Abstract
Obesity is associated with reduced gut microbial diversity and a high rate of micronutrient deficiency. Bariatric surgery, the therapy of choice for severe obesity, produces sustained weight loss and improvements in obesity-related comorbidities. Also, it significantly alters the gut microbiota (GM) composition and function, which might have an important impact on the micronutrient status as GM is able to synthesize certain vitamins, such as riboflavin, folate, B12, or vitamin K2. However, recent data have reported that GM is not fully restored after bariatric surgery; therefore, manipulation of GM through probiotics represents a promising therapeutic approach in bariatric patients. In this review, we discuss the latest evidence concerning the relationship between obesity, GM and micronutrients, the impact of bariatric surgery on GM in relation with micronutrients equilibrium, and the importance of the probiotics' supplementation in obese patients submitted to surgical treatment.

Abstract
BACKGROUND Mediterranean diets limit red meat consumption and increase intakes of high-phytate foods, a combination that could reduce iron status. Conversely, higher intakes of fish, a good source of selenium, could increase selenium status. OBJECTIVES A 1-y randomized controlled trial [New Dietary Strategies Addressing the Specific Needs of the Elderly Population for Healthy Aging in Europe (NU-AGE)] was carried out in older Europeans to investigate the effects of consuming a Mediterranean-style diet on indices of inflammation and changes in nutritional status. METHODS Selenium and iron intakes and status biomarkers were measured at baseline and after 1 y in 1294 people aged 65-79 y from 5 European countries (France, Italy, the Netherlands, Poland, and the United Kingdom) who had been randomly allocated either to a Mediterranean-style diet or to remain on their habitual, Western diet. RESULTS Estimated selenium intakes increased significantly with the intervention group (P < 0.01), but were not accompanied by changes in serum selenium concentrations. Iron intakes also increased (P < 0.001), but there was no change in iron status. However, when stratified by study center, there were positive effects of the intervention on iron status for serum ferritin for participants in Italy (P = 0.04) and France (P = 0.04) and on soluble transferrin receptor (sTfR) for participants in Poland (P < 0.01). Meat intake decreased and fish intake increased to a greater degree in the intervention group, relative to the controls (P < 0.01 for both), but the overall effects of the intervention on meat and fish intakes were mainly driven by data from Poland and France. Changes in serum selenium in the intervention group were associated with greater changes in serum ferritin (P = 0.01) and body iron (P = 0.01), but not sTfR (P = 0.73); there were no study center × selenium status interactions for the iron biomarkers. CONCLUSIONS Consuming a Mediterranean-style diet for 1 y had no overall effect on iron or selenium status, although there were positive effects on biomarkers of iron status in some countries. The NU-AGE trial was registered at clinicaltrials.gov as NCT01754012.

Abstract
BACKGROUND Selenium (Se) is an essential element for mammals and its deficiency in the diet is a global problem. Plants accumulate Se and thus represent a major source of Se to consumers. Agronomic biofortification intends to enrich crops with Se in order to secure its adequate supply by people. SCOPE The goal of this review is to report the present knowledge of the distribution and processes of Se in soil and at the plant-soil interface, and of Se behaviour inside the plant in terms of biofortification. It aims to unravel the Se metabolic pathways that affect the nutritional value of edible plant products, various Se biofortification strategies in challenging environments, as well as the impact of Se-enriched food on human health. CONCLUSIONS Agronomic biofortification and breeding are prevalent strategies for battling Se deficiency. Future research addresses nanosized Se biofortification, crop enrichment with multiple micronutrients, microbial-integrated agronomic biofortification, and optimization of Se biofortification in adverse conditions. Biofortified food of superior nutritional quality may be created, enriched with healthy Se-compounds, as well as several other valuable phytochemicals. Whether such a food source might be used as nutritional intervention for recently emerged coronavirus infections is a relevant question that deserves investigation.

Abstract
BACKGROUND Adequate levels of selenium (Se) have protective effects against several chronic diseases, such as obesity. The aim of this study was to assess the effect of Se supplementation in a selected group of patients with obesity. METHODS This randomized prospective study included 37 overweight/obese individuals aged 18-65 years, who adopted a slightly hypocaloric diet for 3 months. An intervention group received 240 μg/day of L-selenomethionine for 3 months; a control group received a placebo. Clinical and biochemical parameters, body composition measurements, and the Psychological General Well-Being Index (PGWBI) questionnaire were tested at the beginning and end of the treatment. RESULTS A comparison of the two groups showed a significant change in body composition, involving a decrease in body fat mass, between the baseline and the end of the follow-up, in the intervention group. Unlike the placebo group, the group given Se had a significant increase in lean body and muscle mass and a significant decrease in leptin levels after 3 months on diet. At the end of the follow-up, the group given Se scored higher on the PGWBI than those who did not. CONCLUSION Se could reinforce the effects of diet for overweight and obesity. Abstract
Objective To examine the correlation between dietary selenium (Se) intake and the prevalence of osteoporosis (OP) in the general middle-aged and older population in China. Methods Data for analyses were collected from a population based cross-sectional study performed at the Xiangya Hospital Health Management Centre. Dietary Se intake was evaluated using a validated semi-quantitative food frequency questionnaire. OP was diagnosed on the basis of bone mineral density scans using a compact radiographic absorptiometry system. The correlation between dietary Se intake and the prevalence of OP was primarily examined by multivariable logistic regression. Results This cross-sectional study included a total of 6267 subjects (mean age: 52.2 ± 7.4 years; 42% women), and the prevalence of OP among the included subjects was 9.6% (2.3% in men and 19.7% in women). Compared with the lowest quartile, the energy intake, age, gender and body mass index (BMI)-adjusted odds ratios of OP were 0.72 (95% confidence interval [CI] 0.55–0.94), 0.72 (95% CI 0.51–1.01) and 0.47 (95% CI 0.31–0.73) for the second, third and fourth quartiles of dietary Se intake, respectively (P for trend = 0.001). The results remained consistent in male and female subjects. Adjustment for additional potential confounders (i.e., smoking status, drinking status, physical activity level, nutritional supplements, diabetes, hypertension, fibre intake, and calcium intake) did not cause substantial changes to the results. Conclusions In the middle-aged and older humans, participants with lower levels of dietary Se intake have a higher prevalence of OP in a dose-response manner.

Abstract
Selenium supplementation in humans has been suggested for the prevention of chronic diseases including cardiovascular disease, cancer, and neurodegenerative diseases. Selenium biofortification of plants has been explored as a method for increasing selenium content of food and dietary selenium intake in humans. However, the effects of selenium biofortification on other dietary nutrients is often a secondary discussion. These effects are especially important to explore considering selenium-biofortified foods contain many other nutrients important to human health, such as other minerals and antioxidant compounds, which can make these foods superior to selenium supplementation alone. Investigation of selenium biofortification's effect on these nutrients is necessary for a comprehensive human nutrition perspective on biofortification strategies. This review considers the effects of selenium biofortification on selenium content, other minerals, and antioxidant compounds as they pertain to human health in order to suggest optimal strategies for biofortification. Pre-clinical and clinical studies assessing the effects of consumption of selenium biofortified foods are also discussed.

