Abstract
Oxidative stress (OS) is a major concern that impacts the overall health of chickens in modern production systems. It is characterized by an imbalance between antioxidant defence mechanisms and the production of reactive oxygen species (ROS). This literature review aims to provide a comprehensive overview of oxidative stress in poultry production, with an emphasis on its effects on growth performance, immune responses, and reproductive outcomes. This review highlights the intricate mechanisms underlying OS and discusses how various factors, including dietary components, genetic predispositions, and environmental stressors can exacerbate the production of ROS. Additionally, the impact of oxidative stress on the production performance and physiological systems of poultry is examined. The study also emphasizes the relationship between oxidative stress and poultry diseases, highlighting how impaired antioxidant defenses increase bird's susceptibility to infections. The review assesses the existing approaches to reducing oxidative stress in chickens in response to these challenges. This includes managing techniques to lower stress in the production environment, antioxidant supplements, and nutritional interventions. The effectiveness of naturally occurring antioxidants, including plant extracts, minerals, and vitamins to improve poultry resistance to oxidative damage is also examined. To improve the antioxidant defenses of poultry under stress conditions, the activation of cellular homeostatic networks termed vitagenes, such as Nuclear Factor Erythroid 2-Related Factor 2 (Nrf2) is necessary for the synthesis of protective factors that can counteract the increased production of ROS and RNS. Future studies into novel strategies for managing oxidative stress in chicken production would build on these research advances and the knowledge gaps identified in this review.

Abstract
Extensive mechanistic evidence to support the beneficial function of dietary phytobiotic applications for broiler performance, gut function and health is highly warranted. In particular, for isoquinoline alkaloids (IQ) the underlying mechanisms related to critical gut homeostasis components such as cytoprotection and gut barrier are scarce, especially for young broilers at the starter growth stage (d1-10). The aim of this study was to investigate the effect of a standardized blend of IQs on the relative gene expression of critical biomarkers relevant for antioxidant response and barrier function along the intestine of young broilers at the end of starter growth phase. For this purpose, 182 one-day-old Ross 308 broilers were allocated in 2 treatments with 7 replicates of 13 broilers each: control diet-no other additions (NC), and control diet containing a standardized blend of IQs at 200 mg/kg of diet (M) for the starter growth period (1-10d). The results revealed that the IQs blend significantly upregulated (P < 0.05) the expression of genes related to antioxidant response in all intestinal segments. Moreover, the IQs blend enhanced (P < 0.05) gut barrier components primarily at duodenal level. In conclusion, the blend of IQs beneficially affected critical pathway components relevant for the gut antioxidant capacity and barrier along the intestine of young broilers.

Abstract
A hallmark of the vertebrate stress response is a rapid increase in glucocorticoids and catecholamines; however, this does not mean that these mediators are the best, or should be the only, metric measured when studying stress. Instead, it is becoming increasingly clear that assaying a suite of downstream metrics is necessary in stress physiology. One component of this suite could be assessing double-stranded DNA damage (dsDNA damage), which has recently been shown to increase in blood with both acute and chronic stress in house sparrows (Passer domesticus). To further understand the relationship between stress and dsDNA damage, we designed two experiments to address the following questions: (1) how does dsDNA damage with chronic stress vary across tissues? (2) does the increase in dsDNA damage during acute stress come from one arm of the stress response or both? We found that (1) dsDNA damage affects tissues differently during chronic stress and (2) the hypothalamic-pituitary-adrenal axis influences dsDNA damage with acute stress, but the sympathetic-adreno-medullary system does not. Surprisingly, our data are not explained by studies on changes in hormone receptor levels with chronic stress, so the underlying mechanism remains unclear.

Abstract
This study aimed to investigate the impacts of dietary supplementation with Galla chinensis tannins (GCT) on the growth performance, antioxidant capacity, and lipid metabolism of young broilers. Overall, a total of 216 healthy 1 day-old broilers were randomly allocated to CON group and GCT group, and provided with a basal diet or a basal diet added with 300 mg/kg microencapsulated GCT, respectively, in a 21 days trial. Our findings indicated that dietary GCT addition had no significant effects (p > 0.05) on growth performance. However, GCT supplementation led to a significant reduction in the total cholesterol (TC) concentration in the serum and liver (p < 0.05). Furthermore, GCT supplementation significantly increased the ratios of high-density lipoprotein (HDL) to low-density lipoprotein (LDL) and HDL to TC in the serum, in addition to elevating the activities of enzymes related to lipid metabolism in the liver (p < 0.05). Dietary GCT addition also improved the antioxidant capacity of the broilers, as evidenced by a significant decrease in the concentration of malondialdehyde in serum and liver (p < 0.05). Additionally, the GCT group exhibited significantly increased expressions of hepatic genes associated with antioxidant enzymes (HO-1, GPX1, SOD2, SIRT1, CPT-1, and PPARα) (p < 0.05), while the mRNA expression of SREBP-1 was significantly decreased (p < 0.05) compared with the CON group. In conclusion, dietary addition of 300 mg/kg microencapsulated GCT improved the antioxidant status and lipid metabolism of broilers without affecting their growth performance.

Abstract
Poultry meat is becoming one of the most important animal protein sources for human beings in terms of health benefits, cost, and production efficiency. Effective genetic selection and nutritional programs have dramatically increased meat yield and broiler production efficiency. However, modern practices in broiler production result in unfavorable meat quality and body composition due to a diverse range of challenging conditions, including bacterial and parasitic infection, heat stress, and the consumption of mycotoxin and oxidized oils. Numerous studies have demonstrated that appropriate nutritional interventions have improved the meat quality and body composition of broiler chickens. Modulating nutritional composition [e.g., energy and crude protein (CP) levels] and amino acids (AA) levels has altered the meat quality and body composition of broiler chickens. The supplementation of bioactive compounds, such as vitamins, probiotics, prebiotics, exogenous enzymes, plant polyphenol compounds, and organic acids, has improved meat quality and changed the body composition of broiler chickens.

