Abstract
Cattle are recognized as the principal reservoir for Escherichia coli O157:H7 and preharvest food safety efforts often focus on decreasing shedding of this pathogen in cattle feces. Enogen® corn (EC; Syngenta Seeds, LLC) is genetically modified to produce enhanced concentrations of α-amylase in the corn kernel endosperm. Research has demonstrated improvements in feed efficiency for cattle fed EC and research has not yet explored whether improved digestion impacts foodborne pathogen populations in cattle. Therefore, this study explored effects of finishing diets containing EC on Escherichia coli O157:H7 prevalence in cattle. A 2 × 2 factorial experiment was conducted with steers (n = 960) fed diets consisting of 2 types of silage (EC or Control) and grain (EC or Control), fed daily ad libitum. Steers were grouped into 12 blocks by incoming body weight, blocks were randomly assigned to one of four pens, and pens were randomly assigned to one diet. Cattle were sampled using rectoanal mucosal swabs in cohorts of 298-337 cattle per day, for a total of 3 sampling days (15-16 days apart). Escherichia coli O157:H7 prevalence rates ranged from not detected (0/75) to 10.0% (8/80) depending on sampling day. Tests for the silage × corn interaction, and the main effects of silage and corn, were not significant (p > 0.05); however, EC reduced the odds of Escherichia coli O157:H7 prevalence by 43% compared to the control corn diet (p = 0.07). Diets containing EC tended to decrease Escherichia coli O157:H7 prevalence in feedlot cattle; however, this reduction was not significant. Before a conclusion can be drawn about impact of EC on Escherichia coli O157:H7 in cattle, further research is necessary to (1) determine if this tendency is due to increased alpha amylase activity and (2) elucidate impact on Escherichia coli O157:H7 prevalence and concentration, as well as a possible mechanism of action.

Abstract
Feedlot cattle commonly shed the foodborne pathogen Escherichia coli O157:H7 in their feces. Megasphaera elsdenii (ME), a lactic acid-utilizing bacterium, is commonly administered to cattle to avoid lactate accumulation in the rumen and to control ruminal acidosis. The impact of administering ME on foodborne pathogen prevalence, specifically E. coli O157:H7, has not been explored. The purpose of this study was to quantify E. coli O157:H7 prevalence in finishing cattle administered ME. Cattle (n = 448) were assigned to treatments in a randomized complete block design with repeated measurements over two sampling periods. Treatments were arranged as a 2 × 2 factorial containing: ruminally protected lysine (RPL; included for a complementary study) fed at 0% or 0.45% of diet dry matter; with or without ME. Freeze-dried ME was administered as an oral drench (1 × 1010 CFU/steer on day one) and then top dressed onto basal diets (1 × 107 CFU/steer) daily thereafter. Rectoanal mucosal swabs (RAMS) were obtained from animals before harvest to determine the E. coli O157:H7 prevalence. The inclusion of RPL (P = 0.2136) and ME (P = 0.5012) did not impact E. coli O157:H7 prevalence, and RPL was not included in any significant interactions (P > 0.05). A significant interaction was observed between ME and sampling period (P = 0.0323), indicating that the effect of ME on E. coli O157:H7 prevalence varied over the sampling period. A diet containing ME reduced the odds of E. coli O157:H7 prevalence by 50% during sampling period 1 (8.0% and 14.7% for cattle with and without ME, respectively) and increased the odds by 23% during sampling period 2 (10.8% and 8.9% for cattle with and without ME, respectively). Administering ME in cattle diets did not impact E. coli O157:H7 in feedlot cattle. This is the first study to investigate the use of ME as a preharvest food safety intervention in cattle, and additional research is necessary to determine the efficacy.

Abstract
A total of 80 crossbred, high-risk heifers (initially 250 ± 4.2 kg BW), were transported from an Oklahoma City, Oklahoma sale barn to the Kansas State University Beef Cattle Research Center. Cattle were unloaded and randomly placed into one of four receiving pens and provided ad libitum hay and water. Each pen was randomly assigned to one of the four rest times before processing: (1) immediately upon arrival (0); (2) after a 6-h rest period (6); (3) after a 24-h rest period (24); and (4) after a 48-h rest period (48). After all cattle were processed, heifers were allotted into individual pens with ad libitum access to a receiving ration and water. Heifers were weighed individually on d 0, 7, 14, 21, 28, and 35 to calculate average daily gain (ADG). Feed added and refusals were measured daily to determine dry matter intake (DMI). A fecal egg count reduction test and analysis of blood serum metabolites were also conducted. All data were analyzed using the GLIMMIX procedure of SAS (v. 9.4, Cary, NC) with individual animal as the experimental unit. Processing time did not impact (P > 0.05) heifer BW or ADG. From d 0 to 35, DMI decreased linearly (P = 0.027) as rest time increased. The number of days for heifers to reach a DMI of 2.5% BW was linearly increased (P = 0.023) as rest time increased. There was no evidence of differences (P ≥ 0.703) among rest times for feed efficiency. While morbidity did not differ between treatments (P > 0.10), mortality increased linearly (P = 0.026) as the time of rest increased. A significant processing time × day interaction (P < 0.0001) was observed for the prevalence of fecal parasites, where the percentage of positive samples was significantly lower 14-d after anthelmintic treatment, regardless of the processing time. Serum IBR titer for heifers processed at either 0 or 6-h upon arrival was significantly higher (P < 0.01) on d 35 compared to d 0. Heifers processed after a 48-h rest period had significantly higher glucose values (P < 0.01) on d 0 compared to heifers processed at 0, 6, or 24-h. In summary, rest time prior to processing did not impact receiving calf growth performance. A 6-h rest period upon arrival appeared to be most beneficial to DMI. Anthelmintic treatment at processing reduced the parasitic load in heifers processed at all times. Vaccine titer did not increase after initial processing in heifers processed 24- or 48-h after arrival, indicating the seroconversion of IBR antibodies during the longer rest period.

Abstract
This study evaluated the effects of Megasphaera elsdenii administration at the beginning of the feedlot period on performance of Bos taurus indicus bulls. On d 0, 383 Nellore bulls (initial shrunk body weight 384 ± 29.2 kg; initial age = 24 ± 2 mo) were assigned to treatments in a randomized complete block design. Treatments consisted of 1) 14 d adaptation diet and transition to a finishing diet (CONT), 2) CONT plus oral administration of 20 mL of Lactipro-NXT (M. elsdenii) on d 0 of the study (MEG-14), 3) CONT diet, consisting of 6 d of adaptation diet plus oral administration of 20 mL of Lactipro-NXT on d 0 of the study (MEG-6), and 4) No adaptation diet and oral administration of 20 mL of Lactipro-NXT on d 0 of the study (MEG-0). Experimental period lasted 119 d. No treatment effects were observed for any of the performance parameters evaluated herein (P ≥ 0.15). Nonetheless, a treatment × wk interaction was observed for DM, NEm, and NEg intakes (P < 0.0001). For all these parameters, MEG-0 and MEG-6 had a reduced intake vs. MEG-14 and CONT in the first wk of the study (P ≤ 0.05). For the carcass traits, no effects were observed for HCW (P ≥ 0.24), whereas MEG-6 had a greater REA when compared with MEG-0 and MEG-14 (quadratic effect; P = 0.04) and MEG-administered bulls tended to have a greater BFT vs. CONT (P = 0.08). In summary, M. elsdenii administration at the beginning of the feedlot period did not improve performance, whereas reducing the length of the adaptation period for 6 d improved REA of finishing Bos taurus indicus bulls.

Abstract
Two experiments were conducted to evaluate the effects of feed additives [monensin (MON); 30 mg/kg of dry matter (DM), and virginiamycin (VM); 25 mg/kg DM] and grain adaptation programs [adding roughage (ROU; sugarcane bagasse) or not (NO-ROU) during the 20-d adaptation period] on performance, carcass characteristics, and nutrient digestibility of Bos indicus cattle fed finishing diets containing 85% whole shelled corn and 15% of a pelleted protein-mineral-vitamin supplement. In Exp.1, 105 Nellore bulls [initial body weight (BW) = 368 ± 25 kg] were used in a complete randomized block design with a 2 × 2 factorial arrangement of treatments, consisting of two feed additives (MON and VM) associated with two adaptation programs (ROU or NO-ROU during the 20-d adaptation period). Effects of feed additives × adaptation programs were not detected (P ≥ 0.13). Feed additives did not affect dry matter intake (DMI), average daily gain (ADG), and feed efficiency (G:F) during the 20-d adaptation period (P ≥ 0.35). During the total feeding period (105 d), feeding MON decreased DMI (P ≤ 0.03) compared to VM. Adding sugarcane bagasse to finishing diets during the 20-d adaptation period (ROU) increased ADG (P = 0.05) and G:F (P = 0.03), and tended to increase BW (P = 0.09) compared to NO-ROU. In Exp. 2, 10 ruminally cannulated Nellore steers (BW = 268 ± 38 kg) were used in a completely randomized design to evaluate the effects of the two feed additives used in the Exp. 1 (MON and VM; 5 steers/treatment) on DMI, total apparent digestibility of nutrients, and ruminal fermentation characteristics. No differences in DMI, total tract apparent digestibility of nutrients, and ruminal fermentation characteristics were observed between MON and VM (P ≥ 0.32). An effect of sampling day (P < 0.001) was observed for ruminal pH, which was greater on day 0 compared to day 7, 14, and 21 of the experimental period (P ≤ 0.05). In summary, supplementing monensin and virginiamycin for finishing Nellore bulls fed whole shelled corn diets, resulted in similar growth performance and carcass characteristics. Including sugarcane bagasse to adapt finishing bulls to no-roughage diets containing whole shelled corn is an alternative to increase growth performance.