Abstract
Deficiency in calcium, zinc, selenium, and iodine remains a major health issue in Africa. A selenium (Se) status survey conducted in central Kenya highlands revealed a high risk of dietary Se deficiency. This study investigates the effect of soil and foliar Se fertilizer application on Se concentration in maize and bean grains. It further tests the combination of Se fertilizer with phosphorus and nitrogen fertilizers, and with zinc and iodine fertilizers. Selenium fertilization results in a significant increase in Se concentration in grains. For the soil application, Se concentration increases on average by 3 µg kg-1 in maize and by 10 µg kg-1 in beans, for each gram of Se applied as sodium selenate. Foliar Se fertilization is more effective and increases Se concentration in grains on average by 18 µg kg-1 in maize, and by 67 µg kg-1 in beans. Total soil phosphorus/availability appears as an important factor influencing soil Se availability. Addition of phosphorus fertilizers positively affects the impact of Se fertilization in locations with low soil P, Fe, and Al. A Se + Zn + I fertilizer combination does not affect the impact on Se concentration in grains. Fertilizing beans alone is found to be more efficient compared to fertilizing only maize. In locations at high risk of dietary Se deficiency, foliar application at 10 g Se ha-1 on beans or 31 g Se ha-1 on maize is sufficient to achieve adequate daily dietary Se intake. The study points towards a multi-mineral agronomic biofortification, based on a site-specific biofortification strategy.

Abstract
A new energy dispersive X-ray absorption spectroscopy (EDXAS) method is presented for simultaneous wide-field imaging and transmission X-ray absorption spectroscopy (XAS) to enable rapid imaging and speciation of elements. Based on spectral K-Edge Subtraction imaging (sKES), a bent Laue imaging system diffracting in the vertical plane was developed on a bend magnet beamline for selenium speciation. The high flux and small vertical focus, forming a wide horizontal line beam for projection imaging and computed tomography applications, is achieved by precise matching of lattice plane orientation and crystal surface (asymmetry angle). The condition generating a small vertical focus for imaging also provides good energy dispersion. Details for achieving sufficient energy and spatial resolution are demonstrated for both full field imaging and computed tomography in quantifying selenium chemical species. While this system has lower sensitivity as it uses transmission and may lack the flux and spatial resolution of a dedicated focused beamline system, it has significant potential in rapid screening of heterogeneous biomedical or environmental systems to correlate metal speciation with function.

Abstract
As an important micronutrient, selenium (Se) plays many essential roles in immune response and protection against pathogens in humans and animals, but underlying mechanisms of Se-based control of salmonella growth within macrophages remain poorly elucidated. In this study, using RNA-seq analyses, we demonstrate that Se treatment (at an appropriate concentration) can modulate the global transcriptome of chicken macrophages HD11. The bioinformatic analyses (KEGG pathway analysis) revealed that the differentially expressed genes (DEGs) were mainly enriched in retinol and glutathione metabolism, revealing that Se may be associated with retinol and glutathione metabolism. Meanwhile, Se treatment increased the number of salmonella invading the HD11 cells, but reduced the number of salmonella within HD11 cells, suggesting that enhanced clearance of salmonella within HD11 cells was potentially modulated by Se treatment. Furthermore, RNA-seq analyses also revealed that nine genes including SIVA1, FAS, and HMOX1 were differentially expressed in HD11 cells infected with salmonella following Se treatment, and GO enrichment analysis showed that these DEGs were mainly enriched in an extrinsic apoptotic signaling pathway. In summary, these results indicate that Se treatment may not only affect retinol and glutathione metabolism in macrophages, but could also inhibit salmonella-induced macrophage apoptosis via an extrinsic apoptotic signaling pathway involving SIVA1.

Abstract
The aims of this study were to determine Cu, Mn, Se, and Zn content in wild mushrooms collected from unpolluted areas of the eastern Green Lungs of Poland (GLP) territory, to compare them to some popular species of cultivated mushrooms, evaluate mushroom contribution to the daily intake of the studied bioelements, and to determine their possible toxic effect resulting from potentially excessive mushroom consumption from areas recognized as ecologically uncontaminated. Bioelements were determined in 21 species of edible mushrooms: eighteen species of wild mushrooms and three species of popular cultivated mushrooms. The mean Cu, Mn, Se, and Zn content (in µg/g, dry mass DM) ranged from 10.6–123.1, 12.2–41, 0.13–13.3, and 68.3–184, respectively. A comparison with recommended dietary allowance (RDA) for Cu, Se, and Zn as well as adequate intake (AI) for Mn demonstrated that a 100 g fresh mass (FM) portion of mushroom species with the highest content of a given element can meet the demand for Cu, Mn, Se and Zn at 203%, 14–17%, 211%, and 16–22%, respectively. A comparison of the content of the examined bioelements contained in one portion of mushrooms (100 g FM) against the toxicological intake limits for different chemical elements with the provisional maximum tolerable daily intake (PMTDI) and upper intake level (UL) showed no risk of toxicity for the evaluated mushroom species.

Abstract
Humic acid (HA) serves as electron donor and acceptor in the biogeochemical cycle of Fe and Se in soil. In anoxic condition, a series of redox reactions occur, including reductive dissolution of Fe oxides, decomposition of organic matters, and transformation of trace elements. Thus, this study demonstrates the effect of HA on Se and Fe transformations in soil during waterlogged incubation. Soils were incubated under anoxic condition for 56 days, and pH, redox potential (Eh), and Fe and Se concentrations were measured at specific reaction times (days 2, 4, 8, 15, 28, and 56 of incubation). Moreover, sequential extraction and X-ray photoelectron spectroscopy (XPS) were used to obtain Se and Fe transformations, respectively. High resolution transmission electron microscopy (HR-TEM) was used to observe the morphology properties of soil. Results indicated that 4% HA addition decreased the pH and inhibited Eh decline continuously, and HA addition inhibited the Fe and Se release from soil. The Se concentration in soil solution without and with 4% HA addition at the day 15 of incubation were 1.05 mg L-1 and 0.30 mg L-1, respectively. Moreover, the residual Se fraction in soil with HA addition was evidently more than that in soil without HA addition. XPS of Se3d and Fe2p revealed that the binding energy of the main peak shifted to low values and the peak shape varied with the increase in HA addition. XPS2p3/2 and HR-TEM data indicated that the surface structure of Fe oxides in soil varied with the variations in anoxic incubation time and HA addition amount. HA addition would negatively influence Se and Fe release in soil solution and then reduce their bioavailability. This study aids in understanding the environmental behavior changes of Se and Fe when high HA concentrations enter the soils, especially wetland or paddy soil.

