Trace elements determination in edible seaweeds by an optimized and validated ICP-MS method

Potential for Saccharina latissima Flour as a Functional Ingredient in the Baking Sector

The healthy "superfood" sector is currently quickly developing in Europe, and grocery stores are increasingly stocking macroalgae food supplements. Due to its high amount of protein, fiber, and minerals, numerous studies have demonstrated that seaweed has a significant potential for usage as a functional ingredient in the food sector. The aim of the current study was to evaluate the rheological (ICC 173 standard method) and chemical potentials of using Saccharina latissima flour in the bread sector. The calcium level of S. latissima flour was found to be 8236 mg/kg, the magnesium level was 6041 mg/kg, the K concentration was 62,088 mg/kg, the iron content was 35.23 mg/kg, the P content was 2263 mg/kg, and the I content was 12,530 mg/kg, significantly higher values than those of wheat flour. The antioxidant properties of the algae powder used were highlighted by the analysis of the total polyphenol content and its antioxidant activity (DPPH method). Four bread samples, which were compared with the control sample entirely made of wheat flour in order to evaluate their potential, were made, using a replacement degree from 1.5% to 6% of S. latissima. Rheological analyses were completed using the ICC 173 standard method, as well as sensorial analysis, where a panel of assessors' evaluations compared the sensory properties of samples with 1.5-6% of S. latissima flour to a control sample manufactured with flour type 650. It was concluded that sample A1 (1.5% algae flour) has sensorial properties similar to those of the control sample, and, for the other samples, the properties began to degrade with the increase in the amount of algae flour. Textural analyses performed during 96 h of storage show that the firmness and gumminess increase with the addition of algae flour and over time. The conclusions indicated that samples comprising 4.5% and 6% of S. latissima are unsatisfactory from a rheological and sensory perspective, while samples having 1.5% and 3% of S. latissima can be viewed as sources of fiber and minerals.

Metal and metalloid bioaccumulation in dried red seaweed Hypnea musciformis and health risk assessment for consumers

This study measured 22 metal and metalloid concentrations in Hypnea musciformis from the Bakkhali River estuary and Saint Martin's Island, Bangladesh and determined their potential impact on consumption. Student t-tests showed a significant variation in metal concentrations between the two sampling sites (p < 0.05). Mean concentrations of Co (2.49 ± 0.05 mg/kg), Fe (793.29 ± 11.76 mg/kg), Mn (368.72 ± 4.87 mg/kg), Pb (3.82 ± 0.02 mg/kg), V (11.23 ± 0.20 mg/kg) and Zn (16.60 ± 0.28 mg/kg) were higher in samples collected from the Bakkhali River estuary compared to Saint Martin's Island, while mean concentrations of Ca (484.18 ± 4.68 mg/kg), Cd (2.44 ± 0.03 mg/kg), Mg (2112.70 ± 17.80 mg/kg), Mo (1.57 ± 0.06 mg/kg), Sr (2377.57 ± 29.98 mg/kg), and Ti (258.27 ± 4.62 mg/kg) were higher in samples collected from Saint Martin's Island. Eight heavy metals (Pb, Cd, Zn, Cu, Ni, Mn, Cr, Fe) were used to assess potential health risks for adults, but no potential health risk was detected (HQ value>1). This study reveals positive Se-HBV for H. musciformis collected from both sampling sites, indicating no potential risks involved with Hg toxicity.

Fundamentals in applications of algae biomass: A review

Algae play an extremely important ecological role. They form the basis of trophic webs, produce oxygen that allows the respiration of many of the organisms in aquatic environments, absorb CO₂, and serve as refuge areas and habitats for thousands of species. Many species can also absorb organic pollutants from seawater. Algae have been used for many centuries by humans as a source of food, fertilizer, fodder, and for the extraction of compounds with antifungal, antiviral, anticancer, and antibacterial properties. More recently, some species have been used for the production of biofuels. It has been shown that mixing small proportions of algae with the feed of cattle can reduce methane emissions from their digestive activity by more than 95%. One of the most widespread but least known applications of algae is the extraction of their phycocolloids for utilization in food, pharmaceutical, wine, and textile industries, among others. These compounds have gelling, stabilizing, and thickening properties and are therefore frequently included in creams, ice creams, cheeses, jellies, flavored milks, sauces, shampoos, medications, toothpaste, and many other products. The phycocolloids agar and carrageenan are extracted from red algae, whereas alginate is extracted from brown algae, being used in dental impressions, emulsifying lotions, and paints, among others, and in the preparation of wine and beer. Algae are of particular interest in the research and development of new biosorbent materials, not only because of their high adsorption capacity, but also because they are present in the seas and oceans in abundant and easily accessible quantities. Marine algae are a promising biosorbent for the removal of heavy metals and various pollutants and, due to their intrinsic characteristics, have received increasing attention in recent decades. Their application as biosorbents for the sorption of heavy metals and radionuclides could be interpreted as the use of waste to remove waste. Algae have attracted particular interest in the field of biotechnology for economic reasons, given that large amounts are naturally produced and left lying on beaches as waste material. The composition of algae biomass makes it a promising candidate for an extensive list of applications that continues to lengthen. The development of appropriate technologies and policies can transform the presence of algae in coastal ecosystems from an unpleasant and potentially harmful phenomenon into a source of major benefits. This review discusses the capacity of algae biomass to remove pollutants and also delves into its applicability in the production of dyes, oils, and biofuels and for animal feed and fertilizer industries, among others. Further research is warranted on strategies to convert a biomass that is currently considered waste into a means of addressing environmental problems.

