Abstract
ETHNOPHARMACOLOGICAL RELEVANCE Acute coronary syndrome (ACS) represents a group of diseases that are the result of reduced blood flow to the heart. There are natural products, based on mushrooms, used traditionally in the treatment of cardiovascular diseases. AIM OF THE STUDY Assessment of the potential protective effect of L. betulinus mushroom against therapy-induced DNA damage in lymphocytes of patients with ACS in relation to the phytochemical properties of the mushroom. MATERIALS AND METHODS The study included 30 ACS patients and 30 healthy controls. The genotoxic potential of acetone and ethanol extract of L. betulinus was evaluated using the comet assay. The contents of minerals were determined by inductively coupled plasma optical emission spectrometry. Determination of sugars and organic acids was performed using a DIONEX ICS 3000 DP liquid chromatography system. Analysis of fatty acids was performed at Focus GC coupled with PolarisQ mass spectrometer. The total phenolic and flavonoid contents in the mushroom extracts were measured using spectrophotometric methods. The qualitative and quantitative content of polyphenolic compounds was investigated by the UHPLC-DADMS/MS method. RESULTS The comet assay showed that both mushroom extracts did not increase the level of DNA damage in the lymphocytes of healthy individuals, while they significantly decreased the %DNA damage and genetic damage index (p < 0.0005) in the therapy-induced lymphocytes of patients. The mushroom was very rich in phytochemical composition. The results showed that the most abundant components in the mushroom were phosphorus, potassium, sodium, sulfur, and calcium among minerals and glucose, fructose, galactose, sorbitol, and turanose among carbohydrates. Among organic acids were present in higher concentrations malic, citric, and maleic acids, while among fatty acids, the most abundant were trans-linoleic, cis-oleic, palmitic, docosahexaenoic and eicosadienoic acids. The results showed that the highest amount of total phenols and flavonoids in the mushroom extracts were obtained in the acetone extract. The most abundant polyphenolic compounds were chlorogenic acid and quercetin in both extracts of mushroom. CONCLUSIONS This study indicates that L. betulinus can be considered a mushroom with a high nutritional and functional value. Extracts of the mushroom were not genotoxic in tested concentrations in cultured human lymphocytes of healthy individuals, while in ACS patients they manifested a protective effect against therapy-induced DNA damage. The acetone extract showed a stronger protective effect against therapy-induced DNA damage, which is consistent with its phytochemical composition.

Abstract
Cantharellus cibarius (CC) is a culinary mushroom with significant commercial potential due to its diverse components and bioactive functions. CC is rich in carbohydrates, proteins, minerals, vitamins, and aroma compounds while being low in fat and calories. Moreover, CC contains an abundance of bioactive substances including phenolic compounds, vitamin precursors, and indole derivatives. Numerous studies have claimed that CC has diverse functions such as antioxidant, antimicrobial, immunoregulation, anti-inflammatory, antitumor, neuroprotective, antidiabetic, and prebiotic effects in in vivo or in vitro settings. In addition, a variety of thermal, physical, chemical, and biological treatment methods have been investigated for the processing and preservation of CC. Consequently, this study aims to present a comprehensive review of the chemical composition, health benefits, and processing techniques of CC. Furthermore, the issue of heavy metal accumulation in CC has been indicated and discussed. The study highlights the potential of CC as a functional food in the future while providing valuable insights for future research and identifying areas requiring further investigation.

Abstract
Mushrooms are a good source of protein and phenolic compounds which provides health benefits for humans. The purpose of this study was to compare the content of eight metals, protein, and total phenolics (TPC) of 5 different species (Agaricus bisporus-white and brown mushrooms, Agaricus cupreobrunneus, Auricularia cornea, Hypsizgus tesselatus, and Pleurotus eryngii species-complex) of edible mushrooms available on the Romanian market. Agaricus bisporus and Agaricus cupreobrunneus were purchased and cultivated in Romania and the other species were cultivated in other countries (Turkey and China). The metal content determined by graphite atomic absorption spectrometry (GTAAS) varied in the order Cu > Pb > Ni > Fe > Cr > Mn > Co > Cd. Almost all the samples contained a greater quantity of metals in the stalk than in the cap. In addition, the levels of toxic metals were low. The protein content of analyzed samples ranged from 0.0926 to 0.2743%, the highest value being observed in Pleurotus eryngii species-complex mushroom. TPC of extracts increased over time but there was a variability in the concentration for each mushroom species (0.25-12.25 mg GAE/g). The investigated mushroom species possess no health risk and may be potential nutritional supplements for human diets due to their phenolic compounds, protein, and mineral content.