Abstract
One-day-old male broiler chickens (Ross 308) were assigned to 3 dietary treatments in a completely randomized design with 8 replicates per treatment, and 4 birds per replicate. The control group was fed a basal control diet, and the 2 test groups were fed the basal control diet supplemented with 150 and 300 mg/kg of protected complex of biofactors and antioxidants [P(BF+AOX)], respectively. The P(BF+AOx) is a combination of vitamins, L-tryptophan and biofactors such as fermentation extracts (Jefo Nutrition Inc., Saint-Hyacinthe, QC, Canada). Dietary P(BF+AOX) did not affect growth performance and breast meat quality (water holding capacity, cooking loss, shear force, and texture profile analysis), but the addition of 150 mg/kg of P(BF+AOX) decreased the relative weight of liver, heart, and spleen (P < 0.05). The addition of 150 mg/kg of P(BF+AOX) tended to increase (P = 0.051) the cold carcass yield. The addition of 150 and 300 mg/kg of P(BF+AOX) decreased (P = 0.002) the cooler carcass shrink, but the relative weight of fat pad increased (P = 0.032) in chickens fed 300 mg/kg P(BF+AOx) than in those of birds fed the control diet. On the other hand, the addition of 300 mg/kg of P(BF+AOX) decreased (P = 0.041) the serum level of uric acid compared with those of birds fed the basal diet. Broiler chickens fed diets supplemented with 150 mg/kg of diet had higher (P < 0.05) mRNA expressions of jejunal SOD1 and interleukins 6 and 10 (IL-6, IL-10). The findings suggest that P(BF+AOX) could be considered as a functional nutrient in broiler diets up to a concentration of 150 mg/kg because of its favorable effects on maintaining intestinal barrier function as well as carcass traits, while excess levels (300 mg/kg) had exhibited superior effect on the serum level of uric acid compared with those of birds fed the control diet.

Dietary Corn Silk ( Stigma maydis) Extract Supplementation Modulate Production Performance, Immune Response and Redox Balance in Corticosterone-Induced Oxidative Stress Broilers. Abstract
Immunosuppression is a serious consequence of oxidative stress exposure that negatively affects the productivity and profitability of birds, as well as their well-being. Thus, the present investigation was designed to evaluate the potential of corn silk extract (CSE) supplementation to overcome the negative impacts of oxidative stress induced by corticosterone administration (CORT) in broiler chickens. A total of 280 one day old Cobb 500 male chicks were divided into four groups in 2 × 2 factorial arrangements. The experimental groups included CSE supplementation (0 or 500 mg/kg diet, from 20 to 35 days of age) and CORT administration (0 or 25 mg/kg diet, from 22 to 35 days of age) as independent factors. At the end of week five of age, production performance parameters were measured. The humoral and cell-mediated immune response parameters, redox status, and stress markers were determined. Data revealed deleterious effects of CORT administration on the broilers' body weight, body weight gain, and feed conversion ratio. Moreover, an exponential increase in stress marker levels, in addition to immunosuppression and redox imbalance, were associated with CORT administration. However, CSE supplementation, with its high total phenols content, partially alleviated the negative impacts of CORT administration, as shown by a significant improvement in immune response parameters and antioxidant activity, as well as a reduction in stress marker levels. Furthermore, CSE supplementation to non-stressed birds even significantly improved total antioxidant activity, total white blood cells (TWBCs) count, T-lymphocyte stimulating index, and wattle thickness. It can be concluded that, under stress conditions in commercial broiler farms, dietary CSE supplementation can strongly be recommended to modulate the negative impacts of stress. Therefore, CSE can be used as an effective immunomodulator and antioxidant agent to increase commercial broiler farm productivity and profitability.

Abstract
Oxidative stress is defined as an imbalance between pro-oxidants and anti-oxidants within biological systems, leading to tissue damage and compromising the health of afflicted animals. The incorporation of dietary anti-oxidants into chicken diets has been a common practice to improve the performance, health, and welfare of the host by protecting against oxidative stress-induced damage. Methyl sulfonyl methane (MSM), a naturally occurring organosulfur compound found in various plant sources, has demonstrated various beneficial biological properties, including anti-inflammatory and anti-oxidant properties in both in vitro and in vivo studies. MSM has been utilized as a dietary supplement for humans for its anti-oxidant, analgesic, and anti-inflammatory properties. It has also been administered to domestic animals, including cattle, pigs, and chickens, owing to its recognized anti-oxidant effect. This review summarizes the biological and physiological functions of dietary MSM in poultry.

Abstract
This study aimed to investigate the effects of diets supplemented with 25-hydroxycholecalciferol [25-(OH)D3] and additional vitamin E on growth performance, antioxidant capacity, bone development, and carcass characteristics at different stocking densities on commercial broiler farms. A total of 118,800 one-day-old Arbor Acres broilers were assigned to a 2 × 2 factorial treatment consisting of two dietary vitamin levels (5,500 IU vitamin D3 and 60 IU vitamin E: normal diet, using half 25-(OH)D3 as a source of vitamin D3 and an additional 60 IU of vitamin E: 25-(OH)D3+VE diet) and two stocking densities (high density of 20 chickens/m2: HD and 16 chickens/m2: LD). The experiment lasted for 42 d. The results showed that high-density stocking negatively affected the growth performance of broilers during the first four weeks, whereas the vitamin diet treatment significantly improved the feed conversion ratios (FCR) during the last 2 wk. Vitamin diets increased catalase at 14 and 42 d, and the glutathione peroxidase (GSH-px) levels at 42 d in high-density-stocked broilers. The interaction showed that serum vitamin E levels were significantly improved at 28 d of age in high-density-stocked broilers as a result of the vitamin diets. Stocking density and dietary treatments were found to significantly affect bone development, with the vitamin diet significantly increasing metatarsal length and femoral bone strength in broilers from high-density stocking density at 28 d of age. High stocking density increased the proportion of leg muscles and meat yield per square meter. In general, 25-(OH)D3 and additional vitamin E suppressed oxidative stress and ameliorated the negative effects of high-density stocking on bone development in a commercial chicken farm setting. Vitamin diets improved the FCR of broilers, while high-density stocking resulted in better economic outcomes.

Abstract
Oxidative stress significantly compromises the production efficiency of laying hens. It has been reported in literature that selenium (Se) in poultry diets has a positive effect on mitigating these effects. This study has been carried out to evaluate the effects of Se supplementation in feeds, from either an inorganic or a hydroxy-selenomethionine (OH-SeMet) source, on the performance and physiological traits of 50- to 70-wk-old Dekalb Brown laying hens under heat stress, and on their egg quality after different storage durations. The treatments consisted in supplementing 0.3 ppm of Se as sodium selenite (SS; 45%-0.7g/ton) or OH-SeMet (2%-15g/ton) in twelve 16-bird replicates. Supplementation with OH-SeMet resulted in a better performance of the laying hens than with SS: -5% feed conversion ratio and +3.6% of egg mass. A reduction in egg quality was observed with prolonged egg storage, which was mitigated with the use of OH-SeMet in laying hen diets. The use of OH-SeMet increased the antioxidant capacity of the birds, which showed higher glutathione peroxidase levels in the blood, kidneys, liver, and intestinal mucosa, in addition to a higher Se content in the eggs and a greater bone resistance. Thus, supplementing feeds with 0.3 ppm of OH-SeMet to 50- to 70-wk-old semi-heavy laying hens enhances their antioxidant capacity and leads to a higher egg quality and productivity than SS supplementation.

