Abstract
The purpose of the study was to determine the antioxidant activity (AA) and fatty acid (FA) profile of sous-vide beef previously marinated in brine with a 10, 20 and 30% addition of kiwiberry (Actinidia arguta cv. 'Ananasnaya') fruit pulp, as well as changes in the parameters studied after 0, 1, 2 and 3 weeks of refrigerated storage in a vacuum package. The FA profile, FRAP (ferric-reducing antioxidant power assay), ABTS (2,2'-azinobis (3-ethylbenzthiazoline-6-acid)), total polyphenols, chlorophylls and carotenoids were also determined in the fruit pulp. Lipid indices for meat were calculated based on the obtained FA profile. The values of FRAP and ABTS of experimental meat products were significantly (p ≤ 0.05) higher than those of control samples but decreased with storage time. The proportion of unsaturated FA in the lipids of sous-vide meat was higher in samples with pulp than in control samples and insignificantly decreased with storage time. Meat marinated with kiwiberry pulp was characterized by a significantly (p ≤ 0.05) higher proportion of ALA (α-linolenic acid) and LA (linoleic acid), considerably affecting the more favorable value of polyunsaturated FA/saturated FA ratio. A troubling finding was the heightened level of palmitic acid (C16:0) in the lipids of beef subjected to 30% kiwiberry pulp, a factor recognized to play a significant role in the development of various diseases. Beef marinated with 20% kiwiberry pulp addition provides greater nutritional and health benefits than other sample variants because of optimal AA and FA profile changes during refrigerated storage.

Abstract
This study aimed to investigate the efficacy of a synthetic source (a combination of vitamin E, vitamin C, selenium, and L-carnitine) and phytogenic sources (a combination of clove, green tea pomace, and Vietnamese coriander) in overcoming heat stress (HS) damage in female breeder hens on production, blood chemistry, sperm survival in the oviduct, antioxidant properties, gene expression, and quality of offspring. One hundred SUT female breeder hens were housed in individual cages and divided into 4 treatment groups: T1) basal diets in the thermoneutral (TN) zone; T2) basal diets under HS; 3) basal diets with synthetic antioxidants under HS; and T4) basal diets with phytochemical antioxidants under HS. The result revealed that HS condition had a negative effect on reducing final body weight, egg weight, and 1-day-old chick weight while increasing water intake and FCR and altered blood chemicals in breeder hens compared to TN breeder hens (P < 0.05). However, either synthetic or phytogenic antioxidants resulted in increased egg production and hatchability, while decreasing the number of late stages of embryo death during the incubation (P < 0.05). Furthermore, the synthetic antioxidants also improved the uniformity of chicks and reduced late-stage embryo death compared with phytogenic antioxidants (P < 0.05). HS breeder hens fed with either of the antioxidant sources exhibited higher antioxidant capacity in terms of DPPH and ABTS radical scavenging (in yolk, liver, and breast meat) and FRAP radical scavenging (in yolk and liver) and lower liver malondialdehyde than HS breeder hens fed with the control diet (P < 0.05). Additionally, the gene expression of antioxidant enzymes (superoxide dismutase, catalase, and glutathione peroxidase) in the liver was upregulated, whereas the expression of proinflammatory cytokines (nuclear factor-κB) and heat shock proteins (HSP70 and HSP90) was downregulated in breeder hens that received both antioxidant sources (P < 0.05). Future investigations should focus on the potential for combinations of synthetic and phytogenic antioxidants in diets for HS breeder hens.

Abstract
This study investigated the potential of insect-based diets to mitigate heat stress impact on broiler chickens, focusing on growth performance and antioxidant stability. Four dietary groups were examined, including a control and three treated groups with Tenebrio molitor (TM), Hermetia illucens (HI), and Zophobas morio (ZM) larvae, respectively, at a 5% replacement ratio. Temperature and relative humidity of the poultry house were monitored. Under heat stress conditions, the HI-fed group consistently exhibited the highest body weight, demonstrating their remarkable growth-promoting potential. TM-fed broilers also displayed commendable growth compared to the control. Insect larvae inclusion in the diet improved feed intake during early growth stages, indicating their positive influence on nutrient utilization. Regarding antioxidant stability, malondialdehyde (MDA) levels in the liver, an oxidative stress and lipid peroxidation marker, were significantly lower in the TM-fed group, suggesting reduced oxidative stress. While the specific insect-based diet did not significantly affect MDA levels in thigh and breast tissues, variations in the total phenolic content (TPC) were observed across tissues, with HI larvae significantly increasing it in the breast. However, the total antioxidant capacity (TAC) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) levels did not differ significantly among dietary groups in the examined tissues. Results suggest that insect-based diets enhance broiler growth and potentially reduce oxidative stress, particularly in the liver. Dietary presence of bioactive compounds may contribute to these benefits. Further research is required to fully elucidate the mechanisms underlying these findings. Insect-based diets seem to offer promise as feed additives in addressing the multifaceted challenges of oxidative stress and enhancing broiler health and resilience under heat stress conditions.

Abstract
Carcass characteristics, product quality, and the conversion of feed into meat with higher performance and feasibility are important determinants of the profitability and sustainability of any poultry enterprise. The objective of this study was to investigate the potential effect of Rumex nervosus leaf powder (RNLP) on carcass composition, small intestine dimensions, breast color quality, and economic feasibility of Ross broiler chickens. A total of 122 broilers were randomly distributed evenly among 4 treatments (0, 1, 3, and 5 g RNLP/ kg diet, n = 5 replicates per treatment, with 6 broilers per replicate: 3 ♀ and 3 ♂). Performance and economic data were collected in each replicate during the experiment. One male bird from each replication was examined for other criteria on d 34. Results showed that broilers fed 3 g of RNLP had a higher eviscerated carcass weight and dressing percentage (P < 0.05) than the control. The RNLP-fed broilers had higher weights and thicknesses in the duodenum and jejunum of up to 5 g and in the ileum and overall small intestine of up to 3 g. Broilers fed the lowest levels of RNLP had the highest revenue and net gain and the lowest cost-benefit ratio compared with those fed the highest levels of RNLP. The results indicate that the addition of RNLP has a positive effect on carcass processing, the intestinal measurements, and profitability ratios of the broilers. The 1 g RNLP/kg feed is the recommended dose to increase productivity and economic profitability ratios per kilogram of meat.

Abstract
Olive leaves are byproducts οf the agro-industrial sector and are rich in bioactive compounds with antioxidant properties. They could be supplemented in poultry diets powdered or less frequently as extracts to improve performance, health and product quality. The objective of this study was to investigate the possible beneficial effects of an aqueous isopropanol olive leaf extract-purified through filtration (250-25 µm) and a resin (XAD-4)-when supplemented in broiler chickens' diets, on meat quality parameters, focusing mainly on antioxidant parameters as there is limited published information. For this purpose, four-hundred-and-eighty-day-old broilers were randomly assigned to four dietary treatments: T1 (control: basal diet); T2 (1% olive leaf extract); T3 (2.5% olive leaf extract); T4 (positive control: 0.1% encapsulated oregano oil commercially used as feed additive). At the end of the experimental period (day 42), the birds were slaughtered, and samples from breast, thigh meat and liver were collected for antioxidant parameters evaluation. On day 1, after slaughter, in thigh meat, Malondialdehyde (MDA) was lower in T2 compared to T3, and total phenolic content (TPC) was higher in T2 compared to T3 and T4. Total antioxidant capacity (TAC) was increased in T2 and T4 breast meat compared to the control. In liver, T4 treatment resulted in higher TPC. The lack of dose-dependent effect for olive leaf extract may be attributed to the pro-oxidant effects of some bioactive compounds found in olive leaves, such as oleuropein, when supplemented at higher levels. In summary, it can be inferred that the inclusion of 1% olive leaf extract in the feed of broilers has the potential to mitigate oxidation in broiler meat and maybe enhance its quality.