Abstract
Wild edible mushrooms are distributed all over the world and are delicious seasonal foods, rich in polysaccharides, amino acids, vitamins, and other components. At the same time, they contain many essential trace elements and are highly enriched in heavy metals (compared to green plants and cultivated edible mushrooms). Consumers may be exposed to health risks due to excessive heavy metals in the process of consumption. This is also one of the important factors affecting the import and export of edible mushrooms, which is of great concern to consumers and entry and exit inspection and quarantine departments. In this paper, the contents of four essential trace elements of iron, manganese, zinc, and copper and four harmful heavy metals of cadmium, lead, mercury, and arsenic in nearly 400 species of wild edible mushrooms from 10 countries are reviewed. It was found that the factors affecting the elemental content of edible mushrooms are mainly divided into internal and external factors. Internal is mainly the difference in species element-enrichment ability, and external is mainly environmental pollution and geochemical factors. The aim is to provide a reference for the risk assessment of edible mushrooms and their elemental distribution characteristics.

Abstract
The purpose of this study was to determine Fe, Cd, Cr, Se, P, Cu, Mn, Zn, Al, Ca, Mg, and K contents of some edible (Chlorophyllum rhacodes, Clavariadelphus truncatus, Clitocybe nebularis, Hydnum repandum, Hygrophorus pudorinus, Infundibulicybe gibba, Lactarius deliciosus, L. piperatus, L. salmonicolor, Macrolepiota mastoidea, Russula grata, Suillus granulatus, and Tricholoma imbricatum), inedible (Amanita pantherina, Geastrum triplex, Gloeophyllum sepiarium, Hypholoma fasciculare, Phellinus vorax, Pholiota limonella, Russula anthracina, and Tapinella atrotomentosa), and poisonous mushroom species (Amanita pantherina and Hypholoma fasciculare) collected from Ilgaz Mountain National Park (Western Black Sea, Turkey). The element contents of the mushrooms were determined to be 18.0-1239.1, 0.2-4.6, 0.1-3.4, 0.2-3.2, 1.0-8.9, 3.3-59.9, 3.7-220.4, 21.3-154.1, 6.4-754.3, 15.8-17,473.0, 413.0-5943.0, and 2803.0-24,490.0 mg·kg-1, respectively. In addition to metal contents, the daily intakes of metal (DIM) and Health Risk Index (HRI) values of edible mushrooms were also calculated. Both DIM and HRI values of mushroom species except L. salmanicolor, M. mastoidea, and R. grata were within the legal limits. However, it was determined that the Fe content of L. salmanicolor and M. mastoidea and Cd content of R. grata were above the legal limits.

Abstract
The region of Warmia and Mazury is characterized by the special diversity and richness of its natural environment, including large forest complexes, where wild mushrooms are commonly collected and consumed. This study aimed to examine the differences in mineral content (calcium, magnesium, sodium, potassium, iron, zinc, copper, manganese) of three species of mushrooms collected in north-eastern Poland. The research material consisted of dried samples of king bolete (Boletus edulis), bay bolete (Boletus badius), and chanterelle (Cantharellus cibarius) collected in the region of Warmia and Mazury. The content of the above-mentioned elements in mushroom fruit bodies was determined using the flame atomic absorption spectrometry (acetylene-air flame) and the emission technique (acetylene-air flame) for sodium and potassium. For the majority of micro- and macroelements, the studies confirmed the presence of significant differences in their content, depending on the species of fungi. The studied mushrooms cover a significant percentage of daily demand for many of the minerals. This concerns mainly copper, zinc, and potassium, although none of the species was a good source of calcium and sodium. Among the analyzed mushrooms, chanterelle is the best source of most minerals.

Abstract
Mushrooms are rich sources of organic nutrients (especially proteins). However, they can excessively accumulate metals in their fruiting bodies that pose a risk to human health. The aim of this study was the determination of Cd, Co, Cu, Fe, Mn, Ni, Pb, and Zn contents, daily intake, and health risk index values of some mushroom species collected from the eastern Black Sea region of Turkey (Arsin, Trabzon). The samples were collected from hazelnut gardens that are free from industrial pollution and have a low population density. As a result of elemental analysis, it was determined that the concentration ranges of Cd, Co, Cu, Fe, Mn, Ni, Pb, and Zn in the mushrooms were as follows: 0.29-9.11, 0.04-3.70, 0.01-8.29, 0.18-20.82, 3.1-79.8, 5.2-673.0, 14.9-752.0, 63.0-7769.0 mg/kg dry weight. Daily intakes of all the elements were found to be below the reference dose in Fistulina hepatica, Hydnum repandum, Macrolepiota procera, and Tapinella atrotomentosa. Amanita caesarea, Agrocybe praecox, Amanita vaginata, Cantharellus cibarius, Craterellus cornucopioides, Daedalea quercina, Gymnopus dryophilus, Ganoderma lucidum, and Infundibulicybe gibba were found to have high risk index values especially with respect to Cd, Co, and Pb. According to Pearson correlation analysis, the correlations between Fe-Mn (0.840, p < 0.01) and Pb-Ni (0.7540, p < 0.01) couples are significant.

