Abstract
Live insect larvae were recently proposed for use in laying hens in intensive chicken farming as an innovative form of environmental enrichment. This study aimed to evaluate the effect of laying hen age and feeding with live Black Soldier Fly larvae (BSFL) on egg quality attributes, i.e., chemical composition, fatty acid (FA) profile, and metabolic profile using nuclear magnetic resonance (NMR) spectroscopy. To this aim, 108 Lohman Brown hens were housed in 27 cages (9 replicates per treatment, 4 birds per pen) and monitored between 16 and 34 weeks of age. The hens were split into three experimental groups: a control group fed a commercial diet, and two experimental groups fed the same commercial diet plus 15% or 30% of live BSFL, as fed basis on the expected daily feed intake (DFI). The experimental treatments did not affect the egg and eggshell quality attributes. The supplementation with live BSFL did not influence the chemical composition in terms of macronutrients or the main NMR profiles of egg yolk and albumen. The FA profile of the egg yolk significantly changed as the eggs from hens fed BSFL presented higher rates of SFA and PUFA (P<0.05), lower rate of MUFA (P<0.001), and higher rates of C18:2n 6 (P<0.05) and C18:3 n3 compared to the control eggs (P<0.001). There were no significant differences in the ratio of n-6 to n-3 PUFA. The age of the hens strongly affected egg quality traits (P<0.001), mainly the egg weight, shell weight, shell thickness, eggshell-breaking strength, and eggshell redness (a*) and yellowness (b*), besides the metabolic profile of both egg yolk and albumen. Considering the interaction diet * age of hens, only a few significant effects occurred on egg quality attributes and FA profile. In conclusion, a supplementation with live BSFL up to 30% of DFI may be safely used in laying hen feeding without impairing egg quality.

Abstract
This study evaluated the effects of whole flaxseed (WFS), fish oil (FO), and different sources of Se, Zn, and Fe (inorganic, organic, and nano-source) on egg production, quality, sensory attributes, and serum protein metabolites in laying hens. A total of 144 hens were divided into six groups with six replicates of four hens each. Hens were fed six diets as follows: 1) control diet; 2) 7.5%WFS+1.5%FO; 3) 7.5%WFS+1.5%FO+175 mg/kg vitamin E (VE); 4) 7.5%WFS+1.5%FO+175 mg/kg VE + inorganic sources of Se, Zn, and Fe (ISeZnFe); 5) 7.5%WFS+1.5%FO+175 mg/kg VE + organic sources of Se, Zn, and Fe (OSeZnFe); 6) 7.5%WFS+1.5%FO+175 mg/kg VE + nano-source of Se, Zn, and Fe (NSeZnFe) from 40-50 weeks of age. Laying hens fed 7.5% WFS, 1.5% FO, and different sources of trace elements in their diets had no negative effects on laying rate, egg weight, egg mass, feed intake, feed conversion ratio, body weight change, or survival rate compared to that of hens fed the control diet. Dietary treatments did not negatively affect the external and internal egg characteristics or egg sensory attributes. Feeding 7.5%WFS+1.5%FO+VE+ISeZnFe positively influenced yolk color in fresh eggs. Dietary treatments had a significant impact on egg nutritional composition, with the highest levels of macronutrients found in eggs from hens fed the 7.5%WFS+1.5%FO+VE+NSeZnFe treatment. The highest plasma globulin concentrations were observed in hens fed organic and nano-source trace elements. The same diets reduced plasma uric acid levels. Based on these findings, the inclusion of organic or nano-source trace minerals in diets containing WFS and FO positively affected egg quality and hen protein metabolites.

Abstract
Domestic chicken farming has been promoted and spread in several Italian municipalities and worldwide as an aid to the self-consumption of domestically produced food. This study investigated the levels of four toxic elements (As, Cd, Hg, and Pb) in eggs from an ethical laying hen farm, comparing the element concentrations with those possibly present in supermarket eggs. A total of 201 eggs, 141 from the farm and produced by different hen genotypes, and 60 from the supermarket, were collected. The levels of the toxic elements were evaluated in the yolk, albumen, and eggshells of all eggs. The results show that the supermarket eggs' yolk and albumen were more contaminated with lead, compared to the rural eggs. Contrarily, the mean content of arsenic was higher in the albumen and eggshells of the rural eggs, compared to the supermarket eggs. The cadmium content was below the LOQ (0.005 mg/kg) in all samples. The mercury content was below or around the LOQ in all rural eggs. Overall, the supermarket egg albumens were significantly more contaminated than the rural ones. No significant differences were found in quality parameters for both types of eggs. The toxic element values that were detected were in line with other studies in the literature. However, despite the concentrations found not representing a risk to the consumers' health, the results of this study raise a potential food safety issue, and it would be desirable to set specific MRLs for eggs for consumers' protection.

Abstract
Flaxseed cake contains high levels of phenolic compounds, which have numerous biological activities, as well as a considerable amount of omega-3 fatty acids, such as α-linolenic acid, which remains after oil extraction. In this study, we examined the effects of flaxseed cake meal (FSCM) on the antioxidative status, lipid metabolism, egg fatty acid profile, and egg health index of white-egg laying hens. A total of 63 Hisex White laying hens were divided into three experimental treatment groups and fed diets containing 0, 5, or 10% FSCM from 48 to 58 weeks of age. Feeding with 5 and 10% FSCM did not significantly (p>0.05) influence total lipid, triglyceride, total cholesterol, very low-density lipoprotein-cholesterol, or low-density lipoprotein-cholesterol concentrations, or the high-/low-density lipoprotein ratio in the serum and egg yolk; however, 10% FSCM significantly (P<0.05) increased serum high-density lipoprotein. Dietary FSCM also did not affect (P>0.05) antioxidant markers in the eggs and blood plasma. Notably, dietary inclusion of FSCM significantly increased (P<0.05) total n-3 polyunsaturated fatty acids (PUFAs), α-linolenic acid, docosahexaenoic acid, and eicosapentaenoic acid levels in egg yolk, whereas the n-6:n-3 PUFAs ratio was markedly (P<0.05) decreased in a dose-dependent manner. Moreover, including 5-10% FSCM improved (P<0.05) egg health indices, with 10% being the most beneficial. Together, these findings indicated that the inclusion of up to 10% FSCM in laying hen diets improved egg yolk lipid and fatty acid profiles, as well as egg quality and nutritional and metabolic indices.

