Abstract
There are several factors that affect the welfare and meat quality of pigs during pre-slaughter transport. Among various factors, the effects of weather conditions and loading density were studied. A total of 3,726 finishing pigs were allotted to one of nine groups arranged in a 3 × 3 factorial design according to the weather conditions (low temperature [LT], under 10°C; normal temperature [NT], 10°C-24°C; high temperature [HT], upper 24°C), and loading density (low density [LD], upper 0.43 m2/100 kg; normal density [ND], 0.37-0.43 m2/100 kg; high density [HD], under 0.37 m2/100 kg). Each treatment group follow as: LTLD, LTND, LTHD, NTLD, NTND, NTHD, HTLD, HTND, HTHD. In terms of carcass composition, pigs had the highest carcass weight and backfat thickness at LT. Comparing the HD transport to the ND transport, the meat quality indicated a lower pH and more drip loss. The incidence rate of pale, soft, exudative (PSE) pork was high in the order of the HD, LD, and the ND transport (20%, 9%, and 2%, respectively). The HT transport showed the lowest pH and greatest L* value under the given weather conditions. Pigs transported under the HTHD and LTLD conditions had the greatest rates of PSE pork (40% and 20%, respectively). Pigs exposed to HD transport had the shortest laying time and the highest overplap behavior. The LDLT transport pigs had a shorter laying time than the LDNT and LDHT transport pigs. In conclusion, too high or too low density transport is generally not excellent for meat quality or animal welfare, however it is preferable to transport at a slightly low density at high temperature and at a slightly high density at low temperature.

Abstract
With the continuous rise of Muslim and Jewish populations and their increasing preference for ritually slaughtered poultry meat, the industry is forced to redefine its existing product-centric quality standard toward a new consumer-centric dimension of quality. The new dimension is mainly attributed to ensuring animal welfare and ethical treatment (ethical quality), spiritual quality (such as halal status, cleanliness), and eating quality standards set by religion. To meet consumer quality requirements while maintaining high production performance, the industry has incorporated newer technologies that are compatible with religious regulations such as stunning methods like electrical water bath stunning. However, the introduction of new techniques such as electrical water bath stunning has been met with mixed reactions. Some religious scholars have banned the use of any stunning methods in religious slaughter, as halal status is believed to be compromised in cases where birds have been stunned to death before slaughter. Nevertheless, some studies have shown the positive side of the electrical water bath stunning procedure in terms of preserving eating, ethical, and spiritual quality. Therefore, the present study aims to critically analyze the application of various aspects of electrical water bath stunning such as current intensity and frequency on various quality attributes, namely, ethical, spiritual, and eating quality of poultry meat.

Abstract
Animal welfare during transport became an largely issue because of increasing demand for improved animal welfare standards. Most studies on the animal welfare during transportation have concentrated on the atmosphere and the temperature of the truck compartments. Thus, the objective of study was to collect and quantify three axis acceleration and determine the effect of bedding for transporting pigs from farm to slaughterhouse. A total of 2,840 crossbred fattening pigs with a live weight of approximately 115 kg were used. They were raised in the same commercial farms and transported to the same commercial slaughterhouse. A 3×2×2 completely randomized factorial design was used to investigate effects of rubber type bedding (bedding or non-bedding) and two levels of driving style (aggressive or normal) in three different time periods with different outside temperatures. Air temperature treatments were as follow: high temperature ([HT] higher than 24°C); low temperature ([LT] lower than 10°C); normal temperature ([NT] 10°C to 24°C). In our experiment, pigs transported under aggressive driving style showed lower (p < 0.05) pH and water holding capacity (WHC) than those transported under normal driving style. Pigs transported under normal driving style showed a lower percentage of drip loss (DL) (p < 0.05) than those transported with an aggressive driving style. Also, transported with bedding showed higher (p < 0.05) lying behavior but lower (p < 0.05) sitting behavior than those transported without bedding. Pigs transported under normal driving style showed lower (p < 0.05) cortisol level than those transported under aggressive driving style. In conclusion, aggressive driving style cause acute stress in pigs, while bedding helps alleviate acute stress in pigs during transportation in LT.

Abstract
The poultry industry is looking for the most effective sources of selenium (Se) for commercial use. Over the past five years, nano-Se has attracted a great deal of attention in terms of its production, characterisation and possible application in poultry production. The objective of this study was to evaluate the effects of dietary levels of inorganic and organic Se, selenised yeast and nano forms of selenium on breast meat quality, liver and blood markers of antioxidants, the ultrastructure of tissue and the health status of chickens. A total of 300 one-day-old chicks Ross 308 were divided into 4 experimental groups, in 5 replications, with 15 birds per replication. Birds were fed the following treatments: a standard commercial diet containing inorganic Se in the form of inorganic Se at the level of 0.3 mg/kg diet and an experimental diet with an increased level of Se (0.5 mg/kg diet). The use of other forms of Se (nano-Se) versus sodium selenate significantly influences (p ≤ 0.05) a higher collagen content and does not impair physico-chemical properties in the breast muscle or the growth performance of the chickens. In addition, the use of other forms of selenium at an increased dose versus sodium selenate affected (p ≤ 0.01) the elongation of sarcomeres in the pectoral muscle while reducing (p ≤ 0.01) mitochondrial damage in hepatocytes and improving (p ≤ 0.05) oxidative indices. The use of nano-Se at a dose of 0.5 mg/kg feed has high bioavailability and low toxicity without negatively affecting the growth performance and while improving breast muscle quality parameters and the health status of the chickens.

Abstract
Sweet potato vine, the byproduct of sweet potato, has a high nutritional value. Silage is an effective solution for nutrient preservation. This article explored the effects of sweet potato vine silage (SPVS) supplementation on meat quality, antioxidant capacity and immune function in finishing pigs. One hundred and eighty finishing pigs (Berkshire × Licha Black) with a body weight of 74.54 ± 3.32 kg were randomly divided into three groups. The three groups were separately fed basal diet (Ctrl), Ctrl supplemented with 2.5% SPVS (LSPVS) or 5% SPVS (HSPVS) on a dry matter basis. Results showed that the eye muscle area in the LSPVS group was significantly increased. The carcass weight in the HSPVS was significantly reduced compared with Ctrl. For the meat quality, only cooking loss in both HSPVS and LSPVS was reduced while other indexes had no significant differences. For the antioxidant capacity, the hepatic level of glutathione (GSH) peroxidase (GSH-PX) was significantly upregulated in LSPVS but downregulated in HSPVS. In the serum, HSPVS decreased GSH level and increased GSH-PX level. HSPVS significantly reduced hepatic interleukin-1β (IL-1β) levels and LSPVS significantly reduced IL-12 levels and increased IL-8 and IL-6 levels. Moreover, HSPVS and LSPVS promoted the secretion of immunoglobulin M (IgM) and IgG in the serum. Our data showed that low-dose SPVS supplementation improved carcass traits and high-dose SPVS supplementation increased immune function in finishing pigs, which provides a new alternative to improve animal health.

Abstract
1. The study was carried out to determine the effects of supplementing organic (OG) or inorganic (IOG) Se to record the performance, immune and anti-oxidant response in broiler chickens.2. One-day-old Vencobb-400 (50.1 ± 0.84 g; n = 280) male broiler chicks were allocated randomly into seven treatments to give eight replicates containing five chicks each and housed in deep littered floor pens (76 cm × 91 cm) for a period of 42 d.3. The control diet (CD) was formulated without any Se supplementation (diet I), CD plus 0.15, 0.30 or 0.45 mg/kg OG Se (diets II, III and IV, respectively) and CD plus 0.15, 0.30 or 0.45 mg/kg IOG Se (diets V, VI and VII, respectively).4. Feed intake (FI), body weight gain (BWG), immune variables and mRNA expression profile of hepatic selenoproteins (SepW, GSHPx1, TrxR and GSHPx3) genes were determined. The BWG, FI and feed conversion ratio did not differ among various dietary treatments.5. The lipid peroxidation and activity of RBC catalase were lower (P < 0.05) in groups fed diets supplemented OG Se compared to those fed IOG Se and CD. The activity of GSH Px was higher among the groups fed diet supplemented OG Se compared to those groups fed OG Se and CD. However, supplementing diets with OG or IOG Se did not affect humoral or cell mediated immune responses.6. The expression levels of SepW were higher (P < 0.01) among the groups supplemented with OG Se. Expression levels of GSH-Px1, TrxR and GSHPx3 were higher (P < 0.01) among the groups supplemented with OG Se compared to those groups fed IOG Se or CD.7. Supplementing OG Se improved the activities of anti-oxidant enzymes and hepatic expression of selenoproteins genes in the present study. However, supplementing OG or IOG Se did not affect growth performance and immune variables in broiler chickens.

