Abstract
Projected changes in climate patterns, increase of weather extreme, water scarcity, and land degradation are going to challenge agricultural production and food security. Currently, studies concerning effects of climate change on agriculture mainly focus on yield and quality of cereal crops. In contrast, there has been little attention on the effects of environmental changes on vegetables that are necessary and key nutrition component for human beings, but quite sensitive to these climatic changes. Therefore, we reviewed the main changes of environmental factors under the current scenario as well as the impacts of these factors on the physiological responses and nutritional alteration of vegetables and the key findings based on modelling. The gaps between cereal crops and vegetables were pinpointed and the actions to take in the future were proposed. The review will enhance our understanding concerning the effects of environmental changes on production, physiological responses, nutrition, and modelling of vegetable plants.

Abstract
Drought and heat stress is known to influence the accumulation of mineral content, antioxidant activity, phenolics, flavonoids and other bioactive compounds in many tolerant leafy vegetables. Amaranthus plants can tolerate adverse weather conditions, especially drought and heat. Therefore, evaluating the influence of drought and heat stress on commercially and medically important crop species like Amaranthus is important to grow the crop for optimal nutritional and medicinal properties. This study investigated the influence of drought and heat stress and a combination of both on the accumulation of phenolic and flavonoid compounds and the antioxidant capacity of African Amaranthus caudatus, A. hypochondriacus, A. cruentus and A. spinosus. Phenolic and flavonoid compounds were extracted with methanol and aqueous solvents and were quantified using liquid chromatography with tandem mass spectrometry (LC-MS/MS). Caffeic acid was the main phenolic compound identified in aqueous extracts of A. caudatus and A. hypochondriacus. Rutin was the most abundant flavonoid compound in all the Amaranthus species tested, with the highest concentration found in A. caudatus. The results suggest a strong positive, but species and compound-specific effect of drought and heat stress on bioactive compounds accumulation. We concluded that heat stress at 40 °C under well-watered conditions and combined drought and heat stress (at 30 °C and 35 °C) appeared to induce the accumulation of caffeic acid and rutin. Hence, cultivation of these species in semi-arid and arid areas is feasible.

Abstract
Flowering Chinese cabbage (Brassica campestris L. ssp. chinensis var. utilis Tsen et Lee) is one of the most popular vegetables in China. However, the loss of the functional ingredients in postharvest flowering Chinese cabbage during storage is still serious, owing to the unclear causes of the metabolic shifts. Herein, benzoic acid, chlorine dioxide, and 1-methylcyclopropene (1-MCP) could maintain the quality of postharvest flowering Chinese cabbage, and 1-MCP showed the best effect. Furthermore, transcript-metabolite profiling of the treatments revealed a transcript-metabolite correlation network of the flavonoid biosynthesis pathways with a range of 3 to 3662 differentially expressed genes (DEGs) and a range of 23 to 37 differentially accumulated metabolites (DAMs). Surprisingly, 1-MCP had the best effect on shelf life among the treatments, although chlorine dioxide could stimulate the expression of four critical differential genes (Bra007142, Bra008792, Bra009358, and Bra027457) involved in delaying flavonoid degradation (hesperetin, chalcone, rutin, baicalein). As a result, our findings will help to improve our understanding of the regulation of flavonoid production in relation to the quality of postharvest flowering Chinese cabbage during storage.

Abstract
Calycosin-7-O-β-D-glycoside (CG), as a flavonoid, plays an important role in the abiotic stress response of Astragalus membranaceus Bge. var. mongholicus (Bge.) Hsiao (A. mongholicus). CG is also an active ingredient in A. mongholicus with high medicinal value. However, the response mechanism of the CG biosynthetic pathway of drought stress is not clear. In this research, drought stress was inflicted upon A. mongholicus, and the variations in flavonoid metabolites and the correlating gene expression in CG biosynthesis were studied in roots, stems, and leaves of A. mongholicus by UHPLC-MRM-MS/MS and qRT-PCR. Drought stress reduced the dry weight and increased the content of malondialdehyde (MDA) and proline. Drought was beneficial to the accumulation of L-phenylalanine and 4-coumaric acid in leaves and promoted the accumulation of all target compounds in the roots, except calycosin. Overexpression of AmIOMT was observed in the leaves, but the content of formononetin which is the product of isoflavone O-methyltransferase (IOMT) catalysis was higher in stems than in leaves. This research aims to further understand the acclimation of abiotic stress and the regulation mechanism of flavonoid accumulation in A. mongholicus.

