Abstract
In this study, chlorogenic acid (CA), piceatannol (PIC), epigallocatechin-3-gallate (EGCG) and ferulic acid (FA) was selected to explore the influence of polyphenol on the structural properties of wheat germ albumin (WGA) and wheat germ globulin (WGG). The emulsifying properties of the emulsions prepared by WGA-EGCG complex were also evaluated. The results indicated that all polyphenols could significantly enhance the antioxidant capacity of WGA and WGG. In particular, EGCG increased the ratio of random coil in WGA and WGG, resulting in protein unfolding and shifting from an order to disorder structure. In addition, lipid oxidation and protein oxidation of the soybean oil emulsion was significantly slowed down by WGA-EGCG. The stability of the emulsions under various environmental stress and the storage time was significantly improved by WGA-EGCG. These findings can provide a reference for expanding the application of wheat germ protein in food industry.

Abstract
Obesity, a chronic disease, resulted from excessive consumption of high-calorie foods, leading to an energy imbalance. Protium heptaphyllum (P. heptaphyllum) was used in folk medicine for its analgesic, anti-inflammatory, and healing properties. The association of the extract from P. heptaphyllum with nanotechnology was innovative for combining high technology with active ingredients that are easily accessible in the Amazon region. This study evaluated the effect of liposomes containing the ethyl acetate fraction of the crude extract of P. heptaphyllum leaves on obesity. Male Wistar rats treated with a high-calorie diet for 8 weeks to induce obesity received treatment with the liposome formulation containing P. heptaphyllum extract (1 mg/kg/day, via gavage) for 14 days. Morphological, metabolic, redox status, immunological, and histological parameters were evaluated in the adipose and liver tissue of the animals. The groups were divided as follows: C: control; P: liposomes containing extract; O: obese, and OP: obese + liposomes containing extract. The obesity model resulted in increases in body weight, caloric intake, body fat weight, and in the lipid profile. In adipose tissue, P decreased SOD (superoxide dismutase) activity in obese animals. In the liver, a positive modulation of the extract was observed in relation to glucose, amino acids, lactate, hepatoprotective action, and anti-inflammatory activity, with a decrease in interleukin 1β (IL-1β) in obese animals. The results showed an improvement in the functional and inflammatory aspects, but the treatment was not effective in alleviating general changes related to obesity, such as weight gain, fat, glucose, triglycerides, and inflammation in adipose tissue, highlighting the complexity of responses in different organs during obesity and treatment with P. heptaphyllum.

Abstract
Based on their chemical structure and catalytic features, carbon dots (CDs) demonstrate great advantages for agricultural systems. The improvements in growth, photosynthesis, nutrient assimilation and resistance are provided by CDs treatments under control or adverse conditions. However, there is no data on how CDs can enhance the tolerance against chromium toxicity on gas exchange, photosynthetic machinery and ROS-based membrane functionality. The present study was conducted to evaluate the impacts of the different concentrations of orange peel derived-carbon dots (50-100-200-500 mg L-1 CD) on growth, chlorophyll fluorescence, phenomenological fluxes between photosystems, photosynthetic performance, ROS accumulation and antioxidant system under chromium stress (Cr, 100 μM chromium (VI) oxide) in Lactuca sativa. CDs removed the Cr-reduced changes in growth (RGR), water content (RWC) and proline (Pro) content. Compared to stress, CD exposures caused an alleviation in carbon assimilation rate, stomatal conductance, transpiration rate, carboxylation efficiency, chlorophyll fluorescence (Fv/Fm) and potential photochemical efficiency (Fv/Fo). Cr toxicity disrupted the energy fluxes (ABS/RC, TRo/RC, ETo/RC and DIo/RC), quantum yields and, efficiency (ΨEo and φRo), dissipation of energy (DIo/RC) and performance index (PIABS and PItotal). An amelioration in these parameters was provided by CD addition to Cr-applied plants. Stressed plants had high activities of superoxide dismutase (SOD), peroxidase (POX) and ascorbate peroxidase (APX), which could not prevent the increase of H2O2 and lipid peroxidation (TBARS content). While all CDs induced SOD and catalase (CAT) in response to stress, POX and enzyme/non-enzymes related to ascorbate-glutathione (AsA-GSH) cycle (APX, monodehydroascorbate reductase (MDHAR) and dehydroascorbate reductase (DHAR), the contents of AsA and, GSH) were activated by 50-100-200 mg L-1 CD. CDs were able to protect the AsA regeneration, GSH/GSSG and GSH redox status. The decreases in H2O2 content might be attributed to the increased activity of glutathione peroxidase (GPX). Therefore, all CD applications minimized the Cr stress-based disturbances (TBARS content) by controlling ROS accumulation, antioxidant system and photosynthetic machinery. In conclusion, CDs have the potential to be used as a biocompatible inducer in removing the adverse effects of Cr stress in lettuce plants.

