Abstract
(1) Background: "Blue food" is a recently coined term referring to seafood, emphasizing health benefits and sustainability. This study compares nutrient intake levels between Koreans who consume fish and shellfish and those who do not. (2) Methods: Data from the eighth Korea National Health and Nutrition Examination Survey (2019-2020) were used. A total of 9442 individuals were analyzed (≥1 year old). A complex sample design was applied. (3) Results: Younger individuals aged 9 to 29 consumed less fish and shellfish, while those with higher education and income levels consumed more. Compared with the non-consumption group, individuals in the fish and shellfish consumption group exhibited a higher nutrient density in their diets, excluding total fat, saturated fatty acids, monounsaturated fatty acids, and riboflavin (p < 0.01). They also had a higher proportion of nutrient intakes relative to the Recommended Nutrient Intake level for all nutrients than the non-consumption group (p < 0.001), particularly in eicosapentaenoic acid and docosahexaenoic acid intakes. Conversely, the non-consumption group had a higher proportion of nutrient intakes below the Estimated Average Requirement compared with the consumption group. (p < 0.001). (4) Conclusions: Individuals consuming blue food exhibited higher levels of nutrient intake. Developing strategies to promote the consumption of blue food, considering factors such as age, education, and income, is essential.

Abstract
The Dietary Guidelines for Americans (DGA) recommend twice-weekly consumption of seafood for health benefits, yet many U.S. consumers have historically fallen short of this target. The economic and societal impacts of the COVID-19 pandemic brought concern about further declines in seafood intake. This study evaluated the influence of COVID-19 on seafood intake among U.S. residents, toward understanding potential public health implications. A nationally representative cross-sectional survey of 1200 U.S. residents conducted in June 2021 evaluated the frequency and types of seafood consumed, and purchase methods used, before and during the early stages of the COVID-19 pandemic. The results (weighted data) indicate most U.S. consumers (90%) eat seafood, yet only 19% meet the seafood DGA. The likelihood of meeting the DGA was higher among consumers who were Asian, Black, or Hispanic; older; unmarried; of higher income; familiar with the DGA; choosing seafood for health reasons; and living in Atlantic or Gulf coast states. During COVID-19, some increased seafood intake for health reasons (45%), while others reduced intake due to factors such as cost (29%), limited availability (16%), and challenges with preparation (11%). Fresh salmon (68%), frozen shrimp (59%), and cooked oysters (41%) were most frequently purchased by consumers of these foods. More consumers indicated purchasing wild salmon (62%), shrimp (44%), and oysters (51%) than farm-raised products, though many were unsure. Fewer consumers included seafood in online grocery orders (36%) than meal kit orders (61%) when using these services. Though many consumers continued to eat seafood despite decreased restaurant patronage, most did not reach the intake level needed to maximize health benefits. Educational and marketing efforts promoting the health benefits of seafood and the convenience of procurement via online purchase methods may encourage intake across demographic groups to benefit public health outcomes in the U.S.

Abstract
Fish and seafood products are one of the most common causes of listeriosis in humans. A systematic review and meta-analysis were conducted using scientific literature to summarize available data on the prevalence of Listeria monocytogenes and Listeria sp. in fish, fish products and fish processing environment. Meta-analysis models were used to estimate the mean prevalence of the pathogen and to compare prevalence among the most popular fishes. Data from a total of 14,496 samples were analysed. Pooled prevalence of L. monocytogenes and Listeria sp. in raw fish was 5.8 % (95 % CI: 4.7-6.9) and 12.2 % (95 % CI: 8.9-15.5) respectively. Significantly higher results were observed for ready-to-eat products, occurrence of L. monocytogenes and Listeria sp. was 14.5 % (95 % CI: 11.1-18.0) and 21.7 % (95 % CI: 11.8-31.6) respectively. Moreover, meta-regression was performed to investigate changes in L. monocytogenes and Listeria sp. occurrence over the years and it shows a downward trend for both raw fish and RTE products. The results of the present study provide useful epidemiological information about the contamination level and distribution of Listeria sp. and L. monocytogenes among raw fish, fish products and fish processing environment.

Abstract
Mercury (Hg) pollution poses a significant threat to the environment, particularly in the form of methylmercury (MeHg). However, little is known about the distribution and influencing factors of Hg in deep-sea (>200m) fish, which is crucial for assessing potential health risks to fish and humans. In Canada, the deepwater redfish (Sebastes mentella) has been designated as an endangered species. After a 25-year fishing moratorium, the redfish population in the St. Lawrence Estuary and Gulf is recovering, and resuming of commercial fishing and human consumption are expected. This study aimed to investigate the distribution of MeHg and total Hg (THg) in the muscle of redfish, as well as the factors influencing its distribution, and to assess the potential human health risks associated with redfish consumption. The redfish samples (n = 123) were collected by Fisheries and Oceans Canada in 2019. The concentrations of THg and MeHg in redfish muscle were determined to be 93.3 ± 183 ng/g (mean ± SD, wet weight) and 78.2 ± 149 ng/g, respectively. Large redfish (>30 cm) accumulated 20 to 30 times more Hg than small redfish (17-30 cm). Small redfish from the Estuary-Western Gulf had higher levels of MeHg and THg than those from the Laurentian Channel and the Northeast Gulf, but the Hg availability to redfish among the three areas were similar. Significant predictors of MeHg concentrations in redfish muscle were determined to be fish length, muscle moisture, δ15N, and N%. MeHg consumption by the general population with an average fish consumption rate is not anticipated to have adverse effects. This study establishes a baseline for future Hg monitoring in the deep water environments in this region. Further research is required to elucidate the cause-effect relationships between various environmental/biological parameters and Hg accumulation in deep-sea biota.

Abstract
Interest in health implications of Earth science research has significantly increased. Articles frequently dispense policy advice, for example, to reduce human contaminant exposures. Recommendations such as fish consumption advisories rarely reflect causal reasoning around tradeoffs or anticipate how scientific information will be received and processed by the media or vulnerable communities. Health is the product of interacting social and physical processes, yet predictable responses are often overlooked. Analysis of physical and social mechanisms, and health and non-health tradeoffs, is needed to achieve policy benefits rather than "policy impact." Dedicated funding mechanisms would improve the quality and availability of these analyses.