Abstract
Nowadays, there is a global shortage in feed supply for animal nutrition; however, there are a considerable amount of agro-industrial co- and by-products that may offer a reasonable solution. Flaxseed cake (FSC) is a by-product of flaxseed for oil extraction rich in n-3 α-linolenic acid (ALA). Thus, the dietary inclusion of FSC on laying performance, egg quality, and serum and egg trace elements (Se, Zn, and Fe) was evaluated using Hisex White hens. The hens were distributed to three equal experimental treatments and provided diets including 0%, 5%, or 10% FSC from 48 to 58 weeks of age. Findings clarified that up to 10% FSC in the laying hen diet had no detrimental effect on laying rate, egg mass, and feed utilization. It was found that FSC resulted in a valuable source of protein, energy, macro- (Ca and P), micro- (Se, Zn and Fe) elements, and essential amino acids, with arginine being the highest. Dietary FSC did not negatively influence the egg quality traits, as well as egg sensory attributes. Including 5% or 10% FSC in diet did not significantly affect serum total protein and renal function in terms of creatinine, uric acid, and uric acid-to-creatinine ratio. Different FSC levels did not influence the chemical composition of eggs and trace elements in serum and eggs. It could be concluded that FSC is a valuable feedstuff that can provide a good source of energy, protein, amino acids, and macro- and micro-elements for hens' nutrition. The inclusion of up to 10% of FSC in hens diet did not adversely influence egg laying performance, egg quality of both fresh and stored eggs, sensory attributes, and nutritional composition, as well as Se, Zn, and Fe in serum and eggs due to balanced nutrient profile of FSC.

Abstract
Enriching eggs with omega-3 fatty acids (n-3 FA), such as docosahexaenoic acid (DHA), is a well-accepted practice that benefits the egg industry and consumers. However, issues around cost, sustainability, and product acceptance have necessitated the search for alternatives to feeding hens fish oil for DHA enrichment. The effects of feeding 2 algal oils on egg production and DHA enrichment in eggs and selected tissues were investigated. The algal oils were: 1) OmegaPro (OPAO) standardized algal oil for DHA content and 2) Crude algal oil (CAO). A total of 400, 46-wk-old Lohmann LSL lite hens were housed in enriched cages (10 birds/cage) and allocated 5 diets (n = 8) for a 12-wk trial. The iso-caloric and -nitrogenous diets were a standard corn and soybean meal diet, standard plus 0.25 or 0.76% OPAO and standard plus 0.23 or 0.69% CAO; algal oils diets supplied similar DHA at each level. Egg production indices (hen day egg production, feed intake, FCR, egg weight, egg mass, and eggshell quality) were monitored for 10 wk. Diet samples were analyzed for fatty acids (FA) on wk 1, 6, and 12 and eggs on wk 4, 5, 6, 9, and 12. At the end of the trial, one hen/cage was weighed and dissected for liver, breast and thigh for FA and long bones for ash content analyses. Concentration of omega-6 to omega-3 FA ratio was 12.9, 6.64, 3.48, 6.96, and 3.59 for standard, 0.23 and 0.76% OPAO, 0.25 and 0.69% CAO, respectively. Algal oils increased (P ≤ 0.046) eggshell thickness linearly. The concentration of DHA in the eggs from the birds fed the standard, 0.23 and 0.76% OPAO, 0.25 and 0.69% CAO was 84, 195, 286, 183, and 297 mg/100g egg, respectively, and algal oils enriched eggs with DHA linearly and quadratically (P ≤ 0.01). In conclusion, algal oils increased the concentration of DHA in eggs and had no adverse effects on egg production and eggshell quality.

Abstract
The purpose of this study is to investigate the characteristics of egg consumption in China and the production of functional eggs, and finally enrich the types of shell egg products. Trial 1 explored the influence of egg quality on Chinese consumers' willingness to purchase eggs through a questionnaire, which investigated 1,317 consumers' preferences for egg appearance, factors influencing egg purchase, and purchase of functional eggs. The results showed that about 65% of respondents ate more than 4 eggs per wk, pink eggs were the most popular in China, about 65% of consumers preferred eggs with an egg weight of 48 to 58 grams. For functional eggs, 75.32% of consumers have never heard of them. Preferences for eggshell color and yolk color varied by geographic region, with darker colors preferred in Northeast China. Based on the survey results of functional eggs consumption in Trial 1, the dwarf layers of China Agricultural University were used in Trial 2 to produce functional eggs. The eggs are small and pink in color, which is in line with the preferences of Chinese consumers. Three hundred dwarf layers were divided into 4 groups, using the linseed oil added, marigold extract added, and yeast selenium added diets to produce normal, n-3 fatty acid-enriched, lutein-enriched and selenium-enriched eggs by feeding for 28 d, determined the eggs' nutrient content and egg quality. The results showed that the n-3 fatty acid, lutein and selenium contents of the eggs of dwarf layers were significantly increased by changing the diets and did not affect the egg weight, eggshell strength, Haugh units or the proportion of egg parts. The results of this study are helpful to understand the trend of egg consumption preferences in China, and on this basis to produce functional eggs that meet the consumers' expectations.

