Chromatin Interaction Responds to Breast Muscle Development and Intramuscular Fat Deposition Between Chinese Indigenous Chicken and Fast-Growing Broiler

Skeletal muscle development and intramuscular fat (IMF) content, which positively contribute to meat production and quality, are regulated by precisely orchestrated processes. However, changes in three-dimensional chromatin structure and interaction, a newly emerged mediator of gene expression, during the skeletal muscle development and IMF deposition have remained unclear. In the present study, we analyzed the differences in muscle development and IMF content between one-day-old commercial Arbor Acres broiler (AA) and Chinese indigenous Lushi blue-shelled-egg chicken (LS) and performed Hi-C analysis on their breast muscles. Our results indicated that significantly higher IMF content, however remarkably lower muscle fiber diameter was detected in breast muscle of LS chicken compared to that of AA broiler. The chromatin intra-interaction was prior to inter-interaction in both AA and LS chicken, and chromatin inter-interaction was heavily focused on the small and gene-rich chromosomes. For genomic compartmentalization, no significant difference in the number of B type compartments was found, but AA had more A type compartments versus LS. The A/B compartment switching of AA versus LS showed more A to B switching than B to A switching. There were no significant differences in the average sizes and distributions of topologically associating domains (TAD). Additionally, approximately 50% of TAD boundaries were overlapping. The reforming and disappearing events of TAD boundaries were identified between AA and LS chicken breast muscles. Among these, the HMGCR gene was located in the TAD-boundary regions in AA broilers, but in TAD-interior regions in LS chickens, and the IGF2BP3 gene was located in the AA-unique TAD boundaries. Both HMGCR and IGF2BP3 genes exhibited increased mRNA expression in one-day-old AA broiler breast muscles. It was demonstrated that the IGF2BP3 and HMGCR genes regulated by TAD boundary sliding were potential biomarkers for chicken breast muscle development and IMF deposition. Our data not only provide a valuable understanding of higher-order chromatin dynamics during muscle development and lipid accumulation but also reveal new insights into the regulatory mechanisms of muscle development and IMF deposition in chicken.

Characterization of Oviduct Lining, with Emphasis on the Sperm Storage Tubule Region (Uterovaginal Junction), Correlated with Fertility in Mature and Old Thai Native Hens

The effect of age on fertility was investigated in Thai native chickens. The objective of this study was to determine the effects of age (mature and old) on the morphological characteristics of the reproductive organs and the histological characteristics of the uterovaginal junction (UVJ) tissues, resident sperm in the UVJ, and fertility duration in Thai native hens. We found no differences in the morphological characteristics of the reproductive organs, except for the number of follicles and the sizes of the fifth large yellow follicle in mature hens, which were greater than those in old hens (p < 0.05). The diameter of the sperm storage tubules (SSTs) epithelium was larger in old hens than in mature hens (p < 0.05), whereas the epithelium height was lower in old hens (p < 0.05). The number of sperm in the SSTs was greater in mature hens compared with old hens (p < 0.05). Mature hens showed a higher fertility rate than old hens. Our results suggest that, in old hens, the function of the SSTs is impaired, and sperm cannot be retained. Such a deterioration of the SSTs may be one of the factors involved in the decline in fertility.

Integrated transcriptome and proteome analysis reveals potential mechanisms for differential abdominal fat deposition between divergently selected chicken lines

Genetic selection for meat production performance of broilers concomitantly causes excessive abdominal fat deposition, accompanied by several adverse effects, such as the reduction of feed conversion efficiency and reproduction performance. Our previous studies have identified important genes regulating chicken fat deposition, using the Northeast Agricultural University broiler lines divergently selected for abdominal fat content (NEAUHLF) as an animal model. However, the molecular mechanism underlying fat deposition differences between fat and lean broilers remains largely unknown. Here, we integrated the transcriptome (RNA-Seq) and quantitative proteome (isobaric tags for relative and absolute quantitation, iTRAQ) profiling analyses on abdominal fat tissues from NEAUHLF chicken lines. Differentially expressed genes (2167 DEGs, corrected p-value < 0.01) and differentially abundant proteins (199 DAPs, corrected p-value < 0.05) were identified in lean line compared to fat line. Down-regulated DEGs and DAPs mainly enriched in pathways related to fatty acid metabolism, fatty acid biosynthesis, and PPAR signaling, and interestingly, up-regulated DEGs and DAPs enriched both in lysosome pathway. Moreover, numerous key DEGs and DAPs involved in long-chain fatty acid uptake, in situ lipogenesis (fatty acid and cholesterol synthesis), and lipid droplet accumulation were discovered after integrated transcriptome and proteome analysis. SIGNIFICANCE: Excessive abdominal fat deposition critically affects the health of broilers and causes economic loss to broiler producers, but the molecular mechanism of abdominal fat deposition is still unclear in chicken. We identified key DEGs/DAPs and potential pathways through an integration of chicken abdominal fat tissues transcriptome and proteome analyses. Our findings will facilitate a better revealing the mechanism and provide a novel insight into abdominal fat content discrepancy between the fat and lean chicken lines.

Growth performance and accretion of selected amino acids in response to three levels of dietary lysine fed to fast- and slow-growing broilers

Literature data indicate that feed intake is sensitive to the dietary Lys content particularly in fast-growing birds. From a conceptual and a practical viewpoint, an interaction between genotype (i.e., fast-growing vs. slow-growing birds) and dietary Lys content is of interest, but it needs confirmation owing to a dearth of studies addressing this issue. A study was conducted with 266 Cobb 500 birds and 266 Thai native crossbreed birds serving as models for fast-growing broilers (FGB) and slow-growing broilers (SGB), respectively. Within genotype, chicks were randomly allocated to diets containing either a high (H-LYS = 1.36%), medium (1.17%), or low Lys (1.01%) content. Growth performance and the accretion of protein and selected amino acids were determined in birds from 1 to 21 d of age. Treatments were arranged in a factorial design with 6 replications/treatment. Low Lys vs. H-LYS caused a 42.1% lower feed intake in FGB (P < 0.001), but not in SGB (P = 0.596). The feed conversion ratio (FCR (g feed/g BW gain)) was lowest in FGB (P < 0.001) and increased with decreasing dietary Lys contents (P < 0.001). The Lys induced increase in FCR, however, was more pronounced in SGB (P = 0.025). The absolute protein gain (g/bird) was influenced by the Lys content of feed and decreased by ∼54% and ∼23% in FGB and SGB, respectively (P < 0.001). The efficiency (% of intake) of protein accretion was found to be greater in FGB (P ≤ 0.001) and decreased with decreasing dietary Lys (P ≤ 0.001). The efficiency of Lys accretion was found to be negatively affected by the dietary Lys content in FGB (P < 0.001) but not SGB (P_{genotype × dietary Lys} = 0.008). It can be concluded that a dietary Lys content of 1.01% does not safeguard both growth performance and body protein accretion efficiency in both FGB and SGB. The suboptimal growth performance in FGB, but not SGB, is partially counteracted by a Lys-induced reduction in feed intake.

