Abstract
Aquaculture sludge (uneaten feed and faeces) is nutrient rich and has potential as feed for insects. The aim of this study was to investigate the transfer of chemical and biological contaminants, as well as nutrients, from aquaculture sludge to black soldier fly larvae. The larvae were reared on a sludge mixture made of different sludges collected from Norwegian freshwater salmonid facilities. The sludge was spiked with four common salmon pathogens: Infectious Pancreatic Necrosis Virus, Infectious Salmon Anemia virus, Yersinia ruckeri or Mycobacterium salmoniphilum. During the 15 days of growth on sludge, the black soldier fly larvae accumulated valuable nutrients including protein, fat, eicosapentaenoic acid, iron, manganese, zinc and selenium. The larvae also accumulated undesirable substances including cadmium, mercury, dioxins and polychlorinated biphenyls. The concentrations of dioxins exceeded the EU maximum level set for animal feed. None of the salmon pathogens that were spiked to the sludge were detected in the black soldier fly larvae. This study reports low risk of transfer of salmon pathogens from sludge to insect larvae, and showed that the transfer of heavy metals, minerals and metalloids are in accordance with earlier studies. The large variations in levels of heavy metals between batches of sludge can cause levels in BSF exceeding the EU maximum levels, and thus indicate a need for monitoring of the proposed value chain. The transfer of dioxins from sludge to insects, reported for the first time in this paper, would be of special interest for future research, with special focus on risk mitigation.

Abstract
Salmons are crucial to ecosystems and economic activities like commercial fishing and aquaculture, while also serving as an important source of nutrients, underscoring their ecological significance and the need for sustainable management. To better understand the toxicity and biological interactions between the salmon and industrial chemicals in the aquatic environment, we utilized the ToxValDB database to develop first ever computational toxicity models for six salmon subspecies (covering Atlantic and Pacific salmon) across two genera, employing Quantitative Structure-Activity Relationship (QSAR) and quantitative Read-Across Structure-Activity Relationship (q-RASAR) methods. For three smaller datasets (Oncorhynchus nerka, Oncorhynchus keta, and Oncorhynchus gorbuscha), we created mathematical models using the entire datasets where QSAR models demonstrated superior statistical quality compared to q-RASAR. Conversely, the three larger datasets (Oncorhynchus kisutch, Oncorhynchus tshawytscha, and Salmon salar) were divided into training and test sets, the q-RASAR models yielded better results compared to QSAR models. Mechanistic interpretations of these models revealed that descriptors such as Burden eigenvalues (BCUT), autocorrelation of topological structure (ATSC), and molecular polarizability were significant predictors of toxicity. For instance, higher polarizability and certain topological features were associated with increased toxicity as per the developed models. Statistically superior models for each subspecies were used to predict the aquatic toxicity of 1085 untested organic chemicals for toxicity data gap filling and risk assessment considering the applicability domain (AD). These insights are pivotal for designing safer chemicals and emphasize the need for sustainable management of salmon populations.

Abstract
Background Blood total mercury concentration (BTHg) predominantly contains methyl Hg from seafood, and less inorganic Hg. Measured BTHg is often available only in a small proportion of large cohort study samples. Associations between estimated dietary intake of total Hg (THg) and lower birth weight within strata of maternal seafood intake was previously reported in the Norwegian Mother, Father, and Child Cohort Study (MoBa). However, maternal seafood consumption was associated with increased birth weight, indicating negative confounding by seafood in the association between THg intake and birth weight. Using predicted BTHg as a proxy for measured BTHg, we hypothesized that predicted BTHg would be associated with decreased birth weight. Objectives To develop and validate a prediction model for BTHg in MoBa and to examine the association between predicted BTHg and birth weight in the MoBa population. Methods Using linear regression, measured maternal BTHg (n = 1437) was used to build the best fitting model (highest R-squared value). Model validation (n = 1436) was based on correlation and weighted Kappa (Кw). Associations between predicted BTHg in the MoBa population (n = 86,775) or measured BTHg (n = 3590) and birth weight were assessed by multivariate linear regression models. Results The best fitting model had R-squared = 0.3 and showed strong correlation (r = 0.53, p < 0.001) between predicted and measured BTHg. Cross-classification (quintiles) showed 73 % correctly classified and 3.3 % grossly misclassified, with Кw of 0.37. Measured BTHg was not associated with birth weight. Predicted BTHg was significantly associated with higher birth weight. There were no trends in birth weight with increasing quintiles of measured or predicted BTHg after stratification into high or low seafood consumption. Conclusions The results indicate that prediction of BTHg did not overcome negative confounding of the association between Hg exposure and birth weight by seafood intake. Furthermore, effect on birth weight of toxicological concern is unexpected in our observed BTHg range.

Abstract
In this study, the difference between wild and farmed salmon production was successfully profiled and differentiated by matrix-assisted laser desorption ionization-time of flight mass spectrometry (MALDI-ToF MS) combined with chemometric analysis. The established method based on multivariate analysis mainly involved principal component analysis (PCA), partial least squares-discriminant analysis (PLS-DA), and orthogonal partial least squares-discriminant analysis (OPLS-DA) as the screening and verifying tools to provide insights into the distinctive features found in wild and farmed salmon products, respectively. The discrimination between farmed and wild salmon was accomplished with 100% classification accuracy using chemometric models, 100% identification accuracy was also achieved in distinguishing wild Salmo salar and Oncorhynchus nerka samples. The results of the present work suggest that the proposed method could serve as a reference for detecting salmon fraud relating to wild or farmed production and expand the application of MALDI-ToF technology further into food authenticity applications.

Abstract
The rapid expansion of the aquaculture industry raises concerns about water pollution from aquaculture production facilities (APFs). APFs release pollutants, including fish feed and feces, threatening the environment. The United Nations has introduced regulatory tools like the National Baseline Budget of pollutants (NBB) and Pollutant Release and Transfer Registers (PRTRs) to monitor pollution. However, these tools lack specific capabilities for estimating aquaculture-related pollution, especially from mariculture non-point sources (NPS). The United Nations Programme for the Assessment and Control of Marine Pollution in the Mediterranean (UNEP/MAP) stresses the need for an inventory and guidance document. Our comprehensive literature review focused on (1) NPS discharges of specific pollutants from APFs, (2) methods for estimating potential pollution releases from aquaculture, and (3) compiling information into a guidance document summarizing estimation methods. The geographical coverage of our study includes Europe, Australia, the USA, Canada, and East/Southeast Asia.

