Abstract
In this article, a nanosurface molecularly imprinted polymer (MQD@MIP) resonance Rayleigh scattering (RRS) spectral probe for SCN- was prepared by sol-gel method, using Mxene quantum dot as a matrix, thiocyanate (SCN-) as a template ion, (3-aminopropyl) triethoxysilane (APTES) as a functional monomer, tetraethoxysilane (TEOS) as the cross-linker, and ammonia as the initiator. The probe produced an RRS peak at 370 nm and exhibits a strong RRS energy transfer (RRS-ET) effect when the MQD@MIP probe identifies SCN-. As the concentration of SCN- increased, the RRS-ET was enhanced, and the signal value of the system decreased linearly at 370 nm, with a determination range of 0.87-5.22 μg/L, and a detection limit of 0.37 μg/L SCN-. This detection method has the characteristics of simplicity, sensitivity, and specific recognition. The RRS method was used to determine SCN- in the sample, with relative standard deviation of 1.95-10.98% and recovery of 89.0-102.8%.

Abstract
This review delves into using natural antimicrobials in the dairy industry and examines various sources of these compounds, including microbial, plant, and animal sources. It discusses the mechanisms by which they inhibit microbial growth, for example, by binding to the cell wall's precursor molecule of the target microorganism, consequently inhibiting its biosynthesis, and interfering in the molecule transport mechanism, leading to cell death. In general, they prove to be effective against the main pathogens and spoilage found in food, such as Escherichia coli, Staphylococcus aureus, Bacillus spp., Salmonella spp., mold, and yeast. Moreover, this review explores encapsulation technology as a promising approach for increasing the viability of natural antimicrobials against unfavorable conditions such as pH, temperature, and oxygen exposure. Finally, this review examines the benefits and challenges of using natural antimicrobials in dairy products. While natural antimicrobials offer several advantages, including improved safety, quality, and sensory properties of dairy products, it is crucial to be aware of the challenges associated with their use, such as potential allergenicity, regulatory requirements, and consumer perception. This review concludes by emphasizing the need for further research to identify and develop effective and safe natural antimicrobials for the dairy industry to ensure the quality and safety of dairy products for consumers.

Abstract
This study aimed to detect and quantify thiabendazole in soy products by surface-enhanced Raman spectroscopy (SERS) coupled with electrospun substrates. Enhanced Raman signals were acquired from uniform electrospun substrates, which were analyzed by focusing on the CN stretching modes at 1592 cm-1 for soy sauce and 1580 cm-1 for soy milk. The results revealed a linear relationship between the signal intensity and analyte concentrations with high R2 values (99.42 % for soy sauce and 99.75 % for soy milk). The limits of quantification (LOQ) were determined to be 69.9 ppb for soy milk and 240.59 ppb for soy sauce samples. The limits of detection (LOD) were found to be 23.1 ppb for soy milk and 79.4 ppb for soy sauce. These findings highlight the effectiveness of the electrospinning-SERS approach for detecting thiabendazole in soy-based food samples, contributing to the understanding of pesticide contamination and ensuring the quality and safety of food products.

Abstract
Surface-enhanced Raman spectroscopy (SERS) has been demonstrated as an ultrasensitive tool for various molecules. However, for the negatively charged molecules, the widely used SERS substrate [negatively charged Ag and Au nanoparticles (Ag or Au NPs (-)] showed either low sensitivity or poor stability. The best solution is to synthesize positively charged silver or gold nanoparticles [Ag or Au NPs (+)] with high stability and excellent SERS performance, which are currently unavailable. To this end, we revitalized the strategy of "charge reversal and seed growth". By selection of ascorbic acid as the reductant and surfactant, the surface charge of Ag or Au NP (-) seeds is adjusted to a balanced state, where the surface charge is negative enough to satisfy the stabilization of the NPs (-) but does not hinder the subsequent charge reversal. By optimization of the chain length and electric charge of polyamine molecules, the highly stable and size-controllable uniform Ag NPs (+) and Au NPs (+) were seed-growth synthesized with high reproducibility. More importantly, the SERS performance of both Ag NPs (+) and Au NPs (+) achieved the trace detection of negatively charged molecules at the level of 1 μg/L, demonstrating an improved SERS sensitivity of up to 3 orders of magnitude compared to the previously reported sensitivity. Promisingly, the introduction of polyamine-capped Ag NPs (+) and Au NPs (+) as SERS substrates with high stability (1 year shelf life) will significantly broaden the application of SERS.

