Abstract
Welan gum, an extracellular polysaccharide produced by the Sphingomonas sp., has attracted considerable interest due to its distinctive properties and promising applications in adhesion, thickening, suspension, emulsification, stabilization, lubrication, and film formation. However, several unresolved issues related to welan gum, particularly its low biosynthesis efficiency, have hindered its widespread industrial application. This review first aims to provide a comprehensive overview of welan gum, focusing on its structure and development, the production strains, and biosynthesis pathways. To facilitate the industrial application of welan gum, we further summarize strategies, including optimizing fermentation conditions and engineering production strains to enhance yield, and discuss methods for the recovery and purification of welan gum based on existing literature. Then, we explore the relationship between the modification, structure, and properties of welan gum, emphasizing how these factors can enhance its functionality and application value. Furthermore, the review elucidates the behavior of welan gum in aqueous solutions, examining the impacts of pH, cations, temperature variations, and various additives. In conclusion, we provide a concise summary of the current applications of welan gum and present key research areas that warrant further investigation to advance its use in industry.

Abstract
Polysaccharides, found universally in all living-species, exhibit diverse biochemical structures and play crucial roles in microorganisms, animals, and plants to defend against pathogens, environmental stress and climate-changing. Microbial exopolysaccharides are essential for cell adhesion and stress resilience and using them has notable advantages over synthetic polysaccharides. Exopolysaccharides have versatile structures and physicochemical properties, used in food systems, therapeutics, cosmetics, agriculture, and polymer industries. Immense economic and infrastructural constraints hinder its widespread commercial use, necessitating a deeper understanding of metabolic-pathways amidst changing environmental climate that influences the biomass composition of EPS-producing wild-microbes. Green and sustainable extraction of EPS from microbes followed by commercial product development has still not been exploited comprehensively. Yield of EPS production vary from 0.1 to 3 g/g of cell weight, influenced by fermentation conditions. Economic barriers, including substrate and processing costs, limit commercial viability. Key biosynthetic pathways involve glycosyltransferases enzymes, whose regulatory network gaps and substrate specificity remain areas for optimization. Addressing these could enhance yields and lower production costs. Review illustrates various microbial-exopolysaccharides, influencing factors of production, and offer valuable insights on the bioplastic, biofuel, agri-bioproduct, and biomedicine. But their bioprospecting potential is yet to be exhaustively explored, along with their pros and cons nor documented comprehensively in scientific literature.

Abstract
Microbial exopolysaccharides have been extensively explored due to their distinctive structural features and physiological activities, making them suitable for diverse applications in the food and environmental applications. Current studies mainly focus on the structural and functional characterization of exopolysaccharides from known strains, with limited exploration of novel strains. In this study, a novel exopolysaccharide was produced by Gelidibacter sp. PG-2 with a yield of 874 mg·L-1. The purified exopolysaccharides, termed as ZPS, had a molecular weight of 45,514 Da and contained numerous hydroxyl and carbonyl groups. ZPS was a heteropolysaccharide composed of mannose, glucosamine, glucuronic acid, galactonic acid, galactosamine, glucose, galactose, and fucose, with a molar ratio of 54.98: 4.05: 6.69: 1.00: 1.46: 2.95: 2.92: 1.55. ZPS linkage comprised Glcp-(1→, Manp-(1→, →2)-Manp-(1→, →4)-Galp-(1→, and →4)-Manp-(1→. The morphology of ZPS presented the smooth surface, spherical nanoparticle, and irregular network structure. ZPS demonstrated thermal stability and emulsification activity. ZPS potently stimulated macrophage phagocytic function and effectively inhibited the migration of cancer cells, thereby enhancing overall immunomodulatory activity. Additionally, ZPS featured cryoprotective activity and flocculation property. Overall, the multiple activity of ZPS hold tremendous potential in the food and pharmaceutical industries, offering new dimensions for novel microbial exopolysaccharides.