Abstract
BACKGROUND Selenium (Se) is an essential micronutrient due to its anticarsinogenic properties and positive influence on human immune system. Fortification of some fruits based on their rates of consumption and availability all year round appears to be an effective way to supplement Se in the human diet. In this study the possibility of augmenting Se content in 'Starking Delicious' apple fruit during two growing seasons was investigated. In 2016, the impact of 0, 0.5, 1 and 1.5 mg Se L-1 by foliar application on Se accumulation and fruit ripening as well as quality attributes was investigated. In 2017, the effects of 1.5 mg Se L-1 foliar application on fruit Se content and changes in the antioxidant system and storability were studied with a 30-day interval during 6 months storage at 0 ± 1 °C. RESULTS Foliar application of Se significantly increased both leaf and fruit Se concentration. The increase in Se content enhanced the flesh firmness, titrable acidity, and soluble solid content of the fruit. The activities of antioxidant enzymes, superoxide dismutase (SOD), catalase (CAT), and ascorbate peroxidase (APX) were markedly amplified by Se treatments as compared to the control, resulting in lower superoxide anion radical (O2 -• ) and hydrogen peroxide (H2 O2 ) contents, correspondingly higher membrane integrity as revealed by lower ion leakage and malondialdehyde accumulation and the fruit with lower water core. CONCLUSION Application of Se was efficient in increasing fruit Se content and nutraceutical properties, retarding the flesh firmness reduction, and postponing fruit ripening resulting from lower ethylene biosynthesis rate, thereby positively affecting apple fruit quality and storability. © 2019 Society of Chemical Industry.

Abstract
The aim of the research was to evaluate the effect of consumption of selenium-enriched pork on selected health indicators of probands. The intake of feed mixture with increased organic selenium at the dose of 0.3 mg.kg-1 probably increases selenium concentration in MSM (musculus semimembranosus). In the pork enriched with organic selenium, the concentration was higher by 1.045 ± 0.10 mg.kg-1 compared with the control group 0.701 ± 0.05 mg.kg-1 at significance P < 0.001. Sixteen participants in the experiment were represented by 8 men at the average age of 41.5 ± 11.9 years and 8 women at the average age of 41.4 ± 7.9 years. All the probands consumed meat enriched with selenium three times a week during one month. By consumption of the enriched pork, there was an increase of the selenium concentration in blood serum of probands traced with selenium increase from 73.19 ± 15.68 μg.L-1 to 73.73 ± 15.13 μg.L-1 (P > 0.05). From the results we can see that consumption of enriched pork with selenium was significantly manifested in lowering of total cholesterol levels, which was associated with LDL cholesterol lowering (P < 0.05). Differences among the HDL cholesterol and triglycerides samples were not significant.

Abstract
More than a billion people worldwide may be selenium (Se) deficient, and supplementation with Se-rich Brazil nuts may be a good strategy to prevent deficiency. Since different forms of Se have different nutritional value, and Se is toxic at elevated levels, careful seed characterization is important. Variation in Se concentration and correlations of this element with other nutrients were found in two batches of commercially available nuts. Selenium tissue localization and speciation were further determined. Mean Se levels were between 28 and 49 mg kg−1, with up to 8-fold seed-to-seed variation (n = 13) within batches. Brazil nut Se was mainly in organic form. While present throughout the seed, Se was most concentrated in a ring 1 to 2 mm below the surface. While healthy, Brazil nuts should be consumed in moderation. Consumption of one seed (5 g) from a high-Se area meets its recommended daily allowance; the recommended serving size of 30 g may exceed the allowable daily intake (400 μg) or even its toxicity threshold (1200 μg). Based on these findings, the recommended serving size may be re-evaluated, consumers should be warned not to exceed the serving size and the seed may be sold as part of mixed nuts, to avoid excess Se intake.

Selenium (Se) has been a focus of attention as an important micronutrient with its impact on human health, with there being consequences either due to excess or deficiency in intake. Radiochemical neutron activation analysis (RNAA) is well established method for determination of a number of elements at trace level concentrations with high sensitivities. In this work, we used the RNAA method for determination of selenium content in Mentha spicata L. The result of this study was compared with those samples from India and Serbia. The result obtained show that, Se concentration obtained in M. spicata L., is close to the minimal FAO recommendation.

Abstract
Selenocysteine (Sec) is the 21st genetically encoded amino acid in organisms across all domains of life. Although structurally similar to cysteine (Cys), the Sec selenol group has unique properties that are attractive for protein engineering and biotechnology applications. Production of designer proteins with Sec (selenoproteins) at desired positions is now possible with engineered translation systems in Escherichia coli However, obtaining pure selenoproteins at high yields is limited by the accumulation of free Sec in cells, causing undesired incorporation of Sec at Cys codons due to the inability of cysteinyl-tRNA synthetase (CysRS) to discriminate against Sec. Sec misincorporation is toxic to cells and causes protein aggregation in yeast. To overcome this limitation, here we investigated a CysRS from the selenium accumulator plant Astragalus bisulcatus that is reported to reject Sec in vitro Sequence analysis revealed a rare His → Asn variation adjacent to the CysRS catalytic pocket. Introducing this variation into E. coli and Saccharomyces cerevisiae CysRS increased resistance to the toxic effects of selenite and selenomethionine (SeMet), respectively. Although the CysRS variant could still use Sec as a substrate in vitro, we observed a reduction in the frequency of Sec misincorporation at Cys codons in vivo We surmise that the His → Asn variation can be introduced into any CysRS to provide a fitness advantage for strains burdened by Sec misincorporation and selenium toxicity. Our results also support the notion that the CysRS variant provides higher specificity for Cys as a mechanism for plants to grow in selenium-rich soils.

Abstract
Although it is generally accepted that selenium (Se) is important for life, it is not well known which forms of organic and/or inorganic Se compound are the most biologically active. In nature Se exists mostly in two forms, namely as selenite with fourvalent and selenate with sixvalent cations, from which all other inorganic and organic species are derived. Despite a small difference in their electronic structure, these two inorganic parent compounds differ significantly in their redox properties. Hence, only selenite can act as an oxidant, particularly in the reaction with free and/or protein- bound sulhydryl (SH) groups. For example, selenite was shown to inhibit the hydroxyl radicalinduced reduction and scrambled reoxidation of disulfides in human fibrinogen thus preventing the formation of highly hydrophobic polymer, termed parafibrin. Such a polymer, when deposited within peripheral and/or cerebral circulation, may cause irreversible damage resulting in the development of cardiovascular, neurological and other degenerative diseases. In addition, parafibrin deposited around tumor cells produces a protease-resistant coat protecting them against immune recognition and elimination. On the other hand, parafibrin generated by Ebola's protein disulfide isomerase can form a hydrophobic 'spike' that facilitates virus attachment and entry to the host cell. In view of these specific properties of selenite this compound is a potential candidate as an inexpensive and readily available food supplement in the prevention and/or treatment of cardiovascular, neoplastic, neurological and infectious diseases.