Abstract
Covalent organic frameworks (COFs) have received lots of attention due to their multiple advantages such as high specific surface area, controlled pore size, and excellent stability. When detecting food contaminants, the matrix effect brought by complex food samples can significantly affect the accuracy of the results. How to attenuate matrix effect has always been a major challenge. Utilizing the advantages of COFs and applying them to detect food contaminants is currently a key research direction. The aim of this work is to provide a systematic summary of sample pretreatment techniques and detection techniques combined with COFs, which include almost all current techniques combined with COFs. In addition, the principles of combining COFs with different techniques are explained. Finally, the research foci and development direction of COFs in food contaminant detection are discussed. This is an important reference for the future development of food safety and the design of COFs.

Abstract
Food quality and safety are crucial public health concerns with global significance. In recent years, a series of fluorescence detection technologies have been widely used in the detection/monitoring of food quality and safety. Due to the advantages of wide detection range, high sensitivity, convenient and fast detection, and strong specificity, quantum dot (QD)-based fluorescent nanosensors have emerged as preferred candidates for food quality and safety analysis. In this comprehensive review, several common types of QD production methods are introduced, including colloidal synthesis, self-assembly, plasma synthesis, viral assembly, electrochemical assembly, and heavy-metal-free synthesis. The optoelectronic properties of QDs are described in detail at the electronic level, and the effect of food matrices on QDs was summarized. Recent advancements in the field of QD-based fluorescent nanosensors for trace level detection and monitoring of volatile components, heavy metal ions, food additives, pesticide residues, veterinary-drug residues, other chemical components, mycotoxins, foodborne pathogens, humidity, and temperature are also thoroughly summarized. Moreover, we discuss the limitations of the QD-based fluorescent nanosensors and present the challenges and future prospects for developing QD-based fluorescent nanosensors. As shown by numerous publications in the field, QD sensors have the advantages of strong anti-interference ability, convenient and quick operation, good linear response, and wide detection range. However, the reported assays are laboratory-focused and have not been industrialized and commercialized. Promising research needs to examine the potential applications of bionanotechnology in QD-based fluorescent nanosensors, and focus on the development of smart packaging films, labeled test strips, and portable kits-based sensors.

Abstract
Aflatoxins have posed serious threat to food safety and human health. Therefore, it is important to detect aflatoxins in samples rapidly and accurately. In this review, various technologies to detect aflatoxins in food are discussed, including conventional ones such as thin-layer chromatography (TLC), high performance liquid chromatography (HPLC), enzyme linked immunosorbent assay (ELISA), colloidal gold immunochromatographic assay (GICA), radioimmunoassay (RIA), fluorescence spectroscopy (FS), as well as emerging ones (e.g., biosensors, molecular imprinting technology, surface plasmon resonance). Critical challenges of these technologies include high cost, complex processing procedures and long processing time, low stability, low repeatability, low accuracy, poor portability, and so on. Critical discussion is provided on the trade-off relationship between detection speed and detection accuracy, as well as the application scenario and sustainability of different technologies. Especially, the prospect of combining different technologies is discussed. Future research is necessary to develop more convenient, more accurate, faster, and cost-effective technologies to detect aflatoxins.

Abstract
At present, the uses of food additives globally are much of a concern due to their after effects upon consumption in higher proportions. Although different sensing strategies are available for their detection, a need for simple, rapid and cost-effective strategy is much of a concern. Herein, we developed a plasmonic nano sensor i.e., AgNP-EBF which was considered as the transducer component for the AND logic gate-based system with Cu2+ and thiocyanate as inputs. Optimization and detection of thiocyanates were performed through UV-visible colorimetric sensing procedures where the logic gate allowed the detection of thiocyanate in the range of 100 nM-1 µM with LOD of 53.60 nM within 5-10 min. The proposed system showed high selectivity towards the detection of thiocyanate rather than other interferences. To check the credibility of the proposed system, the logic gate was applied for detection of thiocyanates in real milk samples.

