Abstract
Allyl isothiocyanate (AITC), a natural compound, is a promising food additive and preservative because of its safety and effectiveness. In order to determine optimal AITC concentrations for disinfection of food pathogen on lettuce without compromising postharvest quality, various concentrations of AITC (0, 1, 2.5, 5 and 7.5 µL L-1) were applied to Salmonella Typhimurium inoculated lettuce in air-tight box at 7 °C. As a result, the decline in visual quality, weight loss via cell membrane damage, and significantly reduced antioxidant activity were observed in lettuce treated with an AITC concentration of 2.5 µL L-1, 5 µL L-1 or higher. Moreover, metabolome analysis showed pattern of increased respiratory and cell damage, such as lipid peroxidation. Based on physiological changes, 1 µL L-1 was determined as the optimal AITC concentration that significantly reduced S. Typhimurium population (4.01 log CFU g-1) on lettuce.

Abstract
Sarcocornia A. J. Scott is a halophytic edible succulent plant belonging to the Amaranthaceae family. To date, the genus includes 28 species distributed worldwide in saline environments, usually salt marshes. Sarcocornia (Scott) is similar to Salicornia (L.), which has a recognized commercial value in morphological and taxonomical traits. Species of both genera are commonly named samphire or glassworts in Europe, and their fleshy shoots are commercialized under their traditional names. Due to their nutritional, organoleptic and medicinal properties, Sarcocornia species have a high economic potential in various biotechnology sectors. Being highly tolerant to salt, they can be cultivated in saline conditions, and dissimilar to Salicornia, they are perennial, i.e., they can be harvested year-round. Therefore, Sarcocornia species are considered promising gourmet vegetables to be explored in the context of climate change, soil and water salinization and eco-sustainability. We hereby put together and reviewed the most relevant information on Sarcocornia taxonomy, morphology, nutritional and pharmacological properties, uses in ethnomedicine, potential applications in biotechnology, and propagation strategies.

Abstract
The aim of this study was to investigate the ability of biochar amendment to reduce the availability of Pb in the soil and its uptake in lettuce (Lactuca sativa L. var. adela). Seedlings of lettuce were cultivated in Pb-contaminated soils, both with and without 5% biochar (w/w), as well as in a simplified soilless system (hydroponics) at the ecologically relevant Pb concentration of 100 µM, both with and without 1% biochar. Soils amended with biochar resulted in a ca. 50% reduction of the extractable (bioavailable) fraction of Pb, limiting the accumulation of this toxic element in the leaves of lettuce by ca. 50%. A similar behavior was observed for lettuce plants grown hydroponically, even with a much higher reduction of Pb uptake (ca. 80%). Increased cation exchange capacity and pH were likely the main factors limiting the bioavailability of Pb in the soil. Complexation with functional groups and precipitation/co-precipitation both on the biochar surface and in soil aggregates were likely the main mechanisms immobilizing this element.

Abstract
This work provides companies in the fresh-cut produce sector with an Ascorbate Bluetooth© Analyzer (ABA), a screen-printed sensor-based device for ascorbic acid (AA) detection, for quality control all along the supply chain. The amperometric detection of AA on fresh and fresh-cut parsley, under correct and incorrect storage temperature, allowed us to investigate the kinetics of AA decay in response to oxidative stress. The role of ascorbate oxidase (AOx) and ascorbate peroxidase (APx) was studied. ABA was used in situ by unskilled personnel. Treatments influenced AA decay kinetics, which were linear in fresh parsley, and non-linear in fresh-cut. Two hours at 28 °C immediately after chopping, the resilience of the fresh-cut parsley was reduced, even though the cold chain was restored. Two hours at -2 °C caused a rapid loss of AA until its complete decay after 72 h. Significant differences between treatments were observed in both the expression and activity of AOx and APx. ABA registered sudden changes of parsley AA following unpredicted variations of temperature during processing or transport. It was useful to remedy the effects of unexpected flaws in the cold chain, which can be proposed for quality preservation of different fresh-cut produce.

Abstract
Photo-selective shading screens are emerging practices that aim to combine crop physical protection with different solar radiation filtration to achieve desired physiological responses. The objective of the present study was to evaluate the effect of photo-selective shading screens on the growth and physiology of purple lettuce for two transplanting seasons in tropical climate in Brazil. A 2 × 4 factorial arrangement was used, being considered the first factor, the transplanting season (spring and fall), and the second factor is the three 35% shading photo-selective shading screens (red, black and silver) and full sun control. The experimental design was a randomized complete block with four replications. The variables studied were: total fresh matter, total dry matter, leaf number, stem diameter, stem length, leaf area, SPAD chlorophyll index, nitrogen balance indexes, chlorophyll, flavonoids and anthocyanins. The photo-selective shading screens influenced the microclimate and the growth variables of purple lettuce, mainly when these plants were sown in the fall. Planting lettuce during spring may result in lower yields due to the higher investment of plants in secondary metabolites to defend against abiotic stress. According to the results, photo-selective shading screens are an appropriate agronomic technique to reduce phenolic compounds and improve lettuce cultivation conditions and can be implemented within protected cultivation practices to improve crop performance.

Abstract
The quest for sustainable strategies aimed at increasing the bioactive properties of plant-based foods has grown quickly. In this work, we investigated the impact of exogenously applied phenolics, i.e., chlorogenic acid (CGA), hesperidin (HES), and their combinations (HES + CGA), on Lactuca sativa L. grown under normal- and mild-salinity conditions. To this aim, the phenolic profile, antioxidant properties, and enzyme inhibitory activity were determined. The untargeted metabolomics profiling revealed that lettuce treated with CGA under non-stressed conditions exhibited the highest total phenolic content (35.98 mg Eq./g). Lettuce samples grown under salt stress showed lower phenolic contents, except for lettuce treated with HES or HES + CGA, when comparing the same treatment between the two conditions. Furthermore, the antioxidant capacity was investigated through DPPH (2,2-diphenyl-1-picrylhydrazyl), ABTS (2,20-azinobis-(3-ethylbenzothiazoline-6-sulfonate)), and FRAP (ferric reducing antioxidant power) assays, coupled with metal-chelating activity and phosphomolybdenum capacity. An exciting increase in radical scavenging capacity was observed in lettuce treated with exogenous phenolics, in both stress and non-stress conditions. The inhibitory activity of the samples was evaluated against target health-related enzymes, namely cholinesterases (acetylcholinesterase; AChE; butyryl cholinesterase; BChE), tyrosinase, α-amylase, and α-glucosidase. Lettuce treated with HES + CGA under non-stress conditions exhibited the strongest inhibition against AChE and BChE, while the same treatment under salinity conditions resulted in the highest inhibition capacity against α-amylase. Additionally, CGA under non-stress conditions exhibited the best inhibitory effect against tyrosinase. All the functional traits investigated were significantly modulated by exogenous phenolics, salinity, and their combination. In more detail, flavonoids, lignans, and stilbenes were the most affected phenolics, whereas glycosidase enzymes and tyrosinase activity were the most affected among enzyme assays. In conclusion, the exogenous application of phenolics to lettuce represents an effective and green strategy to effectively modulate the phenolic profile, antioxidant activity, and enzyme inhibitory effects in lettuce, deserving future application to produce functional plant-based foods in a sustainable way.