Urban mining from biomass, brine, sewage sludge, phosphogypsum and e-waste for reducing the environmental pollution: Current status of availability, potential, and technologies with a focus on LCA and TEA

Rapid industrialization, improved standards of living, growing economies and ever-increasing population has led to the unprecedented exploitation of the finite and non-renewable resources of minerals in past years. It was observed that out of 100 BMT of raw materials processed annually only 10% is recycled back. This has resulted in a strenuous burden on natural or primary resources of minerals (such as ores) having limited availability. Moreover, severe environmental concerns have been raised by the huge piles of waste generated at landfill sites. To resolve these issues, 'Urban Mining' from waste or secondary resources in a Circular Economy' concept is the only sustainable solution. The objective of this review is to critically examine the availability, elemental composition, and the market potential of the selected secondary resources such as lignocellulosic/algal biomass, desalination water, sewage sludge, phosphogypsum, and e-waste for minerals sequestration. This review showed that, secondary resources have potential to partially replace the minerals required in different sectors such as macro and microelements in agriculture, rare earth elements (REEs) in electrical and electronics industry, metals in manufacturing sector and precious elements such as gold and platinum in ornamental industry. Further, inputs from the selected life cycle analysis (LCA) & techno economic analysis (TEA) were discussed which showed that although, urban mining has a potential to reduce the greenhouse gaseous (GHG) emissions in a sustainable manner however, process improvements through innovative, novel and cost-effective pathways are essentially required for its large-scale deployment at industrial scale in future.

Heavy metals and metalloids in edible seaweeds of Saint Martin's Island, Bay of Bengal, and their potential health risks

The present study aimed to assess the levels of heavy metals and metalloids present in six seaweeds and their potential impact on consumption. The highest concentration of 11 metals, i.e., Be (0.47 mg/kg), Co (4.34 mg/kg), Cr (23.46 mg/kg), Cu (11.96 mg/kg), Fe (2290.26 mg/kg), Li (11.55 mg/kg), Ni (13.75 mg/kg), Pb (6.67 mg/kg), Ti (736.62 mg/kg), Tl (0.14 mg/kg), and V (33.09 mg/kg) were observed in Enteromorpha intestinalis (green seaweeds). Besides, the highest concentration of Ca (1071.09 mg/kg), Cd (5.81 mg/kg), Mn (1003.41 mg/kg), Sr (2838.86 mg/kg), and Zn (41.95 mg/kg) were found in Padina tetrastromatica (brown seaweeds). Eight metals (Pb, Cd, Zn, Cu, Ni, Mn, Cr, Fe) have been used to assess the potential health risk for adults, but no potential health risk was detected (HQ value > 1). The HI value of E. intestinalis and P. tetrastromatica were >1, implying that these two seaweeds are not safe for human consumption as there is a carcinogenic health risk for adults.

Multi-elemental Characterization of Semolina Samples by Inductively Coupled Plasma-Tandem Mass Spectrometry (ICP-MS/MS)

The precise characterization of the elemental composition of cereals and cereal products is becoming crucial to assess their nutritional values, geographical labeling, and also toxicological profile. Inductively coupled plasma-mass spectrometry (ICP-MS) has become popular for the elemental analysis of foods in recent years. Analytical performance of the inductively coupled plasma-tandem mass spectrometry (ICP-MS/MS) is improved with a reaction/collision cell that provides an interference-free analysis of most of the elements including phosphorus and sulfur. In this study, an analytical method was optimized for the quantification of 57 elements using ICP-MS/MS technique and validated for 25 elements that were available in certified reference materials (CRMs). Then, the mineral contents of semolina samples obtained from the durum wheat (Triticum durum) cultivars were analyzed according to the validation procedure. Recoveries of the elements were found in the range of 92-108% for the digested CRM. The method was robust for all elements and the results indicated good precision for the analytical method. The inter- and intra-day precision values were found below 5%, and in the range of 0.11-3.31% and 0.09-4.51%, respectively. Analyzed elements showed significant variability among the semolina samples. The variety and growing conditions might have influences on the elemental composition of semolina samples.

Probabilistic determination of a maximum acceptable level of contaminant to reduce the risk of overexposure for a novel or emerging food: the case of cadmium in edible seaweed in the French population

European and French populations are overexposed to cadmium (Cd) through their foods. The risk of increased cadmium exposure for consumers needs to be limited by reduced maximum limits (ML) for novel foodstuffs such as edible seaweed in France. The objective was to derive a low and protective cadmium concentration in edible seaweeds to limit cadmium overexposure in consumers. To do so, we applied a probabilistic approach to the data collected on French seaweed consumers, taking into account other sources of exposure for cadmium. This approach led to the identification of a cadmium concentration which should ensure that the seaweed-consuming population does not exceed the tolerable daily intake (TDI) of cadmium according to a probability of cases, when simultaneously exposed to other cadmium dietary sources. Considering the 5% of the population exceeding TDI, the estimated ML is equal to 0.35 mg Cd kg^-1dry matter of seaweed as an unprocessed food with a 95% confidence interval of [0.18,1.09]. The proposed approach is generic and could be applied to other relevant food/substance pairs when considering the setting of MLs in the regulatory system. It ensures better protection of consumer health.