Abstract
The objective of this study was to determine effects of extended aging and intramuscular location on Warner-Bratzler shear force (WBSF), muscle fiber cross-sectional area (CSA), and protein degradation of semitendinosus (ST) and longissimus lumborum (LL) steaks. Left ST and LL were removed from 40 carcasses at 6 d postmortem. The ST was fabricated into five locations (LOC), with LOC 1 being most proximal and LOC 5 being most distal. The posterior LL was fabricated into 3 LOC, with LOC 1 being most anterior. Vacuum sealed ST steaks were aged 7, 14, 28, 56, or 112 d postmortem, while LL steaks were aged 7, 28, or 112 d postmortem at 2 ± 1 °C. A steak from each LOC was assigned to WBSF or laboratory analyses. There were no Day of Aging (DOA) × LOC interactions for all dependent variables (P > 0.06). There were DOA effects for ST and LL WBSF values and degraded 38-kDa desmin (DES; P < 0.01). Day-7 ST-steak WBSF value was greater than all other days (P < 0.01) and day-14 steaks had greater WBSF value than remaining days (P < 0.05). Day-28 ST-steak WBSF values were greater than day 56 and 112 (P < 0.01), which did not differ (P = 0.53). In the LL, day-7 steaks had greater WBSF values than the other two timepoints (P < 0.01) and day-28 steaks had greater (P < 0.01) WBSF values than day-112 steaks. Degraded ST 38-kDa DES content was less on day 7 and 14 compared to all other days (P < 0.03), but did not differ (P = 0.79) from each other. Days 28 and 56 38-kDa DES content was less than day 112 (P < 0.01), but did not differ (P = 0.34) from each other. Degraded LL 38-kDa DES content was less on day 7 than day 28 and 112 (P < 0.02), which did not differ (P = 0.67). There were LOC effects for only ST WBSF and muscle fiber CSA (P < 0.05). Semitendinosus steak LOC 1 and 2 had greater WBSF values than all other locations (P < 0.01), but did not differ (P = 0.32) from each other. Semitendinosus steak LOC 3 and 5 had greater WBSF values than LOC 4 (P < 0.01), but did not differ (P = 0.85) from each other. The CSA of all ST fiber types were largest in LOC 1 compared to all other fiber types (P < 0.01). The CSA of all LOC 2 and 3 fiber types was greater than LOC 4 and 5 (P < 0.01), but were not different from each other (P > 0.81), and LOC 4 had greater CSA than LOC 5 (P < 0.01). Steak aging WBSF value improvements seemed proteolysis catalyzed, while the ST intramuscular tenderness gradient was more likely due to muscle fiber CSA.

Abstract
Antibiotic resistance represents a growing crisis in both human and veterinary medicine. We evaluated the use of antibiotic alternatives-heavy metals and essential oils-in beef cattle feeding, and their effects on Gram-negative and Gram-positive bacteria. In this randomized controlled field trial, we measured the impact of supplemental zinc and menthol on antibiotic resistance among commensal enteric bacteria of feeder cattle. Fecal suspensions were plated onto plain- and antibiotic-supplemented MacConkey and m-Enterococcus agar for quantification of total and antibiotic-resistant Escherichia coli and Enterococcus spp., respectively. Temporal effects on overall E. coli growth were significant (p < 0.05), and menthol was associated with decreased growth on tetracycline-supplemented agar. Zinc was associated with significant increases in growth on erythromycin-supplemented m-Enterococcus agar. Cattle fed zinc exhibited significantly higher levels of macrolide resistance among fecal enterococci isolates.

Abstract
Developed initially for use in fuel ethanol production, Enogen Feed Corn (EFC; Syngenta Crop Protection) is genetically modified to express high concentrations of α-amylase in the corn kernel. Experiments were conducted to evaluate processing characteristics of EFC, in vitro digestion, and effects on feedlot performance, carcass characteristics, and liver abscess incidence. Experiment 1 used a randomized complete block design (3 × 3 × 5 factorial) to evaluate starch availability, in situ dry matter disappearance (ISDMD), in vitro gas production (IVGP), and volatile fatty acid (VFA) profiles of in vitro cultures. Grains (EFC or mill-run control [CON]) were flaked to a density of 360 g/L, and mixtures with 0%, 25%, 50%, 75%, or 100% EFC were prepared. Grains were tempered with added moisture (0%, 3%, or 6%) prior to steam conditioning for 15, 30, or 45 min. No two- or three-way interactions were observed. Adding moisture improved starch availability (linear; P < 0.01), and tended to improve ISDMD (linear, P = 0.06). Steam conditioning for 30 min improved starch availability, IVGP, and production of acetate, propionate, butyrate, valerate, and total VFA (P < 0.01) compared with conditioning for 15 or 45 min. Starch availability, ISDMD, IVGP, acetate, propionate, valerate, and total VFA production increased with an increasing proportion of EFC (linear, P < 0.01). Experiment 2 used 700 beef heifers (394 ± 8.5 kg initial body weight [BW]) fed finishing diets with steam-flaked corn as CON or EFC for 136 d. Targeting similar starch availabilities, grains were processed to 360 g/L (CON) and 390 g/L for CON and EFC, respectively. Heifers were blocked by BW, stratified, and then randomly assigned to 28 dirt-surfaced pens (25 animals per pen). Dry matter intakes were similar between treatments (P = 0.78), but cattle fed EFC had greater average daily gain (P < 0.01), improving feed efficiency by 5% (P < 0.01). Hot carcass weight was 6 kg greater for EFC cattle (P <0.01) than CON. No differences were observed for longissimus muscle area (P = 0.89), 12th-rib fat thickness (P = 0.21), or USDA yield grade (P = 0.13). Cattle fed CON had greater marbling scores than EFC (P = 0.04), but this did not affect the USDA quality grade (P > 0.33). Cattle fed EFC had 23% fewer abscessed livers than CON (P = 0.03). High-amylase corn may be used to improve microbial digestion, mill-throughput, and cattle performance, and it may mitigate liver abscesses.

Abstract
The effect of hay type on the microbiome of the equine gastrointestinal tract is relatively unexplored. Our objective was to characterize the cecal and fecal microbiome of mature horses consuming alfalfa or Smooth Bromegrass (brome) hay. Six cecally cannulated horses were used in a split-plot design run as a crossover in two periods. The whole plot treatment was ad libitum access to brome or alfalfa hay fed over two 21-d acclimation periods with subplots of sampling location (cecum and rectum) and sampling hour. Each acclimation period was followed by a 24-h collection period where cecal and fecal samples were collected every 3 h for analysis of pH and volatile fatty acids (VFA). Fecal and cecal samples were pooled and sent to a commercial lab (MR DNA, Shallowater, TX) for the amplification of the V4 region of the 16S rRNA gene and sequenced using Illumina HiSeq. The main effects of hay on VFA, pH, and taxonomic abundances were analyzed using the MIXED procedure of SAS 9.4 with fixed effects of hay, hour, location, period, and all possible interactions and random effect of horse. Alpha and beta diversities were analyzed using the R Dame package. Horses fed alfalfa had greater fecal than cecal pH (P ≤ 0.05), whereas horses fed brome had greater cecal than fecal pH (P ≤ 0.05). Regardless of hay type, total VFA concentrations were greater (P ≤ 0.05) in the cecum than in feces, and alfalfa resulted in greater (P ≤ 0.05) VFA concentrations than brome in both sampling locations. Alpha diversity was greater (P ≤ 0.05) in fecal compared with cecal samples. Microbial community structure within each sampling location and hay type differed from one another (P ≤ 0.05). Bacteroidetes were greater (P ≤ 0.05) in the cecum compared with the rectum, regardless of hay type. Firmicutes and Firmicutes:Bacteroidetes were greater (P ≤ 0.05) in the feces compared with cecal samples of alfalfa-fed horses. In all, fermentation parameters and bacterial abundances were impacted by hay type and sampling location in the hindgut.

Abstract
BACKGROUND Commercial horse feeds use cereal grains and by-products; however, their effects on the caecal environment remain poorly characterised. OBJECTIVE Characterise the effect of commonly used feed ingredients on caecal pH and volatile fatty acid (VFA) concentration. STUDY DESIGN 6 × 6 Latin square. METHODS Two days prior to the start of the study, 6 caecally cannulated Quarter horses were moved into individual stalls where Smooth bromegrass hay (brome) was offered at 2.0% BW/d split between 2 feedings (0600 and 1800). On day 0, caecal digesta was collected every 2 h for 12 h relative to the 0600 feeding to establish control values for horses consuming only brome (HAY). On day 1, horses began consuming their respective treatments which consisted of beet pulp (BP), maize (M), dehydrated alfalfa (A), oats (OAT), soybean hulls (SBH), or wheat middlings (WM) at 0.25% BW/d split into 2 feedings. On day 7 of each treatment period, caecal digesta was collected every 2 h for 12 h and analysed for pH and VFA. Data were analysed using mixed ANOVA with repeated measures, fixed effects of treatment and time and random effects of horse and period. RESULTS There was a main effect of hour (P ≤ .05) indicative of post-prandial shifts in caecal metabolites. There were no main effects of treatment on pH or VFA concentration (P ≥ .3). Effects of hour × treatment (P ≤ .04) were observed for all response variables. Regardless of treatment or hour, caecal pH remained well within normal limits. Three horses exhibited signs of lower oesophageal choke immediately after consumption of BP pellets. LIMITATIONS Interactions between ingredients when mixed for formulation of a concentrate warrant further research. Furthermore, a short adaptation period was chosen to mimic common management practices. CONCLUSION Minimal differences in caecal fermentation parameters were detected when ingredients were fed at a common inclusion level.

Abstract
Liver abscessation is an important metabolic disorder that commonly afflicts cattle consuming cereal-based, high-concentrate diets. Economic ramifications of liver abscessation are substantial, and include liver condemnation, decreased body weight gain, poorer efficiency of feed utilization, reduced carcass yield, and impairments in operational efficiency of commercial abattoirs. The etiological agent most commonly associated with liver abscesses is Fusobacterium necrophorum, which is an anaerobic, Gram-negative, nonmotile, nonsporulating, and rod-shaped (pleomorphic) bacterium. Fusobacterium necrophorum is one of the major proteolytic species of bacteria in the rumen, and it is believed to have a major role in degradation of dietary lysine. Herein we describe interactions between lysine and F. necrophorum, and the potential role of dietary lysine as an enabling factor in the development of liver abscesses in cattle.