Abstract
The growing global need for antioxidative phenolics and flavonoids for maintenance of human health resulted into search of new sustainable unexplored medicinal plants used by the traditional healers for various ailments. Many synthetic based products of phenolics and flavonoids have been used, however the demand of eco-friendly, natural herbal based products are increasing. As a result, the current study aims to explore traditional potential of Polygonum posumbu related to its phenolics and flavonoids. Optimization of extraction parameters were employed which includes: solvent selection (water, ethanol, methanol, acetone and ethyl acetate), ethanol composition (40-100%), solvent to sample ratio (30-70 ml/g), temperature (50-80 °C) and time (1-5 h). Under optimal conditions, total phenolics (TPC), total flavonoids (TFC), the extract yield (EY) and antioxidant activities of leaves extract were 162.79 ± 2.28 mg GAE/g, 56.57 ± 6.22 mg QE/g 27.96 ± 0.91%, and 27.34 ± 0.98 μg/ml respectively. Seven flavonoids were quantified in different tissues with significant (p ≤ 0.05) differences found in flavonoids contents in different parts of the plant. Highest concentration of flavonoids was observed in stems: (-)-epicatechin-53.19 ± 1.13 mg/g, myricetin-15.90 ± 0.13 mg/g, quercetin-50.66 ± 0.08 mg/g, luteolin-43.10 ± 0.47 mg/g, apigenin-16.73 ± 0.43 mg/g. Leaves and roots had the highest amount of genistein (05.06 ± 0.01 mg/g) and kaempferol (11.13 ± 0.06 mg/g) respectively. From the study it had been found that Polygonum posumbu possess a very good amount of phenolics and flavonoids and this study details first ever investigation on this plant in terms of phenolics and flavonoids. Therefore, this study enhanced the importance of this bioresource in functional food or nutraceutical industries.

Abstract
Medicinal plants are a rich source of antioxidants such as flavonoids, phenols, tannins, and alkaloids among others and are currently used as alternative and complementary drugs in the management of stress-related disorders. Strychnos henningsii and Ficus sycomorus have been traditionally used by the people of Mbeere, Embu county, Kenya, as medicine for the treatment of various oxidative stress-related disorders such as diabetes and rheumatism; however, no empirical data are available to authenticate the said claim. The aim of this study was to evaluate preliminary phytochemical screening and in vitro antioxidant activity of dichloromethane (DCM) leaf extract of S. henningsii and stem bark extract of F. sycomorus using DPPH, hydrogen peroxide, and ferric reducing power assays; total flavonoids and phenolic compounds were also determined by colorimetric assay and Folin–Ciocalteu reaction, respectively. Phytochemical screening showed that both extracts possessed saponins, flavonoids, phenols, steroids, alkaloids, and cardiac glycosides; however, terpenoids were found to be absent in S. henningsii. The total phenolic and flavonoid content of the DCM stem bark extract of F. sycomorus was lower than that of the leaf extract of S. henningsii. These extracts significantly exhibited strong antioxidant activities at different concentrations tested. The IC50 values of S. henningsii and F. sycomorus were 0.325 mg/ml and 0.330 mg/ml for hydrogen peroxide and 0.068 mg/ml and 0.062 mg/ml for DPPH, respectively. Both DCM leaf and stem bark extracts of S. henningsii and F. sycomorus were found to have strong ferric reducing power. Therefore, both extracts showed significant nonenzyme-based antioxidant activities. The two plants possess phytochemicals that have significant antioxidant properties.