Abstract
BACKGROUND Trace elements are essential for human nutrition, and their deficiencies or excesses are strongly associated with several diseases, such as cardiovascular ones. OBJECTIVES The current cross-sectional study investigated the concentration of essential trace elements (copper, non-metal selenium, iron, zinc, cobalt and manganese) in eggs and diets of five strains of laying hens. METHODS The yolk and albumen were analysed separately, and wet preparation was carried out following inductively coupled plasma-optical emission spectrometry detection. The target hazard quotients (THQs) for the non-carcinogenic disease were calculated by the United States environmental protection agency (USEPA) method. RESULTS The highest concentrations of selenium, zinc and manganese were found in egg yolks of native hens (0.76, 44.22 and 6.52 mg/kg, respectively). The highest amounts of copper and cobalt were recorded in the egg yolk of Lohman (2.07 and 0.023 mg/kg, respectively). On the other hand, the egg yolk of Bovans contained the highest amount of iron (57.46 mg/kg). CONCLUSION Overall, the potential health risks were minimal, and the consumption of eggs was generally safe.

Abstract
This study was performed to investigate the effects of apparent metabolizable energy (AMEn) and protein levels on laying performance, egg quality, blood parameters, blood biochemistry, and apparent total tract digestibility of energy and nutrients in diets fed to laying hens in an aviary system. A total of 560 Hy-Line Brown laying hens (age = 30 week) were distributed in a completely randomized experimental design in 2 × 2 factorial arrangements with 2 metabolizable energy levels (2700 and 2800 kcal AMEn/kg) and 2 protein levels (16.5 and 14.5% CP). Four treatments and four replicates of 40 birds each (stocking density = 15 birds/m2) were prepared. Results revealed no significant interaction between AMEn and CP in the diet in terms of egg production, floor eggs, broken and dirty egg production, egg mass, feed intake, and feed conversion ratio of laying hens. However, egg weight was affected. As dietary energy and CP levels (2800 kcal of AMEn/kg and 16.5% CP) increased, egg weight increased (p < 0.05). Egg weight, feed intake, and feed conversion ratio significantly differed (p < 0.05) as the energy content in the feed increased. Ether extract significantly varied (p < 0.05) as the energy content in the feed increased. In conclusion, laying performance and egg quality of Hy-Line Brown laying hens in the middle stage of egg production (30 to 50 weeks) were not affected by different dietary energy and protein levels, but feed intake decreased with an increasing level of AMEn in diets. Ether extract significantly varied as the energy content in the feed increased.

Abstract
The beneficial effects of n-3 long-chain polyunsaturated fatty acids (n-3 LC-PUFA) on human health are widely known. Humans are rather inefficient in synthesizing n-3 LC-PUFA; thus, these compounds should be supplemented in the diet. However, most Western human diets have unbalanced n-6/n-3 ratios resulting from eating habits and the fact that fish sources (rich in n-3 LC-PUFA) are not sufficient (worldwide deficit ~347,956 t/y) to meet the world requirements. In this context, it is necessary to find new and sustainable sources of n-3 LC-PUFA. Poultry products can provide humans n-3 LC-PUFA due to physiological characteristics and the wide consumption of meat and eggs. The present work aims to provide a general overview of the main strategies that should be adopted during rearing and postproduction to enrich and preserve n-3 LC-PUFA in poultry products. The strategies include dietary supplementation of α-Linolenic acid (ALA) or n-3 LC-PUFA, or enhancing n-3 LC-PUFA by improving the LA (Linoleic acid)/ALA ratio and antioxidant concentrations. Moreover, factors such as genotype, rearing system, transport, and cooking processes can impact the n-3 LC-PUFA in poultry products. The use of a multifactorial view in the entire production chain allows the relevant enrichment and preservation of n-3 LC-PUFA in poultry products.

Abstract
Chronic respiratory diseases are among the most common non- infection diseases. In particular, it is bronchial asthma (BA), characterized by bronchial hyperreactivity and varying degrees of airway obstruction that is the cause of morbidity and mortality. The methods available for the information about the presence of inflammation in the airways, such as bronchoscopy and bronchial biopsy to be obtained have currently been invasive and difficult in everyday clinical practice, especially for children and seriously ill patients. In this regard, recently there has been an increase in the development of non-invasive methods for diagnosing the respiratory system, being comfortable and painless for trial subjects, especially children, also providing the inflammatory process control in the lungs, the severity assessment and monitoring the treatment process. The exhaled breath condensate (EBC) is of great attention, which is a source of various biomolecules, including nitric oxide (NO), leukotrienes, 8-isoprostane, prostaglandins, etc., being locally or systemically associated with disease processes in the body. Of particular interest is the presence of cytokines in EBC, namely the specific proteins produced by various cells of the body that play a key role in inflammatory processes in AD and provide cell communication (cytokine network). Thereby, it becomes possible for the severity and control level of childhood bronchial asthma using only the EBC analysis to be assessed. In addition, the non-invasiveness of this method allows it to be reused for monitoring lung diseases of even the smallest patients, including infants. Thus, the field of metabolite analysis in EBC has been developing and, in the near future, the given method is likely to be the most common for diagnosing the respiratory system diseases in both children and adults.