Abstract
Risk- benefit assessments of seafood require high-quality food composition data. In accordance with EU regulations, Atlantic salmon (Salmo salar) has conventionally been sampled using the Norwegian Quality Cut (NQC), a sub-cut of the middle section of the fish, in Norwegian surveillance programs. By comparing the contents of nutrients and contaminants in 34 samples of farmed Atlantic salmon, we aimed to evaluate the representativeness of the NQC compared with the whole fillet. Of the 129 analytes evaluated, eight single analytes, in addition to 25 different fatty acids, showed significant differences between the cuts. Significant differences were evident for total fat, including eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), and sum PCB-6, but not for the sum of dioxins and dioxin-like PCBs. We further suggest that the NQC may still be used in large-scale sampling of Atlantic salmon, and that the whole fillet would be preferable when analysing the content of nutrients.

Abstract
As demand for sustainable marine aquaculture (mariculture) and marine food supply surges worldwide, there is a growing need for new tools to assess mariculture impacts on local ecosystems, including the cycling of toxic organic contaminants. With this in mind, we developed the Contaminant Fate in Aquaculture-Modified Ecosystems (CFAME) model. The current model was designed to explore the fate of mariculture-derived organic contaminants in the Marlborough Sounds, New Zealand, known for its Chinook salmon farming industry. Model evaluation indicated robust model design, with 80% of modeled concentrations falling within a factor of ten of measured ones for native biota. Model results showed that mariculture was a source of organic contaminants in the sediment even at the Marlborough Sounds regional level and in wild marine fishes with high trophic levels near the farm area. Future research attention should be directed toward measuring chemicals with low log KAW (<0) and high log KOW values (e.g., >3) in sediment, and chemicals with log KOW values of 3-9 in wild fish.

Abstract
Dioxins and dioxin-like polychlorinated biphenyls (dl-PCBs) in fish fillet counteract the health benefits of fish products. In this study, food waste was used as a protein alternative to replacing fishmeal commonly used in the commercial fish feed, aiming to cultivate Sabah grouper with acceptable levels of dioxins and dl-PCBs. The concentrations of dioxins and dl-PCBs, as well as the fish growth performance, were compared between the fish groups fed with food waste-based feed (FWBF) and commercial feed (Nanyu®, control). The results showed that the concentrations of polychlorinated dibenzo-p-dioxins (PCDDs) (1.22 pg/g dry weight (d.w.)) and non-ortho-dl-PCBs (13.0 pg/g d.w.) were significantly lower (p < 0.05) in the FWBF than in the control feed (commercial feed) (PCDDs: 2.35 pg/g d.w.; non-ortho-dl-PCBs: 27.2 pg/g d.w.). The growth performance of the fish group fed with the FWBF was comparable to that fed with the control feed. There were no significant differences between the WHO2005-TEQ values of different fish fillets (1.00, 1.11, and 1.10 pg WHO2005-TEQ/g d.w. for FWBF group, control feed group, and local market fish, respectively). Based on the guidelines provided by European Food Safety Authority (ESFA) and U.S. Environmental Protection Agency (USEPA), the fish fed with the FWBF were safe for human consumption (hazard index values: 0.284-0.522; cancer risk range: 2.59-2.97 × 10-5). The findings of this study suggest that food waste could serve as an alternative protein source for cultivating Sabah grouper with acceptable levels of dioxins and dl-PCBs.

Abstract
Atlantic salmon represents an important source of valuable proteins and lipids rich in n-3 fatty acids and micronutrients. However, there are reports that these marine fish still contain contaminants at levels that raise health concerns. Although the Stockholm Convention already bans some compounds, they can still be detected because of their persistence. The present study reports nutritional parameters and the occurrence of persistent and bioaccumulative chemicals in the tissues of fifty-five salmon from several major farming areas. The protein content of all samples was almost identical, averaging to 19.2% w/w, while lipids averaged 14.9% w/w. Fish from Chilean farms contained 6.0% less fat and a lower level of vitamin E than from other sources, that is, 2.2 mg per 100 g (w/w). Fish from Scottish farms contained higher levels of eicosapentaenoic and docosahexaenoic acid. Halogenated contaminants from polychlorinated biphenyls, organochlorinated pesticides, brominated flame retardants, and perfluoroalkylated and polyfluoroalkylated substances were measured, and generally, they were found to be at very low concentrations that did not exceed the legislation limits applicable in the European Union. These results showed that the compositional differences between Atlantic salmon from several important farming areas were only minor, but some significant differences were demonstrated in total fat content and fatty acid profiles.

Abstract
Interactions of microplastics and persistent organic pollutants (POPs) associated with Atlantic salmon farming were studied to assess the potential role of microplastics in relation to the environmental impact of aquaculture. HDPE, PP, PET and PVC microplastics placed for 3 months near fish farms sorbed POPs from aquafeeds. PET and PVC sorbed significantly higher levels of dioxins and PCBs compared to HDPE, while the levels sorbed to PP were intermediate and did not differ statistically from PET, PVC or HDPE. In addition, the composition of dioxins accumulated in caged blue mussels did not reflect the patterns observed on the microplastics, probably due to polymer-specific affinity of POPs. In conclusion, the results of this study show that microplastics occurring near fish farms can sorb aquafeed-associated POPs and, therefore, microplastics could potentially be vectors of such chemicals in the marine environment and increase the environmental impact of fish farming.