Abstract
Oryza sativa L. cv. Pieisu 1 CMU (PES1CMU) has a high anthocyanin content in the colored bran and high phenolic content in the husk. Biologically active compounds in plants are available as dietary supplements and cosmetics. To expand the utilization of natural resources, PES1CMU will be a natural remedy for skin hyperpigmentation and aging. Cell-free tyrosinase inhibition and scavenging assays were used to screen all extracts, including PES1CMU-rice bran oil (RBO), PES1CMU-defatted rice bran (DFRB), and PES1CMU-husk (H). PES1CMU extracts were first examined in IBMX-stimulated B16 cells and H2O2-induced fibroblasts. The results exhibited that PES1CMU-DFRB was the most effective inhibitor of mushroom tyrosinase, intracellular melanin production (fold change of 1.11 ± 0.01), and tyrosinase activity (fold change of 1.22 ± 0.10) in IBMX-stimulated B16 cells. Particularly, PES1CMU-DFRB showed a comparable whitening effect to the standard arbutin with no significant difference (p > 0.05). Moreover, PES1CMU-DFRB and PES1CMU-H demonstrated strong scavenging activities. After accelerated cell aging caused by H2O2 exposure in fibroblasts, the levels of malondialdehyde production in all PES1CMU-treated fibroblasts were comparable with those of standard l-ascorbic acid (p > 0.05). Besides, PES1CMU-DFRB and PES1CMU-H treatment significantly inhibited collagen degradation against MMP-2 compared to l-ascorbic acid-treated cells (p > 0.05). PES1CMU rice-processing wastes (DFRB and H) could become potential natural sources for dermatocosmetic constituents in skin anti-aging and whitening products.

Abstract
In the present study, preliminary phytochemical investigations were performed on the fruit essential oil and antioxidant-rich methanolic extracts of the fruits and roots of Ferula drudeana, the putative Anatolian ecotype of the Silphion plant, to corroborate its medicinal plant potential and identify its unique characteristics amongst other Ferula species. The essential oil from the fruits of the endemic species Ferula drudeana collected from Aksaray was analyzed by GC and GC/MS. The main components of the oil were determined as shyobunone (44.2%) and 6-epishyobunone (12.6%). The essential oil of the fruits and various solvent extracts of the fruits and roots of F. drudeana were evaluated for their antibacterial and anticandidal activity using microbroth dilution methods. The essential oil of the fruits, methanol, and methylene chloride extracts of the fruits and roots showed weak to moderate inhibitory activity against all tested microorganisms with MIC values of 78-2000 µg/mL. However, the petroleum ether extract of the roots showed remarkable inhibitory activity against Candida krusei and Candida utilis with MIC values of 19.5 and 9.75 µg/mL, respectively. Furthermore, all the samples were tested for their antioxidant activities using DPPH• TLC spot testing, online HPLC-ABTS screening, and DPPH/ABTS radical scavenging activity assessment assays. Methanolic extracts of the fruits and roots showed strong antioxidant activity in both systems.

Abstract
Phenolic compounds and glucosinolates are secondary plant metabolites that play fundamental roles in plant resistance to abiotic stress. These compounds have been found to increase in stress situations related to plant adaptive capacity. This review assesses the functions of phenolic compounds and glucosinolates in plant interactions involving abiotic stresses such as drought, salinity, high temperature, metals toxicity, and mineral deficiency or excess. Furthermore, their relation with water uptake and transport mediated through aquaporins is reviewed. In this way, the increases of phenolic compounds and glucosinolate synthesis have been related to primary responses to abiotic stress and induction of resistance. Thus, their metabolic pathways, root exudation, and external application are related to internal cell and tissue movement, with a lack of information in this latter aspect.