Abstract
BACKGROUND Vegetable amaranth is a source of natural phytopigments and functional components of the commercial food industry for sustainable health benefits across the globe. It is guessed that recently identified amaranth (drought-tolerant) genotypes may contain ample phytopigments and phytochemicals suitable to extract juice as drinks. Hence, phytopigments and phytochemicals content of amaranth were assessed in detail for suitability as drinks to feed the phytochemicals deficient community across the globe. RESULTS The selected amaranth contained adequate carbohydrates, protein, moisture, and dietary fiber, phytopigments, minerals, phytochemicals including the ability to scavenge radicals. Nine flavonoids compounds were estimated in amaranth genotypes including six flavonols, one flavanol, one flavone, and one flavanone. It is the first effort in which we identified one flavonol such as myricetin, one flavanol, such as catechin, one flavone i. e., apigenin, and one flavanone, like naringenin in drought-tolerant vegetable amaranth. Across six flavonols, quercetin and rutin were the most noteworthy compounds followed by myricetin and isoquercetin. Across the accessions, AT7 and AT15 had abundant phytochemicals, and radical quenching ability including considerable proximate, nutraceuticals, and phytopigments in comparison to the accessions AT3 and AT11. AT15 demonstrated the maximum total flavonols including the highest rutin and hyperoside. AT7 showed high total flavonols including the highest quercetin, isoquercetin, myricetin, and kaempferol. The association of values revealed that studied phytopigments and phytochemicals of vegetable amaranth accessions demonstrated good radical quenching ability of 2,2-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) and 2,2- Diphenyl-1-picrylhydrazyl equivalent to Trolox. CONCLUSIONS These advance lines AT7 and AT15 had abundant nutraceuticals, phytopigments, and phytochemicals including radical quenching ability. These lines might significantly contribute to the promotion of health benefits and feeding the community across the globe deficit in nutraceuticals and antioxidants. Identified flavonoid compounds open the new route for pharmacological study.

Abstract
The present study is a systematic review of the scientific literature reporting content, composition and biosynthesis of glucosinolates (GLS), and their derivative compounds in Brassica family. An amended classification of brassica species, varieties and their GLS content, organized for the different plant organs and in uniformed concentration measure unit, is here reported for the first time in a harmonized and comparative manner. In the last years, the studies carried out on the effect of processing on vegetables and the potential benefits for human health has increased rapidly and consistently the knowledge on the topic. Therefore, there was the need for an updated revision of the scientific literature of pre- and post-harvest modifications of GLS content, along with the role of gut microbiota in influencing their bioavailability once they are ingested. After analyzing and standardizing over 100 articles and the related data, the highest GLS content in Brassica, was declared in B. nigra (L.) W. D. J. Koch (201.95 ± 53.36 µmol g-1), followed by B. oleracea Alboglabra group (180.9 ± 70.3 µmol g-1). The authors also conclude that food processing can influence significantly the final content of GLS, considering the most popular methods: boiling, blanching, steaming, the latter can be considered as the most favorable to preserve highest level of GLS and their deriviatives. Therefore, a mild-processing strategic approach for GLS or their derivatives in food is recommended, in order to minimize the loss of actual bioactive impact. Finally, the human gut microbiota is influenced by Brassica-rich diet and can contribute in certain conditions to the increasing of GLS bioavailability but further studies are needed to assess the actual role of microbiomes in the bioavailability of healthy glucosinolate derivatives.