Abstract
To determine the effect of the serine/threonine protein kinase (STPK) gene on leaf lettuce bolting, we utilized virus-induced gene silencing (VIGS) using the TRV vector to silence the target gene. The 'GB30' leaf lettuce cultivar was the test material, and the methods included gene cloning, bioinformatics analysis, quantitative real-time PCR (qRT-PCR) and VIGS. LsSTPK, was cloned from the 'GB30' leaf lettuce cultivar via reverse transcription-polymerase chain reaction (RT-PCR). qRT-PCR analysis showed that the expression of LsSTPK in the stem of leaf lettuce was significantly greater than that in the roots and leaves, and after high-temperature treatment, the gene expression in the stems in the experimental group was markedly lower than that in the control groups. Following LsSTPK silencing via the VIGS method, the stem length in the treatment group was significantly greater than that in the blank and negative control groups, and the contents of auxin (IAA), GA3 and abscisic acid (ABA) in the treatment group were greater than those in the other two groups. Flower bud differentiation occurred in the treatment group but not in the control group. The above findings suggested that LsSTPK inhibits the bolting of leaf lettuce under high-temperature conditions.

Abstract
Dietary flavonoids play an important role in human nutrition and health. Flavonoid biosynthesis genes have recently been identified in lettuce (Lactuca sativa); however, few mutants have been characterized. We now report the causative mutations in Green Super Lettuce (GSL), a natural light green mutant derived from red cultivar NAR; and GSL-Dark Green (GSL-DG), an olive-green natural derivative of GSL. GSL harbors CACTA 1 (LsC1), a 3.9-kb active nonautonomous CACTA superfamily transposon inserted in the 5' untranslated region of anthocyanidin synthase (ANS), a gene coding for a key enzyme in anthocyanin biosynthesis. Both terminal inverted repeats (TIRs) of this transposon were intact, enabling somatic excision of the mobile element, which led to the restoration of ANS expression and the accumulation of red anthocyanins in sectors on otherwise green leaves. GSL-DG harbors CACTA 2 (LsC2), a 1.1-kb truncated copy of LsC1 that lacks one of the TIRs, rendering the transposon inactive. RNA-sequencing and reverse transcription quantitative PCR of NAR, GSL, and GSL-DG indicated the relative expression level of ANS was strongly influenced by the transposon insertions. Analysis of flavonoid content indicated leaf cyanidin levels correlated positively with ANS expression. Bioinformatic analysis of the cv Salinas lettuce reference genome led to the discovery and characterization of an LsC1 transposon family with a putative transposon copy number greater than 1,700. Homologs of tnpA and tnpD, the genes encoding two proteins necessary for activation of transposition of CACTA elements, were also identified in the lettuce genome.

Abstract
Lettuce (Lactuca sativa L.) is a winter-spring leafy vegetable, but the high demand for fresh products available year-round requires off-season production. However, the warm climate of the Mediterranean areas can impair the summer production of lettuce, thus requiring the adoption of genotypes tolerant to high irradiance as well as useful agronomic strategies like shading net installations. The aim of our research was to assess the leaf morpho-physiological and anatomical changes, in addition to productive responses, of four lettuce cultivars (‘Ballerina’, ‘Maravilla De Verano Canasta’, ‘Opalix’, and ‘Integral’) grown under shading and non-shading conditions to unveil the adaptive mechanisms of this crop in response to sub-optimal microclimate (high irradiance and temperature) in a protected environment. Growth and yield parameters, leaf gas exchanges, chlorophyll fluorescence and morpho-anatomical leaf traits (i.e., leaf mass area, stomatal density and epidermal cell density) were determined. Under shading conditions, the fresh yields of the cultivars ‘Ballerina’, ‘Opalix’ (‘Oak leaf’) and ‘Integral’ (‘Romaine’) increased by 16.0%, 26.9% and 13.2% respectively, compared to non-shading conditions while both abaxial and adaxial stomatal density decreased. In contrast, ‘Canasta’ under non-shading conditions increased fresh yield, dry biomass and instantaneous water use efficiency by 9.6%, 18.0% and 15.7%, respectively, while reduced abaxial stomatal density by 30.4%, compared to shading conditions. Regardless of cultivar, the unshaded treatment increased the leaf mass area by 19.5%. Even though high light intensity and high temperature are critical limiting factors for summer lettuce cultivation in a protected environment, ‘Canasta’ showed the most effective adaptive mechanisms and had the best production performance under sub-optimal microclimatic conditions. However, greenhouse coverage with a white shading net (49% screening) proved to be a suitable agricultural practice that ensured an adequate microclimate for the off-season growth of more sensitive cultivars ‘Ballerina’, ‘Oak leaf’ and ‘Romaine’.

Abstract
The management of mineral elements in agriculture is important for their nutritional role for plants and dietary value for humans, sparking interest in strategies that can increase mineral use efficiency and accumulation in plant food. In this work, we evaluated the effects of the isosmotic variations of the concentration on three macrocations (K, Ca, and Mg) in lettuce (Lactuca sativa L.). Our aim was to improve the nutritional components of this valuable dietary source of minerals. Using a full factorial design, we analyzed mineral utilization efficiency (UtE), leaf morphology, gas exchange parameters, phenolic profiles (through ultra-high performance liquid chromatography coupled to a quadrupole-time-of-flight (UHPLC-QTOF) mass spectrometry), and enzymatic activities in two phytochemically diverse butterhead lettuce varieties (red or green). Plants were fed in hydroponics with three nutrient solutions (NSs) with different ratios of K, Ca, and Mg. The variation of these minerals in the edible product was associated with alterations of the morphology and physiology of the leaves, and of the quality and functional properties of lettuce, with a trade-off between total accumulation and mineral UtE. Moreover, in non-limiting conditions of nutrient availability, significant mineral interactions were also present. The flexibility of the plant response to the different ratios of macrocations, and the observed large intraspecific variation, were adequate to provide mineral-specific phytochemical profiles to the edible product. Specifically, the full-red lettuce provided more interesting results in regard to the compositional and functional attributes of the leaves.