Abstract
The aim of this research was to characterize differences and sources of volatile flavor compounds by using headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) and principal component analysis (PCA). Three sweet cherry fruits from different cultivars (cv. Tie, Van, and Lap) and their wines that were produced by the same yeast were detected. The results showed that 27 flavor compounds were identified in cherry fruits, including 10 alcohols, 7 esters, 7 aldehydes, 2 ketones, and 1 organic acid. Twenty-three flavor compounds were identified in cherry wines, including nine esters, eight alcohols, three aldehydes, two organic acids, and one ketone. In cherry fruits, aldehydes, several alcohols, and one ketone were the most prevalent in cv. Tie, and the majority of esters and alcohols in cv. Van. After fermentation, ethanol, butanol, butanal, ethyl propionate, propionaldehyde, 3-hydroxy-2-butanone, and acetic acid increased, whereas 1-hexanol, 3-methyl-3-buten-1-ol, 1-penten-3-ol, ethyl acetate, methyl acetate, (E)-2-hexenal and hexanal decreased. Few differences were detected in the type and content of volatile compounds in cherry wines from cv. Tieton (WT) and cv. Van (WV). Almost all aldehydes are derived from cherry fruits, which cannot be produced during wine-making, and other volatile compounds are almost all produced by saccharomyces cerevisiae. The volatile compounds of cherry wines were determined by row materials and fermentation cultures. Flavor fingerprints were established by HS-GC-IMS and PCA, which provided a theoretical foundation for the evaluation and improvement of flavor quality in cherry wine-making.

Optimization of Extraction of Compound Flavonoids from Chinese Herbal Medicines Based on Quantification Theory and Evaluation of Their Antioxidant Activity. J FOOD QUALITY 2022. Abstract
Plant-derived flavonoids have been attracting increasing research interest because of their multiple health promoting effects, where numerous investigations were carried out on the optimization of extraction and bioactivities. This study aims to optimize the extraction process of compound flavonoids (CFs) from Chinese herbal medicines and detect their antioxidant activity in vitro. CFs were extracted from the raw materials named “medicine food homology,” composed of hawthorn, lotus leaf, tartary buckwheat, cassia seed, Lycium barbarum, and Poria cocos in a mass ratio of 4 : 2 : 2 : 1.5 : 1 : 1. L9 (34) orthogonal design, level effect and engineering average estimation, and quantification theory were utilized to improve the extraction method of CFs, and the predictive model for CFs yield was constructed. The 2,2ʹ-diphenyl-1-picrylhydrazyl (DPPH), 2,2ʹ-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS), hydroxyl radical scavenging rate, and reducing power of CFs were measured. The highest CFs yield was obtained under the following extraction condition: liquid-solid ratio of 35 : 1 mL/g, extraction temperature of 75°C, extraction duration of 75 min, and extraction mode enzyme-assisted extraction. The forecasted yield was 37.62%. The result was accurate and the established prediction equation was reliable (R = 0.95). The antioxidant activity of CFs was significantly positively correlated with the concentration from 0.05 to 0.4 mg/mL. The DPPH, ABTS, hydroxyl radical scavenging abilities, and the reducing power of CFs were 81.82 ± 1.75%, 49.35 ± 0.09%, 89.78 ± 0.66%, and 0.232 ± 0.001 at the concentration of 0.4 mg/mL, respectively. CFs could be exploited as natural antioxidants in pharmaceuticals and functional foods.