Abstract
BACKGROUND Bioactive compounds, vitamins, phenolic acids, flavonoids of A. tricolor are the sources of natural antioxidant that had a great importance for the food industry as these detoxify ROS in the human body. These natural antioxidants protect human from many diseases such as cancer, arthritis, emphysema, retinopathy, neuro-degenerative cardiovascular diseases, atherosclerosis and cataracts. Moreover, previous literature has shown that drought stress elevated bioactive compounds, vitamins, phenolics, flavonoids and antioxidant activity in many leafy vegetables. Hence, we study the nutritional and bioactive compounds, phenolic acids, flavonoids and antioxidant capacity of amaranth under drought stress for evaluation of the significant contribution of these compounds in the human diet. RESULTS The genotype VA3 was assessed at four drought stress levels that significantly affected nutritional and bioactive compounds, phenolic acids, flavonoids and antioxidant capacity. Protein, ash, energy, dietary fiber, Ca, K, Cu, S, Mg, Mn, Mo, Na, B content, total carotenoids, TFC, vitamin C, TPC, TAC (DPPH), betacarotene, TAC (ABTS+), sixteen phenolic acids and flavonoids were remarkably increased with the severity of drought stress. At moderate and severe drought stress conditions, the increments of all these components were more preponderant. Trans-cinnamic acid was newly identified phenolic acid in A. tricolor. Salicylic acid, vanilic acid, gallic acid, chlorogenic acid, Trans-cinnamic acid, rutin, isoquercetin, m-coumaric acid and p-hydroxybenzoic acid were the most abundant phenolic compounds in this genotype. CONCLUSIONS In A. tricolor, drought stress enhanced the quantitative and qualitative improvement of nutritional and bioactive compounds, phenolic acids, flavonoids and antioxidants. Hence, farmers of semi-arid and dry areas of the world could be able to grow amaranth as a substitute crop.

Abstract
Four selected Amaranthus tricolor cultivars were grown under four irrigation regimes (25, 50, 80, and 100% field capacity) to evaluate the mechanisms of growth and physiological and biochemical responses against drought stress in randomized complete block design with three replications. Drought stress led to decrease in total biomass, specific leaf area, relative water content (RWC), photosynthetic pigments (chlorophyll a, chlorophyll b, chlorophyll ab), and soluble protein and increase in MDA, H2O2, EL, proline, total carotenoid, ascorbic acid, polyphenols, flavonoids, and antioxidant activity. However, responses of these parameters were differential in respect to cultivars and the degree of drought stresses. No significant difference was observed in control and LDS for most of the traits. The cultivars VA14 and VA16 were identified as more tolerant to drought and could be used for further evaluations in future breeding programs and new cultivar release programs. Positively significant correlations among MDA, H2O2, compatible solutes, and non-enzymatic antioxidant (proline, TPC, TFC, and TAC) suggested that compatible solutes and non-enzymatic antioxidant played vital role in detoxifying of ROS in A. tricolor cultivar. The increased content of ascorbic acid indicated the crucial role of the ASC-GSH cycle for scavenging ROS in A. tricolor.

Four selected vegetable amaranths were grown under four soil water content to evaluate their response in nutrients, minerals, antioxidant leaf pigments, vitamins, polyphenol, flavonoid and total antioxidant activity (TAC). Vegetable amaranth was significantly affected by variety, soil water content and variety × soil water content interactions for all the traits studied. Increase in water stress, resulted in significant changes in proximate compositions, minerals (macro and micro), leaf pigments, vitamin, total polyphenol content (TPC), and total flavonoid content (TFC) of vegetable amaranth. Accessions VA14 and VA16 performed better for all the traits studied. Correlation study revealed a strong antioxidant scavenging activity of leaf pigments, ascorbic acid, TPC and TFC. Vegetable amaranth can tolerate soil water stress without compromising the high quality of the final product in terms of nutrients and antioxidant profiles. Therefore, it could be a promising alternative crop in semi-arid and dry areas and also during dry seasons.