Metal Contamination of Oman Sea Seaweed and Its Associated Public Health Risks

Oman Sea region is a major gateway for international and local shipping. Metal pollution of aquatic environment is primarily caused by such shipping and industrial activities. Agricultural runoffs are also of concern. Seaweed contamination with heavy metals in this area is therefore a distinct possibility. We examined seaweed of Oman Sea for heavy metal content and potential risk of its consumption to the public. During winter of 2019, water, sediment, and seaweed were collected along twelve stations on the coast of Oman Sea. Triplicates of each sample were analyzed for metal content by atomic absorption spectroscopy. Biomarkers of metals in seaweed (metallothionein and phytochelatin) were also analyzed. A significant positive correlation exists among levels of Zn, Ni, Pb, Cr, Cu, and Fe in water, sediment, and seaweed (P < 0.05). Cadmium correlations were weak. The highest levels of metallothionein and phytochelatin were found in brown and red seaweed (118.6 µg/g wet weight, 16.4 amol/cell; 111.4 µg/g ww, 12.1 amol/cell), respectively. For nickel and lead, human consumption of red, brown, and green seaweed was associated with "some health hazard," with a target hazard quotient of > 1. We conclude that concerns over heavy metal contamination of some parts of Oman Sea are valid, and we invite policy makers to implement measures for protection of public and environment from metal toxic effects in the region.

An Investigation of Toxic Metal Levels (Pb, Cd, Cr, As, Hg) in Dried Porphyra and Laminaria Collected from Coastal Cities, China

This investigation was aimed at determining the concentration levels of five toxic heavy metals (lead, cadmium, chromium, arsenic, and mercury) in dried Porphyra and Laminaria samples from coastal city of China. Inductively coupled plasma-mass spectrometry (ICP-MS) was used for determination of lead, cadmium and total arsenic. Atomic fluorescence spectrometry was used for mercury, and liquid chromatography coupled with ICP-MS was used for arsenic speciation. The mean concentrations of lead, cadmium, chromium, total arsenic, and mercury were 0.96 ± 0.03 mg/kg, 2.62 ± 0.07 mg/kg, 1.64 ± 0.08 mg/kg, 36.67 ± 0.53 mg/kg, and 7.56 ± 0.42 μg/kg for Porphyra samples and 0.61 ± 0.03 mg/kg, 0.48 ± 0.02 mg/kg, 3.78 ± 0.56 mg/kg, 43.85 ± 1.42 mg/kg, and 46.61 ± 2.02 μg/kg for Laminaria samples. The results were comparable with previous similar research. The potential health risk assessment was conducted by comparing the calculated weekly intakes of toxic metals from Porphyra and Laminaria with provisional tolerable weekly intake. Consumption of these seaweeds does not seem to pose a risk for the consumers' health regarding their content of heavy metals. However, the potential health risk of cadmium should not be overlooked for consumers with high intake of Porphyra.

Elemental Composition of Algae-Based Supplements by Energy Dispersive X-ray Fluorescence

The aim of this study is to evaluate the elemental composition of fifteen algae-based supplements commonly sold in the Portuguese market, by energy dispersive X-ray fluorescence. Despite the fact that the majority of Kelp samples were a good source of iodine, the levels observed might well contribute to an excess in the human body, which can cause dysfunction of the thyroid gland. Furthermore, the presence of lead in Sea spaghetti, Arame, Hijiki and Wakame caused a considerable risk to public health vis a vis possible ingestion of a high daily dose. Regarding arsenic, great variability was observed in all the samples with concentrations equal to or above 60 μg/g in the case of Arame, KelpJ and Hijiki. Although algae mainly accumulate organic arsenic, some also contain high levels of its inorganic form, as is commonly pointed out for Hijiki. Thus, regular ingestion of these supplements must also take into account the mentioned facts. There is no doubt that these supplements are also good sources of other nutrients, but the lack of accurate regulations and control should alert consumers to avoid indiscriminate use of these types of products.

Functional Meat Products as Oxidative Stress Modulators: A Review

High meat consumption has been associated with increased oxidative stress mainly due to the generation of oxidized compounds in the body, such as malondialdehyde, 4-hydroxy-nonenal, oxysterols, or protein carbonyls, which can induce oxidative damage. Meat products are excellent matrices for introducing different bioactive compounds, to obtain functional meat products aimed at minimizing the pro-oxidant effects associated with high meat consumption. Therefore, this review aims to summarize the concept and preparation of healthy and functional meat, which could benefit antioxidant status. Likewise, the key strategies regarding meat production and storage as well as ingredients used (e.g., minerals, polyphenols, fatty acids, walnuts) for developing these functional meats are detailed. Although most effort has been made to reduce the oxidation status of meat, newly emerging approaches also aim to improve the oxidation status of consumers of meat products. Thus, we will delve into the relation between functional meats and their health effects on consumers. In this review, animal trials and intervention studies are discussed, ascertaining the extent of functional meat products' properties (e.g., neutralizing reactive oxygen species formation and increasing the antioxidant response). The effects of functional meat products in the frame of diet-gene interactions are analyzed to 1) discover target subjects that would benefit from their consumption, and 2) understand the molecular mechanisms that ensure precision in the prevention and treatment of diseases, where high oxidative stress takes place. Long-term intervention-controlled studies, testing different types and amounts of functional meat, are also necessary to ascertain their positive impact on degenerative diseases.