Abstract
Selenium is of special interest in different research fields due to its narrow range between beneficial and toxic effects. On a global scale, Se deficiency is more widespread. Biofortification measures have successfully been applied to specifically increase Se concentrations in food crops. Still not much is known about the behaviour and long-term fate of externally supplied Se. Over many years, natural but external selenate is regularly introduced into the soil-plant system via irrigation at our study sites in Punjab which makes it also an ideal natural analogue to investigate the long term effect of biofortification. For our study, we combined total and species specific analysis of Se in soil and plant material. Selenium is clearly enriched in all investigated topsoils (0-15 cm) with concentrations of 1.5-13.0 mg kg-1 despite similar background Se concentrations (0.5 ± 0.1 mg kg-1) below 15 cm depth. Irrigation is indicated to be the primary source of excess Se. Processes like Se species transformation, uptake by plants and plant material decomposition further influence both the Se speciation and extent of Se enrichment in the soils. The Se concentration in different plants and plant parts is alarmingly high showing concentrations of up to 738 mg kg-1 in wheat. Irrigation induced selenate can be considered as an easily available short term pool of Se for plants and thus strongly controls their total Se concentration and speciation. The long-term pool of Se in the topsoil mainly consists of selenite and organic Se species. These species are readily retained but still sufficiently mobile to be taken up by plants. The formation of elemental Se can be considered as a non-available Se pool and is thus, the major cause of Se immobilization and long-term enrichment of Se in the soils. Our study clearly shows that biofortification with selenate, despite its effectiveness, bears the risk of easily increasing Se levels in plants to toxic levels and producing food with less favourable inorganic Se species if not done with care. Excess selenate is either lost due to biomethylation or immobilized within the soil which has to be considered as highly negative from both an economic and ecological point of few.

Abstract
PURPOSE OF REVIEW Selenium, a trace element, is ubiquitous in the environment. The main source of human exposure is diet. Despite its nutritional benefits, it is one of the most toxic naturally occurring elements. Selenium deficiency and overexposure have been associated with adverse health effects. Its level of toxicity may depend on its chemical form, as inorganic and organic species have distinct biological properties. RECENT FINDINGS Nonexperimental and experimental studies have generated insufficient evidence for a role of selenium deficiency in human disease, with the exception of Keshan disease, a cardiomyopathy. Conversely, recent randomized trials have indicated that selenium overexposure is positively associated with type 2 diabetes and high-grade prostate cancer. In addition, a natural experiment has suggested an association between overexposure to inorganic hexavalent selenium and two neurodegenerative diseases, amyotrophic lateral sclerosis and Parkinson's disease. Risk assessments should be revised to incorporate the results of studies demonstrating toxic effects of selenium. Additional observational studies and secondary analyses of completed randomized trials are needed to address the uncertainties regarding the health risks of selenium exposure.

Abstract
Selenium (Se) is an essential trace element for humans and other animals, yet approximately one billion people worldwide suffer from Se deficiency. Rice is a staple food for over half of the world's population that is a major dietary source of Se. In paddy soils, rice roots mainly take up selenite. Se speciation analysis indicated that most of the selenite absorbed by rice is predominantly transformed into selenomethinone (SeMet) and retained in roots. However, the mechanism by which SeMet is transported in plants remains largely unknown. In this study, SeMet uptake was found to be an energy-dependent symport process involving H+ transport, with neutral amino acids strongly inhibiting SeMet uptake. We further revealed that NRT1.1B, a member of rice peptide transporter (PTR) family which plays an important role in nitrate uptake and transport in rice, displays SeMet transport activity in yeast and Xenopus oocyte. The uptake rate of SeMet in the roots and its accumulation rate in the shoots of nrt1.1b mutant were significantly repressed. Conversely, the overexpression of NRT1.1B in rice significantly promoted SeMet translocation from roots to shoots, resulting in increased Se concentrations in shoots and rice grains. With vascular-specific expression of NRT1.1B, the grain Se concentration was 1.83-fold higher than that of wild type. These results strongly demonstrate that NRT1.1B holds great potential for the improvement of Se concentrations in grains by facilitating SeMet translocation, and the findings provide novel insight into breeding of Se-enriched rice varieties.

Abstract
Selenium is an important nutrient for humans and livestock. Soil selenium concentration in the world is highly variable; deficiency and toxicity occur in populations living short distance apart. Knowledge of Se concentrations in humans and the environments, especially because the range for toxicity and deficiency is narrow, is important for effective intervention. Dietary data and serum samples were collected from children (n = 555) 69-78 months old from rural villages of the Amhara Region, Ethiopia. In addition, information on the socio-demography of households was collected. Serum Se was analyzed by inductively coupled plasma mass spectrometer. Almost all (90.3%) of participants reported eating grain, roots, or tubers 24 h preceding the survey followed by legumes, nuts, and seeds (64.6%). Consumption of animal source foods was very low (4.6%). Compared to children from the western part of the region, children from eastern Amhara had higher dietary diversity score (2.1 ± 0.9 vs 1.8 ± 0.7; p < 0.001).The median serum Se concentration was 70.6 μg/l (IQR 48.2, 96.6). Selenium inadequacy (serum Se < 70 μg/l) was detected in 49.1% of children. However, the distribution had an important geographical pattern across administrative zones. Children from the western part of the Amhara Region were highly deficient (up to 91.1% prevalence), while there was little or no Se deficiency in children from the eastern part of the region. Serum Se level exhibited an important spatial variation in the Amhara Region, Ethiopia. Further studies investigating contributing factors for the variation such as soil characteristics and Se concentration in staple crops are needed.

Abstract
Selenium (Se) is an essential trace element of fundamental importance to health due to its antioxidant, anti-inflammatory, and chemopreventive properties, attributed to its presence within at least 25 selenoproteins (Sel). In this review, we describe some of the recent progress, in our understanding, on the impact of maternal Se intake during the periconceptional period on offspring development and health. Maternal nutrition affects the performance and health of the progeny, and both maternal and offspring Se supplementations are essential for the optimal health and antioxidant protection of the offspring. The case of Se in epigenetic programming and early life nutrition is also discussed.