Abstract
In this study, we assessed the antioxidative ability of 23 natural sources in a meat model system at the same addition level (1.0%). We evaluated the free radical (2,2-diphenyl-1-picrylhydrazyl, DPPH) scavenging ability of natural plant sources and their peroxides, as well as their aldehyde-inhibiting ability in pork patties, over 10 days of cold storage. It was found that blueberries, cherries, onions, black tea, and clove buds (20.6–25.0 mg AA/g) have a higher DPPH scavenging ability than that of other natural sources (10.80–16.7 mg AA/g) (
). Moreover, it was found that peroxides in pork patties are largely inhibited by red wine, lettuce, and red ginseng (
), whereas aldehydes are significantly inhibited by blueberries, chokeberries (aronia), blackcurrant, clove buds, elderberries, ginger, and cinnamon (
). These inconsistencies detected in the antioxidative ability of these 23 natural sources indicate that it is important to perform comprehensive and practical assessments of the potential antioxidative ability of natural sources. In addition, it is assumed that the interactions between natural plant sources and meat components affect the inhibition of lipid oxidation in meat and meat products.

Abstract
The main objective of the present study was to assess the effects of sulfur (S) nutrition on plant growth, overall quality, secondary metabolites, and antibacterial and radical scavenging activities of hydroponically grown lettuce cultivars. Three lettuce cultivars, namely, Pazmanea RZ (green butterhead, V1), Hawking RZ (green multi-leaf lettuce, V2), and Barlach RZ (red multi-leaf, V3) were subjected to two S-treatments in the form of magnesium sulfate (+S) or magnesium chloride (-S). Significant differences were observed under -S treatments, especially among V1 and V2 lettuce cultivars. These responses were reflected in the yield, levels of macro- and micro-nutrients, water-soluble sugars, and free inorganic anions. In comparison with the green cultivars (V1 and V2), the red-V3 cultivar revealed a greater acclimation to S starvation, as evidenced by relative higher plant growth. In contrast, the green cultivars showed higher capabilities in production and superior quality attributes under +S condition. As for secondary metabolites, sixteen compounds (e.g., sesquiterpene lactones, caffeoyl derivatives, caffeic acid hexose, 5-caffeoylquinic acid (5-OCQA), quercetin and luteolin glucoside derivatives) were annotated in all three cultivars with the aid of HPLC-DAD-MS-based untargeted metabolomics. Sesquiterpene lactone lactucin and anthocyanin cyanidin 3-O-galactoside were only detected in V1 and V3 cultivars, respectively. Based on the analyses, the V3 cultivar was the most potent radical scavenger, while V1 and V2 cultivars exhibited antibacterial activity against Staphylococcus aureus in response to S provision. Our study emphasizes the critical role of S nutrition in plant growth, acclimation, and nutritional quality. The judicious-S application can be adopted as a promising antimicrobial prototype for medical applications.

Abstract
BACKGROUND Heat shock factors (Hsfs) and Heat shock proteins (Hsps) belong to an essential group of molecular regulators involved in controlling cellular processes under normal and stress conditions. The role of Hsfs and Hsps is well known in model plant species under diverse stress conditions. While plants Hsfs are vital components of the signal transduction response to maintain cellular homeostasis, Hsps function as chaperones helping to maintain folding of damaged and newly formed proteins during stress conditions. In lettuce (Lactuca sativa), a highly consumed vegetable crop grown in the field and in hydroponic systems, the role of these gene families in response to artificial light is not well characterized. RESULTS Using a genome-wide analysis approach, we identified 32 Hsfs and 22 small heat shock proteins (LsHsps) in lettuce, some of which do not have orthologs in Arabidopsis, poplar, and rice. LsHsp60s, LsHsp90s, and LsHsp100s are highly conserved among dicot and monocot species. Surprisingly, LsHsp70s have three times more members than Arabidopsis and two times more than rice. Interestingly, the lettuce genome triplication did not contribute to the increased number of LsHsp70s genes. The large number of LsHsp70s was the result of genome tandem duplication. Chromosomal distribution analysis shows larger tandem repeats of LsHsp70s genes in Chr1, Chr7, Chr8, and Chr9. At the transcriptional level, some genes of the LsHsfs, LsHsps, LsHsp60s, and LsHsp70s families were highly responsive to UV and high intensity light stress, in contrast to LsHsp90s and LsHsp100s which did not respond to a light stimulus. CONCLUSIONS Our genome-wide analysis provides a detailed identification of Hsfs and Hsps in lettuce. Chromosomal location and syntenic region analysis together with our transcriptional analysis under different light conditions provide candidate genes for breeding programs aiming to produce lettuce varieties able to grow healthy under hydroponic systems that use artificial light.

Abstract
Plant foods are consumed worldwide due to their immense energy density and nutritive value. Their consumption has been following an increasing trend due to several metabolic disorders linked to non-vegetarian diets. In addition to their nutritive value, plant foods contain several bioactive constituents that have been shown to possess health-promoting properties. Plant-derived bioactive compounds, such as biologically active proteins, polyphenols, phytosterols, biogenic amines, carotenoids, etc., have been reported to be beneficial for human health, for instance in cases of cancer, cardiovascular diseases, and diabetes, as well as for people with gut, immune function, and neurodegenerative disorders. Previous studies have reported that bioactive components possess antioxidative, anti-inflammatory, and immunomodulatory properties, in addition to improving intestinal barrier functioning etc., which contribute to their ability to mitigate the pathological impact of various human diseases. This review describes the bioactive components derived from fruit, vegetables, cereals, and other plant sources with health promoting attributes, and the mechanisms responsible for the bioactive properties of some of these plant components. This review mainly compiles the potential of food derived bioactive compounds, providing information for researchers that may be valuable for devising future strategies such as choosing promising bioactive ingredients to make functional foods for various non-communicable disorders.

Abstract
Nanoparticles (NPs) can be used in several ways in agriculture, including increasing production rates and improving nutritional values in plants. The present study aims to clarify how biogenic copper oxide nanoparticles (CuO NPs) applied by two routes of exposure (foliar spray and soil irrigation) affect the elemental uptake by lettuce. In vivo experiments using lettuce (n = 4) were performed with CuO NPs in comparison with copper salt (CuSO4), considering a final mass added of 20 mg of CuO per plant. The elemental composition of roots was mostly affected by the soil irrigation exposure for both Cu forms (NPs and salt). Neither Cu form added by soil irrigation was translocated to leaves. Copper concentration in leaves was mainly affected by foliar spray exposure for both Cu forms (NPs and salt). All Cu forms through foliar spray were sequestered in the leaves and no translocation to roots was observed. Foliar spray of CuO NPs caused no visual damage in leaves, resulted in less disturbance of elemental composition, and improved dry weight, number of leaves, CO2 assimilation, and the levels of K, Na, S, Ag, Cd, Cr, Cu, and Zn in leaves without causing significant changes in daily intake of most elements, except for Cu. Although Cu concentration increased in leaves by foliar spray of CuO NPs, it remained safe for consumption.