The body fat distribution and fatty acid composition of muscles and adipose tissues in geese

In this study, we evaluated the body fat distribution and fatty acid composition of muscles and adipose tissues of Yangzhou geese, including thirty 60-day-old goslings (15 males and 15 females) and 20 320-day-old geese (10 males and 10 females). Adipose tissues of Yangzhou geese were distributed widely and could be divided into 5 types: subcutaneous fat, abdominal fat, sartorial fat, neck fat, and mesenteric fat. Higher contents of abdominal fat, sartorial fat, neck fat, and mesenteric fat but a lower content of subcutaneous fat were found in adult geese than in goslings (P ≤ 0.05). Adult female geese deposited more fat than adult male geese (P ≤ 0.05). No difference was found in the fat distribution and fat content between male and female goslings (P > 0.05). The breast muscle of adult geese was characterized by a higher content of total monounsaturated fatty acids (ΣMUFAs) and a lower content of n-6 polyunsaturated fatty acids (ΣPUFAs n-6) than that of goslings (P ≤ 0.05). Lower concentrations of total saturated fatty acids and ΣPUFA were found in adult female geese than in female goslings (P ≤ 0.05). In comparison with adult female geese, the breast muscle of adult male geese had higher total saturated fatty acids and stearic acid (P ≤ 0.05). For the thigh muscle, adult female geese had a higher ΣMUFAs content than adult male geese (P ≤ 0.05). In adipose tissues, adult geese had a higher Σn-6/Σn-3 ratio but had lower contents of erucic acid, linolenic acid, arachidonic acid, docosatetraenoic acid, and ΣPUFA n-3 than goslings, and adult female geese had a higher ΣMUFAs content than adult male geese (P ≤ 0.05). In conclusion, adult geese, especially adult female geese, accumulated more fat than goslings. Both age and sex affected the fatty acid composition of muscles and adipose tissues in geese. This research provides essential information not only for the nutritional evaluation of geese but also for the consumption and processing of goose products.

Effect of Fermented Cottonseed Meal on the Lipid-Related Indices and Serum Metabolic Profiles in Broiler Chickens

This study aimed to investigate the changes of lipid-related gene and serum metabolites in broiler chickens fed with fermented cottonseed meal (FCSM) diet, through quantitative real-time PCR and metabolomics analysis. Totally, 180 1-day-old Cobb broilers were randomly assigned to two groups with six replicates of 15 birds in each. The two diets consisted of a control diet supplemented with 0% FCSM (CON group) and an experimental diet with 6% FCSM (fermented by Candida tropicalis) replacing the soybean meal (FCSM group). The results showed that both abdominal fat content and subcutaneous fat thickness significantly reduced (p < 0.05) in response to dietary FCSM supplementation at the age of 21 d. Serum concentrations of glucose, triglyceride, and low-density lipoprotein cholesterol decreased (p < 0.05) in FCSM fed broilers compared with CON fed broilers, while the levels of epinephrine and growth hormone in serum, liver and abdominal fat tissue were higher (p < 0.05) in FCSM than in CON fed broilers. The activity of hormone-sensitive esterase and lipoprotein lipase (LPL) in the liver and abdominal fat were higher (p < 0.05) in FCSM than CON group. Additionally, compared with the CON group (p < 0.05), the expression of peroxisome proliferator-activated receptor alpha and LPL genes were upregulated in the livers of FCSM group broilers. Gene expressions of hormone-sensitive lipase and LPL in the abdominal fat tissue were also upregulated (p < 0.05) with the broilers fed with FCSM diets. A total of 20 significantly different metabolites were obtained in the serum of different dietary FCSM supplemented fed broilers. The mainly altered pathways were clustered into organic acid metabolism, fatty acid metabolism, and amino acid metabolism. These results not only provide a better understanding of broilers' lipid metabolism with FCSM but also can be helpful in further improvement of the broilers' healthy production and utilization of FCSM.

RNA-Seq Analysis Reveals Spatial and Sex Differences in Pectoralis Major Muscle of Broiler Chickens Contributing to Difference in Susceptibility to Wooden Breast Disease

Wooden Breast Disease (WBD) is a novel myopathy affecting the pectoralis major muscle of modern broiler chickens. The etiology of WBD is not currently known, but has been linked to increased feed efficiency, growth rate, and muscle yield in broiler chickens. Differential effect of WBD has been detected between regions of the P. major and between sexes of broilers-male birds and the cranial aspect of the muscle tend to be more severely affected by the disease than females and the caudal aspect. This study aimed to characterize biological differences in the P. major between regions of the muscle and sexes of birds. Samples were taken from the cranial and caudal aspects of P. major muscles of 3-week-old, unaffected male and female birds for RNA sequencing. RNA was extracted and used for preparation of cDNA libraries, which were sequenced by the Delaware Biotechnology Institute (DBI) using HiSeq2500. Sequence reads were aligned to the chicken reference genome with HISAT, and genes were analyzed for differential expression between regions of the breast muscle and sexes of birds using CuffDiff. Functional analysis was performed on differentially expressed genes (DEGs) between sex groups using DAVID and Ingenuity Pathway Analysis (IPA). There were 12 DEGs between cranial and caudal samples, and 260 between male and female birds. Out of the 260 genes differentially expressed between sexes, 189 were upregulated in males. Of this subset, 103 genes (55%) were located on the Z-chromosome. There was increased expression of genes involved in fat metabolism and oxidative stress responses in the cranial region of the P. major muscle, as well as increased expression of fat metabolism, oxidative stress response, antiangiogenesis, and connective tissue proliferation genes in male broilers. These results support the hypothesis that there are biological characteristics in male broilers and the cranial region of the breast muscle that may make them more susceptible to WBD, as well as raising the possibility of a metabolic switch in modern broiler chickens that may be more prominent in males.