Abstract
Objective: To determine the relationship between the serum level of selenium and cervical intraepithelial neoplasia (CIN). Methods: A case controlled study that compared the serum level of selenium in 45 women with CIN (cases) to 45 women (age matched controls) with normal cervical cytology. Socio-demographic data and information on known risk factors for cervical cancer among the sample was compared between both groups using inferential statistics. Results: There was no significant difference in the mean selenium values between the cases and controls [p- 0.076, 95% CI (-15.08 – 0.76)]. However, subgroup analysis showed a statistically significant difference between patients with normal cervical cytology, CIN I, II and III (p= 0.021). In addition, there was also significant difference in the selenium level between women with normal cervical cytology and CIN III (p value = 0.016) with a significant inverse linear trend (p= 0.025). Conclusion: With increasing severity of CIN, a significant reduction in the level of selenium in serum was observed. This reducing value of serum selenium, a surrogate marker for increased oxidative stress, may be important factor for the development of persistent HPV infection and in particular high grade CIN III lesions. This observation requires further research.

Abstract
Since 2001, ChildFund Kenya has supplied micronutrient fortified school meals to preschoolers from two tribes (Kamba and Maasai) attending early childhood development (ECD) centres in Emali, S.E. Kenya. Lack of information on the micronutrient status of the preschoolers prompted a cross-sectional assessment of micronutrient (iron, zinc, selenium, vitamin A, vitamin D) status and prevalence of deficiencies among the two tribes. Data on sociodemographic, health, anthropometric status, and micronutrient supply from preschool meals were collected from 287 Kamba and 213 Maasai children aged 3 to 5 years attending 23 ECD centres. Nonfasting blood samples were collected for haemoglobin and plasma biomarkers of iron, zinc, selenium, vitamin A, vitamin D, C-reactive protein (CRP), α1 -acid glycoprotein, and immunoglobin G. The prevalence of anaemia was significantly higher in Maasai children than Kamba (38%, 95% CI [31%, 45%], vs. 5%, [3%, 9%]), as well as iron deficiency and its various stages (P < 0.001). No differences were seen in the prevalence of zinc, selenium, vitamin A, or vitamin D deficiencies (all P > 0.05). Body iron, CRP, and age were significant predictors of haemoglobin concentrations for both tribes (all P < 0.006) and plasma 25-OHD for Maasai children only. The higher prevalence of iron deficiency among Maasai than Kamba children was possibly attributed to the high consumption of cow's milk (low in bioavailable iron) in place of micronutrient fortified meals together with a higher prevalence of chronic inflammation and intestinal damage.

Abstract
Selenium (Se) is an important micronutrient and essential trace element for both humans and animals, which exist in the environment ubiquitously. Selenium deficiency is an important issue worldwide, with various reported cases of its deficiency. Low selenium contents in some specific terrestrial environments have resulted in its deficiency in humans. However, high levels of selenium in the geochemical environment may have harmful influences and can cause a severe toxicity to living things. Due to its extremely narrow deficiency and toxicity limits, selenium is becoming a serious matter of discussion for the scientists who deals with selenium-related environmental and health issues. Based on available relevant literature, this review provides a comprehensive data about Se sources, levels, production and factors affecting selenium bioavailability/speciation in soil, characteristics of Se, biogeochemical cycling, deficiency and toxicity, and its environmental transformation to know the Se distribution in the environment. Further research should focus on thoroughly understanding the concentration, speciation, Se cycling in the environment and food chain to effectively utilize Se resources, remediate Se deficiency/toxicity, and evaluate the Se states and eco-effects on human health.

Abstract
Biofortification can be exploited to enrich plants in selenium (Se), an essential micronutrient for humans. Selenium as selenate was supplied to two rocket species, Eruca sativa Mill. (salad rocket) and Diplotaxis tenuifolia (wild rocket), at 0–40 μM in hydroponics and its effects on the content and profile of sulphur (S)-compounds and other phytochemicals was evaluated. D. tenuifolia accumulated more total Se and selenocysteine than E. sativa, concentrating up to ~300 mg Se kg−1 dry weight from 10–40 μM Se. To ensure a safe and adequate Se intake, 30 and 4 g fresh leaf material from E. sativa grown with 5 and 10–20 μM Se, respectively or 4 g from D. tenuifolia supplied with 5 μM Se was estimated to be optimal for consumption. Selenium supplementation at or above 10 μM differentially affected S metabolism in the two species in terms of the transcription of genes involved in S assimilation and S-compound accumulation. Also, amino acid content decreased with Se in E. sativa but increased in D. tenuifolia and the amount of phenolics was more reduced in D. tenuifolia. In conclusion, selenate application in hydroponics allowed Se enrichment of rocket. Furthermore, Se at low concentration (5 μM) did not significantly affect accumulation of phytochemicals and plant defence S-metabolites.

Abstract
In developing an algal treatment system, selenium (Se) removal efficiency by Chlorella vulgaris was evaluated under various conditions such as Se concentration, algal density, temperature and pH. A maximum removal efficiency plateau of ∼90% was observed between 1000-3000 μg Se/L while the tolerance of Se toxicity was found at 6000 μg Se/L. C. vulgaris of 0.75 g DW/L showed the highest removal efficiency (84%), and volatilization was dominant below 1.37 g DW/L. Se volatilization was two times higher at 25 °C than at 20 °C in the first 24 h. Moreover, the highest removal efficiency (77%) was obtained at pH 8.0, compared to 66.5% at pH 6.5 and 40% at pH 10.0. To prevent ecotoxicity, Se laden algae were further burned to ashes or filtered out by Anodonta woodiana. After burning, biomass Se was reduced by 99%, with organo-Se entirely converted into inorganic Se, lowering Se bioavailability. A. woodiana removed 54% of Se in 24 h, leading to Se bioaccumulation in soft tissues, which may serve as dietary Se supplements for human health. Our results suggest the cleanup of Se-contaminated water from either agricultural runoff or industrial discharge could be achieved using an algal treatment system with minimum potential ecotoxicity.

Abstract
Microbes play important roles in the transport and transformation of selenium (Se) in the environment, thereby influencing plant resistance to Se and Se accumulation in plant. The objectives are to characterize the bacteria with high Se tolerance and reduction capacity and explore the significance of microbial origins on their Se tolerance, reduction rate and efficiency. Two bacterial strains were isolated from a naturally occurred Se-rich soil at tea orchard in southern Anhui Province, China. The reduction kinetics of selenite was investigated and the reducing product was characterized using scanning electron microscopy and transmission electron microscopy-energy dispersive spectroscopy. The bacteria were identified as Lysinibacillus xylanilyticus and Lysinibacillus macrolides, respectively, using morphological, physiological and molecular methods. The results showed that the minimal inhibitory concentrations (MICs) of selenite for L. xylanilyticus and L. macrolides were 120 and 220 mmol/L, respectively, while MICs of selenate for L. xylanilyticus and L. macrolides were 800 and 700 mmol/L, respectively. Both strains aerobically reduced selenite with an initial concentration of 1.0 mmol/L to elemental Se nanoparticles (SeNPs) completely within 36 hr. Biogenic SeNPs were observed both inside and outside the cells suggesting either an intra- or extracellular reduction process. Our study implied that the microbes from Se-rich environments were more tolerant to Se and generally quicker and more efficient than those from Se-free habitats in the reduction of Se oxyanions. The bacterial strains with high Se reduction capacity and the biological synthesized SeNPs would have potential applications in agriculture, food, environment and medicine.

