) in mineral clay samples collected from the Sierra Mountains (USA) using the Unified Bioaccessibility Research Group of Europe (UBM) method and the Caco-2 permeability assay, respectively. After UMB-gastric (UBM-G) digestion, As and Pb bioaccessibility were lower compared to Cd and decreased further in the UMB-gastrointestinal (UBM-GI) assay. Bioavailability estimates using the Caco-2 cell showed very low to non-detectable permeability for all 3 heavy metals. Thus, while initial heavy metal ranged from 3.8–17 ppm, 0.024–0.061ppm, and 5.8–20 ppm for As, Cd, and Pb, respectively, the bioavailability for these metals was reduced to very low levels that followed: non-detectable values of As, <0.007ppm of Cd, and <0.1ppm of Pb. Using UBM-digestion to mimic bioaccessibility, followed by Caco-2 cell bioavailability enabled us to conclude that in vitro assessment of heavy metal exposure associated with mineral clay-based natural health products does not pose a potential hazard to consumers.

Abstract
Consumption of rice is a major pathway of cadmium (Cd) exposure to humans with Cd bioavailability from rice being an important determinant of the potential health risk. We conducted both in vitro bioaccessibility (using four methods) and in vivo bioavailability (using a mouse model) of Cd from six rices. The relative bioavailability (RBA) for Cd ranged from 15 to 56%, 18 to 56% and 3.71 to 54% based on kidney, liver and femur, respectively, which was negatively correlated with total Cd concentration in contaminated rice (r2 = 0.74-0.94). Results of cadmium bioaccessibility in rice varied among different assays. When the relationship between the in vitro and in vivo data was assessed, all the correlations between the four in vitro methods and the mouse assay based on the liver or kidney were generally weak (r2 = 0.0006-0.52). Results of in vitro digestion models varied drastically among the different methods, suggesting that there were limitations for the in vitro methods to predict Cd relative bioavailability in contaminated rice. Together with the observation of poor correlations between the in vivo and in vitro results, it is strongly suggested that further exploration and more optimization of in vitro methods are required for use in human health risk assessment.

Abstract
Reducing Cd bioavailability in the systemic circulation is an alternative strategy to reduce Cd exposure. The influence of 39 dietary components on Cd bioaccessibility in water or rice was determined using an in vitro gastrointestinal model, following which an in vivo bioassay was used to determine the most effective components on Cd bioavailability in rice. The results showed that several components significantly reduced the solubility of Cd (10-98%) in the intestinal phase. Tannic acid, TiO2, zinc gluconate, CaCl2, and proanthocyanidins were the most effective in decreasing Cd bioaccessibility in rice, with reductions of 93-97, 54-61, 32-49, 24-32, and 11-14%, respectively. Upon adding the dietary components, the reduction rates of the Cd-relative bioavailability (Cd-RBA) were 20-58 and 10-31% in the kidneys and the liver, respectively. The results may have important implications for reducing health risks associated with Cd exposure via consumption of rice.

Abstract
The aim of this work was to determine the total concentration and the effect of in vitro digestion on the bioaccessible fraction of aluminum (Al) in 35 different cereal-based baby food samples and estimate the exposure to this element considering the consumption of this product. Total Al content was determined by inductively coupled plasma optical emission spectrometry after oxidative microwave digestion. An in vitro digestion method was applied and optimized to evaluate the bioaccessible fraction. The methods performance was efficient for both approached analysis and presented limits of detection and quantitation of 53 μg kg-1 and 89 μg kg-1, respectively. Total concentration and bioaccessibility varied according to the product composition (rice, oat, wheat, barley, corn, multicereal and fruit). Multicereals and fruit-based (plum) cereals presented the highest total Al concentrations (8.82 mg kg-1 and 7.49 mg kg-1, respectively), whilst lower values were observed for corn and rice flour cereals (0.92 mg kg-1 and 1.09 mg kg-1, respectively). The bioaccessible fraction varied from 1.5% to 10.4% in the evaluated samples. Exposure to Al was estimated and compared with the Provisional Tolerable Weekly Intake (PTWI) of 2 mg kg-1 body weight. The results showed that the daily consumption of three portions of cereals contributes up to 10.48% of the PTWI, when considering the total Al concentration reported in this study.

Abstract
The Caco-2 cell line is derived from a human colon adenocarcinoma and is generally used in toxicity assays. The ingestion of soil or dust is a significant route of human exposure to potential harmful elements (PHE), and assays of bioaccessibility or bioavailability can be used to measure the potential hazard posed by exposure to toxic substances. The in vitro digestion (UBM method) and Caco-2 cell model were used to investigate the bioaccessibility and absorption by intestinal cells of the PHE in four matrices (two urban soils and two soils with lead (Pb)-mining tailings) along with the guidance material for bioaccessibility measurements, BGS 102. The gastrointestinal (GI) compartment was simulated, and the resulting material added to Caco-2 cells. In the GI, the average bioaccessibility was 24% for cadmium (Cd), 17% for copper (Cu), 0.2% for Pb, 44% for manganese (Mn) and 6% for zinc (Zn). The poor reproducibility was attributed to the pH (6.3) and the highly complex GI fluid that formed PHE precipitates and complexes. In 2 h, Caco-2 cells absorbed 0.2 ng mg-1 of cellular protein for Cd, 13.4 ng mg-1 for Cu, 5 ng mg-1 for Mn and 31.7 µg mg-1 for Zn. Lead absorption was lower than the limit of quantification (< 2 µg L-1). Cd was presented in the cell monolayer and could interfere in the intracellular accumulation of Cu, Mn and Zn. The use of in vitro assays allowed for an estimation of the absorption of Cd, Cu, Mn and Zn from environmental matrices to be made, and except for Mn, it had a positive correlation with bioaccessible concentration, suggesting a common association of these elements in the cellular environment.