Abstract
This article presents a bibliometric study of 200 European publications released between 2001 and 2016, about the contamination of mushrooms by selected elements. The analysis includes figures on the type of analyte, its concentration, the species of fungi, and its country of origin. In the literature review, 492 species of mushrooms (wild-growing and cultured) found in 26 European countries and their concentration of 74 associated elements were analysed. The papers, which dealt mainly with the heavy metal (Cd, Cu, Fe, Pb, and Zn) concentrations of mushrooms, primarily came from Turkey, Poland, Spain, and the Czech Republic. More than 50% of the publications provided data about edible mushrooms. The results of the bibliometric analysis showed that over the 16 years, European research on fungal contamination by selected analytes has not lessened in popularity and is ongoing. Many of the studies underlined the need to assess the risk to human health arising from the consumption of contaminated mushrooms taken from various habitats. These results were the effect of, among other things, the strong interest in studies carried out on edible species, in which concentrations of mainly heavy metals that are dangerous to health and are marked were indicated (Cd, Pb, and Hg).

Abstract
Six wild edible mushroom species, Agaricus bisporus, A. bitorquis, A. gennadii, Coprinus comatus, Psathyrella candolleana and Volvopluteus gloiocephalus, were collected from the Greater Athens area (Greece), together with their soil substrates (two depth-layers) for studying bioaccumulation of heavy metals in a densely populated urban environment. Total and bioavailable Cr, Cu, Fe, Mn, Ni, Pb and Zn concentrations in soils were assessed along with their respective concentrations in mushrooms, and were evaluated in conjunction with soil properties, including K, P and Na content, CaCO3 equivalent percentage, mechanical composition, pH and organic matter. In particular, Cu, Pb, Zn and Ni displayed a high variability in their total and bioavailable concentrations measured in the upper soil layer. Relatively high Pb and Ni contents were measured in mushrooms, while Cu, Zn, Fe and Mn concentrations varied considerably. No significant correlations were detected between total concentrations of heavy metals in soils and mushrooms, whereas bioavailable fractions for several metals were significantly correlated with their respective content in A. bisporus, C. comatus, P. candolleana and V. gloiocephalus. K, Na and P concentrations in soils were associated to the content of several metals in fruit-bodies. The effect of soil texture on metals accumulation by mushrooms was species-dependent since high correlations were found for V. gloiocephalus and C. comatus only. Interactions between metals content in fruit-bodies seem to be species-specific except for Ni vs. Fe and Mn vs. Fe, which are positively correlated in all cases. Overaccumulation of metals in fruit-bodies was established only in respect to the bioavailable fractions of Cu, Mn, Zn and Ni in soil. The levels of toxicity for Pb were exceeded in mushrooms of five species, whereas the rest of the heavy metals (with the exception of Cu) were detected at lower contents than their recommended dietary allowances or tolerable upper intake levels.

Abstract
The aims of this study were to determine Cu, Mn, Se, and Zn content in wild mushrooms collected from unpolluted areas of the eastern Green Lungs of Poland (GLP) territory, to compare them to some popular species of cultivated mushrooms, evaluate mushroom contribution to the daily intake of the studied bioelements, and to determine their possible toxic effect resulting from potentially excessive mushroom consumption from areas recognized as ecologically uncontaminated. Bioelements were determined in 21 species of edible mushrooms: eighteen species of wild mushrooms and three species of popular cultivated mushrooms. The mean Cu, Mn, Se, and Zn content (in µg/g, dry mass DM) ranged from 10.6–123.1, 12.2–41, 0.13–13.3, and 68.3–184, respectively. A comparison with recommended dietary allowance (RDA) for Cu, Se, and Zn as well as adequate intake (AI) for Mn demonstrated that a 100 g fresh mass (FM) portion of mushroom species with the highest content of a given element can meet the demand for Cu, Mn, Se and Zn at 203%, 14–17%, 211%, and 16–22%, respectively. A comparison of the content of the examined bioelements contained in one portion of mushrooms (100 g FM) against the toxicological intake limits for different chemical elements with the provisional maximum tolerable daily intake (PMTDI) and upper intake level (UL) showed no risk of toxicity for the evaluated mushroom species.

Abstract
Abstract
Two edible, cultivable mushroom species of the family Strophariaceae, Kuehneromyces mutabilis (sheathed woodtuft) and Hypholoma capnoides (conifer tuft), were studied using proton nuclear magnetic resonance metabolomic approach. The variation in the metabolites of the two species and their metabolic behaviour regarding caps and stipes and different collection sites were analysed by multivariate analysis methods. Altogether 169 cap and stipe samples of the mushrooms were investigated. The clearest difference between the species was in the sugar composition, which was more diverse in H. capnoides. When mushroom samples collected from different locations were compared, more variance was found in H. capnoides, whereas K. mutabilis appeared more homogeneous as a species. As far as the caps and stipes were concerned, in both species the amount of α-α-trehalose was clearly higher in the stipes, and the caps contained a larger proportion of the amino acids and organic acids.

