Abstract
The sensory characteristics of poultry products are crucial in defining their quality and widely influence consumer choices. Even though the scientific literature clearly indicates that for muscle foods the sensory profile is relevant in purchase decisions and overall acceptability, sensory evaluation has often been underestimated and considered complementary to instrumental and/or chemical assessments. Sensory analysis includes different types of validated tests (discriminative, descriptive, and affective), applied depending on the purpose of the research study, requiring special attention in the sample preparation phase, in particular for nonhomogeneous products such as poultry meat, requiring reproducible cutting, cooking and presentation to the tasters. The aim of this paper is to review, critically assess and discuss sensory methods, standardized procedures and sample preparation tailored for chicken meat, through the literature from 2000 to 2023, with a section dedicated to ethical aspects that must be carefully considered when designing a sensory protocol. The target readers are both the research and the business communities, as the information can be widely applied for quality control, to develop new food products, to understand or drive preferences or, for example, to assess potential sensory differences among chickens fed with different diets. To the best of the authors' knowledge, this review represents a useful first guide for those approaching the sensory analysis of chicken meat.

Abstract
Heat stress (HS) causes oxidative damage and abnormal metabolism of muscle, thus impairing the meat quality in broilers. Selenium is an indispensable element for enhancing antioxidant systems. In our previous study, we synthesized a novel type of biogenic selenium nanoparticles synthesized with alginate oligosaccharides (SeNPs-AOS), and found that the particle size of Se is 80 nm and the Se content is 8% in the SeNPs-AOS; and dietary 5 mg/kg SeNPs-AOS has been shown to be effective against HS in broilers. However, whether SeNPs-AOS can mitigate HS-induced the impairment of thigh muscle quality in broilers is still unclear. Therefore, the purpose of this study was to investigate the protective effects of dietary SeNPs-AOS on meat quality, antioxidant capacity, and metabolomics of thigh muscle in broilers under HS. A total of 192 twenty-one-day-old Arbor Acres broilers were randomly divided into 4 groups with 6 replicates per group (8 broilers per replicate) according to a 2 × 2 experimental design: thermoneutral group (TN, broilers raised under 23±1.5°C); TN+SeNPs-AOS group (TN group supplemented 5 mg/kg SeNPS-AOS); HS group (broilers raised under 33 ± 2°C for 10 h/d); and HS + SeNPs-AOS group (HS group supplemented 5 mg/kg SeNPS-AOS). The results showed that HS increased the freezing loss, cooking loss, and malondialdehyde (MDA) content of thigh muscle, whereas decreased the total superoxide dismutase (T-SOD), glutathione peroxidase (GSH-Px), and catalase (CAT) activities, as well as downregulated the mRNA expression of SOD2, CAT, GPX3, nuclear factor erythroid 2-related factor 2 (Nrf2), selenoprotein S (SELENOS), solute carrier family 7 member 11 (SLC7A11), GPX4, and ferroportin 1 (Fpn1) of thigh muscle (P < 0.05). Dietary SeNPS-AOS reduced the b* value, elevated the pH0min value and the activities of T-SOD, GSH-Px, glutathione S-transferase (GST) and the mRNA expression levels of GSTT1, GSTA3, GPX1, GPX3, ferritin heavy polypeptide-1 (FTH1), and Fpn1 of thigh muscle in broilers under HS (P < 0.05). Nontargeted metabolomics analysis identified a total of 79 metabolites with significant differences among the four groups, and the differential metabolites were mainly enriched in 8 metabolic pathways including glutathione metabolism and ferroptosis (P < 0.05). In summary, dietary 5 mg/kg SeNPs-AOS (Se content of 8%) could alleviate HS-induced impairment of meat quality by improving the oxidative damage, metabolic disorders and ferroptosis of thigh muscle in broilers challenged with HS. Suggesting that the SeNPs-AOS may be used as a novel nano-modifier for meat quality in broilers raised in thermal environment.