Abstract
Phytonutrients may play important roles in human health and yet only recently a few studies have described phytonutrient consumption patterns, using data obtained from daily consumption methods. We aimed to estimate the phytonutrient content in Taiwanese diets and analyzed main food sources of 10 major phytonutrients. In this study, food items and dietary data gathered with the 24-hour dietary recall from 2908 participants in the 2005–2008 Nutrition and Health Survey in Taiwan were used to create a food phytonutrient database with 933 plant-based foods through integrating database, literature search, and chemical analysis and to appraise phytonutrient consumption status of participants. SUDAAN (Survey Data Analysis) was used for generating weighted phytonutrient intake estimates and for statistical testing. In Taiwanese adults, ~20% met the recommended number of servings for fruits and 30% met that for vegetables from the Taiwan Food-Guide recommendations. However, only 7.4% consumed the recommended numbers for both fruits and vegetables. Those meeting the recommendations tended to be older and with more females compared with those who did not. Phytonutrient intake levels were higher in meeters than nonmeeters. More than 60% of α-carotene, lycopene, hesperetin, epigallocatechin 3-gallate, and isoflavones came from a single phytonutrient-specific food source. In addition, sweet potato leaf, spinach, and water spinach were among the top three sources of multiple phytonutrients. Cross-comparison between this study and two previous studies with similar methodology showed higher mean levels of lycopene and quercetin in the United States, anthocyanidins in Korea, and lutein and zeaxanthin in Taiwan. The Taiwanese phytonutrient pattern is different from that of the Korean and American. It would be interesting to relate phytonutrient patterns to health profiles in the future.

Abstract
Tsai Tai is one of the most widely consumed Brassica vegetables in Asian countries because of its good taste and its nutritional benefits. This study evaluated the antioxidant capacity and possible associated health benefits of 3 Tsai Tai (Brassica chinensis) varieties, namely, Hon Tsai Tai, Pak Choi and Choi Sum. The DPPH radical scavenging ability and reducing power assays were performed to evaluate the in vitro activities of the extracts. Caenorhabditis elegans was used as an in vivo model for evaluation of beneficial health effects, including antioxidant activity and delayed aging. In vitro, the Hon Tsai Tai extract exhibited higher antioxidant activities than Pak Choi and Choi Sum, and the total phenolic contents were significantly correlated with the DPPH and RP values. In vivo, the three assayed Tsai Tai extracts significantly increased resistance against paraquat-induced oxidative stress with an increase in survival rates from 15% to 28% compared with controls. However, only the extract from Hon Tsai Tai significantly prolonged the lifespan of Caenorhabditis elegans, with an 8% increase in the mean lifespan with respect to controls. Further evidence of antioxidant protection was obtained by assessing ROS production via the DCF assay. The analyses of intracellular SOD activity and MDA content confirmed the existence of an antioxidant protective effect. These results suggest that Tsai Tai might serve as a good source of natural antioxidants, and in particular, Hon Tsai Tai could be explored as a potential dietary supplement to retard aging.

Abstract
A three-year field study (2009-2011) was performed to evaluate phytochemicals and antioxidant capacities of two genotypes (HF1 Emeraude and the local variety, Velox) of green cauliflower grown under organic and conventional management. The conventional system increased yield, but had little effect on the dry matter, whereas the organic system increased the soluble solids. Phytochemicals and antioxidant capacity showed significant year-to-year variability. During the third year, the scarce rainfall determined a significant increase of total glucosinolates and a general decrease of antioxidants in all samples. Interestingly, in the same year organic plants were less affected by the unfavorable climatic conditions, as they increased ascorbic acid, polyphenols, and carotenoids with respect to conventional ones. The overall results for the three years showed that the two genotypes responded differently. Compared to the conventional system, Velox showed 24, 21, 13, 48, and 44% higher content of ascorbic acid, polyphenols, carotenoids, volatiles, and antioxidant capacity, respectively. In contrast, no significant increase in the phytochemicals or the antioxidant potential was found in organic Emeraude, with the exception of total volatiles (+41%). These findings suggest that organic cultivation may be highly effective for particular cauliflower genotypes.