Essential Oils as an Intervention Strategy to Reduce Campylobacter in Poultry Production: A Review

Campylobacter is a major foodborne pathogen and can be acquired through consumption of poultry products. With 1.3 million United States cases a year, the high prevalence of Campylobacter within the poultry gastrointestinal tract is a public health concern and thus a target for the development of intervention strategies. Increasing demand for antibiotic-free products has led to the promotion of various alternative pathogen control measures both at the farm and processing level. One such measure includes utilizing essential oils in both pre- and post-harvest settings. Essential oils are derived from plant-based extracts, and there are currently over 300 commercially available compounds. They have been proposed to control Campylobacter in the gastrointestinal tract of broilers. When used in concentrations low enough to not influence sensory characteristics, essential oils have also been proposed to decrease bacterial contamination of the poultry product during processing. This review explores the use of essential oils, particularly thymol, carvacrol, and cinnamaldehyde, and their role in reducing Campylobacter concentrations both pre- and post-harvest. This review also details the suggested mechanisms of action of essential oils on Campylobacter.

Integration of genome wide association studies and whole genome sequencing provides novel insights into fat deposition in chicken

Excessive fat deposition is a negative factor for poultry production because it reduces feed efficiency, increases the cost of meat production and is a health concern for consumers. We genotyped 497 birds from a Brazilian F₂ Chicken Resource Population, using a high-density SNP array (600 K), to estimate the genomic heritability of fat deposition related traits and to identify genomic regions and positional candidate genes (PCGs) associated with these traits. Selection signature regions, haplotype blocks and SNP data from a previous whole genome sequencing study in the founders of this chicken F2 population were used to refine the list of PCGs and to identify potential causative SNPs. We obtained high genomic heritabilities (0.43-0.56) and identified 22 unique QTLs for abdominal fat and carcass fat content traits. These QTLs harbored 26 PCGs involved in biological processes such as fat cell differentiation, insulin and triglyceride levels, and lipid biosynthetic process. Three of these 26 PCGs were located within haplotype blocks there were associated with fat traits, five overlapped with selection signature regions, and 12 contained predicted deleterious variants. The identified QTLs, PCGs and potentially causative SNPs provide new insights into the genetic control of fat deposition and can lead to improved accuracy of selection to reduce excessive fat deposition in chickens.

Evaluation of fatty acid metabolism and innate immunity interactions between commercial broiler, F1 layer × broiler cross and commercial layer strains selected for different growth potentials

Background

The broiler industry has undergone intense genetic selection over the past 50 yr. resulting in improvements for growth and feed efficiency, however, significant variation remains for performance and growth traits. Production improvements have been coupled with unfavourable metabolic consequences, including immunological trade-offs for growth, and excess fat deposition. To determine whether interactions between fatty acid (FA) metabolism and innate immunity may be associated with performance variations commonly seen within commercial broiler flocks, total carcass lipid %, carcass and blood FA composition, as well as genes involved with FA metabolism, immunity and cellular stress were investigated in male birds of a broiler strain, layer strain and F1 layer × broiler cross at d 14 post hatch. Heterophil: lymphocyte ratios, relative organ weights and bodyweight data were also compared.

Results

Broiler bodyweight (n = 12) was four times that of layers (n = 12) by d 14 and had significantly higher carcass fat percentage compared to the cross (n = 6; P = 0.002) and layers (P = 0.017) which were not significantly different from each other (P = 0.523). The carcass and whole blood FA analysis revealed differences in the FA composition between the three groups indicating altered FA metabolism, despite all being raised on the same diet. Genes associated with FA synthesis and β-oxidation were upregulated in the broilers compared to the layers indicating a net overall increase in FA metabolism, which may be driven by the larger relative liver size as a percentage of bodyweight in the broilers. Genes involved in innate immunity such as TLR2 and TLR4, as well as organelle stress indicators ERN1 and XBP1 were found to be non-significant, with the exception of high expression levels of XBP1 in layers compared to the cross and broilers. Additionally there was no difference in heterophil: lymphocytes between any of the birds.

Conclusions

The results provide evidence that genetic selection may be associated with altered metabolic processes between broilers, layers and their F1 cross. Whilst there is no evidence of interactions between FA metabolism, innate immunity or cellular stress, further investigations at later time points as growth and fat deposition increase would provide useful information as to the effects of divergent selection on key metabolic and immunological processes.

The level and source of free-methionine affect body composition and breast muscle traits in growing broilers

Although dietary Met, as the first limiting amino acid (AA), has been extensively studied for poultry, little is known about how the supply and source of free Met affect tissue composition. The purpose of this study was to investigate the effect of feeding young broiler chickens with a deficient or sufficient TSAA (Met+Cys) supply, using either dl-Met (dl-Met+ and dl-Met-, for respectively diets sufficient and deficient in TSAA) or dl-2-hydroxy-4-methylthiobutyric acid (HMTBA+ and HMTBA-, for respectively diets sufficient and deficient in TSAA) as a Met source on tissue composition and breast muscle traits. For both Met sources, the deficient diets were formulated to provide true digestible Met:Lys and TSAA:Lys respectively 45% and 30% below that of the sufficient diets. Performance and tissue weights were affected by the Met supply but not by the Met source. In TSAA-deficient chickens, ADG and FCR, and protein content in empty body and pectoralis major muscles (PM) were lower than in TSAA-sufficient chickens (P < 0.05). Reducing the Met content of the diet increased the redness value of PM (a*) and the hue angle (H°; P < 0.01). The source of Met affected body AA composition and the partitioning of body Cys among tissues (P < 0.05). In TSAA-deficient birds, body Cys mass decreased in the commercial carcass and PM, but increased in the rest of the body (P < 0.01). The Met source also had an impact on the Cys mass, which was reduced in the commercial carcass and PM of dl-Met birds, but higher in the rest, especially in the feathers of TSAA-deficient birds (P < 0.05). The Met source, supply, or both altered the AA composition of the empty body, mostly in the commercial carcass. In conclusion, a dietary TSAA deficiency altered performance, tissue composition and quality traits of PM of broilers. There was no impact between dietary dl-Met and dl-HMTBA on performance or muscle weight, although the Met source affected the partitioning of Cys among tissues.