Abstract
According to the concept of circular economy, insects represent good candidates as aquafeed ingredients. Nevertheless, there are some potential chemical risks linked with insect consumption. In this study, we reared the teleost Danio rerio, used as an experimental model, with five experimental diets characterized by increasing levels (0%, 25%, 50%, 75%, and 100%) of full-fat Hermetia illucens (Hi) prepupae, substituting for fish meal (FM) and fish oil (FO). We investigated the presence of potentially toxic elements (PTEs) Cd, Pb, Ni, As, and Hg in larval (20 days), juvenile (2 months), and adult (6 months) fish. Quantitative determinations of Cd, Pb, Ni, and As were made with an atomic absorption spectrometer; the total mercury content was determined by a direct mercury analyzer. The substitution of FM and FO with Hermetia illucens meal led to a reduction in the content of some PTEs, such as Pb, As, and Ni, in fishfeed, leading to concentrations below the legal limit of undesirable substances in animal feed. By increasing the Hi meal dietary content, we observed in the Danio rerio specimens an increase in Cd, Pb, and Ni content and a reduction in As content for all life stages. Moreover, a general increase in the content of Cd, Pb, Hg, and Ni from larvae to juvenile was measured, while the shift of Danio rerio from the juvenile to the adult stage involved a significant increase in the content of Pb, Hg, and Ni. Larvae had a reduced ability to bioaccumulate metal(loid)s compared to juveniles and adults. In conclusion, the content of PTEs in Danio rerio is influenced both by the type of diet administered and by the life stage of the animal itself. This research demonstrates the possibility of using Hi prepupae as an aquafeed ingredient without exposing fish to a chemical risk and, in perspective, allows applying these eco-sustainable diets for the breeding of edible fish species, without endangering human health.

Abstract
The changes in the feed of farmed Atlantic salmon (Salmo salar) towards a more plant-based diet affect the nutritional value of the fillets. By compiling the contents of a range of nutrients in 1108 samples of Norwegian farmed Atlantic salmon collected between 2005 and 2020, we found that the median contents of eicosapentaenoic acid (EPA) + docosahexaenoic acid (DHA) have decreased by > 60%. However, farmed Atlantic salmon remains a considerable source of EPA and DHA, with one and two portions being sufficient to meet the weekly adequate intake of EPA and DHA for adults (175 g) and two-year-olds (80 g), respectively. Farmed Atlantic salmon also remains a considerable source of protein, selenium, vitamin B12, and vitamin D3. Together, we demonstrate that farmed Atlantic salmon can contribute substantially to the nutrient intake of the consumers. These data are important for the Norwegian food composition table and future risk-benefit assessments on fatty fish consumption.

Abstract
The pressurized liquid extraction (PLE) technique was used to obtain protein extracts with antioxidant capacity from salmon muscle remains, heads, viscera, skin, and tailfins. A protein recovery percentage ≈28% was obtained for all samples except for viscera, which was ≈92%. These values represented an increase of 1.5-4.8-fold compared to stirring extraction (control). Different SDS-PAGE profiles in control and PLE extracts revealed that extraction conditions affected the protein molecular weight distribution of the obtained extracts. Both TEAC (Trolox equivalent antioxidant capacity) and ORAC (oxygen radical antioxidant capacity) assays showed an outstanding antioxidant activity for viscera PLE extract. Through liquid chromatography coupled with electrospray ionization triple time-of-flight (nanoESI qQTOF) mass spectrometry, 137 and 67 peptides were identified in control and PLE extracts from salmon viscera, respectively None of these peptides was found among the antioxidant peptides inputted in the BIOPEP-UMP database. However, bioinformatics analysis showed several antioxidant small peptides encrypted in amino acid sequences of viscera extracts, especially GPP (glycine-proline-proline) and GAA (glycine-alanine-alanine) for PLE extracts. Further research on the relationship between antioxidant activity and specific peptides from salmon viscera PLE extracts is required. In addition, the salmon side streams studied presented non-toxic levels of As, Hg, Cd, and Pb, as well as the absence of mycotoxins or related metabolites. Overall, these results confirm the feasible use of farmed salmon processing side streams as alternative sources of protein and bioactive compounds for human consumption.

Abstract
Oily seafood is an important food source which contains several key nutrients beneficial for human health. On the other hand, oily seafood also contains persistent organic pollutants (POPs), including the dioxin-like compounds (DLCs) polychlorinated dibenzo-p-dioxins/polychlorinated dibenzofurans (PCDD/Fs) and dioxin-like-polychlorinated biphenyls (dl-PCBs), potentially detrimental to human health. For a comprehensive comparison of the beneficial and potentially adverse health effects of seafood consumption, risk-benefit analyses are necessary. Risk-benefit analyses require reliable quantitative data and sound knowledge of uncertainties and potential biases. Our dataset comprised more than 4000 analyses of DLCs and more than 1000 analyses each of docosahexaenoic acid (DHA), eicosapentaenoic acid (EPA) and vitamin D in the three most important Norwegian commercial oily seafood species: Atlantic herring (Clupea harengus), Atlantic mackerel (Scomber scombrus) and farmed Atlantic salmon (Salmo salar). The levels of several DLC congeners were below the limit of quantification (LOQ), making estimation of true levels challenging. We demonstrate that the use of upper bound substitution of censored data will overestimate, while lower bound substitution will underestimate the actual levels of DLCs. Therefore, we implement an alternative robust statistical method by combining Maximum Likelihood Estimation, Regression on Order Statistics and Kaplan-Meier analyses, which is better suited for providing estimations of levels of these contaminants in seafood. Moreover, we illustrate the impact of the toxic equivalency factor (TEF) system on estimation of the sums of DLCs by comparing the TEF system to an alternative system of relative effect potency (REP) factors (Consensus Toxicity Factors). The levels of nutrients and contaminants were related to adequate intake (AI) and tolerable weekly intake (TWI), respectively. We used AI and the TWI values established by the European Food Safety Authority (EFSA). The benefit and the risk were further viewed in the context of the Norwegian average intake of oily fish, and the Norwegian governmental official dietary recommendations of oily fish. Our results showed that both benefit and risk are met at the levels found of nutrients and DLCs in oily seafood. The comprehensive quantitative data presented here will be a key for future risk-benefit assessment of oily fish consumption. Together, our results underline that a refined formalized integrative risk-benefit assessment of oily fish in the diet is warranted, and that the data and methodology presented in this study are highly relevant for future integrated and multidisciplinary assessment of both risks and benefits of seafood consumption for human health.

