Abstract
Ulcerative colitis (UC) is a challenging inflammatory gastrointestinal disorder, whose therapies encounter limitations in overcoming insufficient colonic retention and rapid systemic clearance. In this study, we report an innovative polymeric prodrug nanoformulation for targeted UC treatment through sustained 5-aminosalicylic acid (5-ASA) delivery. Amphiphilic polymer-based 13.5 nm micelles were engineered to incorporate azo-linked 5-ASA prodrug motifs, enabling cleavage via colonic azoreductases. In vitro, micelles exhibited excellent stability under gastric/intestinal conditions while demonstrating controlled 5-ASA release over 24 h in colonic fluids. Orally administered micelles revealed prolonged 24-h retention and a high accumulation within inflamed murine colonic tissue. At an approximately 60% dose reduction from those most advanced recent studies, the platform halted DSS colitis progression and outperformed standard 5-ASA therapy through a 77-97% suppression of inflammatory markers. Histological analysis confirmed intact colon morphology and restored barrier protein expression. This integrated prodrug nanoformulation addresses limitations in colon-targeted UC therapy through localized bioactivation and tailored pharmacokinetics, suggesting the potential of nanotechnology-guided precision delivery to transform disease management.

Abstract
Trace metal pollution is globally widespread, largely resulting from human activities. Due to the persistence and high toxicity of trace metals, these pollutants can have serious effects across ecosystems. However, few studies have directly assessed the presence and impact of trace metal pollution across ecosystems, specifically across multiple environmental sources and animal taxa. This study was designed to assess the environmental health impacts of trace metal pollution by assessing its extent and possible transfer into wildlife in the areas surrounding two abandoned metalliferous mine complexes in Wales in the UK. Water, sediment, and soil at the mine sites and in areas downstream had notably elevated concentrations of Pb, Zn, and, to a lesser extent, Cd and Cu, when compared to nearby control sites. These high trace metal concentrations were mirrored in the body burdens of aquatic invertebrates collected in the contaminated streams both at, and downstream of, the mines. Wood mice collected in contaminated areas appeared to be able to regulate their Zn and Cu tissue concentrations, but, when compared to wood mice from a nearby control site, they had significantly elevated concentrations of Cd and, particularly, Pb, detected in their kidney, liver, and bone samples. The Pb concentrations found in these tissues correlated strongly with local soil concentrations (kidney: ρ = 0.690; liver: ρ = 0.668, bone: ρ = 0.649), and were potentially indicative of Pb toxicity in between 10 % and 82 % of the rodents sampled at the mine sites and in areas downstream. The high trace metal concentrations found in the environment and in common prey species (invertebrates and rodents) indicates that trace metal pollution can have far-reaching, ecosystem-wide health impacts long after the polluting activity has ceased, and far beyond the originating site of the pollution.

Abstract
Environmental contamination by heavy metals (HMs) has emerged as a significant global issue in recent decades. Among natural substances, food-deriving polyphenols have found a valuable application in chelating therapy, partially limited by their low water solubility. Thus, three different hydroalcoholic extracts titrated in quercetin (QE), ellagic acid (EA), and curcumin (CUR) were formulated using maltodextrins as carriers, achieving a powder with a valuable water solubility (MQE 91.3 ± 1.2%, MEA 93.4 ± 2.1, and MCUR 89.3 ± 2%). Overcoming the problem of water solubility, such formulations were tested in an in vitro simulated gastrointestinal digestion experiment conducted on a water sample with standardized concentrations of the principal HMs. Our results indicate that regarding the nonessential HMs investigated (Pb, Cd, As, Sb, and Hg), MQE has been shown to be the most effective in increasing the HMs' non-bioaccessible concentration, resulting in concentration increases in Cd of 68.3%, in As of 51.9%, in Hg of 58.9%, in Pb of 271.4, and in Sb of 111.2% (vs control, p < 0.001) in non-bioaccessible fractions. Regarding the essential HMs, MEA has shown the greatest capability to increase their intestinal bioaccessibility, resulting in +68.5%, +61.1, and +22.3% (vs control, p < 0.001) increases in Cu, Zn, and Fe, respectively. Finally, considering the strong relation between the antiradical and chelating activities, the radical scavenging potentials of the formulations was assayed in DPPH and ABTS assays.

Abstract
Only some of the nutrients consumed with food are able to be absorbed from the gastrointestinal (GI) tract and enter the systemic circulation (blood). Because some elements are essential minerals for humans, their beneficial effect on the body depends significantly on their bioavailable amount (the fraction that can be absorbed and used by the organism). The term bioavailability, which is very often used to describe the part of nutrients that is able to be absorbed, is influenced by various factors of exogenous and endogenous origin. The main purpose of the study was to assess the relative bioavailability of Cr from selected dietary supplements in the presence of various types of diets, which significantly influence the level of bioavailability. The research was performed using a previously developed and optimized two-stage in vitro digestion model using cellulose dialysis tubes of food rations with the addition of pharmaceutical products. Cr was determined using the ICP-OES and GF-AAS methods, depending on its concentration in particular fractions. The determined relative bioavailability ranged between 2.97 and 3.70%. The results of the study revealed that the type of diet, the chemical form of the molecule, and the pharmaceutical form of preparations have a significant influence on the bioavailability of Cr.

Abstract
The objective of this work was to study the influence of three dietary fibre fractions (pectin, gum arabic and cellulose) and three protein fractions (casein, lactalbumin and soy) on the trace element bioaccessibility (Fe, Mn, Ni, Se and Zn) of turnip tops (B. rapa subsp. Rapa) growing under Mediterranean conditions. Then, it aimed to promote the use of this vegetable not only for direct fresh consumption but also as a main ingredient in the development of food mixtures. The results showed that soluble fibre fractions, such as pectin and gum arabic, can enhance the bioaccessibility of trace elements, such as Fe, Mn, Se and Zn. This effect was not proved for cellulose (an insoluble fibre fraction), in which, at best, no bioaccessibility effect was observed. Regarding the protein fractions, with the exception of Se, caseins and lactalbumin had a neutral effect on improving the trace element bioaccessibility. This did not hold true for soy protein, in which a considerable improvement in the bioaccessibility of Fe, Mn, Se and Zn was determined.