Abstract
Microorganisms producing extracellular polymeric substances (EPS) are of great potential in numerous environmental applications. The present study explores the production and properties of extracellular polymeric substances (EPS) from Amphora coffeiformis diatom strain and their potential applications in environmental remediation. EPS were composed of a complex mixture of polysaccharides, proteins, humic substances and nucleic acids, with polyanionic characteristics as revealed by FTIR, Raman and zeta potential analyses. EPS showed high flocculation efficiency against kaolin clay at low dosages (5 mg/L) through a charge neutralization mechanism involving both polysaccharides and proteins. EPS also exhibited strong emulsification activity for various nonpolar substrates, mainly olive oil, corn oil, soybean oil, essence and diesel, with emulsification indexes above 80%. The emulsions were stable for 72 h under different NaCl concentrations (1-10% w/v). Moreover, EPS demonstrated remarkable adsorption capacity for lead, reaching a maximum of 1699.33 ± 89.61 mg/g under optimized conditions using Box-Behnken design. The adsorption mechanism involved multiple functional groups such as hydroxyl, carbonyl, carboxyl, phosphoric and sulfhydryl. Therefore, EPS from A. coffeiformis are a promising candidate for restoring environments contaminated by heavy metals.

Abstract
Herein, a citrus processing wastewater-based biorefinery has been developed manufacturing essential oils, polyphenols and bacterial cellulose. Liquid-liquid extraction was evaluated for isolation of essential oils assessing different organic solvents, recovering 0.45 kg of essential oils per m3 of wastewater using n-heptane. Amberilte® XAD4, XAD16N and XAD7HP, PurSorb™ PAD900, biochar and activated biochar were compared as adsorbents for polyphenols recovery, demonstrating that the adsorption isotherms of the resins applied could be closely predicted using the Langmuir model. Adsorption and desorption density experiments exhibited that the phenolic content present in citrus processing wastewater could be efficiently recovered using PAD900, yielding 0.78 kg of polyphenols per m3 of wastewater. The sugar content remaining following polyphenols adsorption was applied for bacterial cellulose production employing Komagataeibacter sucrofermentans DSM 15973 determining the biopolymer's production efficiency as well as morphological and structural properties at different carbon to free amino nitrogen ratios. The higher content of the biomaterial was obtained employing 15.0 carbon to free amino nitrogen ratio, which yielded 4.4 kg of biopolymer per m3 of wastewater. The study has shown that by decreasing the carbon to free amino nitrogen ratio could enable enhancing the water-holding capacity of bacterial cellulose, exhibiting that the control of fermentation conditions could potentially enable tailoring the properties of the biomaterial for certain industrial applications. The bioactive, antioxidant and preservative properties of essential oils and polyphenols constitute the aforementioned products significant for a range of industrial applications within the pharmaceutical, cosmetics and food sectors.