Analysis of Minerals and Heavy Metals Using ICP-OES and FTIR Techniques in Two Red Seaweeds (Gymnogongrus griffithsiae and Asparagopsis taxiformis) from Tunisia

In this study, the mineral and heavy metals (arsenic (As), cadmium (Cd), copper (Cu), iron (Fe), mercury (Hg), potassium (K), manganese (Mn), sodium (Na), phosphorus (P), and lead (Pb)) in two red Tunisian seaweeds Gymnogongrus griffithsiae (G. griffithsiae) and Asparagopsis taxiformis (A. taxiformis), were evaluated. Mineral and trace element analyses were achieved using inductively coupled plasma optical emission spectrometry (ICP-OES). Fourier transform infrared (FTIR) spectroscopy was used to predict the major functional groups that would be implicated in the seaweeds mineral uptake. Our results showed that the studied A. taxiformis species had much higher mineral and heavy metal concentrations than G. griffithsiae. Na (200.60 mg/kg) was the most abundant element followed by K (137.84 mg/kg) > P (35.93 mg/kg) for A. taxiformis species. However, only Na (165.23 mg/kg) and P (51.19 mg/kg) were detected in G. griffithsiae alga. As regards heavy and toxic metals, allowable concentrations have been found in both seaweeds. The concentration ranges for the most undesirable heavy metals were as follows: Pb (0.39-0.51 mg/kg), As (0.11-0.40 mg/kg), Cd (0.01-0.02 mg/kg), and Hg (0.00-0.02 mg/kg). According to FTIR analysis, the major functional groups present in the studied seaweeds were carboxyl, hydroxyl, sulfate, and phosphate groups that are considered as excellent binding sites for metal retention.

Whole Alga, Algal Extracts, and Compounds as Ingredients of Functional Foods: Composition and Action Mechanism Relationships in the Prevention and Treatment of Type-2 Diabetes Mellitus

Type-2 diabetes mellitus (T2DM) is a major systemic disease which involves impaired pancreatic function and currently affects half a billion people worldwide. Diet is considered the cornerstone to reduce incidence and prevalence of this disease. Algae contains fiber, polyphenols, ω-3 PUFAs, and bioactive molecules with potential antidiabetic activity. This review delves into the applications of algae and their components in T2DM, as well as to ascertain the mechanism involved (e.g., glucose absorption, lipids metabolism, antioxidant properties, etc.). PubMed, and Google Scholar databases were used. Papers in which whole alga, algal extracts, or their isolated compounds were studied in in vitro conditions, T2DM experimental models, and humans were selected and discussed. This review also focuses on meat matrices or protein concentrate-based products in which different types of alga were included, aimed to modulate carbohydrate digestion and absorption, blood glucose, gastrointestinal neurohormones secretion, glycosylation products, and insulin resistance. As microbiota dysbiosis in T2DM and metabolic alterations in different organs are related, the review also delves on the effects of several bioactive algal compounds on the colon/microbiota-liver-pancreas-brain axis. As the responses to therapeutic diets vary dramatically among individuals due to genetic components, it seems a priority to identify major gene polymorphisms affecting potential positive effects of algal compounds on T2DM treatment.

Biochemical, Micronutrient and Physicochemical Properties of the Dried Red Seaweeds Gracilaria edulis and Gracilaria corticata

The present study sought to evaluate the nutritional composition and physicochemical properties of two dried commercially interesting edible red seaweeds, Gracilaria corticata and G. edulis. Proximate composition of the dried seaweeds revealed a higher content in carbohydrates (8.30 g/100 g), total crude protein (22.84 g/100 g) and lipid content (7.07 g/100 g) in G. corticata than in G. edulis. Fatty acids profile showed that G. corticata samples contain higher concentrations of saturated fatty acids, such as palmitic and stearic acids, and polyunsaturated ones such as α-linolenic and docosahexaenoic acids. Contrariwise, G. edulis contained higher amounts of monounsaturated oleic acid. Total amino acid content was 76.60 mg/g in G. corticata and 65.42 mg/g in G. edulis, being the essential amino acid content higher in G. edulis (35.55 mg/g) than in G. corticata (22.76 mg/g). Chlorophyll a was found in significantly higher amounts in G. edulis (17.14 μg/g) than G. corticata, whereas carotenoid content was significantly higher in G. corticata (12.98 μg/g) than in G. edulis. With respect to physical properties, both water- and oil-holding capacities were similar in both seaweeds, whereas swelling capacity was higher in G. edulis. In view of the results, the present study suggests that G. corticata and G. edulis contains important nutrients for human health and are possible natural functional foods.

Metals accumulation in edible marine algae collected from Thondi coast of Palk Bay, Southeastern India

This study aimed to monitor the concentrations of metals including Cd, Pb, Cu and Zn in commercially important and commonly edible brown, red and green algal species collected from Thondi coast, southeast India. Green seaweed Chaetomorpha linum contained higher (Cd 8.51 mg kg^-1, Pb 5.24  mg kg^-1, Cu 15.38 mg kg^-1, and Zn 22.34  mg kg^-1) concentrations of metals than other tested seaweed samples. The concentrations of metals significantly varied within and between the investigated species of seaweed samples (P < 0.05). It was revealed that Cd, Pb, Cu and Zn metals were present in the species of seaweeds at different concentration. The residual levels of metals were less than the maximum allowable levels specified for human consumption compared to PTWIs, JECFA, FAO/WHO, FSSAI and EC. This study suggested that exposure to the analysed metals (Cd, Pb, Cu and Zn) through seaweeds consumption does not raise serious health effects to consumers and it is safe for human consumption.