Abstract
Simple Summary Spirulina is an alga rich in micronutrients of interest for improving the nutritional value and quality of the products. This study evaluates the transfer of some of these micronutrients (vitamins and fatty acids) in egg yolk when short periods of supplementation are used in hens of two different strains, and its consequent effects on some quality parameters. Short-term spirulina supplementation markedly modified vitamin content and color in yolk. Hen strain mainly affected the fatty acid profile, and a different response to retinol content and fatty acid proportions (mainly monounsaturated and desaturase activity) according to spirulina supplementation and breed of hens was observed. Abstract The aim of the study was to investigate the effect of short-term dietary spirulina supplementation (1% and 3%) and the strain of laying hens (White Leghorn: WL and Rhode Island Red: RIR) on color, nutritional value, and stability of yolk. Egg weight was not affected by any of the studied effects. Yolks from 3%-spirulina supplemented hens had higher retinol and lower α-tocopherol content (p = 0.0001) when compared to control. The supplementation with 1%-spirulina markedly decreased luminosity and increased redness (p = 0.0001) and yellowness (p = 0.0103). Short-term spirulina supplementation slightly modified the fatty acid composition of yolk. The C16-desaturase index increased with the algae, whereas other egg quality indices (hypocholesterolemic, thrombombogenic, n-6/n-3) were not modified. Hen strain mainly affected to the lipid profile. The RIR hens accumulated greater yolk retinol with supplementation doses of 3% (p < 0.05), while the WL hardly suffered changes in the accumulation. Also, yolks from RIR hens had lower C16:0 (p = 0.0001), C18:0 (p = 0.0001), saturated (SAT) (p = 0.0001), and thrombogenic index (p = 0.0001), C20:3n-6 (p = 0.0001), n-6/n-3 ratio (p = 0.003), Δ-6+5-desaturase (p = 0.0005), total elongase indices (p = 0.0001) when compared to WL. Moreover, RIR had higher monounsaturated (MUFA), Δ-9-desaturase and hypocholesterolemic indices (p < 0.05) than WL. A different response to spirulina supplementation was observed for C18:1n-9, MUFA, Δ-9-desaturase and thiesterase indices (p < 0.05) according to hen strain. Yolks from RIR had higher MUFA and Δ-9-desaturase indices than WL at 1%-spirulina supplementation, whereas these parameters were less affected in RIR supplemented with 3%. SAT and Δ-9-desaturase were significantly correlated (r = −0.38 and 0.47, respectively) with retinol content according to a linear adjustment (p < 0.05). Lipid oxidation of yolk was slightly modified by the dietary treatment or hen strain. It was detected a relationship between TBARS and α-tocopherol, C22:5n-3 or C22:6n-3 (p < 0.05). L* and a* were also inversely or positively related with yolk retinol content according to a linear response (p < 0.05). The administration of 1% of spirulina in diets of red hens would be an interesting alternative to get healthier eggs from the nutritional point of view, obtaining an adequate color and without modifications in other yolk quality traits.

Simple Summary In recent years, consumers have shown increased interest in healthy and safe food produced under improved animal welfare standards. Therefore, production systems proving outdoor access have gained popularity, increasing the need for knowledge on genotypes suitable for free-range systems. This study aimed to investigate the suitability of two Turkish layer genotypes, Atak-S (brown) and Atabey (white), in a free-range system. We evaluated laying performance, egg quality parameters, and yolk fatty acid profile. The egg production was higher in Atabey than Atak-S, whereas the eggs from Atak-S hens tended to be heavier and had a stronger shell structure than eggs from Atabey hens. Furthermore, eggs from Atabey hens had improved egg yolk and albumen content compared to eggs from Atak-S hens. The total saturated fatty acid content in yolk was higher in Atabey eggs than in Atak-S eggs at 56 weeks of age, whereas a higher yolk color score was observed in Atak-S eggs than in Atabey eggs. Our results could help free-range egg producers to improve production, as well as satisfy consumer demands regarding egg quality in organic production. Abstract Consumer interest in buying eggs from animal welfare-friendly systems with outdoor access is increasing, leading to an increase in the need for knowledge on genotypes suitable for free-range systems. Two Turkish laying hen genotypes, Atak-S (brown, n = 210) and Atabey (white, n = 210), were reared in a free-range system from 19–72 weeks of age, and their suitability for the system was assessed based on laying performance, egg quality, and yolk fatty acid profile. Mean hen-day and hen-housed egg production were found to be higher in Atabey than Atak-S (p < 0.01). The brown eggs from Atak-S hens tended to be heavier than the white eggs from Atabey hens (p < 0.01). Brown eggs obtained from Atak-S hens had a stronger shell structure (p < 0.01), while white eggs from Atabey hens had higher mean yolk index, albumen index, and Haugh unit than brown eggs (p < 0.05). At 56 weeks of age, total saturated fatty acid content in yolk was higher in white eggs than in brown eggs (p < 0.01). These findings related to genotype could help free-range egg producers in their choices for more profitable production and for meeting consumer demands on egg quality and egg yolk fatty acid levels.

In this study, the objective was to evaluate the effect of the age of Hy-line Brown hens – 44 and 60 weeks of age (26 and 42 weeks of laying) and housing system (enriched cages and litter) on the quality of eggs. According to our results, eggs with a better quality of albumen were obtained from younger hens than from older hens. Moreover, older hens produced eggs with inferior quality related to shell parameters, such as greater elastic deformation, poorer breaking strength, and thinner shells. However, hens kept in a litter housing system laid eggs with superior shell quality characteristics of less flexible and greater breaking strength, even though the thickness, weight, and percentage were similar in both housing systems. In addition, a higher amount and activity of lysozyme were obtained from eggs laid by hens kept in the litter housing system than those obtained from hens kept in cages. The maintenance system and age of birds also had a significant (P≤0.05) effect on the basic chemical composition of eggs, as well as on the proportion of individual elements and fatty acid profile. Taking these results into account, we can conclude that the more valuable characteristics from the morphological and nutritional point of view were observed in eggs obtained from younger Hy-line hens kept in the litter housing system.