Abstract
Improved feed efficiency (FE) is one of the most important achievements in animal breeding programs. The present investigation aimed to determine the phenotypic correlations of residual feed intake (RFI) breeding value with some traits in growing Japanese quail. A total of 48 birds (24 males and 24 females) were selected from 220 quail chicks divided into three classes based on breeding values (BV) for RFI including low (LBV; n = 16), medium (MBV; n = 16), and high-BV (HBV; n = 16) were used to test FE. The effects of three groups of BV on the studied traits including carcass traits, meat quality, humoral immunity, and bone properties were evaluated. The BV for RFI was positively correlated with feed conversion ratio (FCR) and feed intake (FI) but not with metabolic BW (MBW0.75). Live body weight, carcass, breast, and thigh weight in the LBV-RFI group were significantly greater than those in the HBV-RFI group. The BV for RFI had a negative correlation with live body weight and thigh weight. Our findings suggested that the selection of LBV-RFI quails may be useful to increase live body weight without any adverse impact on meat quality and bone properties, and live body weight can be implemented in breeding programs as an indirect selection indicator for improvement of FE in quails.

Abstract
Identification and inhibition of mutagenic and carcinogenic heterocyclic amines (HCAs) from pan-roasted beef patties were performed by adding (0.02%) tertiary butyl hydroquinone (TBHQ) and (0.05%) ethanol-extracted nutmeg (ENE) using HPLC and principal component analysis. Ten HCAs, including six polar and four non-polar, were assessed. The addition of (0.05%) ENE significantly (P < 0.05) reduced the cooking loss and shrinkage of patties during cooking and reduced the total formation HCAs by 73.97%, which proved the significant (P < 0.05) inhibitory effect as a natural antioxidant against lipid oxidation and HCA formation compared to TBHQ. The DPPH radical-scavenging activity, total phenolic content, and available active metabolites of ENE were estimated. Furthermore, a positive correlation was observed between pH, level of thiobarbituric acid reactive substances, and HCA formation in both the groups. TBHQ and ENE were significant HCAs inhibitors (P < 0.001), but ENE showed resilient oxidative stability during refrigeration storage. Therefore, ENE can be used to reduce HCAs formation in pan-roasted beef patties.

Abstract
The present study investigated the effects of supplementing bioactive peptides derived from rapeseed protein (rapeseed peptide, Rsp) on the growth performance, serum biochemistry and faecal micro-organism composition of weaned piglets. Sixty Duroc × Landrace × Yorkshire weaned piglets of similar weights were randomly divided into three groups. The control group (NC) was fed a basal diet, and the two treatment groups, Rsp-1 and Rsp-2, were fed a basal diet supplemented with 1% or 2% Rsp, respectively, for 28 days. Each treatment consisted of five replicates with four piglets per replicate. The results showed that Rsp treatment significantly improved the average daily gain and had a better feed-to-gain ratio (p < 0.05). The diarrhoea incidence and indices of Rsp-1 and Rsp-2 groups were significantly lower than the NC group (p < 0.05), and the effect of Rsp-2 on reducing the incidence of diarrhoea was significantly higher than that of Rsp-1 (p < 0.05). The serum albumin, serum immunoglobulin A and catalase levels of the Rsp-1 and Rsp-2 groups were significantly better than the NC group (p < 0.05). Additionally, Rsp treatment significantly gained the relative abundance of faecal Lactobacillaceae and decreased the relative abundance of faecal Eubacterium_coprostanoligenes_group, Treponema and Coprococcus (p < 0.05). In summary, Rsp supplementation improved the growth performance, ameliorated the diarrhoea, enhanced the immune and antioxidant functions and changed the composition of faecal micro-organisms in piglets. These findings indicate that Rsp positively affected the health of weaned piglets.

Abstract
Different components of the mulberry tree (fruits, leaves, twigs, and roots) are rich in active compounds, and have been reported to possess potent beneficial properties, including antioxidative, anti-inflammatory, antimicrobial, anticancer, anti-allergenic, antihypertensive, and neuroprotective. The mulberry and its extracts can effectively improve the growth performance and fitness of animals. They not only possess the properties of being safe and purely natural, but also they are not prone to drug resistance. According to the literature, the supplemental level of the mulberry and its extracts in animal diets varies with different species, physiological status, age, and the purpose of the addition. It has been observed that the mulberry and its extracts enhanced the growth performance, the quality of animal products (meat, egg, and milk), the antioxidant and the anti-inflammatory responses of animals. Furthermore, the mulberry and its extracts have antibacterial properties and can effectively moderate the relative abundance of the microbial populations in the rumen and intestines, thus improving the immunity function of animals and reducing the enteric methane (CH4) production in ruminants. Furthermore, the mulberry and its extracts have the potential to depurate tissues of heavy metals. Collectively, this review summarizes the nutrients, active compounds, and biological functions of mulberry tree products, as well as the application in livestock production with an aim to provide a reference for the utilization of the mulberry and its extracts in animal production.

Abstract
We investigated the effects of resveratrol supplementation on in vitro ruminal fermentation and growth performance of Hanwoo calves. Treatment with three resveratrol concentrations (0%, 0.1%, 0.3%, and 0.5%) was used for in vitro ruminal fermentation. Resveratrol concentrations and pH of rumen fluid were negatively correlated (p < 0.05); therefore, total gas production, total volatile fatty acids, and acetate, propionate, and butyrate levels were significantly higher in the treatments than in the control at all time periods (p < 0.05). The appropriate resveratrol concentration that could be added without negative effects on the rumen was 0.3%. In farm experiments, we divided 14 Korean cattle calves into control (C) and 0.3% resveratrol (T) groups. There were no significant differences in the daily weight gain, feed conversion, final body weight, body length, withers height, and height at hip cross in the resveratrol-fed Hanwoo calves. Immunoglobulin G level was significantly higher in the treatment than in the control (p < 0.05), but IgA and IgM levels did not differ. Supplemental feeding of resveratrol is beneficial to in vitro ruminal fermentation, but it is important to supplement it at 0.3%. Furthermore, resveratrol affects calf immunoglobulin G.

Abstract
BACKGROUND Undoubtedly, global warming has caused a decrease in the production of agricultural commodities. This problem has increased the price of animal feed due to competition with human consumption. Meanwhile, the physiology of ruminants gives them the ability to use by-products and agricultural waste and supply their requirements for growth, maintenance and even production. Berberis vulgaris is a plant native to Iran, and after separating the fruit, its waste (mainly leaf) is unused and causes environmental pollution. The leaves of this plant contain significant amounts of phenolic compounds, alkaloids and anthocyanins that have antioxidant properties. OBJECTIVES This experiment was conducted with the aim of determining the chemical properties of barberry leaves, such as crude protein, phenolic compounds, tannins and alkaloids. The effects of substituting of B. vulgaris leaf (BVL) in the diet on performance characteristics of fattening Baluchi lambs were evaluated. The quality and antioxidant status of meat and blood parameters such as glucose, cholesterol, blood urea nitrogen and liver enzymes were investigated. MATERIAL AND METHODS A total of 21 male of 5-6 months old lambs with a mean body weight of 30.60 ± 1.28 kg were randomly assigned to one of three dietary treatments with different levels of BVL: 1-diet without BVL (control), 2-diet containing 7.5% BVL (BVL7.5), and 3-diet containing 15% BVL (BVL15; dry matter [DM] basis). Blood samples were harvested after overnight fasting from the jugular vein at 0, 28, 56 and 84 days. The lambs were slaughtered after 84 days of feeding trial and longissimus dorsi (LD) muscle was dissected. Meat quality and antioxidant stability status were measured. RESULTS 15% substitution of alfalfa hay by BVL (BVL15) increased DM intake) and decreased average daily gain (p ≤ 0.05). The LD muscle (p ≤ 0.05), liver (p ≤ 0.01) and plasma (p ≤ 0.05) samples of lambs fed either BVL7.5 or BVL15 displayed a greater total antioxidant capacity than that of lambs fed the control diet. Also, malondialdehyde concentration was decreased in plasma (p ≤ 0.01) and LD muscle of lambs (p ≤ 0.05) fed both BVL7.5 and BVL15. In addition, higher a* and C* values (p ≤ 0.05) were observed in the meat of lambs fed BVL15 than those fed with the control, while the lightness (L*) in BVL15 was lower, compared to other experimental diets CONCLUSIONS: Overall, our results indicated that 7.5% substitution of alfalfa hay by BVL may positively modulate the antioxidant status of fattening lambs and improve the colour stability of meat without negative effects on performance characteristics.