Abstract
The combination of chemometric and green metric tools adds up to synergistic effects at method development, being highly compatible with green analytical chemistry (GAC). In the present study, both strategies were applied for the development of an ultrasound-assisted extraction mediated by Natural Deep Eutectic Solvent (UA-NADES). The Box-Behnken Design combined with multiple responses and desirability functions allowed the effective optimization of the proposed extractive methodology using an alternative green solvent. Considering the obtained results, a green UA-NADES extraction and chromatographic determination of phenolic compounds in Lactuca sativa samples were developed. Finally, the recent Analytical GREEnness metric approach was applied, and scores were compared with recent miniaturized approaches for the extraction/determination of phenolic compounds in lettuce. The results of the AGREE analysis highlight the greenness of the proposed methodology.

Regulation of the Photon Spectrum on Growth and Nutritional Attributes of Baby-Leaf Lettuce at Harvest and during Postharvest Storage. PLANTS 2021; 10:plants10030549. Abstract
The photon flux density (PFD) and spectrum regulate the growth, quality attributes, and postharvest physiology of leafy vegetables grown indoors. However, limited information is available on how a photon spectrum enriched with a broad range of different wavebands regulates these factors. To determine this, we grew baby-leaf lettuce ‘Rouxai’ under a PFD of 200 µmol m−2 s−1 provided by warm-white (WW; control) light-emitting diodes (LEDs) supplemented with either 30 µmol m−2 s−1 of ultraviolet-A (+UV30) or 50 µmol m−2 s−1 of blue (+B50), green (+G50), red (+R50), or WW (+WW50) light. We then quantified growth attributes and accumulated secondary metabolites at harvest and during storage in darkness at 5 °C. Additional +G50 light increased shoot fresh and dry weight by 53% and 59% compared to the control. Relative chlorophyll concentration increased under +UV30, +G50, and especially +B50. At harvest, +B50 increased total phenolic content (TPC) by 25% and anthocyanin content (TAC) by 2.0-fold. Additionally, +G50 increased antiradical activity (DPPH) by 29%. After each day of storage, TPC decreased by 2.9 to 7.1% and DPPH by 3.0 to 6.2%, while TAC degradation was less pronounced. Principal component analysis indicated a distinct effect of +G50 on the lettuce at harvest. However, concentrations of metabolites before and during storage were usually greatest under the +B50 and +R50 treatments.

Abstract
Chicory (Cichorium intybus L.) is a perennial herb from the Cichorium genus, Asteraceae family, and is worldwide cultivated. So far, chicory has been used mainly in animal feed, but also in several cases in the food industry: as salad, for teas and tea blends, for coffee supplementation, and as a source for the inulin production. Nowadays there is an increasing interest in chicory utilization for food production and supplementation. Some compounds present in chicory, such as polyphenols, inulin, oligofructose and sesquiterpene lactones may be considered as potential carriers of food functionality. This review describes nutritional, mineral and bioactive composition of the chicory plant and summarized the main biological activities associated with the presence of bioactive compounds in the different plant parts. Finally, the review explores possibilities of uses of chicory and its implementation in food products, with intention to design new functional foods.

Abstract
In agriculture, the increasing scarcity of arable land and the increase in extreme weather conditions has led to a large proportion of crops, especially vegetables, being cultivated in protected soilless cultivation methods to provide people with sufficient and high-quality food. Rockwool has been used for decades as a soil substitute in soilless cultivation. Since rockwool is not biodegradable, it is disposed in landfills after its use, which nowadays leads to ecological concerns and drives the search for alternative substrates, especially organic materials. The objectives of this study were to investigate the effects of organic materials (wood chips, sphagnum moss, and hemp fibers) in relation to rockwool substrate on plant growth and quality of lettuce as a result of physical and chemical properties of the mentioned substrates. We were able to show that sphagnum moss is a suitable substitute substrate for lettuce cultivation, contrary to hemp. All investigated substrates presented good physical properties, but differed in their decomposition stability. Within 8 weeks, 30% of the hemp and about 10% of both sphagnum and wood materials were degraded. It was concluded that the increased microbiological activity immobilized nitrogen and led to oxygen deficiency in the rhizosphere and resulted in increased phenolic acid contents in lettuce but poor yield on hemp. Sphagnum caused a pH decrease and accumulation of ammonium in the nutrient solution and allowed the highest yield for lettuce at moderate phenolic acid contents. Low yields were obtained on wood, which could possibly be increased by optimized nutrient solution, so that wood as an alternative to rockwool was not excluded. By applying used organic substrates as soil additives on arable land, the nutrients accumulated in it might fertilize the open field crops, thus saving mineral fertilizers. This, together with the avoidance of waste, would contribute to a greater sustainability.

Abstract
The Asteraceae family is the largest and most diversified family of the Angiosperms, characterized by the presence of numerous clustered inflorescences, which have the appearance of a single compound flower. It is estimated that this family represents around 10% of all flowered species, with a great biodiversity, covering all environments on the planet, except Antarctica. Also, it includes economically important crops, such as lettuce, sunflower, and chrysanthemum; wild flowers; herbs, and several species that produce molecules with pharmacological properties. Nevertheless, the biotechnological improvement of this family is limited to a few species and their genetic transformation was achieved later than in other plant families. Lettuce (Lactuca sativa L.) is a model species in molecular biology and plant biotechnology that has easily adapted to tissue culture, with efficient shoot regeneration from different tissues, organs, cells, and protoplasts. Due to this plasticity, it was possible to obtain transgenic plants tolerant to biotic or abiotic stresses as well as for the production of commercially interesting molecules (molecular farming). These advances, together with the complete sequencing of lettuce genome allowed the rapid adoption of gene editing using the CRISPR system. On the other hand, sunflower (Helianthus annuus L.) is a species that for years was considered recalcitrant to in vitro culture. Although this difficulty was overcome and some publications were made on sunflower genetic transformation, until now there is no transgenic variety commercialized or authorized for cultivation. In this article, we review similarities (such as avoiding the utilization of the CaMV35S promoter in transformation vectors) and differences (such as transformation efficiency) in the state of the art of genetic transformation techniques performed in these two species.

Abstract
Hydrophobic microplastics with a relatively large surface area can act as carriers for pollutants and exert a series of indirect effects on crop plants. This study investigated the toxic effects of small polystyrene (SPS, 100-1000 nm) and large polystyrene (LPS, >10,000 nm) microplastics, on lettuce under di-butyl phthalate (DBP) stress. The results indicated that single SPS, LPS, and DBP treatments significantly decreased lettuce biomass, and induced oxidative stress and damaged lettuce leaves and roots. According to Gaussian analysis, SPS or LPS could interact with DBP through van der Waals force, thereby reducing lettuce biomass and DBP enrichment in roots and leaves under combined treatments, increasing antioxidant enzyme activities and exacerbating oxidative stress and subcellular damage, compared to single DBP treatments. Observation using scanning electron microscopy demonstrated that polystyrene (PS) adhered to the root surfaces, which, in turn, caused physical blockage of the root pores. Cell membrane and wall damage was observed during PS and/or DBP exposures, as identified by transmission electron microscopy. Molecular docking illustrated that DBP and monobutyl phthalate could interact with superoxide dismutase residues through hydrogen bonding, π-π stacking, alkyl conjugation, and van der Waals forces. Interestingly, there were no statistical differences between the phytotoxicity of nano- and microplastics to lettuce. These findings showed that PS aggravated DBP-induced phytotoxicity.