Abstract
Prunus lusitanica L., also known as Portuguese laurel or locally known as ‘azereiro’, is a rare species with ornamental and ecological value. Only two studies regarding the bioactivity and chemical composition of its leaves were reported to date. Thus, the present study aims to qualitatively and quantitatively evaluate the phenolic profile, through HPLC-PAD-ESI-MS/MS (high-performance liquid chromatography–photodiode array detection–electrospray ionization tandem mass spectrometry), as well as the radical scavenging capacity, through ABTS (2,2’-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid) and DPPH (2,2-diphenyl-1 picrylhydrazyl), and the reducing power (FRAP, ferric reducing antioxidant power) assays, of P. lusitanica fruits during a 4-year study. In total, 28 compounds were identified and quantified in the fruits, including 21 hydroxycinnamic acids (60.3%); 2 flavan-3-ols (27.9%), 2 anthocyanins (10.5%), 2 flavonols (1.0%), and 1 secoiridoid (0.3%). High antioxidant capacity was observed, with ABTS values ranging from 7.88 to 10.69 mmol TE (Trolox equivalents)/100 g fw (fresh weight), DPPH values from 5.18 to 8.17 mmol TE/100 g fw, and FRAP values from 8.76 to 11.76 mmol TE/100 g fw. According to these results, it can be concluded that these are rich sources of phenolic compounds with very promising antioxidant capacity and, therefore, with potential applications in the food and/or phytopharmaceutical sectors.

Abstract
This study aimed to explore the enzymatic acylation of dihydromyricetin (DHM) to synthesized DHM derivatives with a different substituted carbon chain to improve its liposolubility. In the presence of Lipozyme TL IM, DHM was butyrylated in a 96.28% conversion in methyl tert-butyl ether under the optimized conditions (molar ratio of DHM to vinyl butyrate, 1:20; lipase dosage, 0.4 U/mg DHM; temperature, 50 °C; stirrer speed, 200 rpm; reaction time, 72 h). Liquid chromatography-mass spectrometry (LC-MS) and nuclear magnetic resonance (NMR) spectroscopy revealed that two acylation products were formed; these were 7-O-acyl-DHM and 3-O-acyl-DHM. In addition, the liposolubility of the DHM derivatives increased with the increase in the substituted carbon chain length; their antioxidant activities were higher than that of DHM in the lecithin peroxidation system, and C8-DHM had a better effect. Therefore, enzymatic acylation broadens the application of DHM in a lipid system in the food field.

Abstract
The purpose of this research was to comparatively investigate the interactions between bioactive flavonoids (quercetin and rutin) and two predominant soy proteins (β-conglycinin and glycinin), and the structural and functional properties of their complexes. The binding affinities of quercetin/rutin toward 7S/11S were structure-dependent, in that rutin had a higher binding affinity than that of quercetin, and 11S exhibited higher affinity toward quercetin/rutin than that of 7S. The interactions in the 7S/11S-quercetin complexes were driven by van der Waals forces and hydrogen-bonding interactions, whereas the 7S/11S-rutin complexes exhibited hydrophobic interactions. Binding to quercetin or rutin altered the secondary structures (decrease in the α-helix and random coil contents and increase in the β-sheet content), decreased the surface hydrophobicity and thermal stability, and enhanced the antioxidant capacity of 7S and 11S. These findings provide valuable information that can facilitate the design of custom-tailored protein-flavonoid macromolecules.

Abstract
The gap between the current serious soil heavy metal (HM) contamination and the low efficiency of soil remediation threatens human health. The aim of this study was to propose a method to improve the efficiency of phytoremediation by exogenous rutin application and explain the potential mechanism. A series of rutin treatments were designed to evaluate the biomass, cadmium (Cd) accumulation and physiological and biochemical responses of Amaranthus hypochondriacus under different Cd stresses. The results showed a decline in cell membrane damage with rutin application, and more Cd ions were immobilized in the cell wall than in the vacuole, resulting in an increase in Cd tolerance in plants. The addition of rutin caused significant effects on the synthesis of glutathione (GSH), including the advancement of the conversion of GSH to phytochelatins (PCs). Among them, PC2 and PC3 in the leaves contributed the most to the high accumulation of Cd. Overall, the phytoremediation efficiency and phytoextraction amount of Amaranthus hypochondriacus with rutin application were improved maximumly by 219.48% and 260.00%, respectively. This study provides a constructive approach for improving the efficiency of phytoremediation by foliar application of flavonoids and contributes to the further development of soil remediation in Cd-contaminated fields.