Abstract
The bioaccessibility of zinc (Zn), calcium (Ca), magnesium (Mg), and selenium (Se) from various nuts (Brazil nuts, walnuts, peanuts, almonds, cashews, pecans, hazelnuts, macadamia nuts, and pistachios) was assessed using a simulated two-phase model of enzymatic digestion in vitro. The levels of Zn, Mg, and Ca were determined by atomic absorption spectrometry, and Se was measured by inductively coupled plasma-mass spectrometry. All tested nuts were good sources of Mg, and most, except macadamia nuts, were also good sources of Zn (the standard portion covers over 15% of NRV-R (UE) 1924/2006). Brazil nuts had the highest Se content. Almonds and Brazil nuts were rich in Ca. Se demonstrated the highest bioaccessibility from nuts (27.7% to 70.65%), whereas Ca exhibited the lowest bioaccessibility (below 9%). Pistachios had the highest Zn bioavailability, while cashews excelled in Mg bioaccessibility. Macadamia and pistachios were top for Ca bioaccessibility, and Brazil nuts for Se. Bioaccessibility is positively correlated with fat (for Zn: r = 0.23), carbohydrates (for Mg: 0.44; for Ca: 0.35), and sugar content (for Zn: r = 0.36; for Mg: 0.46; for Ca: 0.40).

Abstract
Growing concern has been paid to metals in soil-strawberry system. In contrast, few attempts have been made to investigate bioaccessible metals in strawberries and further assess health risk based on bioaccessible metals. Moreover, the connections between soil parameters (e.g. soil pH, organic matter (OM), total and bioavailable metals) and metal transfer in soil-strawberry-human system still need to be systematically investigated as well. Considering that strawberries are extensively grown under plastic-shed conditions in China, a total of 18 paired plastic-shed soil (PSS) and strawberry samples were taken from the strawberry bases located in the Yangtze River Delta of China as a case study to assess accumulation status, migration and health risk of Cd, Cr, Cu, Ni, Pb, and Zn in the PSS-strawberry-human system. Overall, heavy application of organic fertilizers induced accumulation and contamination of Cd and Zn in PSS. In particular, 55.6% and 44.4% of PSS samples had considerable and moderate ecological risk caused by Cd, respectively. Despite no metal pollution in strawberry, PSS acidification mainly caused by high nitrogen input promoted Cd and Zn uptake by strawberry and enhanced bioaccessible concentrations of Cd, Cu, and Ni. In contrast, the increased soil OM caused by organic fertilizer application decreased Zn migration in PSS-strawberry-human system. Additionally, bioaccessible metals in strawberries induced limited non-cancer and cancer risk. To mitigate accumulation of Cd and Zn in PSS and metal transfer in the food chain, feasible fertilization strategies should be developed and carried out.

Abstract
In this work, the total content of seven metallic elements (Fe, Cu, Zn, Mg, Pb, Ni, and Co) in common edible herbs was determined and related to their bioaccessibility by an in vitro human digestion model. Specifically, the unified bioaccessibility protocol developed by the BioAccessibility Research Group of Europe (BARGE) was used to determine the release of each element during gastric and gastrointestinal digestion. The results show that Fe, Zn, and Mg are released during gastric digestion (34-57% Fe, 28-80% Zn, 79-95% Mg), but their overall bioaccessibility is reduced in the gastrointestinal tract (<30%). On the contrary, Cu is more bioaccessible during gastrointestinal digestion (38-60%). Pb, Ni, and Co exhibited similar bioaccessibility in both gastric and gastrointestinal fluids. Principle component analysis of the data shows that the classification of the nutritional value of herbs differs between the total and the gastrointestinal concentration, suggesting that the total concentration alone is not an adequate indicator for drawing secure conclusions concerning the nutritional benefits of edible plant species.

Abstract
Trace elements (TEs) are chemical compounds that naturally occur in the earth's crust and in living organisms at low concentrations. Anthropogenic activities can significantly increase the level of TEs in the environment and finally enter the food chain. Toxic TEs like cadmium, lead, arsenic, and mercury have no positive role in a biological system and can cause harmful effects on human health. Ingestion of contaminated food is a typical route of TEs intake by humans. Recent data about the occurrence of TEs in food available in the Mediterranean countries are considered in this review. Analytical methods are also discussed. Furthermore, a discussion of existing international agency regulations will be given. The risk associated with the dietary intake of TEs was estimated by considering consumer exposure and threshold values such as Benchmark dose lower confidence limit and provisional tolerable weekly intake established by the European Food Safety Authority and the Joint FAO/WHO Expert Committee on Food Additives, respectively. Finally, several remediation approaches to minimize TE contamination in foodstuffs were discussed including chemical, biological, biotechnological, and nanotechnological methods. The results of this study proved the occurrence of TEs contamination at high levels in vegetables and fish from some Mediterranean countries. Lead and cadmium are more abundant in foodstuffs than other toxic trace elements. Geographical variations in TE contamination of food crops clearly appear, with a greater risk in developing countries. There is still a need for the regular monitoring of these toxic element levels in food items to ensure consumer protection.

Abstract
Heavy metal pollution caused by a large number of abandoned industrial sites cannot be underestimated, but its human health risks have not been accurately assessed. This study investigated the pollution of heavy metals in soils of the typical abandoned industrial sites in southeastern China. Based on the bioaccessibility of different heavy metals (Pb, Ni, Cu, Zn, Cd, Cr) in the industrial soils, the human health risks were accurately evaluated, and the controlling factors were quantitatively assessed. The results showed that the heavy metals in each typical abandoned industrial sites had a high degree of spatial heterogeneity. Among them, Cd was the most susceptible to relevant discrete input from external factors such as human activities, followed by Zn, Pb, Cr, Ni and Cu. The bioaccessible concentration of heavy metals by the physiological-based extraction test (PBET) had a good correlation (R2 = 0.58 ∼ 0.86) with its bioavailable concentration by diethylenetriaminepentaacetic acid (DTPA) extraction. The regression model based on soil parameters had great potential to predict the bioaccessibility of heavy metals in abandoned industrial sites (R2 = 0.49 ∼ 0.95). The total concentration of heavy metals, Fe, soil texture and pH were the controlling factors of the metal bioaccessibility. Compared with the total concentration, the hazard index (HI) and carcinogenic risk (CR) values calculated based on gastrointestinal bioaccessibility were decreased by 39.0∼77.9% and 68.2∼79.9% in adults, and 45.3∼88.0% and 73.9∼83.5% in children, respectively. This work provides a feasible theoretical basis for reliable assessment of the human health risks of heavy metals in the abandoned industrial sites in the future.

Abstract
Bioavailability refers to a fraction of a substance that is potentially absorbed from the gastrointestinal tract and enters the systemic circulation (blood). This term is related to various substances, including minerals, that are present in a complex matrix of food which is consumed every day as natural products and pharmaceutical preparations, e.g., dietary supplements. The purpose of the study was to assess the bioavailability of Se from selected dietary supplements, with the simultaneous assessment of the effect the diet type (standard, basic and high-residue diets) has on relative bioavailability. The research included a two-stage in vitro model of digestion using cellulose dialysis tubes of the food rations with the addition of dietary supplements. Se was determined using the ICP-OES method. The bioavailability of Se from dietary supplements, in the presence of food matrix, was determined to be within the range of 19.31-66.10%. Sodium selenate was characterized by the highest value of this parameter, followed by organic forms and sodium selenite. The basic diet, characterized by moderate protein and high carbohydrate and fiber contents, positively influenced the bioavailability of Se. The bioavailability of Se was also influenced by the pharmaceutical form of the product-the highest was for tablets, followed by capsules and coated tablets.