Abstract
Thirty-two Arbor Acres (AA) cockerels aged 27 weeks were used to determine the effect of vitamin E (VE) on the semen characteristics and sperm quality during hot season. The birds were fed diets containing 0, 50, 100 and 150mg VE kg-1 feed. There were 4 replicates and two birds per replicate. Semen collection was done thrice a week for three weeks in all birds. Dietary vitamin E significantly (p < 0.05) increased the semen volume (SV) and number of sperm cells (NS) in AA cockerels. CONTROL birds (0.71 mL) had lower SV than birds fed 150 mg VE (0.94 mL). Birds on 100 and 150 mg VE recorded similar NS, which was higher than 0 and 50 mg VE groups. The least NS was in the CONTROL group. Sperm abnormality gradually (p < 0.05) decreased as dietary VE increased from 0 to 150 mg. Significant (p < 0.01) effect of dietary VE was recorded in percentage live sperm (PLS). Semen from cockerels on VE treatment had higher PLS than the CONTROL. In conclusion, it may be beneficial to supplement the broiler breeder cockerel diet with VE up to 150 mg kg-1 feed during hot season as it increased SV, NS and PLS and decreased sperm abnormality.

Abstract
In aged animals, the physiological functions of the gastrointestinal tract (GIT) are reduced. Dietary intervention is necessary to re-activate GIT functions. The objective of this study was to investigate the impacts of dietary combination of quercetin (Q) and vitamin E (VE) on the intestinal structure and barrier integrity in aged breeder chickens. A sum of 400 (65-wks-old) Tianfu breeder hens were randomly allotted into four (4) groups with four (4) replicates, and fed with basal diet; basal diet supplemented with 0.4g/kg of Q; basal diet supplemented with 0.2g/kg of VE; and basal diet supplemented with the combination of Q (0.4 g/kg) and VE (0.2 g/kg) for 14 weeks. At the end of the 14th week, serum and gut segments were collected from eight hens per group for analyses. The results showed that Q+VE exerted synergistic effects on intestinal morphology by promoting villi height and crypt depth (P < 0.05), as well as mitigated the intestinal inflammatory damage of the aged hens, but decreased the concentration of serum D-lactate and diamine oxidase; and increased the levels of secretory immunoglobulin A (sIgA) and Mucin-2 mRNA (P < 0.05). Furthermore, the mRNA expression of intestinal tight junction proteins including occludin, ZO1, and claudin-1 was increased by Q+VE (P < 0.05). Moreover, Q+VE decreased the mRNA expression of the pro-inflammatory genes (TNF-α, IL-6, and IL-1β), and increased the expression of anti-inflammatory genes (IL-10 and IL-4) (P < 0.05). These results were consistent with the mRNA expression of Bax and Bcl-2. In addition, Q+VE protected the small intestinal tract from oxidative damage by increasing the levels of superoxide dismutase, total antioxidant capacity, glutathione peroxidase, catalase (P < 0.05), and the mRNA expression of SOD1 and GPx-2. However, Q+VE decreased malondialdehyde levels in the intestine compared to the control (P < 0.05). These results indicated that dietary Q+VE improved intestinal function in aged breeder hens, by protecting the intestinal structure and integrity. Therefore, Q+VE could act as an anti-aging agent to elevate the physiological functions of the small intestine in chickens.

Abstract
Simple Summary In recent years, natural, plant-based antioxidants have been increasingly popular among poultry producers to boost production and welfare. Colocynth, i.e., Citrullus colocynthis, is an herbaceous plant known to have antioxidant properties. Employing laying hens, this study investigated the potency of dietary colocynth seed supplementation to reduce the deleterious effects of acute oxidative stress induced by paraquat injection. The results demonstrated that supplementing layers’ diets with colocynth seed at 0.1% alleviated oxidative stress responses and significantly improved egg production performance. Furthermore, the immunological responses of the acute-oxidative-stressed layers were enhanced with colocynth seed supplementation. Thus, the inclusion of colocynth seed in layer chickens’ diets can improve egg production performance, restore the redox balance, and enhance immunological responses when they are reared under acute oxidative stress conditions. Abstract Oxidative stress is a detrimental physiological state that threatens birds’ productivity and general health. Colocynth is an herbal plant known for its bioactive properties, and it is mainly known for its antioxidant effects. This study’s purpose was to investigate how effective colocynth seed is at lowering the detrimental impact of acute oxidative stress caused by paraquat (PQ) injection in laying hens. A total of 360 Hy-Line Brown chickens, aged 39 weeks, were gathered and divided into four equal groups (10 hens × 9 replicates) in a 2 × 2 factorial design. The experimental groups were given either a basal diet or the basal diet supplemented with colocynth seed (1% of diet). Starting from week 40 of age and for 7 successive days, the experimental groups were either injected daily with paraquat (5 mg/kg body weight) or with saline (0.5 mL, 0.9% NaCl). Egg production performance with selected stress biomarkers and immunological response parameters were investigated at the end of week 40 of age. Our data revealed a significant reduction in egg production with an increase in blood stress biomarkers (i.e., HSP-70, corticosterone, and H/L ratio) in PQ-injected groups compared with non-stressed groups. Furthermore, an unbalanced redox state was detected in acute oxidative stress groups, with a significant rise in lipid peroxidation level, a reduction in total antioxidant capacity (TAC), and a drop in superoxide dismutase (SOD) and catalase enzyme activity. Supplementing PQ-injected hens with colocynth seed reduced the deleterious effects of acute oxidative stress. There was a significant drop in stress biomarkers with a significant rise in antioxidant enzyme activity and TAC observed in the PQ-injected group provided with colocynth seed supplementation. Remarkably, supplementation of colocynth in the non-stressed group resulted in a significant 27% increase in TAC concentration and 17% higher SOD activity when compared with the non-stressed control group. Colocynth supplementation in the PQ-injected group elevated the total white blood cell count by 25% and improved the B-lymphocyte proliferation index (a 1.3-fold increase) compared with the PQ-injected group that did not receive supplementation. Moreover, the non-stressed colocynth-supplemented group had significantly higher cell-mediated and humoral immune responses than the non-stressed control group. This study demonstrated that colocynth seed supplementation in birds exposed to acute oxidative stress may effectively alleviate its negative impacts on production performance, immunological responses, and redox status. We also inferred that, under normal conditions, colocynth seed can be added to laying hens’ diets to stimulate production and ameliorate immune responses.