Abstract
PURPOSE Recently, there was an increasing interest on the use of ancient grains because of their better health-related composition. The aim of this study was to evaluate in healthy human subjects the antioxidative and diabetes-preventive properties of ancient KAMUT® khorasan wheat compared to modern wheat. METHODS The study was a randomized, non-blind, parallel arm study where the biochemical parameters of volunteers with a diet based on organic whole grain KAMUT® khorasan products, as the only source of cereal products were compared to a similar replacement diet based on organic whole grain modern durum wheat products. A total of 30 healthy volunteers were recruited and the intervention period lasted 16 weeks. Blood analyses were performed before and after the diet intervention. The effect of KAMUT® khorasan products on biochemical parameters was analyzed by multiple quantile regression adjusted for age, sex, physical activity and BMI compared to data at baseline. RESULTS Subjects receiving KAMUT® khorasan products showed a significantly greater decrease of fat mass (b = 3.7%; CI 1.6-5.5; p = 0.042), insulin (b = 2.4 µU/ml; CI 0.2-4.2; p = 0.036) and a significant increase of DHA (b = - 0.52%; CI - 1.1 to - 0.12; p = 0.021). CONCLUSIONS Our study provides evidence that a substitution diet with KAMUT® khorasan wheat products can reduce some markers associated to the development of type-2 diabetes compared to a diet of modern wheat.

Selenium Distribution and Translocation in Rice (Oryza sativa L.) under Different Naturally Seleniferous Soils. SUSTAINABILITY 2019. Abstract
Selenium (Se) accumulation in plant foods may be providing dietary Se to minimize the health problems related to Se deficiency. In this study, rice plants were cultivated in different naturally seleniferous soils (0.5–1.5 mg Se kg−1). Se concentration in rice plant tissues was analysed, and the distribution and translocation of Se in rice were also studied. The effect of exogenous Se on yield and Se concentration in rice grain was also investigated by spraying Na2SeO3 (15 mg L−1, 15 g ha−1). Results show that Se concentration in root, straw and grain of rice was increased with increased concentrations of Se in seleniferous soils. The root accumulated higher Se than straw and grain under the same naturally seleniferous soil. Spraying Se significantly increased Se concentration in grain, hull, brown rice and polished rice compared with spraying water. Se concentration in the grain fractions was in the following order: Bran > brown rice > whole grain > polished rice > hull. About 13.7% Se in wholegrain was discarded by milling process if about 6.9% of it was polished as bran. Se-enriched rice could be produced in naturally seleniferous soils with Se concentration from 0.5 to 1.0 mg kg−1, and this polished rice would provide enough Se (60–80 μg day−1) to satisfy the human requirement. Therefore, naturally seleniferous soils may be an effective way to produce Se-enriched rice without spraying Se fertilizer, which will be more economically feasible and environmentally friendly for without exogenous Se added to the soils or plants. However, the polished rice and brown rice, produced by spraying Na2SeO3 (15 g ha−1) or grown in soil with total Se upto 1.5 mg kg−1 was not suitable for daily human consumption, unless diluted with Se-deficient rice to meet the standard (≤0.3 mg Se kg−1). This study imparted a better understanding of the utilization of seleniferous soils and Se-enriched rice for human health and food safety.

Abstract
Selenium is an essential trace element for which dietary intake is not sufficient in many parts of the world such as in Europe. Yeast and mushrooms may accumulate considerable amounts of selenium, but the chemical form in mushrooms has not been elucidated yet. Thus, we determined the selenium speciation of selenium-enriched button mushrooms in comparison to that of selenized yeast via Se K-edge XANES spectroscopy. Quantitative analysis of the XANES spectra revealed that the selenium in selenized yeast is mainly present as seleno-methionine but that in selenium-enriched button mushrooms, it is present predominantly as Se-methyl-l-selenocysteine. As this form is highly bioavailable and directly enters the selenium metabolic pool, selenium-enriched mushrooms may be a good food choice to improve selenium intake.

Abstract
Selenium (Se) is an essential trace element for human nutrition and a key component of selenoproteins having fundamental biological and nutraceutical functions. We currently examined lettuce biofortification with Se in an open-gas-exchange growth chamber using closed soilless cultivation for delivering Se-rich food. Morphometric traits, minerals, phenolic acids, and carotenoids of two differently pigmented Salanova cultivars were evaluated in response to six Se concentrations (0-40 μM) delivered as sodium selenate in the nutrient solution. All treatments reduced green lettuce fresh yield slightly (9%), while a decrease in red lettuce was observed only at 32 and 40 μM Se (11 and 21% respectively). Leaf Se content increased in both cultivars, with the red accumulating 57% more Se than the green. At 16 μM Se all detected phenolic acids increased, moreover a substantial increase in anthocyanins (184%) was recorded in red Salanova. Selenium applications slightly reduced the carotenoids content of green Salanova, whereas in red Salanova treated with 32 μM Se violaxanthin + neoxanthin, lutein and β-cryptoxanthin spiked by 38.6, 27.4, and 23.1%, respectively. Lettuce constitutes an ideal target crop for selenium biofortification and closed soilless cultivation comprises an effective tool for producing Se-enriched foods of high nutraceutical value.

Abstract
Aging is a complex process that includes gradual and spontaneous biochemical and physiological changes which contributes to a decline in performance and increased susceptibility to diseases. Zn and Se are essential trace elements that play a pivotal role in immune functions and antioxidant defense and, consequently, are claimed to play also a role in successful aging trajectories. Consistently with their nature of essential trace elements, a plethora of data obtained “in vitro” and “in vivo” (in humans and animal models) support the relevance of Zn and Se for both the innate and adoptive immune response. Moreover, Zn and Se are strictly involved in the synthesis and regulation of activity of proteins and enzymes, e.g., metallothioneins (MT) and glutathione peroxidase (GPX), that are necessary for our endogenous antioxidant response. This is clearly important to protect our cells from oxidative damage and to slow the decline of our immune system with aging. Age-related changes affecting tissue levels of Zn and Se may indicate that the risk of Zn and Se deficiency increases with aging. However, it is still unclear which of these changes can be the consequence of a “real deficiency” and which can be part of our physiological compensatory response to the accumulating damage occurring in aging. Furthermore, the upregulation of antioxidant proteins (Zn and Se dependent) may be a manifestation of self-induced oxidative stress. By the way, Zn and Se dependent proteins are modulated not only by nutritional status, but also by well-known hallmarks of aging that play antagonistic functions, such as the deregulated nutrient sensing pathways and cellular senescence. Thus, it is not an easy task to conduct Zn or Se supplementation in elderly and it is emerging consistent that these kind of supplementation requires an individualized approach. Anyway, there is consistent support that supplementation with Zn using doses around 10 mg/day is generally safe in elderly and may even improve part of immune performances in those subjects with a baseline deficiency. Regarding Se supplementation, it may induce both beneficial and detrimental effects on cellular immunity depending on the form of Se, supplemental dose, and delivery matrix. The nutritional association of supplements based on “Zn plus Se” is hypothesized to provide additional benefits, but this will likely need a more complex individualized approach. The improvement of our knowledge around screening and detection of Zn and Se deficiency in aging could lead to substantial benefits in terms of efficacy of nutritional supplements aimed at ameliorate performance and health in aging.