Secondary Metabolites Profiling of Acinetobacter baumannii Associated with Chili (Capsicum annuum L.) Leaves and Concentration Dependent Antioxidant and Prooxidant Properties

Secondary bioactive compounds of endophytes are inevitable biomolecules of therapeutical importance. In the present study, secondary metabolites profiling of an endophytic bacterial strain, Acinetobacter baumannii, were explored using GC-MS study. Presence of antioxidant substances and antioxidant properties in chloroform (CHL), diethyl ether (DEE), and ethyl acetate (EA) crude extracts of the endophytic bacteria were studied. Total phenolic content (TPC), total flavonoid content (TFC), total antioxidant capacity (TAC), 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, and ferrous ion chelating assay were evaluated. A total of 74 compounds were identified from the GC-MS analysis of the EA extract representing mostly alkane compounds followed by phenols, carboxylic acids, aromatic heterocyclic compounds, ketones, aromatic esters, aromatic benzenes, and alkenes. Among the two phenolic compounds, namely, phenol, 2,4-bis(1,1-dimethylethyl)- and phenol, 3,5-bis(1,1-dimethylethyl)-, the former was found in abundance (11.56%) while the latter was found in smaller quantity (0.14%). Moreover, the endophytic bacteria was found to possess a number of metal ions including Fe(II) and Cu(II) as 1307.13 ± 2.35 ppb and 42.38 ± 0.352 ppb, respectively. The extracts exhibited concentration dependent antioxidant and prooxidant properties at high and low concentrations, respectively. The presence of phenolic compounds and metal ions was believed to play an important role in the antioxidant and prooxidant potentials of the extracts. Further studies are suggested for exploring the untapped resource of endophytic bacteria for the development of novel therapeutic agents.

Application of biomarkers in brown algae (Cystoseria indica) to assess heavy metals (Cd, Cu, Zn, Pb, Hg, Ni, Cr) pollution in the northern coasts of the Gulf of Oman

In this study, selected biomarkers-Phytochelatin (PC) and Metallothionein (MT)- were measured in the brown algae (i.e., Cystoseria indica) obtained from the Gulf of Oman. Chemical analyses were performed to measure the concentration of heavy metals (Cd, Cu, Zn, Pb, Hg, Ni, and Cr) in the brown algae. Zn had the highest concentration followed by Cr>Ni>Cu>Pb>Cd>Hg. Performing a spatial analysis revealed that heavy metals had a significant difference (p < 0.05) among sampling sites. Mean PC and MT ranged between 5 and 13 amol/cell and 105-134 µg/g ww, respectively. Significant correlations were found between heavy metal (Cd, Cu, Zn, Pb, Ni, and Cr) concentrations and MT. However, statistically significant correlations were only found between heavy metals (Cd, Zn) and PC (p < 0.01). The results showed that PC reacts to heavy metals less than MT in brown algae (C. indica) which limits the use of PC in heavy metals biomonitoring.

Minerals from Macroalgae Origin: Health Benefits and Risks for Consumers

Seaweeds are well-known for their exceptional capacity to accumulate essential minerals and trace elements needed for human nutrition, although their levels are commonly very variable depending on their morphological features, environmental conditions, and geographic location. Despite this variability, accumulation of Mg, and especially Fe, seems to be prevalent in Chlorophyta, while Rhodophyta and Phaeophyta accumulate higher concentrations of Mn and I, respectively. Both red and brown seaweeds also tend to accumulate higher concentrations of Na, K, and Zn than green seaweeds. Their valuable mineral content grants them great potential for application in the food industry as new ingredients for the development of numerous functional food products. Indeed, many studies have already shown that seaweeds can be used as NaCl replacers in common foods while increasing their content in elements that are oftentimes deficient in European population. In turn, high concentrations of some elements, such as I, need to be carefully addressed when evaluating seaweed consumption, since excessive intake of this element was proven to have negative impacts on health. In this regard, studies point out that although very bioaccessible, I bioavailability seems to be low, contrarily to other elements, such as Na, K, and Fe. Another weakness of seaweed consumption is their capacity to accumulate several toxic metals, which can pose some health risks. Therefore, considering the current great expansion of seaweed consumption by the Western population, specific regulations on this subject should be laid down. This review presents an overview of the mineral content of prevalent edible European macroalgae, highlighting the main factors interfering in their accumulation. Furthermore, the impact of using these marine vegetables as functional ingredients or NaCl replacers in foods will be discussed. Finally, the relationship between macroalgae’s toxic metals content and the lack of European legislation to regulate them will be addressed.

Screening of seaweeds in the East China Sea as potential bio-monitors of heavy metals

Seaweeds are good bio-monitors of heavy metal pollution and have been included in European coastal monitoring programs. However, data for seaweed species in China are scarce or missing. In this study, we explored the potential of seaweeds as bio-monitor by screening the natural occurring seaweeds in the "Kingdom of seaweed and shellfish" at Dongtou Islands, the East China Sea. Totally, 12 seaweed species were collected from six sites, with richness following the sequence of Rhodophyta > Phaeophyta > Chlorophyta. The concentration of heavy metals (Cu, Cr, Ni, Zn, Pb, Cd, As) in the seaweeds was determined, and the bioaccumulation coefficient was calculated. A combination of four seaweeds, Pachydictyon coriaceum, Gelidium divaricatum, Sargassum thunbergii, and Pterocladiella capillacea, were proposed as bio-monitors due to their high bioaccumulation capabilities of specific heavy metals in the East China Sea and hence hinted the importance of using seaweed community for monitoring of pollution rather than single species. Our results provide first-hand data for the selection of bio-monitor species for heavy metals in the East China Sea and contribute to selection of cosmopolitan bio-monitor communities over geographical large area, which will benefit the establishment of monitoring programs for coastal heavy metal contamination.