Abstract
Supplementation of selenium in poultry feed is required in an optimum dose and form for optimizing the growth performance and health status. Selenium nanospheres are suggested as an efficient and alternative to the conventional organic or inorganic forms. The study evaluated the effects of selenium (Se) nanospheres (SeNPs) as an alternative to organic Se (Sel-Plex®) or inorganic Se (sodium selenite, Se(IV Se(IV)) on the growth performance, carcass traits, blood biochemistry, and antioxidative capacity in turkey pullets. A total of 160 1-day-old Bronze turkey poults chicks were divided into four groups with 40 pullets each. The birds were fed on four types of diets as fellow: control (basal diet, 0.01 Se mg/kg), SeNPs (0.43 Se mg/kg), organic Se Sel-Plex® (0.41 Se mg/kg), and inorganic Se(IV) (0.42 Se mg/kg) for 8 weeks. No changes were seen in the body weight gain in growing turkey pullet, but chicks fed with Sel-Plex® form recorded the lowest feed intake (p < 0.05) compared to other treatments. Dietary SeNPs and Se(IV) selenium sources improved the feed conversion ratio compared to other treatments. All Se forms fed on turkey pullets showed higher carcass percentage weight and liver Se content than the control group. However, the gizzard percentage weight in the SeNPs group was lower than in the other treatments (p < 0.05). Birds fed SeNPs, and Sel-Plex® forms supplemental diets had a lower cholesterol concentration (p < 0.05) than the control and Se(IV). While high-density lipoprotein (HDL) concentration was increased in SeNPs and Se(IV) groups, and total protein concentration was higher in the Se(IV) group. Furthermore, dietary SeNPs reduced (p < 0.05) the low-density lipoprotein (LDL), total lipids, triglycerides, alanine aminotransferase (ALT), aspartate aminotransferase (AST), creatine, uric acid, urea, and malondialdehyde plasma concentrations and increased the glutathione peroxidase activity (GPx) and total antioxidative capacity (TAC). In conclusion, the results confirmed that feeding turkey pullets on SeNPs form with the 0.4 Se mg/kg of feed enhanced feed efficiency, growth performance, carcass traits, plasma lipids concentration, and antioxidative capacity.

Abstract
This study assessed the influence of green tea powder diet supplementation on performance, nutrient utilisation, caecal microbiota profile and meat quality in broiler chickens. A total of 144, one-day-old broiler (Ross 308) chicks were allocated to 18 cages (eight broilers/cage) which were randomly assigned to one of three dietary treatments: a wheat-based basal diet or supplemented with one of two types of green tea; normal (N-GT) or selenium-rich (Se-GT) tea, at an inclusion rate of 1%. Bird performance, nitrogen-corrected apparent metabolisable energy (AMEn), and total tract digestibility of fat and starch were measured on d 7, 21 and 35. Effects on microbiota profile on d 7, 21 and 35 were determined in a cohort study. Green tea supplementation reduced (P<0.05) the weight gain and feed intake but improved (P<0.05) feed efficiency. Supplementation with N-GT increased the AMEn on d 7 and 21, and with Se-GT on d 7 (P<0.05). AMEn increased with age for all treatments. Fat digestibility increased (P<0.05) in birds fed N-GT on d 21 and Se-GT on d 7 and 21. Starch digestibility increased (P<0.05) on d 21 with N-GT supplementation and on d 7 with Se-GT supplementation. Carcass and breast meat yields were unaffected (P<0.05) by the dietary treatments. The abdominal fat pad decreased (P<0.05) in the N-GT diet and numerically in the Se- GT diet. Drip loss was less in meat from birds (P<0.05) fed both green tea treatments. Cooking loss was reduced in the Se-GT treatment (P<0.05). Dietary inclusion of green tea powder positively influenced microbiota profile, with increased (P<0.05) numbers of beneficial bacteria (Lactobacillus spp. and Bifidobacterium spp.) and reduced (P<0.05) numbers of pathogenic bacteria (Clostridium spp. and Bacteroides spp.). Differences were observed between the two green tea types, with Se-GT being more beneficial than N-GT in the positive modulation of intestinal microbiota.

Abstract
This study aimed to investigate the effects of methionine hydroxyl analog chelated microminerals (MHA-M) replacing inorganic microminerals (ITMs) on the growth performance, fecal microminerals concentrations, immune function, and antioxidant status in growing-finishing pigs; 253 pigs (average 33.68 kg body weight) were randomly assigned to six treatments with six replicates each treatment: (1) ITM: a basal diet with Cu, Fe, Mn, and Zn from sulfates providing 20, 100, 40, and 60 mg/kg; (2-6): 1/5MHA-M, 2/5MHA-M, 3/5MHA-M, 4/5MHA-M, and MHA-M was replaced with 20%, 40%, 60%, 80%, and 100% MHA-M. Results showed that the average daily gain (ADG) in the 1/5MHA-M and 2/5MHA-M was greater than other groups in the whole period. Fecal Cu, Fe, Mn, and Zn concentrations had decreased as the intake of trace minerals decreases. The ITM group decreased the fecal Zn concentration on Days 35, 70, and 91, and Fe concentration on Day 70, and increased the Mn concentration on Day 70 compared with MHA-M group. Pigs fed 1/5MHA-M, 2/5MHA-M, and MHA-M had a higher immune function and antioxidant status in serum compared with ITM, 3/5MHA-M, and 4/5MHA-M on Day 35. In conclusion, treatment with 1/5MHA-M and 2/5MHA-M could reduce the excretion of fecal microminerals and improve the immune function and antioxidant capacity compared with the ITM group.

Abstract
A trial was conducted to investigate the effects of different Se sources, including sodium selenite (S-Se) and selenium yeast (Y-Se) and different effective microorganism (EM) addition levels on growth performance, meat quality, and muscle fiber characteristics of three-yellow chickens and its potential mechanism. A total of 400 birds were randomly distributed into 4 groups (S-Se, S-Se + EM, Y-Se, and Y-Se + EM groups) consisting of a 2 × 2 factorial arrangement. The main factors were the source of Se (ISe = inorganic Se: 0.2 mg/kg S-Se; OSe = organic Se: 0.2 mg/kg Y-Se) and the level of EM (HEMB = high EM: 0.5% EM; ZEMB = low EM: 0% EM). Each treatment had 5 replicates and each replicate consisted of 20 broiler chickens. The trial lasted for 70 days. The results showed that, in breast muscle, the broiler chickens fed OSe source decreased the pH24h, drip loss, shear force, perimeter, cross-sectional area, and diameter, but increased the a24h* and density compared with the broiler chickens fed ISe source (p < 0.05); broiler chickens supplied with HEMB level decreased the cross-sectional area and diameter, but increased the pH24h, a24h,* and density compared with the broiler chickens supplied with ZEMB level (p < 0.05). In thigh muscle, OSe source and HEMB level also could improve the meat quality and change muscle fiber characteristics of broiler chickens (p < 0.05). Meat quality was correlated with the muscle fiber characteristics (p < 0.05). OSe source and HEMB level could regulate the expression levels of muscle fiber-relative genes in the breast and thigh muscles (p < 0.05). In conclusion, OSe source and HEMB level could improve the meat quality of the breast and thigh muscles of three-yellow chickens by changing the muscle fiber characteristics, and they changed the muscle fiber characteristics by regulating the expression levels of muscle fiber-relative genes.