Abstract
Background and Aim: Among several factors, the sperm quality of poultry is affected by the rooster’s body size and the availability of antioxidants like vitamin E. This study aimed to determine the effect of dietary vitamin E supplementation on rooster sperm quality through a meta-analysis. Materials and Methods: After verification and evaluation, a total of 19 articles were included in this study. Data, including dietary vitamin E, semen volume, concentration, total sperm cells, pH, motility, viability, percentage of dead and abnormal sperm, vitamin E sperm content, malondialdehyde (MDA) content, and testosterone levels, were tabulated in a database; these were subsequently analyzed using mixed modeling with vitamin E dose as a fixed effect and study identity as a random effect. Results: Dietary supplementation level of vitamin E significantly (p<0.001) affected sperm concentration, significantly affected motility (p<0.001), significantly affected sperm vitamin E (p<0.001), significantly affected viability (p<0.001), and significantly affected chicken sperm fertility (p=0.001). Vitamin E administration also significantly reduced the number of sperm cell deaths (p<0.001); however, increased dietary levels of vitamin E did not affect semen volume (p=0.853), pH (p=0.951), MDA (p=0.542), the percentage of abnormal sperm cells (p=0.343), nor testosterone levels (p=0.063). Conclusion: Dietary vitamin E supplementation is recommended for male chickens since it generally enhances the quality of their sperm.

Abstract
1. The objective of this study was to identify the effects of the antioxidant alpha-tocopherol acetate (ATA) and alpha lipoic acid (ALA) which have anti-inflammatory effects on developmental onset, severity and the progression of wooden breast (WB) based on Pectoralis major (P. major) muscle morphology and expression of genes associated with WB during the first three weeks post-hatch.2. A total of 160 newly hatched Ross 708 broiler chicks were randomly assigned in a replicated trial to either a control group or three dietary treatments (ATA 160 mg/kg feed, ALA 500 mg/kg feed or in combination).3. Microscopic changes associated with WB began at one week of age in all groups. The ATA acetate and ALA fed in combination decreased WB severity at two weeks of age (P = 0.05) and ATA alone or in combination reduced severity at three weeks of age compared to the control group (P = 0.05). Expression of myogenic determination factor 1 and peroxisome proliferator-activated receptor gamma was reduced in all dietary treatments compared to the control at three weeks of age (P ≤ 0.05), which suggested reduced muscle degeneration and lipid deposition.4. ATA and ALA fed both independently and in combination had a positive effect on mitigating WB severity microscopically as early as two weeks of age.

Abstract
Intestinal development is closely associated with inflammatory wooden breast (WB) myopathy. Vitamin E (VE) and alpha lipoic acid (ALA) with antioxidant and anti-inflammatory effects were used independently and in combination to evaluate their effects on intestinal developmental changes in ileal morphology and expression of genes related with gut nutrient transport, structure, and inflammation in broilers during the first 3 wk posthatch. A total of 160 newly hatched Ross 708 broiler chicks were randomly assigned into a control and 3 dietary treatments with 10 replicates of 4 birds each. Supplementation of VE (160 mg/kg) and ALA (500 mg/kg) independently and in combination were fed during the first 3 wk. At 1, 2, and 3 wk of age, one chick from each pen was harvested. Plasma VE concentration and ileal morphology were determined. Gene expression was measured by real-time quantitative PCR. Broilers in VE and combination of ALA and VE group had higher plasma VE concentration than the control and ALA group at 1, 2, and 3 wk of age (P < 0.01). All dietary treatments increased ileal villus height at 1 wk of age (P < 0.01) and decreased intraepithelial lymphocytes at 3 wk of age compared to the control (P ≤ 0.05). Combination of VE and ALA increased collagen type IV alpha 1 chain expression (P ≤ 0.05) and improved basement membrane structure indicating increased gut basement membrane integrity at 2 and 3 wk of age compared to the control. Expression of lipopolysaccharide-induced tumor necrosis factor-alpha factor associated with inflammation was decreased in all dietary treatments at 3 wk of age compared to the control (P < 0.01). Ileal morphology and gene expression were closely correlated with breast muscle morphology and gene expression. These results suggest that VE and ALA especially when they were combined in the diet had positive effects on mitigating intestinal inflammation and improving nutrient transport beginning at 1 wk of age, which is likely critical in reducing the severity of WB.

Abstract
Early posthatch nutrition is important for gut health. Vitamin E (VE) and omega-3 (n-3) fatty acids can improve gut health through antioxidative and anti-inflammatory effects. The objective of this study was to identify the effects of VE, n-3 fatty acids, and combination of both during the starter phase (0–10 d) or grower phase (11–24 d) on intestinal morphology and expression of genes associated with gut health. A total of 210 Ross 708 broilers were randomly assigned into 7 treatments with 10 replicates of 3 birds each. The control group was fed a corn–soybean meal–basal diet during the entire study (0–58 d). Supplementation of VE (200 IU/kg), n-3 fatty acids (n-6/n-3 ratio of 3.2:1), and combination of both were fed during the starter phase (0–10 d) or grower phase (11–24 d). All of the broilers were harvested at 58 d of age. Villus height, crypt depth, villus width, distance between villi, and number of intraepithelial lymphocytes were obtained. Expression of 21 genes was measured using NanoString analysis. Expression of solute carrier family 15 member 1 (P = 0.01) associated with peptide transport and mucin 2 (P = 0.03) related with intestinal mucus barrier was increased in the broilers supplemented with n-3 fatty acids in the grower diet compared with the control. Expression of solute carrier family 7 member 1 associated with amino acid transport was decreased in the group supplemented with n-3 fatty acids during the starter phase compared with the group supplemented with n-3 fatty acids (P = 0.01) or VE and n-3 fatty acids during the grower phase (P = 0.03). These data suggest that VE and n-3 fatty acids supplemented during the grower phase have a positive effect on improving nutrient transport with n-3 fatty acids supplementation in the grower diet showing the most beneficial effect. These findings can be used in the development of nutritional management strategies to improve broiler growth performance and meat quality.

Abstract
Wooden breast (WB) has arisen primarily in the breast muscle of commercial broilers. It is characterized by palpation of a rigid pectoralis major (p. major) muscle and is under severe oxidative stress and inflammation. Previous studies have shown that vitamin E (VE) has antioxidant properties and omega-3 (n-3) fatty acids have an anti-inflammatory effect. The objectives of this study were to identify the effects of VE and n-3 fatty acids on the severity of WB, morphological structure of the p. major muscle, expression of genes likely associated with WB and to determine the most beneficial supplementation period. A total of 210 Ross 708 broilers were randomly assigned into 7 treatments with 10 replicates of 3 birds each. The control group received a corn–soybean meal basal diet during the entire study (0–58 d). Supplementation of VE (200 IU/kg), n-3 fatty acids (n-6/n-3 ratio of 3.2:1), or combination of both were fed during the starter phase (0–10 d) or grower phase (11–24 d). All broilers were harvested at 58 d of age. Morphological assessment of the p. major muscle included myofiber width, perimysial and endomysial connective tissue space, overall morphological structure, and scoring of WB microscopically. Gene expression was measured using nanostring analysis. Genes associated with muscle development and growth factors, inflammation, extracellular matrix, and glucose metabolism were differentially expressed in the p. major muscle of the broilers supplemented with VE in the grower diet. Greater than 2 times more giant myofibers (≥70 μm) were found in the group supplemented with VE and n-3 fatty acids in the starter diet compared with the group fed VE in the grower diet (P = 0.02). Microscopic evaluation showed that VE supplementation in the grower diet had a 16.19% increase in muscle with no WB compared with the control group (P = 0.05). These data suggest that supplementation of VE during the grower phase may reduce the severity of WB in broilers.