Abstract
Understanding biofilm rheology is crucial for industrial and domestic food safety practices. This comprehensive review addresses the knowledge gap on the rheology of biofilm. Specifically, the review explores the influence of fluid flow, shear stress, and substrate properties on the initiation, structure, and functionality of biofilms, as essential implications for food safety. The viscosity and shear-thinning characteristics of non-Newtonian fluids may impact the attachment and detachment dynamics of biofilms, influencing their stability and resilience under different flow conditions. The discussion spans multiple facets, including the role of extracellular polymeric substances (EPSs) in biofilm formation, the impact of rheological attributes of biofilm on their adhesion to surfaces, and the influence of shear forces between biofilms and substrate's surface characteristics on biofilm stability. Analytical techniques, encompassing rheometry, microscopy, and molecular biology approaches, are scrutinized for their contributions to understanding these interactions. The paper delves into the implications for the food industry, highlighting potential risks associated with biofilm formation and proposing strategies for effective control and prevention. Future research directions and the integration of rheological considerations into food safety regulations are underscored as pivotal steps in mitigating biofilm-related risks. Abstract
In this study, a strain with good exopolysaccharide (EPS)-producing ability was isolated from the fermented Benincasa hispida and identified as Lactiplantibacillus plantarum Z-1. Its EPS production was further improved by H2O2 stress under optimized culture conditions, increasing from 180 ± 0.45 mg/L to 409.52 ± 2.16 mg/L. Purification of EPS with DEAE-52 and subsequent Sephadex G-100 column chromatography provided three fractions, namely, EPS-0, EPS-1 and EPS-3, respectively. The molecular weight of EPS, EPS-0, EPS-1 and EPS-3 were 85.4, 25.7, 131.88 and 93.2 kDa, respectively. EPS, EPS-1 and EPS-3 were mainly composed of glucose, rhamnose, arabinose and galactose with molar ratios of 1:0.544:0.211:0.281, 1:1.279:0.807:0.704, and 1:1.459:0.759:0.75, respectively, along with small proportions of fucose, mannose and xylose. EPS-0 was composed of glucose, arabinose, galactose and xylose, with molar ratios of 1:0.618:0.206:0.275. The structural analysis indicated that EPS-3 was mainly consisted of (1,2,4)-β-Rhap, (1,2,3)-β-Araf, (1,4)-β-Galp, T-α-Glcp units. The three purified fractions showed typical characteristics of non-Newtonian fluids and good viscoelasticity. Congo red test revealed that irregular triple-helical conformation existed in EPS and EPS-3. These physicochemical properties of EPSs make them a potential candidate for the use as a health-beneficial food additive in the food processing industry.

Abstract
Microbial plant biostimulants offer a promising, sustainable solution for enhancing plant growth and resilience, particularly under abiotic stress conditions such as drought, salinity, extreme temperatures, and heavy metal toxicity. These biostimulants, including plant growth-promoting rhizobacteria, mycorrhizal fungi, and nitrogen-fixing bacteria, enhance plant tolerance through mechanisms such as phytohormone production, nutrient solubilization, osmotic adjustment, and antioxidant enzyme activation. Advances in genomics, metagenomics, transcriptomics, and proteomics have significantly expanded our understanding of plant-microbe molecular communication in the rhizosphere, revealing mechanisms underlying these interactions that promote stress resilience. However, challenges such as inconsistent field performance, knowledge gaps in stress-related molecular signaling, and regulatory hurdles continue to limit broader biostimulant adoption. Despite these challenges, microbial biostimulants hold significant potential for advancing agricultural sustainability, particularly amid climate change-induced stresses. Future studies and innovation, including Clustered Regularly Interspaced Short Palindromic Repeats and other molecular editing tools, should optimize biostimulant formulations and their application for diverse agro-ecological systems. This review aims to underscore current advances, challenges, and future directions in the field, advocating for a multidisciplinary approach to fully harness the potential of biostimulants in modern agriculture.

Abstract
Exopolysaccharides (EPSs) from lactic acid bacteria (LAB) have multifunctional capabilities owing to their diverse structural conformations, monosaccharide compositions, functional groups, and molecular weights. A review paper on EPS production and antioxidant potential of different LAB genera has not been thoroughly reviewed. Therefore, the current review provides comprehensive information on the biosynthesis of EPSs, including the isolation source, type, characterization techniques, and application, with a primary focus on their antioxidant potential. According to this review, 17 species of Lactobacillus, five species of Bifidobacterium, four species of Leuconostoc, three species of Weissella, Enterococcus, and Lactococcus, two species of Pediococcus, and one Streptococcus species have been documented to exhibit antioxidant activity. Of the 111 studies comprehensively reviewed, 98 evaluated the radical scavenging activity of EPSs through chemical-based assays, whereas the remaining studies documented the antioxidant activity using cell and animal models. Studies have shown that different LAB genera have a unique capacity to produce homo- (HoPs) and heteropolysaccharides (HePs), with varied carbohydrate compositions, linkages, and molecular weights. Leuconostoc, Weissella, and Pediococcus were the main HoPs producers, whereas the remaining genera were the main HePs producers. Recent trends in EPSs production and blending to improve their properties have also been discussed.