Abstract
OBJECTIVE An experiment was conducted to evaluate the effects of partially replacing soybean meal (SBM) with sunflower meal (SFM) with added exogenous multienzymes (MEs) on various biological parameters in broilers. METHODS One week-old, 400 broiler chicks were randomly divided into four treatments (control, 3SFM, 6SFM, and 9SFM) with 5 replicates/treatment (20 chicks/replicate). Control diet was without SFM and MEs, while diets of 3SFM, 6SFM, and 9SFM treatments were prepared by replacing SBM with SFM at levels of 3%, 6%, and 9%, respectively, and were supplemented with MEs (100 mg/kg). Feeding trial was divided into grower (8 to 21 day) and finisher phases (22 to 35 day). External marker method was used to measure the nutrient digestibility. At the end of trial, twenty birds (one birds per replicate) with similar body weight were slaughtered for samples collection. RESULTS No significant effect of dietary treatments was found on all parameters of growth performance and carcass characteristics, except relative weight of bursa. Weight (25.0 g) and length (15.80 cm) of duodenum were significantly (p<0.05) higher in 3SFM than control. Lowest (p<0.05) villus height/crypt depth ratio was found in 3SFM and 9SFM than control. Most of meat quality parameters remained unaffected, however, highest pH of breast meat (6.16) and thigh meat (6.44) were observed in 9SFM and 3SFM, respectively. Lowest (p<0.05) cook loss of thigh meat was found in 6SFM (31.76%). Ileal digestibility of crude protein was significantly (p<0.05) higher in 3SFM (72.35%) than control (69.46%). In addition, amylase (16.87 U/mg) and protease (85.18 U/mg) activities were significantly (p<0.05) higher in 3SFM than control. However, cecal microbial count remained unaffected. CONCLUSION Partial replacement (up to 9%) of SBM with SFM, with added MEs can help to improve the nutrient digestibility, intestinal morphology, and digestive enzyme activities without affecting cecal microbial count and growth performance in broilers.

Abstract
This research evaluates the effect of dietary zinc oxide nanoparticles' (ZnO NPs) supplementation on growth performance, immunity, oxidative antioxidative properties, and histopathological picture of broiler chicken reared in the summer season. A total of 224 1-day-old male Cobb chicks were randomly allocated to seven groups of dietary treatments (n = 32). Seven isocaloric and isonitrogenous diets were formulated. ZnO NPs were added to the basal diet at seven different levels, 0, 5, 10, 20, 40, 60, and 80 ppm/kg diet, respectively, for 35 days. Results indicated that live body weight (g) did not differ significantly (P > 0.05) between treatment groups, whereas compared to control, the 5 ppm ZnO NPs/kg diet recorded the highest live body weight at 21 and 35 days. No significant effects for the feed consumption (g/bird/period) and feed conversion ratio (g feed/g gain) among treated and control birds were observed. Hematological and immunological variables showed significant (P ≤ 0.05) dose-dependent modulations by ZnO NP supplementation. Significant (P ≤ 0.05) differences were observed in the phagocytic activity, phagocytic index, and IgM and IgG between the treatment groups, with the 5 and 10 ppm ZnO NPs/kg diet recording the best values, followed by the 20 ppm ZnO NPs/kg diet. Different supplementations had nonsignificant effects on the digestibility of nutrients (P ≤ 0.05). Histopathological pictures of the kidney, liver, and lymphoid organs, ultrastructural examination of muscle tissues, and expression of inflammatory cytokines showed dose-dependent morphological and structural changes. In conclusion, the ZnO NP supplementation in broiler diet to eliminate the heat stress hazards in summer season is recommended in dose level of not more than 10 ppm/kg diet.

Abstract
The purpose of this study was to evaluate the dietary use of novel silage that was created by combining three agro-industrial wastes produced in bulk, i.e., olive mill wastewater, grape pomace, and deproteinized feta cheese whey, in the diets of broiler chickens. A total of 216 one-day-old male Ross-308 chicks were randomly allocated to three treatment groups with six replications (12 chicks per pen). Three isocaloric and isonitrogenous diets were formulated to include the examined silage at 0%, 5%, or 10%. Commercial breeding and management procedures were employed throughout the trial. At the end of the trial (day 35), tissue samples were collected for analysis. Feeding 10% silage resulted in increased (p ≤ 0.001) final body weight (p ≤ 0.001) and feed intake. Jejunum and cecum microflora, as well as breast and thigh meat microflora, were modified (p ≤ 0.05) by the dietary inclusion. Thigh meat oxidative stability was improved (p < 0.01) by the silage supplementation. In addition, breast and thigh meat fatty acid profiles were different, respectively, (p < 0.05) in the supplemented treatments compared to the control. The examined silage was successfully tested in broiler diets with potential benefits for their performance and meat quality.

Abstract
Experiment was designed to analyze the effect of low caloric diets, supplemented with β-mannanase on growth performance, carcass characteristics, nutrient digestibility, and other parameters in broilers. In this study, 400 broiler chicks were randomly divided into four treatments (Cont: without β-mannanase; LM-30, MM-60, and HM-90: supplemented with 200, 400, and 600 mg/kg β-mannanase, respectively). Dietary metabolizable energy (ME) in Cont was standard (starter diet 3100 kcal/kg; finisher diet 3200 kcal/kg) and reduced by 30, 60, and 90 kcal/kg, correspondingly in β-mannanase-supplemented treatments. The results exhibited that growth performance was not affected by reducing dietary energy levels with supplementation of β-mannanase. Ileal digestibility of DM and CF was improved (p < 0.01) by supplementation of β-mannanase at low dietary ME levels. Concerning carcass traits, the relative weight of breast meat, drumstick, and abdominal fat increased (p < 0.05) with β-mannanase supplementation in low-ME diets. Treatment HM-90 showed significantly (p < 0.05) better results regarding villus height and VH:CD. It could be concluded from the present results that supplementation of β-mannanase could improve the nutrient digestibility so that it is possible to reduce the dietary energy level without compromising production performance, carcass trails, and meat quality in broilers.

Abstract
Background:
Medicinal plants and natural feed additives are the most important alternatives in animal production, especially broiler production, due to the ban on the use of certain antibiotics, their cost-effectiveness and harmful residual effects.
Objective:
In this mini-review article, some important medicinal herbs and plants with positive effects on organic broiler production have been highlighted.
Methods:
A literature search was conducted in Science Direct, Google, Google Scholar, Springer, Medline and PubMed.
Results:
Medicinal plants such as ginger, ginkgo, thyme, ponderosa pine, soybean, forsythia, peppermint, Chinese star anise, astragalus, mistletoe, schisandra, cumin, capsicum, garlic, hooker chives, artichoke, Borreria latifolia, zataria, pomegranate, turmeric, lingzhi, Lippia javanica, neem, oriental chaff flower, mulberry leaf, goji berry, Aloe vera, pumpkin, grape, common nettle, marigold, coriandrum, Citrus sinensis, Alisma canaliculatum, Persian hogweed, Eucommiaulmoides, bamboo leaf extract, rosemary, Morina citrifolia, chestnut, green tea, wild mint, clove, sumac, satureja, ashwagandha, Lonicera japonica, Acacia, liquorice, Artemisia annua, milk thistle, cinnamon, black cumin and etc. have positive effects on organic broiler production.
Conclusion:
Herbal medicines lead to increased body weight due to a higher feed intake and a higher feed conversion ratio, and improve antioxidant activity of broiler chickens based on their phenolic compound contents. The combination of medicinal herbal additives also has a positive impact on broiler production. In organic broiler production with the usage of herbal plants, reducing hormones, growth promoters and antibiotics should be organized as well as considering appropriate organic feed management and higher production.