Abstract
In a previous study, we examined the synergistic effects of the dietary supranutritional supplementation with vitamin E, vitamin C, and Se on the in vivo antioxidative status of broilers under conditions of dietary oxidative stress induced by feeding a diet high in n-3 PUFA. In this study, we examined the effect of their inclusion on the quality characteristics and oxidative stability of raw or cooked meat, both fresh or after a long-term frozen storage. Four hundred 21-day-old Ross 308 male broilers were allocated to 5 experimental groups fed 5% linseed oil-enriched finisher diets (days 21 to 40): Cont (recommended levels of vitamin E, C, and selenium), +E (200 IU vitamin E/kg feed), +C (250 mg vitamin C/kg feed), +Se (0.2 mg selenium/kg feed), or +ECSe (concentrations as in the sole supplementation, combined). Animal performance and carcass characteristics were monitored at the age of 40 D. Breast meat samples of 12 chickens per group were analysed fresh, fresh after frozen storage, cooked fresh, and cooked after frozen storage (2 × 2 factorial design) for parameters of meat quality (water-holding capacity—WHC, pH, and color) and oxidative stability (concentrations of vitamin E, malondialdehyde—MDA, antioxidant capacity of the water-soluble compounds—ACW, and fatty acid composition). Vitamin E alone (+E) and combined with Se and vitamin C (+ECSe) increased the α-tocopherol concentration in breast muscle, and showed similar protective effects against lipid peroxidation measured as MDA regardless of the frozen storage or cooking. The sole supplementation of vitamin C or selenium showed no effects on the meat quality parameters. In conclusion, the dietary supranutritional inclusion of vitamin E inhibited the lipid peroxidation in fresh, frozen stored, cooked fresh, and frozen stored meat in broilers fed with diets rich in n-3 PUFAs. Even though no clear synergistic effects of the supranutritional supplementation of vitamin C and Se with vitamin E were detected, their dietary inclusion did not negatively affect broilers carcass and meat quality parameters.

Abstract
The aim of this study was to determine the effect of a polyphenol product (PP) (Proviox) and vitamin E on the antioxidant status and meat quality of broiler chickens fed diets contaminated with ochratoxin A (OTA). One hundred and twenty ROSS 308 broiler chickens were randomly divided into six groups (10 replications, 2 birds per replication). Group I received an uncontaminated and unsupplemented diet, diets of groups II to VI were contaminated with OTA at 172 µg and 200 µg/kg for the starter and grower period, respectively. Furthermore, diets of groups III, IV and V were supplemented with vitamin E at 100, 200 and 100 mg, respectively, and to diets of groups V and VI additionally 100 and 2200 mg PP was added, respectively. Supplementation with PP and vitamin E had no significant effects on the growth performance, dressing percentage or carcass trait parameters of broiler chickens. In chickens exposed to stress, dietary supplementation with vitamin E and/or PP improved the total antioxidant status (p ≤ 0.05), enhanced the blood activity of antioxidant enzymes (p ≤ 0.01) and increased the concentrations of non-enzymatic antioxidants (p ≤ 0.01) in the liver and breast muscles. Regardless of the administered antioxidants, chickens fed diets contaminated with OTA were characterised by lower dressing percentage (p ≤ 0.01), a higher proportion of the liver in the carcass (p ≤ 0.01), lower carcass fat content (p ≤ 0.01), and longer small intestines (p ≤ 0.01) and caeca (p ≤ 0.01). Dietary supplementation with PP improved the water-holding capacity of meat (p ≤ 0.01). The breast muscles of chickens fed diets supplemented with PP and vitamin E were characterised by higher (p ≤ 0.05) concentrations of eicosapentaenoic acid (C20:5). It was concluded that PP can be an insufficient component of diets for broiler chickens to improve growth performance and mitigate the negative effects of high dose of OTA in diets.

Abstract
The aim of this study was to determine the effect of vitamin E and
polyphenols on the antioxidant potential and meat quality of broiler chickens
fed diets supplemented with low-quality oil. The experimental materials
comprised 120 male Ross 308 broilers (six treatments, 10 replications, two
birds per replication). Dietary supplementation with vitamin E and/or
polyphenols was applied in the following experimental design: group I
(negative control) – without supplementation without low-quality oil; group
II (positive control) – without supplementation + low-quality oil; group
III – supplementation with 100 mg kg-1 of vitamin E+ low-quality
oil; group IV – 200 mg kg-1 of vitamin E + low-quality oil; group V
– 100 mg kg-1 of vitamin E and 100 mg kg-1 of polyphenols +
low-quality oil; group VI – 200 mg kg-1 of polyphenols +
low-quality oil. Rapeseed oil oxidised under laboratory conditions was added
to the diets of broiler chickens from groups II to VI. The applied
antioxidants had no effect on the growth performance of chickens fed oxidised
oil. Increased dietary inclusion levels of vitamin E and/or polyphenols
improved the antioxidant status in the blood and increased the content of
non-enzymatic antioxidants in the liver and breast muscles of broilers fed
low-quality oil. The tested antioxidants had no influence on carcass quality
parameters in chickens fed oxidised oil. However, birds fed diets with the
addition of vitamin E were characterised by a higher gizzard weight and
higher pH of gizzard digesta. Dietary supplementation with vitamin E and
polyphenols or polyphenols alone contributed to a lighter colour and lower pH
of breast muscles and an increase in the content of fat and ash in the breast
muscles of broilers fed oxidised oil. The breast muscles of birds given 100
or 200 mg kg-1 of supplemental vitamin E were characterised by higher
concentrations of n-6 polyunsaturated fatty acids (PUFAs) and
hypocholesterolemic fatty acids (DFAs), a more desirable DFA/OFA
ratio, and a lower
atherogenicity index (AI). Polyphenols combined with vitamin E can be a
valuable component of diets for broiler chickens when the problem of
low-quality oil occurs.