Abstract
Ginger is a common spice in everyday diet. However, over time, it may absorb and accumulate heavy metal(loid)s (HMs) from the soil, posing a potential health risk to humans. In this study, we evaluated the pollution level, bioavailability, mobility evaluation, and health risk of Cr, Pb, Cd, and As in the soil-ginger system of five major ginger-producing cities in Shandong Province, China. Research indicated the concentrations of the Cr, Pb, Cd, and As in the soil were close to or even higher than background value, except Weifang. With the concentrations of Cr, Pb, Cd, and As in ginger being 0.08-0.47, 0.03-0.16, 0.002-0.03, and 0.006-0.028 mg/kg, the four HMs concentrations were within the limits of 0.1-0.5 mg/kg based on the Chinese health standard (GB2762-2017) of HMs in food. The bioavailability of HMs in soils was evaluated using diethylenetriaminepentaacetic acid (DTPA) and nitric acid (HNO3) extraction and the results showed that Pb and Cd have high bioavailability. Mobility evaluation of HMs from soil to ginger based on Pearson's correlation and the partial least squares-path method (PLS-PM) model showed that the soil's physicochemical properties influence the HMs migration process (especially Cd and Pb) in the soil-ginger system, and the PLS-PM model has good adaptability to Cd and Pb (gof > 0.5). The mean total carcinogenic risk (TCR) of bioaccessible gastric and intestinal HMs were 4.64 × 10-6 and 3.13 × 10-6, which were much lower than that of total HMs (2.60 × 10-5), indicating that existing models based on total HMs may overestimate the health risk of HMs. The bioaccessible concentrations should be considered to improve the accuracy of assessment results.

Abstract
The dermal exposure of heavy metals in contaminated urban soils poses huge environmental health risks globally. However, their dermal bioaccessibility and adverse effects on human skin cells were not fully understood. In this study, we measured the total and dermal bioaccessibility of Cr, As, Cd, Pb, and Cu in four selected urban soil samples from Kunming, Yunnan, China, and evaluated the cellular responses of these bioaccessible extracts on human keratinocytes (HaCaT). Among all the metals, only As in Soil-3 (S3) exceeded Chinese risk screening and Yunnan background values at 38.2 mg/kg. The average concentrations of Cr, As, Cd, Pb, and Cu in all soil samples were 47.79, 15.50, 3.11, 104.27, and 180.29 mg/kg respectively. Although relatively high concentrations of heavy metals were detected in soil samples, the highest dermal bioaccessibility of Cd was 3.57% with others' being lower than 1%. The bioaccessible dermal-absorbed doses (DADs) of Cr, As, Cd, Pb, and Cu from soils reflected acceptable health risks since all DADs were below the corresponding derived dermal reference values. However, the toxic data showed the extracts of S3 and S4 presented certain cytotoxicity in HaCaT cells, indicating the existing models based on dermal bioaccessibility and DADs may be not accurate enough to assess their human health risk. Taken together, the human health risk assessment should be modified by taking their skin cytotoxicity into account.

Abstract
The bioaccessible Hg fraction in fish and seafood commonly present in the Mediterranean diet was assessed through three distinct in vitro extraction schemes. Each extraction method provided different results, highlighting the lack of a universal methodology to estimate mercury (Hg) bioaccessibility in those matrices. Bioaccessible Hg fractions ranged from 10 to nearly 90% of total mercury (T-Hg) and increased in predator species (Swordfish - Xiphias gladius, Blue Shark - Prionace glauca and Tuna - Thunnus sp.). Among the three extractions tested, the Unified Bioaccessibility Method (UBM) provided the highest estimation of Hg bioaccessibility for consumers. The tested cooking procedures (frying, grilling and steaming) considerably reduced the bioaccessible fraction. Results indicate that bioaccessible Hg found in ingested fish and seafood is far below the levels set by the current safety risk assessment legislation. These findings highlight the importance of integrating bioaccessibility measurements in food safety legislation.

Abstract
Health risk of F in soil is of special concern due to the continuously elevated concentration of F in soil. However, there is still a dearth of risk assessments of F in soil based on in-vitro bioaccessibility posed by multiple exposure routes. Herein, the oral, inhalation, and dermal bioaccessibility of F in soil was firstly obtained by adapting and combining in-vitro methods, which then was introduced to remedy an information gap of a comprehensive risk of F in soil posed by a multi-exposure pathway. Combined in-vitro tests indicate the oral, inhalation, and dermal bioaccessibility of F was 13.15 ± 2.63%, 16.55 ± 2.63%, and 1.27 ± 0.73%, respectively. Plasma yielded a detoxic potential for the absorbed F after digesting in small intestine, while effects of enzymes, sweat, and food on the oral bioaccessibility of F were insignificant. Different with metals, the major dissolving phase of F was the interstitial fluid in the deep lung instead of in the alveolar macrophages intracellular environment. A potentially major release of F in the exocrine sweat was noted than in the apocrine sweat. Risk assessments based on the daily exposure incorporated with the in-vitro bioaccessibility suggested that compared with inhalation and dermal contact, oral ingestion was the main exposure route of F in soil to human. Present findings provide insights into the bioaccessibility and health risk of F in soil by multiple exposure routes, which are crucial for the risk control of F contamination in soil.

Natural phytochemicals absorption and metabolic process are mainly in the human gut. Simulating the absorption and metabolism of natural phytochemicals in vitro to predict the rate and degree of absorption of natural phytochemicals provides convenience for many researchers. However, in this process, many physiological factors <i>in vitro</i> are affected, such as stomach and intestinal juice composition, pH, intestinal transmission rate and so on. In recent years, the research methods have gradually improved to make these models more suitable for the natural phytochemicals absorption process, <i>in vitro</i> simulation models have become an essential means to study natural phytochemicals absorption. Therefore, this paper introduces the advantages and disadvantages of commonly used <i>in vitro</i> simulation models of natural phytochemicals absorption and metabolism, as well as briefly introduces the working principle of each model. To provide a theoretical basis for simulating natural phytochemicals absorption <i>in vitro</i> and development and utilization of natural phytochemicals.