Abstract
Oregano oil and cranberry pulp supplements were added to the diets of finishing pigs to determine their effects on the meat quality of fresh loins during storage. Two and three levels of oregano oil (250 and 500 mg·kg−1) and cranberry pulp (5, 10, and 20 g·kg−1) were tested, according to a factorial experimental design. The loin meat was vacuum packed and analyzed at 0 (after the 24 h chilling period post slaughter), 23, 45, and 60 d of storage. Samples were repackaged under aerobic conditions after 0 or 23 d and analyzed after 4, 8, and 12 d. Oregano and cranberry supplements did not affect lipid oxidation (microgram of malondialdehyde equivalent per kilogram of meat) during anaerobic or aerobic storage. On day 0, the fatty acid profile of the loin samples demonstrated that the addition of cranberries at a dose of 10 g·kg−1 was associated with a lower percentage of saturated fatty acids (P = 0.04; 42.97% vs. 40.99%) and a trend for a higher percentage of monounsaturated fatty acids (P = 0.06; 47.26% vs. 46.09%). Considering the result obtained, feeding pigs with oregano and cranberry supplements had a limited effect on meat quality parameters measured during storage.

Abstract
Synthetic antioxidants (e.g.butylhydroxytoluene, BHT) are routinely used for to restrict oxidative processes of meat products, but they are implicated as harmful to the health of humans. Therefore natural alternatives, such as plant antioxidants, have been sought as replacements. Plant antioxidants when added to the diet can be incorporated into meat and reduce the need for the addition of synthetic antioxidants during processing. The objective of this study was to evaluate the effects of ethanol extracts of mango seeds (EEMS) in the diet of pigs on qualitative parameters and total antioxidant capacity of mortadella produced from these animals. Thirty-two pigs with an average 60 days of age were distributed among four treatments: control=no antioxidant; BHT=200ppm BHT; EEMS200=200ppm of EEMS and EEMS400=400ppm of EEMS. At 145 days of age the animals were slaughtered and loin was removed for the preparation of mortadella, which was analyzed during 90 days of storage at 4°C. A higher content of polyphenolic compounds and, total antioxidant capacity in mortadellas processed with meat of animals which consumed the EEMS400 ration after 60 and 90 days of storage was observed. EEMS polyphenolic antioxidants incorporated into pork through the diet results in an increase of total antioxidant capacity in the processed product.

Abstract
A total of 320 one-day-old Cobb 500 chicks with an initial weight of 48.3 ± 3.3 g·pen−1 were assigned to four dietary treatments with eight replicates provided in three phases for 46 d. The treatments were fed as mash diets and included (1) negative control (NC) corn-soybean basal diet, (2) positive control (PC) basal diet with 30 ppm avilamycin, (3) basal diet supplemented with 1000 ppm red-osier dogwood extracts (RDE1), and (4) basal diet with 3000 ppm red-osier dogwood extracts (RDE2). Results showed reduced jejunal crypt depth in RDE1 and increased villus:crypt ratio in groups (either RDE1 or RDE2) (P < 0.05). Cationic amino acid (AA) transporter mRNA abundance was decreased (P < 0.05) in RDE1, RDE2, and PC treatments, but peptide and neutral AA transporter mRNA abundance were higher (P < 0.05) in RDE2 compared with NC. Apparent ileal digestibility of crude fat was increased in RDE2 and PC compared with NC, whereas AA digestibility was greater in RDE1, RDE2, and PC (P < 0.05). In conclusion, red-osier dogwood had no effect on growth performance, improved the intestinal health and function of broiler chickens, and had no detrimental effects on meat quality.

Abstract
Simple Summary There are numerous approaches for enrichment of broiler’s meat with valuable nutrients, for instance the enrichment with polyunsaturated fatty acids (PUFA). The addition of vegetable oils in the diets of broilers is an appropriate strategy to enrich the chicken meat with beneficial FA, however, this enrichment is accompanied by a lipid peroxidation with a resultant decrease in the nutritional value, quality, and shelf-life of the meat, and for that reason, the dietary supplementation with antioxidants becomes necessary. What places rice bran oil (RBO) on top of other vegetable oils is its antioxidant components and unique fatty acid profile and it is reported to induce substantial lipid-reducing effects and antioxidant properties. Therefore, this study was performed to determine the influence of RBO inclusion in the diets of broiler chickens on performance, carcass characteristics, blood parameters, meat quality, antioxidant activity, liver lipid content, and liver histological structure. RBO inclusion had a positive effect on the growing performance, dressing percentage, and immune status. Furthermore, RBO supplementation decreased the abdominal fat yield and EE content in the meat, while it increased the content of PUFA in the meat, which may be beneficial for consumers. RBO improved the antioxidant capacity of the meat and the liver, whereas it reduced the concentration of cholesterol and triglycerides in the blood, meat and liver. RBO could be used as an efficient ingredient in broiler chickens’ diets to improve performance, immune status, antioxidant activity, blood lipid profile, and the nutritive value of meat. Abstract This trial was performed to determine the effect of rice bran oil (RBO) inclusion in diets of broiler chickens on performance, carcass characteristics, blood parameters, meat quality, antioxidant activity, liver lipid content, and liver histological structure. The 35-day feeding trial was conducted on 240 one-day-old Ross 308 broiler chickens, allocated to four treatment groups with six replicates each. RBO was examined at different inclusion levels, 0% (control), 1% (RBO1%), 1.5% (RBO1.5%), and 2% (RBO2%) in a completely randomized design. The results showed that at the end of the trial (35 days) the RBO supplementation had positive effects (p < 0.001) on the productivity parameters, but the feed intake was linearly decreased due to RBO inclusion. In addition, RBO supplementation linearly improved (p < 0.05) the dressing percentage, breast yield, immune organs relative weights, and meat glutathione concentration, while it decreased (p < 0.01) the abdominal fat yield and meat crude fat, triglycerides, cholesterol, and Malondialdehyde (MDA) contents in broiler’s meat. Moreover, serum total protein, globulin, and high-density lipoprotein contents improved noticeably (p < 0.01) due to offering an RBO-supplemented diet, but serum total lipids, total cholesterol, triglyceride, low-density lipoprotein, and aspartate aminotransferase concentrations linearly reduced (p < 0.01). The RBO supplementation augmented (p < 0.05) the phagocytic index, phagocytic activity, and antibody titer compared to control. On the other hand, RBO inclusion had no effect on the breast, thigh, or abdominal fat color parameters. Moreover, RBO supplementation reduced (p < 0.01) the content of total saturated FA (SFA), but increased (p < 0.01) the content of total monounsaturated FA (MUFA), and polyunsaturated FA in both breast and thigh meat. Chemical analysis of the liver tissue samples revealed that the inclusion of RBO linearly reduced (p < 0.05) hepatic cholesterol, triglyceride, and MDA contents. Histologically, the lipid percentage and number of lipid droplets (p < 0.01) were markedly lessened in the RBO-supplemented groups. The histological structure of the liver asses by light and electron microscope were normal in all groups without any pathological lesions. It is concluded that RBO could be used as a valuable ingredient in broiler chickens’ diets to stimulate the growing performance and immune status, enhance the antioxidant activity and blood lipid profile, augment liver function, and improve the nutritive value of the meat.