Abstract
Egg nutrient quality is strongly influenced by hen diet but is also affected by rearing environment, hen strain, and hen age. The objective of the current study was to determine the effect of: 1) conventional battery cages, 2) enrichable cage systems, 3) enriched colony housing, 4) cage-free, and 5) free-range rearing systems on mineral concentrations of whole, dried egg (yolk and albumen combined) from TA Tetra White (TW) and Hy-Line Brown (HB) hens at 44, 68, and 88 wk of age. We hypothesized that mineral concentration of eggs would differ among rearing systems but not between strains or with hen age. Hens held in enriched colony housing systems produced eggs with 10% lower Mg and 11% lower Mn levels than conventional hens. Concentrations of Ca and Cu were higher (7 and 8%, respectively) in eggs from TW hens than from HB hens. Eggs from HB hens had 8% higher concentrations of Fe, 6% higher Mg and 5% higher Mn than TW hens. Mn was higher in eggs from 44-wk hens than from 68- or 88-wk hens (16 and 11%, respectively). Interaction effects between rearing environment and hen age were observed for K and Mn concentrations. Eggs from 68-wk hens in conventional rearing systems contained 14 to 21% more K than eggs from conventional hens at 44- and 88 wk and 14 to 18% more than eggs from 68-wk hens in other rearing systems. At 88 wk of age, hens in conventional rearing systems produced eggs with higher Mn concentration than hens in enrichable or enriched colony housing systems (22 and 23%, respectively). Interactions between rearing environment, hen strain, and hen age were observed for egg Zn levels among 44- and 68-wk hens but were not detectable among 88-wk hens regardless of rearing system or hen strain. Observed differences in egg mineral content in our study were small and are unlikely to have substantial impact on human nutrition.

Abstract
The impact of strain or feed intake on food trace elements and its health risk assessment is still ambiguous, and therefore, available facts are rare. Therefore, this study aimed to assess the effects of both strains and feed intake on trace elements depositions to egg, toxic heavy metals concentration, and health risk assessment of egg consumption. In the current cross-sectional study, the selected strains, including Shaver White, Hy-Line W36, Bovanse White, Lohman LSL-Lite, and Native laying hens of Khorasan Razavi province, were examined. A total number of 50 samples of eggs and 15 samples of their feed was purchased from poultry farms. Yolk and white were separately analyzed. Sample preparation was performed by wet digestion followed by Inductively Coupled Plasma Mass Spectrometry. Trace metals Pb, As, Cd, Hg, Cr, and Ni were detected. Statistical analysis was performed in Stata11.2 portable software. Although there was a significant difference in strains and feed, no significant difference was observed in trace elements in egg contents (weight of egg white and egg yolk). Mercury concentration in all the samples was below the instrument detection limit. In this study, the target hazardous quotients were below one for all trace elements. Therefore, Iranian does not experience the adverse health effects due to the consumption of egg.

Abstract
The incorporation of omega-3 polyunsaturated fatty acids (PUFA) in the egg is dependent on both the transfer efficiency of preformed dietary omega-3 fatty acids to the eggs as well as endogenous PUFA metabolism and deposition. Employing an experimental design consisting of 70 Lohmann LSL-Classic hens (n=10/treatment) in a 6-week feeding trial, we examined the impact of graded levels of either flaxseed oil (alpha-linolenic acid, ALA) or algal DHA (preformed docosahexaenoic acid, DHA), each supplying 0.20%, 0.40% and 0.60% total omega-3s. The control diet was practically low in omega-3s. Study parameters included monitoring the changes of fatty acid contents in yolk, measures of hen performance, eggshell quality, total lipids and fatty acid contents of plasma. Data were analysed as a complete randomized design using Proc Mixed procedure of SAS. No significant differences were observed between treatments with respect to hen performance, eggshell quality and cholesterol content in plasma and egg yolk. Individual and total omega-3 PUFA in the yolk and plasma increased (P<0.0001) linearly as a function of total omega-3 PUFA intake. At the highest inclusion levels, DHA-fed hens incorporated 3-fold more DHA in eggs compared with ALA-fed hens (179±5.55 vs. 66.7±2.25mg/yolk, respectively). In both treatment groups, maximal enrichment of total n-3 PUFA was observed by week-2, declined by week-4 and leveled thereafter. In addition, accumulation of DHA in egg yolk showed linear (P<0.0001) and quadratic (P<0.05) effects for flaxseed oil (R2=0.89) and algal DHA (R2=0.95). The current data, based on defined level of total omega-3s in the background diet, provides evidence to suggest that exogenous as well as endogenous synthesis of DHA may be subject to a similar basis of regulation, and serve to highlight potential regulatory aspects explaining the limitations in the deposition of endogenously produced omega-3 LCPUFA.

Abstract
This trial studied the effects of maternal dietary vitamin premixes, and the mixture of canthaxanthin (CX) and 25-hydroxycholecalciferol (25-OH-D3) on the performance of progeny ducklings. Four maternal diets were used under a 2 × 2 factorial arrangement with 2 kinds of vitamin premixes (Regular and High; High premix had higher levels of all vitamins except K3 than the Regular premix), and with or without the addition of the mixture of CX (6 mg/kg) and 25-OH-D3 (0.069 mg/kg). Cherry Valley duck breeders (38-wk-old) were fed with corn-wheat flour-soybean meal-based diets for 8 wk, and then eggs were collected and hatched. Healthy ducklings (equal number of female and male) from each maternal group were randomly selected and received the same commercial starter (1 to 14 d) and grower (15 to 35 d) pellet diet for 35 d. Maternal High vitamin premix increased shank pigmentation (1 d, P = 0.001), BW (1 d, P < 0.001 and 14 d, P = 0.006), BW gain (1 to 14 d, P = 0.008), G:F ratio (1 to 14 d, P = 0.007), superoxide dismutase (SOD; 1 d liver, P = 0.027 and 14 d serum, P = 0.031), and total antioxidant capacity (1 d liver, P < 0.001); and decreased protein carbonyl (14 d serum, P = 0.011) of ducklings. The mixture of CX and 25-OH-D3 increased yolk pigmentation (P < 0.001); increased shank pigmentation (1 d, P < 0.001 and 14 d, P < 0.001), BW (1 d, P < 0.001), feed intake (15-35 d, P = 0.014), SOD (1 d liver, P = 0.032), and tibia ash (14 d, P = 0.010) of ducklings; and decreased malondialdehyde (P < 0.001) and protein carbonyl (P = 0.044) of yolks, and malondialdehyde (14 d serum, P < 0.001) of ducklings. In conclusion, either maternal High vitamin premix or maternal supplementation of the CX and 25-OH-D3 mixture improves growth performance and antioxidant status of ducklings.