Abstract
Bioaccessibility (the amount of a contaminant extracted by the gastrointestinal fluids during digestion) is often incorporated in the assessment of contaminated soils and foods. Current methods, including those published by the United States Environmental Protection Agency (US EPA) and United States Pharmacopoeia (USP), use a batch method of analysis which requires hours of extraction prior to instrumental analysis with inductively coupled plasma mass spectrometry (ICPMS). The continuous on-line leaching method (COLM) uses a more direct method of analysis as extracts are sent directly to the ICPMS instrument, which can reduce extraction time and give real-time elution kinetics. For this study, four reference soils (NIST 2710, NIST 2710a, NIST 2711a, and BGS 102) that are typically used with bioaccessibility methods were extracted using the COLM and US EPA and USP gastrointestinal fluids. With the transient time-resolved data from the COLM, differential elution indicating multiple Pb sources was observed in NIST 2710a, NIST 2711a, and BGS 102. Two methods for calculating the Pb isotope ratios to identify these sources included a point-by-point ratio average method and a more precise regression slope method. There was no statistically significant difference between the ratios obtained by these methods of calculation. Furthermore, NIST 2710a and NIST 2711a did not have any statistically significant difference between the Pb isotope ratios of two observed sources. BGS 102 had a significantly different secondary source of Pb, which was identified to be from Pb historically added to gasoline. Investigation into the regions these soil reference materials were sourced from supported this finding as BGS 102 comes from a more densely populated, industrialized area where soil contamination with Pb from gasoline is likely to be more prevalent. This type of bioaccessibility investigation is only possible with the COLM as it gives real time elution information. Incorporation of the COLM into future bioaccessibility studies (and inclusion of other elements for isotopic analysis, like Sr) will lead to more thorough and comprehensive bioaccessibility studies in the future.

Abstract
It is very important to consider the bio-accessibilities and concentrations of each arsenic species, not total arsenic, in seafood in order to accurately assess internal exposure level and health risk of arsenic from seafood. Herein, the concentrations and in vitro bio-accessibilities of each arsenic species in various fishes and shellfishes/shrimps were extensively investigated. Experimental results showed that arsenic species and contents in shellfishes/fishes remarkably varied with the difference of fish/shellfish species or individuals and sampling area, and arsenobetaine (AsB) is dominant arsenic species for fishes and shellfishes/shrimps. Different arsenic species in the same fish/shellfish have quite different bio-accessibilities, and the bio-accessibilities of each arsenic species also varied with fish/shellfish species or individuals. As3+ in fishes/shellfishes was partly oxidized to form As5+ during gastrointestinal digestion, and thus it is more reasonable and practicable to evaluate the bio-accessibilities of inorganic arsenic (iAs, total As3+ and As5+), not individual As3+ and As5+. Fishes and shellfishes/shrimps have similar bio-accessibilities of iAs, AsB and total arsenic, whereas have different bio-accessibilities of MMA (monomethylarsonic acid), DMA (dimethylarsinic acid), and two un-identified arsenic (Ui-As1 and Ui-As2). The results of this study provided a valuable knowledge for accurately assessing the health risk of arsenic in seafood.

Abstract
The objective of the present study was to investigate the bioavailability of aflatoxins (AFs) from fish, and chicken and rabbit livers using an in vitro dialyzability approach. Ultrahigh-performance liquid chromatography-tandem mass spectrometry (UHPLC-MS/MS) was used to assess the aflatoxin content in samples, as well as in dialyzate and residue fractions after the in vitro procedure. A vortex-assisted dispersive liquid-liquid microextraction (VALLME) technique was used for preconcentrating AFs before determination. Raw samples showed bioavailability ratios of 41-45% for aflatoxin B1 (AFB1), 28-38% for aflatoxin B2 (AFB2), and 42% for aflatoxin G2 (AFG2). Aflatoxin G1 (AFG1) was not detected. The culinary process (steaming or grilling) was found to change AFs' bioavailability (higher bioavailability ratios were found in cooked samples). AFB2 was found to be transformed into other compounds during the in vitro process, and the presence of AFB2 and AFB2 transformation/degradation products was investigated and confirmed by high-resolution mass spectrometry (HRMS).

Abstract
One of the main sources of potential chronic exposure to potentially toxic elements is household dust, especially in an environment with known point sources of PTE pollution. The literature review clearly shows that the total concentrations of an element in the environment do not provide information to predict its bioavailability. The aim of the present study was to evaluate the oral and inhalation bioaccessibility of PTE present in household dust in the small town of Idrija, the site of the former mercury mine. Unified bioaccessibility method was used to assess oral bioaccessibility of PTE in the stomach and intestine, while inhalation bioaccessibility was assessed by extraction of household dust samples with two synthetic extraction solutions-Gamble's solution (GS) and artificial lysosomal fluid (ALF). A low bioaccessibility of mercury was observed in all synthetic solutions (less than 3%). The highest bioaccessibility of PTE was observed in ALF solution, especially for Zn, Pb and Cd. Only a slightly lower bioaccessibility of these three elements was also observed in the stomach, while the bioaccessibility of other elements in the gastric phase was less than 40%. In general, the bioaccessibility of all elements decreased in the intestine. With the exception of Cr, the lowest bioaccessibility of the elements was observed in GS. Daily ingestion and inhalation doses of PTE from household dust were calculated and their values were below the available recommended or tolerable daily intakes of PTE from food according to the European Food Safety Authority.

Abstract
Selenium (Se) bioaccessibility in soil and crops from seleniferous areas is closely relevant to Se intake risks of local residents. The current in vitro digestion methods used for Se bioaccessibility evaluation are single and inconsistent, and most of them are only for food and neglect soil. In this study, 14 Se-contaminated soils and their corresponding crops in Naore Village (seleniferous area) were used as the research objects. Four in vitro digestion assays, including Solubility Bioaccessibility Research Consortium method (SBRC), physiologically-based extraction test (PBET), in vitro gastrointestinal method (IVG), and Unified Bioaccessibility Method (UBM) were used to determine the bioaccessible Se concentration in soil and edible parts of crops. Results showed that the Se in natural seleniferous soil mainly existed in relatively stable forms, i.e., residual and Fe-Mn oxide-bound Se (average of 80%). Only 10.6% of the total Se was distributed in water-soluble and exchangeable Se fractions. The Se content in crops was significantly positively correlated with the organic-bound and phosphate-extractable Se contents in the corresponding soil (p < 0.05). The organic-bound Se was clearly a potentially bioavailable Se source in soil. The Se bioaccessibility in soil and crops measured using the four in vitro methods in gastric/intestinal digestions were in the same order, which was PBET > UBM > SBRC > IVG. Similar to the absorption and utilization of soil Se fractions by crops, the water-soluble, organic-bound and exchangeable Se in soil were the main contributors of bioaccessible Se in the digestive juices in various in vitro methods. Furthermore, the bioaccessible Se in crops and soil measured via PBET method demonstrated the most significant correlation between the total Se in crops and the phosphate-extractable Se in soil. Therefore, the PBET method was the optimum in vitro method for the evaluation of Se bioaccessibility in crops and soil.