Abstract
The objective of this study was to investigate the oxidation activity and lipid oxidation changes in breast (BM) and leg (LM) muscles from 17-wk-old female White Kołuda geese packaged in a vacuum, and stored in freezing conditions at −20°C. The geese were fed ad libitum during the experimental period (up to 17 wk) on the same complete feed. The samples of LM (n = 18) and BM (n = 18) from the right carcass were stored for 30, 90, 80, 270, and 365 d. Lipid oxidation was described by determining changes in: TBARS value expressing the amount of malondialdehyde (MDA), total antioxidant capacity (TAC) measured by DPPH and ABTS methods and total reduction potential (TRP) measured by FRAP method. Moreover, total heam pigments pigment (THP), relative concentration of myoglobin (Mb), oxymyoglobin (MbO2), and metmyoglobin (MMb) were determined in this study. Time of storage affected the TAC, TRP, TBARS, and the color stability of BM and LM. The THP concentration and Mb proportion decrease gradually during the 365 d of frozen storage, while the relative concentration of MMb increase in BM and LM. It was noted that the shares of MMb in both analyzed types of muscles stored for 365 d did not exceed 0.4. This value is considered to be the limit, after which the meat takes on an intense gray-brown color not accepted by the consumer. The oxidation processes occurring during frozen storage caused an increase of TBARS and a decrease of DPPH•, ABTS•+, FRAP values in both kinds of muscles. The amounts of TBARS during frozen storage of muscles did not exceed 2.0 mg MDA/kg of meat. A higher value of TBARS than 2.0 causes a lack of acceptance by consumers of the flavor profile. Based on the results concerning changes in the heam pigments, as well as changes related to the oxidation of lipids, we cannot unequivocally state in which types of muscles the changes had a more intense course.

Abstract
Lonicera japonica (L. japonica) extract is rich in active substances, such as phenolic acids, essential oils, flavones, saponins, and iridoids, which have a broad spectrum of antioxidant, anti-inflammatory, and anti-microbial effect. Previous studies have demonstrated that L. japonica has a good regulatory effect on animal intestinal health, which can be used as a potential antibiotic substitute product. However, previous studies about intestinal health regulation mainly focus on experimental animals or cells, like mice, rats, HMC-1 Cells, and RAW 264.7 cells. In this review, the intestinal health benefits including antioxidant, anti-inflammatory, and antimicrobial activity, and its potential application in animal production were summarized. Through this review, we can see that the effects and mechanism of L. japonica extract on intestinal health regulation of farm and aquatic animals are still rare and unclear. Further studies could focus on the regulatory mechanism of L. japonica extract on intestinal health especially the protective effects of L. japonica extract on oxidative injury, inflammation, and regulation of intestinal flora in farm animals and aquatic animals, thereby providing references for the rational utilization and application of L. japonica and its extracts in animal production.

Abstract
A total of 288-day-old male broilers were allocated to six dietary treatments to evaluate the effects of zinc source and Bacillus coagulans supplements and their interaction on growth, intestinal microbial population, carcass traits and meat quality in broiler chickens. Three levels of dietary supplemental Zn source (100 mg/kg of DM diet zinc oxide, 25 and 50 mg/kg of diet zinc oxide nanoparticles (Zn-nan)) and two levels of B. coagulans (0 and 100 mg/kg of diet) were combined as a completely randomised design with a 3 × 2 factorial arrangement. B. coagulans increased the body weight gain, body weight and feed conversion ratio. The lactic acid producing bactereia of ileal were increased by B. coagulans supplementation, and its coliform count was decreased by Zn-nan in a dose-dependent manner. The B. coagulans increased the relative weights of legs and proventriculus and reduced weights of livers, abdominal fat and meat thiobarbituric acid (TBA) value. Likewise, dietary B. coagulans increased pH, yellowness and lightness values of leg muscles. Birds fed Zn-nan50 had lower liver weight, TBA and cooking loss and higher yellowness values than chicks fed ZnO-100. In conclusion, the dietary supplementation with B. coagulans improved broiler performance, microbial population and meat quality. The Zn-nan in lower dose could be a good substitution in mineral premix instead of zinc oxide. In addition, the Zn-nan improved intestinal microbial population, carcass characteristics and oxidative stability of chicken meat; however, the combination of two levels of Zn-nan with B. coagulans did not vary the measured parameters.

Abstract
Simple Summary Various plant extracts are used as functional nutritional factors to keep the health and improve the performance of animals. This research investigated the effects of bilberry extract (effective ingredient: anthocyanin) on growth performance, meat quality, antioxidant status, and immune function of yellow-feathered chickens. Results showed that dietary supplementation with bilberry extract enhanced relative weight of the bursa of Fabricius and broadly increased activities of antioxidant enzymes of chickens; indices of meat quality were improved without impact on growth performance. The finding indicated that bilberry extract might be considered as a new additive to improve the health and meat quality of yellow-feathered chickens. Abstract The experiment was conducted to investigate the effects of bilberry extract on growth performance, meat quality, antioxidant status, and immune function of yellow-feathered chickens. A total of 360 female hatchling Lingnan chickens were randomly allocated to three treatments with 6 replicates of 20 chickens per replicate. Birds were fed a basal diet supplemented with 0 (the control group), 100 (B100), and 400 (B400) mg/kg of bilberry extract for 63 d. Compared with the controls, (1) dietary supplementation with bilberry extract did not affect the growth performance of chickens from 1 to 63 d. (2) At 21 d, the relative weight of the bursa of Fabricius was increased (p < 0.05) by dietary supplementation with 400 mg/kg bilberry extract. Bilberry extract decreased the concentrations of IgY and IgM in blood plasma of 63-d chickens (p < 0.05). (3) For 21-d chickens, dietary supplementation with 400 mg/kg bilberry extract increased (p < 0.05) the activity of GSH-Px in blood plasma and jejunal mucosa (p < 0.05). Supplementation with 100 mg/kg bilberry extract increased (p < 0.05) the activities of T-SOD in jejunal mucosa and GSH-Px in the liver and decreased (p < 0.05) the MDA concentration in the liver. For chickens at the age of 63 d, both levels of bilberry extract increased activity of T-SOD in blood plasma (p < 0.05) and reduced MDA concentration in the jejunum (p < 0.05). (4) Supplementation with bilberry extract in the diet decreased the MDA concentration (B100) in muscle of 63-d chickens at 45 min postmortem and increased (p < 0.05) the activity of T-SOD (B400) at 4 d postmortem. (5) In breast muscle at 63 d, birds supplemented with bilberry extract (B400) had increased pH and drip loss while drip loss was reduced in the B100 treatment (p < 0.05); treatments did not affect inosinic acid or intramuscular fat contents. In conclusion, dietary supplementation of yellow-feathered chickens with bilberry extract enhanced the relative weight of the bursa of Fabricius, and broadly increased activities of antioxidant enzymes; indices of meat quality were improved without impact on growth performance. Considering the results in the current research, 100 mg/kg bilberry extract was recommended when supplemented in chickens.

Abstract
At present, a wide variety of analytical methods is available to measure antioxidant capacity. However, this great diversity is not reflected in the analysis of meat and meat products, as there are a limited number of studies on determining this parameter in this complex food matrix. Despite this, and due to the interest in antioxidants that prevent oxidation reactions, the identification of antioxidants in meat and meat products is of special importance to the meat industry. For this reason, this review compiled the main antioxidant capacity assays employed in meat and meat products, to date, describing their foundations, and showing both their advantages and limitations. This review also looked at the different applications of antioxidant properties in meat and meat products. In this sense, the suitability of using these methodologies has been demonstrated in different investigations related to these foods.