Abstract
Exposure to methylmercury (MeHg) through fish is a global public health problem. Exposure monitoring is essential for health risk assessment, especially in pregnant women and children due to the documented neurotoxicity. Herein, we evaluate a time series of MeHg exposure via fish in primiparous Swedish women, covering a time period of 23 years (1996-2019). The 655 included mothers were part of the POPUP study (Persistent Organic Pollutants in Uppsala Primiparas) conducted by the Swedish Food Agency (SFA). MeHg exposure was assessed via measurements of total mercury (Hg) in hair using either cold vapor atomic fluorescence spectrophotometry or inductively coupled plasma mass spectrometry, showing very good linear agreement (R2 = 0.97). Maternal characteristics and fish consumption were obtained via questionnaires. The median concentration of total Hg in hair was 0.38 mg/kg (range 0.17-1.5) in 1996 and 0.25 mg/kg (range 0.03-1.1) in 2019. On average the women consumed 11 ± 8.2 meals of fish per month, and fish consumption was positively correlated with total Hg in hair (Spearman correlation: 0.39; p < 0.001). In multiple regression analyses, the geometric mean annual decrease of total Hg in hair was -2.5% (95% CI: -3.2, -1.8%). Total fish consumption increased up to 2011 (B: 0.32 times/month per year; 95% CI 0.17, 0.46) after which it started to decline (B: -0.66 times/month per year; 95% CI -0.92, -0.40). Moreover, both total Hg in hair and fish consumption was positively associated with maternal age and education, and inversely associated with pre-pregnancy BMI. In conclusion, the exposure to MeHg via fish appears to be slowly declining among Swedish pregnant women.

Abstract
In this paper, we present updated data on proximate composition, amino acid, and fatty acid composition, as well as concentrations of dioxins, polychlorinated biphenyls (PCBs), and selected heavy metals, in fillets from farmed (n = 20), escaped (n = 17), and wild (n = 23) Atlantic salmon (Salmo salar L.). The concentrations of dioxins (0.53 ± 0.12 pg toxic equivalents (TEQ)/g), dioxin-like PCBs (0.95 ± 0.48 pg TEQ/g), mercury (56.3 ± 12.9 µg/kg) and arsenic (2.56 ± 0.87 mg/kg) were three times higher in wild compared to farmed salmon, but all well below EU-uniform maximum levels for contaminants in food. The six ICES (International Council for the Exploration of the Sea) PCBs concentrations (5.09 ± 0.83 ng/g) in wild salmon were higher than in the farmed fish (3.34 ± 0.46 ng/g). The protein content was slightly higher in wild salmon (16%) compared to the farmed fish (15%), and the amount of essential amino acids were similar. The fat content of farmed salmon (18%) was three times that of the wild fish, and the proportion of marine long-chain omega-3 fatty acids was a substantially lower (8.9 vs. 24.1%). The omega-6 to omega-3 fatty acid ratio was higher in farmed than wild salmon (0.7 vs. 0.05). Both farmed and wild Atlantic salmon are still valuable sources of eicosapentaenoic acid and docosahexaenoic acid. One 150 g portion per week will contribute to more (2.1 g and 1.8 g) than the recommended weekly intake for adults.

Abstract
Introduction This paper reports polychlorinated dibenzo-p-dioxin (PCDD), polychlorinated dibenzofuran (PCDF), and polychlorinated biphenyl (PCB) concentrations in fish collected from Polish and Vietnamese farms and the related risk for consumers. Material and Methods Altogether, 160 samples were analysed using an isotope dilution technique with high-resolution gas chromatography coupled with high-resolution mass spectrometry (HRGC-HRMS). To characterise the potential health risk associated with PCDD/F and dioxin-like polychlorinated biphenyl (DL-PCB) intake, doses ingested in two 100 g portions of fish by adults and children were calculated and expressed as the percentage of the tolerable weekly intake (TWI) newly established by the EFSA in November 2018 at 2 pg WHO-TEQ kg-1 b.w. Results Generally, levels in fish muscles were low in relation to maximum limits (4), being in the range of 0.02-3.98 pg WHO-TEQ g-1 wet weight (w.w.) for PCDD/F/DL-PCBs and 0.05-24.94 ng g-1 w.w. for NDL-PCBs. The highest concentration was found in eel muscles. The least polluted were pangas and zanders and the levels were at the limits of quantification. Consumption of two portions of fish per week results in intakes of 9- 866% TWI by children and 4-286% TWI by adults. Conclusion Frequent consumption of some species (for example eel and bream) can pose a health risk to vulnerable consumers and especially children and pregnant women.

Abstract
Food and drinking water intake are the major routes of exposure to perfluoroalkyl substances (PFASs) for humans. In this study an initial oral exposure assessment of the non-occupationally exposed general Greek population to PFASs is presented. Levels of PFOA and PFOS determined in the present study in 128 food items from the Greek market and previously published analytical results of 43 water samples and 76 egg samples from Greece were combined with food availability data of the DAFNE-ANEMOS database for the calculation of oral intake of PFASs. Fish form the food group with the highest concentration in both PFOA and PFOS. For the general Greek population the estimated average daily intake in PFOA and PFOS when applying the lowerbound mean concentrations in food and drinking water samples is 0.49 and 0.91 ng kg-1 body weight (b.w.) respectively. The main contributor to oral PFAS intake is fish. A pharmacokinetic model is applied to estimate total intake from blood serum levels reported previously and the predicted values are in agreement with lowerbound estimated values. Weekly intake estimated values are below the tolerable weekly intake recently proposed by EFSA.