Abstract
Pollution of aquatic ecosystems is one of the major challenges affecting many countries of the world. Heavy metal pollutants, in particular, threaten the life of aquatic organisms (fauna and flora) and, more importantly, humans who consume aquatic products as a critical source of proteins. In the present study, the concentrations of selected heavy metals (cobalt- Co, Chromium-Cr, nickel- Ni and manganese- Mn) in Limnothrissa miodon, locally known as 'Kapenta' were assessed using the Microwave Plasma Atomic Emission Spectrometer (MP AES) 4200 at the Zambia Agricultural Research Institute (ZARI). The fish was collected from Lake Kariba, Zambia, which is divided into four fisheries management strata (I, II, III, and IV). The health risks to consumers were evaluated using the Estimated Daily Intake (EDI), Target Hazard Quotient (THQ) and Hazard Index (HI). Analysis of variance (ANOVA) was used to assess the difference in the means of heavy metal concentration across the four strata for each element. The concentrations of all the heavy metal elements were within the permissible limits considered to be safe for human consumption based on the Food and Agriculture Organization (FAO) standards. However, the concentration of individual heavy metal elements varied significantly across the strata with stratum I and II showing higher levels in general except for Mn which was highest in stratum II and III compared with the other strata. Furthermore, Mn concentration was the highest in all the strata and the highest concentration was observed in the fish from stratum II. The EDIs, THQs and HIs of each heavy metal element did not show any threat to consumers of the fish from the lake. Further studies are required to better understand the potential sources of heavy metals and to regularly monitor existing activities that may elevate the concentration levels.

Abstract
Pomegranate (Punica granatum L.) fruits are a historical agricultural product of the Mediterranean basin that became increasingly popular in the latest years for being rich in antioxidants and other micronutrients, and are extensively commercialized as fruits, juice, jams and, in some Eastern countries, as a fermented alcoholic beverage. In this work, four different pomegranate wines specifically designed using combinations of two cultivars (Jolly Red and Smith) and two yeast starters with markedly different characteristics (Saccharomyces cerevisiae Clos and Saccharomyces cerevisiae ex-bayanus EC1118) were analyzed. The chemical characterization of the wines together with the originating unfermented juices was performed by 1H NMR spectroscopy metabolomic analysis. The full spectra were used for unsupervised and supervised statistical multivariate analysis (MVA), namely Principal Component Analysis (PCA), Orthogonal Partial Least Squares Discriminant Analysis (OPLS-DA), and sparse PCA (SPCA). The MVA of the wines showed a clear discrimination between the cultivars, and a smaller, yet significant, discrimination between the yeasts used. In particular, a higher content of citrate and gallate was observed for the Smith cv. and, on the contrary, a statistically significant higher content of fructose, malate, glycerol, 2,3 butanediol, trigonelline, aromatic amino acids and 4-hydrophenylacetate was observed in Jolly Red pomegranate wines samples. Significant interaction among the pomegranate cultivar and the fermenting yeast was also observed. Sensorial analysis was performed by a panel of testing experts. MVA of tasting data showed that the cultivar significantly affected the organoleptic parameters considered, while the yeast had a minor impact. Correlation analysis between NMR-detected metabolites and organoleptic descriptors identified several potential sensorially-active molecules as those significantly impacting the characteristics of the pomegranate wines.

Abstract
Blue shark score among the most abundant, widely distributed and worldwide consumed elasmobranchs. In this work contents of PCBs, PCDD/Fs and PBDEs were studied by means of GC-HRMS in muscle and liver of sixty blue sharks from the North East Atlantic sampled in 2019. Concentrations relatively similar were found for PCBs and PCDD/Fs in comparison with those in Atlantic specimens from the same area sampled in 2015. In contrast, PBDE loads doubled, likely mirroring the increased environmental presence of these pollutants. This, together with the different congener profiles reported for the same species in other geographical areas, highlighted the blue shark's potential as bioindicator of the degree and fingerprints of regional pollution by POPs. Interesting dissimilarities between muscle and liver concentrations were detected, most likely ascribed to distinct toxicokinetics involved for the different pollutants. Whereas most POPs preferentially accumulated in liver, some did the opposite in muscle. BDE-209 was the most prominent example, being almost negligible its presence in liver (0.3%) while accounting for ca. 14% of the total PBDE content in muscle. Different findings in this regard described for other shark species call for focused research to ascertain the role of the species in this apparent favored metabolization of BDE-209 in the liver. From a consumption perspective, the concentrations found in muscle -the most relevant part in the human diet-for PCBs and dioxin-like POPs were below the EU maximum allowed levels in foodstuff. Conversely, in liver about 58% and 78% of samples overpassed the European levels for tolerable intake of i-PCBs and dioxin POPs, respectively. Concentrations of PBDEs exceeded EQS (0.0085 ng/g w.w.) established by the European Water Framework Directive in 100% and 92% of liver and muscle samples, respectively, which adds to the open debate of such as a reduce value for this current EQS.

Abstract
Exposure to mercury (Hg) and pesticides (o.p'DDT, p.p'DDT, o.p'DDE, and p.p'DDE) in the Amazon through eating fish is of concern due to the large participation of this food in the diet of traditional fishing communities. The aim of this study was to evaluate the estimated daily intake (EDI) and the incremental lifetime cancer risk associated with Hg and o.p'DDT, p.p'DDT, o.p'DDE, and p.p'DDE in an Amazonian community. The results showed that for Hg, the EDI from carnivorous and detritivorous fish had the highest values, while for pesticides, the EDI from detritivorous fish intake had the highest value. The incremental lifetime cancer risk was below the permitted limit. A recommendation for controlling the high risk of exposure includes the reduction of detritivorous fish ingestion and/or replacement with herbivorous fish, which had lower EDI. We highlight the importance of investigating the human dietary patterns when estimating risk of exposure to Hg and pesticides.

Abstract
Seafood is a rich source of essential compounds for human health, but the consumption of aquatic products that are exposed to environmental pollutants, especially trace metals, comes with risk. Therefore, in this study, the levels of nickel, zinc, and lead in the muscle of shrimp Penaeus semisulcatus caught from the north of the Persian Gulf as a polluted environment were measured, and the health risks were assessed. The results showed that the level of Zn (300.88 ± 2.76 µg/g) in the muscle of shrimp was higher than Ni (6.82 ± 0.10) and Pb (1.10 ± 0.09 µg/g), and the amount of accumulation of all three metals is higher than the allowable limit proposed by the FAO/WHO. According to values of estimated daily intake (EDI) and target hazard quotient (THQ), the consumption of shrimp has no or minimal risk for health. However, the target cancer risk (TR) of Ni (adult, 0.00294; child, 0.00196) indicated that Ni accumulation is associated with carcinogenic risks. These findings may be helpful in the proper management of seafood quality and public health in the Persian Gulf.