Abstract
The roles of nitrogen availability in determining the phenolic accumulation of vegetables have been widely studied, but the underlying mechanism involved remains unknown. Thus, primary and secondary metabolites profiling of lettuce leaves were performed using non-targeted metabolomics analysis. The results showed that carbon metabolism, amino acid metabolism, and phenolic biosynthesis metabolism in lettuce were significantly affected by low nitrogen supply (LN). The phenolic content was significantly increased in LN-treated lettuce, indicating that the activated phenolic biosynthesis was triggered by the LN treatment. The reduced citrate cycle and enhanced glucose and sucrose content suggested there is a relative excess of carbon resources in LN-treated lettuce. In addition, the decreased nitrogen-rich amino acids (glutamine and aspartate acid) and the maintained phenylalanine content indicated the redirection of nitrogen resources to phenylalanine biosynthesis. Meanwhile, no significant changes of chlorophyll content were observed in LN-treated lettuce leaves. The LN-treated lettuce showed lower glutamine synthetase activity but higher glutamate synthase activity compared to control. These findings together suggest that LN treatment may increase the phenolic accumulation in lettuce by effectively redirecting more carbon and nitrogen resources to the phenolic biosynthesis pathway.

The Impact of Organic Fertilizer Produced with Vegetable Residues in Lettuce (Lactuca sativa L.) Cultivation and Antioxidant Activity. SUSTAINABILITY 2020. Abstract
Large amounts of organic waste are produced worldwide. This work aims to evaluate the influence of organic fertilizers, onion peel flour (OPF) and fruit and vegetable flour (FVF) on lettuce cultivation. Lettuce seeds were planted in pure soil (P), P with 10% OPF, and P with 3% FVF. Soil and lettuce leaves were analyzed. The addition of OPF and FVF improved soil quality but only in the soil with FVF was there significant lettuce growth and increase of antioxidant activity: Folin (8.89 mg EAG/g FM), FRAP (1.31 mg Fe2+/g FM), ABTS (4.09 mg TEAC/g−1 FM) and ORAC (0.52 mg TEac/g−1 FM). The present results show an improvement in lettuce nutritional quality and the potential of FVF as an organic fertilizer.

Abstract
The study of the relationship between cultivated plants and environmental factors can provide information ranging from a deeper understanding of the plant biological system to the development of more effective management strategies for improving yield, quality, and sustainability of the produce. In this article, we present a comprehensive metabolomics dataset of two phytochemically divergent lettuce (Lactuca sativa L.) butterhead varieties under different growing conditions. Plants were cultivated in hydroponics in a growth chamber with ambient control. The pre-harvest factors that were independently investigated were light intensity (two levels), the ionic strength of the nutrient solutions (three levels), and the molar ratio of three macroelements (K, Mg, and Ca) in the nutrient solution (three levels). We used an untargeted, mass-spectrometry-based approach to characterize the metabolomics profiles of leaves harvested 19 days after transplant. The data revealed the ample impact on both primary and secondary metabolism and its range of variation. Moreover, our dataset is useful for uncovering the complex effects of the genotype, the environmental factor(s), and their interaction, which may deserve further investigation.

Abstract
BACKGROUND Phenolic compounds are phytochemicals present in vegetables which contribute to human health. Although nitrogen deficiency and sucrose (Suc) are linked to phenolic production in vegetables, the relationship between them in the regulation of phenolic biosynthesis remains unknown. This study investigated the potential role of Suc in regulating phenolic biosynthesis of lettuce under low-nitrogen (LN) conditions. RESULTS Our results showed that LN treatment significantly increased Suc content in lettuce by inducing rapid increases in activities of sucrose synthesis-related enzymes. Exogenous Suc further stimulated LN-induced phenolic accumulation in lettuce by upregulating the expression of genes (PAL, CHS, F3H, DFR, F35H and UFGT) involved in phenolic biosynthesis. The opposite effects were true for exogenous 3-(3,4-dichlorophenyl)-1,1-dimethylurea (DCMU) application. No changes were observed in chlorophyll content in LN-treated lettuce, in either the presence or absence of Suc application. Notably, exogenous DCMU resulted in decreases of maximum quantum efficiency of photosystem II (PSII) photochemistry, actual efficiency of PSII and electron transport rate in PSII and increase of quantum yield of non-regulated energy dissipation in PSII in lettuce under LN conditions, whereas these effects were reversed on Suc application. Exogenous Suc also increased glutamine synthetase and glutamate synthase activities in LN-treated lettuce. CONCLUSIONS These results suggest that Suc is involved in LN-induced phenolic production in lettuce by enhancing photosynthetic and nitrogen assimilation efficiency to increase the supply of carbon resources and precursors for phenolic biosynthesis. © 2020 Society of Chemical Industry.

Abstract
Selenium (Se) biofortification in crops provides a valuable strategy to enhance human Se intake. However, crops vary greatly with their capacity in tolerating and metabolizing/accumulating Se, and the basis underlying such variations remains to be fully understood. Here, we compared the effects of Se and its analog S treatments on plant growth and biochemical responses between a Se accumulator (arugula) and a non-accumulator (lettuce). Arugula exhibited an increased biomass production in comparison with untreated controls at a higher selenate concentration than lettuce (20 μM vs. 10 μM Na2SeO4), showing better tolerance to Se. Arugula accumulated 3-folds more Se and S than lettuce plants under the same treatments. However, the Se/S assimilation as assessed by ATP sulfurylase and O-acetylserine (thiol)lyase activities was comparable between arugula and lettuce plants. Approximately 4-fold higher levels of Se in proteins under the same doses of Se treatments were observed in arugula than in lettuce, indicating that Se accumulators have better tolerance to selenoamino acids in proteins. Noticeably, arugula showed 6-fold higher ascorbate peroxidase activity and produced over 5-fold more glutathione and non-protein thiols than lettuce plants, which suggest critical roles of antioxidants in Se tolerance. Taken together, our results show that the elevated Se tolerance of arugula compared to lettuce is most likely due to an efficient antioxidant defense system. This study provides further insights into our understanding of the difference in tolerating and metabolizing/accumulating Se between Se accumulators and non-accumulators.