Abstract
The wild mushroom Lactarius deliciosus from China was studied for the first time to obtain information about its chemical composition, antioxidant, and antihyperglycemic activities. Nutritional value, dietary fiber, fatty acids, metal elements, free sugars, free amino acids, organic acids, flavor 5′-nucleotides, and volatile aroma compounds were determined. Potential antioxidant and antihyperglycemic activities were also tested by investigating 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2′-Azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radicals scavenging activities, ferric ion reducing activity, as well as α-amylase and α-glucosidase inhibitory activities using ethanol and aqueous extracts. The results showed that L. deliciosus was a good wild mushroom with high protein, carbohydrate, and dietary fiber contents, while low in fat and calorie, extensive unsaturated fatty acids contents, with negligible health risks about harmful metal elements. Twenty kinds of free amino acids were detected with a total content 3389.45 mg per 100 g dw. Flavor 5′-nucleotides including 5′-CMP, 5′-UMP, 5′-IMP, and 5′-AMP were 929.85, 45.21, 311.75, and 14.49 mg per 100 g dw, respectively. Mannitol (7825.00 mg per 100 g dw) was the main free sugar, and quininic acid (729.84 mg per 100 g dw) was the main organic acid. Twenty-five kinds of volatile aroma compounds were identified, acids (84.23%) were the most abundant compounds based on content, while aldehydes (15 of 25) were the most abundant compounds based on variety. In addition, both ethanol and aqueous extracts from L. deliciosus exhibited excellent antioxidant activity. While in antihyperglycemic activity tests, only ethanol extracts showed inhibitory effects on α-amylase and α-glucosidase.

Abstract
Amanita ponderosa are wild edible mushrooms that grow in some microclimates of Iberian Peninsula. Gastronomically this species is very relevant, due to not only the traditional consumption by the rural populations but also its commercial value in gourmet markets. Mineral characterisation of edible mushrooms is extremely important for certification and commercialization processes. In this study, we evaluate the inorganic composition of Amanita ponderosa fruiting bodies (Ca, K, Mg, Na, P, Ag, Al, Ba, Cd, Cr, Cu, Fe, Mn, Pb, and Zn) and their respective soil substrates from 24 different sampling sites of the southwest Iberian Peninsula (e.g., Alentejo, Andalusia, and Extremadura). Mineral composition revealed high content in macroelements, namely, potassium, phosphorus, and magnesium. Mushrooms showed presence of important trace elements and low contents of heavy metals within the limits of RDI. Bioconcentration was observed for some macro- and microelements, such as K, Cu, Zn, Mg, P, Ag, and Cd. A. ponderosa fruiting bodies showed different inorganic profiles according to their location and results pointed out that it is possible to generate an explanatory model of segmentation, performed with data based on the inorganic composition of mushrooms and soil mineral content, showing the possibility of relating these two types of data.

Abstract
In order to ensure raw consumption safety the dissipation behavior, migration, postharvest processing, and dietary risk assessment of five pyrethroids in mushroom (Auricularia polytricha Mont.) cultivated under Chinese greenhouse-field conditions. Half-lives (t1/2) of pyrethroids in fruiting body and substrate samples were 3.10-5.26 and 17.46-40.06 d, respectively. Fenpropathrin dissipated rapidly in fruiting bodies (t1/2 3.10 d); bifenthrin had the longest t1/2. At harvest, pyrethroid residues in A. polytricha (except fenpropathrin) were above the respective maximum residue limits (MRLs). Some migration of lambda-cyhalothrin was observed in the substrate-fruit body system. In postharvest-processing, sun-drying and soaking reduced pyrethroid residues by 25-83%. We therefore recommend that consumers soak these mushrooms in 0.5% NaHCO₃ at 50 °C for 90 min. Pyrethroids exhibit a particularly low PF value of 0.08-0.13%, resulting in a negligible exposure risk upon mushroom consumption. This study provides guidance for the safe application of pyrethroids to edible fungi, and for the establishment of MRLs in mushrooms to reduce pesticide exposure in humans.

Abstract
Toxic heavy metal contamination in Chinese edible herbs has raised a worldwide concern. In this study, heavy metals in Epimedii Folium, an edible medicinal plant in China, were quantitatively analyzed. Variations of heavy metals in different species, in various organs (i.e., leaves, stems, and roots), in wild-growing and cultivated plants, and in 35 market samples of Epimedii Folium, were systematically investigated. In all of Epimedium samples, Hg (mercury) was not detectable (0.00 μg/g). Four species, Epimedium pubescens, Epimedium sagittatum, Epimedium brevicornu, and Epimedium wushanense, were found to contain Cu (copper) and Pb (lead). And contents of Cu and Pb in E. brevicornu were significantly higher than those in other species (P < 0.01). In wild-growing and cultivated Epimedium plants, Cd (cadmium) and As (arsenic) were not detectable, and concentrations of Cu and Pb in wild-growing plants were significantly higher than those in cultivated plants (P < 0.01). Cd was not detectable in leaves, roots, and stems, while organ specificity was apparent in the distribution of Cu, As, and Pb. And the highest levels of Cu and Pb were observed in roots and leaves, respectively. In Chinese markets, several samples of Epimedii Folium contained excessive Cu, Cd, As, and Pb beyond the national permissible limits. In summary, there was a large variation of heavy metals among Epimedii Folium samples, and Cu and Pb were the most important heavy metals contaminating the edible medicinal plant. Application of Epimedii Folium to drug and food industries will need to focus more on toxic heavy metal contamination.