Inclusion levels of sweet potato root meal in the diet of broilers I. Effect on performance, organ weights, and carcass quality

The amount of corn available for animal and poultry feed has been unpredictable in recent years due to the increased use of corn for ethanol production. As a consequence, there has been an increase in the price of feed, chicken, and chicken products. Researchers are exploring alternative feed sources to substitute for corn in poultry ration. This study evaluated the performance and carcass quality of broilers fed diets containing sweet potato root meal (SPRM). After a complete nutrient analysis of the SPRM, diets were formulated where 0, 10, 20, and 30% of corn was substituted with SPRM. The study utilized 360 1-d-old Cornish X Rock male broiler chickens randomly assigned to one of 4 treatments; 0%, 10%, 20%, and 30% SPRM. Body weights and feed intake (FI) were monitored weekly for 7 wk. Birds were slaughtered on d 50 and FI, BW gain, ADG, ADFI, abdominal fat, dressing percentage, and organ weights measured. White (breast) and dark (leg and thigh) meat were evaluated for nutrient content (protein, moisture, fat, and ash). Results showed birds fed 20% SPRM had lower (P < 0.03) final BW, BW gain and ADG than those fed the 30% SPRM diet. There were no differences in FI and ADFI among treatments. Feed conversion ratio was lowest (P < 0.02) in birds fed 10, 20, and 30% SPRM than the control. There were no differences in dressing percentage among treatments. Abdominal fat was highest (P < 0.05) in birds fed 30% SPRM. Organ weights were similar across treatments except for gizzard which weighed highest (P < 0.05) in the control. For white meat; moisture, protein, fat, and ash were similar across treatments. For dark meat, moisture (P < 0.004) and fat (P < 0.03) were highest in the control, while protein and ash were similar among treatments. Birds fed the SPRM diets compared well with those fed the control for both performance and nutrient content of meat.

Effects of the level and duration of feeding restriction on carcass components of broilers

Abstract. The effects of the restriction of the advised daily feed intake (ADFI) during 1 or 2 weeks on broiler body weight (BW) and carcass composition were studied. A total of 150 1-day-old male broilers (Ross-308) were randomly allotted to a control and four experimental treatments with three replicates per treatment. Broilers were subjected to a feeding restriction equal to 75 and 50 % of ADFI, either for a 7- or a 14-day period, between the 7th and 14th and 7th and 21th day of age, respectively. The BW and carcass composition were determined on day 42. From the findings, neither of the two levels of restriction nor the two time intervals had significant effects (P > 0.05) on the BW or breast and leg weight and proportion, liver and most of the body components. However, the feeding treatments show a tendency (P = 0.078) to influence the BW, with birds fed 75 % of ADFI for 14 day being heavier than the control group. For eviscerated carcass weight, an effect (P = 0.002) was observed, with birds fed 75 % of ADFI for 14 day having heavier carcasses (P < 0.05) than those in control group. The abdominal fat, both with regard to weight and proportion, was slightly influenced by dietary treatments (P > 0.05). From our results, it can be concluded that the applied feeding restrictions have a neutral or slightly beneficial effect on broiler growth traits and carcass composition.

Genetic evaluation of carcass composition and fat deposition in Japanese quail

Current research was conducted to estimate heritability and genetic correlations for carcass composition and fat deposition in Japanese quail at 42 and 91 d of age. Studied traits were BW at 42 and 91 d of age (BW42, BW91), carcass weight and percentage, breast meat weight and percentage, thigh weight and percentage, abdominal fat weight and abdominal fat percentage (AFP), skin weight and skin percentage (SP) as a measure of subcutaneous fat, and the percentage of breast intramuscular fat (IFP). Genetic parameters were estimated by restricted maximum likelihood using ASREML software. The heritability estimates of BW and the weight of carcass traits were higher (from 0.45 for BW42 to 0.63 for breast meat weight) than the percentage of carcass traits (from 0.11 for thigh percentage to 0.19 for breast meat percentage). The heritability estimates for SP, AFP, and IFP as fat deposition tissues were 0.17, 0.26, and 0.20, respectively. There were high genetic correlations between BW42 with the weight and percentage of carcass components (from 0.65 to 0.98). Body weight at 42 d of age also showed positive genetic correlations with skin weight and SP (0.80 and 0.23, respectively), abdominal fat weight and AFP (0.44 and 0.21, respectively), and IFP (0.28). A positive genetic correlation between SP and AFP (0.51) was observed. Present results indicated that the percentage of breast intramuscular fat is a heritable trait and selection for increasing BW and decreasing abdominal and subcutaneous fats will improve carcass composition and breast meat quality in Japanese quail. In addition, selection against abdominal and subcutaneous fat does not change intramuscular fat and the quality of breast meat.

HMG1A and PPARG are differently expressed in the liver of fat and lean broilers

The expression of nine functional candidates for QT abdominal fat weight and relative abdominal fat content was investigated by real-time polymerase chain reaction (PCR) in the liver, adipose tissue, colon, muscle, pituitary gland and brain of broilers. The high mobility group AT-hook 1 (HMG1A) gene was up-regulated in liver with a ratio of means of 2.90 (P ≤ 0.01) in the "fatty" group (relative abdominal fat content 3.5 ± 0.18%, abdominal fat weight 35.4 ± 6.09 g) relative to the "lean" group (relative abdominal fat content 1.9 ± 0.56%, abdominal fat weight 19.2 ± 5.06 g). Expression of this gene was highly correlated with the relative abdominal fat content (0.70, P ≤ 0.01) and abdominal fat weight (0.70, P ≤ 0.01). The peroxisome proliferator-activated receptor gamma (PPARG) gene was also up-regulated in the liver with a ratio of means of 3.34 (P ≤ 0.01) in the "fatty" group relative to the "lean" group. Correlation of its expression was significant with both the relative abdominal fat content (0.55, P ≤ 0.05) and the abdominal fat weight (0.57, P ≤ 0.01). These data suggest that the HMG1A and PPARG genes were candidate genes for abdominal fat deposition in chickens. Searching of rSNPs in regulatory regions of the HMG1A and PPARG genes could provide a tool for gene-assisted selection.

Lipogenesis in turkeys and chickens: A study of body composition and liver lipogenic enzyme activities

Carcase composition, fat deposition and the activities of three liver lipogenic enzymes were compared in turkeys and chickens fed ad libitum on two different isocaloric diets, respectively adapted to chickens (C) and to turkeys (T). Diets differed in their protein content, being higher by 60 g/kg in diet T. 2. Chickens were much fatter than turkeys and exhibited higher activities of acetyl-coenzyme A carboxylase (EC 6.4.1.2) and malic enzyme (EC 1.1.1.40). 3. The carcase composition of turkeys was not influenced by the type of diet administered, while chickens fed on diet C were fatter than chickens fed on diet T. Compared to diet T, diet C enhanced malic enzyme activity, whatever the species and age. 4. A good correlation between abdominal fat and total fatness was observed in both species but especially in turkeys. 5. In conclusion, hepatic lipogenesis is much lower in turkeys than in chickens.