Abstract
The objective of this study was to determine the effects of four microalgae and antioxidant feeding regimens on beef longissimus lumborum color stability and palatability. Steers were blocked by weight and randomly assigned to one of four dietary treatments fed during a 45-d feeding period. Treatments (n = 10 per treatment) consisted of a control diet (CON) and control diet plus 100 g∙steer−1∙d−1 microalgae (ALGAE), ALGAE plus antioxidants (103 IU/d vitamin E and Sel-Plex) fed throughout feeding (AOX), and AOX fed for the final 10 d of finishing (LATE). The longissimus lumborum muscle was removed, aged for 14 d, and fabricated into steaks for objective and subjective color and palatability analyses. There were treatment × day of display interactions for a* value and steak surface metmyoglobin percentage (P < 0.01). There were no treatment differences through day 4 of display for a* value (P > 0.16) and day 5 of display for surface metmyoglobin (P > 0.10). By day 10 of display, ALGAE steaks had a smaller a* value than all other treatments (P < 0.01). Steaks from AOX steers had a greater (P < 0.01) a* value than CON steaks, whereas both a* values did not differ from LATE steaks (P > 0.19). By the end of display, ALGAE steaks had more metmyoglobin than the other treatments (P < 0.01). Steaks from AOX steers had less metmyoglobin than CON and LATE steaks (P < 0.04), which did not differ (P > 0.25). Treatment did not affect trained panel ratings (P > 0.15); however, treatment did affect (P < 0.01) off-flavor intensity. Steaks from ALGAE and AOX steers had greater off-flavor ratings than CON steaks (P < 0.03), but did not differ (P = 0.10). Steaks from LATE steers did not differ in off-flavor ratings from the other treatments (P > 0.07). Use of antioxidants improved color stability of steaks from microalgae fed steers; however, panelists still detected off-flavors.

Abstract
To assess the impact of protein on fermentation by equine cecal microorganisms, cecal fluid from 4 cecally cannulated horses was used to inoculate fermentation bottles containing buffer, forage, and supplemental protein. In experiment 1, sodium caseinate (SC) provided 0, 0.5%, 1%, 2%, or 4% additional crude protein (CP) to bottles containing alfalfa or native warm-season prairie grass hay. Bottles were equipped with continuous gas pressure monitors and placed into a shaking incubator for 48 hours at 39°C. Cultures with alfalfa had greater (P < .0001) in vitro dry matter disappearance (IVDMD), neutral detergent fiber disappearance (NDFD), acid detergent fiber disappearance (ADFD), cumulative gas production, and total volatile fatty acid (VFA). Sodium caseinate increased gas production (P ≤ .05) and decreased pH (P < .003) in cultures with grass hay. Sodium caseinate at 1%, 2%, or 4% additional CP increased IVDMD, NDFD, and ADFD (P < .01), while 4% additional CP also increased total VFA (P < .01). For experiment 2, SC, fishmeal, soybean meal (SBM), whey, porcine blood plasma, and L-lysine hydrochloride were added to supply 2% additional CP to cultures with grass hay. All protein sources decreased pH and increased IVDMD, NDFD, and ADFD (P ≤ .01), with the largest effects elicited by SC, L-lysine, and whey (P ≤ .05). Total VFA (P ≤ .04) and gas (P ≤ .05) production increased with L-lysine, whey, SC, SBM, and fishmeal. While protein supplementation had minimal effects on cultures containing alfalfa, it altered fermentation of grass hay, more notably with more soluble protein sources.

Abstract
Liver abscesses (LA) in cattle negatively affect feedlot performance by decreasing ADG, feed intake, and G:F ratio. Abscessed livers are condemned and abdominal adhesions associated with LA can result in extensive carcass trimming during harvest, further compounding adverse economic impact. Given regulatory changes pertaining to the use of in-feed antibiotics in cattle production, there is growing interest in alternatives to antibiotics for LA control. The objective of this study was to evaluate the use of antioxidants, crystalline ascorbate (AOX), and alpha-tocopherol acetate, for mitigation of LA in feedlot cattle. Yearling crossbred heifers (n = 392; initial BW 481 ± 9.4 kg) were blocked by previous treatment and allocated randomly to 24 dirt-surfaced feedlot pens (10 m × 35 m) with 14 heifers/pen. Heifers were weighed, implanted with Component TE-200 implants, and placed into feeding pens. Finishing diets consisted of 60% steam-flaked corn, 30% wet corn gluten feed, 8% alfalfa, and 2% supplement (DM basis) that provided 300 mg/d monensin, and either 200 IU/d alpha-tocopherol acetate (CTL) or 2,000 IU/d alpha-tocopherol acetate plus 500 mg/d crystalline AOX. Heifers were fed once daily ad libitum for 94 d, then weighed and transported 450 km to a commercial abattoir for harvest. Hot carcass weight and incidence/severity of LA were determined the day of harvest, and carcass traits were evaluated following 36 h of refrigeration. Compared to CTL, feeding AOX tended to decrease DMI (10.66 vs. 10.31 kg/d; P = 0.08) and improve G:F (0.1204 vs. 0.1254; P = 0.12), but did not impact ADG, incidence of LA (25.6 vs. 23.5% for CTL and AOX, respectively), HCW (828.4 vs. 830.5 kg for CTL and AOX, respectively), or other carcass traits (P > 0.20). In conclusion, feeding antioxidants are not a viable alternative to decrease incidence of LA in finishing cattle.

Abstract
Calcium salts of fatty acids (CSFAs) frequently are fed to ruminants, but their fate in the equine digestive system is unknown. The purpose of this study was to compare Enertia s/f, a proprietary CSFAs, and soybean (SB) oil with respect to impact on apparent total tract nutrient digestion and cecal fermentation parameters in horses. Eight cecally cannulated Quarter Horses were used in a crossover design in which horses consumed a diet for 32 d consisting of 1.5% body weight (BW) (as-fed) smooth bromegrass hay and 0.5% BW (as-fed) pelleted concentrate containing 4.9% CSFAs or 4.1% SB oil. Fecal samples were collected every 4 h from day 30 to 32 of each period and analyzed for apparent total tract digestibilities of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF), crude protein (CP), crude fat (CF), and gross energy (GE) using acid detergent insoluble ash as an internal marker. Cecal digesta was obtained at 0, 2, 4, 6, 8, 10, and 12 h following the morning meal on day 29 of each period and analyzed for pH and concentrations of volatile fatty acid (VFA) and long-chain fatty acids (LCFAs). Serum was collected on day 33 of each period following a 16-h fast and analyzed for triglycerides and cholesterol. Apparent total tract digestibilities of DM, NDF, ADF, CP, CF, and GE were unaffected by lipid source (P > 0.10). Serum triglycerides tended to be greater in horses consuming CSFAs compared to SB (P = 0.10); however, serum cholesterol was not different (P = 0.45). In horses consuming SB, cecal pH decreased below baseline (hour 0) at hours 2, 4, and 6 (P < 0.01), whereas cecal pH in horses consuming CSFAs was below baseline at hours 4 and 6 (P < 0.01). There were no treatment or time effects on cecal pH (P > 0.10). Cecal concentrations of total VFAs were greater in horses consuming SB compared to CSFAs at hour 2 (P = 0.01). Cecal concentrations of acetate, propionate, acetate:propionate (A:P), and butyrate were affected by time (P < 0.01). Propionate was less at hour 2 in horses fed CSFAs compared to horses fed SB (P = 0.04). A treatment × time interaction was detected for total cecal LCFAs concentration (P < 0.01); LCFAs concentration was greater at hour 2 for horses consuming CSFAs compared to horses fed SB (P = 0.02). SB oil and CSFAs have similar effects on the digestion of DM, NDF, ADF, GE, CF, and CP.

Abstract
Three experiments were conducted to evaluate the inclusion of crude glycerin (CG) in diets for beef cattle. In Exp. 1, 4 ruminally cannulated steers were fed diets with 0 or 15% CG (DM basis), to evaluate DM disappearance, VFA profiles, and gas production. There was a tendency for an interaction (P = 0.06) between diet fed to donor animals and substrate fed to in vitro system, and digestion was increased when CG was added to cultures with ruminal fluid from CG-fed animals. Total VFA were unaffected by diets or by substrate incubated. The CG increased production of propionate, butyrate, and valerate (P < 0.01) while the gas production was unaffected (P = 0.16). In Exp. 2, 24 crossbred heifers (334.4 ± 0.9 kg BW) were fed the same diets as Exp. 1, for 35 d. Fecal grab samples were collected 3 times daily on day 7, 21, and 35, to evaluate total tract digestibilities of DM, OM, and NDF. The CG improved digestibility of diet OM (P = 0.04), and DM followed a similar trend (P = 0.06), while the NDF digestibility was unaffected (P = 0.29). In Exp. 3, crossbred heifers (n = 374; 375.8 ± 36.1 kg BW) were used to evaluate feedlot performance and carcass traits when fed diets with 0, 7.5, or 15% CG, with or without added 0.3% salt. Heifers were assigned to 25 pens and were harvested on day 125. Removing salt from CG-based diets did not impact performance (P = 0.50). The CG did not influence average daily gain (P = 0.27), but decreased DM intake (P = 0.003), USDA Yield Grade (P = 0.01), and improved feed efficiency (P = 0.03), while tended to decrease USDA prime carcasses (P = 0.10). Carcass weight (P = 0.24), Longissimus muscle area (P = 0.63), and kidney, pelvic, heart fat (P = 0.59) were unaffected by CG. Twelfth-rib fat was less for heifers fed 15% CG without salt compared with the other treatments (P = 0.005), while marbling was less for heifers fed CG diets compared with the control-fed animals (linear, P = 0.004; quadratic, P = 0.02). In conclusion, GC can replace dry-rolled corn in diets for beef heifers when fed at 15% of diet DM, improving OM digestion, increasing ruminal propionate and butyrate without affecting greenhouse gas emissions. Feeding up to 15% CG improves feed efficiency but depresses marbling and tends to decrease Quality Grade. Removing supplemental salt from CG-diets has no impact on performance or carcass traits.