Abstract
A green and ecofriendly bio-based synthesis of nano selenium particles was performed using the Bacillus subtilis and the products were characterized by field emission scanning electron microscope (FESEM), dynamic light scattering (DLS) and transmission electron microscopy (TEM) methods. Dietary treatments included a control diet nonsupplemented with selenium and control diet supplemented with different sources of selenium (sodium selenite, organic Se, and nano-bio Se), resulting in a total of 4 treatments with 6 replicates of 10 chicks. Broilers were assessed for performance measures, ileum morphometry, and microbial population and jejunum tight junction proteins' relative expression. The particle size of the synthesized selenium nanoparticles ranges 40 to 150 nm, with crystalline spherical shape. Inclusion of selenium increased body weight (BW) and improved FCR compared to the control diet (P < 0.05). Among the selenium sources, the highest BW were achieved in chicks fed sodium selenite or nano-bio Se. Selenium supplementation meaningfully (P < - 0.01) changed ileum morphology and reduced ileum microbiota. Inclusion of selenium increased the relative weight of the carcass, breast, and thigh and reduced the relative weight of the liver and bursa of Fabricius on day 42 (P < 0.01). The relative length of duodenum, jejunum, and ileum were increased on day 14 but reduced on day 42 by inclusion of selenium (P < 0.05). Supplementation of selenium increased (P < 0.01) the expression of claudin-1, occludin, and zonula occluden-1 and reduced (P < 0.01) the expression of claudin-5 and zonula occluden-2 on day 28. Inclusion of nano-bio selenium increased (P < 0.05) the expression of occludin, zonula occluden-1, and zonula occluden-2 and reduced (P < 0.05) the expression of claudin-5 compared to the organic selenium and sodium selenite on day 42. In conclusion, this data suggest feasibility of the biosynthesis of selenium nanoparticles by Bacillus subtilis. Additionally, the data reported herein demonstrate that nano-bio selenium can effectively improve performance and intestinal integrity compared to the common organic and inorganic sources of selenium.

Abstract
BACKGROUND Selenium (Se) is an essential micronutrient that is important to both animals and humans. Furthermore, scientists are increasingly interested in boosting the Se content of food products for human consumption, such as Se-enriched meat, because it has been shown to have a positive effect on human health. The purpose of this study was to compare the effects of green synthesized nano selenium (GNS) on broiler chicken growth performance, meat selenium content, intestinal microflora, intestinal morphology, and immune response to sodium selenite (SS) as inorganic Se. METHODS A total of 360 one-day-old Ross 308 broiler chickens were randomly assigned to four experimental groups, each of six replicates of 15 birds. The experimental treatments were as follows: (1) based diet supplemented with 0.15 mg/kg of SS (control group), (2-4) basal diet supplemented with 0.075, 0.15 and 0.3 mg/kg of GNS respectively. RESULTS The results showed that different experimental diets had no significant effect on growth performance. Meat Se content increased with dietary GNS supplementation (P < 0.05). The birds fed dietary supplements GNS compared to SS had higher lactic acid bacteria counts and lactic acid bacteria/coliform ratios in ileum on day 42 (P < 0.05). Furthermore, as compared to SS, dietary supplementation of 0.3 mg GNS/kg significantly reduced coliform numbers in the cecum on day 42 (P < 0.05). Supplementation of 0.3 mg GNS/kg in the diet vs. SS at 21 days, there was a significant increase in VH/CD in the ileum and jejunum, as well as villus height and villus surface area in the ileum, and a decrease in crypt depth and epithelial cell layer thickness in the jejunum. Furthermore, at 42 days, birds fed 0.3 mg GNS/kg had higher villus height, villus surface area, and goblet cell density in the ileum and jejunum than birds fed SS (P < 0.05). Compared to SS, broilers fed 0.3 mg GNS/kg dietary supplementation had higher IgG at 42 days (P < 0.05). CONCLUSION In comparison to the use of SS, it could be concluded that the inclusion of GNS as a novel Se source can improve meat Se content, intestinal microflora, intestinal morphology, and immune response.

Abstract
A Selenium (Se) is an element belonging to the nonmetallic group. It was first discovered in 1817 by J.J. Berzelius. Until the 1950s, it was considered to be toxic to animals. However, with increasing research conducted on laboratory animals, it is now clear that Se is necessary for the proper functioning of both plants and animals. Recent studies indicate that Se is necessary for the proper functioning of metabolic pathways in animals. It was evidenced that Se is a component of about 100 proteins involved in the immune system, antioxidant homeostasis, or release of an inflammatory mediator. Therefore, it is of key interest to find the appropriate dosage for the supplementation of Se in the diet of farm animals and thereby eliminate physiological disorders in the body associated with Se imbalance. In this study, we present a literature review on the importance and appropriate dosage of Se in the diet of poultry concerning their health status, production results, and the quality of animal-origin products.

Abstract
This study was conducted to evaluate the effect of supplementing hydroxy selenomethionine (OH-SeMet) on performance, selenium (Se) deposition in the breast muscle, quality and oxidative stability, and expression of selenoprotein encoding genes of breast meat of the native slow-growing yellow-feathered broiler birds. A total of 375 one-day-old local yellow male birds were randomly assigned into 5 dietary treatments, supplemented with Se 0.0, 0.2, 0.4, 0.6, and 0.8 mg/kg in the form of OH-SeMet. Each treatment consisted of 5 replicates and each replicate had 15 birds, the birds were fed on basal diet containing corn and soybean meal, and the experiment lasted for 63 d. The results showed that dietary Se supplementation linearly increased (P < 0.001) Se contents in both serum and muscle, no significant changes (P > 0.05) were observed on growth performance, yield of breast, meat color, and intramuscular fat deposition of the breast muscle. Dietary Se addition improved water-holding capacity, the pH24h value, and tenderness of breast muscle, evidenced by a linear decreases of shear force (P < 0.05), accompanied by lower thiobarbituric acid reactive substances and higher glutathione reductase activity. The mRNA abundance of selenoprotein encoding genes also responded to dietary Se levels. It is concluded that, dietary supplementation with OH-SeMet improved muscular Se deposition and meat quality of the native yellow birds, with enhanced antioxidant capability and regulation in selenogenome.

Abstract
Poultry meat mainly comes from standard production system using high growth rate strains reared under indoor intensive conditions. However, it is possible to find also different alternative systems using outdoor extensive rearing conditions and slow-growing lines. These different production systems can affect carcass and meat quality. In this review, quality has been broken down into six properties: commercial, organoleptic, nutritional, technological, sanitary and image, the latter covering the ethical, cultural and environmental dimensions associated with the way the meat is produced, as well as its origin and being particularly valued in many quality labels. The quality of meat is built and can deteriorate along the continuum from the conception of the animal to the fork. Our review details the different factors implicated in the determinism of poultry meat properties and pinpoints critical periods, such as the preslaughter and slaughter periods, and key factors, such as the feeding regimen, via its direct effect on the fatty acid profile, the antioxidant and volatile compound contents, and indirect effects mediated via the growth rate of the bird. Our review also highlights potential antagonisms between different dimensions of quality. The genetic selection for breast meat yield, for example, has been effective in producing carcasses with higher meat yield, but resulting since a decade in the increased occurrence of quality defects and myopathies (white striping, wooden breast, spaghetti meat and deep pectoral disease). Outdoor access has positive effects on the image and nutritional properties (through its effect on the fatty acid profile of meat lipids), but it increases the exposition risk to environmental contaminants and pathologies (parasites, virus, bacteria); it also increases the variability in meat quality linked to the variability of animal performance and slaughter age. The orientation towards more agro-ecological low-input farming systems may present benefits for the image and nutritional properties, but also risks for the commercial (low carcass weight and low breast yield, irregularity in supply), organoleptic (stronger flavour, less tender and darker colour of the meat) and in terms of variability of the different properties that constitute quality. Efforts should be made in the future to better take into account the various dimensions of quality, in consumer information, payment to farmers and genetic selection.