Abstract
Background The full-fat flaxseed meal has obtained relatively new flourished concept as staple chicken feedstuff for the production of designer eggs. However, unprocessed flaxseed also encloses well documented anti-nutritional factors which are associated with growth depression of laying hens. The present research work was carried out to evaluate the impact of full-fat extruded flaxseed meal supplemented diets on productivity performance of hens and production of modified ω-3 fatty acids-enriched eggs. Methods The full-fat flaxseed meal was extruded at barrel exit temperature (140 °C), screw speed (160 rpm) and feed rate (25 kg/h) for reduction of anti-nutritional compounds. One hundred and sixty, Babcock hens (age 24 weeks old) were selected at random from a large flock and ten hens were placed in each of 16 wire-mesh pens. The experimental diets prepared by supplementation of extruded flaxseed at 10 %, 20 % and 30 % level were fed to hens along with control. Results The extruded flaxseed contained 86 % and 76 % less hydrocyanic compounds and tannin, respectively than the initial material. The hens fed with control diet consumed more feed, possessed heavy body weight and showed higher egg production as compared to hens fed on extruded flaxseed supplemented diets. The loss in body weight and egg production was recorded less for hens fed on 10 % extruded flaxseed supplemented diets as compared to those fed on 30 % extruded flaxseed supplemented diets. None of the experimental diets resulted in significant increase or decrease the total lipids and cholesterol content in egg yolk of hens. The extruded flaxseed supplemented diets resulted in a significant improvement of α-linolenic and docosahexaenoic acid in egg yolk with a concomitant reduction in arachidonic acid. The sensory scores were assigned higher to control eggs. Increasing level of extruded flaxseed in experimental diets decreased the scores for all sensory attributes of eggs. Conclusion The present study suggested that extruded flaxseed meal up to 20 % can be supplemented in the diets of hens for maximum deposition of α-linolenic acid and docosahexaenoic acid in egg yolk with acceptable detrimental effects on egg traits.

Abstract
Abstract. The aim of the present study was to determine the effects of breed (Naked Neck – NN – and Lohmann Brown – LB), age (46 to 49 weeks) and the time of day of sampling (morning eggs – M – and afternoon eggs – A) on the proximate and fatty acid composition of whole eggs. Eggs of commercial hens (LB) had significantly (P < 0.001) less fat, ash and protein and lower dry-matter content (more water content) compared to the autochthonous breed (NN). The NN eggs contained significantly (P < 0.001) more SFA (saturated fatty acid) and less PUFA (polyunsaturated fatty acid) than LB ones, while the share of the eggs' total n-3 fatty acids did not differ significantly between breeds. The share of total MUFA (monounsaturated fatty acid) significantly (P = 0.011) decreased, while the share of total PUFA, n-6 and n-6 / n-3 ratio significantly increased (P < 0.001; P < 0.001; P = 0.032, respectively) with age of hens. Additionally, compared with morning eggs, afternoon eggs had a significantly (P = 0.046) higher share of total n-6 fatty acids. PCA (principal component analysis) offered a good separation of the samples according to breed and age when two first principal component were extracted. PC1 was positively related to parameters of proximate composition and SFA content, while PC2 was positively determined by PUFA, n-6 and n-3 content. Eggs of autochthonous hens (NN) were located in the positive area of PC1, whereas those from the commercial hens (LB) were in the negative quarter, which indicates opposite characteristics.

Abstract
The time required to reach a plateau of n-3 polyunsaturated fatty acid (PUFA) concentration in plasma and egg yolk and dynamics of the enrichment process were examined in laying hens. A group of 75 Lohmann White Leghorn layers (65 wk) were fed one of 3 diets: control, moderate, or high n-3 PUFA-enriched diet for 18 d. Diets provided similar ME and CP and contained 0, 7.5%, or 15% LinPRO (source of n-3 PUFA), respectively. Prior to dietary treatment, baseline values were established for the BW, fatty acid composition in egg yolk on a whole-egg basis, and in plasma. These measurements were repeated at 6, 12, and 18 d of feeding. Enzymatic conversion rates of linolenic acid (LNA) to long-chain fatty acids were calculated. Data were analyzed with Proc Mixed of SAS, and broken stick analysis was used to determine n-3 PUFA plateau using the NLIN procedure of SAS (P < 0.05). The total egg yolk n-3 PUFA reached a plateau of 343.7 mg/egg and 272.9 mg/egg after 6.6 and 5.9 d on the high and moderate diets, respectively. In blood plasma, the n-3 PUFA concentrations reached saturation in 7.2 d with 0.93 mg/mL and 0.67 mg/mL on high and moderate diets, respectively. The transfer efficiency of total n-3 PUFA from the diet to the egg yolk was calculated as 55.6% in control birds, 30.5% in moderate birds, and 22.2% in high birds, demonstrating reduced transfer efficiency of n-3 PUFA as inclusion in the feed increases. Final egg yolk n-3 PUFA concentrations had a CV of 16.5% compared with 28.5% for plasma. After 12 d, the long-chain n-3 PUFA [eicosapentaenoic acid (EPA), docosapentaenoic acid (DPA), and docosahexaenoic acid (DHA)] were significantly higher in egg yolk from hens on the moderate and high enriched diets compared with those from hens fed the control diet, whereas in plasma values did not differ. Broken stick analysis of egg enrichment indicated that high birds reached the target threshold of 300 mg of total n-3 PUFA/egg in 5 d. A significant increase in EPA, DPA, and DHA and reduction in arachidonic acid content in egg yolks from hens fed enriched diets compared with the control diet confirms competition for enzymes during postabsorptive modification of these fatty acids. This work contributes to the understanding of individual hen effects on n-3 PUFA absorption and the effect of level of dietary enrichment with an extruded flax product on final yolk n-3 PUFA concentration.