Abstract
Flint corn processing method [coarse ground corn (CGC; 3.2 mm average particle size) or steam-flaked corn (SFC; 0.360 kg/L flake density)] was evaluated in conjunction with 4 levels of NDF from sugarcane bagasse (SCB) as roughage source (RNDF; 4%, 7%, 10%, and 13%; DM basis) to determine impact on growth performance, carcass characteristics, starch utilization, feeding behavior, and rumen morphometrics of Bos indicus beef cattle. Two hundred and forty Nellore bulls were blocked by initial BW (350 ± 37 kg), assigned to 32 feedlot pens and pens within weight block were randomly assigned, in a 2 × 4 factorial arrangement (2 corn processing and 4 levels of RNDF) to treatments. Effects of corn grain processing × RNDF level were not detected (P ≥ 0.14) for growth performance, dietary net energy concentration, carcass traits, rumen morphometrics, and feeding behavior, except for time spent ruminating and time spent resting (P ≤ 0.04), and a tendency for papillae width (P ≤ 0.09). Bulls fed SFC-based diets consumed 7% less (P = 0.001), had 10.6% greater carcass-adjusted ADG (P < 0.001) and 19% greater carcass-adjusted feed efficiency (P < 0.001) compared with bulls fed CGC-based diets. Observed net energy for maintenance and gain values were 14.9% and 19.4% greater (P < 0.001), respectively, for SFC than for CGC-based diets. Fecal starch concentration was less (P < 0.001) for bulls fed SFC compared with those fed CGC. No grain processing effects were detected (P = 0.51) for rumenitis score; however, cattle fed SFC presented smaller ruminal absorptive surface area (P = 0.03). Dry matter intake increased linearly (P = 0.02) and carcass-adjusted feed efficiency tended (P = 0.06) to decrease linearly as RNDF increased. Dietary RNDF concentration did not affect carcass characteristics (P ≥ 0.19), except for dressing percentage, which tended to decrease linearly (P = 0.06) as RNDF in finishing diets increased. Increasing RNDF in finishing diets had no effect (P = 0.26) on time spent eating, but time spent ruminating and resting increased linearly (min/d; P < 0.001) with increased dietary RNDF. Steam flaking markedly increased flint corn energy value, net energy of diets, and animal growth performance, and led to improvements on feed efficiency when compared with grinding, regardless of RNDF content of diets. Increasing dietary RNDF compromised feedlot cattle feed efficiency and carcass dressing.

Abstract
Effects of Co on fiber digestibility in horses are largely unknown. Our objective was to evaluate effects of Co chloride on in vitro gas production, VFA production, and dry matter (DM) disappearance (IVDMD) using cecal fluid from 4 cannulated Quarter Horses. Five grams DM of alfalfa or smooth bromegrass hay were provided as substrate with Co added at 0.0, 0.5, 5.0, 25.0, or 50.0 mg/kg substrate DM. Ten milliliters cecal fluid and 140 mL McDougall's buffer were incubated in duplicate, and pH, VFA concentrations, and IVDMD were measured after 48 hours. Gas production, used as an indicator of fermentative activity, was recorded every 15 minutes. Terminal pH was not affected by Co or forage type (P > .19). There was greater IVDMD in cultures containing alfalfa (29.2%) compared with smooth bromegrass hay (19.4%; P < .01). There was a forage × Co interaction (P < .05) in which gas production was greater in cultures containing alfalfa, and 5 mg Co/kg substrate DM led to greater gas production than 50 mg Co/kg substrate DM in cultures containing brome (P < .05). Gas production was affected by forage, Co, and time (P < .01). Production of individual and total VFA, as well as acetate:propionate (A:P) ratio were increased in cultures containing alfalfa (P < .05); however, there were no effects of Co on VFA concentrations (P > .05). While gas production was influenced by Co in cultures containing brome, no effects of Co were observed for pH, VFA, or IVDMD.

Abstract
Eight cecally cannulated Quarter Horses were used in a replicated 4 × 4 Latin square experiment conducted in four 14-d periods to determine effects of sodium caseinate (casein) on hindgut fermentation and fiber digestion. During each period, horses were assigned to one of four treatments consisting of control (water; CON), 0.125 g casein/kg BW (LOW), 0.25 g casein/kg BW (MED), or 0.5 g casein/kg BW (HI). Casein was solubilized in 800 mL water and dosed directly into the cecum at 0700 and 1900 hours using a metal dosing syringe. Smooth Bromegrass hay (CP 8.50%), water, and salt were provided ad libitum. New hay was fed at 0700 and 1900 hours, and orts were recorded at 1900 daily. During the final 3 d of each period, cecal digesta were collected every 6 h, pH was measured, and samples were frozen for subsequent analyses of VFA and NH3 concentrations. Feed intake during the final 4 d of each period was recorded. Feces were collected during the 3-d sampling period, pooled, subsampled, and frozen. Fecal samples were analyzed for pH and used to determine digestibilities of DM, OM, NDF, and ADF. Statistical analyses were performed via the GLIMMIX procedure of SAS 9.4. Linear and quadratic effects of sodium caseinate on pH, VFA concentrations, and apparent digestibility were assessed by SAS. Digestibilities of DM, OM, ADF, and NDF were unaffected by treatment (P > 0.40). Horses dosed with CON and MED treatments had greater cecal pH than those fed LOW or HI treatments (P < 0.01). Cecal NH3 concentrations increased linearly in response to the amount of casein administered (P < 0.01). Cecal NH3 decreased 6 h after dosing and addition of new hay, regardless of treatment (P < 0.01). Total cecal VFA were unaffected by treatment (P > 0.10), but VFA changed over time with the greatest concentrations observed 6 h after treatments were administered and introduction of new hay (P < 0.01). Treatment did not affect DMI (P ≥ 0.17). In this experiment, cecal infusions of sodium caseinate had minimal to no effect on fermentation parameters or fiber degradation in the horse. A type II error may have occurred due to small population size or the medium quality hay fed to these horses provided sufficient N for microbial fermentation.

Abstract
Effects of supplemental Zn as Zn sulfate on feedlot performance, carcass traits, and antimicrobial resistance were evaluated using 480 crossbred heifers (BW = 385 kg ± 13.08) in a randomized complete block design. Heifers were blocked by BW and randomly assigned within block to diets with 0, 30, 60, or 90 mg supplemental Zn/kg DM. Heifers were housed in dirt-surfaced pens (20 animals per pen; 6 pens per treatment) equipped with fence-line feed bunks and automatic water fountains. Heifers were fed once daily to ensure ad libitum intake. Plasma was collected on day 0 from five randomly selected heifers per pen and repeated on days 63 and 115 to determine plasma Zn concentrations. Random samples of freshly voided feces were collected from the surface of each pen the day of harvest to determine antibiotic resistance. Heifers were transported on day 144 to a commercial abattoir where hot carcass weight (HCW) and incidence of liver abscesses were recorded at harvest and HCW, dressed yield, ribeye area, 12th rib fat, quality and yield grades were recorded after 36 h of refrigeration. Plasma Zn concentration increased (P = 0.02) linearly in response to increasing concentrations of dietary Zn. Final BW and ADG were unaffected by supplementation (P ≥ 0.29). Quantified levels of resistance to ceftriaxone and tetracycline among fecal Escherichia coli were not impacted (P > 0.05) by dietary zinc concentrations. Increasing Zn concentrations tended to decrease (linear effect, P = 0.07) DMI, resulting in a linear (P = 0.03) and tendency for quadratic (P = 0.12) improvement in feed efficiency with increasing Zn concentration. No differences were detected for HCW, dressed yield, ribeye area, 12th rib fat, percentages of carcasses grading Select or Choice, or yield grade (P > 0.53), but added Zn tended to affect percentage of carcasses that graded Prime, peaking at 60 mg/kg added Zn (quadratic effect, P = 0.07). In vitro fermentations were performed using ruminal fluid cultures containing 0, 30, 60, 90, 120, or 150 mg Zn/kg substrate DM to determine impact of Zn on gas production, VFA concentrations, and in vitro DM disappearance (IVDMD). There were no effects of Zn on in vitro gas production, IVDMD, or most VFA (P > 0.15), but isovalerate decreased linearly in response to added Zn (P = 0.05). Supplementing finishing heifers up to 60 mg Zn/kg diet DM improved feed efficiency compared to other treatments.

Abstract
Liver abscesses (LA) are a source of economic loss for feedlot cattle feedlots, and the 2017 veterinary feed directive has restricted further use of tylosin phosphate to prevention and control of LA. Our objective was to evaluate effects of intermittent tylosin phosphate feeding on incidence and severity of LA in feedlot cattle and presence of total antimicrobial-resistant Enterococcus spp. Steers (n = 312, 411.4 ± 6.71 kg) were blocked by initial BW and randomly assigned to a treatment group. Treatments included a negative control group (no tylosin phosphate throughout the finishing period), a positive control group (tylosin phosphate fed continuously throughout the finishing period), and a group that received tylosin phosphate off-label by feeding the drug on a repeated intermittent basis (1 wk on, 2 wk off). Steers were housed in 24 soil-surfaced pens with 13 steers per pen. Body weights of cattle were obtained every 28 d and at the end of 119 d the steers were weighed and harvested at a commercial abattoir. Fecal samples were collected on days 0, 21, and 118 to characterize antimicrobial-resistant Enterococcus spp. Total LA percentage was greater (P = 0.012) for the no tylosin phosphate treatment compared with the other treatments, but did not differ between the continuous tylosin phosphate treatment and the intermittently fed tylosin phosphate treatment (P = 0.716). No difference was observed among treatments for ADG (P = 0.21), DMI (P = 0.28), or G:F (P = 0.75). Marbling score was lower (P = 0.022) for tylosin phosphate treatment when compared with both intermittent treatment and continuous tylosin phosphate treatment. Enterococcus spp. bacterial counts did not differ by treatment group over time (P > 0.05); however, there was a strong period effect for macrolide resistance among all groups (P < 0.01), suggesting an important environmental component as cattle were first placed in pens and then progressed through the feeding period. We conclude that feeding tylosin phosphate intermittently during the finishing phase decreases the total percentage of LA and maintains feedlot performance and carcass characteristics to the same extent as feeding tylosin phosphate throughout the finishing phase; furthermore, we hypothesize that enteric antimicrobial resistance is a result of longer term antibiotic usage in a particular environment rather than a direct short-term result of the treatment during any given feeding period.

Abstract
USA beef production is characterized by a diversity of climates, environmental conditions, animal phenotypes, management systems, and a multiplicity of nutritional inputs. The USA beef herd consists of more than 80 breeds of cattle and crosses thereof, and the industry is divided into distinct, but ofttimes overlapping sectors, including seedstock production, cow-calf production, stocker/backgrounding, and feedlot. Exception for male dairy calves, production is predominantly pastoral-based, with young stock spending relatively brief portions of their life in feedlots. The beef industry is very technology driven, utilizing reproductive management strategies, genetic improvement technologies, exogenous growth promoting compounds, vaccines, antibiotics, and feed processing strategies, focusing on improvements in efficiency and cost of production. Young steers and heifers are grain-based diets fed for an average of 5 months, mostly in feedlots of 1,000 head capacity or more, and typically are slaughtered at 15 to 28 months of age to produce tender, well-marbled beef. Per capita beef consumption is nearly 26 kg annually, over half of which is consumed in the form of ground products. Beef exports, which are increasingly important, consist primarily of high value cuts and variety meats, depending on destination. In recent years, adverse climatic conditions (i.e., draught), a shrinking agricultural workforce, emergence of food-borne pathogens, concerns over development of antimicrobial resistance, animal welfare/well-being, environmental impact, consumer perceptions of healthfulness of beef, consumer perceptions of food animal production practices, and alternative uses of traditional feed grains have become increasingly important with respect to their impact on both beef production and demand for beef products. Similarly, changing consumer demographics and globalization of beef markets have dictated changes in the types of products demanded by consumers of USA beef, both domestically and abroad. The industry is highly adaptive, however, and responds quickly to evolving economic signals.