Abstract
Abstract
The role of selenium has been changed over the last decade. The element that was previously considered to be toxic turned out to be present in the human body in amounts of 10–15 mg, and almost every cell of our body contains it. Selenium contributes to growth, supports healthy muscle activity, reproductive organs, reduces the toxicity of certain elements such as mercury, supports the immune system, and even delays the spread of certain viruses (influenza, Ebola, HIV). Selenium-deficient areas of Europe could be a risk for their populations. The recommended daily intake (RDA) of selenium is 55 µg/day, while WHO and FAO have set up the daily tolerable dose at 400 µg/day. We must count with the harmful effects of selenium overdose, but it is almost impossible to introduce this amount into our body solely with food. Our selenium sources can be refilled with food supplements or selenium-enriched functional foods. In the review article, we report about the role of selenium in the environment, selenium-enriched plants, selenium-enriched yeast, the role of selenium in animal feed and in the human body, the opportunities of selenium restoration, selenium-enriched animal products, and the selenium content of milk.

Abstract
OBJECTIVES This study aimed to examine the cross-sectional association between dietary and serum selenium measures and depressive symptoms among a nationally representative sample of US adults. METHODS Dietary selenium intake and serum selenium concentration were evaluated on 7725 adult participants from National Health and Nutrition Examination Survey (NHANES) 2011-2014. Participants' selenium intake, assessed by 24-h recall, was classified based on the recommended dietary allowance (dietary selenium intake ≥ 55 μg/d) and estimated average requirement (dietary selenium intake ≥ 45 μg/d) criteria. Serum selenium and depressive symptoms were assessed using inductively coupled plasma mass spectrometry and a patient health questionnaire or use of an antidepressant, respectively. Univariate and multivariate logistic regression, accounting for the complex survey design of NHANES, were employed to estimate the cross-sectional association between measures of selenium and the presence of depressive symptoms. RESULTS The median selenium concentration was 193.9 µg/L (interquartile range = 179.3-209.3). Approximately 8% of the participants met the case definition for depressive symptoms. Based on the recommended dietary allowance of selenium, participants not meeting the recommended dietary intake, compared with those meeting the requirement, had higher odds of depressive symptoms (odds ratio [OR] = 1.57, 95% confidence interval [CI]: 1.03-2.38). When analyzing by quintile of dietary selenium intakes, compared with the first quintile, participants in higher quintiles had significantly lower odds of depressive symptoms. However, based on quintiles of serum selenium and using the first quintile as referent category, except for quintile 3, results indicated a higher but not significant association (quintile 2 [OR = 1.08, 95% CI: 0.73-1.61], quintile 4 [OR = 1.17, 95% CI: 0.89-1.55], and quintile 5 [OR = 1.14, 95% CI: 0.83-1.58]). Power analysis indicated sufficient power. Notably, study participants had a very high serum selenium concentration. The findings, although not significant, between serum selenium concentrations and depressive symptoms had a U-shaped association, supported by the current literature. CONCLUSIONS Our study supports an inverse association between participants recommended dietary intake of selenium and depressive symptoms. Although results were not statistically significant for the association by quartile of serum selenium concentrations and depressive symptoms, a U-shaped association was identified.

Abstract
Selenoprotein P (SELENOP) is a major selenoenzyme in plasma and linked to antioxidant properties and possibly to lung cancer; however, supporting evidence is limited. We investigated the association between pre-diagnostic plasma SELENOP concentration and lung cancer risk in a case-control study of 403 cases and 403 individually matched controls nested within the Shanghai Men's Health Study. SELENOP concentration in pre-diagnostic plasma samples was measured by a sandwich enzyme-linked immunosorbent assay. Cases were diagnosed with lung cancer between 2003 and 2010. Multivariate conditional logistic regression was used to estimate odds ratios (OR) and the corresponding 95% confidence intervals (CI) for studying the association between plasma SELENOP concentration and lung cancer risk. Cases had slightly lower plasma SELENOP concentration than controls (4.3 ± 1.2 versus 4.4 ± 1.1 mg/l, P difference = 0.09). However, the multivariate analysis showed no association between plasma SELENOP concentration and lung cancer risk among all participants (OR = 1.08, 95% CI = 0.54-2.14 for quartile 4 versus quartile 1), or by smoking status or tumor aggressiveness. In contrast, although the number of cases was limited, plasma SELENOP concentration was positively associated with lung adenocarcinoma risk (OR = 5.38, 95% CI = 1.89-15.35 for tertile 3 versus tertile 1), but not with squamous cell lung carcinoma (OR = 1.69, 95% CI = 0.43-6.70). Our study of adult men living in selenium non-deficient areas in China provides little support for the inverse association between pre-diagnostic plasma SELENOP concentration and lung cancer risk. Our finding of a positive association with risk of lung adenocarcinoma needs to be interpreted with caution.

Abstract
Selenium is released into the aquatic environment through anthropogenic activities such as agricultural irrigation, coal mining, and metallurgical activities, where it acts as a reproductive toxin with negative effects on predatory fish and water fowl. Waterborne selenium concentrations are closely regulated worldwide, and various standardized methods are implemented by regulatory bodies to allow for the monitoring of selenium concentrations in different types of waters. Here, we discuss worldwide regulations relating to concentration limits of selenium in drinking, natural, and industrial waters. Focusing specifically on North America, we look at some standardized analysis methods and discuss the fact that many of these methods are not adequately sensitive to measure selenium in the concentrations outlined by the associated regulations for natural waters. We look in detail at the limitations of these methods with regards to both detection limits and interfering sample matrix components and establish the need for more sensitive and robust methods of analysis for regulatory compliance. This review is complemented by a second part (LeBlanc et al., 2018) where we discuss the state of selenium speciation analysis and importance of speciation data for decision makers in industry and regulators.