Abstract
Foaming, emulsifying, gelling, and sensory properties of fresh and stored hen eggs fed with a diet supplemented with flax oil (FO), rapeseed oil (RO), fish oil (FISH), and by-product from black currant processing (BC) were investigated. With these diets, the ω6/ω3 fatty acid ratio of eggs varied from 1.5 to 5.8, while the ratio for eggs in the control group was 6.2. Compared to eggs in the control group, FO supplementation in the feed had statistically significant influences on the foaming properties of the fresh eggs. Eggs stored for 21 days lost part of their foaming properties in FISH oil supplemented group, but the foaming properties in all test groups were technically acceptable. The emulsifying properties of eggs in FO and FISH supplemented feeding groups were statistically different compared to control group. In boiled eggs, flax oil and fish oil supplementation induced off flavours in eggs, but no changes between the control group and test groups were found in the sensory properties of mayonnaise preparations. These results suggest that the egg processing industry may produce egg-based products using oil-supplemented eggs without major problems in functional or sensory properties.

Abstract
In the present study, we examined the composition, amount, and uptake of yolk nutrients [fat, protein, water, and carbohydrates (COH)] during incubation of eggs from 30- and 50-wk-old broiler breeder hens. Eggs were sampled at embryonic d 0 (fresh eggs), 13, 15, 17, 19, and 21 (hatch). Egg, embryo, yolk content, and yolk sac membrane were weighed, and the yolk sac (YS; i.e., yolk content + yolk sac membrane) composition was analyzed. From 30 to 50 wk of age, the albumen weight increased by 13.3%, whereas the yolk increased by more than 40%. The proportion of fat in the fresh yolk of the 30-wk-old group was 23.8% compared with 27.4% in the 50-wk-old group, whereas the proportion of protein was 17.9% compared with 15.6%, respectively. During incubation, results indicated that water and protein infiltrated from other egg compartments to the YS. Accordingly, the calculated change in the content of water and protein between fresh yolk and sampled YS does not represent the true uptake of these components from the YS to the embryo, and only fat uptake from the YS can be accurately estimated. By embryonic d 15, fat uptake relative to embryo weight was lower in the 30-wk-old group than in the 50-wk-old group. However, by embryonic d 21, embryos of both groups reached similar relative fat uptake, suggesting that to hatch, embryos must attain a certain amount of fat as a source of energy for the hatching process. The amount of COH in the YS increased similarly during incubation in eggs from hens of both ages, reaching a peak at embryonic d 19, suggesting COH synthesis in the YS. At hatch, the amount of protein, water, and COH in the residual YS, relative to the weight of the yolk-free chick, was similar in eggs from young and old hens. However, chicks from the younger hens had less fat in the YS for their immediate posthatch nutrition compared with those from the older hens.

Abstract
Os efeitos de fontes de lipídios na dieta de poedeiras sobre o desempenho produtivo e a qualidade do ovo foram verificados em dois experimentos. Foram utilizados quatro tratamentos, definidos de acordo com a fonte lipídica adicionada nas rações: óleo de soja, óleo de girassol, óleo de linhaça e ração controle (sem adição de óleo). Os experimentos foram realizados com poedeiras de 20 e 54 semanas de idade, respectivamente, com duração de oito semanas. Avaliaram-se os parâmetros produtivos - consumo de ração, conversão alimentar, produção e peso dos ovos - e de qualidade do ovo - porcentagens de gema, albúmen e casca, sólidos da gema, unidades Haugh, pH do albúmen, e cor da gema. Somente o peso do ovo de poedeiras jovens foi afetado pela inclusão de óleos vegetais na ração. Esses ovos apresentaram maior peso e maior porcentagem de gema que os produzidos pelas poedeiras jovens alimentadas com ração-controle. Concluiu-se que a utilização de diferentes fontes de lipídios na ração de poedeiras não altera o desempenho produtivo e a qualidade interna dos ovos, com exceção do peso do ovo de poedeiras novas, que aumenta com a utilização de óleos vegetais.

Abstract
This study was a 3 x 8 factorial arrangement of 3 nutrient densities (low, medium, and high) and 8 commercial Leghorn strains. The objective of this experiment was to determine the effect of increasing both dietary energy and other nutrients (amino acids, Ca, and available P) on performance, egg composition, egg solids, egg quality, and profits in 8 commercial Leghorn strains during phase 1 (from 21 to 36 wk of age). This experiment lasted 16 wk. Eight strains of hens (n = 270 of each strain) at 21 wk of age were randomly divided into 24 treatments (6 replicates of 15 birds/treatment). There were no interactions between strain and diet except for BW. Strain had a significant effect on all measured parameters except mortality, whole egg solids, and yolk color. As nutrient density increased, hens linearly adjusted feed intake to achieve similar energy intakes so that the similar quantities of dietary energy (5.8 to 5.9 kcal) were used to produce 1 g of egg. As nutrient density increased, egg mass linearly increased, and feed conversion linearly improved. Egg-specific gravity and Haugh unit linearly decreased with increasing nutrient density. There was a quadratic response of the percentage of albumen solids to the increased nutrient density. Increasing both dietary energy and other nutrient (amino acids, Ca, and available P) contents significantly increased yolk and albumen weight at the same time, resulting in a significant increase of egg weight during early egg production. Egg weight may be maximized to genetic potential by increasing both dietary energy and other nutrient (amino acids, Ca, and available P) contents during early egg production. Because egg prices and ingredient prices often change, there can be no fixed optimal nutrient density for optimal profits.