Abstract
Interactive effects of supplemental Zn and zilpaterol hydrochloride (ZH) were evaluated in feedlot steers ( = 40; 652 kg ± 14 initial BW) to determine their impact on feedlot performance, blood constituents, and carcass traits. The study was conducted as a randomized complete block design with a 2 × 2 factorial treatment arrangement. Steers were blocked by BW and randomly assigned to treatments. Factors consisted of supplemental Zn (60 or 300 mg/kg diet DM) and ZH (0 or 8.33 mg/kg) in the diets. For diets supplemented with 300 mg Zn/kg DM, 60 mg Zn/kg was supplemented as zinc sulfate and 240 mg Zn/kg was supplemented as zinc oxide, and the diet was fed for 24 d. Zilpaterol hydrochloride was fed for 21 d followed by a 3-d withdrawal. Cattle were housed in partially covered individual feeding pens equipped with automatic waterers and fence-line feed bunks and were fed once daily for ad libitum intake. Plasma samples were collected on d 0 and 21 to assess changes in Zn, plasma urea nitrogen (PUN), glucose, and lactate concentrations, and serum samples were collected on d 21 to assess IGF-1 concentration. On d 25, cattle were weighed and transported 450 km to a commercial abattoir for harvest; HCW and incidence of liver abscesses were recorded. Carcass data were collected after 36 h of refrigeration. Data were analyzed as a mixed model with Zn, ZH, and Zn × ZH as fixed effects; block as a random effect; and steer as the experimental unit. No interaction or effects of Zn or ZH were observed for IGF-1 concentration, plasma glucose, or lactate concentrations ( ≥ 0.25). No interaction between Zn and ZH was observed for PUN concentration, but PUN decreased with ZH ( < 0.01). There were no effects of ZH or Zn on ADG, DMI, final BW, feed efficiency, HCW, back fat, KPH, quality grade, or incidence of liver abscesses ( > 0.05). Zinc supplementation tended ( = 0.08) to improve the proportion of carcasses grading USDA Choice. Feeding ZH decreased yield grade ( = 0.05) and tended to increase LM area ( = 0.07). In conclusion, increasing dietary concentrations of Zn does not impact response to ZH, but feeding ZH altered circulating concentrations of PUN.

Abstract
Interactive effects of supplemental Zn and ractopamine hydrochloride (RH) were evaluated using 156 crossbred heifers (initial BW = 527 kg ± 6.61; gross BW × 0.96) to determine the impact on feedlot performance, plasma urea nitrogen (PUN), and carcass characteristics. The study was conducted as a randomized complete block design with a 2 × 2 factorial arrangement of treatments. Factors consisted of 1) 30 or 100 mg supplemental Zn/kg diet DM (30Zn or 100Zn) as Zn sulfate and 2) 0 or 200 mg RH/heifer daily. Heifers were blocked by BW and assigned randomly within block to treatments for a 43-d trial. Heifers were housed in partially covered feeding pens (3 heifers/pen; 13 pens/treatment) and provided ad libitum access to feed. Ractopamine hydrochloride was fed for 42 d and removed from the diet until cattle were harvested on d 43. Zinc treatments were fed until harvest. Plasma samples were collected on d 0 and 36 to assess changes in plasma Zn and PUN. On d 43, heifers were weighed, then transported to a commercial abattoir where HCW and incidence of liver abscesses were recorded. Carcass data were collected after 32 h of refrigeration. No Zn × RH interactions were observed for plasma Zn or PUN ( ≥ 0.58); however, there was a tendency for a RH × day interaction for PUN ( = 0.08). Supplementing 100Zn resulted in increased plasma Zn ( = 0.02) compared to 30Zn. No RH × Zn interactions were observed for feedlot performance ( ≥ 0.24). Final BW and ADG increased with RH supplementation ( ≤ 0.02), but DMI was not affected ( = 0.63); thus, feed efficiency improved ( < 0.01) when heifers were fed RH. Supplementing 100Zn tended to reduce ADG ( = 0.07) but did not affect other measures of feedlot performance ( ≥ 0.12). Zinc × RH interactions were observed for LM area and yield grade ( ≤ 0.01); LM area decreased and yield grade increased when heifers were supplemented 100Zn with no RH compared to other treatments. A tendency for a Zn × RH interaction was observed for dressed yield ( = 0.08), but no other interactions or effects of Zn were detected for carcass traits ( ≥ 0.11). Supplementing RH increased HCW ( = 0.03) but did not affect other carcass traits ( ≥ 0.13). In conclusion, supplemental Zn had little impact on feedlot performance or PUN concentration but may alter muscle and fat deposition when fed in conjunction with RH.

Abstract
Condensed tannins (CT), prior dietary CT exposure, animal species, and antimicrobial inclusion effects on 48 h extent of in vitro fermentation were measured in an experiment with a 3 × 2 × 2 × 3 factorial arrangement of treatments. Treatments included species of inoculum donor (Bos taurus, Ovis aries, or Capra hircus; n = 3/species), prior adaptation to dietary CT (not adapted or adapted), culture substrate (low-CT or high-CT), and antimicrobial additive (none, bacterial suppression with penicillin + streptomycin, or fungal suppression with cycloheximide). Low-CT or high-CT substrates were incubated in vitro using inoculum from animals either not exposed (period 1) or previously exposed to dietary CT (period 2). The extent of IVDMD after 48 h of incubation was greater (P < 0.001) for cultures with low-CT substrate (21.5%) than for cultures with high-CT substrate (16.5%). Cultures with high-CT substrate or with suppressed bacterial activity had less (P < 0.001) gas pressure than cultures with low-CT substrate or cultures with suppressed fungal activity. Total VFA concentrations were greater (P < 0.001) in low-CT cultures when inoculum donors were without prior CT exposure (83.7 mM) than when inoculum was from CT-exposed animals (79.6 mM). Conversely, total VFA concentrations were greater (P < 0.001) in high-CT cultures with tannin-exposed inoculum (59.4 mM) than with nonexposed inoculum (52.6 mM). As expected, CT and suppression of bacterial fermentative activities had strong negative effects on fermentation; however, prior exposure to dietary CT attenuated some negative effects of dietary CT on fermentation. In our experiment, the magnitude of inoculum-donor species effects on fermentation was minor.

Abstract
OBJECTIVE To determine whether infrared thermographic images obtained the morning after overnight heat abatement could be used as the basis for diagnostic algorithms to predict subsequent heat stress events in feedlot cattle exposed to high ambient temperatures. ANIMALS 60 crossbred beef heifers (mean ± SD body weight, 385.8 ± 20.3 kg). PROCEDURES Calves were housed in groups of 20 in 3 pens without any shade. During the 6 am and 3 pm hours on each of 10 days during a 14-day period when the daily ambient temperature was forecasted to be > 29.4°C, an investigator walked outside each pen and obtained profile digital thermal images of and assigned panting scores to calves near the periphery of the pen. Relationships between infrared thermographic data and panting scores were evaluated with artificial learning models. RESULTS Afternoon panting score was positively associated with morning but not afternoon thermographic data (body surface temperature). Evaluation of multiple artificial learning models indicated that morning body surface temperature was not an accurate predictor of an afternoon heat stress event, and thermographic data were of little predictive benefit, compared with morning and forecasted weather conditions. CONCLUSIONS AND CLINICAL RELEVANCE Results indicated infrared thermography was an objective method to monitor beef calves for heat stress in research settings. However, thermographic data obtained in the morning did not accurately predict which calves would develop heat stress later in the day. The use of infrared thermography as a diagnostic tool for monitoring heat stress in feedlot cattle requires further investigation.

Abstract
A combination of yeast and chromium propionate (Y+Cr) was added to the diets of crossbred finishing steers ( = 504; 402 kg ± 5.76 initial BW) to evaluate impact on feedlot performance and carcass traits. We hypothesized supplementation of Y+Cr would increase growth of feedlot steers. Steers with initial plasma glucose concentrations ≤6.0 m were stratified by initial BW and randomly allocated, within strata, to receive 0 (control) or 3.3 g/d Y+Cr. Steers were further divided into heavy and light weight blocks with 6 pens/diet within each weight block. Cattle were housed in dirt-surfaced pens with 21 steers/pen and had ad libitum access to feed. Body weights were measured at 21-d intervals. Blood samples were collected on d 49 and 94 from a subset of steers (5/pen) for analyses of plasma glucose and lactate concentrations. At the end of the finishing phase, animals were weighed and transported 450 km to an abattoir in Holcomb, KS. Severity of liver abscesses and HCW were collected the day of harvest, and after 36 h of refrigeration, USDA yield and quality grades, LM area, and 12th rib subcutaneous fat thickness were determined. There were no treatment × time × weight block interactions ( > 0.05) and no treatment × block interaction for ADG, DMI, or final BW ( ≥ 0.06), but a treatment × block interaction ( = 0.03) was observed for G:F, in which control, light cattle had poorer efficiency compared with other groups. Treatment × weight group interactions were observed for overall yield grade and carcasses that graded yield grade 1 ( ≤ 0.04). Light steers supplemented with Y+Cr had decreased overall yield grade and increased percentage of carcasses grading yield grade 1 compared with their control counterparts, with no differences observed for heavy steers. Regardless of weight group, a greater percentage of carcasses from steers supplemented with Y+Cr graded yield grade 2 ( = 0.03) and fewer carcasses from steers supplemented Y+Cr graded yield grade 3 ( < 0.01) than control steers. No interactions or effects of treatment were detected for other carcass measurements ( ≥ 0.07). There were no treatment × weight group interactions or effects of treatment for plasma glucose or lactate concentrations on d 49 or 94 ( > 0.10). Overall, yeast in combination with chromium propionate may improve feed efficiency and decrease yield grade of light cattle but had no effect on remaining carcass traits and blood constituents.