Effects of Some Weak Acids and Moringa oleifera Leaf Extract Powder on the Colour of Dried Apple. Processes (Basel) 2022. Abstract
This study aimed to find alternatives to sulphite as a preservative for dried fruits. Granny Smith apples were sanitised in a 200 ppm sodium chlorite solution, de-cored, peeled, and cut into slices. The sliced apples were pre-treated/dipped in a water solution containing the three weak acids, namely, ascorbic acid (AA), citric acid (CA), and potassium sorbate (PS) as well as Moringa oleifera leaf extract powder (MOLEP). A screening fractional factorial experiment consisting of five independent variables (AA, CA and PS, time and temperature and MOLEP) constrained at their upper and lower levels (AA: 0.5 to 2.0%, CA: 0.3 to 2.0%, MOLEP: 0.1 to 0.2%, time: 7 to 15 h and temperature: 57 to 70 °C) were evaluated for their effect on the colour of the dried sliced apples. An increase in the concentration of the CA significantly increased the lightness (p = 0.05) and decreased the redness (p = 0.0022) of the dried apple slices. AA and PS did not impact the lightness of the dried sliced apples. A dipping solution of citric acid at 2.0%, Moringa oleifera leaf extract powder at 0.1%, and drying time of 7 h at 70 °C effectively minimized the discolouration of the dried sliced apples.

Abstract
Sweet cherries (Prunus avium L.) are popular fruits around the world with a high nutritional value and abundant phenolic compounds. Phenolic compounds of cherries contribute to positive health benefits. This study aimed at determining the phenolic content and antioxidant activities in four Australian-grown sweet cherry cultivars, including Bing, Ron's, Merchant, and Lapins, as well as the identification of individual phenolic compounds with liquid chromatography-electrospray ionization-quantum time-of-flight-mass spectrometry (LC-ESI-QTOF-MS2). Lapins exhibits the highest total phenolic content (TPC) value (1.73 ± 0.90 mg gallic acid equivalents (GAE)/g) while Ron's exhibits the highest total flavonoid content (TFC) value (0.51 ± 0.02 mg QE/g). In 2,2'-azinobis-(3-ethylbenzo-thiazoline-6-sulfonic acid) (ABTS), reducing power assay (RPA), and total antioxidant content (TAC) assays, Merchant exhibited the highest values (0.51 ± 0.07, 1.74 ± 0.04, and 2.79 ± 0.09 mg AAE/g, respectively) and almost showed the highest antioxidant activity. Ron's presented the highest value (1.21 ± 0.09 mg EDTA/g) in ferrous ion-chelating activity (FICA) assay and exhibits the strongest metal chelating ability. The correlation between phenolic contents and antioxidant assays was observed. In the LC-ESI-QTOF-MS2 analysis, a total of 43 phenolic compounds has been detected in four sweet cherry cultivars, including 11 phenolic acids, 25 flavonoids, 5 other phenolic compounds, 1 lignan, and 1 stilbene. Venn graph showed that Lapins has the greatest number of unique compounds. Our study shows the presence of phenolic acids and provides information to be utilized as an ingredient in food, pharmaceutical, and nutraceutical industries.

Abstract
Rutin is a flavonoid with strong antioxidative effects on plant metabolism that facilitates resistance to environmental stress. The effect of foliar rutin on cadmium (Cd) uptake in Amaranthus hypochondriacus (K472) was studied. The results showed that a foliar spray of rutin alleviated Cd toxicity, promoted plant growth, improved Cd transfer to and storage in aerial plant parts and Cd accumulation with positive effects over time. A rutin concentration of 1.5 mg/mL showed the strongest promotion effect: the biomass and Cd content were increased at 13 days by 68.62% and 405.54% compared to 3 days, respectively, whereas a high concentration of rutin (5 mg/mL) inhibited plant growth and hindered Cd absorption. Two stages of Cd detoxification were identified in K472 after appropriate rutin application. First, an antioxidant system including an enzymatic antioxidant (superoxide dismutase [SOD]) and nonenzymatic antioxidants (glutathione [GSH] and flavonoids) was activated to enhance plant stress resistance. Quercetin and phytochelatin (PC) synthesis were then enhanced to perform detoxification synergistically with the antioxidant system to improve stress tolerance and achieve stable Cd detoxification. The results demonstrated that appropriately prolonging the application time of exogenous rutin to K472 is an effective way to improve the Cd remediation efficiency.