Abstract
1. As hens age, egg weight increases but the eggs contain proportionally more yolk and less albumen and shell. However, at a given age, larger eggs contain proportionally more albumen. When modelling the nutrient requirements of the hen over a production cycle, based on the daily outputs of each nutrient, egg weight needs to be predicted as the sum of the three components, since each has a unique chemical composition, and these proportional changes will therefore influence the nutrient requirements of the hen. 2. Yolk weight is related to hen age and may be calculated using a logistic or Gompertz function. Allometric functions are used to predict albumen weight from yolk weight and shell weight from the weight of the egg contents. 3. A mechanistic, stochastic population model for layers may be used to verify that these functions correctly reflect the proportional changes in the egg components with advancing hen age and at a given age, over a range of egg weights. 4. The various parameters used in the equations need to be defined for the available genotypes.

Abstract
The effects of supplementing broiler breeder diets with polyunsaturated fatty acids (PUFA) and organo-Se compounds on the levels of Se and PUFA in chick tissues and on chick performance were assessed. Prepeak (23 wk) and peak (27 wk) production broiler breeders were fed 1 of 4 diets: a wheat-based commercial diet with soybean oil or fish oil but no added Se, and each diet with added Se as Sel-Plex (soybean oil + Se, fish oil + Se; Alltech Inc, Nicholasville, KY). The diets were designed to contain less than 0.1 mg of Se/kg and about 0.5 mg/kg for the nonsupplemented and the supplemented diets, respectively. As-hatched chicks from the 4 parental treatments were fed a nutritionally high quality diet (ME = 12.57 MJ/kg; CP = 228.7 g/kg) or a low quality diet (ME = 10.28 MJ/kg; CP = 182.8 g/kg), resulting in 8 dietary treatments. Performance was better and mortality lower in chicks from 27-wk-old breeders compared with those from 23-wk-old breeders. Fish oil in the maternal diet increased progeny mortality and reduced chick body mass at hatch. Body mass at 7 and 14 d posthatch was lower in chicks fed the low quality diet compared with chicks fed the high quality diet. At hatch, and for up to 14 d posthatch, chicks from hens fed diets high in PUFA had higher concentrations of docosahexaenoic acid (DHA) in the brain and liver compared with chicks hatched from hens fed diets low in PUFA. The DHA content of the tissues of chicks from breeders fed diets supplemented with Se was higher than that in chicks from breeders fed unsupplemented diets. Even after 14 d of being fed a diet with identical levels of Se, chicks hatched from parents fed diets high in Se had higher tissue Se concentrations than those hatched from parents fed diets low in Se. Supplementation of the maternal diet of chicks with organo-Se appears to enhance the DHA concentration of the chick brain, which may improve brain function.

Prepeak (23 wk) and peak (27 wk) production breeders were fed 1 of 4 diets: a wheat-based commercial breeder diet with 55 g/kg of either soybean oil (SO) or fish oil (FO), but no added Se (only that originating from feed ingredients), and each diet with added Se as Sel-Plex (SO + Se, FO + Se). The diets were designed to contain <0.1 mg/kg of Se and about 0.5 mg/kg of Se for the nonsupplemented (no added Se) and the supplemented diets, respectively. The Se concentration of the eggshell of the hatching egg was measured. The concentration of Se, PUFA, and total lipid content of the brain and liver of the 1-d-old chick was determined. The number of fertile eggs increased, embryonic mortality decreased, and hatchability increased as hen age increased from 23 to 27 wk. The Se concentration in the eggshell and the brain and liver of 1-d-old chicks was higher in the high-Se treatments com pared with the concentration in the low-Se treatments. Fish oil inclusion in the breeder diet increased embryonic mortality in wk 3 of incubation and reduced both hatchability and 1-d-old chick weight in hens of both ages. The addition of Se to the FO diets ameliorated some of these adverse effects, because chicks hatched from eggs laid by 23-wk-old breeders of the FO + Se treatment were heavier than those receiving the FO treatment. The Se concentration in the brain and liver of chicks from the FO hens was higher than that in chicks from the SO hens. The concentration of docosahexaenoic fatty acid was higher in the liver of chicks from the SO + Se treatment compared with that of chicks from the SO treatment, indicating possible protective effects of Se. Hatchability was decreased by increased PUFA and was higher in 27-wk-old compared with 23-wk-old breeders.

Abstract
We assessed the effects of supplementation of broiler breeder diets with polyunsaturated fatty acids (PUFA) and organic Se on hatching egg quality during storage. Broiler breeders (n = 352) were fed 1 of 4 diets: SO (soybean oil with no added Se), SO with Se (SO+Se), fish oil (FO), or FO and Se (FO+Se). Eggs from prepeak (23 wk) and peak production (27 wk) breeders were stored for 14 d under typical (15 degrees C, 78% RH) conditions. Eggs were analyzed for albumen Haugh units (HU) and pH, shell characteristics, egg component weight, Se content, and fatty acid (FA) profile. The efficiency of transfer of Se into the egg was greater in low Se treatments compared with in high Se treatments. The majority of Se from the low Se treatments was deposited in the yolk, whereas in high Se treatments, the Se was deposited evenly in the yolk and albumen. In the low Se treatments, the Se content of yolk and albumen was lower than in the high Se treatments and decreased as age increased. Albumen HU decreased with increased storage, although high Se treatments had greater HU compared with low Se treatments. Eggs from the FO treatment were smaller with thinner eggshells compared with the SO treatment, but addition of Se to the FO diets ameliorated some of these effects. The egg yolk FA profile from the SO+Se treatment was altered compared with that from the SO treatment, perhaps due to interactions between dietary PUFA and Se-dependent enzyme systems. Hatching egg quality during storage was affected by dietary PUFA and Se content, as well as broiler breeder age.