Abstract
RESUMO Objetivou-se avaliar a influência da suplementação com minerais biocomplexados sobre a qualidade da carne de frangos da linhagem Label Rouge, de ambos os sexos, criados em sistema alternativo. O delineamento experimental foi inteiramente ao acaso (DIC), disposto em esquema fatorial (3x2), sendo três dietas (controle; 0,50ppm de selênio; 0,40ppm de cromo) e dois sexos. Para a estabilidade lipídica, foi utilizado o DIC, disposto em esquema fatorial (3x2x2), sendo três dietas, dois sexos e dois tempos de armazenamento (zero e 12 meses). Os parâmetros avaliados no peito e na coxa foram: pH final, cor (L* - luminosidade, a* - índice de vermelho, b* - índice de amarelo, C* - índice de saturação e h* - ângulo de tonalidade), perda de peso por cozimento (PPC), força de cisalhamento (FC) e estabilidade lipídica. Além disso, foram avaliadas a proporção das formas químicas da mioglobina da coxa e a quantificação do conteúdo de selênio no peito. Não houve efeito isolado da dieta sobre os parâmetros físicos e químicos do peito e da coxa e sobre a concentração de selênio no peito. As fêmeas apresentaram médias superiores de L* (57,57), b* (10,55) e C* (10,60) do peito; e os machos de L* (55,09) da coxa. Entre os machos, as aves alimentadas com a dieta controle e com cromo expressaram valores superiores de FC da coxa em relação às suplementadas com selênio; para o tratamento com cromo, os machos apresentaram média superior de FC da coxa e, em contrapartida, para o tratamento com selênio, as fêmeas manifestaram a maior média. As amostras submetidas ao período de 12 meses de armazenamento mostraram maiores valores de substâncias reativas ao ácido tiobarbitúrico (TBARS) em ambos os cortes. A suplementação com cromo e selênio biocomplexados não provocou alterações na qualidade da carne; as fêmeas demonstraram melhores atributos de qualidade da carne.

Effect of replacing inorganic trace minerals at lower organic levels on growth performance, blood parameters, antioxidant status, immune indexes, and fecal mineral excretion in weaned piglets. Abstract
Organic trace minerals (OTMs) have the potential to replace inorganic trace minerals (ITMs), but the degree to which the dietary levels can be reduced is not well defined. This study aimed to investigate the effect of replacing of ITMs with lower levels of OTMs on growth performance, blood parameters, antioxidant status, and immune indexes in weaned piglets. The experiment was conducted in a subtropical city in Guangdong Province in South China (subtropical climate) from July to September 2018. A total of 600 pigs with an average initial BW of 8.90 kg were allotted by gender and weight to 5 treatments with 6 replicate pens per treatment. Experimental treatments: (A) Control group (a basal diet with iron, copper, manganese, and zinc from sulfates and sodium selenite providing commercially utilized levels in China of 150, 25, 40, 150, and 0.5 mg/kg, respectively). (B) 1/2 ITM group (inorganic trace minerals providing 1/2 control group levels). (C) 1/2 OTM group (1/2 control group trace mineral levels with manganese, iron, zinc, and selenium from Sel-Plex® and Cu from Bioplex®). (D) 1/3 ITM group (1/3 control group trace mineral levels from inorganic forms). (E) 1/3 OTM group (1/3 control group trace mineral levels from organic forms). The results suggest no significant effects of trace mineral sources or levels, on average daily gain (ADG) and average daily feed intake (ADFI) among different treatments during the entire experiment. The level of zinc in serum was significantly decreased in the 1/3 ITM group. The 1/3 OTM group had a significantly higher (P < 0.05) immunoglobulin G (IgG) level in serum. Fecal mineral excretion decreased significantly (P < 0.05) when decreased dietary levels of trace minerals were included at 1/2 and 1/3 levels regardless of sources. Fecal concentrations of zinc excretion were lower (P < 0.05) with 1/2 OTM supplementation than 1/2 ITMs. The present study shows that replacing high doses of ITMs with low concentrations (1/3) of OTMs does not adversely affect the growth performance of piglets. At low levels, total replacement of ITMs with OTMs improved IgG and reduced fecal excretion of copper, zinc, iron, and manganese, thereby mitigating environmental pollution.

Abstract
A 42-day comparative study was conducted to assess the impact of nanoselenium to other selenium sources on performance, antioxidant activity, immunity, and carcass traits in broilers. Ross 308 (n = 156) 1-day-old broiler chicks, with average initial body weight of 45.80 ± 0.35, were randomly allocated to 4 groups. The first group (G1) fed the basal diet without selenium supplementation. The second group (G2), the third group (G3), and the fourth group (G4) were supplemented with dietary selenium at the level of 0.3 mg kg-1 diet in the form of sodium selenite, seleno-methionine, and nanoselenium, respectively. The results revealed significant improvement on most of the performance parameters of nanoselenium at the level of 0.3 mg kg-1 diet (P < 0.05). Nanoselenium and seleno-methionine achieved the best dressing %, spleen index %, and thymus index %. Concerning to internal organ indices, none of these indices was significantly affected by any selenium sources (P < 0.05). Glutathione peroxidase (GSH-PX) activity and malondialdehyde (MDA) content were not significantly affected by different selenium sources among all experimental groups. Serum interleukin-6 (IL-6) and tumor necrosis factor-α (TNF-α) showed significant (P < 0.05) decrease in nanoselenium supplemented group compared with other groups. In case of serum IL-10 level, a significant (P < 0.05) increase was reported in nanoselenium supplemented group followed by G3 then G2. There were no statistical differences in the serum alanine transaminase, aspartate transaminase, total protein, albumin concentration, serum creatinine level, and uric acid concentration levels among all experimental groups. It is concluded that nano selenium can be a useful and better source of selenium for broilers.

Abstract
The antioxidant capacity of breast muscle in geese fed diets with sodium selenite (SS) or selenomethionine (SeMet) were investigated in the present study. Two hundred healthy 28-day-old male geese were randomly allotted into four groups (one inorganic group and three organic groups) with five replicates per group. Geese in the four groups were fed the basal diet with 0.3 mg selenium (Se)/kg SS, and the basal diet with 0.2, 0.3 and 0.4 mg Se/kg SeMet, respectively. The experiment lasted for 42 days. Diets with SS or SeMet had no significant effect on growth performance of geese. Geese fed diets with SeMet had higher Se content of breast muscle than SS (P < 0.001). Compared to SS, SeMet increased scavenging abilities of 2, 2-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt free radical, hydroxyl radical and superoxide radical, the concentrations of reduced glutathione (GSH), total thiol and non-protein thiol, as well as the activity of glutathione peroxidase in breast muscle of geese (P < 0.05). Moreover, dietary SeMet reduced the concentrations of reactive oxygen metabolites, malondialdehyde and protein carbonyl in breast muscle of geese compared to SS (P < 0.05). Therefore, SeMet improved the antioxidant capacity of breast muscle in geese, which might be related to the stimulated GSH-system and thiol pool. The recommended inclusion level of SeMet in goose diet is 0.2 mg Se/kg.

Abstract
Background Several studies indicated that dietary organic selenium (Se) usually absorbed better than an inorganic source, with high retention and bioavailability. Dietary Se as an antioxidant element affects the immune system and hematological status in animals. Therefore, the aim of this study was to evaluate the effect of dietary supplementation of bacterial selenium as an organic source on hematology, immunity response, selenium retention, and gut morphology in broiler chickens. Results The present results revealed that supplementation of inorganic Se was associated with the lowest level of RBC, HB, and PCV with significant difference than ADS18-Se. In the starter stage, both T2 and T5 were associated with the significantly highest IgG level compared to the basal diet, while all supplemented groups showed higher IgM levels compared to the control group. In the finisher phase, all Se supplemented groups showed significant (P ˂ 0.05) increases in IgG, IgA, and IgM levels compared to T1. Birds fed bacterial-Se showed high intestinal villus height and better Se retention more than sodium selenite. The organic selenium of ADS18 had a superior action in improving Se retention compared to ADS1 and ADS2 bacterial Se. Conclusions Bacterial organic Se had a beneficial effect on the villus height of small intestine led to high Se absorption and retention. Thus, it caused a better effect of Se on hematological parameters and immunity response.