Abstract
Agaricus bisporus species (J.E. Lange) Imbach one of the most popular Basidiomycota species was chosen for the research because of its dietary and medicinal value. The presented herein studies included determination of essential mineral accumulation level in the mycelium of A. bisporus, cultivated on liquid cultures in the medium supplemented with addition of the chosen metals' salts. Quantitative analyses of Zn, Cu, Mg, and Fe in liquid cultures made it possible to determine the relationship between accumulation of the selected mineral in A. bisporus mycelium and the culture conditions. Monitoring of the liquid cultures and determination of the elements' concentrations in mycelium of A. bisporus were performed using the flame technique of AAS method. Concentration of Zn in the mycelium, maintained in the medium with the addition of its salt, was in a very wide range from 95.9 to 4462.0 mg/g DW. In the analyzed A. bisporus mycelium, cultured in the medium enriched with copper salt, this metal concentration changed from 89.79 to 7491.50 mg/g DW; considering Mg in liquid cultured mycelium (medium with Mg addition), its concentration has changed from 0.32 to 10.55 mg/g DW. The medium enriched with iron salts has led to bioaccumulation of Fe in mycelia of A. bisporus. Determined Fe concentration was in the range from 0.62 to 161.28 mg/g DW. The proposed method of liquid A. bisporus culturing on medium enriched with the selected macro- and microelements in proper concentrations ratio have led to obtaining maximal growth of biomass, characterized by high efficiency of the mineral accumulation. As a result, a dietary component of increased nutritive value was obtained.

Abstract
Heavy metals cause serious problems in the environment, and they can be accumulated in organisms, especially in the higher fungi. The concentration of Ni, Cr, Pb, Cd, and Hg in 10 species of edible mushrooms in Medvednica Nature Park, Croatia was therefore determined. In addition, the similarity between the studied species was determined by cluster analysis based on concentrations of the aforementioned metals in the fruiting bodies. The contents of nickel, chromium, lead, cadmium, and mercury in the fruiting bodies of mushrooms were obtained by X-ray fluorescence spectrometry. The highest concentrations of Ni (3.62 mg kg(-1)), Cr (3.01 mg kg(-1)), and Cd (2.67 mg kg(-1)) were determined in Agaricus campestris. The highest concentration of Pb (1.67 mg kg(-1)) was determined in Macrolepiota procera, and the highest concentration of Hg (2.39 mg kg(-1)) was determined in Boletus edulis. The concentration of all heavy metals significantly differed (p < 0.001) between examined saprophytic and ectomycorrhizal mushrooms. Considering anatomical part of the fruiting body (cap-stipe), a considerably higher concentration of the analyzed elements was found in the cap for all mushroom species. According to calculated bioconcentration factors, all the examined species were found to be bioexclusors of Ni, Cr, and Pb and bioaccumulators of Cd and Hg. Cluster analysis performed on the basis of the accumulation of the studied metals revealed great phenotypic similarity of mushroom species belonging to the same genus and partial similarity of species of the same ecological affiliation.

Abstract
During many years of industrial development, soil system was contaminated with large amounts of toxic metals. In order to investigate the mobility and availability of metals from soil to mushrooms, the content of 13 elements (Al, Ba, Cd, Co, Cr, Cu, Fe, Mn, Ni, Pb, Sr, Ti, and Zn), in caps and stipes of wild-grown edible mushroom Macrolepiota procera and soil substrates, collected from five sites in Rasina region in central Serbia, was determined. Soil samples were subjected to the sequential extraction procedure proposed by the Community Bureau of Reference in order to fractionate acid-soluble/exchangeable, reducible, oxidizable, and residual fractions. Metal concentrations were determined by inductively coupled plasma optical emission spectrometer and inductively coupled plasma mass spectrometer and the results subjected to multivariate data analysis. A principal component analysis distinguished mushrooms samples from different geographical areas and revealed the influence of soil composition on metal content in mushrooms. Hierarchical cluster analyses confirmed that the first three phases of extraction were the most important for metal uptake by mushrooms from soil. The bioconcentration factors and translocation factors for each metal were also calculated. These results showed that M. procera could serve as a good dietary source of essential elements, especially Cu, Zn, Mn, and Fe but the consumption of mushrooms may pose a health risk for consumers during the "season of mushrooms," due to the presence of cadmium.