Abstract
Moringa oleifera addition to animal diets can improve the growth performance, intestinal health, and immunity of animals, without adverse effects. We investigated the effects of Moringa oleifera on the growth performance, meat quality, and intestinal health of broilers. Moringa oleifera and fermented Moringa oleifera could improve the flesh color and breast muscle tenderness of broilers (p < 0.05). The contents of essential amino acids, unsaturated fatty acids, ΣMUFA, P/S and n-3 ratio in breast muscle of broilers were dose-increased, and the effect of fermented Moringa oleifera was better. Moringa oleifera and fermented Moringa oleifera regulated chicken flavor metabolism by increasing the relative abundance and Short-chain fatty acid (SCFA) contents of Bacteroides, Spirillum, and lactic acid bacteria. Overall, supplementation with 1 % fermented Moringa oleifera can significantly increase essential amino acid and unsaturated fatty acid contents in broilers and participate in the synthesis and transformation of amino acids and fatty acids regulated by beneficial bacteria.

Abstract
This study was conducted to examine the effects of a diet formulated with industrial amino acids and a commercial vitamin-mineral mixture on the characteristics of carcass and meat cuts of slow-growing broilers slaughtered at different ages. The experiment involved 600 one-day-old male and female white Naked Neck chicks. The chicks were allotted randomly to a 2 × 3 factorial arrangement consisting of two diets and three slaughter ages, in a completely randomized experimental design with five replicates of 20 birds each. The experimental period was 84 days. Six chicks were selected and slaughtered on the first day, and then at 56, 70 and 84 days of age 10 birds unit was selected and slaughtered per experimental period. Weight and yield of carcass, abdominal fat and breast, thigh and drumstick meat were determined. Additionally, moisture, protein, fat and mineral matter contents and protein and fat deposition in the breast, drumstick and thigh muscles were determined. The diet did not influence the yields of carcass, abdominal fat, or meat cuts or the nutritional composition of meat. Slaughter age influenced the yields of breast and thigh meat and abdominal fat; the protein content of breast meat; and the moisture, crude protein, fat, and mineral matter contents of drumstick and thigh meat. There was an interaction effect between diet and slaughter age for protein deposition in breast meat. The age factor influenced fat deposition in the drumstick muscles. Protein deposition in the thigh muscles was influenced by the diet. Moreover, a difference was observed between the ages for protein and fat deposition in the thigh muscle. In conclusion, the use of a commercial mixture in the diet results in decreased protein deposition in the breast and thigh muscles, although this difference does not affect the characteristics of carcass or meat cuts. Birds slaughtered at 70 days exhibit similar carcass characteristics to those of birds slaughtered at 84 days, indicating the possibility of an earlier slaughter age.

Abstract
1. Killing male one-day-old chicks, especially from layer lines, is banned in some European countries. Therefore, dual-purpose chickens, where each sex is used for meat and egg production, respectively, offer an alternative production solution. This study evaluated the British purebred breed Ixworth as a dual-purpose chicken for meat and egg production.2. Ixworth chicks (n = 167) were hatched and reared mixed-sex in a floor housing system, with two groups receiving a commercial pullet diet (treatment 1) and two groups receiving a diet composed for males of layer lines (treatment 2). Individual chick performance data were recorded. Males were slaughtered at 12 weeks of age, and their growth rate and carcase variables were analysed. All hens were continuously reared on the pullet diet and kept in a free-range system from 20 weeks old for one laying period (52 weeks). In addition, group-based feed consumption and mortality were recorded.3. Cockerels in treatment 1 and 2 showed significantly different [T(88) = -2.846, P = 0.003] growth rates (25.3 vs. 27.4 g/day) and average final weights (2166 g vs. 2344 g). The hens in treatment 1 (n = 41) laid an average of 193 eggs per hen housed (mean egg weight: 56.9 g), whereas those in treatment 2 (n = 35) laid 195 eggs per hen housed (mean egg weight: 56.5 g). Nest acceptance was >97.5% and feed consumption was up to 140 g/bird/day.4. The results showed that the Ixworth may be a suitable breed for dual-purpose use and could be improved through selective breeding, offering potential for preservation of this local breed as well as general biodiversity in poultry farming.