Abstract
Prostate cancer is one of the leading causes of cancer-related mortality among men living in developed countries, making the development of safe, practical approaches to prostate cancer risk reduction a high research priority. The relationship between prostate cancer risk and selenium, an essential nutrient required for a number of metabolically important enzymes including glutathione peroxidases, has been investigated, but a satisfactory integration of results has proven elusive. Dogs, like men, naturally develop prostate cancer during aging, providing an appropriate context to study the effects of selenium supplementation on the dysregulation of homeostasis that drives cancer development within the aging prostate. In this paper, we summarize the translational significance of research results gained from dog studies on selenium and prostate cancer risk. Our discovery of a U-shaped dose-response between toenail selenium concentration and prostatic DNA damage in dogs remarkably parallels data on the relationship between selenium status and prostate cancer risk in men. Notably, the dog U-curve provides a plausible explanation for the unanticipated increase in prostate cancer incidence among men with highest baseline selenium who received selenium supplementation in the largest-ever prostate cancer prevention trial (SELECT). Moreover, the dog U-curve guided the discovery of a non-antioxidant, anti-carcinogenic mechanism of organic selenium - the preferential triggering of apoptosis in DNA damaged cells, which we have termed "homeostatic housecleaning". Taken together, the data from dogs and men indicate that increasing selenium status will not necessarily be associated with prostate cancer risk reduction. Landing in the trough of the U - achieving mid-range selenium status - is better than being too low or too high. Personalizing health promotion in a more-is-not-necessarily-better world poses distinctive challenges. Dog studies can be relied upon to contribute important insights into dose-dependent and form-dependent effects - two critical aspects of selenium biology that will have to be disentangled if the burgeoning science of selenium is to be translated into effective strategies for human disease prevention. Beyond contributing to understanding the role of selenium in biology, our work situates the concept of U-shaped thinking at the core of personalized medicine and precision nutrition.

Abstract
The associations of various dietary or circulating antioxidants with the risk of all-cause mortality in the general population have not been established yet. A systematic search was performed in PubMed and Scopus, from their inception up to October 2017. Prospective observational studies reporting risk estimates of all-cause mortality in relation to dietary intake and/or circulating concentrations of antioxidants were included. Random-effects meta-analyses were conducted. Forty-one prospective observational studies (total n = 507,251) involving 73,965 cases of all-cause mortality were included. The RRs of all-cause mortality for the highest compared with the lowest category of circulating antioxidant concentrations were as follows: total carotenes, 0.60 (95% CI: 0.46, 0.74); vitamin C, 0.61 (95% CI: 0.53, 0.69); selenium, 0.62 (95% CI: 0.45, 0.79); β-carotene, 0.63 (95% CI: 0.57, 0.70); α-carotene, 0.68 (95% CI: 0.58, 0.78); total carotenoids, 0.68 (95% CI: 0.56, 0.80); lycopene, 0.75 (95% CI: 0.54, 0.97); and α-tocopherol, 0.84 (95% CI: 0.77, 0.91). The RRs for dietary intakes were: total carotenoids, 0.76 (95% CI: 0.66, 0.85); total antioxidant capacity, 0.77 (95% CI: 0.73, 0.81); selenium, 0.79 (95% CI: 0.73, 0.85); α-carotene, 0.79 (95% CI: 0.63, 0.94); β-carotene, 0.82 (95% CI: 0.77, 0.86); vitamin C, 0.88 (95% CI: 0.83, 0.94); and total carotenes, 0.89 (95% CI: 0.81, 0.97). A nonsignificant inverse association was found for dietary zinc, zeaxanthin, lutein, and vitamin E. The nonlinear dose-response meta-analyses demonstrated a linear inverse association in the analyses of dietary β-carotene and total antioxidant capacity, as well as in the analyses of circulating α-carotene, β-carotene, selenium, vitamin C, and total carotenoids. The association appeared to be U-shaped in the analyses of serum lycopene and dietary vitamin C. The present study indicates that adherence to a diet with high antioxidant properties may reduce the risk of all-cause mortality. Our results confirm current recommendations that promote higher intake of antioxidant-rich foods such as fruit and vegetables.

Abstract
Selenium is essential to human and animal health, as it regulates glutathione peroxidase activity. Although not considered essential to plants, it may be beneficial to plant growth and development at low concentrations. This study evaluated the effect of selenate application on Se biofortification, macro- and micronutrient content, and the expression of genes involved in Se uptake and assimilation in 12 Brazilian wheat ( L.) cultivars. This nutrient-solution experiment was performed in a greenhouse and consisted of a complete 12 × 2 factorial randomized design, with 12 wheat cultivars in the absence or presence of Se in solution (13 μmol), with three replicates. The presence of Se in solution did not affect growth and yield of wheat cultivars. Selenium content and accumulation in the grain varied significantly among the different cultivars. The presence of Se affected macronutrient content more than micronutrient content, and selenate application increased S content in the shoots of eight cultivars and in the grains of five cultivars. Examination of gene expression did not allow identification of responses within the two groups of cultivars-with high or low Se contents-after selenate application. Our findings are relevant to the design of Se biofortification strategies for wheat in tropical and subtropical agroecosystems.

Abstract
Although selenium, which is a necessary trace element for the human body, has been considered to be beneficial to the cardiovascular system and helpful to lower blood pressure, more and more evidence shows that high amounts of selenium are a risk factor for hypertension. A random multistage sampling which included the cluster method was performed; a total of 9076 urban and rural residents between 18 and 80 years old in the Shandong province of China were investigated by questionnaire, physical examination, and laboratory tests. The prevalence of hypertension was 42.1% in males and 35.3% in females. The mean (standard deviation) selenium concentration was 124.68 (36.32) μg/l in males and 119.54 (31.88) μg/l in females. After adjusting for potential confounders, logistic regression analysis showed that the highest selenium levels were associated with a risk of hypertension (OR = 1.192; 95% CI 1.009-1.407) in females, while there was no significant difference in males (OR = 1.043; 95% CI 0.864-1.259). Our findings suggest that high selenium levels in females are more likely to increase the risk of hypertension compared to similar levels in males. More attention should be paid to the metabolic mechanisms and physiological effects of selenium in females.

Mineral Composition and Antioxidant Status of Tomato with Application of Selenium. AGRONOMY-BASEL 2018. Abstract
This experiment was carried out in a greenhouse to evaluate the effects of selenium application (as Na2SeO3) on mineral concentration (as N, P, K, Ca and Se), biomass, yield and total antioxidant status (TAS) of tomato fruit. The study consisted of two experiments: an irrigation experiment with the application of selenium at 0, 2.5 and 5 mg L−1 on the fertilizer solution in soil and perlite; and the foliar application experiment with selenium application at 0, 10, and 20 mg L−1 in foliar spray every 20 days. Results showed that mineral content (as K, Ca, Mg and P) was not modified by selenium application. However, N decreased due to the Se applied in fertilizer solution 5 mg L−1, and a negative correlation was found between the selenium applied in foliar form and the nitrogen concentration. The Se concentration, TAS, and biomass increased in plants in all Se treatments. However, the best response in TAS and Se in fruits was observed with foliar spray every 20 days at concentrations of 10 mg L−1, without negative responses in biomass or mineral content.