Abstract
Exopolysaccharides (EPS), originating from various microbes, are essential bioproducts with widespread applications including packaging, biomedicine, wastewater treatment, cosmetics, agriculture, and food industries. Particularly, in the field of sustainable agriculture, microbial EPS have positive effects on plant growth and have gained considerable interest among agriculturists. However, few studies have elucidated the mechanisms of action of EPS in soil-microbe-plant interactions in agroecosystems. This review focuses on the sources and types of EPS, biosynthetic processes, factors affecting EPS yield, extraction and purification methods employed to produce microbial EPS, and structural characterization methods for EPS. Moreover, the agroecological physiological functions of microbial EPS with respect to promoting soil health (e.g., improving soil structure and fertility and repairing contaminated soil) and plant growth (e.g., plant growth and physiological metabolism under normal and stress conditions, such as salt, drought, heavy metals, and extreme temperatures) are critically highlighted. Furthermore, existing challenges and prospects for agricultural applications are discussed. This review demonstrates that the application of microbial EPS in agriculture provides a new type of green material for agricultural producers to improve soil quality, increase agricultural productivity, and provide new ideas for sustainable agricultural development.

Abstract
Microbially induced calcium precipitation (MICP) has been extensively discussed as a water treatment method. However, the impact of MICP on the selective adsorption of different organic contaminants in industrial wastewater and the metabolism and growth of bacteria has not been elucidated in detail. In this study, by comparing the differences in the metabolism and removal of bacteria by phenol, bisphenol A (BPA), and tetracycline (TC), it was found that bioprecipitates had significant differences in the adsorption capacity of organic pollutants with different molar volumes. Concurrently, bacteria produced more extracellular polymeric substances (EPS) under the influence of organic pollutants, and the self-protection mechanism of bacteria would reduce the amount of gaseous nitrogen. However, the points on the surface of EPS promoted the process of MICP, and MICP encapsulated bacteria to form precipitates to regulate bacteria in water and further improve the removal of carbon and nitrogen in water through biomineralization. This experiment provides new insights into the selective adsorption of bioprecipitates and its multiple effects on bacteria.

Abstract
Conventional passive packaging plays a crucial role in food manufacturing by protecting foods from various external influences. Most packaging materials are polymer-based plastics derived from fossil carbon sources, which are favored for their versatility, aesthetic appeal, and cost-effectiveness. However, the extensive use of these materials poses significant environmental challenges due to their fossil-based origins and persistence in the environment. Global plastic consumption for packaging is expected to nearly triple by 2060, exacerbating the ecological crisis. Moreover, globalization has increased access to a diverse range of foods from around the world, heightening the importance of packaging in providing healthier and safer foods with extended shelf life. In response to these challenges, there is a growing shift to eco-friendly active packaging that not only protects but also preserves the authentic qualities of food, surpassing the roles of conventional passive packaging. This article provides a comprehensive review on the viability, benefits, and challenges of implementing bio-based biodegradable polymers in active food packaging, with the dual goals of environmental sustainability and extending food shelf life.

Abstract
The importance of Gellan gum has been increasing gradually and its unique characteristics are suitable for various advanced food technologies. This review outlines recent developments in gellan gum production, modification, and newer applications focusing on food printing and bioactive delivery applications, in the last three years. The yield and production condition of gellan gum is a major factor that affects the cost and its applications. Moreover, modified Gellan gum has been shown to have superior characteristics and functionality as compared to native one. The viscosifying, thermosensitive, gelling etc. characteristics of gellan gum makes it an crucial ingredient in case of preparation of 3D printing ink. Further, gellan gum is also found to be important wall material in case of bioactive delivery application through encapsulation. Optimized methods of production, sustainable feedstock, and stress conditions are critical for the desired functionality and yield of the Gellan gum.