Abstract
Improving animal welfare is a prerequisite for the societal acceptance of poultry production. Support for improvements requires practical tools to quantify animal welfare and identify predispositions at the individual level, where possible. In this study, the activities and behavior of dual-purpose chickens (N = 245) and commercial breeders (N = 224) were analyzed. The general locomotor activity (GLA) data were collected using an RFID system over five days with 9-to-14-week-old animals. The results show that the animals of comparable age and stocking density differed from each other in their activity (p ≤ 0.001) according to breed, but no sex differences were observed (p = 0.159). No correlations were found between GLA and plumage condition (p > 0.05). The individual variations within the breeds are presented and discussed on an animal-by-animal level, providing new insights into the individual behavioral variability of chickens. The RFID systems can reliably generate GLA data that help to understand the potential interplay between behavior and animal welfare. The technology is also suitable for creating individual (personality) profiles that can be used for breeding. With a better understanding of the role of activity, husbandry and management practices can be adapted to improve animal welfare.

Abstract
Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Abstract
Alternatives to conventional chicken meat and egg production are increasingly under discussion, especially because of the common practice of killing male day-old chicks from laying lines which has been banned from the beginning of 2022 in Germany and is planned to be banned during 2022 in other countries. Production of dual-purpose chicken lines is one possible solution, as such lines combine moderate laying and growth performance. The microbiological status of products from such breeds must be comparable to existing products on the market for food safety purposes. Additionally, the production of such products will take longer because of the feeding regimes required, and again, comparability should be safeguarded for the best consumer protection. The dual-purpose chicken line, Lohmann Dual (males), was compared to males from the laying line Lohmann Brown Plus, conventional laying hens (all slaughtered and processed in the same conventional laying hen abattoir), and conventional broilers (slaughtered in a conventional broiler abattoir). Neck skin samples were taken before chilling at the end of each slaughter line to determine the microbial status of the carcasses. Additionally, fresh and cooked meat sensory analysis was performed on meat from broilers and male and female Lohmann Dual and Lohmann Brown Plus chickens (for three carcasses of each group) at the German Agricultural Society Test Center in Kassel. The focus was on the performance of male Lohmann Dual compared to the other lines. There was no difference in the Enterobacteriaceae count of the dual-purpose chicken line compared to conventional broilers, whereas laying hens had a significantly higher microbial load before chilling, as based on neck skin examinations (p<0.001). According to sensory test results, the meat from dual-purpose chickens was the best (as no defects were found) among the five chicken meat types examined. In conclusion, based on their microbial status and sensory analysis of fresh and cooked meat, Lohmann Dual males slaughtered in a laying hen abattoir can be considered as an alternative to conventionally kept broilers slaughtered in a broiler abattoir.

Abstract
The present research aims to develop a carcass quality characterization methodology for minority chicken populations. The clustering patterns described across local chicken genotypes by the meat cuts from the carcass were evaluated via a comprehensive meta-analysis of ninety-one research documents published over the last 20 years. These documents characterized the meat quality of native chicken breeds. After the evaluation of their contents, thirty-nine variables were identified. Variables were sorted into eight clusters as follows; weight-related traits, water-holding capacity, colour-related traits, histological properties, texture-related traits, pH, content of flavour-related nucleotides, and gross nutrients. Multicollinearity analyses (VIF ≤ 5) were run to discard redundancies. Chicken sex, firmness, chewiness, L* meat 72 h post-mortem, a* meat 72 h post-mortem, b* meat 72 h post-mortem, and pH 72 h post-mortem were deemed redundant and discarded from the study. Data-mining chi-squared automatic interaction detection (CHAID)-based algorithms were used to develop a decision-tree-validated tool. Certain variables such as carcass/cut weight, pH, carcass yield, slaughter age, protein, cold weight, and L* meat reported a high explanatory potential. These outcomes act as a reference guide to be followed when designing studies of carcass quality-related traits in local native breeds and market commercialization strategies.