Abstract
Seafood is well recognized as a major source of Long Chain n-3 Polyunsaturated Fatty Acids (LC n-3 PUFA, especially ecosapentaenoic acid, i.e. EPA and docosaheaxaenoic acid, i.e. DHA) and essential trace elements (As, Cu, Fe, Mn, Se, and Zn). It is also a source of non-essential trace elements (Ag, Cd, Hg, Pb) that can be deleterious for health even at low concentrations. Edible parts of sixteen species (fish, cephalopods, crustaceans and bivalves) of great importance in the Pertuis Charentais region, one of the main shellfish farming and fishing areas along the french coastline, were sampled in winter and analyzed to determine their fatty acid (FA) composition and trace element concentrations. Based on these analyses, a suite of indices was calculated to estimate risk and benefit of seafood consumption: the n-6/n-3 ratio, the atherogenic index, the thrombogenic index, the EPA + DHA daily recommended portion, as well as the maximum safe consumption. The results showed that fish contributed the most to LC n-3 PUFA supply, while bivalves and crustaceans were more beneficial in essential trace elements. Whatever the species, the concentrations of non-essential elements were not limiting for seafood consumption, as important amounts of the analyzed species can be eaten daily or weekly before becoming hazardous to consumers. Yet, concentrations of Hg in dogfish and seabass can become a concern for frequent seafood consumers (>three meals a week), confirming that varying seafood items is a key point for consumers to optimize the benefits of diverse seafood resources. Considering FA composition, whiting and pilchard are the most beneficial fish species for human diet, while surmullet was the least beneficial one. However, using an index integrating the relative risk due to Hg content, the surmullet appears as one of the most beneficial. This study provides a temporal shot of the quality of marine resources consumed in winter period in the studied area and highlights the complexity of a quantitative risk and benefit assessment with respect to the biochemical attributes of selected seafood.

Abstract
There is a growing interest in exploiting Antarctic fisheries for human consumption. However, information on how the nutritional qualities of these resources will respond to the predicted seawater warming in the region for the next century is poor. The present research investigates changes in various nutritional indices of dietary importance (e.g. the ratio polyunsaturated to saturated fatty acids, the atherogenicity index, the thrombogenicity index, the hypo-cholesterolemic to hyper-cholesterolemic index, the health-promoting index, the flesh lipid quality and the ratio omega-3 to omega-6 index) by determining the fatty acid composition in muscle of Trematomus bernacchii (an Antarctic fish species) in its natural habitat (-1.87 °C) and warmer temperatures (0.0, 1.0, 2.0 °C). Comparison of the estimated nutritional indices at -1.87 °C with those at warmer temperatures revealed that seawater warming caused changes in the nutritional indices in the range of -12%<Δ < 30%. The observed changes were not statistically significant and ascribed to biological variability. Therefore, the nutritional values of T. bernacchii muscle were preserved after increasing the temperature of its natural habitat by + 4 °C. The present research is the first report describing the nutritional quality indices for an Antarctic fish species and the consequences of seawater warming on the nutritional value of T. bernacchii.

Abstract
Fish and other seafood are important sources of nutrients, but they are also sources of chemical contaminants that may cause adverse health effects. This article aimed to identify existing risk-benefit assessments (RBA) of fish, shellfish, and other seafood, compare methodologies, discuss differences and commonalities in findings, and identify limitations and ways forward for future studies. We conducted a scoping review of the scientific literature of studies in all languages published from 2000 through April 2019. We identified 106 RBA of fish and other seafood across Europe, Asia, North America, Africa, and at the global level. Studies were heterogeneous in terms of types of fish and other seafood considered, beneficial and adverse compounds assessed, and overall methodology. Collected data showed that a diet consisting of a variety of lean and fatty fish and other seafood is recommended for the overall population and that women of childbearing age and children should limit the consumption of fish and other seafood types that have a high likelihood of contamination. Our review emphasizes the need for evidence-based, up-to-date, and harmonized approaches in RBA in general.

Abstract
BACKGROUND Plants of genus Cichorium are known for their therapeutic and nutraceutical properties determined by a wealth of phytochemical substances contained in the whole plant. The aim of this paper was to characterize the metabolic profiles of local Salento chicory (Cichorium intybus L.) varieties ("Bianca", "Galatina", "Leccese", and "Otranto") in order to describe their metabolites composition together with possible bioactivity and health beneficial properties. METHODS The investigation was performed by 1H-NMR spectroscopy and Multivariate Analysis (MVA), by which the metabolic profiles of the samples were easily obtained and compared. RESULTS The supervised Partial Least Squares Discriminant Analysis (PLS-DA) analysis showed as "Bianca" and "Galatina" samples grouped together separated by "Leccese" and "Otranto" varieties. A different content of free amino acids and organic acids was observed among the varieties. In particular a high content of cichoric and monocaffeoyl tartaric acid was observed for the "Leccese" variety. The presence of secondary metabolites adds significant interest in the investigation of Cichorium inthybus, as this vegetable may benefit human health when incorporated into the diet. CONCLUSIONS The 1H-NMR (Nuclear Magnetic Resonance Spectroscopy) based characterization of Salento chicory varieties allowed us to determine the potential usefulness and nutraceutical properties of the product, also providing a method to guarantee its authenticity on a molecular scale.

Abstract
Freshwater smelt (Hypomesus nipponensis) is a planktivorous fish found in the river of South Korea, Japan, China, and Russia. Because of its specific characteristics living in the cold temperature, this species is economically valuable in the various countries that held winter festival. The body size of the smelt is too small, so people consumed raw smelt during the winter festival sometimes. However, the microbial studies of smelt are nonexistent. Here, we characterized and compared the bacterial communities in the gut and skin of freshwater smelts. We amplified, sequenced, and analyzed the V4 regions of bacterial 16S rRNA genes from freshwater smelts. The microbial diversity in the skin (375 OTUs) was much greater than that in the gut (250 OTUs). At the phylum level, Proteobacteria (gut: 51.5%; skin: 52.9%), Firmicutes (gut: 30.6%; skin: 25.4%), Bacteroidetes (gut: 7.7%; skin: 14.7%), and Actinobacteria (gut: 5.2%; skin: 3.8%) were predominant in both organs. At the genus level, Sphingomonas (gut: 24.9%; skin: 4.4%, P < 0.01) was more abundant in the gut, whereas Acinetobacter (gut: 0.8%; skin: 11.8%, P = 0.02) and Pseudomonas (gut: 0.3%; skin: 2.1%, P = 0.01) were more abundant in the skin. Both beneficial (Lactobacillus) and harmful (Staphylococcus and Streptococcus) bacteria were detected in both organs, even under freshwater conditions. These results revealed that smelts have their own unique microbial communities in the gut and skin. Our findings broaden the understanding of planktivorous freshwater fish microbiomes and provide new insights into fish microbiomes for ensuring food safety.