Abstract
Previous research has shown the absorption of polybrominated diphenyl ethers (PBDEs) in the human gastrointestinal tract, but limited attention has been given to the influence of nutrients on PBDE absorption from food matrices. We investigated the effects of nutrients (oil, starch, protein, and dietary fiber) on the absorption and transport of PBDEs in a Caco-2 cell model and bioaccessibility of PBDEs by an in vitro gastrointestinal digestion method. The results showed that the accumulation ratios of PBDE congeners in Caco-2 cells were higher in the nutrient addition groups (oil: 26.7-50.6%, starch: 27.0-58.7%, protein: 12.1-44.1%, and dietary fiber: 28.2-55.1%) than the control group (7.17-36.1%), whereas the transport ratios were lower (oil: 2.30-7.20%, starch: 1.55-9.15%, protein: 1.04-8.78%, and dietary fiber: 0.85-7.04%) than control group (3.78-11.1%). Additionally, the PBDE bioaccessibility could be increased by adding the nutrients, particularly oil and starch. This study clarified the differences in PBDE absorption in the presence of nutrients using the in vitro digestion and Caco-2 cell model. The findings showed that nutrients were an important factor that promoted PBDE absorption in the gastrointestinal tract. Therefore, it is important to focus on a novel dietary strategy of food consumption with contaminant compounds to protect human health.

Abstract
The bioaccessibility of some elements (As, B, Cd, Cu, Fe, Mn, Ni and Zn) in soils and vegetables was determined using the physiologically based extraction test. An investigation of the geochemical phases of soils through sequential extraction methods followed by ICP-MS detection was also undertaken. Samples were collected from Iskele, Begendikler and Yolbasi villages in the Bigadic region and Yildiz village in the Susurluk region of Balikesir province, Turkey. All of these villages are close to boron mines. Principal component analysis and correlation analysis demonstrated the interrelationship between the bioaccessibility values of these elements in the gastric and intestinal extracts of soils as well as the plant samples grown in those soils and the elements' concentrations in the different soil fractions. From the bioaccessible concentrations of the elements in the intestinal phases, it was shown that the amounts of As, B, Cu, Mn and Ni in some plant samples were higher than the recommended and tolerable values for human consumption. The bioaccessibilty of these elements in the soils and plants were statistically related with the concentrations of these elements in the labile phases of the soil. The methodology adopted here would be applicable to determining interactions between elements and soil fractions and the interrelationships between bioaccessibility data and soil fractions for any soil samples.

Abstract
BACKGROUND An in vitro physiologically relevant test based on the standard Unified Bioaccessibility Method (UBM) combined with inductively coupled plasma mass spectrometry was performed in this study to ascertain the elemental bioaccessibility pools of tape tea as emerging low-cost abuse drug under fasted conditions. METHODS Elemental quantification in tape tea and body fluid extracts was performed by an inductively coupled plasma quadrupole mass spectrometer - ICP-MS, and for sample preparation of the bioaccessibility extracts prior to ICP-MS analysis, a microwave-assisted acid decomposition was applied by using a microwave oven. The Unified Bioaccessibility Method (UBM) was considered for investigation of elemental bioaccessibility in tape tea, required a full set of organic compounds, salts, and enzymes. RESULTS Considering total element evaluation through ICP-MS, Co, Ni, Mn, and Zn are found at the highest concentrations in the sample, namely 415 ± 36, 202 ± 55, 1389 ± 225 and 2397 ± 197 μg L-1, respectively. Regarding the oral bioaccessibility test, after both gastric and gastrointestinal extractions Co, Ni, and Mn are fully bioaccessible while for Zn the bioaccessibility is ca. 66 %. CONCLUSION According to the first results in the literature proposed for these samples, the bioaccessibility results indicate an increment in day-to-day total element concentration and depending on the concentration of each element that an individual consumes in its usual diet, the total concentration can exceed the TDI. There are several possible toxic effects caused by the excess of Co, Ni and Mn, which might be expected by their high total concentrations.

Abstract
Cadmium (Cd) contamination in rice grain is common worldwide. This study investigated the effect of degree of milling (DM) on the reduction of Cd in cooked rice grain and porridge (rice-to-water ratios 1:1.6 and 1:10, respectively) and Cd in vitro bioaccessibility. Cd-contaminated rice grains with DMs of 20%, 15%, and 0% were cooked and then subjected to successive digestion in a gastrointestinal environment model. Simulated-digestion juices, including saliva, gastric juice, duodenal juice, and bile juice, were used. The degree of gelatinization of cooked rice was measured and the morphological characteristics of the grain were also examined. The results showed that the Cd in vitro bioaccessibility, although less than 50% in all samples, was gradually increased with an increase of DM. The detected Cd bioaccessibility was higher at half meals (reduced grain content) when compared with full meals (full grain content). As DM increased, the surface of cooked rice grain and porridge became smoother, and the amount of fiber, fat droplets, and starch granules were gradually decreased, whereas degree of gelatinization increased. The results indicate that DM affects the Cd in vitro bioaccessibility in cooked rice by altering the gelatinization of starch. PRACTICAL APPLICATION: Degree of milling (DM) significantly influenced the in vitro bioaccessibility of cadmium (Cd) in cooked rice. This work may offer a potential solution to the rice grain with high Cd content because a limited DM will allow a low bioaccessibility of Cd.

Abstract
Bioaccessibility study is of great significance to the health risk assessment of trace elements in the seafood. In this work, the most consumed crab (Portunus trituberculatus) in coastal area of Shandong, China was analyzed to study the distribution and the bioaccessibility of cadmium (Cd) in the edible tissues of crab, and the dietary risk from consumption of crab was also evaluated. Results showed that the content of Cd in the whole edible tissues of 109 crab specimens ranged from 0.052 to 8.89 mg/kg ww (wet weight) with mean of 2.26 mg/kg ww. The Cd content in 85% of the crab samples was higher than the national food safety limits (0.5 mg/kg ww) of China. The gender study indicated that there was no significant difference in Cd content in total edible tissues between the males and females (p > 0.05). Cadmium was highly concentrated in the brown meat with mean value of 4.13 mg/kg ww, which was about 5 times higher than that in the white meat (0.75 mg/kg ww). The bioaccessibility of Cd ranged from 48.1 to 71.0% in the white and brown meat. The risk assessment based on the bioaccessibility of Cd revealed that the consumption of the edible crab brown and white meat for adults should be limited in 0.13 kg and 1.56 kg per week respectively.