Abstract
The effect of dietary supplementation with VE and Se on the laying productive performance, immunity, and the quality parameters of fresh and stored eggs was assessed. For this study, five treatments, namely control (basal diet), control plus 30 mg of VE and 0.4 mg kg-1 sodium selenite (VE30SS), control plus 30 mg of VE and 0.4 mg kg-1 of Sel-Plex® (VE30SP), control plus 120 mg VE and 0.4 mg kg-1 Sodium selenite (VE120SS), and control plus 120 mg VE and 0.4 mg kg-1 Sel-Plex (VE120SP), were examined. There was no huge impact of VE and Se on feed consumption, FCR and egg yield rate. Quality parameters of fresh egg including egg surface area, eggshell thickness, yolk selenium concentration, albumen height, and Haugh unit were significantly increased following VE and Se supplementation (p < 0.05). For stored eggs, VE and Se significantly increased egg yolk color intensity (p < 0.05). Regardless of storage temperature, eggs from birds fed with VE and Se had less weight loss during 30 days of storage. Albumen height was significantly higher in VE and Se fed birds in eggs stored at 5 °C for 15 and 30 days. The combination of Sel-Plex with either levels of VE had significantly higher blood total antioxidant capacity. Dietary VE and Selenium, notably Sel-Plex, improved the antioxidant potential of blood and egg quality of laying quails.

Abstract
Background and Aim: Nano-selenium (NS) supplementation contributes in improving productivity, performance, and meat quality while reducing public health concern. Influence of NS and inorganic selenium (Se) water additive on performance, carcass quality, immunoglobulin concentration, intestinal microbiota, Se tissue concentrations, and tissue architecture was studied. Materials and Methods: Two-hundred and sixty 1-day-old Hubbard chicks were randomly grouped into five groups (5×52) and supplemented with 0.5 and 1.0 mL of NS and inorganic Se (100 mg.L−1). G1, G2, G3, and G4 were challenged with Escherichia coli O157: H7 2.6×108 on the 14th day. A total of 2250 samples, including 250 sera, 250 intestinal swabs, and 1500 organ and tissue samples as liver, spleen, heart, bursa, intestine, and breast muscles, and 250 eviscerated carcasses were collected. Results: The results revealed a highly significant increase (p<0.01) in live body weights, weight gains, performance indices, carcasses, and organs weights, whereas immunoglobulin G and M concentrations in broilers treated with 0.5 and 1.0 mL NS, respectively, synchronized reveal a highly significant decline (p<0.01) in total bacterial and Enterobacteriaceae counts of intestinal swabs and breast muscles, final pH24, and drip loss in broilers treated with 0.5 and 1.0 mL NS, respectively. Meanwhile, water holding capacity revealed no significant differences between all groups. Reversed-phase high-performance liquid chromatography examination revealed the earlier disappearance of NS residues than inorganic Se from the broiler’s liver and muscles. Histopathological photomicrographs of the liver, spleen, bursa of Fabricius, and intestine, as well as, the immunohistochemistry of intestinal sections revealed superior tissue architecture in broilers treated with NS contrary to inorganic Se. Conclusion: The study showed significant stimulation actions of NS on performance, immunity, carcass and meat quality, intestinal and muscles’ bacterial load as well as short withdrawal period and nearly normal cellular architecture compared to inorganic Se.

Abstract
1. This study examined the effects of different dietary sources and levels of selenium (Se) on growth performance, hepatic and breast meat Se content, glutathione peroxidase (GSH-Px) activity and total antioxidant status (TAS) in blood, when fed to broilers from 14 to 35 d of age and reared at two different temperatures (20°C and 35°C). 2. Five hundred and sixty male Ross 308 broilers were reared in a single floor pen and fed the same proprietary starter diet from 0 to 14 d age (229.9 g/kg CP and 12.67 MJ/kg ME, without Se supplementation). 3. The experiment started at 14 d age, and the birds randomly assigned to 112 raised-floor pens (0.36 m2 area, 5 birds/pen). Each of the seven experimental diets were offered to birds in 16 pens within four rooms. Two rooms were at 20°C and two rooms were maintained at 35°C. The experimental diets were fed from 14 to 35 d age and contained 214.9 g/kg CP and 13.11 MJ/kg ME. The experimental diets were as follows; control diet containing background Se only (0.189 mg/kg; C); low level sodium selenite (0.376 mg/kg; LSS): high level sodium selenite (0.558 mg/kg; HSS); low level commercial B Traxim® Se (0.244 mg/kg) (LBT); high level B Traxim® Se (0.448 mg/kg; HBT); low level selenised yeast (0.290 mg/kg; LSY); high level selenised yeast (0.487 mg/kg; HSY). 4. Birds consumed more when raised at 20°C compared to birds reared at 35°C (P ≤ 0.05). Birds fed lower Se level reared at 35°C had higher weight gain versus those fed higher Se level (P < 0.05). Birds fed SY had the lowest feed intake, weight gain and FCE (P < 0.05). The greatest GSH-Px activity was observed in birds fed SS diets (P < 0.001). There were interactions between diet x level for TAS, which were highest in birds fed LBT compared to birds fed HBT (P < 0.05). Breast Se content was higher in birds fed HSY compared to LSY (P < 0.001). The highest hepatic Se was seen in birds fed SY and lowest in C (P < 0.001). 5. Birds fed BT diets showed similar levels of Se to those birds fed inorganic Se, and similar levels of GSH-Px to birds fed SY. Further comparative work with broilers fed BT and other Se supplemented diets may elucidate the findings from this report.

Abstract
Simple Summary Lack of selenium (Se) is a worldwide problem which leads to an increased exposure to various diseases in animals and humans, as well as decreased productive and reproductive performance of animals. Due to the health benefits of this element, it can be supplemented to humans as multimineral containing inorganic Se and Saccharomycescerevisiae yeast, which mainly contains selenomethionine. On the other hand, selenium-containing food products—such as selenium-rich meat—can be considered as functional foods, which can be produced easily using organic selenium. This study states that Se-enriched breast meat with good antioxidant capacity can be produced using extracted bacterial selenoprotein. Abstract Selenium (Se) is able to transform from inorganic to organic forms via many bacterial species. This feature is being considered for delivering more bioavailable selenium compounds such as selenocysteine and selenomethionine for human and animal diet. This study investigated the effects of bacterial selenoprotein versus inorganic Se on the carcass characteristics, breast meat selenium content, antioxidant status, and meat quality of broiler chickens. One hundred and eighty chicks were randomly allotted to five treatments of a basal diet supplemented with no Se, sodium selenite, Enterobactercloacae Selenium (ADS1-Se), Klebsiellapneumoniae-Selenium (ADS2-Se), and Stenotrophomonasmaltophilia-Selenium (ADS18-Se). The results showed that bacterial selenoprotein has the ability to deposit more Se in the breast meat compared to sodium selenite. Both Se sources reduced breast meat drip loss, cooking loss, shear force, and 2-thiobarbituric acid reactive substances (TBARS) significantly. It also increased total antioxidant (TAC) and glutathione peroxidase (GSH-Px) in comparison with the negative control. The highest activity of (GSH-Px), catalase (CAT), and superoxide dismutase (SOD) was found in bacterial selenoprotein. In conclusion, bacterial selenoprotein is more efficient than sodium selenite in increasing the breast meat Se deposition and oxidative capacity of broiler chickens. Therefore, it can be effectively used to produce Se-rich meat as a functional food.