Abstract
Oily seafood is an important food source which contains several key nutrients beneficial for human health. On the other hand, oily seafood also contains persistent organic pollutants (POPs), including the dioxin-like compounds (DLCs) polychlorinated dibenzo-p-dioxins/polychlorinated dibenzofurans (PCDD/Fs) and dioxin-like-polychlorinated biphenyls (dl-PCBs), potentially detrimental to human health. For a comprehensive comparison of the beneficial and potentially adverse health effects of seafood consumption, risk-benefit analyses are necessary. Risk-benefit analyses require reliable quantitative data and sound knowledge of uncertainties and potential biases. Our dataset comprised more than 4000 analyses of DLCs and more than 1000 analyses each of docosahexaenoic acid (DHA), eicosapentaenoic acid (EPA) and vitamin D in the three most important Norwegian commercial oily seafood species: Atlantic herring (Clupea harengus), Atlantic mackerel (Scomber scombrus) and farmed Atlantic salmon (Salmo salar). The levels of several DLC congeners were below the limit of quantification (LOQ), making estimation of true levels challenging. We demonstrate that the use of upper bound substitution of censored data will overestimate, while lower bound substitution will underestimate the actual levels of DLCs. Therefore, we implement an alternative robust statistical method by combining Maximum Likelihood Estimation, Regression on Order Statistics and Kaplan-Meier analyses, which is better suited for providing estimations of levels of these contaminants in seafood. Moreover, we illustrate the impact of the toxic equivalency factor (TEF) system on estimation of the sums of DLCs by comparing the TEF system to an alternative system of relative effect potency (REP) factors (Consensus Toxicity Factors). The levels of nutrients and contaminants were related to adequate intake (AI) and tolerable weekly intake (TWI), respectively. We used AI and the TWI values established by the European Food Safety Authority (EFSA). The benefit and the risk were further viewed in the context of the Norwegian average intake of oily fish, and the Norwegian governmental official dietary recommendations of oily fish. Our results showed that both benefit and risk are met at the levels found of nutrients and DLCs in oily seafood. The comprehensive quantitative data presented here will be a key for future risk-benefit assessment of oily fish consumption. Together, our results underline that a refined formalized integrative risk-benefit assessment of oily fish in the diet is warranted, and that the data and methodology presented in this study are highly relevant for future integrated and multidisciplinary assessment of both risks and benefits of seafood consumption for human health.

Abstract
Food safety issues associated with aquatic food products become more important with the increasing consumption and followed by its ongoing challenges. The objective of this paper is to review the food safety hazards and health risks related to aquatic food products for the Southeast Asian region. These hazards can be categorized as microplastics (MPs) hazard, biological hazards (pathogenic bacteria, biogenic amines, viruses, parasites), and chemical hazards (antimicrobial, formaldehyde, heavy metal). In different Southeast Asian countries, the potential health risks of aquatic food products brought by food hazards to consumers were at different intensity and classes. Among all these hazards, pathogenic bacteria, antimicrobials, and heavy metal were a particular concern in the Southeast Asian region. With environmental changes, evolving consumption patterns, and the globalization of trade, new food safety challenges are created, which put forward higher requirements on food technologies, food safety regulations, and international cooperation.

Abstract
The quality index method (QIM) is a leading method of assessing the freshness (and thus quality) of seafood that is based on relatively few sensory attributes considered relevant. These characteristics are scored using a 0 to 3 demerit points' scale, the sum of which is designated the quality index (QI) and quantifies the specimens' lack of freshness. The linear relationship between QI and storage time allows for the estimation of remaining shelf-life. Moreover, QIM is deemed species-specific. Meta-analysis was carried to attest the species-specificity of QIM schemes or if, otherwise, biological, ecological, procedural and methodological parameters, alone or in combination, justify schemes' categorization. The variation among the QIM schemes was analyzed using random/mixed-effects models of 68 primary studies. The correlation coefficient associated with linear relationship between the QIM scores and storage time was the designated effect. This study is the first to use of meta-analysis to summarize QIM schemes developed since the inception of the method in the early 1980s. The initial random-effects meta-analysis model indicated that the correlation coefficients associated with QIM averaged 0.982 (95% CI: 0.978-0.986). The considerable remaining heterogeneity (Q = 152.06, p < 0.0008) was further investigated as a function of moderator variables. Several moderator variables, per se or in combination, namely seafood group (bluefish, whitefish, Selachii, cephalopods and crustaceans), storage procedure (ice, water, air, vacuum and modified atmosphere packaging) and temperature (°C), family and habitat (marine and freshwater), and maximum number of demerit points in QIM were found to have significant effects (QM, 0.0002 < p < 0.0919) on correlation coefficients derived from QIM schemes. Notwithstanding, at this stage of the analysis none clearly justified the categorization of QIM schemes since substantial residual heterogeneity remained unexplained in almost every case and there were issues with influential studies. Then, in a mixed-effects meta-analysis of a subset of studies for whole specimens stored in ice, seafood groups and maximum number of demerit points were found to be significant moderators (QM, p = 0.0018 and p = 0.0173, respectively). Correlation coefficients were higher in studies developing QIM schemes for cephalopods compared to the other seafood groups and in studies with lower sum of demerit points. The potential issues with publication bias and influence analysis are discussed. We cannot rule out the species-specificity of QIM schemes that have been stated previously and that constitutes a relative advantage compared to other methods of assessment seafood freshness based on sensory analysis, particularly the EU grading scheme.

Abstract
Global trade of seafood has increased in the last decade, leading to significant concerns associated with seafood fraud. Seafood fraud involves the intentional misrepresentation of fish or shellfish for the purpose of economic gain and includes acts such as species substitution, illegal transshipment, overtreatment/short weighting, and mislabeling country of origin or production method. These fraudulent acts have had economic, environmental, and public health consequences on a global level. DNA-based techniques for seafood authentication are utilized by regulatory agencies and can be employed as part of a food fraud risk mitigation plan. This chapter will focus specifically on the use of DNA-based methods for the detection of seafood species substitution. Various methods have been developed for DNA-based species identification of seafood, including polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP), species-specific PCR, real-time PCR, Sanger sequencing, microarrays, and high-resolution melting (HRM). Emerging techniques for seafood authentication include droplet digital PCR, isothermal amplification, PCR-enzyme-linked immunosorbent assay (ELISA), and high-throughput or next-generation sequencing. Some of these DNA-based methods target specific species, such as real-time PCR and droplet digital PCR, while other methods allow for simultaneous differentiation of a wide range of fish species, including Sanger sequencing and high-throughput sequencing. This chapter will begin with an introduction on seafood fraud and species substitution, followed by an analysis of the main DNA-based authentication methods and emerging techniques for species identification.