Abstract
In this work, we evaluated the rate of entry of heavy metals into the edible parts of wild mushrooms, from central Spiš area. The area is characterized by extremely high content of heavy metals particularly mercury in abiotic and biotic components of ecosystems. The toxicity of heavy metals is well known and described. Known is also the ability of fungi to accumulate contaminants from substrates in which mushrooms grow. We have collected commonly consumed species of mushrooms (Russula vesca., Macrolepiota procera, Lycoperdon pyriforme, Lecinum piceinum, Boletus reticulatus). Sampling was conducted for two years 2012 and 2013. The samples taken mushrooms and substrates on which to grow, we determined heavy metal content (Cd, Pb, Cu), including total mercury content modified by atomic absorption spectrometry (AMA - 254). In the substrate, we determined the humus content and pH value. The heavy metal content in soils were evaluated according to Law no. 220/2004 Z.z The exceedance limit values of Cd, Pb, Cu and Hg was recorded. Most significantly the respective limit was recorded in soil samples in the case of mercury. The determined concentration Hg was 39.01 mg.kg-1. From the results, we evaluated the degree of ability to bioaccumulate heavy metals different kinds of fungi. We also evaluated the health safety of the consumption of these fungi on the comparison with the limit values provided in the food code of SR. We recorded a high rate of accumulation of mercury in the species Boletus reticulatus and Macrolepiota procera. For these types we recorded the most significant than allowed concentrations of mercury in mushrooms. The highest recorded concentration reached 17.64 mg.kg-1 Hg in fresh matter. The limit value was exceeded also in the case of copper. We do not recommend to increased consumption of wild mushrooms in the reference area.

Abstract
The aim of this study was to investigate and compare the levels of eight metallic elements in the fruiting bodies of Bay Bolete (Boletus badius; current name Imleria badia) collected from ten sites in Poland to understand better the value of this popular mushroom as an organic food. Bay Bolete fruiting bodies were collected from the forest area near the towns and villages of Kętrzyn, Poniatowa, Bydgoszcz, Pelplin, Włocławek, Żuromin, Chełmno, Ełk and Wilków communities, as well as in the Augustów Primeval Forest. Elements such as Ca, Fe, K, Mg, Mn, Na and Zn were analyzed by inductively coupled plasma atomic emission spectroscopy (ICP-OES), and mercury by cold vapor atomic absorption spectrometry (CV-AAS). This made it possible to assess the nutritional value of the mushroom, as well as possible toxicological risks associated with its consumption. The results were subjected to statistical analysis (Kruskal-Wallis test, cluster analysis, principal component analysis).

Abstract
Thirteen elements (Na, K, Ca, Mg, Fe, Mn, Cu, Zn, Cr, Co, Cd, Ni and Pb) in 11 different wild edible plants (WEP) (Amaranthus retroflexus, Foeniculum vulgare, Cichorium intybus, Glebionis coronaria, Sonchus spp., Borago officinalis, Diplotaxis tenuifolia, Sinapis arvensis, Papaver rhoeas, Plantago lagopus and Portulaca oleracea) collected from countryside and urban areas of Bari (Italy) were determined. B.officinalis and P.rhoeas could represent good nutritional sources of Mn and Fe, respectively, as well as A.retroflexus and S.arvensis for Ca. High intake of Pb and Cd could come from P.lagopus and A.retroflexus (1.40 and 0.13 mg kg(-1) FW, respectively). WEP may give a substantial contribution to the elements intake for consumers, but in some cases they may supply high level of elements potentially toxic for human health. Anyway, both ANOVA and PCA analyses have highlighted the low influence of the harvesting site on the elements content.

Abstract
The amount of the trace elements As, Ba, Cd, Cr, Cu, Hg, Li, Mn, Ni, Pb, Rb, Se, Sr, and Zn was measured in top soils and edible mushrooms, Boletus edulis, Macrolepiota procera, collected at five distinct green microhabitats inside the Lucca province, North-Central Italy (years 2008-2009). Results showed a top soil element content within the Italian statutory limits. Concerning the amount of mushroom elements, we observed significant species-differences obtaining higher levels of Ni, Rb, and Se in B. edulis or As, Pb, Cu in M. procera. Bioaccumulation factors (BCFs: element in mushroom/element in soil) resulted species-dependent and element-selective: in particular, B. edulis preferentially accumulated Se (BCFs varying from 14 to 153), while M. procera mainly concentrated Cu (BCFs varying from 5 to 15). As well, both species displayed between-site BCF differences. By a multivariate principal component approach, cluster analysis (CA), we could resolve two main clusters of soil element composition, corresponding to the most ecologically divergent sites. Besides, CA showed no cluster relating to element contents of B. edulis at the different collection sites, while a separation in groups was found for M. procera composition with respect to harvesting locations, suggesting uptake systems, in this saprotrophic species, sensitive to microhabitat. Regarding consumer safety, Cd, Hg, Pb levels resulted sometime relevant in present samples, never reaching values from current literature on mushrooms collected in urban-polluted areas. Our findings encourage a deeper assessment of the molecular mechanisms of metal intake by edible mushrooms, encompassing genetic biochemical and geo-ecological variables, with particular awareness to element bioavailability in soils and fungi.