Heritability and Genetic Correlation Estimates for Performance and Carcass and Body Composition Traits in a Male Broiler Line

The current research was conducted to estimate the heritability coefficients and the genetic correlations for performance and carcass and body composition traits in a single sire broiler line. The performance traits analyzed were BW at 38 d, ultrasound records of pectoral muscle depth, feed intake, feed conversion ratio, and BW at 42 d. The carcass traits analyzed were eviscerated BW, breast weight, and leg weight, and the body composition traits analyzed were abdominal fat content, heart weight, gizzard weight, liver weight, and intestine weight. The number of observations varied between 4,120 and 29,040 for each trait. The (co)variance components, heritability, and genetic correlation estimates were obtained by restricted maximum likelihood. The numerator relationship matrix had 42,912 animals. Based on the heritability estimates obtained, the analyzed traits seemed to be able to respond to selection, at variable intensities. The genetic correlation estimates between a great number of performance traits, as well as between a great number of carcass traits, were suggestive of a close genetic relationship between these traits. The genetic correlation estimates between body composition traits were variable. A large genetic association between a great number of performance and carcass traits seemed to exist. The genetic correlation estimates between performance and body composition traits were variable, and important associations between carcass and body composition traits did not seem to exist.

Effect of age and housing system on genetic parameters for broiler carcass traits

The effect of age and housing system on genetic parameters for BW and carcass traits was investigated. Traits were measured on broilers of different ages (48, 63, and 70 d). Birds in the 48 and 70 d groups were raised in group housing, whereas birds in the 63 d group were raised in the same housing up to 22 d and in individual cages between 22 and 63 d. Each group consisted of approximately 2,000 individuals from a single group of parents. Carcass, breast meat, abdominal fat, and back half were expressed as percentage of BW. The heritabilities of BW at 48, 63, and 70 d were 0.31, 0.26, and 0.19, respectively, and the heritabilities of back half percentage at 48, 63, and 70 d were 0.42, 0.38, and 0.21, respectively. For other carcass traits, heritabilities were in the same range in different age groups. A positive genetic correlation was found between BW and valuable parts of carcass (breast meat and back half) at 48 d; these relationships were negative at 70 d. The genetic correlation between BW and abdominal fat percentage at 70 d was higher than at 48 d. The increase in growth at 48 d was accompanied by increase in valuable parts; at 70 d it was accompanied by an increase in abdominal fat percentage. The genetic correlation of BW at 48 d between individual cage and group housing demonstrated a genotype by environment interaction for performance of birds, which has consequences for design of breeding schemes.

Effects of dietary chitosan on fat deposition and lipase activity in digesta in broiler chickens

1. The effect of dietary chitosan on fat deposition and lipase activity in the small intestinal contents was investigated in broiler chickens fed an adequate or high metabolisable energy (ME) diet. 2. Male broiler chickens at 14 d old were fed on the adequate or high ME diet supplemented with 0 or 50 g/kg chitosan, which has a low viscosity, for 3 weeks. 3. Dietary chitosan did not affect food intake, body weight gain or food efficiency in either dietary ME groups. 4. Dietary chitosan reduced the excessive abdominal fat deposition induced by the high ME diet. 5. Dietary chitosan increased the weight of intestinal contents irrespective of dietary ME concentration. 6. Dietary chitosan decreased the lipase activity per g of small intestinal contents. 7. These results suggest that dietary chitosan with low viscosity decreases lipase activity and fat absorption in the small intestine, consequently resulting in a reduction of fat deposition in broiler chickens. 8. It was concluded that dietary chitosan with low viscosity can decrease body fat deposition without reducing food intake and body weight gain in broiler chickens.

Higher lipid accumulation in broilers fed on saturated fats than in those fed on unsaturated fats

1. Two experiments were conducted to assess the effect of fat sources differing in degree of saturation on the performance of and fat deposition in broiler chickens fed on isocaloric and isonitrogenous diets. 2. There were no differences in initial body weight between sexes but female broilers had lower daily gains (P<0.0001), final weights (P<0.0001) and food intakes (P<0.0001) than males. Abdominal fat pad weight was lower in male broilers than in female (P<0.001). 3. There were no significant differences in intake, weight gain, final body weight or food-to-gain ratios between birds fed on diets differing solely in the degree of fat saturation. Broilers fed on diets containing an animal fat blend or tallow had higher abdominal fat pad weight (P<0.001) and intramuscular lipid content (P=0.0085) than those fed on diets containing sunflower oil. 4. It was concluded that dietary fat saturation affects fat accumulation in broiler chickens.

Nutritional aspects of hydrogenated and regular soybean oil added to diets of broiler chickens

The objective of the present study was to evaluate the effect of degree of saturation of fat incorporated into broiler diets on performance and body fatty acid (FA) profile. The various degrees of saturation were achieved by using regular soybean oil (SO) and hydrogenated soybean oil (HSO), mixed at different proportions. The work was carried out on commercial broilers (Experiment 1) and on lines of chickens divergently selected for high (HF) or low (LF) abdominal fat (Experiment 2). Daily BW gain and gain:feed ratio increased and the amount of feed intake decreased as the dietary fat saturation decreased. Digestibility of total fat and of each of the FA was lowest in the HSO group and reached maximal values when 23% or more of the added oil was SO. The AMEn values of the diets were almost parallel to fat digestibility. The performance of the HF and LF chickens was affected by the degree of saturation similarly to that observed for the commercial stock. The degree of dietary fat saturation had very little effect on saturated FA (C16:0 and C18:0) in body lipids, reduced the level of monoenoic FA (C16:1 and C18:1), and raised that of polyunsaturated FA (PUFA) (C18:2, C18:3, and C20:4). Monoenoic FA were higher, whereas PUFA were lower in the HF than in the LF line. The improved AMEn in diets containing unsaturated fat is probably due to higher fat digestibility, direct deposition of PUFA in body lipids, and lower lipogenesis, associated with lower heat production.