Abstract
Acidic exopolysaccharide (EPS) was produced by a marine actinobacterium Streptomyces vinaceusdrappus strain AMG31 with the highest yield of 10.6 g/l. The synthesized EPS has an average molecular weight of 5.1 × 104 g/mol and contains arabinose, glucose, galacturonic acid (0.5:2:2 M ratio), with 39.77 % uronic acid residues and 18.8 % sulfate detected. EPS exhibited antioxidant activities with 93.8 % DPPH radical scavenging and 344.7 μg/mg total antioxidant capacity. It displayed anti-inflammatory effects by inhibiting 5-LOX and COX-2. Regarding the cytotoxic activity, the IC50 values are 301.6 ± 11.8, 260.8 ± 12.2, 29.4 ± 13.5, 351.3 ± 11.2, 254.1 ± 9.8, and 266.5 ± 10.4 μg/ml for PC-3, HEP-2, MCF-7, HCT-116, A-549, HepG-2 respectively, which indicate that the produced EPS does not have strong cytotoxic activities. Moreover, the EPS showed anti-Alzheimer activity via inhibition of the Butyrylcholinesterase enzyme, with the highest percentage of 84.5 % at 100 μg/ml. Interestingly, the EPS showed superior anti-obesity activity by inhibiting lipase enzyme with a rate of 95.3 % compared to orlistat as a positive control (96.8 %) at a concentration of 1000 μg/ml. Additionally, the produced EPS displayed the highest anti-diabetic properties by inhibiting α-amylase (IC50 31.49 μg/ml) and α-glucosidase (IC50 6.48 μg/ml), suggesting antidiabetic potential analogous to acarbose. EPS exhibited promising antibacterial and antibiofilm activity against a wide range of Gram-positive and Gram-negative pathogenic bacteria.

Abstract
Bacterial exopolysaccharides (EPS) are biopolymers of carbohydrates, often released from cells into the extracellular environment. Due to their distinctive physicochemical properties, biocompatibility, biodegradability, and non-toxicity, EPS finds applications in various industrial sectors. However, the need for alternative EPS has grown over the past few decades as lactic acid bacteria's (LAB) low-yield EPS is unable to meet the demand. In this case, rhizosphere bacteria with the diverse communities in soil leading to variations in composition and structure, are recognized as a potential source of EPS applicable in various industries. In addition, media components and cultivation conditions have an impact on EPS production, which ultimately affects the quantity, structure, and biological functions of the EPS. Therefore, scientists are currently working on manipulating bacterial EPS by developing cultures and applying abiotic and biotic stresses, so that better production of exopolysaccharides can be attained. This review highlights the composition, biosynthesis, and effects of environmental factors on EPS production along with the potential applications in different fields of industry. Ultimately, an overview of potential future paths and tactics for improving EPS implementation and commercialization is pointed out.

Abstract
This study investigates the co-precipitation of calcium and barium ions in hypersaline wastewater under the action of Bacillus licheniformis using microbially induced carbonate precipitation (MICP) technology, as well as the bactericidal properties of the biomineralized product vaterite. The changes in carbonic anhydrase activity, pH, carbonate and bicarbonate concentrations in different biomineralization systems were negatively correlated with variations in metal ion concentrations, while the changes in polysaccharides and protein contents in bacterial extracellular polymers were positively correlated with variations in barium concentrations. In the mixed calcium and barium systems, the harvested minerals were vaterite containing barium. The increasing concentrations of calcium promoted the incorporation and adsorption of barium onto vaterite. The presence of barium significantly increased the contents of O-CO, N-CO, and Ba-O in vaterite. Calcium promoted barium precipitation, but barium inhibited calcium precipitation. After being treated by immobilized bacteria, the concentrations of calcium and barium ions decreased from 400 and 274 to 1.72 and 0 mg/L (GB/T15454-2009 and GB8978-1996). Intracellular minerals were also vaterite containing barium. Extracellular vaterite exhibited bactericidal properties. This research presents a promising technique for simultaneously removing and recycling hazardous heavy metals and calcium in hypersaline wastewater.