Abstract
Previous investigation showed that ginsenoside Rg1 (Rg1) extracted from Panax ginseng C.A. Mey has antioxidative effect on oxidative stress in chickens. The present study was designed to investigate the protective effects of Rg1 on chicken lymphocytes against hydrogen peroxide-induced oxidative stress and the potential mechanisms. Cell viability, apoptotic cells, malondialdehyde, activity of superoxide dismutase, mitochondrial membrane potential, and [Ca2+]i concentration were measured, and transcriptome analysis and quantitative real-time polymerase chain reaction were used to investigate the effect of Rg1 on gene expression of the cells. The results showed that treatment of lymphocytes with H2O2 induced oxidative stress and apoptosis. However, pretreatment of the cells with Rg1 dramatically enhanced cell viability, reduced apoptotic cells, and decreased oxidative stress induced by H2O2. In addition, Rg1 reduced these H2O2-dependent decreases in mitochondrial membrane potential and reversed [Ca2+]i overload. Transcriptome analysis showed that 323 genes were downregulated and 105 genes were upregulated in Rg1-treated cells. The differentially expressed genes were involved in Toll-like receptors, peroxisome proliferator-activated receptor signaling pathway, and cytokine-cytokine receptor interaction. The present study indicated that Rg1 may act as an antioxidative agent to protect cell damage caused by oxidative stress via regulating expression of genes such as RELT, EDA2R, and TLR4.

Abstract
The aim of this study was to determine the effect of a polyphenol product (PP) (Proviox) and vitamin E on the antioxidant status and meat quality of broiler chickens exposed to high temperature. The experimental materials comprised 120 ROSS 308 broilers (6 treatments, 10 replications, 2 birds per replication). Dietary supplementation with vitamin E and PP was applied in the following experimental design: group I (negative control) - without supplementation; group II (positive control) - without supplementation; group III - supplementation with 100 mg vitamin E/kg; group IV - 200 mg vitamin E/kg; group V - 100 mg vitamin E/kg and 100 mg PP/kg; group VI - 200 mg PP/kg. In groups II-VI, broiler chickens aged 21-35 d were exposed to increased temperature (34°C for 10 h daily). In chickens exposed to high temperature, dietary supplementation with antioxidants, mostly PP, improved growth performance parameters, including body weight, body weight gain and feed intake until 28 d of age. Vitamin E added to broiler chicken diets at 200 mg/kg and vitamin E combined with PP was most effective in improving the total antioxidant status of birds, enhancing blood antioxidant enzyme activities and increasing vitamin E concentrations in the liver and breast muscles. Broilers fed diets supplemented with 200 mg/kg of vitamin E alone and vitamin E in combination with PP were characterised by a higher percentage content of breast muscles in the carcass. Dietary supplementation with antioxidants improved the water-holding capacity of meat, reduced natural drip loss and increased the crude ash content of meat. The breast muscles of chickens fed diets supplemented with PP had a lower contribution of yellowness. The breast muscles of chickens receiving diets with 100 mg vitamin E/kg(group III) and diets supplemented with PP (groups V and VI) were characterised by the highest concentrations of polyunsaturated fatty acids. The PP can be a valuable component of diets for broiler chickens exposed to high temperature.

Abstract
The perinatal period is critical to survival and performance of many organisms. In birds, rapid postnatal growth and sudden exposure to aerial oxygen around hatching markedly affect the chick redox status, with potentially negative consequences on physiology mediated by oxidative stress. In addition, telomere length (TL) undergoes reduction during birds’ early life, partly depending on oxidative status. However, relatively few studies have focused specifically on the changes in oxidative status and TL that occur immediately after hatching. In this study of the yellow-legged gull Larus michahellis, we found that chicks undergo a marked increase in plasma total antioxidant capacity and a marked decrease in the concentration of pro-oxidant molecules during the first days after hatching. In addition, TL in erythrocytes decreased by 1 standard deviation over the 4 days post-hatching. Body mass and tarsus length covaried with total antioxidant capacity and concentration of pro-oxidants in a complex way, that partly depended on sex and laying order, suggesting that oxidative status can affect growth. Moreover, TL positively covaried with the concentration of pro-oxidant molecules, possibly because retention of high concentrations of pro-oxidant molecules results from mechanisms of prevention of their negative effects, including reduction in TL. Thus, this study shows that chicks undergo marked variation in oxidative status, which predicts growth and subsequent TL, prompting for more studies of the perinatal changes in the critical post-hatching stages.

Abstract
The present study was designed to evaluate the effects of tea saponins on oxidative stress induced by cyclophosphamide in chickens. One hundred twenty chickens were randomly divided into 5 groups. Groups 3 to 4 received intramuscular injection of cyclophosphamide to induce oxidative stress and immunosuppression. After that, groups 2 and 4 were orally administered tea saponins in drinking water for 7 d. Then, groups 1 to 4 were immunized with a live, bivalent vaccine of Newcastle disease virus and infectious bronchitis virus. Blood samples were collected for analysis of oxidative parameters and specific antibody titers, and splenocytes were prepared for lymphocyte proliferative assay. The results showed that administration of tea saponins significantly increased total antioxidant capacity, total superoxide dismutase, catalase, glutathione peroxidase, glutathione, ascorbic acid, and α-tocopherol, and decreased malondialdehyde and protein carbonyl. Enhanced immune responses, such as lymphocyte proliferation induced by concanavalin A and lipopolysaccharides, and serum Newcastle disease virus- and infectious bronchitis virus-specific antibodies were also observed in chickens injected with or without cyclophosphamide. In addition, no side effects were found in chickens throughout the study. Therefore, tea saponins may be a potential agent to improve imunosuppression induced by oxidative stress in chickens.

Abstract
A trial was conducted to investigate whether, and if so to what extent, the combined supplementation of vitamin E, vitamin C, and selenium was superior to their sole supplementation concerning the oxidative stress induced by a high n-3 dietary polyunsaturated fatty acids (PUFA) intake in broilers. Four hundred 21-day-old Ross 308 male broilers were allocated to 5 experimental groups fed the following linseed oil (5%)-enriched finisher diets: Cont (no supplement), +E (200 IU vitamin E/kg feed), +C (250 mg vitamin C/kg feed), +Se (0.2 mg selenium/kg feed), or +ECSe (concentrations as in the sole supplementation, combined). Analyses of malondialdehyde (MDA), vitamin C, and α- and γ-tocopherols in plasma, antioxidant capacity of water- (ACW) and lipid- (ACL) soluble compounds in serum, and glutathione peroxidase (GPx) and superoxide dismutase (SOD) activities in whole blood were performed. In breast muscle, analyses of MDA, α- and γ-tocopherols, ACW, selenium, and fatty acid (FA) composition were carried out. Birds fed the combination of antioxidants showed reduced average daily gain (ADG) and average daily feed intake (ADFI) and, as +E, lower MDA and γ-tocopherol, together with raised α- tocopherol levels in plasma and lower MDA and raised α- tocopherol levels in breast muscle compared to the control. The combination of antioxidants in the +ECSe group raised GPx activity in whole blood compared to the control. In conclusion, results indicated that vitamin E is the most effective antioxidant to alleviate oxidative stress caused by high dietary PUFA and that the supplementation with additional vitamin C and selenium did not have clear synergistic effect.