Interrelationship between the effects of dietary factors and feed withdrawal on the content and composition of liver fat in broiler chicks

Four experiments were carried out to evaluate the effects of the composition and pelleting of diets fed to broiler chicks up to marketing age on changes in their liver size and the content and composition of liver fat due to feed withdrawal (FW) during 0, 10, and 24 h. Birds not exposed to FW that were fed diets with high energy to protein ratio (E:P) and diets in pelleted from-diets that increase fattening-had significantly (P < 0.05) higher liver fat content than those fed diets with the recommended E:P and in mash form, respectively. Those fed pellets also had higher liver weight. Dietary energy level did not affect these variables. Feed withdrawal for 10 or 24 h decreased, at times significantly, liver weight and its fat content, irrespective of the diets fed previously. The values observed after FW were not affected by the dietary factors evaluated. The composition of liver fatty acid in chicks not exposed to FW was markedly affected by increases in dietary energy (soybean oil) level and E:P. The main effects of the former were increased levels of stearic, linoleic, and arachidonic acids and a decreased level of oleic acid; those of the latter were an increased level of oleic and decreased levels of stearic, linoleic, and arachidonic acids. Irrespective of the diets used, FW increased the concentrations of stearic, linoleic, and arachidonic acids, and decreased those of palmitic and oleic acids. This effect on arachidonic acid was consistently significant, whereas the effects on the other fatty acids were significant in two out of three experiments. Due to these effects of FW, part of the differences in the composition of liver fatty acids caused by dietary factors observed in fed chicks, completely disappeared after FW. The length of FW (10 vs 24 h) did not affect liver size or fat content, but the concentrations of oleic and arachidonic acids in liver fat were significantly higher in birds exposed to 24 h of FW. It was concluded that the composition and form of the diets markedly affect liver weight and the content and composition of its fat in birds not exposed to FW. The effects of the dietary factors on liver size and its fat content completely disappear after 24 h of FW.

Effects of dietary protein under high ambient temperature on body weight, breast meat yield, and abdominal fat deposition of broiler stocks differing in growth rate and fatness

The effect of dietary protein on growth, feed intake and efficiency, abdominal fat deposition, and breast meat yield was investigated in broiler males from a commercial stock (WI) and from experimental stocks selected for low (LF) or high (HF) abdominal fat. All birds were kept at constant high ambient temperature (32 C) and were provided with low- (LP) or high-protein (HP) diets from hatch until 8 wk of age (Experiment 1) or from 4 to 8 wk of age (Experiment 2). In both experiments, HP diet significantly increased 4- to 8-wk BW gain in the LF and HF stocks but reduced it in the WI stock as compared with the LP diet. Abdominal fat, as percentage of BW, was almost twofold higher in the HF birds than in the LF ones, with WI mean being intermediate. In contrast to the HF and WI birds, in which abdominal fat decreased with increased protein intake, abdominal fat was not affected by dietary protein in the LF stock. The HP diet substantially increased breast meat yield in LF birds but not in the WI birds, with HF birds exhibiting intermediate increase in breast meat weight. It was concluded that birds of varied inherent growth rate and tendencies toward protein and fat deposition respond differently to dietary protein level under heat stress.

Lack of interactions between dietary lysine or strain cross and photoschedule for male broiler performance and carcass yield

The purpose of this study was to test interactions of dietary lysine or strain crosses provided increased lysine with photoschedule on broiler performance and carcass quality. In Experiment 1, treatments were factorially arranged as two lysine levels [control grower and finisher (NRC, 1984) or control grower and finisher plus .15% L-lysine HCl] and two photoschedules [23 h light (L):1 h dark (D) or 14L:10D]. All birds received a control starter feed and dietary treatments were initiated at 22 d of age. In Experiment 2, treatments were factorially arranged as two strain crosses [Peterson x Arbor Acres (PAA) or Ross x Ross (RR)] and two photoschedules (23L or 16L). All birds received standard starter and standard grower and finisher plus .15% L-lysine HCl. There were no lysine by photoschedule or strain cross by photoschedule interactions in this study. The high-lysine diet increased BW, improved feed efficiency, increased lean carcass weight and yield of breast meat, and decreased abdominal fat and yield of thighs. The PAA strain cross had better feed conversion, fewer Grade A carcasses, more back bruises and breast blisters, greater yield of wings and drumsticks, and less yield of breast meat than RR. The 23L had greater BW, better feed efficiency, fewer breast blisters, greater carcass weight (Experiment 1), more abdominal fat (Experiment 2), lower yield of wings (Experiment 1), drumsticks, and thighs, and greater yield of breast meat than the treatments with shorter photoschedules. Increased dietary lysine did not compensate for decreased breast meat yield associated with 14L (Experiment 1).

Dietary carnitine did not influence performance and carcass composition of broiler chickens and young turkeys fed low- or high-fat diets

Two experiments were conducted to determine the influence of supplemental dietary carnitine on performance and carcass composition of young turkeys and broiler chickens. Experiments 1 and 2 were done with poults to 21 d of age and broilers to 45 d of age, respectively. Three dietary concentrations of L-carnitine (0, 50, or 100 mg/kg) were fed in a factorial arrangement with two concentrations of animal-vegetable fat (A-V fat), 2.25 or 8% in Experiment 1 and 1 or 5% in Experiment 2. L-Carnitine did not affect (P > .05) BW gain or feed efficiency in either experiment, irrespective of concentration of dietary fat. Similarly, proximate composition of 21-d-old poults and 45-d-old broilers was not changed by L-carnitine. Increasing levels of fat supplementation improved feed efficiency of poults and improved 45-d BW and feed efficiency of broilers. Carcass fat of poults and broilers was increased (P < or = .05) by supplemental fat at the expense of carcass water and protein.

Are genetically lean broilers more resistant to hot climate?

1. Genetically lean (LL) or fat (FL) male chickens were exposed to either high (32 degrees C) or control (22 degrees C) ambient temperature up to 9 weeks of age. They were fed on one of two isoenergetic diets differing in protein content: 190 or 230 g/kg. 2. At 22 degrees C, weight gain of LL broilers was the same as in FL chickens, but at the high temperature LL birds grew to a greater weight than FL ones. 3. Food conversion efficiency was not affected by ambient temperature in LL chickens but was depressed in FL ones at 32 degrees C. 4. Increasing dietary protein content did not alleviate heat-induced growth depression irrespective of the genotype. 5. Gross protein efficiency was higher in LL chickens and was less depressed at 32 degrees C than in FL birds. 6. Fat deposition decreased with increasing protein concentration at normal temperature in both genotypes; at high temperature, high protein content enhanced fatness, particularly in LL chickens. 7. Thus, genetically lean broilers demonstrated a greater resistance to hot conditions: this was indicated by enhanced weight gain and improved food and protein conversion efficiencies.