Abstract
Microplastics (MPs) pollution and seawater acidification have increasingly become huge threats to the ocean ecosystem. Their impacts on microalgae are of great importance, since microalgae are the main primary producers and play a critical role in marine ecosystems. However, the impact of microplastics and acidification on unicellular red algae, which have a unique phycobiliprotein antenna system, remains unclear. Therefore, the impacts of polystyrene-MPs alone and the combined effects of MPs and seawater acidification on the typical unicellular marine red algae Porphyridium purpureum were investigated in the current study. The result showed that, under normal seawater condition, microalgae densities were increased by 17.75-41.67 % compared to the control when microalgae were exposed to small-sized MPs (0.1 μm) at concentrations of 5-100 mg L-1. In addition, the photosystem II and antioxidant enzyme system were not subjected to negative effects. The large-sized MPs (1 μm) boosted microalgae growth at a low concentration of MPs (5 mg L-1). However, it was observed that microalgae growth was significantly inhibited when MPs concentration increased up to 50 and 100 mg L-1, accompanied by the remarkably reduced Fv/Fm value and the elevated levels of SOD, CAT enzymes, phycoerythrin (PE), and extracellular polysaccharide (EPS). Compared to the normal seawater condition, microalgae densities were enhanced by 52.11-332.56 % under seawater acidification, depending on MPs sizes and concentrations, due to the formed CO2-enrichment condition and appropriate pH range. PE content in microalgal cells was significantly enhanced, but SOD and CAT activities as well as EPS content markedly decreased under acidification conditions. Overall, the impacts of seawater acidification were more pronounced than MPs impacts on microalgae growth and physiological responses. These findings will contribute to a substantial understanding of the effects of MPs on marine unicellular red microalgae, especially in future seawater acidification scenarios.

Abstract
Polyvinyl alcohol (PVA)-bacterial succinoglycan (SG) biodegradable films were developed through a solvent-casting method. Effects of the PVA/SG ratio on the thickness, transmittance, water holding capacity, and structural and mechanical properties were investigated by various analytical methods. All the prepared films were transparent and uniform, and XRD and FTIR analyses confirmed that PVA was successfully incorporated into SG. The films also showed excellent UV-blocking ability: up to close to 80% with increasing SG concentration. The formation of effective intermolecular interactions between these polymers was evidenced by their high tensile strength and moisture transport capacity. By measuring the biodegradation rate, it was confirmed that films with high SG content showed the fastest biodegradation rate over 5 days. These results confirm that PVA/SG films are eco-friendly, with both excellent biodegradability and effective UV-blocking ability, suggesting the possibility of industrial applications as a packaging material in various fields in the future.

Abstract
The diversity of microalgae and bacteria allows them to form beneficial consortia for efficient wastewater treatment and nutrient recovery. This study aimed to evaluate the feasibility of a new microalgal-bacterial combination in the treatment of ice cream wastewater for biomass harvest. The bacterium Novosphingobium sp. ICW1 was natively isolated from ice cream wastewater and the microalga Vischeria sp. WL1 was a terrestrial oil-producing strain of Eustigmatophyceae. The ice cream wastewater was diluted 4 folds for co-cultivation, which was relatively less inhibitory for the growth of Vischeria sp. WL1. Four initial algal-bacterial combinations (v:v) of 150:0 (single algal cultivation), 150:1, 150:2, and 150:4 were assessed. During 24 days of co-cultivation, algal pigmentation was dynamically changed, particularly at the algal-bacterial combination of 150:4. Algal growth (in terms of cell number) was slightly promoted during the late phase of co-cultivation at the combinations of 150:2 and 150:4, while in the former the cellular oil yield was obviously elevated. Treated by these algal-bacterial combinations, total carbon was reduced by 67.5 ~ 74.5% and chemical oxygen demand was reduced by 55.0 ~ 60.4%. Although single bacterial treatment was still effective for removing organic nutrients, the removal efficiency was obviously enhanced at the algal-bacterial combination of 150:4. In addition, the harvested oils contained 87.1 ~ 88.3% monounsaturated fatty acids. In general, this study enriches the biotechnological solutions for the sustainable treatment of organic matter-rich food wastewater.