Abstract
This study investigated the effects of mulberry (Morus alba L.) leaf flavonoids and Candida tropicalis on the growth, gastrointestinal development, enzyme activity of gastrointestinal digesta, and blood antioxidant function of dairy calves challenged with Escherichia coli O141:K99. A total of 15 Holstein preweaning bull calves (age = 28 d; body weight = 51 ± 3.9 kg, mean ± standard deviation) were randomly divided into 3 homogeneous groups with no supplementation (control, CON), Candida tropicalis added at 1 g/calf per day (CT), and mulberry leaf flavonoids added at 3 g/calf per day (MLF). The feed efficiency was greater in calves fed MLF than in CON either before or after the E. coli challenge test. The fecal score increased after E. coli challenge, but it was greater in the CON group than in the CT treatment and in the MLF group at d 1, 2, and 3 after the E. coli challenge. Calves fed the CT diet showed decreased blood β-hydroxybutyrate concentrations compared with those on the CON and MLF diets before the E. coli challenge. Dietary supplementation with CT resulted in lower blood superoxide dismutase activity than the CON after E. coli challenge. The calves fed CT and MLF showed much lower blood glutathione peroxidase activity than the CON group after being challenged with E. coli. The tunica mucosa of the duodenum was lower in CT and MLF than in CON. The lactase activity of the jejunal digesta was greater in MLF than in CON and CT. In summary, MLF and CT supplementation might effectively improve antioxidant function and reduce the incidence of oxidative stress after challenge with E. coli in 28-d-old preweaning calves, and this effect may be partially explained by the relative decreases in blood superoxide dismutase and glutathione peroxidase as well as fecal score.

Abstract
The objective of this experiment was to evaluate the antioxidant potential of Allium hookeri (AH) root in two forms, powdered AH root and fermented powdered AH root, to demonstrate its value as an antibiotic alternative feed additive for broiler chickens. A total of 125 male Ross-708 broiler chickens were randomly assigned to five groups (n = 25 birds/group) and fed standard diets supplemented with root or fermented root of AH at two different levels (1% or 5%). Control birds were provided with non-supplemented basal diets. Body weights was measured at days 14 and 21 of age. To monitor antioxidant activities, heme oxygenase (HMOX), aflatoxin B1 aldehyde reductase (AFAR), superoxide dismutase 1 (SOD1), and catalase (CAT) enzyme levels were quantified by real-time PCR in the jejunums 21-day-old birds. Also, serum levels of SOD, CAT, and malondialdehyde (MDA) were measured using commercial kits. The results showed greater body weight gains at day 14 in chickens fed diets supplemented with 1% AH root, as compared to the control group (p < 0.05). Up-regulated transcript levels of AFAR, HMOX1, and CAT were observed in the jejunum of chickens fed diets supplemented with AH. The serum levels SOD and CAT were significantly increased (p < 0.05) in groups treated with AH, whereas MDA levels were decreased in groups fed diets supplemented with AH, as compared to the control group. These results indicated that an optimum level of dietary AH supplementation to young broiler chickens influences growth and improves antioxidant activities.

Abstract
This study was conducted to evaluate the protective effects of Sardinella pilchardis oil and vitamin E against chlorpyrifos- (CPF-) induced liver, kidney, and brain oxidative damage in female rats. The rats were divided into 6 experimental groups: the control group, the group treated with fish oil, the group that received fish oil for 2 weeks and CPF orally for 7 days, the group treated only with CPF, the group treated with vitamin E for 2 weeks and CPF for 7 days, and the group treated with vitamin E. Oral exposure to CPF induced a significant increase in serum biochemical parameters; hepatic, kidney, and brain LPO; and a decrease in superoxide dismutase, catalase, and glutathione peroxidase activities. Fish oil or vitamin E decreased significantly the mentioned biochemical parameters as compared to rats treated with CPF alone. This study suggests that fish oil has an ameliorative effect for the alleviation of the oxidative damage induced by CPF.

Abstract
A preliminary study to evaluate the effect of dietary supplementation with olive phenols (oleuropein, hydroxytyrosol and secoiridoids), thyme phenols and a combination of these (5 mg per kg rat weight per day) on the α-tocopherol concentrations in the muscle and liver of healthy adult Wistar rats over 21 days was conducted. In addition, the excretion of α-tocopherol through the faeces was examined. The results demonstrated that the diet supplemented with some phenolic compounds of olive and thyme increased α-tocopherol (P < 0.05) in the liver of female rats, although the α-tocopherol content in the diet of all groups was identical. In addition, a synergic effect between the olive phenols and thyme was observed. Therefore, our study indicates a protective effect of olive and thyme phenols supplemented in the diet on α-tocopherol, resulting in a higher concentration of endogenous α-tocopherol in the rat liver.

Abstract
Since cinnamon has vitamins and minerals in addition to antioxidants compounds in its chemical composition studies have shown the potential of cinnamon supplementation on some important characteristics in the performance of birds. Thus, this study was conducted under the hypothesis that the inclusion of cinnamon in the laying quail diet could influence the performance of the birds through the expression of genes related to antioxidant activity and lipid metabolism. To test this hypothesis, 144 Japanese quail (Coturnix japonica) with an initial age of 18 weeks and average weight of 133g were distributed in a completely randomized design with two treatments: no cinnamon supplementation (NCS—control group) and with supplementation of 9g/kg of cinnamon powder (CPS). The experiment lasted for 84 days. At the end of the experimental period, six animals from each treatment were euthanized by cervical dislocation, blood was collected and organs weighed. Liver tissue was collected for gene expression and biochemical analyses. We observed a significant effect of cinnamon inclusion on the weight of the pancreas (P = 0.0418), intestine (P = 0.0209) and ovary (P = 0.0389). Lower weights of the pancreas and intestine, and a higher ovary weight was observed in birds receiving the CPS diet. Quails fed with cinnamon supplementation also had better feed conversion per egg mass (2.426 g /g, P = 0.0126), and higher triglyceride (1516.60 mg/dL, P = 0.0207), uric acid (7.40 mg/dL, P = 0.0003) and VLDL (300.40 mg/dL, P = 0.0252) contents. A decreased content of thiobarbituric acid reactive substances (TBARS) and lower catalase activity was observed in the liver of quails from the CPS diet (0.086 nmoles/mg PTN, and 2.304 H2O2/min/mg PTN, respectively). Quails from the CPS group presented significantly greater expression of FAS (fatty acid synthase, 36,03 AU), ACC (Acetyl-CoA Carboxylase, 31.33 AU), APOAI (apolipoprotein A-I, 803,9 AU), ESR2 (estrogen receptor 2, 0.73 AU) SOD (superoxide dismutase, 4,933.9 AU) and GPx7 (glutathione peroxidase 7, 9.756 AU) than quails from the control group. These results allow us to suggest that cinnamon powder supplementation in the diet of laying quails can promote balance in the metabolism and better performance through the modulation of antioxidant activity and the expression of genes related to lipid metabolism.