Abstract
Norway is one of the main producers of farmed fish and the world's second-largest exporter of seafood. Farmed Atlantic salmon (Salmo salar) represents the most exported species. This is the first comprehensive survey of anthropogenic (137Cs, 90Sr, 238Pu, 239,240Pu and 241Am) and natural (40K, 226Ra, 228Ra, 210Pb, 210Po) radionuclides in farmed salmon and manufactured fish feed from Norway. The only anthropogenic radionuclide detected in salmon and fish feed was 137Cs. The levels were low with arithmetic means in salmon and feed of 0.13 and 0.30 Bq/kg fresh weight (fw), respectively. The natural radionuclide 40K exhibited the highest levels with arithmetic means in salmon and feed of 115 and 239 Bq/kg fw, respectively. The arithmetic means of 210Po and 210Pb in salmon were 0.013 and 0.044 Bq/kg fw, respectively, with a mean 210Po:210Pb activity ratio of 0.32. For fish feed, the situation was reversed: the arithmetic means of 210Po and 210Pb were 3.8 and 0.67 Bq/kg fw, respectively, with a mean 210Po:210Pb activity ratio of 5.7. The radionuclide levels found in farmed salmon in the present study are comparable to or lower than the levels found in other fish species in the North Atlantic Ocean. A highly conservative dose estimate for consumption showed that doses were no higher than 1.2 μSv/year for toddlers and 4.0 μSv/year for adults. This suggests that the risk associated with radioactivity in farmed salmon is very low even when considering individuals with high consumption and the highest radionuclide levels found in this study.

Abstract
Metal contamination in fish is a concern worldwide, including in the Arabian/Persian Gulf region. This review summarizes the findings from 55 papers about metal concentrations in Gulf fish. Metal concentrations in muscle tissue were screened against the most recent maximum allowable levels (MALs) for fish in international commerce. We identified metals, fish species, and locations where concentrations exceeded the MALs. For some metals, recent MALs have been set to lower concentrations as more toxicological data have become available. Mean fish tissue concentrations exceeded the MAL in 13% (arsenic), 76% (cadmium), 56% (lead), and 10% (mercury) of species means. We identified 13 fish species with the potential to serve as bioindicators of metal contamination for use in four Gulf habitats: pelagic, benthopelagic, demersal, and coral reefs. Recommendations are provided for a regional approach to improve consistency of sampling, data analysis and reporting of metal concentrations in Gulf fish.

Abstract
Traditionally, a major part of aquaculture technology requires fish oil (FO) and fish meal (FM) to produce the aquafeed for farmed species. FO is the main source of persistent organic pollutants (POPs) in fish feed. In recent years, the use of vegetable-origin ingredients in fish feeds has been increasingly studied as an alternative to reduce the levels of these lipophilic pollutants in farmed species. The aim of this study was to evaluate the effect of the use of dietary vegetable oils in the farming of European sea bass (Dicentrarchus labrax) on the contents in persistent - polychlorinated biphenyls (PCBs) and organochlorine pesticides (OCPs) - and semi persistent pollutants - polycyclic aromatic hydrocarbons (PAHs) and polybrominated diphenyl ethers (BDEs) - of their edible parts. A total of 60 seabass muscle pools were obtained from fish farmed employing six experimental diets, which contained different percentages of FO (6 vs. 3%) and FM (20%, 10% and 5%). We did not observe differences in the contamination level of seabass muscle in relation to the percentage of FM in their diet. However, the fish farmed using feed which had lower levels of FO (3%) showed significantly lower muscle levels of ΣPCBs and carcinogenic PAHs (Σc-PAHs), with a reduction of 25.6% and 95.11% (respectively), as compared with those fished raised with feed with higher levels of FO (6%). Also much lower levels were found in OCPs such as sum of DDTs (30.88% of reduction), sum of chlordanes (42.85% of reduction), and sum of BDEs (48.16% of reduction) in those seabass fed with a lower percentage of FO. The results of this study indicate that the use of alternative feed ingredients that allow the employment of low percentage of FO in feeds help to reduce the load of several toxic pollutants in the fillets of European seabass.

Abstract
The aim of this study was to replace 75% of total fish oil (FO) and alter digestible protein/digestible energy (DP/DE) in rainbow trout feeds to minimize potentially hazardous environmental contaminant exposure. Two diets differing in DP/DE ratios (18 and 25) were combined with soybean (SO), canola (CO), and a blend of canola oil and Schizochytrium sp. (COS). Dietary lipids and DP/DE ratios did not affect apparent digestibility, growth, and somatic parameters. The n-3/n-6 levels decreased significantly in the growth trial, especially for the SO groups. A short washout trial restored n-3/n-6 levels for the CO and COS groups, irrespective of the DP/DE ratio, but not for the SO groups. At all sampling events, contaminant concentrations in fish flesh were lower than limits set by regulatory agencies in Canada, the US, and Europe. Contaminants were lower in the oil replacement diets compared to FO for toxaphenes, organochlorine pesticides, and PCBs but not flame retardants during the growth phase. At the end of the washout phase, no differences were detected. Thus, this study revealed that replacing 75% of total fish oil in rainbow trout feed by CO and COS, combined with a 25 DP/DE ratio, with a washout period seems to be the most efficient approach in terms of maximizing the total FO replacement and contribute to reducing POPs exposure.

Abstract
Mercury (Hg) fish and seafood contamination is a global concern and needs worldwide sea investigations in order to protect consumers. The aim of this study was to investigate the Hg concentration by means of a rapid and simple analytical technique with a direct Mercury Analyzer (DMA-80) in pelagic fish species, Tetrapturus belone (spearfish), Thunnus thynnus (tuna) and Xiphias gladius (swordfish) caught in the Mediterranean Sea. Hg contents were evaluated also in Salmo salar (salmon) as pelagic fish not belonging to the Mediterranean area. The results obtained were variable, ranging between 0.015–2.562 mg kg−1 for T. thynnus species, 0.477–3.182 mg kg−1 for X. gladius, 0.434–1.730 mg kg−1 for T. belone and 0.004–0.019 mg kg−1 for S. salar, respectively. The total Hg tolerable weekly intake (TWI) and tolerable weekly intake % (TWI%) values according to the European Food Safety Authority (EFSA) were calculated. The results highlighted that the pelagic species caught in the Mediterranean Sea should be constantly monitored due to their high Hg contents as well as their TWI and TWI% with respect to S. salar samples.