Abstract
Simple Summary In the egg industry, most slow-growing chicks are usually euthanized at 1-day-old even though it has been demonstrated that they are well-suited to production systems with outdoor access. However, the rearing of these birds, as an option to address the ethical concerns related to their disposal at such an early age, is impaired by high feeding costs. Therefore, it is crucial to evaluate non-conventional feeding materials that could be incorporated into their diets. Moringa is a non-traditional feed for poultry; nevertheless, studies investigating slow-growing breeds’ performance when fed Moringa while given access to outdoors in the tropics are limited. Thus, the current study evaluated slow-growing chickens’ response to dietary Moringa in terms of production performance, carcass yield, and blood parameters. The results revealed that all cumulative traits were not negatively affected by the treatments (except for feed conversion). Additionally, both breast weight and yield and gizzard weight and yield significantly increased with dietary Moringa, while blood parameters remained unaltered. It is concluded that Moringa, as a feed ingredient, could be added to the diets of slow-growing male chickens grown with outdoor access in the tropics to improve productive and carcass traits, but feed conversion could be increased. Abstract This study was conducted to evaluate the effects of different dietary amounts of Moringa oleifera meal (MOM), consisting of leaves and small edible green stems, on growth performance, carcass traits, and blood parameters of finisher male layer-type slow-growing chickens raised with outdoor access. A total of 198 Dominant Blue D 107, 72-day-old male chickens were randomly assigned to tree dietary treatments containing 0, 30, and 60 g/kg MOM that corresponded to T1 or control, T2, and T3, separately. Each treatment was divided into 6 replicates of 11 birds apiece, and all birds had access to the outdoors. After 7 weeks of experimental rearing, live weight was 2218.1, 2164.4, and 2176.6 g for birds raised in T1, T2 and T3, respectively, without statistical differences (p ≥ 0.05). Live weight gain and daily live weight gain increased (p ≤ 0.05) in favor of the control group during the first 4 weeks but decreased (p ≤ 0.05) in the last 3 weeks of the trial. Overall feed intake was not influenced by the treatments (p ≥ 0.05). Birds raised with MOM in their diets had higher feed conversion (p ≤ 0.05). T2 diet considerably increased (p ≤ 0.05) birds’ breast and gizzard weight and yield while decreasing feet weight and yield, in comparison to T1. Dietary MOM inclusion did not impair or improve (p ≥ 0.05) blood parameters. The results of this study suggest that up to 60 g/kg MOM could be included in the diets of slow-growing Dominant Blue D 107 male chickens grown with access to outdoors without compromising their productive performance (except for feed conversion), slaughter characteristics, and health status.

Abstract
Background/introduction In the absence of evidence‐based findings for Saxonian Chicken (SaChi) and German Langshan bantam (GLB), which are indigenous endangered German fancy chicken breeds, the objective of the present study was to characterise their growth performance and meat potential in an extensive free‐range system Methods A total of 340 hatching eggs from SaChi and 439 eggs from GLB were provided by private breeders, from which 263 SaChi (77.3%) and 174 GLB (39.6%) hatched (p < 0.001) Results By week 20, SaChi reached body weights of 2362.3 ± 315.3 g (mean ± SD; roosters) and 1624.7 ± 158.9 g (hens), while GLB weighed 1089.7 ± 148.3 g (roosters) and 820.4 ± 89.5 g (hens). Fitting the non‐linear regression of growth data to the Gompertz function estimated asymptotic body weights of 3131.4, 2363.9, 1359.2 and 1107.3 g, with inflection point times of 10.5, 10.3, 9.2 and 9.3 weeks in male SaChi, female SaChi, male GLB and female GLB, respectively. Moderate plumage damage was observed on days 18, 35, 53, 70 and 105 in SaChi and on days 53, 70 and 105 in GLB, while all birds presented completely intact plumage on day 140. Using a binary logistic regression model, breed, age and sex were shown to affect the plumage condition (p < 0.001 each). Roosters were slaughtered in week 20. No breed effects were detected in the carcass yield (SaChi: 68.8 ± 1.7%, GLB: 69.7 ± 1.8%) (p = 0.135) or abdominal fat share (SaChi: 0.89 ± 0.15%, GLB: 1.08 ± 0.14%) (p = 0.281). The percentage of valuable cuts (breast fillets and legs) in the carcass was 43.8 ± 1.9% for SaChi and 43.1 ± 3.0% for GLB (p = 0.490) Discussion/conclusions In conclusion, this study provides insights into the performance traits and welfare indicators during the rearing of two endangered German chicken breeds.