Abstract
A sensitive and reliable method was developed and validated for the simultaneous determination of 49 amino acids, B vitamins, flavonoids, and phenolic acids based on a rapid metabolomic extraction procedure combined with ultra-performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS) in a single chromatographic run and applied in analysis of 26 commonly consumed vegetables. The chromatographic and sample preparation conditions were optimized, given the high diversity of the target analytes. Eight isotope-labeled standards were applied to validate the method in terms of recovery, linearity, matrix effects, precision, and sensitivity. Most recoveries in four vegetable matrices ranged from 65.0% to 105.3% with associated RSDs < 20%. Low LOQs ranged from 0.06 to 17 µg/kg. Linear calibration curves with different ranges were established with R2 > 0.993. Among the 26 vegetables, purple cabbage, broccoli, and red lettuce were found to contain the highest concentrations of free amino acids, B vitamins, and phenolic compounds.

Abstract
Lead (Pb) and copper (Cu) contamination seriously threatens agricultural production and food safety. This study aims to investigate Pb and Cu induced hormetic effect and toxicity mechanisms in lettuce (Lactuca sativa L.) and establish reliable empirical models of potentially toxic elements (PTEs) transfer in the soil-plant system. The content and distribution of Pb and Cu at subcellular levels in lettuce plants were examined using inductively coupled plasma-mass spectrometry, differential centrifugation and micro-X-ray fluorescence spectroscopy. The PTE-loaded capacity of Pb that ensures food safety was lower than that of Cu in the studied soil, but the PTE-loaded capacity of Pb that limits yield was higher than that of Cu. Lead in lettuce roots mainly accumulated in the cell wall (41%), while Cu mainly accumulated in the vacuoles (46%). The Pb and Cu were primarily distributed in the radicle of lettuce seeds under severe PTE stress, resulting in no seed development. Iron plaque formed on the root surface of lettuce seedlings and sequestered Pb and Cu via chelation. At the same concentration, lettuce was less tolerant to Cu in contaminated soil than Pb due to the higher activity of Cu ions in the soil. Lead was more phytotoxic to lettuce than Cu, however, since the radicle emerged from the seed under severe Cu levels, while it did not protrude under severe Pb levels. The potentially damaging effect of Pb in the visually healthy lettuce appeared to be higher than that of Cu under the same soil contamination level.

The Sustainable Use of Cotton, Hazelnut and Ground Peanut Waste in Vegetable Crop Production. SUSTAINABILITY 2020. Abstract
The environmental burden from crop production byproducts is gradually increasing and necessitates the sustainable management of waste towards a circular economy approach. In the present study, three byproducts (cotton ginning waste (CGW), ground hazelnut husks (GHH) and ground peanut husks (GPH)) were evaluated in lettuce cultivation. For this purpose, the tested materials were incorporated in soil at two different rates (25% and 50% of total substrate volume) while a control treatment (no addition of byproducts) was also considered. Fresh weight per plant and total yield was the highest for the GHH50% treatment. The highest fat, protein, carbohydrates and energy content were observed for the CGW25% treatment. Chemical composition also differed among the tested byproducts where CGW25% treatment had the highest total tocopherols, sugars (sucrose, fructose, trehalose and total sugars) and organic acids content. The most abundant fatty acids were α-linolenic, linoleic and palmitic acid in all the tested treatments, while the highest antioxidant activity was observed for the GHH50% treatment. Regarding polyphenols, phenolic acids content was the highest in the GHH treatments, whereas flavonoids were the highest for the CGW25% treatment. No cytotoxicity against the PLP2 non-tumor cell line was observed, whereas only the GPH50% treatment showed moderate efficacy against HeLa, HepG2 and MCF-7 cell lines. The tested extracts also showed moderate antibacterial activities and only the extracts from the CGW50% treatment were more effective than the positive control against Trichoderma viride. In conclusion, the present results showed the great potential of using the tested byproducts as soil amendments for vegetable crops production, since they may improve the nutritional parameters, the chemical profile and the bioactivities of the final product. The suggested alternative use of the tested byproducts not only will increase the added value of crops but will also alleviate the environmental burden from bulky agroindustry byproducts.

Abstract
Societal awareness of healthy eating is increasing alongside the market for processed bagged salads, which remain as one of the strongest growing food sectors internationally, including most recently from indoor growing systems. Lettuce represents a significant proportion of this ready-to-eat salad market. However, such products typically have a short shelf life, with decay of post-harvest quality occurring through complex biochemical and physiological changes in leaves and resulting in spoilage, food waste and risks to health. We review the functional and quantitative genetic understanding of lettuce post-harvest quality, revealing that few findings have translated into improved cultivar development. We identify (i) phytonutrient status (for enhanced antioxidant and vitamin status, aroma and flavour) (ii) leaf biophysical, cell wall and water relations traits (for longer shelf life) (iii) leaf surface traits (for enhanced food safety and reduced spoilage) and (iv) chlorophyll, other pigments and developmental senescence traits (for appearance and colour), as key targets for future post-harvest breeding. Lettuce is well-placed for rapid future exploitation to address postharvest quality traits with extensive genomic resources including the recent release of the lettuce genome and the development of innovative breeding technologies. Although technologies such as CRISPR/Cas genome editing are paving the way for accelerated crop improvement, other equally important resources available for lettuce include extensive germplasm collections, bi-parental mapping and wide populations with genotyping for genomic selection strategies and extensive multiomic datasets for candidate gene discovery. We discuss current progress towards post-harvest quality breeding for lettuce and how such resources may be utilised for future crop improvement.

Abstract
A microwave-assisted extraction (MAE) method was developed for the extraction of bioactive inositols (D-chiro- and myo-inositols) from lettuce (Lactuca sativa) leaves as a strategy for the revalorization of these agrofood residues. Gas chromatography-mass spectrometry was selected for the simultaneous determination of inositols and sugars (glucose, fructose, and sucrose) in these samples. A Box-Behnken experimental design was used to maximize the extraction of inositols based on the results of single factor tests. Optimal conditions of the extraction process were as follows: liquid-to-solid ratio of 100:1 v/w, 40°C, 30 min extraction time, 20:80 ethanol:water (v/v), and one extraction cycle. When compared with conventional solid-liquid extraction (SLE), MAE was found to be more effective for the extraction of target bioactive carbohydrates (MAE 5.42 mg/g dry sample versus SLE 4.01 mg/g dry sample). Then, MAE methodology was applied to the extraction of inositols from L. sativa leaves of different varieties (var. longifolia, var. capitata and var. crispa). D-chiro- and myo-inositol contents varied between 0.57-7.15 and 0.83-3.48 mg/g dry sample, respectively. Interfering sugars were removed from the extracts using a biotechnological procedure based on the use of Saccharomyces cerevisiae for 24 h. The developed methodology was a good alternative to classical procedures to obtain extracts enriched in inositols from lettuce residues, which could be of interest for the agrofood industry.