Abstract
The objectives of this survey were (1) to assess for the first time the Cd, Cu, Cr, Fe, Mn, Ni, Pb and Zn contents in wild edible mushrooms (Russula delica, Lactarius sanguifluus, Lactarius semisanguifluus, Lactarius deliciosus, Suillus bellinii) from the island of Lesvos, (2) to investigate the metals' variability among the species, as well as in relation to the chemical composition of the underlying soil, comparing mushrooms collected from volcanic and serpentine substrates and (3) to estimate metal intake by the consumption of the mushrooms under consideration. The trace metals in 139 samples were determined by flame or flameless atomic absorption spectroscopy. The median metal concentrations were as follows: Cd: 0.14; Cr: 0.10; Cu: 8.51; Fe: 30.3; Mn: 5.26; Ni: 0.34; Pb: 0.093 and Zn: 64.50, all in mgkg(-1) dry weight. The observed concentrations are among the lowest reported for mushrooms from Europe or Turkey, while Pb and Cd values did not exceed the limits set by the European Union. Significant species- and substrate-related differences in the metal contents were found, but the variability did not follow a uniform pattern for all the metals in all mushroom species. As a general trend, the mushrooms growing in serpentine sites contained higher Cd, Cr and Ni than those from volcanic sites. The calculated bioconcentration factors (BCFs) showed that none of the mushrooms can be regarded as a metal bioaccumulator, although BCF values slightly above unity were found for Zn in the three Lactarius species, and for Cu in R. delica. The studied mushrooms could supply considerable amounts of essential metals such as Zn and Cr. On the other hand, the consumption of R. delica collected from volcanic soils could provide 12% of the Cd daily tolerable intake and as high as 53% when collected from serpentine soils. Nonetheless, our results indicate that the regular consumption of wild edible mushrooms from Lesvos is quite safe for human health.

Abstract
The content of 19 metals (Al, V, Cr, Co, Ni, Cu, Zn, Ga, Rb, Sr, Zr, Nb, Cs, Ba, Ce, Pb, Th, U and Nd) was investigated in 15 edible species of phylum Basidiomycota collected in an area with quartzite acidic soils in a province of the central Spain. The study explores the differences in metal accumulation in relation to fungal species, and the results were related to metal content in soil through the determination of bioconcentration factors. Regarding the highest concentrations, Zn, Al, Cu and Rb were the metals more accumulated in the sporocarps. Notable concentrations were also found in Sr, Zr, Ba, Cs and Ce. The major bioconcentration factors were found for Cu and Zn in sporocarps of Agaricus silvicola and Lepista nuda. Regarding the different species, Tricholoma equestre and Cantharellus cibarius were those with the greatest capacity to absorb trace elements, and in contrast, Amanita caesarea and Agaricus campestris showed the lowest values. The cluster analysis shows that there are some species with the same nutritive physiology that share similarities in the absorptive behaviour. Lactarius sanguifluus and Lactarius deliciosus, both ectomycorrhizas of the genus Pinus, are closely related, and Clitocybe gibba, L. nuda and Marasmius oreades, all of them saprobes on soil organic matter, are very close too.

Abstract
In this study, concentrations of heavy metals (Cd, Cr, Cu, Pb, and Zn) were determined in three edible mushroom species (Lactarius deliciosus, Russula delica, and Rhizopogon roseolus) collected in five sampling sites in Canakkale province, Turkey. Mean values of Cd, Cr, Cu, Pb, and Zn were 0.72, 0.26, 28.34, 1.53, and 64.62 mg/kg, respectively. The highest concentrations of Cd, Cu, Pb, and Zn were determined in species R. delica, while Cr was observed in L. deliciosus. In terms of the nutritional aspect, taking into account the concentration of Provisional Tolerable Weekly Intake recommended by FAO/WHO, the maximum concentration of Cd is a restrictive factor for consumption of the collected mushroom species. The concentrations of the other elements have no health risks when consumed at optimal levels.

Abstract
Although the fruit of the carob tree (Ceratonia siliqua L. Fabaceae) is nutritious and widely available in Turkey, especially in West and South Anatolia, much remains to be learned about its nutrient composition. The main goal of our study was to determine if there are differences in the content of certain nutrients in commercially-prepared carob flour (CPCP) and domestic or home-prepared carob powder (HPCP). Sucrose was the main sugar in CPCP and HPCP. Total protein was 40% lower in CPCP than HPCP due mainly to decreases in the content of several essential amino acids. However, except for lysine in CPCP, HPCP and CPCP compared favourably to a WHO protein standard. There were large differences in terms of their content of the two essential fatty acids, linoleic and alpha-linolenic acid, and the linoleic acid/alpha-linolenic acid ratio was 3.6 for CPCP, and 6.1 for HPCP. Manganese and iron were 2.5-fold higher in HPCP than CPCP. This study demonstrates that carob flour prepared in either the household or industrially is a good source of many, but not all essential nutrients, and that commercial processing of carob fruit into flour seems to affect its content of several important nutrients.