Abstract
The use of dried olive pomace as complementary energy sources in poultry feed is still limited due to its low protein and high fiber contents. Bioconversion of olive pomace through solid-state fermentation with or without exogenous enzymes is considered as a trial for improving its nutritional value. This study aimed to evaluate the effects of fermented olive pomace with or without enzymatic treatment on the growth, modulations of genes encoding digestive enzymes and glucose transporters, meat oxidative stability, and economic efficiency of broiler chickens. A total of 1400 day-old broiler chicks (Ross 308) were randomly allocated to seven dietary treatments with 10 replicates of 20 birds/replicate. Treatments included control (basal corn-soybean diet) and other six treatments in which basal diet was replaced by three levels (7.5, 15, and 30%) of fermented olive pomace (FOPI) or enzymatically fermented olive pomace (FOPII) for 42 days. The highest body weight gain was observed in groups fed 7.5 and 15% FOPII (increased by 6.6 and 12.5%, respectively, when compared with the control group). Also, feeding on 7.5 and 15% FOPII yielded a better feed conversion ratio and improved the digestibility of crude protein, fat, and crude fiber. The expression of the SGLT-1 gene was upregulated in groups fed FOPI and FOPII when compared with the control group. Moreover, the expression of the GLUT2 gene was elevated in groups fed 7.5 and 15% FOPII. By increasing the levels of FOPI and FOPII in diets, the expression of genes encoding pancreatic AMY2A, PNLIP, and CCK was upregulated (p < 0.05) when compared with the control. Fat percentage and cholesterol content in breast meat were significantly reduced (p < 0.05) by nearly 13.7 and 16.7% in groups fed FOPI and FOPII at the levels of 15 and 30%. Total phenolic and flavonoid contents in breast meat were significantly increased in groups fed 15 and 30% FOPI and FOPII when compared with the control group and even after a long period of frozen storage. After 180 days of frozen storage, the inclusion of high levels of FOP significantly increased (p < 0.05) the levels of glutathione peroxide and total superoxide dismutase and meat ability to scavenge free radical 1,1-diphenyl-2-picrylhydrazyl. Furthermore, the highest net profit and profitability ratio and the lowest cost feed/kg body gain were achieved in groups fed 7.5 and 15% of FOPII, respectively. The results of this study indicated that dietary inclusion of 15% FOPII could enhance the growth performance and economic efficiency of broiler chickens. Moreover, a higher inclusion level of FOPI or FOPII could enhance the quality and increase the oxidative stability of frozen meat and extend the storage time.

Abstract
Simple Summary Supplementation of the poultry diet with plant extracts rich in polyphenolic compounds could improve the performance of animals as well as the oxidative stability of their derived meat. The present study evaluated the efficacy of cornelian cherry extract (CCE) on the expression of genes controlling glucose transporters and different assays regulating the oxidative stability of frozen, stored meat over a long period of time (90 days of storage). The results indicated that the addition of 200 mg/kg of CCE to the diet could improve the growth rate and antioxidant status of broiler chickens and thus increase their productivity. Moreover, polyphenolic compounds rich in CCE can act as antioxidant agents to increase the shelf-life extension of frozen, stored poultry meat. Finally, supplementation with CCE could increase the total concentration of phenolic compounds in poultry meat offered to human consumers. Abstract The use of natural plant extracts in poultry feed could improve their productivity as well as the oxidative stability of stored derived meat. The roles of cornelian cherry extract (CCE) in growth, cecal microbes, and meat antioxidative markers of broiler chickens were evaluated. A total of 500 Ross 308 broiler chicks were fed diets supplemented with CCE (0, 50, 100, 200, 400 mg/kg of diet) for 38 days. The highest levels of weight gain and feed utilization were observed in a group fed 200 mg/kg of CCE. Maximum upregulation of glucose transporters—1 and 2 and sodium-dependent glucose transporter genes—were found in the group fed 200 mg/kg of CCE. Lactobacilli and Bifidobacterium colonization increased as the CCE levels increased. The greatest upregulation of antioxidant genes (glutathione peroxidase, catalase, and superoxide dismutase) in breast meat was observed in groups fed CCE (200 and 400 mg/kg). Dietary CCE significantly delayed the lipid oxidation of breast meat compared with that of the control group. The total phenolic content, 2,2-Diphenyl-1-Picrihydrzyl (DPPH) radical scavenging activity and reducing power in meat improved with higher levels of CCE. Dietary CCE improved the growth, performance of broilers, and meat antioxidant stability after 90 days of storage.

Abstract
Silver nanoparticles (AgNPs) have been used as a promising alternative to antibiotics in poultry feed. In this study, silver-doped silica nanoparticles (SiO2@AgNPs) were prepared in powder form, using starch, via the chemical reduction method and sol-gel technique followed by full characterization. SiO2@AgNPs were added to the poultry diet at three doses (2, 4, and 8 mg/kg diet). The safety of the oral dietary supplementation was estimated through the evaluation of the growth performance and hematological, biochemical, and oxidative parameters of birds. Moreover, the immunohistochemical examination of all body organs was also performed. Results of this study showed that SiO2@AgNPs have no negative effects on the growth performance and hematological, biochemical, and oxidative parameters of birds. Moreover, the immunohistochemical examination revealed the minimum inflammatory reactions and lymphoid depletion under a dose level of 8 mg/kg. In conclusion, SiO2@AgNPs could be considered as a promising and safe nano-growth promoter in broilers when added to poultry diet under a dose level of 4 mg/kg diet.

Abstract
Ethanol extract of mango seeds (EEMS) are composed of several polyphenolic compounds with considerable in vitro antioxidant activity that can be used in pig feed and may contribute positively to meat quality characteristics. The aim of this study was to evaluate the effect of EEMS as a source of antioxidants in growing-finishing pig diets on meat quality, lipid stability, sulfhydryl groups non-proteinaceous (SG-NP), total phenolic compounds, total antioxidant potential and total antioxidant activity of meat after 1 and 7 days of refrigeration storage. Thirty-two (60-day-old) barrows, weighing 20.20 ± 1.34 kg, were used in a randomized block design consisting of eight animals with four treatment regimens. Treatments consisted of: Control = no dietary antioxidant; butylated hydroxytoluene (BHT) = diet with 200 ppm BHT; EEMS200 = diet with 200 ppm EEMS; EEMS400 = diet with 400 ppm EEMS. At 145 days of age and average weight of 95.47 ± 6.19 kg, the animals were slaughtered and loin samples were collected and frozen before for qualitative analysis and evaluation of the effect of subsequent storage for 1 or 7 days at 8 °C on lipid stability, SG-NP, phenolic compounds, total antioxidant capacity and total antioxidant activity Meat from animals fed EEMS400 diet showed lower cooking loss (P < 0.0001) and higher non-protein sulfhydryl groups, phenolic compounds and total antioxidant activity at both 1 and 7 days of storage (P < 0.0001) compared to the other treatments. Greater antioxidant capacity was observed at 1 day storage in the meat of animals that consumed EEMS regardless of concentration when compared to the control group (P < 0.01). The dietary inclusion of EEMS to pig diets is more effective at 400 ppm in improving meat quality after cooking and antioxidant parameters of pork.

Abstract
This study examined the impact of dietary supplementation of Morinda lucida leaf powder (MLLP) and Butylated hydroxyanisole (BHA) on carcass traits, physicochemical properties, and sensory attributes of different muscles in broiler chickens. Two hundred and forty 1-day old Arbor acre chicks were randomly allotted to either a negative control (NC), basal diet without additive; M-0.1, basal diet + 0.1%MLLP; M-0.2, basal diet + 0.2%MLLP; or Positive Control, (PC), basal diet + 0.02%BHA, fed for 42 d, and euthanized. The physicochemical properties and oxidative stability of thigh and breast muscles were assessed over a 5 d postmortem chill storage. Diet had no effect (p > 0.05) on carcass traits and chemical composition, cook loss, pH and sensory attributes of breast and thigh muscles in broiler chickens. Total phenolic content was higher (p = 0.032) in the supplemented meats than in the NC meat. Carbonyl content, TBARS value and drip loss were higher (p < 0.05), while redness was lower (p = 0.021) in the NC meat compared with the meat of the supplemented birds. Carbonyl content was lower (p < 0.0001) in the PC meat compared with the M-0.1 and M-0.2 meats. The M-0.1 and M-0.2 meats had lower (p < 0.0001) TBARS value than the PC meat. Chill storage and muscle type influenced (p < 0.05) the physicochemical properties and oxidative stability of broiler meat. There were significant interactions between diet, muscle type, and chill storage on the oxidative stability of broiler meat. These results suggest that MLLP exhibited antioxidant potential that was comparable to that of BHA in the diets of broiler chickens.