Abstract
Flavonoids from common buckwheat hulls (BHFs) show significant antioxidant and antidiabetic potential. However, their hepatoprotective property is yet to be defined. This study aims to examine the hepatoprotective effect of BHFs in type 2 diabetes mellitus (T2DM) rats and chronic high glucose-damaged HepG2 cells. Results showed that BHF treatment significantly relieves the state of insulin resistance, thereby reducing blood glucose and improving oxidative stress in T2DM rats. It is worth mentioning that BHF treatment improved diabetes-induced liver damage disorders, manifested as the clearance of liver fat and the decline of serum alanine aminotransferase (ALT) and aspartate aminotransferase (AST) activities. In vitro, HepG2 cells pretreated with BHFs maintained higher superoxide dismutase (SOD), glutathione peroxidase (GSH-px), and catalase (CAT) activities than the unprotected group. In parallel, compared with the unprotected group, BHFs significantly reduced the leakage of ALT and AST in pre-protected group dose-dependently. These results indicated that BHFs had considerable antioxidant and hepatoprotective potential and could be promising to be used as nutraceuticals and dietary supplements to prevent and/or protect against liver disorders.

Abstract
Antioxidants remain interesting molecules of choice for suppression of the toxic effects of free radicals in foods and human systems. The current practice involves the use of mainly synthetic molecules as potent antioxidant agents. However, due to the potential negative impact on human health, there is an intensive effort within the research community to develop natural alternatives with similar antioxidant efficacy but without the negative side effects of synthetic molecules. Still, the successful development of new molecules depends on the use of reliable chemical or cell culture assays to screen antioxidant properties. Chemical antioxidant assays include the determination of scavenging ability against free radicals such as DPPH, superoxide anion radicals, hydroxyl radicals, hydrogen peroxide, and nitric oxide. Other antioxidant tests include the ability of compounds to bind and sequester prooxidant metal cations, reduce ferric iron, and attenuate the rate of lipid oxidation. Ex vivo tests utilize cell cultures to confirm entry of the molecules into cells and the ability to quench synthetic intracellular free radicals or to stimulate the increased biosynthesis of endogenous antioxidants. In order to assist researchers in their choice of antioxidant evaluation methods, this review presents background scientific information on some of the most commonly used antioxidant assays with a comparative discussion of the relevance of published literature data to food science and human nutrition applications.

Abstract
Skin cancer is a public health problem due to its high incidence. Ultraviolet radiation (UVR) is the main etiological agent of this disease. Photochemoprotection involves the use of substances to avoid damage caused by UV exposure. The aim of this work was to determine the phytochemical fingerprint and photochemoprotective effect against UVB radiation-induced skin damage such as erythema and carcinogenesis of H. mociniana methanolic extract (MEHm). The chemical composition of the MEHm was analysed by LC/ESI-MS/MS. Three quercetin derivatives, two pectinolides, and two caffeic acid derivatives were identified in the methanolic extract. MEHm has antioxidant effect and it is not cytotoxic in HaCaT cells. Phytochemicals from H. mociniana have a photochemopreventive effect because they absorb UV light and protect HaCaT cells from UVR-induced cell death. Also, in SKH-1 mice -acute exposure-, it decreased erythema formation, modulating the inflammatory response, reduced the skin damage according to histological analysis and diminished p53 expression. Finally, MEHm protects from photocarcinogenesis by reducing the incidence and multiplicity of skin carcinomas in SKH-1 mice exposed chronically to UVB radiation.