Abstract
1. This study was conducted to determine the effect of different sources of selenium (Se) on breast and liver tissue deposition, apparent metabolisable energy (AME), growth performance and antioxidant status of broilers, measured as Se content in liver and breast tissues and glutathione peroxidase (GSH-Px) in blood, when used in 0-35 d broiler chicken diets. 2. A total of 200 male Ross 308 broilers were used in the feeding trial, which comprised two dietary phases, a starter from 0 to 21 d and finisher from 21 to 35 d of age. Four treatments with 10 replications each were used. A control diet (C) was formulated that was sufficient in protein and energy (230 and 215 g/kg of crude protein and 12.67 and 13.11 MJ/kg of metabolisable energy, respectively), for both phases, but contained background Se only from the feed ingredients. Diet 2 (IS) was supplemented with 10.35 g/t inorganic, elemental source of Se. Diet 3 (SY) was supplemented with 136.36 g/t selenised yeast, an organic source derived from Saccharomyces cerevisiae. Diet 4 (SS) was supplemented with 0.666 g/t sodium selenite, an inorganic source. 3. Birds fed the SY diet consumed less and weighed less than those fed IS or C (P < 0.05; 0-35 d of age), but there was no difference compared to birds fed SS diets. There were no differences in FCR or dietary AME between broilers fed different Se sources. All diets containing supplementary Se increased concentrations in the liver and breast muscle, and for GSH-Px levels in blood compared to birds fed the C diet (P < 0.001). Birds fed SY diets had greater Se levels in liver and breast tissues compared to birds fed any of the other diets (P < 0.001). 4. Diets supplemented with Se had variable effects on broiler growth performances and antioxidant status. Feeding Se from a yeast source has higher transfer into breast tissues. Feeding different sources and levels of Se to birds in a more challenging situation to induce oxidative stress may bring more conclusive results.

Abstract
1. The aim of this experiment was to investigate the effects of ajwain (Trachyspermum ammi) and dill (Anethum graveolens) essential oils (AEO and DEO, respectively), probiotic (PRO) and mannan-oligosaccharides (MOS) on the growth performance, serum metabolites, meat quality, intestinal morphology and microbial populations of Japanese quail.2. A total of 375 one-day-old Japanese quail were randomly allocated into five treatment groups with five replicates of 15 birds each for a 42 d feeding experiment. The dietary treatments were a basal diet (control) or the same diet supplemented with PRO (0.15 g/kg feed), MOS (2 g/kg feed), AEO (0.25 g/kg feed) or DEO (0.25 g/kg feed).3. AEO, MOS, and PRO supplementation increased weight gain, while diets supplemented with AEO decreased feed intake (FI), and improved feed conversion ratio from d 1 to 21 (P < 0.05). The relative weight of the gizzard was higher in birds supplemented with AEO compared to control group, while the birds fed MOS diet had the longest intestine (P < 0.05). Ceca length was greater in control, MOS and PRO groups (P < 0.05). Both essential oils decreased malondialdehyde (MDA) concentration of breast meat and percentage of cooking loss in quail (P < 0.05). The villus length (VL) was greater in birds fed diet supplemented with MOS, AEO, and DEO (P < 0.05).The population of E.coli decreased in Japanese quail fed MOS, while Lactobacilli spp. count was increased in the MOS group (P < 0.05).4. In conclusion, AEO, MOS, and PRO supplementation exhibited a positive effect on growth performance, while lipid peroxidation of the meat decreased in birds fed AEO and DEO diets. The intestinal morphometric indices increased in quail fed the AEO, MOS, and DEO diets. Supplementation with MOS modulated intestinal microbial populations of the Japanese quail.

Abstract
The aim of the study was to verify the influence of selenomethionine (SM) supplementation on performance, carcass yield, characteristics of meat quality and Se tissue deposition of finishing pigs. A total of 128 hybrid pigs with an average weight of 76 kg were distributed in randomized blocks according to body weight in eight treatments and eight replicates. The experimental treatments were two Se levels from sodium selenite-SS (0.3 and 0.6 ppm), four Se levels from SM (0.3, 0.4, 0.5 and 0.6 ppm) and two combinations of SS with SM (SS 0.15 + SM 0.15 ppm and SS 0.3 + SM 0.3 ppm) providing 0.3 and 0.6 ppm Se in the diet respectively. The feeds were based on corn and soya bean meal. After 30 days on test, were analysed the performance indices and the pigs were slaughtered at commercial slaughterhouse. The cold carcass yield, the physicochemical characteristics of the loin meat and the Se content in muscle and liver were evaluated. There was no significant difference in performance indices (p > .05); however, there was a linear effect on the increase in pig carcass yield by increasing SM (p < .05). The use of SM solely or combined with SS provided higher Se deposition in muscle compared to SS (p < .05). The highest Se deposition in muscle occurred for SM at 0.4 ppm (p < .05). The SS provided higher Se deposition in liver (p < .05). The SM presented best results for meat quality compared to other sources (p < .05). The level of 0.4 ppm Se promoted the best results for the indices of yellow, luminosity, cooking loss and pH (p < .05). The use of SM at any level promotes higher oxidation stability of pig meat (p < .05). The supplementation of SM at a level of 0.4 ppm promotes better physicochemical characteristics and higher Se deposition on swine meat.

Abstract
Heat stress (HS) causes oxidative stress, which compromises broiler performance and meat quality. The aim of this study was to determine whether dietary antioxidants could be used as an amelioration strategy. Seventy-two day-old-male Ross-308 chicks were exposed to either thermoneutral or cyclical heat stress conditions. Diets were either control commercial diet (CON), CON plus betaine (BET), or with a combination of betaine, selenized yeast, and vitamin E (BET + AOX). Heat stress increased the rectal temperature (p < 0.001), respiration rate (p < 0.001), decreased blood pCO2 (p = 0.002), and increased blood pH (p = 0.02), which indicated the HS broilers had respiratory alkalosis. Final body weight was decreased by HS (p < 0.001), whereas it was improved with BET (p = 0.05). Heat stress reduced cooking loss (p = 0.007) and no effect on drip loss, while BET decreased the drip loss (p = 0.01). Heat stress reduced the myofibril fragmentation index (p < 0.001) and increased thiobarbituric acid reactive substances (p < 0.001), while these were improved with the combination of BET + AOX (p = 0.003). In conclusion, BET overall improved growth rates and product quality in this small university study, whereas some additional benefits were provided by AOX on product quality in both TN and HS broilers.

Abstract
Simple Summary Although the importance of usage of selenium as essential trace element in poultry production has been proven, the best source and level has not been fully addressed yet. Three different dietary selenium forms with three different levels were chosen to be added in broiler diet. Met-Se or nano-Se up to 0.6 mg/kg increased their performance and was more efficiently retained in the body than SeS. Frozen stored meat quality was improved in a dose-dependent manner especially with both Met-Se and nano-Se. Nano-Se was more potent than Met-Se, which in turn was more potent than inorganic Se against oxidative stress, which improved the quality of meat under frozen conditions. Abstract This study compares between different selenium forms (sodium selenite; SeS, selenomethionine; Met-Se or nano-Se) and levels on growth performance, Se retention, antioxidative potential of fresh and frozen meat, and genes related to oxidative stress in Ross broilers. Birds (n = 450) were randomly divided into nine experimental groups with five replicates in each and were fed diets supplemented with 0.3, 0.45, and 0.6 mg Se/kg as (SeS, Met-Se), or nano-Se. For overall growth performance, dietary inclusion of Met-Se or nano-Se significantly increased (p < 0.05) body weight gain and improved the feed conversion ratio of Ross broiler chicks at the level of 0.45 and 0.6 mg/kg when compared with the group fed the same level of SeS. Se sources and levels significantly affected (p < 0.05) its concentrations in breast muscle, liver, and serum. Moreover, Se retention in muscle was higher (p < 0.05) after feeding of broiler chicks on a diet supplemented with Met-Se or nano-Se compared to the SeS group, especially at 0.6 mg/kg. Additionally, higher dietary levels from Met-Se or nano-Se significantly reduced oxidative changes in breast and thigh meat in the fresh state and after a four-week storage period and increased muscular pH after 24 h of slaughter. Also, broiler’s meat in the Met-Se and nano-Se groups showed cooking loss and lower drip compared to the SeS group (p < 0.05). In the liver, the mRNA expression levels of glutathione peroxidase, superoxide dismutase, and catalase were elevated by increasing dietary Se levels from Met-Se and nano-Se groups up to 0.6 mg/kg when compared with SeS. Therefore, dietary supplementation with 0.6 mg/kg Met-Se and nano-Se improved growth performance and were more efficiently retained than with SeS. Both sources of selenium (Met-Se and nano-Se) downregulated the oxidation processes of meat during the first four weeks of frozen storage, especially in thigh meat, compared with an inorganic source. Finally, dietary supplementation of Met-Se and nano-Se produced acceptable Se levels in chicken meat offered for consumers.