Macrophytes as bioindicators of heavy metal pollution in estuarine and coastal environments

The Derwent estuary, in Tasmania (Australia), is highly contaminated with heavy metals with significant levels in both sediments and benthic fauna. However, little is known about metal content in benthic primary producers. We characterized metal content (Arsenic, Cadmium, Copper, Lead, Selenium and Zinc) in twelve species of macrophyte, including red, green, and brown algae, and seagrasses, from the Derwent. The metals, arsenic, copper, lead, and Zinc were detected in all of the macrophytes assessed, but the levels differed between species. Seagrasses accumulated the highest concentrations of all metals; with Zn levels being particularly high in the seagrass Ruppia megacarpa (from the upper Estuary) and Pb was detected in Zostera muelleri (from the middle estuary). Ulva australis was ubiquitous throughout the middle-lower estuary and accumulated Zn in relatively high concentrations. The findings suggest that analysis of multiple species may be necessary for a comprehensive understanding of estuary-wide metal pollution.

Silicic Acid and Beer Consumption Reverses the Metal Imbalance and the Prooxidant Status Induced by Aluminum Nitrate in Mouse Brain

BACKGROUND

Emerging evidence suggests that by affecting mineral balance, aluminum (Al) may enhance some events associated with neurodegenerative diseases.

AIM

To examine the effect of Al(NO3)3 exposure on brain Al, cooper (Cu), iron (Fe), magnesium (Mg), manganese (Mn), silicon (Si), and zinc (Zn) levels, and the metal-change implication in brain oxidant and inflammatory status.

METHODS

Four groups of six-week-old male NMRI mice were treated for three months: i) controls, administrated with deionized water; ii) Al, which received Al(NO3)3; iii) Al+silicic acid, which were given Al(NO3)3 plus silicic acid; and iv) Al+beer, which received Al(NO3)3 plus beer.

RESULTS

Brain Al and TBARS levels and TNFα and GPx expressions increased, while Cu, Mn, and Zn levels, and catalase and CuZn-SOD expression decreased (at least, p < 0.05) in Al versus control animals. Al, Si, and TBARS levels and TNFα expression decreased (p < 0.05) in Al+silicic acid and Al+beer specimens while Cu, Mn, and Zn levels and antioxidant expression increased versus the Al group. Brain Al levels correlated negatively with those of Cu, Fe, Mn, and Zn, and catalase, CuZn-SOD, and GPx enzyme expressions but positively with Si and TBARS levels and TNFα expression. Two components of the principal component analysis (PCA) explained 71.2% of total data variance (p < 0.001). PCA connected the pro-oxidant markers with brain Al content, while brain Zn and Cu levels were closer to antioxidant enzyme expression.

CONCLUSION

Administration of Al(NO3)3 induced metal imbalance, inflammation, and antioxidant status impairment in the brain. Those effects were blocked to a significant extent by silicic acid and beer administration.

Applicability of an in vitro gastrointestinal digestion method to evaluation of toxic elements bioaccessibility from algae for human consumption

This study aimed to investigate the bioaccessibility of toxic elements, including aluminum (Al), arsenic (As), nickel (Ni), cadmium (Cd), and lead (Pb) in five commercial algae consumed by humans in Italy. The degree of bioaccessibility of these elements may have important implications for human health. Simulation of gastrointestinal tract (GIT) digestion was divided into three stages through use of synthetic saliva, gastric, and bile-pancreas solutions. After pre-treatment with a saliva solution, seaweed samples underwent one of the following treatments: (1) simulated gastric digestion only or (2) simulated complete GIT digestion (gastric digestion followed by bile-pancreas digestion). The bioaccessibility of these toxic elements ranged from approximately 5% to 73% and from 4% to 77% in gastric and GIT digestion, respectively. The bioaccessibility of Al and Pb is poor (5-15%), As and Ni were fairly (40-55%), while Cd displayed a high bioaccessibility. No significant differences in toxic elements mobility was found between samples that only underwent gastric digestion compared to those that underwent a complete GIT digestion.

210Polonium bioaccessibility assessment in algae for human consumption: An in vitro gastrointestinal digestion method

The occurrence and mobility of natural radioactive element as 210Polonium (210Po) in 13 commercial algae consumed in Italy by humans were determined because the effects on human health need to take into account the bioavailability of these elements. The simulation of gastrointestinal (GIT) digestion was divided into three stages and was accomplished using three different artificial solutions: saliva, gastric, and synthetic bile-pancreas solution. The same sample was treated in two different ways: a) only gastric digestion and b) complete GIT digestion (gastric digestion followed by bile-pancreas solution). The difference between Po gastric mobility with respect to that found for GIT digestion was not significant; in fact, Po mobility exhibited a mean value 17.2 ± 15.1% and 19.5 ± 11.5% for gastric and GIT digestion, respectively.