Physiological and Nutraceutical Quality of Green and Red Pigmented Lettuce in Response to NaCl Concentration in Two Successive Harvests. AGRONOMY-BASEL 2020. Abstract
Nutritional eustress such as salinity or nutrient stress applied in soilless systems, is a convenient pre-harvest factor efficient in modulating the phytochemical components of horticultural crops, by triggering defensive mechanisms and accumulating plant secondary metabolites in plants tissues. Nevertheless, genetic material (cultivars with different pigmentation) dictates lettuce metabolites and physiological response to extrinsic eustress, with red leaf cultivars being highly nutrient packed notwithstanding the stress. Product quality can be meliorated equally by applying several cuts, a practice proven to increase bioactive compounds accumulation. In this study, we analyzed the effects of four salinity levels (1, 10, 20 and 30 mM NaCl) on green and red pigmented Salad Bowl lettuce (Lactuca sativa L. var. acephala) in two successive harvests cultivated in a floating raft system. The morphological parameters, mineral composition, leaf gas exchanges, bioactive compounds, and antioxidant activity of both cultivars were assessed. The green cultivar exhibited superior crop productivity but was more prone to salinity effect than the red cultivar. Irrespective of cultivar and cut order, the net photosynthesis decreased with increasing salinity in the nutrient solution. The second cut incurred higher dry biomass, greater accumulation of most minerals and higher photosynthetic activity. In red lettuce, 20 mM NaCl proved adequate eustress to increase phytonutrients and beneficial minerals (K, Ca, and Mg) with minimal loss of yield. Mild salinity and sequential harvest have proven effective pre-harvest tools in positively modulating the quality of lettuce. Eustress interaction with genotype was demonstrated as a promising field for future breeding programs targeting select genotypes for agronomic application of eustress to improve the nutraceutical value of vegetable crops.

Abstract
Sub-optimal growing conditions have a major effect on plants; therefore, large efforts are devoted to maximizing the availability of agricultural inputs to crops. To increase the sustainable use of non-renewable inputs, attention is currently given to the study of plants under non-optimal conditions. In this work, we investigated the impact of sub-optimal macrocations availability and light intensity in two lettuce varieties that differ for the accumulation of secondary metabolites (i.e., 'Red Salanova' and 'Green Salanova'). Photosynthesis-related measurements and untargeted metabolomics were used to identify responses and pathways involved in stress resilience. The pigmented ('Red') and the non-pigmented ('Green Salanova') lettuce exhibited distinctive responses to sub-optimal conditions. The cultivar specific metabolomic signatures comprised a broad modulation of metabolism, including secondary metabolites, phytohormones, and membrane lipids signaling cascade. Several stress-related metabolites were altered by either treatment, including polyamines (and other nitrogen-containing compounds), phenylpropanoids, and lipids. The metabolomics and physiological response to macrocations availability and light intensity also implies that the effects of low-input sustainable farming systems should be evaluated considering a range of cultivar-specific positive and disadvantageous metabolic effects in addition to yield and other socio-economic parameters.

Abstract
For captive primates, greater provisioning of leafy greens or foliage can promote natural foraging behavior while boosting fiber intake. Recalcitrant fiber, although minimally available to endogenous metabolism, is readily fermented into nutrients by gut microbes. Whereas most primates in captivity consume fiber-limited diets and harbor imbalanced gut microbiota compared to their wild conspecifics, the importance of fiber provisioning to primate gut microbiota has predominately been studied in folivores. We, therefore, determined if commercial lettuce could be used to encourage foraging behavior and modify the gut microbiota of captive frugivores. We provisioned ruffed lemurs (Varecia rubra and V. variegata) with romaine lettuce, on top of the standard dietary fare, for 10 consecutive days. Before and across the period of lettuce supplementation, we collected observational data of animal feeding and fecal samples for microbiome analysis, determined via amplicon sequencing. The ruffed lemurs and their gut microbes responded to lettuce provisioning. In particular, younger animals readily ate lettuce and showed no decline in consumption across study days. When controlling for the effects of host species and social-group membership, lettuce consumption shifted the composition of the gut microbiome away from each lemur's own baseline, an effect that became stronger as the study progressed. In the final study days, Ruminococcaceae UCG-008 and Akkermansia, microbes typically and respectively associated with fiber metabolism and host health, were significantly enriched in the consortia of lettuce-provisioned subjects. Ultimately, the routine offering of lettuce, leafy greens, or foliage to captive frugivores may benefit animal wellbeing.

Abstract
Considering that functional components of plant foods are mainly secondary-metabolism products, we investigated the shaping of health-promoting compounds in hydroponically grown butterhead lettuce (Lactuca sativa L. var. capitata) as a function of the strength of the nutrient solution utilized. To this aim, untargeted metabolomics profiling, in vitro antioxidant capacity (total phenolics, 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS), cupric reducing antioxidant capacity (CUPRAC), and ferric reducing antioxidant power (FRAP) assays), and the inhibition of selected enzyme activities were investigated in two butterhead lettuce cultivars with different pigmentation, i.e., green and red Salanova. Full-strength nutrition, together with half- and quarter-strength solutions of macronutrients, was tested. Our results indicate that by reducing the nutrients strength, we could elicit a distinctive shaping of the phenolic profile of lettuce. It is noteworthy that only specific classes of phenolics (namely, lignans and phenolic acids, followed by flavones and anthocyanins) were modulated by the induction of nutritional eustress (fold-change values in the range between -5 and +11). This indicates that specific responses, rather than a generalized induction of phenolic compounds, could be observed. Nonetheless, a genotype-dependent response could be observed, with the red cultivar being much more responsive to nutritional deprivation than the green Salanova lettuce. Indeed, analysis of variance (ANOVA) confirmed a genotype x nutrition interaction in red Salanova (p < 0.001). As a consequence of the changes in phenolic composition, also the antioxidant capacity (p < 0.001) and amylase inhibition (p < 0.001) properties were affected by the growing conditions. However, the effect on cholinesterase and tyrosinase inhibition was poorly affected by the nutritional strength. Provided that yields are not compromised, the application of a controlled nutritional eustress in hydroponically cultivated lettuce may represent a valuable strategy to produce food with tailored functional features in a sustainable manner.

Abstract
Since December 2019, a respiratory pandemic named as coronavirus disease 2019 (Covid-19) caused by a new coronavirus named as SARS-CoV-2, has taken the world by storm. The symptoms are fever, malaise, and cough which resolve in a few days in most cases; but may progress to respiratory distress and organ failure. Transmission is through droplet infection or fomites, but other modes such as airborne transmission and oro-fecal transmission are also speculated. Research is underway to develop effective vaccines and medicines for the disease. In such a scenario, we present the measures described in Unani system of medicine for health protection during epidemics. Unani is a traditional system of medicine developed during the middle ages, which employs natural drugs of herbal, animal and mineral origin for treatment. In Unani medicine, during an epidemic, apart from isolation and quarantine, three measures are of utmost importance, (i) purification of surroundings using certain herbal drugs as fumigants or sprays, (ii) health promotion and immune-modulation, and (iii) use of health-protecting drugs and symptom-specific drugs. Drugs such as loban (Styrax benzoides W. G. Craib), sandroos (Hymenaea verrucosa Gaertn.) za'fran (Crocus sativus L.), vinegar etc. are prescribed in various forms. Scientific researches on these drugs reveal the presence of a number of pharmacologically active substances, which may provide a new insight into the management of infections and epidemics.