Abstract
Nanotechnology, biotechniques, and chemical engineering have arisen as new trends with significant impacts on agrofood science development. Advanced analytical techniques with high sensitivity, specificity, and automation based on micro-/nanomaterials for food hazard elimination have become leading research hotspots in agrofood science. Research progress in micro-/nanomaterials has provided a solid theoretical basis and technical support to solve problems in the industry. However, the rapid development of micro-/nanostructures has also raised concerns regarding potential risks to human health. This review presents the latest advances in the precise inspection and elimination of food hazards from micro-/nanomaterials and discusses the potential threats to human health posed by nanomaterials. The theoretical reference was provided for the application trend of micro-/nanomaterials in the field of agrofood science in the future.

Abstract
Sonication and dielectric barrier discharge (DBD) plasma are sustainable emerging food processing technologies. The study investigates the impact of sonication, DBD-plasma, and thermal treatment (TT) on wheat sprout juice. The obtained results indicated a significant (p < 0.05) increase in chlorophyll, total phenolics, flavonoids, DPPH assay, and ORAC assay after DBD-plasma (40 V) and sonication (30 mins) treatment as compared to TT and untreated samples. Both emerging technologies significantly (p < 0.05) reduce the polyphenol oxidase and peroxidase activities, but the TT sample had the highest reduction. Moreover, the synergistic application of both technologies significantly reduced the E. coli/Coliform, aerobics, yeast and mold up to the 2 log reduction, but the TT sample had a complete reduction. DBD-plasma and sonication processing significantly decreased (p < 0.05) the particle size, reducing apparent viscosity (η) and consistency index (K); while increasing the flow behavior (n), leading to higher stability of wheat sprout juice. To assess the impact of emerging techniques on nutrient concentration, we used surface-enhance Raman spectroscopy (SERS) as an emerging method. Silver-coated gold nano-substrates were used to compare the nutritional concentration of wheat sprout juice treated with sonication, DBD-plasma, and TT-treated samples. Results showed sharp peaks for samples treated with DBD-plasma followed by sonication, untreated, and TT. The obtained results, improved quality of wheat sprout juice, and lower microbial and enzymatic loads were confirmed, showing the suitability of these sustainable processing techniques for food processing and further research.

Abstract
Rapid evaluation of the metabolic activity of microorganisms is crucial in the assessment of the disinfection ability of various antimicrobial agents in the food industry. In this study, surface-enhanced Raman spectroscopy combined with isotope probing was employed for the analysis of the disinfection of single bacterial cells in the chicken carcass wash water. The Raman signals from single Escherichia coli O157:H7 cells were enhanced by in situ synthesis of silver nanoparticles. The ΔCD of the cells grown in presence of 0.5% hydrogen peroxide and 50 ppm chlorine was 5.86 ± 1.86% and 5.1 ± 2.3%, respectively, which showed significant reduction compared with cells grown in the absence of disinfecting agents (19.86 ± 2.51%) after 2 h of incubation. The study proved that the proposed method had the potential to assess the metabolic activity of microorganisms in other food products and optimize the disinfection process.

Abstract
Metabolic dynamics of bacterial cells is needed for understanding the correlation between changes in environmental conditions and cell metabolic activity. In this study, Raman spectroscopy combined with deuterium labelling was used to analyze the metabolic activity of a single Escherichia coli O157:H7 cell. The incorporation of deuterium from heavy water into cellular biomolecules resulted in the formation of carbon-deuterium (CD) peaks in the Raman spectra, indicating the cell metabolic activity. The broad vibrational peaks corresponding to CD and CH peaks encompassed different specific shifts of macromolecules such as protein, lipids, and nucleic acid. The utilization of tryptophan and oleic acid by the cell as the sole carbon source led to changes in cell lipid composition, as indicated by new peaks in the second derivative spectra. Thus, the proposed method could semi-quantitatively determine total metabolic activity, macromolecule specific identification, and lipid and protein metabolism in a single cell.