Abstract
The objective of this research was to evaluate the total phenol content, total flavonoids, and antioxidant activity of chestnuts (Castanea sativa Mill.) and commercial feed employed in the finishing diet of the Celta pig breed and analyze the effect of the feeding (chestnuts vs. commercial feed) in the finishing diet on total phenol content and antioxidant activity of Longissimus thoracis et lumborum, Psoas major, and Biceps femoris muscles and liver of the Celta pig breed. The antioxidant activity of the feed and animal tissue was investigated using three antioxidant methods (2,2-Diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, 2-2'-Azino-di-[3-ethylbenzthiazoline sulfonate] (ABTS) radical scavenging activity, and ferric reducing antioxidant power (FRAP) assay). The determination of the total phenol content and total flavonoids showed that chestnut had a significantly lower concentration than commercial feed in these compounds (130.00 vs. 312.89 mg gallic acid equivalents/100 g fresh weight and 8.58 vs. 32.18 mg catechin equivalents/100 g fresh weight, respectively). However, the results displayed that chestnuts had a higher antioxidant activity when compared with the commercial feed through the DPPH and ABTS methods (1152.42 vs. 957.33 µg Trolox equivalents/g fresh weight, and 9379.74 vs. 7613.44 µg Trolox equivalents/g fresh weight, for DPPH and ABTS assay, respectively), while the antioxidant activity measured by the FRAP assay turned out to show higher values for commercial feed (1777.49 and 1946.09 µmol Fe2+/100 fresh weight for chestnut and commercial feed, respectively), although significant differences were only found in the ABTS assay. On the other hand, the present study found that chestnut significantly reduces the total phenol content and declines the antioxidant activity of Longissimus thoracis et lumborum, Psoas major, and Biceps femoris muscles and liver of the Celta pig breed. Finally, it has been found that liver is the location that has the best antioxidant characteristics compared to any muscle, regardless of diet utilized.

Abstract
The objective of the study was to test the effect of diets supplemented with β-alanine, L-histidine, and carnosine on the histidine dipeptide content and the antioxidative status of chicken breast muscles and blood. One-day-old Hubbard Flex male chickens were assigned to five treatments: control diet (C) and control diet supplemented with 0.18% L-histidine (ExpH), 0.3% β-alanine (ExpA), a mix of L-histidine\β-alanine (ExpH+A), and 0.27% carnosine (ExpCar). After 28 days, chicken breast muscles and blood samples were analyzed for the antioxidant enzyme activity (catalase (CAT), glutathione peroxidase (GPx), superoxide dismutase (SOD)), carnosine and anserine content, amino acid profile, and anti-radical activity (ABTS, DPPH, ferric reducing antioxidant power (FRAP)). The results of the study showed that carnosine supplementation effectively increased body weight and breast muscle share in chicken carcasses. Carnosine and L-histidine supplementation with or without β-alanine increased carnosine content in chicken breast muscles up to 20% (p = 0.003), but the boost seems to be too low to affect the potential antioxidant capacity and amino acid content. The β-alanine-enriched diet lowered dipeptide concentration in chicken blood serum (p = 0.002) and activated catalase in chicken breast muscles in relation to the control group (p = 0.003). It can be concluded that histidine or dipeptide supplementation of chicken diets differently affected the total antioxidant potential: in breast muscles, it increased dipeptide content, while in blood cell sediment (rich in erythrocytes), increased SOD and GPx activities were observed.

Abstract
A newly isolated bacterium producing 55.5 U/mL keratinase on feather meal minimal medium was identified as Ochrobactrum intermedium. Optimization of process parameters by one-variable-at-a-time (OVAT) approach (substrate concentration 0.5% w/v, inoculum size 5% w/v, pH 7.0, 200 rpm for 96 h at 40 °C) resulted in 2.1-fold increase in keratinase secretion (117 U/mL). Keratinase was optimally active at pH 9.0 and 40 °C and was stable at pH 9.0 and 60 °C for 120 min. Calcium ions enhanced keratinase activity (158%) significantly, while it was strongly inhibited by both PMSF and EDTA, indicating it to be a metallo-serine protease. Keratinase degraded native chicken feathers efficiently resulting in 97.9% weight loss along with release of 745.5 μg/mL soluble proteins and 4196.69 μg/mL amino acids. Feather hydrolysate generated by NKIS 1 exhibited significant anti-oxidant and free-radical scavenging activity (90.46%). The present study revealed that O. intermedium NKIS 1 has potential applications in the biodegradation of chicken feathers and the value-addition of poultry waste.

Abstract
This feeding trial was conducted to investigate the effects of Mentha arvensis (MA) and Geranium thunbergii (GT) in drinking water on physicochemical attributes, sensory qualities, proximate analysis and oxidative stability of broiler leg meat. One hundred and twenty broiler chicks were assigned to 1 of 4 dietary treatments for 5 weeks. The dietary treatments were 1) control, 2) T1 (0.1% 1 MA:1 GT), 3) T2 (0.1% 1 MA:4 GT), 4) T3 (0.1% 4 MA: 1 GT). The water holding capacity and cooking loss were improved (p < 0.05) in T2 and T3. The flavor, texture and acceptability of leg meat by consumers were significantly increased in T2 relative to the control (p < 0.05). The crude protein content was increased in T3 while the crude fat decreased in T2 (p < 0.05). Moreover, broilers supplemented with plant extracts had the lowest leg meat TBARS (thiobarbituric acid reactive substances) values after 2 weeks of storage as compared with the control. Total phenolic contents and 1-1-diphenyl 2 picrylhydrazyl (DPPH) activity were also better in the T2 group (p < 0.05) compared with the control, whereas 2,2-Azinobis-3 ethytlbenzothiazoline-6-sulfonic acid (ABTS+) remained unaffected. Overall, these results demonstrate that broiler drinking water with the inclusion of plant extract combination can be used to enhance the oxidative stability, shelf life and quality characteristics of broiler leg meat without compromising the growth performance.

Abstract
Here, we examined the effects of Lonicera japonica extract (LJE) on lactation performance, antioxidant status, and endocrine and immune function in heat-stressed mid-lactation dairy cows. Twenty-four healthy Chinese Holstein mid-lactation dairy cows, all with similar milk yield (30.0 ± 1.0 kg/d), parity (2.5 ± 0.3), and days in milk (105 ± 5 d) were allocated to 4 groups using a randomized complete block design: a negative control group (without LJE supplementation; CON) and groups that received LJE at 14, 28, and 56 g/d. The experiment lasted 10 wk over a hot summer, with a pre-feeding period of 2 wk. Cows were exposed to heat stress, as the average temperature-humidity index was greater than 72. The results showed that LJE had no effect on respiration rate; however, it reduced the rectal temperature of dairy cows experiencing heat stress in both a linear and quadratic manner; the lowest (39.03°C) was recorded for the LJE-28 group, lower than the CON group. Supplementation with LJE did not affect dry matter intake, milk yield, or milk composition. The majority of biochemical parameters in serum were unaffected by supplementation with different amounts of LJE; the exception was creatinine, which was reduced quadratically. Compared with the CON group, serum triiodothyronine concentrations increased significantly in the LJE-28 group. Addition of LJE to the diet increased thyroxine concentrations quadratically; values peaked at 18.62 ng/mL in the LJE-28 group. Furthermore, supplementation with increasing amounts of LJE quadratically increased the activity of glutathione peroxidase and total antioxidant capacity in serum but decreased concentration of malondialdehyde. Although we detected no differences in the concentrations of IgA, IgM, or cytokines, dairy cows in the LJE-28 group had higher IgG and IL-4 concentrations than did cows in the CON group. Supplementation with LJE increased concentrations of IgG and IL-4 in the serum quadratically but decreased that of IL-2. Finally, heat shock protein 72 concentrations in the serum tended to fall quadratically as the amount of LJE increased. In summary, LJE had no negative effects on lactation performance but helped to alleviate heat stress by improving antioxidant status and promoting endocrine and immune functions. Supplementation with LJE at 28 g/d is recommended for lactating dairy cows experiencing heat stress during hot summers.