Abstract
The objective of this study was to examine effects of 4 levels of microalgae meal (All-G Rich, CCAP 4087/2; Alltech Inc., Nicholasville, KY) supplementation to the diet of finishing heifers on longissimus lumborum (LL) steak PUFA content, beef palatability, and color stability. Crossbred heifers ( = 288; 452 ± 23 kg initial BW) were allocated to pens (36 pens and 8 heifers/pen), stratified by initial pen BW (3,612 ± 177 kg), and randomly assigned within strata to 1 of 4 treatments: 0, 50, 100, and 150 g·heifer·d of microalgae meal. After 89 d of feeding, cattle were harvested and LL were collected for determination of fatty acid composition and Warner-Bratzler shear force (WBSF), trained sensory panel evaluation, and 7-d retail color stability and lipid oxidation analyses. Feeding microalgae meal to heifers increased (quadratic, < 0.01) the content of 22:6-3 and increased (linear, < 0.01) the content of 20:5-3. Feeding increasing levels of microalgae meal did not impact total SFA or MUFA ( > 0.25) but tended ( = 0.10) to increase total PUFA in a quadratic manner ( = 0.03). Total omega-6 PUFA decreased (linear, = 0.01) and total omega-3 PUFA increased (quadratic, < 0.01) as microalgae meal level increased in the diet, which caused a decrease (quadratic, < 0.01) in the omega-6:omega-3 fatty acid ratio. Feeding microalgae meal did not affect WBSF values or sensory panel evaluation of tenderness, juiciness, or beef flavor scores ( > 0.16); however, off-flavor intensity increased with increasing concentration of microalgae meal in the diet (quadratic, < 0.01). From d 5 through 7 of retail display, steaks from heifers fed microalgae meal had a reduced a* value and oxymyoglobin surface percentage, with simultaneous increased surface metmyoglobin formation (quadratic, < 0.01). Lipid oxidation analysis indicated that at d 0 and 7 of display, as the concentration of microalgae meal increased in the diet, the level of oxidation increased (quadratic, < 0.01). Muscle fiber type percentage or size was not influenced by the inclusion of microalgae meal in diets ( > 0.19); therefore, the negative effects of microalgae on color stability were not due to fiber metabolism differences. Feeding microalgae meal to finishing heifers improves PUFA content of beef within the LL, but there are adverse effects on flavor and color stability.

Abstract
The objective of this study was to examine the effects of feeding microalgae meal (All-G Rich, CCAP 4087/2; Alltech Inc., Nicholasville, KY) to finishing heifers on 85% lean and 15% fat (85/15) ground beef PUFA content, palatability, and color stability. Crossbred heifers ( = 288; 452 ± 23 kg initial BW) were allocated to pens (36 pens and 8 heifers/pen), stratified by initial pen BW (3,612 ± 177 kg), and randomly assigned within strata to 1 of 4 treatments: 0, 50, 100, and 150 g·heifer·d of microalgae meal. After 89 d of feeding, a subset of heifers (3/pen) was harvested and the rectus femoris, vastus lateralis, vastus medialis, and vastus intermedius were collected for processing into ground beef. At 42 d postmortem, 85/15 ground beef was formulated and formed into 112-g patties and fatty acid composition, subjective palatability, and 96-h retail color stability analyses were conducted. Increasing dietary microalgae meal concentration increased ground beef 20:5-3 and 22:6-3 fatty acids (quadratic, < 0.01). There was a treatment × hour interaction for all color attributes ( < 0.01). On d 0, microalgae tended ( = 0.08) to decrease L*, but patties had similar L* values the remainder of display ( > 0.12). Feeding microalgae meal affected ( = 0.02) b* at 24 h and decreased (linear, = 0.08) b* at 48 h. From h 0 to 36 of display, microalgae affected redness of patties ( < 0.02), and from 48 to 72 h, microalgae meal decreased a* value (linear, < 0.04). Microalgae meal did not impact sensory panel firmness, overall tenderness, or juiciness scores ( > 0.20) but tended to affect ( = 0.10) cohesiveness scores. As the amount of microalgae meal fed to heifers increased, beef flavor intensity decreased (linear, < 0.01) and off-flavor intensity increased (quadratic, < 0.05). Surface oxymyoglobin and metmyoglobin were impacted by microalgae meal from 12 to 36 h of display ( < 0.01). From 48 to 84 h of display, feeding microalgae meal to heifers decreased (linear, < 0.09) surface oxymyoglobin and increased (linear, < 0.02) surface metmyoglobin of patties. Although feeding microalgae meal to heifers increases the PUFA content of 85/15 ground beef, there are undesirable effects on flavor and color stability.

Abstract
This study was conducted to evaluate the effects of flint corn processing method (CPM) and level of NDF from roughage (rNDF) on performance, carcass characteristics, and starch utilization by finishing Nellore-based cattle fed high-concentrate, flint corn-based diets. In this study, 112 Nellore type bulls (initial BW 384.07 ± 29.53 kg and 24-36 mo of age) were individually fed using Calan gates or individual pens. The animals were used in a randomized complete block design in a 2 × 4 factorial arrangement with 2 CPM, high-moisture flint corn (HMC) or finely ground dry flint corn (FGC), with 1 of 4 levels of rNDF, 3, 8, 13, and 18% (DM basis), using sugarcane silage (SS) as roughage. Bulls were adapted to the finishing diet over a 21-d period and fed for a total of 81 d. Fecal starch (FS) concentration was determined on d 46 and 74 of the feeding period. There was a quadratic effect of rNDF on final BW ( < 0.01) and ADG ( = 0.01). Optimal concentrations of rNDF were estimated using the first derivative of second order polynomials, indicating that final BW and ADG were maximized with 13.3 and 13.0% rNDF, respectively. An interaction was observed between CPM and rNDF ( = 0.05) for DMI, with peak DMI occurring at 11.3 and 13.7% rNDF with FGC and HMC, respectively. Cattle fed HMC had 13.9% greater G:F ( < 0.01) compared with those fed FGC (0.172 vs. 0.151, respectively). There were quadratic effects of rNDF on HCW ( = 0.04) and ME intake ( < 0.01); heaviest carcass weights were estimated, in both cases, to be achieved with 12.8% rNDF. A quadratic effect of rNDF for renal, pelvic, and inguinal fat weight ( = 0.04) was observed, with a peak estimated to occur at 12.6% rNDF. An interaction between CPM and rNDF also was observed for FS ( < 0.05). Bulls fed FGC with 3% rNDF had greater FS content, and FS linearly decreased as concentration of rNDF increased. For bulls fed HMC, FS was 3.0% of DM and was unaffected by rNDF in the diet. Lower FS from bulls fed HMC suggests that availability of starch from flint corn was greater than that of FGC. For Nellore-based cattle fed a flint corn-based diet containing SS and 8% whole lint cottonseed, performance was optimized with 12.8% rNDF. In the absence of cottonseed addition to diets, optimal performance would be expected with about 14.5% rNDF.

Abstract
The objective of this study was to evaluate the efficacy of protecting PUFA within ground flaxseed against ruminal biohydrogenation by encapsulating them in a matrix consisting of a 1:1 blend of ground flaxseed and dolomitic lime hydrate (L-Flaxseed). Crossbreed heifers ( = 462, 346 ± 19 kg) were blocked by weight and randomly assigned to pens. Pens were assigned to 1 of 6 dietary treatments in a randomized complete block design. Treatment 1 consisted of a combination of 54.6% steam-flaked corn (SFC), 30.0% wet corn gluten feed, 8.0% roughage, and supplement (0% flaxseed). In treatments 2 and 3, a proportion of SFC was replaced with 3 and 6% flaxseed, respectively; in treatments 4, 5, and 6, SFC was replaced with 2, 4, or 6% L-Flaxseed, respectively. Cattle were fed for 140 or 168 d and then harvested in a commercial abattoir where carcass data were collected. Approximately 24 h after harvest, carcasses were evaluated for 12th-rib fat thickness, KPH, LM area, marbling score, and USDA yield and quality grades. Samples of LM were also obtained for determination of long-chain fatty acid profiles. Cattle that were fed diets with 4 and 6% L-Flaxseed consumed less feed than other treatments ( < 0.05), which adversely affected ADG. Compared with cattle fed 0% flaxseed, cattle in these treatments had lower final BW (18 and 45 kg less for the 4 and 6% L-Flaxseed treatments, respectively), less ADG (0.16 and 0.48 kg/day less for the 4 and 6% L-Flaxseed treatments, respectively), and lower carcass weights, dressing percentages, LM areas, backfat thicknesses, and marbling scores ( < 0.05). The addition of flaxseed or 2% L-Flaxseed did not affect performance or carcass traits ( > 0.05). Supplementation with flaxseed increased ( < 0.05) the concentration of α-linolenic acid (ALA) in meat (0.173, 0.482, 0.743 mg/g for 0, 3, and 6% flaxseed, respectively). Furthermore, proportionate increases in the ALA content of muscle tissue were 47% greater when flaxseed was encapsulated within the dolomitic lime hydrate matrix (0.288, 0.433, 0.592 mg/g for 2, 4, and 6% L-Flaxseed, respectively). Both products showed a linear response in ALA concentration ( > 99%; increases for Flaxseed and L-Flaxseed of 0.095 and 0.140 mg of ALA/g of tissue for each percentage of flaxseed added). This study indicates that a matrix consisting of dolomitic lime hydrate is an effective barrier to ruminal biohydrogenation of PUFA; however, adverse effects on DMI limit the amounts that can be fed.