Abstract
Anthocyanins (ACNs) are plant polyphenols that have received increased attention recently mainly due to their potential health benefits and applications as functional food ingredients. This has also created an interest in the development and validation of several non-destructive techniques of ACN assessments in several food samples. Non-destructive and conventional techniques play an important role in the assessment of ACNs in agricultural and food products. Although conventional methods appear to be more accurate and specific in their analysis, they are also associated with higher costs, the destruction of samples, time-consuming, and require specialized laboratory equipment. In this review article, we present the latest findings relating to the use of several spectroscopic techniques (fluorescence, Raman, Nuclear magnetic resonance spectroscopy, Fourier-transform infrared spectroscopy, and near-infrared spectroscopy), hyperspectral imaging, chemometric-based machine learning, and artificial intelligence applications for assessing the ACN content in agricultural and food products. Furthermore, we also propose technical and future advancements of the established techniques with the need for further developments and technique amalgamations.

Abstract
Detection of bioactive metabolites produced by bacteria is important for identifying biomarkers for infectious diseases. In this study, a surface-enhanced Raman spectroscopy (SERS)-based technique was developed for the detection of bioactive metabolite indole produced by Escherichia coli (E. coli) in biological media. The use of highly sensitive Au@Ag core-shell nanoparticles resulted in the detection of indole concentration as low as 0.0886 mM in standard solution. The supplementation of growth media with 5 mM of exogenous tryptophan resulted in the production of a maximum yield of indole of 3.139 mM by E. coli O157:H7 at 37 °C. The growth of bacterial cells was reduced from 47.73 × 108 to 1.033 × 106 CFU/mL when the cells were grown in 0 and 10 mM exogenous tryptophan, respectively. The amount of indole in the Luria-Bertani (LB) media had an inverse correlation with the growth of cells, which resulted in a three-log reduction in the colony-forming unit when the indole concentration in the media was 20 times higher than normal. This work demonstrates that SERS is an effective and highly sensitive method for rapid detection of bioactive metabolites in biological matrix.

Abstract
Thiocyanate (SCN-) concentration monitoring in food is important to ensure the health and safety of the consumers.A colorimetric detection of thiocyanate (SCN-) based on the nanozymatic activity of gold nanoparticle-graphene quantum dots (GQDs-Au NPs) hybrids in the presence of 3,3',5,5'-tetramethylbenzidine (TMB) and H2O2 has been proposed. Here, a new synthesis method of GQDs directly from graphite was introduced. Transmission electron microscopy (TEM) images revealed that the size of the GQDs was 3-5 nm, and the emission peak appeared at 450 nm. As-synthesized GQDs was utilized to produce GQDs-Au NPs hybrids without additional chemicals. However, the presence of SCN- inhibits the growth of Au NPs, the resulting Au NPs are smaller in size. Moreover, SCN- group is well-known for hydroxyl radical (OH) scavenging activity that could oxidize TMB. Both effects boosted the nanozymatic activity of GQDs-Au NPs to detect SCN- under optimized conditions with a limit of detection (LOD) of 3 nM. Present study also validates the methodology to detect SCN- in raw milk.

Abstract
Detecting ultralow concentrations of anionic analytes in solution by surface-enhanced Raman spectroscopy (SERS) remains challenging due to their low affinity for SERS substrates. Two strategies were examined to enable in situ, liquid phase detection using 5(6)-carboxyfluorescein (5(6)-FAM) as a model analyte: functionalization of a gold nanopillar substrate with cationic cysteamine self-assembled monolayer (CA-SAM) and electrokinetic preconcentration (EP-SERS) with potentials ranging from 0 to +500 mV. The CA-SAM did not enable detection without an applied field, likely due to insufficient accumulation of 5(6)-FAM on the substrate surface limited by passive diffusion. 5(6)-FAM could only be reliably detected with an applied electric field with the charged molecules driven by electroconvection to the substrate surface and the SERS intensity following the Langmuir adsorption model. The obtained limits of detection (LODs) with an applied field were 97.5 and 6.4 nM on bare and CA-SAM substrates, respectively. For the CA-SAM substrates, both the ligand and analyte displayed an ∼15-fold signal enhancement with an applied field, revealing an additional enhancement due to charge-transfer resonance taking place between the metal and 5(6)-FAM that improved the LOD by an order of magnitude.