Abstract
This study was taken up with the objective to assess the effect of limonin on the performance of commercial broilers and quality of meat. Day old chicks (200) were divided into 8 groups, each group contained 4 replicates of 6 chicks each in equal sex ratio. The iso-nitrogenous and iso-caloric diets were fed for 35 days, i.e. starter, grower and finisher phase. Kinnow peel powder (KPP) and solid lipid nanoparticles (SLN) of kinnow peel powder containing 7.47 mg limonin/g was added in the required quantity of feed to supply 0, 0.5, 1.0 and 1.5 mg limonin/bird/day. The data was analyzed using 2×4 factorial design. The data revealed that the birds fed diet supplemented with SLN consumed more feed in comparison to those fed diet supplemented with KPP, resulting in higher gain in weight, but without affecting feed conversion ratio (FCR). The digestibility of CP was lower and that of CF was higher when diet was supplemented with SLN in comparison to the one supplemented with KPP. As compared to control diet, limonin up to 1% level did not have any adverse effect on the digestibility of nutrients, but it was depressed beyond 1% level of limonin supplementation. The limonin beyond 1% depressed the dressing percentage. It was concluded that nano-formulations @ 1.0 mg/bird/d is an effective carrier of limonins, leading to improved growth, health characteristics in broilers and meat enriched with limonin.

Abstract
Poultry meat is very susceptible to oxidation because of the high concentration of polyunsaturated fatty acids, which negatively affects the quality and nutritional values of chicken meat. Coccidiosis is the most common parasitic disease of poultry. Intending to limit anti-parasites usage in poultry feed and also because of the concerns about antibiotic resistance and residues in poultry products, there is a need for research to discover natural alternatives. The effect of nanocurcumin on antioxidant profile (carotenoid and vitamin E contents, lipid oxidation and antioxidant capacity) and pH of broiler chicken breast meat infected with Eimeria species was investigated. Fifty, one-day-old male Ross 308 broiler chickens were assigned to five treatments including non-infected and non-medicated control (NNC), infected non-supplemented control (INC), infected and medicated with nanocurcumin 300 mg kg-1 feed (NCRM1), infected and medicated with nanocurcumin 400 mg kg-1 feed (NCRM2) and infected and antibiotic medicated group. Infection with Eimeria acervulina, E. maxima, and E. tenella decreased vitamin E and carotenoid contents of chicken breast meat significantly. The NCRM2 had significantly enhanced carotenoid and vitamin E levels in chicken breast meat, so there was no significant difference between NCRM2 and NNC group. No significant change was observed in pH value among groups. Malondialdehyde value of breast meat was significantly lower in NCRM1 and NCRM2 than the INC group. The NCRM2 and NCRM1 showed the best antioxidant capacity even better than NNC. In conclusion, nanocurcumin could be a potential feed additive that can increase oxidant stability of broiler chicken breast meat.

The aim of this study was to determine whether curcumin and yucca extract addition in broiler feed improves growth, health, and meat quality, and to measure coccidiostatic and antimicrobial activity so as to enable replacement of conventional performance enhancers. We used 240 birds in four treatments: CN, basal feed with antibiotics and coccidiostatic drugs; CU, feed with 100 mg/kg of curcumin; YE, feed with 250 mg/kg of yucca extract; and CU + YE, feed with the combination of 100 mg curcumin/kg and 250 mg yucca extract/kg. A significant reduction in oocysts was observed in birds supplemented with combined additives (CU + YE) at days 37 compared to other treatments and at 42 days in relation to the CU treatment. At 42 days, the total bacterial counts for the CN and CU treatments were lower than the others. Birds fed the additive had lower numbers of leukocytes, lymphocytes, and heterophils than did those in the CN treatment. The highest levels of antioxidants in meat were observed in the treatments with the additives, together with lower levels of lipid peroxidation compared to the CN. The lowest protein oxidation was observed in the CU + YE treatment in relation to the other treatments. Lower total levels of saturated fatty acids (SFA) were observed in the CU treatment than in the CN. There were lower levels of monounsaturated fatty acids (MUFA) in the meat of birds in the YE treatment in relation to the others. Higher levels of total polyunsaturated fatty acids (PUFA) were observed in birds that consumed curcumin, individually and in combination with yucca extract. Taken together, the data suggest that curcumin and yucca extract are additives that can potentially replace conventional growth promoters; they improved bird health. Changes in the fatty acid profile of meat (increase in the percentage of omegas) are beneficial to the health of the consumer.

Abstract
OBJECTIVE The increasing consumer awareness of food, which can provide health benefits and potentially aid disease prevention, has become the driving force of the functional food market. Accordingly, the aim of this study was to investigate the effects of chicken genotype on the macronutrient content, bioactive peptide content, and antioxidant capacity within different breast meat. METHODS In this experiment, three genotypes of chicken, Thai indigenous, black-boned, and broiler (control), were reared with commercial feed under the same conditions. Thirty chickens were slaughtered at typical market age and the breasts were separated from the carcass to determine macronutrient content using the AOAC method. The antioxidant capacities of the chicken breasts were evaluated by in vitro antioxidant assays and the protein pattern was investigated using gel electrophoresis. Carnosine and anserine, which have antioxidant properties in animal tissue, were determined using high performance liquid chromatography. RESULTS The results showed that breast meat from Thai indigenous chickens had a greater macronutrient content and higher antioxidant capacity compared with the other genotypes (p<0.05). The protein pattern was similar between genotypes, however Thai indigenous chickens had the greatest myosin and actin content (p<0.05). In addition, carnosine and anserine values were greatest in the black-boned and Thai indigenous chickens compared with the broiler genotype (p<0.05). CONCLUSION Thai indigenous chicken breast meat may be classified as a functional food as it has good nutritional value and is rich in antioxidant peptides.

Abstract
Poultry meat is generally exposed to quality deterioration due to lipid oxidation during storage. Oxidative stability of meat can be increased by feed supplementation. Aim of the current study was to investigate the effect of dietary supplementation of fish waste derived bioactive peptides on antioxidant potential of broiler breast meat and physico-chemical characteristics and quality parameters of nuggets prepared from breast meat. 180 broiler birds (six groups of 30 birds) were purchased. Each group was given different concentrations of bioactive peptides i.e. 0, 50, 100, 150, 200, and 250 mg/kg feed. After completion of six weeks birds were slaughtered and breast meat was stored at -18°C for six months. Nuggets were prepared and stored at -18°C for 45 days. Meat samples were analyzed for antioxidant activity [total phenolic contents (TPC), DPPH• scavenging activity, and ferric reducing antioxidant power] and lipid oxidation assay at regular intervals of 1, 2, 3, 4, 5, and 6 months while nuggets were analyzed for quality (pH, color, texture and water holding capacity) parameters after regular interval of 15 days. A significant (p<0.05) effect of feed supplementation was observed on antioxidant status such as TPC, DPPH• scavenging activity, and FRAP of broiler breast meat. Dietary interventions of bioactive peptides significantly (p<0.05) delayed lipid oxidation of breast meat than control. All the quality parameters were also significantly affected due to dietary bioactive peptides and storage duration. Thus, dietary interventions of bioactive peptides can increase the antioxidant and shelf stability of broiler breast meat and nuggets.