Abstract
Modern agriculture is facing many difficulties due to a rapidly changing climate, and environmental damage from agricultural production. The commitment of scientists and farmers to increase environmentally sustainable agricultural practices is one way to help mitigate environmental impacts. Among these practices, the use of biostimulants could be beneficial for increasing fertilizer efficiency and reducing excessive use in agriculture, and as plant growth regulators capable of increasing both production volume and quality of crops. In our study, rocket plants were grown in a greenhouse and treated with two biostimulants (protein hydrolysates or tropical plant extract), either individually or combined, to assess the effect on yield, dry biomass, mineral content, qualitative parameters as well as on economic profitability of foliar biostimulant applications. Total yield and dry biomass of the plants treated with the three biostimulant combinations on average increased by 48.1% and 37.2% respectively compared to untreated plants, without significant differences between treatments. Biostimulant application increased the content of chlorophyll, K, Mg and Ca, compared to the untreated plants. Furthermore, a biostimulant synergistic effect was detected concerning the content of total ascorbic acid. Our results confirmed that the biostimulants are eco-friendly products, able to boost plant growth and product quality and thus increase growers’ profitability.

Abstract
Heavy payloads in future shuttle journeys to Mars present limiting factors, making self-sustenance essential for future colonies. Therefore, in situ resources utilization (ISRU) is the path to successful and feasible space voyages. This research frames the concept of planting leafy vegetables on Mars regolith simulant, ameliorating this substrate’s fertility by the addition of organic residues produced in situ. For this purpose, two butterhead lettuce (Lactuca sativa L. var. capitata) cultivars (green and red Salanova®) were chosen to be cultivated in four different mixtures of MMS-1 Mojave Mars simulant:compost (0:100, 30:70, 70:30 and 100:0; v:v) in a phytotron open gas exchange growth chamber. The impact of compost rate on both crop performance and the nutritive value of green- and red-pigmented cultivars was assessed. The 30:70 mixture proved to be optimal in terms of crop performance, photosynthetic activity, intrinsic water use efficiency and quality traits of lettuce. In particular, red Salanova® showed the best performance in terms of these quality traits, registering 32% more phenolic content in comparison to 100% simulant. Nonetheless, the 70:30 mixture represents a more realistic scenario when taking into consideration the sustainable use of compost as a limited resource in space farming, while still accepting a slight significant decline in yield and quality in comparison to the 30:70 mixture.

Abstract
Lettuce is one of the most popular vegetables, and the market niche of the baby leaf variety is expanding. The manner in which nitrogen (N) is supplied and the available concentration of the micronutrient molybdenum (Mo) affect N metabolism, with reflects on the nutritional quality of that vegetable. Here, two Mo concentrations (0.06 and 0.12 mg/L) and four proportions (%) of nitrate (NO3 - )/ammonium (NH4 + )(100/0, 75/25, 50/50, and 25/75) were supplied to hydroponic baby leaf lettuce floating type to evaluate their effects on plant growth and leaf mineral and NO3 - compositions. Shoot dry mass did not differ among the different treatments, although fresh mass was lower in treatments with larger proportions of NH4 + . Higher leaf concentrations of NO3 - were observed in plants treated with 100% N-NO3 - , but they were still below tolerable limits for human health. The enzyme nitrate reductase was not found to be sensitive to the nitrogen sources or to Mo concentrations. N proportions and Mo concentrations differently affected macro- (C, N, P, K, Ca, Mg, and S) and micronutrients (Cu, Fe, Mn, Mo, and Zn) leaf concentrations. Although treatment with 100% N-NO3 - favored higher mineral concentrations in lettuce leaves, the addition of 25% N-NH4 + allowed fresh mass production with the lowest NO3 - concentrations. As such, and considering the healthy reduction of NO3 - consumption by humans and the maintenance of plant productivity, the 75/25 NO3 - /NH4 + proportion is recommended for the hydroponic cultivation of baby leaf var. Mimosa lettuce. PRACTICAL APPLICATION: We demonstrate a direct link between the constitution of nutrient solution with nitrate accumulation by hydroponic lettuce and indicate the best source of N as well as the concentration of Mn to healthy reduction of NO3 - consumption by humans and the maintenance of plant productivity.

Abstract
In this study, the potential health benefits of crisphead lettuce (Lactuca sativa L.) before and after digestion were represented by the recovery, bioaccessibility, and change of bioactive compounds including total phenolic (TPC) and total flavonoids content (TFC), and bioactivities [in vitro antioxidant activities including 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2, 2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities, ferric reducing antioxidant power (FRAP) and metal ion chelating activity (MIC)]. The release of bioactive compounds as well as bioactivities increased during gastric and intestinal digestion for 1 h and subsequently decreased when digestion was completed. The bioaccessibility of TPC and TFC at after digestion was 56-73 and 75-79%, respectively. Among all bioactivities, crisphead lettuce showed a residual activity of ABTS (61-95%) followed by FRAP (70-86%), DPPH (24-52%) and MIC (32-73%) during the digestion. Our study suggested that crisphead lettuce maintains stability in both bioactive compounds and bioactivities during the digestion.

Abstract
Artificial miRNA technology enables the generation of siRNAs to regulate the expression of targeted genes. However, the application of siRNAs to alter gene expression is challenging due to their instability and requires a means to efficiently deliver siRNAs into the host. Here, we report that the siRNAs targeted to animal mRNAs can be heterologously expressed and stably produced in lettuce. We have modified rice miRNA precursors to produce siRNAs in lettuce with the potential to target mRNAs of mouse complement 3 (C3) and coagulation factor 7 (CF7). Expression of primary and mature siRNAs in the transgenic lettuce lines was confirmed via Sanger sequencing. Our study demonstrates an applicable tool to alter gene expression in the targeted host and has potential utility in siRNA-based oral therapeutics.

Abstract
The effect of cultivar and nutrient solution macrocation proportions (SK, SCa, SMg) on the bioactive content of hydroponically cultivated lettuce was evaluated on two lettuce cultivars (red and green-pigmented Salanova®) grown in a fully controlled Fitotron® chamber. Fresh weight and color attributes were superior in green Salanova and in SK-treated plants, while elevated macrocation proportions (SK, SCa, and SMg) affected the corresponding minerals, P and Na content. SCa and SMg treatments raised ascorbate concentration and reduced nitrate levels in treated plants. Chicoric and chlorogenic acids were higher in red over green Salanova. Chlorogenic acid was higher in SCa and SMg plants and chicoric acid levels were SMg > SCa > SK. The SMg-treated red Salanova contained higher concentrations of target carotenoids. In conclusion, nutrient solution management constitutes an effective cultural practice to increase bioactive properties and functional quality of hydroponically grown lettuce.