Abstract
The concentration of thiocyanate (SCN−) in bodily fluids is a good indicator of potential and severe health issues such as nasal bleeding, goiters, vertigo, unconsciousness, several inflammatory diseases, and cystic fibrosis. Herein, a visual SCN− sensing method has been developed using the enzyme-like nature of positively charged gold quantum dots (Au QDs) mixed with 3,3′,5,5′-tetramethylbenzidine (TMB) and hydrogen peroxide (H2O2). This research also reports a new method of synthesizing positively charged Au QDs directly from gold nanoparticles through a hydrothermal process. Microscopic imaging has showed that the Au QDs were 3–5 nm in size, and the emission wavelength was at 438 nm. Au QDs did not display any enzyme-like nature while mixed up with TMB and H2O2. However, the nanozymatic activity of Au QDs appeared when SCN− was included, leading to a very low detection limit (LOD) of 8 nM and 99–105% recovery in complex media. The steady-state kinetic reaction of Au QDs showed that Au QDs had a lower Michaelis–Menten constant (Km) toward H2O2 and TMB, which indicates that the Au QDs had a higher affinity for H2O2 and TMB than horseradish peroxidase (HRP). A mechanism study has revealed that the scavenging ability of hydroxyl (•OH) radicals by the SCN− group plays an important role in enhancing the sensitivity in this study. The proposed nanozymatic “Off–On” SCN− sensor was also successfully validated in commercial milk samples.

Abstract
The objectives of the current study were first to determine the prevalence of non O157:H7E. coli, especially Shiga toxin-producing Escherichia coli (STEC) in retailed milk and dairy products in Egypt. Second, the antimicrobial resistance profiling and virulence genes of the isolated E. coli strains were screened. Third, evaluation of the inhibitory effects of D-tryptophan against E. coli O26:H11 was further performed. The results revealed that 20% (30/150) of the samples were STEC positive, with 64 isolates harboring some virulent genes, such as Stx1, Stx2, eaeA, and hylA. Serological identification revealed four different pathotypes belonging to EPEC, ETEC, EHEC, and EIEC. Antimicrobial susceptibility testing revealed that 100%, 98.44%, 92.19%, 71.87%, 65.63% and 64.06% of the isolates had a resistance against tetracycline, oxacillin, erythromycin, nalidixic acid, sulphamethoxazol, and ampicillin, respectively. D-tryptophan addition (40 mM) to E. coli O26:H11-inoculated soft cheese and ice cream revealed a significant reduction (p < 0.05) in bacterial growth, especially when accompanied with other food stressors. D-Tryptophan is considered as an effective food preservative and as a promising alternative candidate in the dairy industry.

Abstract
Gold nanorods (GNRs) outstand in photothermal disinfection but are faced with severe surface chemistry and dose relevant biotoxicity. Herein, a naturally green building block, metal-phenolic networks (MPNs), was employed to functionalize GNRs via coordination reaction, yielding a tunable and biocompatible core-shell photothermal nano-bactericide (GNRs@MPNs). The bioactive GNRs@MPNs built with iron and polyphenols (tannic acid, epigallocatechin gallate, and procyanidins) exhibited superior light-to-heat conversion efficiencies with η = 29.29-44.00%, remarkably preceding that of GNRs (η = 12.24%), which could rapidly ablate 99.8% of Escherichia coli O157: H7 and 98.6% of Staphylococcus aureus bacteria in relatively low efficacy doses (10 ppm of Au). Moreover, local heat triggered by GNRs@MPNs accelerated the healing of the cutaneous wound of a mice model infected by methicillin-resistant S. aureus. The facile synthesis, photothermal synergy, polyphenolic bioactivity, and significantly low efficacy dose of GNRs@MPNs empower them satisfactory efficiency and biosafety in the future broad-spectrum photothermal sterilization applications.