Abstract
A fast and straightforward sample preparation procedure of the dialyzable fraction of infusions of teas prior to their analysis on Al, Ba, Ca, Cu, Fe, Mg, Mn, Ni, Sr, and Zn contents by flame atomic absorption spectrometry (FAAS) and inductively coupled plasma optical emission spectrometry (ICP OES) was developed and validated. The proposed methodology was based on acidification with HNO3 only and demonstrated good analytical performance, i.e., precision (0.80-5.0%), accuracy (< 5%), recoveries of elements (97.4-105%), and their detection limits (0.075-1.1 μg L-1) along with linearity of calibration curves in the whole studied concentration ranges. Applicability of the evaluated procedure, being a useful alternative to time-consuming wet digestions, was tested by determining bioaccessibility of elements in 20 infusions of black (BT) and green (GT) teas as assessed with the aid of in vitro gastrointestinal digestion. Average contributions of bioaccessible fractions (%) of studied metals were as follows: 1.18 (Al)-40.7% (Ca) and 4.65% (Al)-46.3% (Ca) for BTs and GTs, respectively. Drinking daily four cups (1 L) of tea, recommended dietary intakes (RDIs) of Ca, Cu, Fe, Mg, and Zn were covered to a small degree (< 1.5%). Only bioaccessibility of Mn highly contributed to RDI for this metal. According to provisional tolerable weekly intakes (PTWIs) for toxic elements such as Al and Ni, consumption of both types of teas should not represent any health risk. Additionally, analysis of variance of results clearly indicated that BTs and GTs were mostly differentiated due to concentrations of the bioaccessible fraction of Al, Ba, Cu, and Ni.

Abstract
Fucus spiralis is an edible brown seaweed (SW) found in the Portuguese Coast. It has been reported to have high antioxidant activity, which may elicit a potential use for the food industry. However, little information is available on how the SW behaves during the digestive process and how the freeze-drying process might affect the bioaccessibility of the different compounds. Therefore, antioxidant activity, total polyphenols, lipid, and fatty acid contents were measured before and after in vitro simulation of the human digestive process, both in fresh and freeze-dry SW. F. spiralis had a lipid content of 3.49 ± 0.3% of dry weight (DW), which is a usual amount described for this SW genus. The total lipid bioaccessibility was 12.1 ± 0.1%. The major omega-3 fatty acid detected was eicosapentaenoic acid, 7.5 ± 0.1%, with a bioaccessibility percentage of 13.0 ± 1.0%. Four different methods—total phenolic content (TPC), ferric reducing antioxidant power (FRAP), oxygen radical absorbance capacity (ORAC), and 1,1-diphenyl-2-picryl-hydrazyl (DPPH)—were used to assess the antioxidant activity of F. spiralis. The bioaccessibility of the antioxidants studied, ranged between 42.7% and 59.5%, except the bioaccessibility of polyphenols in freeze-dried SW (23.0% ± 1.0%), suggesting that the freeze-drying process reduces the bioaccessibility of these compounds.

Abstract
This work proposes a simple and easy-to-use flow-through system for the implementation of dynamic extractions, aiming at the evaluation of bioaccessible zinc and the characterization of leaching kinetics in dry dog food samples. The kinetic profile of Zn extraction was determined by flame atomic absorption spectroscopy and the results were fitted in an exponential function (R2 > 0.960) compatible with a two first-order reactions model. Values of fast leachable Zn ranged from 83 ± 1 to 313 ± 5 mg of Zn per kg of sample, with associated rate constants ranging from 0.162 ± 0.004 to 0.290 ± 0.014 min−1. Similar results were observed compared to the static batch extraction. The percentage of bioaccessible Zn ranged from 49.0 to 70.0%, with an average value of 58.2% in relation to total Zn content. Principal component analysis regarding the variables fast leachable Zn, associated rate constant, total Zn, and market segment, has shown that 84.6% of variance is explained by two components, where the second component (24.0%) presented loadings only for the fast leachable Zn and associated rate constant. The proposed method is suitable for the fast evaluation (<1 h) of leaching kinetics and bioaccessibility in dry dog food.

Abstract
Urban parks and schools sever as the mainly activity areas for children, but risk assessment posed by heavy metals (HMs) from soil and dust in these area has rarely been investigated. In this study, six urban parks and seven schools in Jiaozuo, China, were taken as research objects to understand the contamination level and bioaccessibility of HMs from soil and dust in urban parks and schools. The results indicated that Zn, Cu, Pb, Cd, As, Ni and Co from soil and dust were above the background values, especially Zn and Cd in dust, and As and Cd in soil. Serious Cd pollution was discovered, and respective Cd concentrations in soil and dust were 17.83 and 7.52 times the background value. Additionally, the average concentration and bioaccessibility of Zn, Mn, Pb, Cd, Cr, Ni and Co in dust were both higher than in soil. High concentration and high bioaccessibility of HMs in dust suggested that HMs contamination were serious and universal in Jiaozuo. The concentrations of most HMs were higher in the gastric phase, except for Cu and Cd which remained higher in the intestinal phase. Both in the gastric phase and intestinal phase, Mn, As and Cd in soil and dust both have high bioaccessibility which all exceed 10%. The carcinogenic and non-carcinogenic risks base on the total HMs for children (soil: 7.93, 1.96E-05; dust: 6.44, 3.58E-05) were greater than those for adults (soil: 6.35E-01, 1.32E-05; dust: 5.06E-01, 2.42E-05), and urban parks and schools posed high potential risk for children. Therefore, assessment the risk posed by HMs contamination of soil and dust in urban parks and schools is vital and urgent for children.

Abstract
The Caco-2 cell line is derived from a human colon adenocarcinoma and is generally used in toxicity assays. The ingestion of soil or dust is a significant route of human exposure to potential harmful elements (PHE), and assays of bioaccessibility or bioavailability can be used to measure the potential hazard posed by exposure to toxic substances. The in vitro digestion (UBM method) and Caco-2 cell model were used to investigate the bioaccessibility and absorption by intestinal cells of the PHE in four matrices (two urban soils and two soils with lead (Pb)-mining tailings) along with the guidance material for bioaccessibility measurements, BGS 102. The gastrointestinal (GI) compartment was simulated, and the resulting material added to Caco-2 cells. In the GI, the average bioaccessibility was 24% for cadmium (Cd), 17% for copper (Cu), 0.2% for Pb, 44% for manganese (Mn) and 6% for zinc (Zn). The poor reproducibility was attributed to the pH (6.3) and the highly complex GI fluid that formed PHE precipitates and complexes. In 2 h, Caco-2 cells absorbed 0.2 ng mg-1 of cellular protein for Cd, 13.4 ng mg-1 for Cu, 5 ng mg-1 for Mn and 31.7 µg mg-1 for Zn. Lead absorption was lower than the limit of quantification (< 2 µg L-1). Cd was presented in the cell monolayer and could interfere in the intracellular accumulation of Cu, Mn and Zn. The use of in vitro assays allowed for an estimation of the absorption of Cd, Cu, Mn and Zn from environmental matrices to be made, and except for Mn, it had a positive correlation with bioaccessible concentration, suggesting a common association of these elements in the cellular environment.