Abstract
Human activities in coastal catchments can cause the accumulation of pollutants in seafood. We quantified the concentration of heavy metals, pesticides and PFASs in the flesh of the fisheries species yellowfin bream Acanthopagrus australis (n = 57) and mud crab Scylla serrata (n = 65) from 13 estuaries in southeast Queensland, Australia; a region with a variety of human land uses. Pollutants in yellowfin bream were best explained by the extent of intensive uses in the catchment. Pollutants in mud crabs were best explained by the extent of irrigated agriculture and water bodies. No samples contained detectable levels of pesticides, and only six samples contained low levels of PFASs. Metals were common in fish and crab flesh, but only mercury in yellowfin bream from the Mooloolah River breached Australian food safety standards. High pollutant presence and concentration is not the norm in seafood collected during routine surveys, even in estuaries with highly modified catchments.

Abstract
Although seafood is considered to be an important part of a balanced diet, many national food consumption surveys suggest that seafood is not consumed in sufficient amounts. As consumers are moving to diversify their diet from animal-based protein, it is important to understand the factors influencing consumption of marine foods. This review aims to assess the characteristics of seafood consumers as well as the influences on seafood consumption in Europe, USA, Canada, Australia and New Zealand. Systematic search strategies were used to identify relevant journal articles from three electronic databases (PubMed, Web of Science and Embase). Three searches were carried out and identified 4405 unique publications from which 121 met the criteria for the review process. The reviewed studies revealed that seafood consumers were more likely to be older, more affluent and more physically active and were less likely to smoke compared with non-seafood consumers. Sex and BMI did not appear to have a directional association with seafood consumption. The most commonly reported barriers to seafood consumption were cost, followed by sensory or physical barriers, health and nutritional beliefs, habits, availability and cooking skills. The most commonly reported influences were beliefs about the contribution of seafood to health, environmental influences and personal preferences. Based on the findings of this review, future intervention strategies to increase seafood consumption may need to consider affordability and education in terms of health, nutrition and cooking skills. More research is needed to explore the effectiveness of specific interventions at increasing the consumption of seafood.

Abstract
BACKGROUND Seafood provides nutrients that are important for optimal development of the unborn child. However, seafood is also a source of contaminants including mercury (Hg) and methylmercury (MeHg) that may have adverse effects on neurodevelopment of the fetus. Humans are predominantly exposed to MeHg through seafood consumption, however, levels of MeHg vary considerably between species. OBJECTIVES Investigate, in a randomized controlled trial (RCT) during pregnancy, if an increased intake of Atlantic cod (Gadus morhua), a fish species with relatively low levels of MeHg contamination, influences total hair Hg (THHg) concentrations in humans. METHODS Pregnant women (n = 137) were enrolled in the RCT "Mommy's Food" (2016-2017), which was designed to increase iodine status. Participants were randomly assigned to intervention (400 g of cod fillets per week) or control (continued habitual diet) groups for 16 weeks (gestational week 20-36). THHg concentrations were measured at baseline and post-intervention using thermal decomposition, amalgamation, and atomic absorption spectrophotometry (US EPA method 7473). The trial is registered in ClinicalTrials.gov, NCT02610959. RESULTS Post-intervention, the intervention group had median (inter-quartile range) THHg concentrations of 554 (392-805) µg/kg, and the control group 485 (341-740) µg/kg (p = 0.186). When adjusting for baseline THHg concentrations, there was a significant difference between the groups in those participants with baseline THHg concentrations below 534 µg/kg. Post-intervention, 8% of the study population exceeded the US EPA reference dose in hair (1,000 µg/kg) (intervention group: n = 6, control group: n = 4). CONCLUSION THHg concentrations were generally low in both study groups of pregnant women, despite the relatively high seafood intake. While the intervention with 400 g of cod per week slightly increased THHg concentrations, it did not lead to an increase in number of subjects exceeding the US EPA reference dose; a dose level at which no adverse effects are expected to occur over a period of lifetime exposure.

Abstract
Mersin Coast plays a quite important role in terms of biodiversity and productivity of the Mediterranean marine ecosystem. However, many effects such as industrial, urban, touristic, and agricultural factors cause pollution in this region as in many other coasts. Therefore, this study aims to discuss the potential risks and benefits of the consumption of bogue fish (Boops boops, Linnaeus, 1758) collected from the North-Eastern Mediterranean in terms of fatty acid and metal levels. The results showed that PUFA for winter and spring and SFA for summer and autumn as the predominant fractions were determined. ∑PUFA/∑SFA ratio was higher than the recommended value for each season. In addition, DHA was higher than EPA for all seasons. Nutritional and health values of lipids are maintained throughout a year, except for winter. The concentration of metal levels in the tested muscle was within the permissible limit of the world levels. Fortunately, the calculated estimated weekly intakes of metals (EWIs) were much lower than the provisional tolerable weekly intake (PTWI) for all seasons. Thus, human health risks resulting from the consumption of this fish species from Mersin Bay are unremarkable because fish muscles are not active tissues for metal accumulation. Besides, the target hazard quotient (THQ) and the total target hazard quotient (TTHQ) were < 1, indicating that there is no potential health risk for the consumers. Benefit/risk ratios for all seasons were calculated and found to be HQEFA < 1. It was determined that the cancer risk for consumers is quite low, except for heavy consumption cases. As a goal of the study, important information about the effects of seasons on the changes in lipid quality and metal properties of bogue fish was provided and discussed in detailed.