Abstract
Brominated flame-retardants (BFRs) such as polybrominated diphenyl ethers (PBDE) and hexabromocyclododecane (HBCD) are considered hazardous to human health. Due to their persistence, they are still present in the environment and in biota and seafood is major contributor of BFRs to human exposure. Here, we used data from >9700 samples of wild and farmed fish, fish feed and fish feed ingredients collected from the North Atlantic between 2006 and 2016 aiming to investigate factors influencing the risk assessments of BFRs. Due to most representative number of analyses, PBDEs were the main focus of investigation. Mean ∑PBDE in fillet samples ranged from below quantification in Atlantic cod fillet to 2.0 μg kg-1 in Atlantic halibut. The main congener contributing to the ∑PBDE in all species was BDE 47. Factors affecting the level of BFR in seafood were multifaceted, and the levels were within species mainly determined by fish age, geographical origin and time of sampling. BDE 47, 99, 153 and HBCD were selected for margin of exposure (MOE) evaluation. When other sources of BFR than seafood were excluded, our risk assessment showed low risk at the current dietary intake of seafood. However, the dietary intake of BDE 99 may be of concern for toddlers when all sources are considered. The choice of fish species, dietary studies, choice of statistics, as well as exposure from other sources than seafood, were all factors that influenced the final MOE of BFRs. We propose the use of regression on order statistics as a tool for risk assessment, to illustrate means and spreads in large surveillance datasets to avoid the issue of measurements below the limit of quantification. A harmonized, updated evaluation of the risk associated with exposure to BFRs from diet, air and dust is warranted, where the fish species most commonly consumed also is taken into consideration.

Abstract
Linoleic acid (LA) (n-6) and α-linolenic acid (ALA) (n-3) are essential fatty acids (EFAs) as they cannot be synthesized by humans or other higher animals. In the human body, these fatty acids (FAs) give rise to arachidonic acid (ARA, n-6), eicosapentaenoic acid (EPA, n-3), and docosahexaenoic acid (DHA, n-3) that play key roles in regulating body homeostasis. Locally acting bioactive signaling lipids called eicosanoids derived from these FAs also regulate diverse homeostatic processes. In general, ARA gives rise to pro-inflammatory eicosanoids whereas EPA and DHA give rise to anti-inflammatory eicosanoids. Thus, a proportionally higher consumption of n-3 PUFAs can protect us against inflammatory diseases, cancer, cardiovascular diseases, and other chronic diseases. The present review summarizes major sources, intake, and global consumption of n-3 and n-6 PUFAs. Their metabolism to biosynthesize long-chain PUFAs and eicosanoids and their roles in brain metabolism, cardiovascular disease, obesity, cancer, and bone health are also discussed.

Abstract
'Are we what we eat?' Yes and no. Although dietary fat affects body fat, there are many modifying mechanisms. In Atlantic salmon, there is a high level of retention of the n-3 fatty acid (FA) docosahexaenoic acid (DHA, 22:6n-3) relative to the dietary content, whereas saturated FAs never seem to increase above a specified level, which is probably an adaptation to low and fluctuating body temperature. Net production of eicosapentaenoic acid (EPA, 20:5n-3) and especially DHA occurs in salmon when dietary levels are low; however, this synthesis is not sufficient to maintain EPA and DHA at similar tissue levels to those of a traditional fish oil-fed farmed salmon. The commercial diets of farmed salmon have changed over the past 15 years towards a more plant-based diet owing to the limited availability of the marine ingredients fish meal and fish oil, resulting in decreased EPA and DHA and increased n-6 FAs. Salmon is part of the human diet, leading to the question 'Are we what the salmon eats?' Dietary intervention studies using salmon have shown positive effects on FA profiles and health biomarkers in humans; however, most of these studies used salmon that were fed high levels of marine ingredients. Only a few human intervention studies and mouse trials have explored the effects of the changing feed composition of farmed salmon. In conclusion, when evaluating feed ingredients for farmed fish, effects throughout the food chain on fish health, fillet composition and human health need to be considered.

Abstract
Screening has revealed that aquafeeds with high inclusion of plant material may contain small amounts of endocrine disrupting agricultural pesticides. In this work, bisphenol A (BPA) and genistein (GEN) were selected as model endocrine disrupting toxicants with impact on DNA methylation in fish. Atlantic salmon hepatocytes were exposed in vitro to four concentrations of BPA and GEN (0.1, 1.0, 10 and 100 μM) for 48 h. Toxicity endpoints included cytotoxicity, global DNA methylation, targeted transcriptomics and metabolomic screening (100 μM). GEN was not cytotoxic in concentrations up to 100 μM, whereas one out of two cell viability assays indicated a cytotoxic response to 100 μM BPA. Compared to the control, significant global DNA hypomethylation was observed at 1.0 μM BPA. Both compounds upregulated cyp1a1 transcription at 100 μM, while estrogenic markers esr1 and vtg1 responded strongest at 10 μM. Dnmt3aa transcription was downregulated by both compounds at 100 μM. Metabolomic screening showed that BPA and GEN resulted in significant changes in numerous biochemical pathways consistent with alterations in carbohydrate metabolism, indicating perturbation in glucose homeostasis and energy generation, and glutamate metabolism. Pathway analysis showed that while the superpathway of methionine degradation was among the most strongly affected pathways by BPA, GEN induced changes to uridine and pyrimidine biosynthesis. In conclusion, this mechanistic study proposes metabolites associated with glucose and glutamate metabolism, glucuronidation detoxification, as well as cyp1a1, vtg1, esr1, ar, dnmt3aa, cdkn1b and insig1 as transcriptional markers for BPA and GEN exposure in fish liver cells.

Abstract
BACKGROUND Although banned in many countries for decades, DDTs and PCBs still represent a global threat to food safety. As these contaminants are still present in aquatic ecosystems, fish can be an important contributor to their total dietary intake. OBJECTIVES Alosa agone specimens were sampled over a period of 10 years (from 2006 to 2015) to provide a representative overview of the DDT and PCB levels of Lago di Como, a deep Italian lake where a DDT input due to secondary sources was observed in recent years. The potential health risk from the consumption of both fresh and preserved fish was evaluated. RESULTS While DDT levels have generally decreased during the monitored period, reaching quite stable levels, PCB concentrations were variable, with values exceeding, in some cases, the European Union limit for human consumption and enabling potential carcinogenic effects. However, typical local processing of this fish species markedly appeared to decrease these contaminant levels, thus making the fish product (called missoltino) a safer food. CONCLUSIONS The results of this work highlighted the need of continuous biomonitoring of those contaminants considered a past issue along with the emergent ones.