Abstract
Decades of study indicate that copper oral exposures are typically not a human health concern. Ingesting high levels of soluble copper salts can cause acute gastrointestinal symptoms and, in uncommon cases, liver toxicity in susceptible individuals with repeated exposure. This focused toxicological review evaluated the current literature since the last comprehensive reviews (2007-2010). Our review identified limitations in the existing United States and international guidance for determining an oral reference dose (RfD) for essential metals like copper. Instead, an alternative method using categorical regression analysis to develop an optimal dose that considers deficiency, toxicity, and integrates information from human and animal studies was reviewed for interpreting an oral RfD for copper. We also considered subchronic or chronic toxicity from genetic susceptibility to copper dysregulation leading to rare occurrences of liver and other organ toxicity with elevated copper exposure. Based on this approach, an oral RfD of 0.04 mg Cu/kg/day would be protective of acute or chronic toxicity in adults and children. This RfD is also protective for possible genetic susceptibility to elevated copper exposure and allows for background dietary exposures. This dose is not intended to be protective of patients with rare genetic disorders for copper sensitivity within typical nutritional intake ranges, nor is it protective for those with excessive supplement intake. Less soluble mineral forms of copper in soil have reduced bioavailability as compared with more soluble copper in water and diet, which should be considered in using this RfD for risk assessments of copper.

Abstract
Arsenic is a ubiquitous metalloid in the biosphere, and its origin can be either geogenic or anthropic. Four oxidation states (-3, 0, +3 and + 5) characterize organic and inorganic As- compounds. Although arsenic is reportedly a toxicant, its harmful effects are closely related to its chemical form: inorganic compounds are most toxic, followed by organic ones and finally by arsine gas. Although drinking water is the primary source of arsenic exposure to humans, the metalloid enters the food chain through its uptake by crops, the extent of which is tightly dependent on its phytoavailability. Arsenate is taken up by roots via phosphate carriers, while arsenite is taken up by a subclass of aquaporins (NIP), some of which involved in silicon (Si) transport. NIP and Si transporters are also involved in the uptake of methylated forms of As. Once taken up, its distribution is regulated by the same type of transporters albeit with mobility efficiencies depending on As forms and its accumulation generally occurs in the following decreasing order: roots > stems > leaves > fruits (seeds). Besides providing a survey on the uptake and transport mechanisms in higher plants, this review reports on measures able to reducing plant uptake and the ensuing transfer into edible parts. On the one hand, these measures include a variety of plant-based approaches including breeding, genetic engineering of transport systems, graft/rootstock combinations, and mycorrhization. On the other hand, they include agronomic practices with a particular focus on the use of inorganic and organic amendments, treatment of irrigation water, and fertilization.

Abstract
Fish consumption is considered to be a major human exposure route for mercury (Hg), but assessing the actual Hg bioavailability from consumed fish is challenging. In this study, we conducted both in vivo bioavailability (using a mouse model) and in vitro bioaccessibility (using various gastrointestinal digestion methods) assessments of Hg from consumed fish. Lyophilized fish muscles which already absorbed Hg through natural incorporation were introduced to mice by active feeding. Assimilation efficiency (AE) was measured as a short-term kinetic parameter, while a 7-day accumulation of Hg in mice blood, liver and kidney was determined. The AEs of Hg in mice ranged between 82 and 96% and showed a positive relationship with MeHg in fish independent of the fish species. For long-term bioavailability tests in which the Hg retention in organs was measured after a 7-day exposure, most Hg was found to be accumulated in liver and kidney, resulting in a strong correlation between Hg dosage and accumulation in mice organs. The long-term absolute bioavailability of mice was comparable between the liver and kidney, but much lower in the blood. The calculated absolute total Hg bioavailability ranged between 38% and 99% and decreased as the Hg dosage increased. Results of bioaccessibility tests varied considerably among different methods, illustrating that there were limitations for the in vitro bioaccessibility assay to predict the digestive dynamics of Hg in mammalian gastrointestinal tract. Our study strongly demonstrated the expediency of direct determination of Hg bioavailability, but more bioaccessibility assessments should be explored and optimized as an alternative to traditional animal experimentation.

Abstract
This work presents results for the profiling of eight essential elements (Co, Cu, Ni, V, Mo, Mn, Zn and Cr) in aqueous and enzymatic extracts of eight anti-diabetic medicinal plants, used by Traditional Medicine Practitioners from Nyamira County, Kenya determined by ICP-MS. The plants used in the study were Solanum indicum, Plectranthus barbatus, Ultrica dioica, Bidens pilosa, Solanum mauense, Clerodendrum myricoides, Carissa edulis and Aloe vera. A sequential filtration procedure was applied to fractionate the elemental contents of the obtained aqueous extracts into molecular size fractions. The results indicate that the low molecular size species (<3 kDa) were predominant for Mo, Zn, Ni, Co, Mn and Cu, while the moderately large species (10 kDa-0.45 μm) of V were predominant in most of the medicinal plant extracts. In addition enzymatic extraction was compared to aqueous extraction to study the effect of the gastric and intestinal conditions on the release of selected elements from the plants. The amount of the elements extracted by the gastric phase enzymes was higher than the amount extracted by the intestinal phase enzymes. In general, the determined elemental amounts of enzymatic extractions were higher than those of corresponding water extractions for 70% of the elements studied.

Abstract
The present systematic review synthesizes the diverse documentation of research on the occurrence of arsenic in soil-water systems and the human and animal bio-availability scenarios related to food chain contamination by arsenic. Humans and animals may drink arsenic-contaminated groundwater in addition to consuming foods that have been grown in arsenic-contaminated groundwater and soils. Rice grain is a potential arsenic carrier and the staple food in many parts of the world, particularly in Southeast Asian countries. Data have been summarized from 183 articles describing different aspects of arsenic flow in the food chain, that is, the soil-water-rice-human system and the water-crops-animals system and the bio-availability of arsenic to humans and animals. The phyto-availability of arsenic depends on the physicochemical and biological conditions of soil and water. In humans, the bio-accessibility of inorganic arsenic is 63-99%. Arsenic is more bio-available from rice than from other foods: different food materials differ in bio-accessible potential. Additionally, the review identifies trends in research on arsenic contamination and food chain flow considering arsenic species, toxicity assessment, and bio-accessibility studies. This systematic review provides a comprehensive assessment of the documented evidence to be used to guide future research on arsenic availability for the rice plant and subsequent availability to humans from cooked rice that can determine arsenic toxicity. The review also highlights how the focus of research on arsenic as a pollutant has changed in the past decades.

Abstract
Humans are frequently exposed to the residues of various neonicotinoids, highlighting the need to understand human exposure through oral ingestion of contaminated foods. In this study, the effects of different food matrices (tomato, cucumber, and carrot) and their interaction with dietary component additives, including proteins and dietary fiber, was investigated. The results showed that the presence of a food matrix had a significant effect on the bioaccessibility of neonicotinoids (imidacloprid, thiamethoxam, acetamiprid, and thiacloprid) in both the gastric and intestinal environments. Neonicotinoids in tomato presented relatively low bioaccessibility, indicating that the daily intake of the tomato can be regarded as being relatively safer. Moreover, the addition of protein or dietary fiber to fruit and vegetables had a marked influence on neonicotinoid bioaccessibility and the effects varied between the different matrices. In particular, the addition of 2.0% dietary fiber significantly reduced the bioaccessibility (18.38-67.91%). Therefore, we recommend that consuming an increased intake of dietary fiber could improve the safety of fruit and vegetables in daily life. The present results can support the identification of suitable food intake conditions for the significant reduction of pesticide residue levels.