Abstract
Antibiotics are employed worldwide to treat diseases of humans and other animals, but most antibiotics and their secondary metabolites are discharged into the aquatic environment, and these pollutants are emerging as a severe threat to human health. However, the systematic effects of dietary antibiotics on intestinal health in crustaceans and the associated risk to human health have not been thoroughly investigated, especially the effects on growth, immune responses, intestinal health, and the abundance of antibiotic residues and antibiotic resistance genes (ARGs). In the present work, two typical antibiotics (sulfamethoxazole and oxytetracycline) were administered orally to juvenile oriental river prawn (Macrobrachium nipponense) for eight weeks to mimic long-term use of antibiotics at legal aquaculture doses. The results indicate that dietary exposure to antibiotics significantly inhibited the growth performance of prawns, suppressed immunological parameters, and caused higher mortality in prawns challenged with Aeromonas hydrophila. Furthermore, prawns fed a diet containing antibiotics displayed a decrease in the number of intestinal goblet cells and lower digestive enzyme activity, as well as impaired intestine antioxidant ability and immune responses. Additionally, redundancy analysis revealed that different dominant bacterial phyla were responsible for increased ARG abundance in the prawn intestinal tract between control and antibiotic diet groups. The health risks posed by antibiotic residues in prawn muscle were also evaluated. Our findings demonstrate the risk posed by long-term use of dietary antibiotics in prawns, and suggest that antibiotics should be administered more carefully during aquaculture.

Abstract
Metal and fatty acid levels of some commercially important fish and crustacean species of economic value in the northeastern Mediterranean (Mersin Bay) were investigated. In addition, to predict possible risks regarding consumer health that may arise from the consumption of these species, risk estimates were calculated for adults and children considering consumption frequencies of one, three and seven times a week. The estimated weekly intake (EWI), target hazard quotient (THQ), lifetime cancer risk (CR) and benefit/risk ratio associated with their consumption were calculated. EWI values were found to be lower than the provisional tolerable weekly intake (PTWI) values determined by the European Food Safety Authority and FAO/WHO. For most samples examined, THQ was < 1. The benefit/risk ratios for all samples were calculated to be less than threshold. For the fish species examined, CR for consumers was identified to be low, except for heavy consumption cases.

Abstract
Macroelement (Na, K, Ca, Mg and P) and toxic trace element (As, Cd and Pb) contents were investigated in muscle and liver of the two fish species (common carp and trout barb) from the largest three reservoirs (Atatürk, Keban and Karakaya) in Turkey. Also, human health risks for consumers using the worst-case scenarios were assessed. Potassium was the most abundant macroelement in muscle of both fish species in all reservoirs, whereas phosphorus was the most abundant in liver. Toxic trace element contents in the liver of the two fish species from the three reservoirs were higher than those in muscle. The mean levels of As and Pb in muscle and liver of fish species from the Karakaya Reservoir were higher than those from the other two reservoirs. Three-way ANOVA showed that the interaction between fish species, reservoir and fish tissue was significant for only Cd (p < 0.01). The maximum levels of As, Cd and Pb in muscle and liver of fish species from the three reservoirs were below permissible limits. The estimated daily intakes of toxic trace elements in fish species were much lower than their corresponding tolerable daily intakes. The target hazard quotient (THQ) and total THQ values in fish species were below 1, which indicated that non-carcinogenic health effects are not expected. The carcinogenic risk values for inorganic arsenic were within acceptable range. The results revealed that toxic trace elements in common carp and trout barb from the Atatürk, Keban and Karakaya reservoirs do not pose a significant health risk to consumers.

Abstract
In this study, the levels of 11 heavy metal(loid)s (HMs) were determined in ten different fish species (wild, farmed, freshwater, and marine) frequently consumed in Turkey and compared with the maximum permissible limits (MPLs) established by international standards. Also, human health risks for the consumers were assessed. Among 11 HMs, only Al and Cr levels did not show significant differences among fish species. The highest concentrations of As were found in red mullet, which is a demersal fish. The average concentrations of Cd, Cr, Cu, and Pb in all fish species were below the MPLs, whereas those of Zn in European anchovy and Mediterranean horse mackerel, and that of inorganic As in red mullet exceeded the MPLs. The highest and lowest toxic metal contents (Al, As, Cd, and Pb) were recorded in red mullet and farmed rainbow trout, respectively. The estimated daily intakes of HMs in each fish species were very lower than their corresponding tolerable daily intakes, suggesting the daily intake of HMs through fish consumption would not pose health risks for the consumers. The target hazard quotient for individual HMs and hazard index for combined HMs in fish species were below 1, which indicated that non-carcinogenic health effects are not expected. The carcinogenic risk results revealed that there was a carcinogenic risk from exposure to inorganic As via the consumption of red mullet. Among all investigated fish species, rainbow trout and common carp were safer in terms of both non-carcinogenic and carcinogenic risks from exposure to HMs.

Abstract
Heavy metals are the most common form of aquatic pollutants and are of great health risk to consumers of contaminated sea food. This study investigated the level of heavy metals in three species of catfishes Chrysichthys nigrodigitatus (marine catfish), Clarias gariepinus (African catfish), and Schilbe mystus (silver catfish) in Ikoli Creek, Bayelsa State. The potential human health risks to consumers in the study area were investigated. The heavy metal concentration in the three species of catfishes was found in the following order: Fe > Zn > Cr > Pb > Cd. The levels were below WHO/FAO guideline, except for Fe having the highest value of 88.23 ± 0.09 mg/kg in C. gariepinus, 85.54 ± 0.26 mg/kg in S. mystus, and 66.36 ± 0.10 mg/kg in C. nigrodigitatus, which were above the acceptable regulatory limits in the fishes. The Chronic Daily Intake (CDI) values of all the metals were lower than the USEPA-recommended limits except for Cd in C. nigrodigitatus, C. gariepinus, and S. mystus. The Target Hazard Quotient for C. nigrodigitatus, C. gariepinus, and S. mystus was > 1. Life Cancer Risk from the consumption of Cr in C. nigrodigitatus and S. mystus was 1.65E-03 and 8.11E-04, indicating a probable risk of one chance of cancer for the populace that consumed fishes obtained from Ikoli creek. Heavy metal contamination of fishes caught in Ikoli creek may pose a health risk to the local populace via consumption of fishes.