Characterization of lipogenic and lipolytic activity, muscle tissue composition, and DNA and RNA levels of broilers eating ad libitum or severely restricted at an early age

Four experiments were conducted to characterize the rates of lipogenic and lipolytic activities and the composition and DNA and RNA concentrations in muscle tissue of broilers that were feed restricted at an early age. In all experiments, feed restriction (40 kcal/day per bird) was initiated at 4 days of age with ad libitum consumption of feed resuming at either 11 (Experiments 1 and 2) or 10 (Experiments 3 and 4) days of age. Female chicks in Experiment 1 were feed restricted at the same level from 4 to 9 days of age. Birds consuming feed ad libitum served as controls in all experiments. Broilers restricted for 7 days had significantly lower plasma very low density plus low density lipoproteins (VLDL+LDL) than the ad libitum birds at 49 days of age in Experiments 1 and 2. However, the reverse was observed at 28 days of age, as plasma triglycerides and lipoproteins and lipogenesis were greater in restricted chicks when compared with controls. No significant differences were observed in plasma triglycerides at 49 days of age or lipolysis, DNA and RNA concentrations, muscle protein, and muscle fat at 28 days of age between restricted and ad libitum broilers. Results from these studies indicate that early feed restriction may have induced a metabolic shift in restricted broilers that increased lipogenesis at 28 days of age, followed by a partitioning of excess nutrients to support anabolic activity at market age.

Effects of low, normal, and high temperatures on slaughter yield of broilers from lines selected for high weight gain, favorable feed conversion, and high or low fat content

Male and female broiler chicks from five different broiler crosses (WI = Israeli chicks selected for increased body weight; LF and HF = Israeli chicks selected for low and high abdominal fat, respectively; FC and WN = Dutch chicks selected for improved feed conversion and increased body weight, respectively) were raised at low, normal, or high temperature. Slaughter yield, amount of breast meat, and abdominal fat were determined at 6 wk of age in all groups and at a body weight of 2,360 g for males and 1,965 g for females in the low- and normal-temperature groups, and at 8 wk in the high-temperature groups. Temperature, genotype, and sex influenced both absolute and relative weights of carcass, breast meat, and abdominal fat. Temperature had a negative effect on breast meat yield. Males were affected more by high temperature than females. A significant interaction between temperature and sex for breast meat yield was caused by a low yield for males at the high temperature. A similar interaction for proportion of abdominal fat was caused by a high fat content in males reared at the high temperature. Slaughter yield and especially yield of breast meat were highest in FC chickens in all comparisons.

Effect of dietary protein content on episodic growth hormone secretion and on heat production of male broiler chickens

1. The effect of the crude protein content (200 and 150 g/kg) of isoenergetic diets on episodic growth hormone (GH) release and on heat production was investigated in male broiler chickens. 2. Decreasing the crude protein content of isoenergetic diets from 200 g/kg (HP diet) to 150 g/kg (LP diet) resulted in depressed body weight gain, impaired food conversion efficiency and increased abdominal fat deposition. 3. The pattern of growth hormone secretion was markedly affected by dietary treatment. Broiler chickens fed on the LP diet had higher overall mean, amplitude, baseline and peak frequency than the HP chickens. 4. The LP chickens produced more heat per unit of metabolic body weight than the HP chickens. 5. The hypothesis relating the pattern of GH secretion to protein conversion efficiency was corroborated.

Effect of dietary polyunsaturated fatty acid concentration on performance, fat deposition, and carcass fatty acid composition in broiler chickens

The effect of dietary polyunsaturated fatty acid (PUFA) concentration on body fat deposition and composition in broiler chickens was studied. Twenty-day-old birds were fed five isocaloric diets supplemented with different combinations of tallow and vegetable oils. Contents of abdominal adipose tissue (AAT) as well as body fat were determined at 40 days of age. A significant linear effect was observed between dietary PUFA and feed utilization. Fatty acid (FA) profiles in AAT and total body fat were correlated to dietary PUFA content, with the main effect of higher dietary PUFA being a reduction in monoenoic FA (C16:1 and C18:1) and an increase in C18:2. The effect of dietary PUFA on the saturated FA (C16:0 and C18:0) was small and not statistically significant. Increased dietary PUFA modified FA composition such that C18:2, rather than C18:1 became the dominant FA in AAT. In that respect, greater changes were observed in FA composition of AAT, as compared with that on the whole carcass. The deposition of saturated and monoenoic FA in the whole carcass during the experimental period was related to dietary PUFA content in a quadratic manner. However, deposition of C18:2 and C18:3 was not affected by intake and their utilization (deposition:intake ratio) was reduced in a manner parallel to their dietary levels.

Live performance and carcass yield of broiler strain crosses provided either sixteen or twenty-three hours of light per day

The purpose of the present study was to compare a restricted (R) lighting program [16 h light (L):8 h dark (D)] with a standard extended (E) lighting schedule (23L:1D) for broilers. Experiment 1 was carried out during March and April (mean temperature of 23.3 C). Light treatments were 1) E; 2) R; 3) 16L:8D Days 1 to 21 and 23L:1D thereafter to 49 days (R3E); and 4) 16L:8D Days 1 to 14 and 23L:1D thereafter to 49 days (R2E). Treatments were factorially arranged with two strain crosses [Indian River x Arbor Acres (IA) and Peterson x Arbor Acres (PA)]. Experiment 2 was carried out during the summer (mean temperature of 27.0 C). Light Treatments E and R were factorially arranged with two strain crosses [Cobb x Arbor Acres (CA) and PA]. In Experiment 1, BW of Cross PA was greater than BW of Cross IA at 1, 14, 35, and 49 days of age. The percentage of birds with breast blisters was greater in Cross PA than IA. The incidence of broken clavicles was lower in Treatments R and R3E than in Treatments E or R2E. In Experiment 2, Treatment E had greater BW than R from 7 to 42 days of age, and BW of Cross CA was greater than that of PA from 1 to 48 days. Yield (percentage of lean carcass weight) of breast meat at 49 days of age was higher for Treatment E than R, and the percentage of birds with breast blisters was greater in Treatment R than E.(ABSTRACT TRUNCATED AT 250 WORDS)

Restricted feeding and broiler performance: age at initiation and length of restriction

Broiler cockerels were provided either ad libitum access or restricted to alternate-day access to feed initiated at different ages and lasting for different durations. Regimens consisted of ad libitum feeding; alternate-day feeding; alternate-day feeding from 0 to 6, 6 to 12, or 12 to 18 days of age (DOA); alternate-day feeding from 0 to 12, 0 to 6, and 12 to 18, or 6 to 18 DOA; and alternate-day feeding from 0 to 18 DOA. By 39 DOA, chicks restricted for only one 6-day period reached body weights equivalent to those of chicks eating ad libitum. Body weights of chicks restricted for more than 6 days during the first 18 days after hatch were lower than those of chicks eating ad libitum at 39 DOA. Restriction for more than 6 days improved feed efficiency. Chicks restricted for the whole experiment had superior feed efficiency but low body weights. Antibody responses to sheep erythrocyte antigen were similar among feeding regimens. Response to Escherichia coli inoculation was generally less severe in chicks provided restricted access to feed, and overall mortality was highest in chicks eating ad libitum. Feeding regimens had little effect on organ weights relative to body weight, amount of abdominal fat (either on an absolute basis or relative to body weight), or percentage lipid in the abdominal fat pad.