Abstract
This study examined the effects of sources and levels of selenium (Se) on performance, carcass parts yield, meat quality and tissue Se concentration in broilers. A total of 960 one-day-old male broilers were divided into 8 treatments in a 4 × 2 factorial arrangement. Chicks were penned in groups of 20 with 6 pens per group. Selenium sources were sodium selenite (SS), Se enriched yeast (SY), DL-selenomethionine (SM) and nano-selenium (NS) and dietary supplemental Se levels were 0.1 and 0.3 mg/kg diet. The average daily gain (ADG), average daily feed intake (ADFI), feed:gain ratio, mortality, and carcass parts yield were not affected by dietary treatments. The level of 0.3 mg/kg Se decreased lightness and increased yellowness of the breast and thighs (P < 0.001). Nano-selenium improved yellowness, redness and meat quality (P < 0.05). The interactive effects of sources and the levels of Se affected Se retention (P < 0.001). Inorganic Se showed poor retention compared to other sources of Se; and NS showed equal retention with the organic sources. With consideration to meat quality responses, NS had a more significant positive effect compared to SS as an inorganic source of Se. Overall, NS and organic sources of Se resulted in better meat quality compared with the inorganic source. Moreover, the highest Se retention percentage was achieved by supplementation of NS followed by organic sources at 0.1 mg/kg compared to SS.

Abstract
This study was conducted to investigate the effects of different selenomethionine (SM) forms and levels on productive performance and antioxidant status of broiler breeders and its offspring. Four hundred eighty 48-week-old Lingnan Yellow broiler breeders were randomly divided into four groups, provided basal diet with 0.15 or 0.30 mg/kg Se coming from two SM forms of DL-SM and L-SM. The experiment included a 4-week pretreatment period and an 8-week trial period. During the trial period, eggs were incubated once a week under standard conditions. The broiler breeders were slaughtered after the trial period. At the same time, 15 1-day-old chicks were selected at random per replicate and killed. The results showed that different SM forms and levels had no significant differences in average egg weight, feed intake, and feed-to-egg ration. The DL-SM group in contrast to the L-SM group induced a notable elevation of glutathione peroxidase (GPx) activity in serum (P < 0.01) and liver (P < 0.05), and the 0.15 mg/kg group had higher GPx activity than 0.30 mg/kg in serum (P < 0.01) and pancreas (P < 0.05). Different SM forms showed no significant differences in total antioxidant capability (T-AOC). Diets with 0.15 mg/kg Se exhibited a higher level of T-AOC in serum (P < 0.01) and some tissues. Besides, malondialdehyde (MDA) concentrations in serum, liver, and kidney significantly decreased due to the supplementation of DL-SM. Supplemental 0.15 mg/kg Se reduced MDA concentrations in kidney and muscle. The offspring of broiler breeders fed on DL-SM had higher GPx activity in liver and kidney than L-SM treatment. Supplemental 0.15 mg/kg Se also improved GPx activity in kidney and muscle and T-AOC in kidney of 1-day-old chicks. In summary, our study demonstrated that compared with L-SM, DL-SM was more effective for enhancing the antioxidant status of broiler breeders and its offspring. Moreover, the recommended level of Se supplementation was 0.15 mg/kg Se in Lingnan Yellow broiler breeder diets.

Abstract
The present study was conducted to assess effects of selenium (Se)-yeast supplementation on glutathione peroxidase activity, Se levels in tissues, growth performance, carcass, and meat composition in broilers. A total of 275 one-d-old Cobb 500 broilers of both sexes were randomly allotted to 1 of 5 treatments during a 42-d period. The 5 treatments differed only in Se content: group 1 had no additional Se (background only); groups 2, 3, and 4 received 0.3 mg/kg of added Se from the beginning of the trial until d 21, whereas in the second half of the study (from d 22 to 42), these groups received 0.3, 0.6, and 0.9 mg/kg of added Se, respectively; and group 5 received 0.9 mg/kg of Se for the entire experimental period. At the end of the study, the control group showed significantly lower (P < 0.01) glutathione peroxidase activity in blood plasma compared to Se-supplemented groups. Regarding Se concentration in various tissues, the groups receiving Se yeast showed higher plasma, feces, and meat Se contents than the control group (P < 0.01). Supplementation of Se improved broilers' body weight, weight gain and feed conversion ratio (P < 0.01). Dressing percentage was lower in the control group and the group with 0.3 mg/kg of added Se compared to other experimental groups (0.6 and 0.9 mg/kg of dietary Se). The proportion of less valuable carcass parts (wings and legs) was higher (P < 0.01) in the group fed the basal diet compared to groups supplemented with 0.9 mg/kg of Se. Initial and ultimate pH values differed among experimental groups (P < 0.05). Supplementation of Se improved the broiler's antioxidative resistance, growth performance, carcass quality, and chemical composition of meat.

Abstract
The aim of this study was to evaluate the effects of different dietary levels of zinc (Zn) and α-tocopheryl acetate (α-TOA) on broilers performance, meat quality, Zn, selenium (Se), and α-tocopherol (α-TO) tissue depositions. A total of 1,080 one-day-old Ross 308 broiler chickens (mixed-sex) were allocated to nine dietary treatments. Three levels of supplemental Zn (0, 60, and 120 mg/kg of diet) and three levels of α-TOA (0, 150, and 300 mg/kg of diet) were combined as a completely randomized design with 3 × 3 factorial arrangement. Chicks were penned in groups of 20 with six pens per treatment. The ADFI, ADG, feed conversion ratio (FCR), mortality rate, and European production efficiency factor (EPEF) were not affected by dietary treatments. In addition, supplementation of Zn and α-TOA and their interaction did not affect carcass parts yield. Drip loss of the breast and thigh muscles were significantly reduced 1.27 and 1.47% by α-tocopheryl acetate (α-TOA) supplementation, respectively (P < 0.01). Deposition of Zn in liver, breast, and thigh muscles were linearly increased by dietary Zn supplementation. Furthermore, supplementation of Zn increased Se content in the breast and thigh muscles and liver. Supplementation of either α-TOA or Zn increased deposition of α-TO in liver and the muscles. The Thiobarbituric acid reactive substances (TBARS) values in the breast and thigh muscles and the liver were diminished by supplementation of α-TOA (P = 0.0001) and there was positive interaction between Zn and α-TOA (P < 0.01), in which within each increase in Zn supplementation level, α-TOA supplementation resulted in a reduction of TBARS values. In conclusion, 300 mg/kg dietary supplementation of α-TOA could improve drip loss, nutritional content, and oxidation stability of muscle without any adverse effect on growth performance of chickens. In addition, 120 mg/kg dietary supplementation of Zn could fortify α-TOA effect to improve oxidation stability of the breast and thigh muscles as well as it resulted to higher muscles Zn enrichment.