Abstract
Polychlorinated biphenyls (PCBs), organochlorine pesticides (OCPs), polybrominated diphenyl ethers (PBDEs), emerging halogenated flame retardants (EHFRs) and organophosphate flame retardants (PFRs) were detected in 24h duplicate diet samples from a Norwegian cohort (n=61), with concentrations ranging from <method limit of quantification (MLQ)-0.64ng/g ww, <MLQ-0.70ng/g ww, <MLQ-0.93ng/g ww, <MLQ-0.14ng/g ww, and <MLQ-150ng/g ww, respectively. All studied contaminants were detected in the duplicate diet samples with detection frequencies (DF) ranging from 1.6 to 98%. The major contaminants were CB153 (median 0.042ng/g ww), α-HCH (median 0.22ng/g ww), BDE209 (median 0.45ng/g ww), ethyl hexyl diphenyl phosphate (EHDPHP) (median 3.0ng/g ww) and bis(2-ethylhexyl)-3,4,5,6-tetrabromo-phthalate (BEH-TEBP) (<MLQ-0.14ng/g ww). Human dietary exposure assessment was conducted for each participant based on individual body weight and contaminant concentrations in their collected duplicate diet samples. The estimated median (95th percentile) dietary exposures for ΣPFR, ΣPCB, ΣOCP, ΣPBDE, and ΣEHFR were 87 (340), 5.8 (27), 11 (31), 1.3 (14), and <0.01 (3.4) ng/kgbw/day, respectively. The median and 95th percentile dietary exposures of most of the target analytes did not exceed the reference dose (RfD), except for PCBs where 16% of the participants exceeded the RfD. However, a relatively short period of such high intake is not expected to result in any adverse health effects. Participants of this cohort were exposed to higher levels of EHDPHP than any other FRs. Fish was the major dietary route for PCB, OCP and PBDE exposure, while meat was the main dietary exposure route for PFRs.

Abstract
Contaminants and fatty acid levels in farmed- versus wild Atlantic salmon have been a hot topic of debate in terms of food safety. The present study determined dioxins (polychlorinated dibenzo-p-dioxin and dibenzofuran), polychlorinated biphenyls (PCBs), polybrominated diphenyl ethers (PBDEs), organochlorine pesticides (OCPs), metals and fatty acids in wild and farmed Atlantic salmon. Contaminant levels of dioxins, PCBs, OCPs (DDT, dieldrin, lindane, chlordane, Mirex, and toxaphene), and mercury were higher in wild salmon than in farmed salmon, as were the concentrations of the essential elements selenium, copper, zinc and iron, and the marine omega-3 fatty acid docosahexaenoic acid (DHA). PBDE, endosulfan, pentachlorobenzene, hexachlorobenzene, cadmium and lead levels were low and comparable in both wild and farmed fish, and there was no significant difference in the marine omega-3 fatty acid eicosapentaenoic acid (EPA) concentration. The total fat content was significantly higher in farmed than wild salmon due to a higher content of both saturated and monounsaturated fatty acids, as well as a higher content of omega-6 fatty acids. The omega-3 to omega-6 fatty acid ratio was considerably lower in farmed than wild salmon due to the high level of omega-6 fatty acids. Contaminant concentrations in Atlantic salmon were well below maximum levels applicable in the European Union. Atlantic salmon, both farmed and wild, is a good source of EPA and DHA with a 200g portion per week contributing 3.2g or 2.8g respectively, being almost twice the intake considered adequate for adults by the European Food Safety Authority (i.e. 250mg/day or 1.75g/week).

Abstract
Today's industrial food production contributes significantly to environmental degradation. Meat production accounts for the largest impact, including greenhouse gas emissions, land and water use. While food production and consumption are important aspects when addressing climate change, this article focuses predominantly on dietary change that promotes both health for planet and people with focus on athletes. Healthy, sustainable eating recommendations begin to appear in various governmental guidelines. However, there remains resistance to the suggested reductions in meat consumption. While food citizens are likely to choose what is good for them and the planet, others may not, unless healthy eating initiatives integrate creative food literacy approaches with experiential learning as a potential vehicle for change. This concept paper is organized in three sections: (1) Environmental impact of food; (2) health and sustainability connections; and (3) application in sports and exercise. For active individuals, this article focuses on the quantity of protein, highlighting meat and dairy, and quality of food, with topics such as organic production and biodiversity. Finally, the timing of when to integrate sustainability principles in sport nutrition is discussed, followed by practical applications for education and inclusion in team, institutional, and event operations.

Abstract
Mitigation of contaminants in industrial processing was studied for prawns (cooked and peeled), Greenland halibut (cold smoked) and Atlantic salmon (cold smoked and trimmed). Raw prawns had significantly higher cadmium, chromium, iron, selenium and zinc content in autumn than in spring, while summer levels typically were intermediate. Peeling raw prawns increased mercury concentration but reduced the concentration of all other elements including inorganic arsenic, total arsenic, chromium, zinc, selenium but especially cadmium, copper and iron (p < 0.05), however interaction between seasons and processing was observed. Non-toxic organic arsenic in raw Greenland halibut (N = 10) and salmon (N = 4) did not transform to carcinogenic inorganic arsenic during industrial cold smoking. Hence inorganic arsenic was low (<0.003 mg/kg wet weight) in both raw and smoked fillets rich in organic arsenic (up to 9.0 mg/kg for farmed salmon and 0.7 mg/kg for wild caught Greenland halibut per wet weight). Processing salmon did not significantly change any levels (calculated both per wet weight, dry weight or lipid content). Cold smoking decreased total arsenic (17%) and increased PCB congeners (10-22%) in Greenland halibut (wet weight). However PFOS, PCB and PBDE congeners were not different in processed Greenland halibut when corrected for water loss or lipid content.