Abstract
Raising dual-purpose hens for meat is believed to bring more economic benefits to farmers selling products directly to consumers. The aim of the study was to determine the differences between the carcass features and the digestive system of multipurpose hens and spent broiler breeders. In the experiment, 20 carcasses of 70-week-old Rosa 1 dual-purpose hens and 20 carcasses of 62-week-old Ross 308 broiler breeders were used. Measurements of the length of various sections of the intestine and the diameter of individual intestinal segments were made. During the gutting, proventriculus, gizzard, liver, heart, and spleen were separated and then weighed. Dual-purpose hens differed significantly (p < 0.05) from broiler breeders in weight and carcass dimensions. Multipurpose hens were characterized by significantly lower (p < 0.05) percentages of breast muscles, leg muscles, skin with subcutaneous fat, wings, and carcass remainders. Broiler breeders were characterized by significantly longer (p > 0.05) total intestinal length, duodenum, jejunum, ileum, and terminal intestine. Significant differences were confirmed in terms of the diameter of some segments of the intestine. Broiler breeder hens also had a greater mass of internal organs compared to the dual-purpose layer hens.

Abstract
Village chicken is known as a high-quality product perception and sold at high prices. However, the authenticity of village chicken is doubted because colored chicken has been claimed as village chicken to fraud the consumers and to gain high profit. No stringent strategy has been implemented by the local authority on the authenticity of the claimed village chickens. Thus, the study aimed to determine the meat quality of different chicken breeds including village chicken, broiler chicken (Cobb), colored chicken (Hubbard), and layer chicken from genuine suppliers and chickens sold at different local markets based on the physicochemical characterization, textural properties, and sensory evaluation. Chicken breeds were obtained from genuine suppliers and slaughtered at the slaughtering house Universiti Putra Malaysia. Proximate composition, color, and textural properties were evaluated. Minitab-19 and SIMCA-13 software were used to analyze the results, applying analysis of variance and partial least squares discriminant analysis, respectively. The study revealed that some of the market-supplied chickens were not authentic based on the features studied. About 20% of market village chickens had possessed similar results as the control village chicken. It can be shown that 80% of the claimed village chicken sold in the market was not authentic village chicken. Abstract
Consumers’ concerns regarding the ethical and environmental practices of the current poultry production system have led to the search for an alternative production method. This study evaluated samples of three dual-purpose chicken crossbreeds: Vorwerkhuhn × Bresse Gauloise (VBG), Vorwerkhuhn × White Rock (VWR), and Bresse Gauloise × White Rock (BWR), fed with two variants of faba beans (vicin/convicin-rich and -poor: VC+ and VC−, respectively) and soybeans to examine whether the FB-based diets affected the meat quality of the crossbreeds. pH, color, water holding capacity, tenderness, nucleotide content and proximal composition were analyzed instrumentally, whereas sensory properties were identified by a trained panel and product acceptance was evaluated by frequent chicken consumers. Results showed that from instrumental measurements, the yellowness of the samples was affected by the type of feedstuff, whereas most other parameters were affected by the crossbreed, particularly color and nucleotide content. Sensory attributes, specifically, overall chicken aroma as well as firmness and crumbliness, were affected by an interaction of the feedstuff and crossbreed. Consumer preference did not show significant differences between samples. Overall, a faba-bean-based diet appeared to be a suitable alternative to a soybean-based diet on the crossbreeds VBG, VWR, and BWR when assessing the overall quality and taste of chicken breasts.