Abstract
The escalating global threat of antimicrobial resistance necessitates prospecting uncharted microbial biodiversity for novel therapeutic leads. This study mines the promising chemical richness of Bacillus licheniformis LHG166, a prolific exopolysaccharide (EPSR2-7.22 g/L). It comprised 5 different monosaccharides with 48.11% uronic acid, 17.40% sulfate groups, and 6.09% N-acetyl glucosamine residues. EPSR2 displayed potent antioxidant activity in DPPH and ABTS+, TAC and FRAP assays. Of all the fungi tested, the yeast Candida albicans displayed the highest susceptibility and antibiofilm inhibition. The fungi Aspergillus niger and Penicillium glabrum showed moderate EPSR2 susceptibility. In contrast, the fungi Mucor circinelloides and Trichoderma harzianum were resistant. Among G+ve tested bacteria, Enterococcus faecalis was the most susceptible, while Salmonella typhi was the most sensitive to G-ve pathogens. Encouragingly, EPSR2 predominantly demonstrated bactericidal effects against both bacterial classes based on MBC/MIC of either 1 or 2 superior Gentamicin. At 75% of MBC, EPSR2 displayed the highest anti-biofilm activity of 88.30% against B. subtilis, while for G-ve antibiofilm inhibition, At 75% of MBC, EPSR2 displayed the highest anti-biofilm activity of 96.63% against Escherichia coli, Even at the lowest dose of 25% MBC, EPSR2 reduced biofilm formation by 84.13% in E. coli, 61.46% in B. subtilis. The microbial metabolite EPSR2 from Bacillus licheniformis LHG166 shows promise as an eco-friendly natural antibiotic alternative for treating infections and oxidative stress.

Abstract
Microbial exopolysaccharides (EPS) have gained significant attention as versatile biomolecules with multifarious applications across various sectors. This review explores the valorisation of EPS and its potential impact on diverse sectors, including food, pharmaceuticals, cosmetics, and biotechnology. EPS, secreted by microorganisms, possess unique physicochemical properties, such as high molecular weight, water solubility, and biocompatibility, making them attractive for numerous functional roles. Additionally, EPS exhibit significant bioactivity, contributing to their potential use in pharmaceuticals for drug delivery and tissue engineering applications. Moreover, the eco-friendly and sustainable nature of microbial EPS production aligns with the growing demand for environmentally conscious processes. However, challenges still exist in large-scale production, purification, and regulatory approval for commercial use. Advances in bioprocessing and microbial engineering offer promising solutions to overcome these hurdles. Stringent investigations have concluded EPS as novel sources for sustainable applications that are likely to emerge and develop, further reinforcing the significance of these biopolymers in addressing contemporary societal needs and driving innovation in various industrial sectors. Overall, the microbial EPS represents a thriving field with immense potential for meeting diverse industrial demands and advancing sustainable technologies.

Abstract
Natural biopolymers derived from exopolysaccharides (EPSs) are considered eco-friendly and sustainable alternatives to available traditional synthetic counterparts. Salt-tolerant bacteria inhabiting harsh ecological niches have evolved a number of unique adaptation strategies allowing them to maintain cellular integrity and assuring their long-term survival; among these, producing EPSs can be adopted as an effective strategy to thrive under high-salt conditions. A great diversity of EPSs from salt-tolerant bacteria have attracted widespread attention recently. Because of factors such as their unique structural, physicochemical, and functional characteristics, EPSs are commercially valuable for the global market and their application potential in various sectors is promising. However, large-scale production and industrial development of these biopolymers are hindered by their low yields and high costs. Consequently, the research progress and future prospects of salt-tolerant bacterial EPSs must be systematically reviewed to further promote their application and commercialization. In this review, the structure and properties of EPSs produced by a variety of salt-tolerant bacterial strains isolated from different sources are summarized. Further, feasible strategies for solving production bottlenecks are discussed, which provides a scientific basis and direct reference for more scientific and rational EPS development.