Abstract
Three methods for protection of PUFA against biohydrogenation by ruminal microorganisms were evaluated. In method 1 a blend of ground flaxseed, calcium oxide, and molasses was processed through a dry extruder. In method 2, a blend of ground flaxseed, soybean meal, molasses, and baker's yeast was moistened and prewarmed, allowing enzymes from yeast to produce reducing sugars, and the mixture was subsequently processed through a dry extruder like in method 1. In method 3, ground flaxseed was embedded within a matrix of dolomitic lime hydrate (L-Flaxseed) as a protective barrier against biohydrogenation. Dolomitic lime was mixed with ground flaxseed, water was added, the mixture was blended in a high-speed turbulizer, and the resulting material was then dried to form a granular matrix. Methods 1 and 2 were tested in 1 study (study 1), and method 3 was tested in 2 studies (studies 2 and 3). In study 1, 60 crossbred yearling steers (BW = 475 ± 55 kg) were used in a randomized complete block design experiment. Steers were fed for 12 d with a diet consisting of 48.73% steam-flaked corn, 35% wet corn gluten feed, 12% corn silage, and 4.27% vitamins and minerals (Control). For the other 4 treatments, a portion of wet corn gluten feed was replaced with 5% of unprocessed or extruded mixtures as described for methods 1 and 2. Steers were weighed, and jugular blood samples were taken for analysis of long-chain fatty acids (LCFA) on d 0 and 12 of the study. Both methods failed to improve resistance of PUFA against biohydrogenation (P > 0.1). In study 2, in situ fatty acid disappearance was evaluated for ground flaxseed (Flaxseed) or L-Flaxseed using 6 ruminally fistulated Holstein steers. The proportion of α-linolenic acid (ALA) that was resistant to ruminal biohydrogenation was approximately 2-fold greater for L-Flaxseed than for Flaxseed (P < 0.05). In study 3, 45 steers (269 ± 19.5 kg initial BW) were used in a randomized complete block design. Steers were fed diets containing 0% Flaxseed (No Flaxseed), and in treatments 2 and 3, a portion of flaked corn was replaced with Flaxseed or L-Flaxseed. Animals were weighed and blood samples were taken on d 0, 7, and 14 of the study, and LCFA were analyzed. The use of L-Flaxseed in study 3 increased plasma concentrations of ALA to more than 4 times the level observed in cattle fed unprotected flaxseed, suggesting the dolomitic lime hydrate was effective as a protective barrier against biohydrogenation.

Abstract
AIMS The objective was to investigate whether in-feed supplementation of copper, at elevated level, co-selects for macrolide resistance in faecal enterococci. METHODS AND RESULTS The study was conducted in cattle (n = 80) with a 2 × 2 factorial design of copper (10 or 100 mg kg(-1) of feed) and tylosin (0 or 10 mg kg(-1) of feed). Thirty-seven isolates (4·6%; 37/800) of faecal enterococci were positive for the tcrB and all were Enterococcus faecium. The prevalence was higher among cattle fed diets with copper and tylosin (8·5%) compared to control (2·0%), copper (4·5%) and tylosin (3·5%) alone. All tcrB-positive isolates were positive for erm(B) and tet(M) genes. Median copper minimum inhibitory concentrations (MICs) for tcrB-positive and tcrB-negative enterococci were 20 and 4 mmol l(-1) , respectively. CONCLUSIONS Feeding of elevated dietary copper and tylosin alone or in combination resulted in an increased prevalence of tcrB and erm(B)-mediated copper and tylosin-resistant faecal enterococci in feedlot cattle. SIGNIFICANCE AND IMPACT OF THE STUDY In-feed supplementation of elevated dietary copper has the potential to co-select for macrolide resistance. Further studies are warranted to investigate the factors involved in maintenance and dissemination of the resistance determinants and their co-selection mechanism in relation to feed-grade antimicrobials' usage in feedlot cattle.

Abstract
Dietary Ca concentrations were manipulated during supplementation of zilpaterol hydrochloride (ZH) to evaluate impact on feedlot performance, carcass characteristics, and beef tenderness using 96 heifers (BW 392 kg ± 3.2). We hypothesized that temporary depletion followed by repletion of dietary Ca before harvest would increase intracellular Ca concentrations, thus stimulating postmortem activity of Ca-dependent proteases to effect changes in tenderness. Heifers were stratified by initial BW and randomly assigned, within strata (block), to treatments consisting of a finishing diet in which Ca was added in the form of limestone (+Ca) or removed (-Ca) during ZH supplementation. Cattle were fed a common diet, including limestone, before ZH supplementation, and 28 d before slaughter, ZH was added to the diet with and without supplemental Ca. Calcium content of the diets during ZH supplementation was 0.74% or 0.19% (diet DM) for +Ca and -Ca, respectively. Zilpaterol hydrochloride was fed for 25 d then removed from the diet 3 d before harvest. The final 3 d before harvest, all cattle were fed Ca at 0.74% of diet DM. Heifers were housed in concrete-surfaced pens with 8 animals/pen (6 pens/treatment). At the end of the finishing phase, animals were weighed and transported to an abattoir in Holcomb, KS. Severity of liver abscesses and HCW were collected the day of harvest, and after 48 h of refrigeration, USDA yield and quality grades, KPH, LM area, and 12th-rib subcutaneous fat thickness were determined. Boneless loin sections were also collected for Warner-Bratzler shear force determination. Removal of Ca did not affect Warner-Bratzler shear force values (P = 0.64). In addition, ADG, DMI, final BW, and feed efficiency were unaffected by treatment (P > 0.05). Carcass measurements also were unaffected by the temporary decrease in dietary Ca (P > 0.05). In conclusion, temporary depletion of dietary Ca during ZH supplementation did not alter beef tenderness, live animal performance, or carcass measurements.

Beef steers (64 pens; 8 steers/pen) were allocated to a randomized complete block design with a 2 × 2 factorial treatment arrangement. Factor 1 consisted of diet, with cattle fed a conventional (CON) diet or a diet consisting of Programmed Nutrition Beef Program (PN) supplements. The PN treatment included Programmed Nutrition Beef Receiver fed from d 1 through 20 of feeding and Programmed Nutrition Beef Finisher fed from d 21 to harvest. Factor 2 evaluated the presence (EGP+) or absence (EGP-) of exogenous growth promotants (ExGP) in the production system. Steers in the EGP+ treatments were initially implanted with Component E-S, reimplanted with Component TE-IS, and fed 400 mg·animal·dof ractopamine hydrochloride for the final 28 d before harvest. Steers were harvested on d 175, and strip loins were removed from 2 carcasses selected at random from each pen for transport to Kansas State University. One 1.27-cm-thick steak was removed from the anterior face for proximate and long-chain fatty acid analysis. There were no diet × ExGP interactions ( > 0.10) for feedlot performance except for DMI ( = 0.02). Steers in the PN/EGP+ treatment consumed more feed than all other treatments ( < 0.05). Both diet and ExGP affected DMI ( < 0.05), with PN and EGP+ steers consuming more feed than their contemporaries. Gain:feed and ADG were unaffected ( > 0.10) by diet, but ExGP improved these measures ( < 0.01). There were no diet × ExGP interactions for carcass characteristics except KPH fat and percentages of yield grade 3 and 4 carcasses ( < 0.05). Diet affected total incidence of liver abscesses because PN steers had a greater ( = 0.05) incidence of liver abscesses than steers in the CON treatment. Diet did not affect the other carcass characteristics ( > 0.10). Use of ExGP increased ( < 0.05) HCW, LM area, and 12th-rib fat but did not affect ( > 0.10) marbling score. Using ExGP reduced the percentage carcasses grading Premium Choice ( < 0.05). No diet × ExGP interactions or diet effects were detected for long-chain fatty acid profiles ( > 0.10). Use of ExGP increased ( < 0.05) the ratio of saturated:unsaturated fatty acids. In summary, the alternative feeding strategy presented in this study produced similar feedlot performance and carcass characteristics compared with a conventional feedlot system.

Abstract
The objective of this study was to examine the effects of alternative finishing strategies on beef steak color and cooked meat characteristics. Beef steers (n = 64 pens; 8 steers/pen) were allocated to a randomized complete block design with a 2 × 2 factorial treatment arrangement and initial body weight serving as the blocking factor. Factor 1 consisted of dietary treatment with cattle either being fed a conventional feedlot diet (CON) or a diet that included Programmed Nutrition Beef Program supplements. Cattle in the Programmed Nutrition (PN) treatments were fed in two-stages: 1) the basal diet with Programmed Nutrition Beef Receiver from d 1 to 20 and the basal diet with Programmed Nutrition Beef Finisher from d 21 to harvest. Factor 2 consisted of the inclusion (EGP+) or absence (EGP-) of an exogenous growth promoting program. Steers in the EGP+ treatments were implanted initially with Component E-S, reimplanted with Component TE-IS, and fed 400 mg · d(-1) · steer(-1) of ractopamine hydrochloride for the final 28 d before harvest. Steers were harvested on d 175 of feeding and 1 strip loin was removed from 2 carcasses selected at random from each pen for transport to Kansas State University. After 14 d of aging, loins were fabricated into 2.54-cm thick steaks for objective and trained sensory panel measurement of cooked meat characteristics and objective color measurements during 7 d retail display. There were no interactions (P > 0.10) between feeding strategy and exogenous growth promotants for all objective measures of color and cooked meat characteristics. Throughout the display period, PN steaks were darker (P = 0.02) than CON steaks, but surface percentages of oxymyoglobin and metmyoglobin and metmyoglobin reducing ability were unaffected by feeding strategy (P > 0.10). Loins and steaks from PN cattle possessed decreased moisture loss during aging and cooking (P < 0.01). Trained sensory panel evaluation of cooked meat revealed a dietary program × growth promotant interaction for myofibrillar tenderness, connective tissue amount, and overall tenderness (P = 0.01). Compared to the CON/EGP- and PN/EGP- treatments, steaks from the CON/EGP+ and PN/EGP+ treatments were evaluated by panelists as being less myofibrillar and overall tender (P < 0.05). The alternative feeding strategies presented in this study can favorably impact water-holding capacity without negatively compromising retail display discoloration.