Abstract
Simple Summary The loss of biodiversity is a matter of great concern worldwide. In the agricultural sector, the industrialization of livestock farming and the wide-spread use of highly selected hybrids, especially in developed countries, has led to the progressive extinction of many native breeds in these contexts. Nowadays, safeguarding poultry biodiversity is a key objective in all developed countries, Italy included. As a part of a large cross-sectional national project called ‘Conservation of biodiversity in Italian poultry breeds’, a questionnaire was designed to evaluate the diffusion of native chicken breeds and their relative product markets. The data reveal the poor diffusion of native breeds despite the existence of a niche market for their products. Indeed, increasing consumer concern about conventional production practices and the growing demand for alternative poultry products, which can fetch high retail prices, should be leveraged to encourage the diffusion of native chicken breeds in alternative poultry farming. An important knock-on effect would be the preservation of biodiversity. Abstract The intensive use of high-performing strains in poultry production has led to the extinction of several autochthonous chicken breeds and, consequently, loss of genetic variability. Interest in saving biodiversity is growing rapidly and has become a major objective worldwide. The aim of this study was to shed light on the production trends of native Italian poultry breeds and the related market. A questionnaire, which asked about the production cycles, the number of animals and table eggs produced per year and their retail prices was completed by 121 breeders across Italy. The surveyed breeders were divided into two categories: breeders conducting an agrozootechnical farm, referred to as ‘farmers’ (F); and breeders keeping chickens as backyard poultry, referred to as ‘fancy breeders’ (FB). Analysis of the data acquired indicated that animals were mainly slaughtered between 6 and 12 months of age, with F processing more animals per year. The same production trend was observed for table eggs. The recorded retail prices of native chicken products were higher than those for conventional products, but similar to those reported for valuable niche poultry products, such as the Poulet de Bresse in France and organic eggs. Knowledge about these highly valuable markets should be used to encourage the use of local breeds in alternative poultry farming and help protect biodiversity.

Abstract
Chickens are the world's most widely used farm animal and have a significant genetic diversity. In the current study, we investigated three strains for their suitability as dual-purpose chickens, with a focus on the fattening ability and welfare of the cockerels: 1. layer cockerels (Lohmann Brown, LB, n = 714); 2. cockerels of a dual-purpose hybrid (Lohmann Dual, LD, n = 844); and 3. cockerels of a native breed (Rhinelander, RL, n = 458). Chicks were raised under identical conditions and marked individually to compare focus and random sampling methods for weighing birds weekly. Because chicks of dual-purpose origins are usually raised mixed-sex, cockerels and pullets were weighed and observed together until sexes the were identifiable at week 10 of their life. During the 10th to 20th week of life, investigations were continued on 100 cockerels per genotype. Key figures for growth performance, such as feed conversion ratio (FCR) and European production efficiency factor (EPEF), were also calculated at weekly intervals. LD cockerels showed considerable growth performance (p < 0.001 compared to LB, RL, 2 kg at 9 weeks), whereas LB reached a live weight of 2 kg at 13 weeks and RL at 15 weeks of age. Genotype-dependent differences were also evident, with favorable FCR and EPEF for LD, intermediate for LB, and unfavorable for RL (all p < 0.001). The results of the FCR and EPEF suggest that cockerels should be slaughtered around week 8 of life, although only the carcass of the LD might be marketable. Thus, the optimal time of slaughter based on production parameters such as FCR and EPEF is different from the time when the animal reaches a marketable 2 kg live weight. Animal-based welfare indicators revealed that the RL are not adapted to production environments, including those that are extensive. Further research aimed at adapted feed management, including better FCR, and animals adapted to the respective production environments is necessary to improve alternative poultry production in the future.