Abstract
Total and bioaccessible lead (Pb) concentrations in Dittrichia viscosa and soil samples were considered for estimating the potential health risk, related to both plant intake and accidental soil ingestion by adult and child consumers, near a Lebanese fertilizer plant. A total of 27 plant samples, from 9 uncultivated sites situated around the plant, were analyzed in order to assess the total and bioaccessible Pb content. Physiologically based extraction test (PBET) was used to estimate oral bioaccessibility of Pb in edible plant parts. Washed and unwashed leaves were compared in order to show the importance of good consumer practice on Pb intake. Extracted Pb in the intestinal medium accounted for 24 up to 87% of Pb extracted in the gastric medium. The total hazard quotient (HQtot) and the total bioaccessible hazard quotient (BHQ), related to both plants' intake and soil ingestion, for two maximalist child and adult scenarios, were calculated in order to estimate human health risk assessment. HQtot estimations considering the total concentration of Pb in soil and plant suggest that this metal is a contributor in elevating health risks problems on local plants' consumers, especially children inhabitants. However, the integration of bioaccessible concentrations of Pb in risk estimations reduces remarkably the potential risk.

Abstract
Vegetation cover can be used in the phytomanagement of polluted areas by adding value to abandoned sites and reducing the dispersion of pollutants by erosion. Appropriate amendments, that allow both efficient plant growth and the immobilization of contaminants in the soil must be chosen in order to optimize the efficiency of this process. We used a mining technosol mainly contaminated by arsenic (1068 mg kg-1) and lead (23387 mg kg-1) to study the effect of three amendments (biochar, compost and iron grit) on (i) physico-chemical properties of the soil and soil pore water, (ii) metal(loid) mobility, bioavailability and bioaccessibility (CaCl2 and Simple Bioaccessibility Extraction Test (SBET)), and (iii) the capability of Trifolium repens to germinate and grow. All the amendments used increased the pH and electrical conductivity of the SPW, resulting in a 90% decrease in the concentration of lead in the soil pore water (SPW). We also demonstrated a decrease in Pb phytoavailability. The amendments allowed the establishment of a plant cover, although the addition of iron grit alone did not allow any clover germination. For the Pontgibaud technosol, the combination of the three amendments resulted in a significant decrease in As and Pb concentrations in clover tissues, mainly in the aerial organs. The amendments also made it possible for some of them to halve the phytoavailable fraction of arsenic. However, for compost, both the As concentrations in the SPW, and the bioavailable fraction of As increased. All the amendments used had contrasting effects on the bioaccessible fractions of metal(loid)s. The most efficient amendment combination was the addition of 5% biochar and 5% compost.

Abstract
Cu, Fe, Mn, Mo, Selenium (Se), and Zn bioavailability from selenate- and selenite-enriched lettuce plants was studied by in vitro gastrointestinal digestion followed by an assay with Caco-2 cells. The plants were cultivated in the absence and presence of two concentrations (25 and 40 µmol/L of Se). After 28 days of cultivation, the plants were harvested, dried, and evaluated regarding the total concentration, bioaccessibility, and bioavailability of the analytes. The results showed that biofortification with selenate leads to higher Se absorption by the plant than biofortification with selenite. For the other nutrients, Mo showed high accumulation in the plants of selenate assays, and the presence of any Se species led to a reduction of the plant uptake of Cu and Fe. The accumulation of Zn and Mn was not strongly influenced by the presence of any Se species. The bioaccessibility values were approximately 71%, 10%, 52%, 84%, 71%, and 86% for Cu, Fe, Mn, Mo, Se, and Zn, respectively, and the contribution of the biofortified lettuce to the ingestion of these minerals is very small (except for Se and Mo). Due to the low concentrations of elements from digested plants, it was not possible to estimate the bioavailability for some elements, and for Mo and Zn, the values are below 6.9% and 3.4% of the total concentration, respectively. For Se, the bioavailability was greater for selenite-enriched than selenate-enriched plants (22% and 6.0%, respectively), because selenite is biotransformed by the plant to organic forms that are better assimilated by the cells.

Abstract
Investigating the bioaccessibility and bioavailability of Cd based on real contaminated cooked rice matrixes helps establish an accurate risk assessment method and effectively reduce the digestion and absorption of Cd. An 11-day in vitro rapid Caco-2/HT-29 co-culture cell model was used to establish and evaluate the simulation of the absorption and transport of Cd in the small intestine with a 70:30 Caco-2/HT-29 co-culture ratio and 1.0 mmol L-1 butyric acid as a differentiation inducer. The bioaccessibility and bioavailability of Cd in cooked rice were studied using the cell model combined with an in vitro digestion model. The bioaccessibility of Cd of each of the three cooked rice samples was significantly higher in the gastric phase (59.04-80.23%) than in the gastrointestinal phase (37.14-52.93%). Despite the extension of the digestion time of the gastrointestinal phase, no significant difference was found among the time points. Results demonstrated that the amount of undigested residue, not the level of Cd contamination, significantly contributed to the bioaccessibility of Cd, which was affected by pH or ion. The absorption rate of Cd (25.08% ± 3.05%) was greater than the values obtained using the pure Caco-2 cell models. The bioavailability of Cd (8.29% ± 1.95%) was almost similar to that of Zn2+ (6.66% ± 1.41%) in the cooked rice matrix, indicating that the intestinal epithelium expressed a strong absorptive capacity of Cd during the absorption of essential metallic elements. The 11-day rapid Caco-2/HT-29 co-culture cell model combined with the in vitro digestion model was an efficient tool for studying the bioaccessibility and bioavailability of Cd or other substances in a food matrix to further investigate mechanistic steps and screen a broad set of food matrix factors.