Abstract
OBJECTIVE This study was conducted with the objectives to examine the impacts of inorganic selenium (Se) and different types and levels of organic selenium on the serum and tissues Se status and antioxidant capacity in broiler breeders. METHODS Five hundred and forty 48-wk-old Lingnan Yellow broiler breeders were randomly assigned to 6 dietary treatments, provided same basal diet (0.04 mg/kg of Se) with 0.15 mg/kg, or 0.30 mg/kg of Se from sodium selenite (SS) or from selenium-enriched yeast (SY) or from selenomethionine (SM). The broiler breeders were slaughtered after an 8-wk experiment. RESULTS The results showed that SM was better than SY and SS, 0.30 mg/kg level was better than 0.15 mg/kg level in Se deposition (p<0.05) in serum, liver, kidney, pancreas and muscle; in antioxidant status, organic selenium had better effects than SS in broiler breeders (p<0.05), but SM and SY had a similar result, and 0.15 mg/kg level was better than 0.30 mg/kg (p<0.05). CONCLUSION The results demonstrated the evident advantage of supplementation of broiler breeders with 0.15 mg/kg SM, which improved tissue Se concentrations and antioxidant status, and can be considered as the best selenium source.

Abstract
This study compared the effects of sodium selenite and selenium yeast and their combination on laying performance, egg quality, antioxidant capacity, and selenium (Se) contents in tissues and eggs. Two-hundred-eighty-eight Jing Hong layers that were similar in laying rate (87.5 ± 0.38%) and body weight (1.70 ± 0.02 kg) were randomly distributed into 4 treatments for 11 wk (from 203 d old to 279 d old) with 9 replicates of 8 hens per replicate. The diets (corn-soybean meal diet) were supplemented with 0 [blank control (BC)], 0.3 mg/kg Se from sodium selenite (SS), 0.15 mg/kg Se from sodium selenite and 0.15 mg/kg Se from Se yeast (SS+SY), or 0.3 mg/kg Se from Se yeast (SY). Results showed that the laying rate of the SS+SY group increased significantly (P < 0.05) compared to the BC and SY groups. There were no differences (P > 0.05) in egg quality between the Se-supplemented diets and the BC diet. The serum glutathione peroxidase (GSH-Px) activity was increased (P < 0.01) in hens fed Se-supplemented diets compared to the BC diet. The liver superoxide dismutase (SOD) activity of the SY group was increased significantly (P < 0.05) compared to the BC group. Significant increase (P < 0.01) due to SY supplementation was noted in the serum vitamin E content compared to BC and SS. Layers fed Se-supplemented diets had higher (P < 0.01) contents of Se in the serum, liver, and kidney compared to the BC diet. Compared to BC, Se content in eggs was significantly increased (P < 0.05) by feeding supplementary Se. In conclusion, the effects of SS and Se yeast were approximately equal in promoting antioxidant capacity of laying hens, while Se yeast is easier to deposit into eggs and tissues. The diet with added equal amounts of the 2 sources of Se was more cost effective and affordable than a comparable amount of Se yeast to obtain the promising production performance and nearly similar Se deposition.

Abstract
Despite increasing evidence indicating the essential involvement of selenium (Se) on growth performance, antioxidant capacity, and meat quality of commercial broilers, the effects of different Se sources on local Chinese Subei chickens is unclear. A total of 360 50-day-old male chickens were individually weighed and randomly allocated to four treatment groups. Chickens in each of the four groups were fed diets supplemented with 0.3 mg Se/kg as sodium Se (SS), Se-enriched yeast (SY), selenomethionine (Met-Se), or nano red element Se (Nano-Se) for 40 days. At the end of the experiment, one bird of approximately average weight from each cage was selected and slaughtered, and blood and breast muscles samples were collected. The results showed that there was no significant difference in feed intake, body weight gain, or feed to gain ratio among treatments (P > 0.05). Dietary SY, Met-Se, and Nano-Se supplementation increased the activity of glutathione peroxidase in serum and breast muscles and decreased the concentration of malondialdehyde in serum and carbonyl in breast muscles compared with the SS group (P < 0.05). Moreover, SY, Met-Se, and Nano-Se supplementation increased pH45min, total protein solubility, and myofibrillar protein solubility, as well as decreased the shear force value compared with the SS group (P < 0.05). In addition, birds in the SY and Met-Se groups exhibited lower cooking loss compared with the SS group (P < 0.05). In conclusion, organic Se and Nano-Se supplementation resulted in an improvement of antioxidant capacity and meat quality in local Chinese Subei chickens relative to inorganic Se.

Abstract
Background Selenium (Se) is an essential trace mineral in broilers, which has several important roles in biological processes. Organic forms of Se are more efficient than inorganic forms and can be produced biologically via Se microbial reduction. Hence, the possibility of using Se-enriched bacteria as feed supplement may provide an interesting source of organic Se, and benefit broiler antioxidant system and other biological processes. The objective of this study was to examine the impacts of inorganic Se and different bacterial organic Se sources on the performance, serum and tissues Se status, antioxidant capacity, and liver mRNA expression of selenoproteins in broilers. Results Results indicated that different Se sources did not significantly (P ≤ 0.05) affect broiler growth performance. However, bacterial organic Se of T5 (basal diet +0.3 mg /kg feed ADS18 Se), T4 (basal diet +0.3 mg /kg feed ADS2 Se), and T3 (basal diet +0.3 mg /kg feed ADS1 Se) exhibited significantly (P ≤ 0.05) highest Se concentration in serum, liver, and kidney respectively. Dietary inorganic Se and bacterial organic Se were observed to significantly affect broiler serum ALT, AST, LDH activities and serum creatinine level. ADS18 supplemented Se of (Stenotrophomonas maltophilia) bacterial strain showed the highest GSH-Px activity with the lowest MDA content in serum, and the highest GSH-Px and catalase activity in the kidney, while bacterial Se of ADS2 (Klebsiella pneumoniae) resulted in a higher level of GSH-Px1 and catalase in liver. Moreover, our study showed that in comparison with sodium selenite, only ADS18 bacterial Se showed a significantly higher mRNA level in GSH-Px1, GSH-Px4, DIO1, and TXNDR1, while both ADS18 and ADS2 showed high level of mRNA of DIO2 compared to sodium selenite. Conclusions The supplementation of bacterial organic Se in broiler chicken, improved tissue Se deposition, antioxidant status, and selenoproteins gene expression, and can be considered as an effective alternative source of Se in broiler chickens.

Abstract
SummaryThe following trial was conducted to investigate the effects of Se source (inorganic sodium selenite (SS) versus organic use Sel-Plex® (SP; Alltech Inc, Nicholasville, KY, USA)) on the performance, feathering and meat quality of 900, one-day-old male broilers over a 42 day growing period. Pens (n = 20) were randomly assigned to either: Diet A (no Se; negative control), Diet B as for diet A plus 0.3 mg/kg SS (positive control), Diet C as for diet A plus 0.2 mg/kg SP, Diet D as for diet A plus 0.3 mg/kg SP and Diet E as for diet A plus 0.4 mg/kg SP. From day 1 to 28, significant (P < 0.05) treatment effects were seen for feed intake and FCR, with values for the negative control being higher than for the diets containing Se. The best FCR was recorded for the diet containing 0.4 mg/kg SP. Breast meat yield for birds fed the negative control were lower than those fed selenite or SP supplemented diets (P < 0.05). Feather measurements on d 14, 28 and 42 of age showed that, although scores became poorer with age (4.9 at 14 d, 4.6 at 28 d and 3.6 at 42 d), they were unaffected (P > 0.05) by dietary Se inclusion. Numeric trends in favour of SP were seen in cooking losses in meat chilled for 24 hours and seven days. Cooking losses in meat frozen for seven days were significantly influenced by Se inclusion, whereby values for birds fed 0.3 and 0.4 mg/kg SP were significantly lower than values for birds fed inorganic selenite (P < 0.05). Tissue Se concentrations were highest for the SP diets. Meat oxidation from the birds fed SP was lower than for the birds fed no Se or SS. The results demonstrated that SP may be more advantageous in improving certain variables of performance and meat quality compared to inorganic sources of Se.