Abstract
Mycotoxin B1 (AFB1) contamination in agricultural products pose a deadlydangertoanimal and human health and its rapid and reliable detection is thus very important. Herein, a ratiometric surface-enhanced Raman scattering (SERS) aptasensor for AFB1 detection was developed, in which 1,2-bis(4-pyridyl) ethylene (BPE) was used to trigger the assembly of Au nanoparticle dimers (AuNP dimers) and form intensive SERS "hot spots", and MXenes nanosheets could load aptamer-modified AuNP dimers due to the hydrogen bonding and the chelation between the phosphate groups of aptamers and the Ti ion of MXenes. With the presence of AFB1 preferentially binding to AFB1 aptamer, AuNP dimers were separated from MXenes nanosheets, leading to a decrease in SERS intensity. Regression analysis in the range from 0.001 to 100 ng·mL-1 showed the limit of detection (LOD) being 0.6 pg·mL-1 in standard solution, indicating that the great prospects of the AuNP dimers/MXenes SERS substrate for detecting AFB1.

Abstract
Benzoic acid, which has a pivotal role in food additive, is prohibited to add as a preservative in dairy products. China, Brazil, and other countries have proposed standard methods to detect the addition of benzoic acid in food. Surface-enhanced Raman scattering (SERS) is an upcoming spectral detection technique, which has been widely used in the field of material analysis with the advantages of non-invasive, fast detection speed and complex environment with little interference. To detect the illegal use of benzoic acid in dairy industry, we developed Ag-COF (covalent-organic framework) material as SERS substrate to detect benzoic acid in liquid milk. The great enhancement ability of Ag-COF substrate is controlled by the addition of acetic acid and complex interplay between COF material and benzoic acid. This detection method has high sensitivity and reliability that allows us to achieve limit of detection (LOD) of 0.13 μg/mL in milk and 0.00372 μg/mL in water by applying this method. In experiment on recovery rate of real samples, the detection time is less than 15 minutes and the relative standard deviation (RSD) ranged from 2.82% to 5.69%. Therefore, this method has practical significance of the detection of benzoic acid in dairy products.

Abstract
Surface-enhanced Raman spectroscopy (SERS) can sense some molecules in a nondestructive manner. Using SERS, we investigate the shifts in the Raman peaks of polypyrrole (PPy) with two different coordinated silver (Ag) structures, Ag nanoparticles (NPs) and Ag dendrite film. The SERS spectrum of PPy with Ag NPs presents a ring-stretching peak that is red-shifted compared to the ring-stretching peak in the Raman spectrum of PPy. In contrast, the spectrum of the PPy with the Ag dendrite film exhibits a blue-shifted ring stretching peak. The various coordinated Ag nanostructures result in opposite Raman shifts of the ring stretching peak; this phenomenon has been investigated and confirmed by density functional theory (DFT) calculations of the Raman shift of the pyrrole (Py) molecule with a Ag layer (SERS of PPy with Ag NPs) and that of a charge-transferred Py molecule (SERS of PPy with Ag dendrite films). This result demonstrates that DFT calculations can be an effective tool to scrutinize Raman shifts in SERS.

Abstract
The present study aimed at investigation of the prevalence and antimicrobial susceptibility of Salmonella spp. in the retailed dairies in Egypt. Besides, the inhibitory effects of some natural additives, including, ascorbic acid, pomegranate peel extract, and D-tryptophan against the isolated Salmonella were evaluated using soft cheese as a food matrix. To reach to this end, different Egyptian retail dairy products were investigated; 30 samples of each product were analyzed. Kariesh cheese samples had the highest Salmonella prevalence rate at 16.67%, followed by market raw milk, and bulk tank milk at 6.66% each, and white soft cheese at 3.33%. Serological examination exhibited 5 different Salmonella serotypes, namely S. Enteritidis, S. Typhimurium, S. Virchow, S. Larochelle, and S. Apeyeme. Antimicrobial susceptibility testing indicated that 100% of the isolates possessed resistance to erythromycin, oxacillin, and nalidixic acid. Some isolates of S. Typhimurium and S. Enteritidis were resistant to all 14 examined antibiotics. Isolates of S. Enteritidis obtained in this study were used to contaminate the freshly prepared soft cheese. Treatment of the artificially Salmonella-contaminated soft cheese with pomegranate peel extract, ascorbic acid, and D-tryptophan revealed a significant (P < 0.05) reduction in Salmonella growth in a dose-dependent manner. Therefore, the examined natural additives can be viewed as a promising new line of preservatives for dairy industry.