Abstract
In this study, we investigated the levels of 12 priority polycyclic aromatic hydrocarbons (PAH12) pollutants, bioaccessible PAH12, and sorption sink for PAH12 by a silicone sheet of indoor dust samples, which were collected from teachers' offices (n = 17), students' offices (n = 17), laboratory (n = 11), and experimental center (n = 9), using an in vitro digestive model. In PAH12, bioaccessible PAH12, and sorption sink PAH12, benzo[b]fluoranthene (BbF), phenanthrenes (Phe), and fluoranthene (FLA) were labeled respectively the most significant PAHs (6.61 ± 4.42 μg/g, 0.16 ± 0.11 μg/g, and 0.08 ± 0.06 μg/g) after indoor dust ingestion, whereas the proportions of anthracene (Ant), benzo(g,h,i)perylene (BghiP), and BghiP (0.34 ± 0.17, 0.03 ± 0.03 and 0.01 ± 0.01 μg/g) were low. Based on benzo[a]pyrene- equivalent carcinogenic concentrations, the mean daily exposure of bioaccessible PAH12 and sorption sink for PAH12 by indoor dust ingestion was 4.07 × 10-3 ± 1.73 × 10-3 and 3.23 × 10-3 ± 1.36 × 10-3 μg/day in the experimental center; 4.01 × 10-3 ± 2.05 × 10-3 and 1.46 × 10-3 ± 6.72 × 10-4 μg/day in students' offices; 8.25 × 10-4 ± 2.33 × 10-4 and 5.15 × 10-4 ± 1.37 × 10-4 μg/day in laboratory; and 7.05 × 10-4 ± 4.12 × 10-5 and 2.82 × 10-4 ± 4.36 × 10-5 μg/day in teachers' offices, respectively. Our results indicated that the passive transfer fraction of PAH12 (44.07%-67.36% in this case) is therefore large and needs to be considered in exposure and risk assessments.

Abstract
Iron deficiency is the most common form of malnutrition. Factors responsible for this so-called "hidden hunger" include poor diet, increased micronutrient needs and health problems such as diseases and infections. Body iron status can be increased by the intake of dietary supplements and fortified food. The aim of the present study was to compare iron bioaccessibility from commercial nutritional supplements and iron microcapsules. A comparison study was performed under conditions mimicking gastric and gastrointestinal digestion. A preparation of encapsulated ferrous sulphate or lactate and vitamin C, in a formula, showed bioaccessibility factors of up to 100% when digested individually, and around 60% in the presence of a food matrix. The degree of oxidation of the ferrous ions differed, depending on the type of preparation, the presence of vitamin C and the food matrix. The highest percentage content of ferrous ion, in the soluble fractions after gastrointestinal digestion, was shown by the preparation containing microencapsulated ferrous lactate or ferrous sulphate and vitamin C. Encapsulation seems to limit the interaction of iron with the food matrix and protect it against oxidation, thus making it more accessible for intestinal uptake.

Abstract
Rice is the most widely consumed staple food for a large part of the world's human population, and owing to environmental pollution, it is a major source of human exposure to mercury (Hg) and arsenic (As). We evaluated the impact of cooking on the speciation and bioaccessibility of Hg and As from rice in this study. Results show that the dominant Hg and As species in rice from Guangzhou market in China were their inorganic forms (iHg and iAs), respectively. The cooking process modified the levels of Hg and As. Average Hg and As bioaccessibility in raw rice was 69.74 and 80.32%, respectively. Hg bioaccessibility decreased to 46.22 and 42.37% for pressure- and ordinary-cooked rice, respectively. In contrast, As bioaccessibility remained unchanged except after cooking with a large amount of water. Protein denaturation and the amount of soluble and volatile forms determine the bioaccessibility of Hg and As in cooked rice by being released into the cooking water or into the air. From the bioaccessibility data, the average established daily intake (EDI) values of Hg and As from pressure-cooked rice for children and adults were 0.034 and 0.025 μg kg-1 day-1 (Hg), and 0.735 and 0.559 μg kg-1 day-1 (As), respectively. This study provides novel insights into Hg and As exposure due to rice cooking.

Abstract
The release of a toxicant from a food matrix during the gastrointestinal digestion is a crucial determinant of the toxicant's oral bioavailability. We present a modified setup of the human simulator of the gut microbial ecosystem (SHIME), with four sequential gastrointestinal reactors (oral, stomach, small intestine, and colon), including the salivary and colonic microbiomes. Naturally arsenic-containing rice, mussels, and nori seaweed were digested in the presence of microorganisms and in vitro oral bioaccessibility, bioavailability, and metabolism of arsenic species were evaluated following analysis by using HPLC/mass spectrometry. When food matrices were digested with salivary bacteria, the soluble arsenic in the gastric digestion stage increased for mussel and nori samples, but no coincidence impact was found in the small intestinal and colonic digestion stages. However, the simulated small intestinal absorption of arsenic was increased in all food matrices (1.2-2.7 fold higher) following digestion with salivary microorganisms. No significant transformation of the arsenic species occurred except for the arsenosugars present in mussels and nori. In those samples, conversions between the oxo arsenosugars were observed in the small intestinal digestion stage whereupon the thioxo analogs became major metabolites. These results expand our knowledge on the likely metabolism and oral bioavailabiltiy of arsenic during human digestion, and provide valuable information for future risk assessments of dietary arsenic.

Abstract
Selenium (Se) is an indispensable microelement in our diet and health issues resulting from deficiencies are well documented. Se-containing food supplements are available on the market including Se-enriched Chlorella vulgaris (Se-Chlorella) which accumulates Se in the form of Se-amino acids (Se-AAs). Despite its popular uses, data about the bioaccessibility of Se-AAs from Se-Chlorella are completely missing. In the present study, gastrointestinal digestion times were optimized and the in vitro bioaccessibility of Se-AAs in Se-Chlorella, Se-yeast, a commercially available Se-enriched food supplement (Se-supplement) and Se rich foods (Se-foods) were compared. Higher bioaccessibility was found in Se-Chlorella (∼49%) as compared to Se-yeast (∼21%), Se-supplement (∼32%) and Se-foods. The methods used in production of Se-Chlorella biomass were also investigated. We found that disintegration increased bioaccessibility whereas the drying process had no effect. Similarly, temperature treatment by microwave oven also increased bioaccessibility whereas boiling water did not.