Abstract
This study was made to determine the effects of genotype and housing system on physical quality characteristics of breast and leg meat of broilers under experimental conditions. The 150 slow-growing and 150 fast-growing 1 d old chicks were divided into three sub-groups with indoor raised slatted plastic floor, indoor concrete floor with rice hull litter, and free-range housing systems (2 genotype groups × 3 housing systems). All birds were offered the same diet and were housed in similar conditions until they were 56 d old. At slaughter, 10 birds from each main group were selected randomly to determine the quality characteristics of the meat. In total, 60 breast meat pieces (pectoralis major muscle) and 60 legs of the chickens were used for meat quality analysis including pH, shear force, and colour characteristics such as lightness ( L ∗ ), redness ( a ∗ ), yellowness ( b ∗ ), saturation ( C ∗ ), and hue angle ( h ∗ ). The pH of breast meat was significantly affected by genotype and housing system ( P < 0.001 and P < 0.001 ). There were significant genotype × housing system interactions for pH ( P < 0.015 and P < 0.001 ) and shear force values ( P < 0.007 and P < 0.012 ) of leg and breast meat. There were no significant effects of genotype and housing system on leg and breast meat colour properties except for effects of genotype on redness ( a ∗ ) of breast meat ( p < 0.005 ) and effects of housing on redness of leg meat colour ( p < 0.031 ). Slow-growing chickens and chickens housed in deep litter had a higher redness (darker) value of breast and leg meat colour compared to fast-growing birds and free range and slatted floor. In conclusion, it can be said that fast-growing broilers may be more appropriate for slatted plastic floor housing and slow-growing broilers may be more suitable for a free-range housing system, but further research on factors affecting meat quality would be very beneficial, especially in slow-growing broilers.

Abstract
BACKGROUND In order to combat environmental and food security concerns associated with the increasing demand for soymeal related to increasing meat consumption, this study determines the chicken meat quality derived when soymeal is substituted for either partially de-fatted Hermetia illucens larval meal or spirulina (Arthrospira platensis) in broiler diets. Physicochemical parameters, sensory traits, and fatty acid composition of the meat are investigated, as well as an experiment to evaluate the impact of highly oxygenated atmosphere versus vacuum-bag packaging on shelf life was conducted. RESULTS Hermetia illucens did not compromise quality; meat was slightly more yellow (higher b*), had a slightly decreased pH, and was less adhesive during chewing compared to the soy-fed control. Furthermore, Hermetia illucens resulted in higher saturated fatty acids proportions in thigh meat. Spirulina resulted in redder (higher a*) and more yellow (higher b*) meat with a slightly increased umami and chicken flavour. Spirulina-fed chicken meat had higher lipid oxidation levels compared to the control after being packaged in a highly oxygenated atmosphere; although, differences between the spirulina-fed and control fatty acid composition in thigh meat were minor. CONCLUSION Both alternative protein feeds show potential to replace soymeal in broiler diets; however, they do result in moderately altered products.

Abstract
The current practices of the poultry industry have raised concerns among consumers. Among these is the culling of day-old male chicks of laying hybrids; a suitable alternative for this could be the use of dual-purpose breeds where both sexes are used. Another practice that causes concern is the import of large quantities of soybeans for feedstuff production. Substitutes for these soybean-based products are regional protein crops, such as faba beans (Vicia faba L.; FBs). The objective of this study was to test the suitability of FB as a locally produced soybean meal replacement for two local dual-purpose chicken breeds and one high-performing layer line. The breast and leg meat of male Bresse Gauloise (BG), Vorwerkhuhn (VH), and White Rock (WR) animals was evaluated for different meat quality parameters: pH, color, water holding capacity, and tenderness. Sensory properties of the samples were evaluated by a trained panel with a conventional descriptive analysis. Results show different effects of FB diets on meat quality parameters in the different breeds. The attributes mostly affected by the diet are related to aroma, flavor, and texture, particularly in VH and WR. Overall, faba beans appear to be an acceptable dietary protein source for rearing these breeds for meat production.