Abstract
Parental effects occur whenever the phenotype of parents or the environment that they experience influences the phenotype and fitness of their offspring. In birds, parental effects are often mediated by the size and biochemical quality of the eggs in terms of maternally transferred components. Exogenous antioxidants are key egg components that accomplish crucial physiological functions during early life. Among these, vitamin E plays a vital role during prenatal development when the intense metabolism accompanying rapid embryo growth results in overproduction of pro-oxidant molecules. Studies of captive birds have demonstrated the positive effect of vitamin E supplementation on diverse phenotypic traits of hatchling and adult individuals, but its effects on embryo phenotype has never been investigated neither in captivity nor under a natural selection regime. In the present study, we experimentally tested the effect of the in ovo supplementation of vitamin E on morphological traits and oxidative status of yellow-legged gull (Larus michahellis) embryos. The supplementation of vitamin E promoted somatic growth in embryos soon before hatching, but did not affect their oxidative status. Our results suggest that maternally transferred vitamin E concentrations are optimized to prevent imbalances of oxidative status and the consequent raise of oxidative damage in yellow-legged gull embryos during prenatal development.

Abstract
Grape seed extracts (GSE) contain several beneficial bioactive constituents; therefore, can be utilized as a potential feed additive in broiler chickens. An experiment was conducted to investigate the effect of supplementation of broiler chicken diets with GSE as a natural antioxidant at levels of 125, 250, 500, 1000 and 2000 ppm on the growth performance, serum lipid profile, liver glutathione-reduced, thigh muscle malondialdehyde and humoral immune response against Newcastle disease virus vaccines. This experiment was performed during the life-span of chickens from 0 to 42 days of age. The results of broilers fed on diet supplemented by GSE were compared with those fed on the basal diet (control) or the basal diet supplemented by butylated hydroxytoluene as a synthetic antioxidant (BHT, 125 ppm). No significant differences were observed in the growth performance, percent livability, total lipid, high and very low-density lipoprotein cholesterols when the use of GSE or BHT were compared with the control. Total cholesterol and low-density lipoprotein cholesterol were significantly decreased after intake of GSE compared with BHT in the feed diet. The glutathione-reduced level in liver tissues was significantly increased by inclusion of GSE, but not by BHT. Inclusion of GSE or BHT decreased significantly the malondialdehyde level found in meat tissue. The antibody titer against Newcastle disease virus vaccines was significantly elevated in 28 and 35-day-old broiler chickens fed with a diet supplemented with GSE or BHT, the former providing a higher response. It can be concluded that GSE can be used as an effective natural antioxidant and immunostimulant agent in broiler chicken diets, and that 125 to 250 ppm can be considered as the optimum dosage.

Abstract
The effect of organic trace mineral supplementation on performance, intestinal morphology, immune organ weights (bursa of Fabricius and spleen), expression of innate immune response related genes, blood heterophils/lymphocytes ratio, chemical metabolic panel, natural antibodies (IgG), and oxidative stress of broiler chickens was studied. A total of 1,080 day-old male broilers were assigned to 1 of 3 dietary treatments, which included basal diet with Monensin (control), control diet supplemented with bacitracin methylene disalicylate (BMD), and BMD diet supplemented with organic trace minerals (OTM). No difference in feed conversion ratio was observed among treatments; ileum histomorphological analysis showed a lower crypt depth, higher villi height/crypt depth ratio, and lower villi width in the OTM treatment compared to control. Furthermore, OTM treatment resulted in higher uric acid and lower plasma malondehaldehyde (MDA), indicating lower oxidative stress. Gene expression analysis showed that OTM treatment resulted in up-regulations of TLR2 bin the ileum, and TLR2b, TLR4, and IL-12p35 in the bursa of Fabricius, and down-regulation of TLR2b and TLR4 in the cecal tonsils. In the spleen, OTM treatment resulted in up-regulation of IL-10. In conclusion, OTM supplementation to broiler diets may have beneficial effects on intestinal development, immune system status, and survival by improving ileum histomorphological parameters, modulation of Toll-like receptors and anti-inflammatory cytokines, and decreasing level of MDA, which in conjunction could enhance health status.

Abstract
Poultry and poultry meat are particularly susceptible to oxidative reactions. Oxidation processes have been for decades the focus of animal and meat scientists owing to the negative impact of these reactions on animal growth, performance, and food quality. Lipid oxidation has been recognized a major threat to the quality of processed poultry products. The recent discoveries on the occurrence of protein oxidation in muscle foods have increased the scientific and technological interest in a topic that broadens the horizons of food biochemistry into innovative fields. Furthermore, in recent years we have witnessed a growing interest in consumers on the impact of diet and oxidation on health and aging. Hence, the general description of oxidative reactions as harmful phenomena goes beyond the actual impact on animal production and food quality and reaches the potential influence of oxidized foods on consumer health. Likewise, the current antioxidant strategies aim for the protection of the living tissues, the food systems, and a potential health benefit in the consumer upon ingestion. Along these lines, the application of phytochemicals and other microelements (Se, Cu) with antioxidant potential in the feeds or directly in the meat product are strategies of substantial significance. The present paper reviews in a concise manner the most relevant and novel aspects of the mechanisms and consequences of oxidative reactions in poultry and poultry meat, and describes current antioxidant strategies against these undesirable reactions.

Abstract
Previous investigation demonstrated that oral administration of ginseng stem-leaf saponins in chickens could enhance the immune response. The present study was designed to evaluate the effects of ginseng stem-leaf saponins on oxidative stress induced by cyclophosphamide in chickens. One hundred and twenty chickens were randomly divided into 5 groups. Groups 1 to 4 received intramuscular injection of cyclophosphamide to induce oxidative stress while group 5 was injected with saline solution and served as control. Following administration of cyclophosphamide, groups 1 to 3 were orally administered ginseng stem-leaf saponins at 2.5, 5, and 10 mg/kg BW in drinking water for 7 d, respectively. After that, the spleen, thymus, bursa, and serum were collected to measure the indices of the organs and oxidative parameters. The results showed that ginseng stem-leaf saponins significantly inhibited cyclophosphamide-induced oxidative stress by increasing the organ indices, total antioxidant capacity, and the levels of glutathione, ascorbic acid, and α-tocopherol, while elevating the activity of total superoxide dismutase, catalase, and glutathione peroxidase, as well as decreasing the protein carbonyl content and malondialdehyde. Therefore, ginseng stem-leaf saponins could be a promising agent against oxidative stress in the poultry industry.