Abstract
The objective of this study was to investigate the virulence factors, genetic relationship, antibiotic resistance profile and the biofilm formation ability of Vibrio parahaemolyticus isolates on shrimp and mussel surfaces at 30°C. In this study, eight (n = 8) V. parahaemolyticus isolated from mussel were examined. We used the polymerase chain reaction (PCR) to examine the distribution of different genes, and Repetitive Extragenic Palindromic-PCR (REP-PCR) to compare the genetic relationship. Disk diffusion technique was used to assess antibiotic and multiple-antibiotic resistance. The biofilm formation assay, and field emission scanning electron microscopy (FE-SEM) were used to evaluate biofilm formation ability. Transmission Electron Microscope (TEM) was used to observe the morphological structure of bacterial cell. Our results indicated that the biofilm-associated genes, 16S rRNA, toxR, and tdh, were present in all the tested V. parahaemolyticus isolates (n = 8). Approximately, 62.5% (5 isolates among 8 isolates) isolates showed strong multiple-antibiotic resistance index with an average value of 0.56. All isolates (n = 8) showed strong genetic relationship and significant biofilm formation ability on shrimp and mussel surfaces. This study demonstrated that the presence of virulence factors, high multiple antibiotic resistance index (MARI) values, and effective biofilm formation ability of V. parahaemolyticus isolates could be a great threat to human health and economic values in future. It was also suggested that a high resistance rate to antibiotic could be ineffective for treating V. parahaemolyticus infections. The continuous monitoring of V. parahaemolyticus antibiotic, molecular and biofilm characteristics is needed to increase seafood safety.

Abstract
Traditional foods have significant nutritional, sociocultural and economic value in subarctic First Nations communities of the Northwest Territories, and play a crucial role in promoting cultural continuity and sovereignty. Omega-3 polyunsaturated fatty acids (N-3 PUFAs), including eicosapentaenoic (EPA) and docosahexaenoic acid (DHA), carry significant benefits for neurocognitive development and cardiovascular health. However, the health risks posed by methylmercury may serve to undermine the benefits of fish consumption in Northern Indigenous communities. The objective of this study was to characterize profiles for mercury (Hg) and fatty acids in fish species harvested across lakes of the Dehcho Region, in the Mackenzie Valley of the Northwest Territories, to better understand the risks and benefits associated with traditional foods. Hg levels increased with trophic position, with the highest levels found in Burbot, Lake Trout, Walleye, and Northern Pike. Lake Trout, along with planktivorous species including Lake Whitefish, Cisco, and Sucker, demonstrated higher N-3 PUFAs than other species. Negative associations were observed between Hg and N-3 PUFAs in Lake Trout, Northern Pike, Walleye and Burbot. Further stratifying these relationships revealed significant interactions by lake. Significant differences observed in fatty acid and Hg profiles across lakes underscore the importance of considering both species- and lake-specific findings. This growing dataset of freshwater fish of the Dehcho will inform future efforts to characterize human Hg exposure profiles using probabilistic dose reconstruction models.

Abstract
A new determination method was developed for the measurement of methylmercury (Me-Hg) and inorganic mercury (i-Hg) in biological samples using high-performance liquid chromatography-inductively coupled plasma-mass spectrometry (HPLC-ICP-MS) following alkaline extraction. Mercury species in biological samples were extracted with 10% (w/w) tetramethylammonium hydroxide (TMAH) solution at 80°C for 2 h. Methylmercury was completely separated from i-Hg by adamantyl type and octadecylsilyl type columns within 6 and 4 min using isocratic elution, respectively. The detection limits (3σ) of adamantyl and octadecylsilyl columns using the proposed system were 0.08 and 0.13 ng g-1 (as Hg), respectively. Inorganic Hg completely separates from Me-Hg without tailing. The proposed determination methods were applied to several biological certified reference materials (CRMs). The measurement results of Me-Hg obtained by the present method were in good agreement within the expanded uncertainties (k = 2) with the certified values. The analytical precision (n = 3) of Me-Hg was less than 2%, and the recoveries of Me-Hg and i-Hg were 101 ± 1 and 103 ± 3%, respectively. In addition, this method enables the determination of Me-Hg and i-Hg for 20 samples in 1 h.

Abstract
Danish dietary guidelines recommend the Danish population to increase the consumption of fish while decreasing the consumption of red and processed meat to prevent nutrition-related diseases. However, the presence of contaminants in these foods may affect the overall risk-benefit balance of such substitution. We performed a quantitative risk-benefit assessment on substituting red and processed meat with fish in a Danish diet. We modeled the substitution among Danish adults based on data from a Danish dietary survey and compared four alternative scenarios based on varying chemical and nutrient exposures to the current consumption. We quantified the overall health impact of the substitutions in terms of Disability-Adjusted Life Years (DALYs). Approximately 150 DALYs/100,000 individuals could be averted each year if Danish adults consumed 350 g of fish/week (fatty or mix of fatty and lean) while decreasing the consumption of red and processed meat. A lower beneficial impact was observed when consumption of fish was restricted to lean fish (80 DALYs/100,000 averted), and a marked health loss (180 DALYs/100,000) was estimated when consumption was restricted to tuna. Our results show an overall beneficial effect of the substitution if the consumption of large predatory fish is low and at least half is fatty fish.

Abstract
Seafood is an important source of essential nutrients; however, it can also confer health risks from methylmercury (MeHg). In this paper, we evaluate the levels of potential methylmercury exposure among Kuwaiti seafood consumers in order to support the development of dietary recommendations for fish consumption in Kuwait. Total mercury (HgT) concentration for most of the studied fish and shellfish species were on average below the 0.5μgg-1 Codex guideline. The notable exception to this was Hamoor (Epinephelus coioides), which averaged 1.29μgg-1 HgT and 0.55μgg-1 MeHg. A dietary survey of 2393 households demonstrated that large quantities of fish and shellfish are commonly consumed in Kuwait (average consumption: 103gd-1). Most participants (53.6%) exceeded the Tolerable Daily Intake of MeHg; this percent exceedance was as high as 78% in children 6-12years of age. The majority (Mean: 50-51%) of Kuwaiti's dietary MeHg exposure comes from the consumption of Hamoor; therefore, advisories to limit the consumption of Hamoor may be necessary. Nutrient:Methylmercury ratios are reported herein; these ratios may assist efforts to create dietary advice that limits contaminant risk while promoting the nutritional benefits of seafood in Kuwait.

Abstract
The concentrations of ten metals in rainbow trout (Oncorhynchus mykiss) farmed in the Karakaya Dam Reservoir (Turkey) on the Firat River were determined. The metal concentrations in rainbow trout did not exceed the maximum permissible levels. Biomagnification factors (BMF) of ten metals were <1, indicating that these metals were not biomagnified. The estimated daily intake (EDI) of each metal was much lower than the respective tolerable daily intake (TDI). The target hazard quotient (THQ) for individual metal and total THQ for combined metals were lower than 1, indicating no health risk for consumers due to the intake of either individual metal or combined metals. The cancer risk (CR) value for toxic inorganic As was below 10-6, indicating no carcinogenic risk. According to the calculated maximum allowable consumption rates (CRmm), an adult may safely consume 28 meals of rainbow trout from the dam reservoir per month with no adverse carcinogenic and non-carcinogenic health effects. According to these results, the consumption of rainbow trout farmed in this dam reservoir is completely safe for human health.