Abstract
This study aimed to compare growth and slaughter performance of layer-type slow-growing Rhode Island Red male chickens grown with and without access to an area with vegetation in the tropics. Raised until 115 days of age, a total of 156, 1-day-old birds were randomly allocated to two treatments: total confinement (TC) and partial confinement (PC), with 6 replicates of 13 birds each. Birds grown under TC conditions reached a live weight of 2016.68 g while those raised with access to outdoors attained 1981.07 g, without statistical differences. Feed intake and daily feed intake were higher (P < 0.05) in birds farmed with TC management, during the last 17 days of the trial. Treatments did not significantly (P > 0.05) affect bird's other productive parameters and carcass traits. Results from this study suggested that slow-growing Rhode Island Red males may be raised with access to outdoors without any adverse effect on productive performance and carcass quality in the Mexican Tropic. Based on the results of this study, a rearing period of 84 days of age is recommended for Rhode Island Red male chickens raised in both TC and PC production systems.

Abstract
Simple Summary The culling of day-old male chicks and the ecological impact of high soy imports from overseas as animal feed are intensively discussed by the Western European agricultural sector and society. One possible approach to mitigate these problems could be the use of dual-purpose chickens for meat and egg production in combination with a predominant use of regionally grown protein plants. In the present study the suitability of six different chicken genotypes for fattening was evaluated while feeding them two different faba bean varieties. No adverse effects of the faba bean feeding on the performance and the health of the birds could be detected. Abstract The faba bean (Vicia faba L.) is a native protein crop and considered a promising alternative to soybeans. Due to its anti-nutritive substances such as vicin and convicin (VC) its use in animal nutrition has been restricted. In the present study, two consecutive experiments were conducted to analyse the effects of feeding 20% faba beans, which differ in their VC content on fattening performance and slaughter traits of different chicken genotypes. In a first trial, purebred male chickens of the local breeds Bresse Gauloise and Vorwerkhuhn as well as of a high-performance White Rock line were tested. In a second trial, crossbreds of them were evaluated: Vorwerkhuhn × Bresse Gauloise, Vorwerkhuhn × White Rock, Bresse Gauloise × White Rock. Daily weight gain and feed intake were recorded until slaughter at approximately 2100 g. At slaughter the final live weight, carcass yield and the weights of the valuable parts (breasts and legs) were measured. For the genotypes studied, no adverse or undesirable effects of both VC−rich and VC−poor faba beans in the feedstuff were detected regarding body weight development, carcass quality, and fattening parameters. Furthermore, there was no indication that the birds’ health was impaired.

Abstract
1. Although fattening dual-purpose types or male layer hybrid chickens appears more ethical than the common practice of culling day-old male layer chicks, the lower feed efficiency of these birds raises concerns. Replacing feed ingredients that compete with food production by those of lower value for human nutrition would be beneficial.2. Lohmann Dual (LD), a modern dual-purpose type, Lohmann Brown (LB), a male layer hybrid, and Hubbard JA 957 (HU), a slow-growing broiler type, were fattened for nine weeks on two diets (control or -20% crude protein; n = 6 × 12 birds). Growth, carcass and meat quality were analysed.3. Growth performance of HU exceeded that of LD and especially of LB. The growth depression caused by the low-protein diet fed to LD (-7%) was only half of that found in HU (-13%). The LD fed the control diet had the same feed efficiency as the HU fed the low-protein diet. Even the LB had a lower performance and feed efficiency with the low-protein diet in growth. There was a gradient in carcass properties (weight, dressing percentage, breast meat yield, breast proportion and breast angle) from HU to LD to LB, with some additional adverse effects of the low-protein diet especially in HU. There were some breed differences in fatty acid profile in the intramuscular fat.4. In conclusion, the dual-purpose type used complied with regulations for Swiss organic poultry systems in terms of growth rate and was found to respond less when fed a low-protein diet than the slow-growing broiler type. The LB males were inferior in all growth and carcass quality traits. Future studies need to determine the exact protein and amino acid requirements of dual-purpose and layer hybrid chickens and the economic feasibility of the systems, especially for organic farming.