Live performance and yields of broilers provided various lighting schedules

The purpose of the present study was to measure performance and carcass yield from broilers maintained on photoschedules that may influence incidence of leg disorders. Day-old male broilers were placed on litter floors of light-controlled chambers. Four chambers were randomly assigned to each of four light treatments: 1) 23 h light (L): 1 h dark (D) from 1 to 56 days of age (designated extended, E); 2) 1L:3D from 1 to 56 days (intermittent, I); 3) 6L:18D from 1 to 14 days and 1L:3D from 15 to 56 days (brief-I, BI); and 4) 6L:18D from 1 to 14 days and 23L:1D from 15 to 56 days (brief-E, BE). Mean (+/- SEM) light intensity was 5.4 +/- .26 lx for all light treatments. At 13, 21, and 42 days of age, Treatments BI and BE had lower BW than Treatment E. The percentage of birds with leg abnormalities among treatments was greater at 56 days than at 42 days. The BI birds had significantly fewer leg abnormalities than E birds. There was an age by treatment interaction for the frequency of tibial dyschondroplasia (TD), with BI showing better recovery from TD at 56 days than other treatments. At 42 days of age, split breast yield (percentage of BW) was greater in E than I, and breast yield (percentage of lean carcass) was greater in E and BI compared with I. At 56 days of age, yield (percentage of BW) of tenders was lower in I and BI compared with E and BE.(ABSTRACT TRUNCATED AT 250 WORDS)

Genetic and phenotypic relationships in Japanese quail. 1. Body weight, carcass, and organ measurements

Live BW, carcass data, and organ data taken at 34 days of age on approximately 1,000 quail of both sexes from 110 sires and 290 dams were utilized to estimate genetic parameters from the initial generation of a selection study. The birds represented a sample of a line selected for high 4-wk BW. Data were analyzed using Henderson's Method 3 (MM3) and restricted maximum likelihood (REML) with and without a relationship matrix. The paternal half-sib heritabilities for body, carcass, and organ weights in Japanese quail were moderate to high for most traits studied, suggesting that selection to increase or decrease these traits should be successful. With the exception of BW, abdominal fat (AF), and heart weights, maternal half-sib heritability estimates were smaller than paternal half-sib estimates. Heritability estimates of traits adjusted for BW tended to be lower than counterparts not adjusted for BW. The genetic correlations of BW with the other carcass measurements were positive, and tended to be moderate to high. The correlation of BW with AF was .34, suggesting that selection for increased BW alone will lead to a bird with more abdominal fat. The correlations of AF with the other traits tended to be low to moderate in magnitude, with three of the correlations being negative, suggesting correlated responses with other traits when selecting for increased or decreased AF would be small. Genetic correlations among various muscle measurements were all positive and most were high in magnitude, indicating that traits easiest to measure and collect can be used in a selection process. The genetic correlations among the organ measurements were positive and moderate as were the correlations of organ weights with muscle weights. Negative genetic correlation estimates between AF and muscle measures were obtained from analysis when BW was a covariate. The REML heritability estimates were higher than MM3 estimates and REML genetic correlation estimates were less extreme than MM3.

The effect of clenbuterol supplementation on growth performance and on plasma hormone and metabolite levels of broilers

In the present experiment, clenbuterol was supplemented (.42 ppm) from Day 1 or from 2 or 4 wk of age until slaughter age (6 wk). The effects on growth performance and on plasma hormone and metabolite profiles were investigated at 2, 4, and 6 wk of age in male and female broilers. There were no consistent or cumulative effects of clenbuterol feeding on growth and feed efficiency. Clenbuterol feeding from Day 1, but not later, depressed subsequent feed intake. Relative abdominal fat pad weight was reduced profoundly and was even more pronounced after prolonged supplementation and for females. Fat content of thigh meat (including skin), but not of breast meat (without skin), was reduced by clenbuterol feeding. No consistent effects of clenbuterol supplementation on plasma thyroid hormones, growth hormone, insulin-like growth factor-I, and corticosterone levels were detected. Very low density lipoprotein (VLDL) concentrations were depressed in male broilers fed clenbuterol for 6 wk, but the plasma triglyceride level did not follow this pattern. There was no evidence for a consistent effect of clenbuterol on lipolysis in vivo, measured by plasma glycerol level. Between 4 and 6 wk of age, plasma VLDL and glycerol levels decreased in females but increased in males. This corresponds to the higher fat deposition in females. However, the most consistent effects were age-related changes in the plasma levels of most hormones and metabolites. From the present study, it seems that clenbuterol acts primarily on fat deposition, the extent being dependent on sex, location of fat, and duration of beta-adrenergic agonist supplementation.

Scanning electron microscopic observations on the intestinal villi in growing White Leghorn and broiler chickens from 1 to 30 days of age

1. To obtain intestinal morphological data demonstrating the faster growth rate in broiler (BR) than in White Leghorn (WL) chickens, villi of the duodenum, jejunum and ileum were examined from 1 to 30 d of age by scanning electron microscopy. 2. At the first day after hatching, villi of each intestinal segment showed a finger-like shape in both breeds. Villi developed to a plate-like shape in the duodenum, a wave-like shape in the jejunum and a tongue-like shape in the ileum at 30 d of age via the common plate-like villi at 10 d of age. The fundamental villous shape and arrangement seem to be accomplished by 10 d of age; two types of obliquely elongated plate-like villi showed a zigzag arrangement, adjoining at an angle of 40 degrees to 60 degrees like an oblique T-shape. It is suggested that such a villous arrangement would be more effective for nutrient absorption by inducing a long zigzag flow of ingesta. 3. Compared with WL, even at the first day after hatching BR had many more developed epithelial cell protrusions over the whole apical surface of the duodenal villi. In WL the protrusions were not so apparent and located only in the central area of the villous tip. Furthermore, at 10 d of age BR showed more developed and larger villi, many wider microvilli at the apical portion of villi and more active extrusions of epithelial cells from the tip of the duodenal and jejunal villi. 4. These morphological characteristics of villi in early life in BR suggest a greater absorptive surface area and a more active intestinal function, permitting the faster growth rate of BR immediately after hatching.