Abstract
The metal (Cu, Ni, Cd, Hg, As, Pb) contents in wild edible mushrooms collected from three different sites in China were determined by atomic absorption spectrometry and atomic fluorescence spectrometry. All element concentrations were determined on a dry weight basis. A total of 11 species was studied, five being from the urban area and six from rural areas in China. The As content ranged from 0.44 to 1.48 mg/kg. The highest As content was seen in Macrolepiota crustosa from the urban area, and the lowest in Russula virescens from rural areas. A high Ni concentration (1.35 mg/kg) was found in Calvatia craniiformis from the urban area. The lowest Ni level was 0.11 mg/kg, for the species R. virescens and Cantharellus cibarius. The Cu content ranged from 39.0 to 181.5 mg/kg. The highest Cu content was seen in Agaricus silvaticus and the lowest in C. cibarius. The Pb content ranged from 1.9 to 10.8 mg/kg. The highest Pb value was found in C. craniiformis. The Cd content ranged from 0.4 to 91.8 mg/kg. The highest Cd value was found in M. crustosa. The Hg content ranged from 0.28 to 3.92 mg/kg. The highest Hg level was found in Agaricus species. The levels of the heavy metals Cd, Pb, and Hg in the studied mushroom species from urban area can be considered high. The metal-to-metal correlation analysis supported they were the same source of contamination. High automobile traffic was identified as the most likely source of the contamination. Based upon the present safety standards, consumption of those mushrooms that grow in the polluted urban area should be avoided.

Abstract
The uptake and transfer of natural radionuclides, other than (40)K, from soil to mushrooms has been somewhat overlooked in the literature. Their contribution to the dose due to the consumption of mushrooms was considered negligible. But the contribution of (210)Pb in areas unaffected by any recent radioactive fallout has been found to be significant, up to 35% of the annual dose commitment in Spain. More than 30 species of mushrooms were analyzed, and the (210)Pb detected was in the range of 0.75-202 Bq/kg d.w. A slight difference was observed between species with different nutritional mechanisms (saprophytes > or = mycorrhizae). The (210)Pb content was correlated with the stable lead content, but not with its predecessor in the uranium radioactive series, (226)Ra. This suggested that (210)Pb was taken up from the soil by the same pathway as stable lead. The bioavailability of (210)Pb in soil was determined by means of a sequential extraction procedure (NH(4)OAc, 1M HCl, 6M HCl, and residue). About 30% of the (210)Pb present in the soil was available for transfer to mushrooms, more than other natural radionuclides in the same ecosystem. Lycoperdon perlatum, Hebeloma cylindrosporum, and Amanita curtipes presented the highest values of the available transfer factor, ATF. Abstract
Fructification organs of Calvatia excipuliformis, Lycoperdon perlatum, Laccaria amethystea, Armillaria mellea, Marasmius oreades, Xerula radicata, Cantharellus cibarius, Craterellus cornucopioides, Cantharellus tubaeformis, Hypholoma fasciculare, Clitocybe gibba, Collybia dryophila, Lepista nuda and Mycena aetites were collected from different localities in Black sea region of Turkey. Their trace metals concentrations were determined by atomic absorption spectrometry after wet and microwave digestion. The results were (as mg/kg) 150-1741 for iron, 15.5-73.8 for copper, 28.6-145 for manganese, 43.5-205 for zinc, 4.8-42.7 for aluminium and 0.9-2.6 for lead. The levels of lead analyzed in some edible mushroom samples were found to be higher than legal limits. The relative standard deviations (R.S.D.) were found below 10%. The accuracy of procedure was confirmed by certified reference material.

Abstract
Larch Bolete (Suillus grevillei) mushrooms collected at spatially distant sites in Poland showed on relative abundance of K, P, Mg, Rb, Al, Ca, Fe (at mg/g dw), Ag, Ba, Cd, Cu, Mn, Na and Zn (at microg/g dw) and less of Co, Cr, Ni, Pb and Sr (<1 microg/g dw). Amongst these elements Rb and K were highly bioconcentrated by Larch Bolete (BCF around 1000 and 300 for the caps), and weaker were Cu, Mg, Na, P and Zn (BCF between 4.1+/-2.5 and 62+/-21). Ag and Cd were bioconcentrated mainly in caps with BCF value of 25+/-16 and 13+/-10. Al, Ba, Ca, Co, Cr, Fe, Mn, Ni, Pb and Sr were excluded (BCF<1) by this species. Intake of meal prepared of 300 g of fresh fruiting bodies of Larch Bolete picked-up at the Western Beskid or Pogórze Wielickie sites in the south of Poland will result in exceeding of oral reference dose set for cadmium. In the case of silver, copper or zinc content a meal of 300 g of fresh or 30 g dried Larch Bolete will not result in exceeding reference doses for these elements. Extent of dose that customer would be exposed after eating of three 300 g fresh the Larch Bolete meals during a week will led to intake of lead and zinc within margin of 0.9-5.1% and 9-16% of PTWI for these elements, respectively. In the case of cadmium and specimens from the Western Beskid or Pogórze Wielickie sites in the south of Poland intake will slightly (around 10%) exceed PTWI value, and for other sites will not exceed (between 2% and 26% of PTWI).

Abstract
Due to the consumption of the herby cheese in south eastern Anatolia-Turkey is at high ratio, chemical parameters such as dry matter, pH, acidity, aCl, protein, fat and trace metal contents in 50 different herby cheeses produced at this region have been determined in the presented study. The content of lead, copper, cobalt, nickel, chromium, cadmium, and iron have been analyzed by flame atomic absorption spectrometer in air/acetylene flame after combination ash digestion method and wet digestion method. The mean concentration of lead, copper, cobalt, nickel, chromium and cadmium in our samples are higher than literature values except iron.