Radiochemical Characterization of Algae Products Commercialized for Human Consumption

Natural radionuclides and Cs were determined by alpha (U, U, Th,Po,Th, and Th) and gamma spectrometry (Cs, K, Ra, Pb, and Ra via Ac) in 14 dried seaweeds commercialized for human nutrition in Italy. The study was carried out in order to provide information on the concentrations of natural and artificial radionuclides. Cesium-137 (Cs) concentrations in all analyzed samples were always <2.0 Bq kg (dry weight), while the naturally occurring radionuclide concentrations were detectable in all the samples and significantly different in the analyzed seaweeds. Potassium-40 (K) showed a mean activity of 894 Bq kg with a range of 14.1-3,256 Bq kg. The mean of activity for Po was 5.1 Bq kg with a range of 1.5-13.6 Bq kg. The mean of activity for Pb was 8.9 Bq kg with a range of 2.9-25.7 Bq kg. The mean of U and Ra activity concentration was 4.7 and 8.4 Bq kg with a range of 0.1-27.7 and 3.2-24.6 Bq kg, respectively. The mean activity concentrations for Th, Th, and Ra were 0.69, 3.0, and 6.6 Bq kg with ranges of 0.05-3.39, 0.24-15.7, and 0.5-35.6 Bq kg, respectively. Radionuclide activity concentrations were within ranges reported in the scientific literature. The committed effective dose due to all the radionuclides analyzed, from ingestion of 1 kg y of seaweeds, accounts for 0.66% of the natural radiation exposure in Italy.

Essential and toxic elements in seaweeds for human consumption

Essential elements (K, Ca, P, S, Cl, Mn, Fe, Cu, Zn, Ni, Br, and I) and nonessential or toxic elements (Al, Ti, Si, Rb, Sr, As, Cd, Sn, and Pb) were determined by energy-dispersive polarized x-ray fluorescence spectrometry in 14 seaweeds purchased in local specialty stores in Italy and consumed by humans. The differences in elements between the algae species reached up to 2-4 orders of magnitude. Lithothamnium calcareum showed the highest levels of Ca, Al, Si, Fe, and Ti. Palmaria palmata showed the highest concentrations of K, Rb, and Cl. The highest content of S was in Chondrus crispus. Laminaria digitata contained the highest concentrations of total As, Cd, Sn, Br, and I. The highest concentration of Zn was in Chlorella pyrenoidosa. Ulva lactuca displayed the highest levels of Cu, Ni, Mn, and Pb. Iodine levels ranged from 3.4 in Chlorella pyrenoidosa to 7316 mg/kg(dry) in Laminaria digitata. The nutrimental importance of essential elements was assessed using nutritional requirements. The results showed that the consumption of algae might serve as an important source of the essential elements. Health risk due to the toxic elements present in seaweed was estimated using risk estimators. Total As, Cd, and Pb concentrations ranged from <1 to 67.6, to 7.2 and to 6.7 mg/kg(dry) respectively; therefore, their contribution to total elemental intake does not appear to pose any threat to the consumers, but the concentrations of these elements should be controlled to protect the consumer against potential adverse health risks.

Stabilisation of microalgae: Iodine mobilisation under aerobic and anaerobic conditions

Mobilisation of iodine during microalgae stabilisation was investigated, with the view of assessing the potential of stabilised microalgae as an iodine-rich fertiliser. An iodine-rich waste microalgae (0.35 ± 0.05 mg I g(-1) VS(added)) was stabilised under aerobic and anaerobic conditions. Iodine mobilisation was linearly correlated with carbon emission, indicating iodine was in the form of organoiodine. Comparison between iodine and nitrogen mobilisation relative to carbon emission indicated that these elements were, at least in part, housed separately within the cells. After stabilisation, there were 0.22 ± 0.05 and 0.19 ± 0.01 mg g(-1) VS(added) iodine remaining in the solid in the aerobic and anaerobic processed material respectively, meaning 38 ± 5.0% (aerobic) and 50 ± 8.6% (anaerobic) of the iodine were mobilised, and consequently lost from the material. The iodine content of the stabilised material is comparable to the iodine content of some seaweed fertilisers, and potentially satisfies an efficient I-fertilisation dose.

Evaluation of physicochemical properties, proximate and nutritional composition of Gracilaria edulis collected from Palk Bay

Gracilaria edulis, a red alga present in southeast coast of India was evaluated for its nutritional composition. FT-IR analysis of soluble polysaccharides revealed the presence of galactans, 3,6-anhydro-α-L-galactopyranose, sulphated galactose and the gelling agent agar, with the sulphate content estimated as 51.01 μg/mg of polysaccharide. Results of physicochemical properties and nutritional profile reveal the presence of dietary fibre (8.9 ± 0.62% DW), carbohydrate (101.61 ± 1.8 mg/g DW), crude protein (6.68 ± 0.94 mg/g DW) and lipid content (8.3 ± 1.03 mg/g DW). G. edulis contains biologically important fatty acids like palmitic acid (2.06%), linolenic acid (2.56%), and oleic acid (1.98%). The other nutritional components present in high amounts are proline, chlorophyll A and B, all the essential amino acids and vitamin A, E and C. These findings suggest that G. edulis has potent nutritional value which might be used as a source of nutrients for human and animals.

Algal biomass analysis by laser-based analytical techniques--a review

Algal biomass that is represented mainly by commercially grown algal strains has recently found many potential applications in various fields of interest. Its utilization has been found advantageous in the fields of bioremediation, biofuel production and the food industry. This paper reviews recent developments in the analysis of algal biomass with the main focus on the Laser-Induced Breakdown Spectroscopy, Raman spectroscopy, and partly Laser-Ablation Inductively Coupled Plasma techniques. The advantages of the selected laser-based analytical techniques are revealed and their fields of use are discussed in detail.