Abstract
Our objectives were to evaluate the effects of transportation and lairage on fecal shedding of Escherichia coli O157 (E. coli O157), total Escherichia coli, and total coliforms in feedlot cattle, and the relationships between E. coli O157 prevalence and total E. coli population. The study was a randomized complete block design with a split-plot including 2 treatments: a nontransported group, which remained in its pen at all times, and a transported group, which was transported for 1 h in a trailer and subsequently unloaded in a different pen. The experiment was repeated on 3 different days (blocking factor) with 20 steers/d (10 steers/treatment, 60 total). Fecal samples were taken pretransport (h 0) and after 4 and 28 h, lairage from freshly voided fecal pats were taken from each animal. One gram of feces was transferred to a PBS tube, serially diluted, and plated onto Petrifilm for enumeration of total coliforms. Another sample (1 g) was added to gram-negative broth containing cefixime, cefsulodin, and vancomycin, and subjected to immunomagnetic separation. Resulting beads were plated onto MacConkey agar with sorbitol, cefixime, and tellurite. Nonsorbitol fermenting colonies were selected and tested for indole production and O157 antigen agglutination. Results were confirmed using an API 20E kit. Prevalence of E. coli O157 was transient across blocks. E. coli O157 prevalence revealed no treatment × sampling time interaction (P = 0.179) or sampling time effect (P = 0.937), but a tendency for a treatment effect (P = 0.092). Numbers of E. coli and other coliforms did not change across blocks. No effect of treatment (P > 0.7) was observed on total E. coli concentrations or total coliforms. However, tendencies for treatment × sampling time interactions were observed on both populations (P < 0.08), as well as a tendency for a sampling time effect on total E. coli (P = 0.087) and an effect on total coliforms (P = 0.004). Prevalence of E. coli O157 was not correlated with the concentration of total E. coli (P = 0.954). Results suggest that shedding of E. coli O157 and coliforms can vary within a period of 29 h. Greater statistical power and pathogen quantification, as well as hide sampling and stress-related measurements, are needed to be able to conclude on the effects of transport stress on E. coli O157 prevalence and the changes undergone in pathogen shedding patterns after transportation.

Abstract
Trials were conducted with beef heifers at 4 sites to evaluate feedlot performance and carcass characteristics in response to implants containing 14 mg estradiol benzoate and 100 mg trenbolone acetate (EB/TBA; Synovex Choice, Zoetis LLC, New York, NY), 14 mg estradiol benzoate (EB), 100 mg trenbolone acetate (TBA), or a sham-implanted control (SC). The study design at each site was a randomized complete block with 12 blocks and 4 treatments. Blocks of cattle at each site were harvested in commercial abattoirs when masked personnel estimated at least 60% of animals would yield carcasses with USDA quality grades of Choice or Prime. Data were pooled across sites for statistical analysis. Initial BW averaged 374 kg, and days on feed ranged from 98 to 126 d (mean 112 d). Heifers implanted with EB/TBA, EB, and TBA had greater ADG and G:F (P < 0.05) than SC; ADG and G:F were greater for EB/TBA than EB or TBA (P < 0.05). Heifers treated with TBA had greater G:F than EB (P < 0.05). Feed intake was not affected by treatments. Mean HCW and LM area for EB/TBA were greater than for other treatments (P < 0.05). Mean HCW for TBA was greater than SC (P < 0.05) but not different from EB. Mean LM area for EB and TBA were greater than SC (P < 0.05) but not different from each other. There were no treatment differences (P > 0.05) for KPH, 12th-rib fat thickness, or yield grade. Dressing percent was greater for EB/TBA than SC (P < 0.05) but not different from EB or TBA. Marbling score was decreased by EB/TBA (P < 0.05) compared with other treatments, but no other differences were noted. Despite the effect of EB/TBA on marbling scores, there were no significant (P > 0.05) treatment differences on proportions of carcasses with quality grades ≥ Choice vs. < Choice. With respect to ADG and G:F, implants containing EB, TBA, or EB/TBA produced improved responses over SC. Furthermore, EB/TBA induced greater ADG and G:F responses than EB and TBA. Results confirmed that EB and TBA have additive effects, as evidenced by the observation that calves implanted with EB/TBA had significantly greater ADG and G:F than heifers implanted with either EB or TBA alone or compared with SC heifers.

Abstract
Synovex Plus (SP) is a product that delivers 28 mg of estradiol benzoate (EB) and 200 mg of trenbolone acetate (TBA). We studied the impact of a polymeric, porous coating on SP implants (CSP) to prolong release of EB and TBA, and stimulate feedlot performance of feedlot cattle for an extended period. In an explant study, 30 steers were implanted with SP in one ear and CSP in the contralateral ear. Cattle (n = 6/d) were necropsied 40, 81, 120, 160, and 200 d after treatment, and remaining EB and TBA were quantified. Linear regression of EB and TBA remaining as a function of time for each treatment were computed. Rates of EB and TBA depletion from SP were -0.1980 (r(2) = 0.9994) and -1.7073 mg/d (r(2) = 0.9644), respectively, and for CSP rates of EB and TBA depletion were -0.1049 (r(2) = 0.9123) and -0.9466 mg/d (r(2) = 0.9297), respectively. The effect of treatment on depletion rates of each analyte were significant (P < 0.05). Data also showed EB and TBA were delivered from CSP at least 200 d but were delivered from SP about 120 d. Multisite trials with beef-type steers (4 sites) and heifers (4 sites) evaluated feedlot performance and carcass characteristics in response to a CSP implant or when sham implanted (SC). A randomized complete block design with 9 blocks and 2 treatments was used per site within animal gender. Across sites, steers (n = 342, BW = 297 kg) were fed finishing rations for 190 to 202 d (mean 198 d) and heifers (n = 342, BW = 289 kg) were fed finishing rations for 191 to 201 d (mean 198 d). Cattle were harvested and carcasses evaluated. Data were pooled across sites within gender for statistical analysis. Steers and heifers treated with CSP yielded greater (P ≤ 0.003) ADG, DMI, and G:F than SC steers and heifers. Mean BW differences between CSP and SC continued to increase throughout the study, indicating CSP stimulated growth of steers and heifers for 198 d. Mean carcass weights of CSP steers (P = 0.005) and heifers (P = 0.004) were greater than those of SP steers and heifers by 26.2 and 20.6 kg, respectively. The LM area was larger (P < 0.001) in CSP steers and heifers than SC cattle. Marbling decreased with CSP treatment (P ≤ 0.031), which caused reductions (P ≤ 0.006) in proportions of carcasses grading Prime or Choice. Evidence from these studies showed that a single administration of CSP increased feedlot cattle performance for at least 198 d, compared with SC, and may reduce the need to reimplant cattle.

Abstract
The effects of mineral-supplement delivery system on patterns of supplement use by grazing beef cows were measured in 2 studies. Study 1 was conducted on 4 pastures grazed by pregnant, mature beef cows (BW = 562 ± 38 kg) from February to May. Study 2 was conducted on 4 pastures grazed by lactating beef cows (BW = 579 ± 54 kg) and their calves from May to September. Treatments were mineral delivered in salt-based, granular form (salty) or mineral provided in a low-protein, cooked, molasses-based block (sweet); both were fed ad libitum. The salty supplement was supplied to cattle via a covered mineral feeder; the sweet supplement was supplied via an open-topped barrel. Both salty and sweet supplements were deployed in each pasture. No additional salt was supplied to cattle. Forage use in the vicinity of each supplement-deployment site and the frequency and duration of herd visits to each supplement-deployment site were measured during four 14-d periods during study 1 and seven 14-d periods during study 2. Supplements were moved to new locations within pastures at the beginning of each period. Consumption of the sweet supplement was greater than salty during each data-collection period in study 1; however, relative differences in consumption diminished over time (treatment × time, P = 0.03). In study 2, sweet consumption was greater than salty in periods 1, 6, and 7 but was not different from salty during periods 2, 3, 4, and 5 (treatment × time, P < 0.01). Increased consumption of the sweet supplement in study 1 translated to greater frequency of herd visits to supplement-deployment sites compared with the salty sites (2.82 vs. 2.47 herd visits/d; P = 0.02) and longer herd visits to supplement-deployment sites compared with the salty sites (125.7 vs. 54.9 min/herd visit; P < 0.01). The frequency of herd visits to mineral feeding sites in study 2 was similar (P > 0.10) between treatments for periods 1 through 6; however, herds visited the sweet sites more often than salty during period 7 (P < 0.01). Herd visits to the sweet sites were longer than those to the salty sites in study 2 (83.8 vs. 51.4 min/herd visit; P < 0.01). Forage disappearance within 100 m of supplement-deployment sites was not influenced (P ≥ 0.54) by treatment in either study. Results were interpreted to suggest that the sweet supplement influenced the location of grazing cattle more strongly than the salty supplement and may be more effective for luring cattle into specific areas of pasture during the winter, spring, and early fall but not during summer.

Abstract
Inclusion of distillers grains (DG) in cattle diets has been shown to increase fecal shedding of Escherichia coli O157:H7. It is hypothesized that altered gut fermentation by DG may be responsible for the positive association. Therefore, feed additives affecting ruminal or hindgut fermentation of DG also may affect fecal shedding of E. coli O157:H7. The objectives of the study were to evaluate effects of monensin (33 or 44 mg/kg of DM), supplemental urea (0, 0.35, or 0.70% of DM), and ractopamine (0 or 200 mg/steer daily administered during the last 42 d of finishing) in a steam-flaked corn grain-based diet containing 30% wet sorghum DG on fecal shedding of E. coli O157:H7. Seven hundred twenty crossbred beef steers, housed in 48 pens (15 steers/pen), were assigned to dietary treatments in a randomized complete block design with a 2 × 3 × 2 factorial treatment arrangement. Fresh pen floor fecal samples (10 per/pen) were collected every 2 wk for 14 wk (July through November) and cultured for E. coli O157:H7. Isolation of E. coli O157:H7 was by selective enrichment of fecal samples in an enrichment broth, immunomagnetic separation, followed by plating onto a selective medium. Samples that yielded sorbitol-negative colonies, which were positive for indole production, O157 antigen agglutination, and contained rfbE, fliC, and stx2 were considered positive for E. coli O157:H7. Fecal prevalence data were analyzed as repeated measures using negative binomial regression to examine effects and interactions of sampling day, urea, monensin, and ractopamine. Mean fecal prevalence of E. coli O157:H7 was 7.6% and ranged from 1.6 to 23.6%. Cattle fed monensin at 44 mg/kg of feed had less (P = 0.05) fecal E. coli O157:H7 prevalence than cattle fed 33 mg/kg (4.3 vs. 6.8%). Although the reason for the reduction is not known, it is likely because of changes in the microbial ecosystem induced by the greater amount of monensin in the hindgut. Supplemental urea at 0.35 or 0.70% had no effect (P = 0.87) on fecal shedding of E. coli O157:H7. Fecal prevalence of E. coli O157:H7 were 5.3, 5.7, and 5.9% for groups fed 0, 0.35, and 0.7% urea, respectively. The inclusion of ractopamine at 0 or 200 mg/(animal•d) had no effect (P = 0.89) on fecal prevalence of E. coli O157:H7 (4.4 vs. 4.0%). Additional research is needed to confirm the reduction in fecal shedding of E. coli O157:H7 in cattle fed monensin at 44 mg/kg of feed compared with cattle fed 33 mg/kg of feed.