Abstract
The salmon feed composition has changed the last decade with a replacement of traditionally use of fish oil and fishmeal diets with vegetable ingredients and the use decontaminated fish oils, causing reduced concentrations of dioxins and dioxin-like PCBs in farmed Norwegian Atlantic salmon. The development of novel salmon feeds has prompted the need for prediction on dioxins and dl-PCB concentrations in future farmed salmon. Prediction on fillet dioxins and dl-PCB concentrations from different feed composition scenarios are made using a simple one-compartmental transfer model based on earlier established dioxin and dl-PCB congener specific uptake and elimination kinetics rates. The model is validated with two independent feeding trials, with a significant linear correlation (r(2) = 0.96, y = 1.0x, p < 0.0001, n = 116) between observed and predicted values. Model fillet predictions are made for the following four scenarios; (1) general feed composition of 1999, (2) feed composition of 2013, (3) future feed composition with high fish oil and meal replacement, (4) future feed composition with high fish oil and meal replacement and decontaminated fish oil. Model predictions of fillet dioxin and dl-PCB concentrations from 1999 (1.05 ng WHO2005-TEQs kg(-1)ww) and 2013 (0.57 ng WHO2005-TEQs kg(-1)ww) are in line with the data observed in national surveillance programs of those years (1.1 and 0.52 ng WHO2005-TEQs kg(-1)ww, respectively). Future use of high replacement and decontaminated oils feeds gave predicted fillet concentrations of 0.27 ng WHO2005-TEQs kg(-1)ww, which is near the limit of quantification.

Abstract
In this work, agricultural and background soil concentrations of p,p'-DDT, p,p'-DDE, HCB, α-, β- and γ-HCH from 1993 to 2012 were collected from 73 peer-reviewed publications, and analysed statistically. For the period 2003-2012 and for all chemicals, the mean concentration in agricultural soil is significantly higher than the concentration in background soil. In addition to the statistical analysis, concentrations of p,p'-DDT and α-HCH in soils were calculated with a global environmental fate and transport model. A decrease in the mean soil concentration from the first decade to the second was observed with the model, but this decrease is not visible in the measured concentrations, which could result from ongoing use of p,p'-DDT and α-HCH Furthermore, modelled background soil concentrations are generally lower than measurements. This implies that background soil may have received p,p'-DDT and α-HCH through additional routes not described by the model such as spray drift.

Abstract
Fish is among the essential components of Mediterranean diet and has beneficial effects on human health. Farmed fish is an affordable alternative to wild fish and a significant food export product for Greece. Published studies worldwide have reported significant levels of environmental pollutants in fish tissues. Especially for PCDDs/Fs and PCBs, the studies suggest that the most important contribution to human dietary intake is from fish and seafood. In the present study, we investigate the levels of PCDDs/Fs, dioxin-like and non dioxin-like PCBs in the most common farmed fish species produced in Greece i.e. sea bass, sea bream and rainbow trout. These species are widely consumed in Greece and are also exported to many countries worldwide. The mean levels found were WHO-PCDD/F-TEQ: 0.22 pg g(-1) wet weight (w.w.), WHO-PCDD/F-PCB-TEQ: 0.88 pg g(-1) w.w. for sea bream, WHO-PCDD/F-TEQ: 0.13 pg g(-1) w.w., WHO-PCDD/F-PCB-TEQ: 0.68 pg g(-1) w.w. for sea bass and WHO-PCDD/F-TEQ: 0.10 pg g(-1) w.w., WHO-PCDD/F-PCB-TEQ: 0.43 pg g(-1) w.w. for rainbow trout. For non dioxin-like PCBs, mean sum values found were 8.02 ng g(-1) w.w. for sea bream, 5.24 ng g(-1) w.w. for sea bass and 2.90 ng g(-1) w.w. for rainbow trout. All concentrations found were far below maximum levels set by the European Union and in the same range as wild-caught fish also presented for comparison. Daily intake from the consumption of farmed fish species examined is calculated at 1.3 pg WHO-TEQ kg(-1) b.w., which is at the lowest end of TDI values proposed by the WHO.

Abstract
As the global population and its demand for seafood increases more of our fish will come from aquaculture. Farmed Atlantic salmon are a global commodity and, as an oily fish, contain a rich source of the health promoting long-chain omega-3 fatty acids, eicosapentaenoic (EPA) and docosahexaenoic (DHA) acids. Replacing the traditional finite marine ingredients, fishmeal and fish oil, in farmed salmon diets with sustainable alternatives of terrestrial origin, devoid of EPA and DHA, presents a significant challenge for the aquaculture industry. By comparing the fatty acid composition of over 3,000 Scottish Atlantic salmon farmed between 2006 and 2015, we find that terrestrial fatty acids have significantly increased alongside a decrease in EPA and DHA levels. Consequently, the nutritional value of the final product is compromised requiring double portion sizes, as compared to 2006, in order to satisfy recommended EPA + DHA intake levels endorsed by health advisory organisations. Nevertheless, farmed Scottish salmon still delivers more EPA + DHA than most other fish species and all terrestrial livestock. Our findings highlight the global shortfall of EPA and DHA and the implications this has for the human consumer and examines the potential of microalgae and genetically modified crops as future sources of these important fatty acids.

Abstract
PURPOSE OF REVIEW Given scientific and public debate about optimal diet to prevent cardiovascular disease, and interest in diet and other chronic diseases, we propose that following a few simple dietary principles would reduce chronic disease incidence. RECENT FINDINGS Nutrition research has been criticized for focusing on individual nutrients and foods, treated like drug therapy. With a few important exceptions, clinical trials of supplemental nutrients have not shown benefit. Although highly specific nutrition information is elusive, diet patterns have provided consistent answers, important for public health. Observational cohort studies have found that some dietary patterns are reported with high reliability over long periods and predict future cardiovascular and other inflammatory-related diseases. Two randomized clinical trials confirmed this finding. There are many common features of Mediterranean and prudent diets, particularly the plant-centered aspect, coupled with variety of foods eaten. A dietary pattern characterized by high fruit, vegetable, legume, whole grain, nut, berry, seed, and fish intakes, and possibly by intakes of dairy, coffee, tea, chocolate, and alcohol (not in excess), but low meat and detrimentally processed foods is associated with reduced incidence of cardiovascular disease and rates of noncardiovascular, noncancer chronic inflammatory-related mortality. SUMMARY A plant-centered diet may be broadly recommended.