Abstract
Commercial bacterial exopolysaccharide (EPS) applications have been gaining interest; therefore, strains that provide higher yields are required for industrial-scale processes. Succinoglycan (SG) is a type of bacterial anionic exopolysaccharide produced by Rhizobium, Agrobacterium, and other soil bacterial species. SG has been widely used as a pharmaceutical, cosmetic, and food additive based on its properties as a thickener, texture enhancer, emulsifier, stabilizer, and gelling agent. An SG-overproducing mutant strain (SMC1) was developed from Sinorhizobium meliloti 1021 through N-methyl-N'-nitro-N-nitrosoguanidine (NTG) mutation, and the physicochemical and rheological properties of SMC1-SG were analyzed. SMC1 produced (22.3 g/L) 3.65-fold more SG than did the wild type. Succinoglycan (SMC1-SG) overproduced by SMC1 was structurally characterized by FT-IR and 1H NMR spectroscopy. The molecular weights of SG and SMC1-SG were 4.20 × 105 and 4.80 × 105 Da, respectively, as determined by GPC. Based on DSC and TGA, SMC1-SG exhibited a higher endothermic peak (90.9 °C) than that of SG (77.2 °C). Storage modulus (G') and loss modulus (G″) measurements during heating and cooling showed that SMC1-SG had improved thermal behavior compared to that of SG, with intersections at 74.9 °C and 72.0 °C, respectively. The SMC1-SG's viscosity reduction pattern was maintained even at high temperatures (65 °C). Gelation by metal cations was observed in Fe3+ and Cr3+ solutions for both SG and SMC1-SG. Antibacterial activities of SG and SMC1-SG against Escherichia coli and Staphylococcus aureus were also observed. Therefore, like SG, SMC1-SG may be a potential biomaterial for pharmaceutical, cosmetic, and food industries.

Abstract
Five kinds of exopolysaccharides (EPS) were obtained by fermentation of Scleroderma areolatum Ehrenb. with sucrose, glucose, maltose, lactose, and fructose as carbon sources. Antioxidant abilities of the obtained EPSs were evaluated by inhibiting AAPH, HO·, and glutathione (GS·) induced oxidation of DNA and quenching 2,2'-azinobis (3-ethylbenzothiazoline-6-sulfonate) cationic radical (ABTS· and galvinoxyl radicals. The effects of carbon sources on the antioxidant properties of EPSs could be examined. The results showed that five EPSs can effectively inhibit radicals induced oxidation of DNA, and the thiobarbituric acid reactive substances (TBARS) percentages were 44.7%-80.8%, 52.3%-77.5%, and 44.7%-73.3% in inhibiting AAPH, HO·, and GS· induced oxidation of DNA, respectively. All five EPSs could scavenge ABTS· and galvinoxyh, and exhibit superior activity in scavenging free radicals. Antioxidant abilities of EPS with fructose as carbon source were highest among five EPS.

Abstract
Recently, degradable biopolymers have become increasingly important as potential environmentally friendly biomaterials, providing a wide range of applications in various fields. Bacterial exopolysaccharides (EPSs) are biomacromolecules, which due to their unique properties have found applications in biomedicine, foodstuff, textiles, cosmetics, petroleum, pharmaceuticals, nanoelectronics, and environmental remediation. One of the important commercial polysaccharides produced on an industrial scale is xanthan. In recent years, the range of its application has expanded significantly. Bacterial cellulose (BC) is another unique EPS with a rapidly increasing range of applications. Due to the great prospects for their practical application, the development of their highly efficient production remains an important task. The present review summarizes the strategies for the cost-effective production of such important biomacromolecules as xanthan and BC and demonstrates for the first time common approaches to their efficient production and to obtaining new functional materials for a wide range of applications, including wound healing, drug delivery, tissue engineering, environmental remediation, nanoelectronics, and 3D bioprinting. In the end, we discuss present limitations of xanthan and BC production and the line of future research.