Proximate composition, amino Acid, mineral, and heavy metal content of dried laver

Laver, a red algae belonging to the genus Porphyra, is one of the most widely consumed edible seaweeds. The most popular commercial dried laver species, P. tenera and P. haitanensis, were collected from Korea and China, respectively, and evaluated for proximate composition, amino acids, minerals, trace heavy metals, and color. The moisture and ash contents of P. tenera and P. haitanensis ranged from 3.66~6.74% and 8.78~9.07%, respectively; crude lipid and protein contents were 1.96~2.25% and 32.16~36.88%, respectively. Dried lavers were found to be a good source of amino acids, such as asparagine, isoleucine, leucine, and taurine, and γ-aminobutyric acid. K, Ca, Mg, Na, P, I, Fe, and Se minerals were selected for analysis. A clear regional variation existed in the amino acid, mineral, and trace metal contents of lavers. Regular consumption of lavers may have heath benefits because they are relatively low in fat and high in protein, and contain functional amino acids and minerals.

Determination of essential and toxic elements in Cordyceps kyushuensis Kawam by inductively coupled plasma mass spectrometry

In this study, a total of 20 elements (essential, non-essential and toxic): lithium (Li), sodium (Na), potassium (K), gallium (Ga), magnesium (Mg), zinc (Zn), iron (Fe), copper (Cu), manganese (Mn), vanadium (V), chromium (Cr), nickel (Ni), cobalt (Co), molybdenum (Mo), selenium (Se), barium (Ba), tin (Sn), arsenic (As), lead (Pb) cadmium (Cd) and mercury (Hg) in natural and cultured Cordyceps kyushuensis have been determined by means of inductively coupled plasma mass spectrometry (ICP-MS). Cultured stroma, natural stroma and natural worm were digested by microwave-assisted method before analysis. The proposed ICP-MS method was validated by analyzing a certified reference material (CRM) GBW10015 (spinach). The results of one-way analysis of variance (ANOVA) revealed that the element concentrations in the three kinds of samples were significantly different (p<0.05). Except for Mg, Zn, Cu, the values of other elemental contents were the highest in the stroma of natural C. kyushuensis. In comparison with the worm, the concentrations of determined elements in wild stroma were higher. The remarkable difference of elemental contents between cultured and natural stroma may be caused by distinct growing environment. This finding highlighted the usefulness of ICP-MS elemental analysis and enhanced the value of C. kyushuensis as a candidate for nourishing food based on its composition.

Investigation of major and trace element distribution in the extraction-transesterification process of fatty acid methyl esters from microalgae Chlorella sp

This work reports, for the first time, the determination of major and trace elements (Al, As, Ba, Ca, Cd, Co, Cr, Cu, Fe, K, La, Mg, Mn, Mo, Na, Ni, P, Pb, S, Se, Sn, Sr, Ti, Tl, U, V, and Zn) in the fractions of the synthesis of fatty acid methyl esters (FAMEs). These include fresh microalgae, residual biomass, lipid fraction, crude FAMEs, insoluble fraction and purified FAMEs from microalgae Chlorella sp. A microwave-assisted digestion procedure in closed vessels was applied for sample digestion and subsequent element determination by inductively coupled plasma-based techniques. The proposed method was suitable for the multielement determination in FAMEs and its fractions obtained from microalgae. The element concentration was compared with results found in the literature and a careful discussion about the use of residual biomass for different applications was performed.

Inhibition of Lipopolysaccharide (LPS)-induced inflammatory responses by Sargassum hemiphyllum sulfated polysaccharide extract in RAW 264.7 macrophage cells

Sargassum hemiphyllum , a kind of brown seaweed generally found along coastlines in East Asia, has long served as a traditional Chinese medicine. S. hemiphyllum has shown an anti-inflammatory effect; however, its mechanism has not been elucidated clearly. This study explored S. hemiphyllum for its biomedical effects. S. hemiphyllum sulfated polysaccharide extract (SHSP) was first prepared; the mouse macrophage cell line (RAW 264.7) activated by lipopolysaccharide (LPS) was used as a model system. The secretion profiles of pro-inflammatory cytokines, including IL-1β, IL-6, TNF-α, and NO, were found significantly to be reduced in 1-5 mg/mL dose ranges of SHSP treatments. RT-PCR analysis suggested SHSP inhibits the LPS-induced mRNA expressions of IL-β, iNOS, and COX-2 in a dose-dependent manner. At protein levels, Western blot analysis demonstrated a similar result for NF-κB (p65) in cytosol/nuclear. Taken together, the anti-inflammatory properties of SHSP may be attributed to the down-regulation of NF-κB in nucleus.

Metal bioavailability and risk assessment from edible brown alga Laminaria japonica, using biomimetic digestion and absorption system and determination by ICP-MS

A new biomimetic digestion and absorption system, including in vitro bionic digestion and biomimetic membrane extraction, was used for the first time for the pretreatment of edible Laminaria japonica . After bionic digestion, 11 species of trace metals (V, Cr, Mn, Fe, Ni, Cu, Zn, Se, As, Cd, and Pb) in the resulting chyme were transformed into their final coordinated complexes and then absorbed by the biomembrane. Similar to the biomembrane between gastrointestinal tract and blood vessels, monolayer liposome was used for the first time as a biomembrane model. Affinity-monolayer liposome metals (AMLMs) were separated, determined by ICP-MS, and then used for the metal bioavailability assessment as the bioassimilated part. The action of gastrointestinal acidity and components (including digestive enzymes) was assessed on the basis of the concentration of AMLMs; the safe dosage and tolerable upper intake level of L. japonica for adults were proposed as 33.3 and 230.8 g/day, respectively.