Abstract
Shellfish is a major component of global seafood production. Specific items include shrimp, lobsters, oysters, mussels, scallops, clams, crabs, krill, crayfish, squid, cuttlefish, snails, abalone, and others. Shellfish, in general, contain appreciable quantities of digestible proteins, essential amino acids, bioactive peptides, long-chain polyunsaturated fatty acids, astaxanthin and other carotenoids, vitamin B12 and other vitamins, minerals, including copper, zinc, inorganic phosphate, sodium, potassium, selenium, iodine, and also other nutrients, which offer a variety of health benefits to the consumer. Although shellfish are generally safe for consumption, their exposure to diverse habitats, the filter feeding nature of shellfish such as oysters, clams, and mussels, and unhealthy farming and handling practices may occasionally entail health risks because of possible presence of various hazards. These hazards include pathogenic organisms, parasites, biotoxins, industrial and environmental pollutants, heavy metals, process-related additives such as antibiotics and bisulfite, and also presence of allergy-causing compounds in their bodies. Most of the hazards can be addressed by appropriate preventive measures at various stages of harvesting, farming, processing, storage, distribution, and consumption. Furthermore, consumer safety of shellfish and other seafood items is strictly monitored by international, governmental, and local public health organizations. This article highlights the nutritional value and health benefits of shellfish items and points out the various control measures to safeguard consumer safety with respect to the products.

Abstract
Dietary patterns and lifestyle factors are clearly associated with at least five of the ten leading causes of death, including coronary heart disease, certain types of cancer, stroke, non-insulin insulin-dependent diabetes mellitus, and atherosclerosis. Concerning specifically fish and seafood consumption, its beneficial health effects in humans are clearly supported by an important number of studies performed in the last 30 years. These studies have repeatedly linked fish consumption, especially those species whose contents in omega-3 fatty acids are high, with healthier hearts in the aging population. The nutritional benefits of fish and seafood are also due to the content of high-quality protein, vitamins, as well as other essential nutrients. However, a number of studies, particularly investigations performed in recent years, have shown that the unavoidable presence of environmental contaminants in fish and shellfish can also mean a certain risk for the health of some consumers. While prestigious international associations as the American Heart Association have recommended eating fish at least two times (two servings a week), based on our own experimental results, as well as in results from other laboratories, we cannot be in total agreement with that recommendation. Although a regular consumption of most fish and shellfish species should not mean adverse health effects for the consumers, the specific fish and shellfish species consumed, the frequency of consumption, as well as the meal size, are essential issues for adequately balancing the health benefits and risks of regular fish consumption.

Abstract
This study evaluated the spatial variability of risks and benefits of consuming fish from humic and clear lakes. Mercury in fish is a potential risk for human health, but risk assessment may be confounded by selenium, which has been suggested to counterbalance mercury toxicity. In addition to the risks, fish are also rich in eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are known to be beneficial for cardiovascular health and brain cognitive function in humans. We found that the concentrations of EPA + DHA and mercury in European perch (Perca fluviatilis) vary spatially and are connected with lake water chemistry and catchment characteristics. The highest mercury concentrations and the lowest EPA + DHA concentrations were found in perch from humic lakes with high proportion of peatland (30-50%) in the catchment. In addition, the ratio of selenium to mercury in perch muscle was ≥1 suggesting that selenium may counterbalance mercury toxicity. The observed variation in mercury and EPA + DHA content in perch from different lakes indicate that the risks and benefits of fish consumption vary spatially, and are connected with lake water chemistry and catchment characteristics. In general, consumption of perch from humic lakes exposed humans to greater risks (higher concentrations of mercury), but provided less benefits (lower concentrations of EPA + DHA) than consumption of perch from clear lakes.

Abstract
It is commonly assumed that the most accurate data on fatty acid (FA) contents are obtained when samples are analyzed immediately after collection. For logistical reasons, however, this is not always feasible and samples are often kept on ice or frozen at various temperatures and for diverse time periods. We quantified temporal changes of selected FA (μg FAME per mg tissue dry weight) from 6 fish species subjected to 2 handling and 3 storage methods and compared them to FA contents from muscle tissue samples that were processed immediately. The following species were investigated: Common Carp (Cyprinus carpio), Freshwater Drum (Aplodinotus grunniens), Channel Catfish (Ictalurus punctatus), Antarctic Eelpout (Pachycara brachycephalum), Rainbow Trout (Oncorhynchus mykiss) and Arctic Charr (Salvelinus alpinus). The impact of storage method and duration of storage on FA contents were species-specific, but not FA-specific. There was no advantage in using nitrogen gas for tissue samples held on ice for 1 week; however, holding tissue samples on ice for 1 week resulted in a loss of FA in Charr. In addition, most FA in Trout and Charr decreased in quantity after being stored between 3 and 6 hours on ice. Freezer storage temperature (-80 or -20°C) also had a significant effect on FA contents in some species. Generally, we recommend that species with high total lipid content (e.g. Charr and Trout) should be treated with extra caution to avoid changes in FA contents, with time on ice and time spent in a freezer emerging as significant factors that changed FA contents.

Abstract
This research classifies European consumers into segments based on their health risk-benefit perception related to seafood consumption. The profiling variables of these segments are seafood consumption frequency, general attitude toward consuming fish, confidence in control organizations, attitude toward the marine environment, environmental concern and socio-demographics. A web-based survey was performed in one western European country (Belgium), one northern European country (Ireland) and three southern European countries (Italy, Portugal and Spain), resulting in a total sample of 2824 participants. A cluster analysis was performed based on risk-benefit perception related to seafood and the profiles of the segments were determined by a robust 2-way ANOVA analysis accounting for country effects. Although this study confirms consumers' positive image of consuming seafood, gradients are found in health risk-benefit perception related to seafood consumption. Seafood consumption frequency is mainly determined by country-related traditions and habits related to seafood rather than by risk-benefit perceptions. Segments with a higher benefit perception, irrespective of their level of risk perception, show a more positive attitude toward consuming seafood and toward the marine environment; moreover, they report a higher concern about the marine environment and have a higher involvement with seafood and with the marine environment. Consequently, information campaigns concentrating on pro-environmental behavior are recommended to raise the involvement with seafood and the marine environment as this is associated with a higher environmental concern. This research underpins that in such information campaigns a nationally differentiated rather than a pan-European or international information strategy should be aimed for because of significant cultural differences between the identified segments.