Abstract
Surface-enhanced Raman (SERS) spectroscopy has been establishing itself as an ultrasensitive analytical technique with a cross-disciplinary range of applications, which scientific growth is triggered by the continuous improvement in the design of advanced plasmonic materials with enhanced multifunctional abilities and tailorable surface chemistry. In this regard, conventional synthetic procedures yield negatively-charged plasmonic materials which can hamper the adhesion of negatively-charged species. To tackle this issue, metallic surfaces have been modified via diverse procedures with a broad array of surface ligands to impart positive charges. Cationic amines have been preferred because of their ability to retain a positive zeta potential even at alkaline pH as well as due to their wide accessibility in terms of structural features and cost. In this review, we will describe and discuss the different approaches for generating positively-charged plasmonic platforms and their applications in SERS sensing.

Abstract
Plastic pollution has steadily become a global issue due to its ubiquity and degradation into micro and nanoparticles. Herein, we report the construction of surface-enhanced Raman scattering (SERS)-active array substrates with regenerated cellulose (RC) and plasmonic nanoparticles (AuNRs and AgNWs) via a simple vacuum-assisted filtration method using a silicon mask for rapid nanoplastic detection. The AgNWs/RC film exhibited a SERS intensity of crystal violet approximately six times higher than that of the AuNRs/RC film with a high enhancement factor of 1.8 × 107. Moreover, the AgNWs/RC film exhibits a better SERS activity for polystyrene nanoplastic detection than the AuNRs/RC film because the dense AgNW network structures are well suited for nanoplastic detection. The AgNWs/RC film can detect PS nanoplastics down to 0.1 mg/mL with a good reproducibility of the SERS signal. The low-cost, flexible, and highly sensitive AgNWs/RC films could provide an efficient and rapid SERS-based method for nanoplastic detection.

Abstract
Quercetin (QUR) have got the attention of scientific society frequently due to their wide range of potential applications. QUR has been the focal point for research in various fields, especially in food development. But, the QUR is highly unstable and can be interrupted by using conventional assessment methods. Therefore, researchers are focusing on novel extraction and non-invasive tools for the non-destructive assessment of QUR. The current review elaborates the different novel extraction (ultrasound-assisted extraction, microwave-assisted extraction, supercritical fluid extraction, and enzyme-assisted extraction) and non-destructive assessment techniques (fluorescence spectroscopy, terahertz spectroscopy, near-infrared spectroscopy, hyperspectral imaging, Raman spectroscopy, and surface-enhanced Raman spectroscopy) for the extraction and identification of QUR in agricultural products. The novel extraction approaches facilitate shorter extraction time, involve less organic solvent, and are environmentally friendly. While the non-destructive techniques are non-interruptive, label-free, reliable, accurate, and environmental friendly. The non-invasive spectroscopic and imaging methods are suitable for the sensitive detection of bioactive compounds than conventional techniques. QUR has potential therapeutic properties such as anti-obesity, anti-diabetes, antiallergic, antineoplastic agent, neuroprotector, antimicrobial, and antioxidant activities. Besides, due to the low bioavailability of QUR innovative drug delivery strategies (QUR loaded gel, QUR polymeric micelle, QUR nanoparticles, glucan-QUR conjugate, and QUR loaded mucoadhesive nanoemulsions) have been proposed to improve its bioavailability and providing novel therapeutic approaches.

Abstract
Rapid and accurate analysis of multiple targets in complex samples is still a big challenge in the fast detection field. Herein, we developed a rapid and accurate strategy for simultaneous quantification of trace multiple antibiotic residues in complex aquatic samples by surface-enhanced Raman scattering (SERS) using a Ti3C2Tx/DNA/Ag membrane substrate. This membrane substrate was proven to have good uniformity, reproducibility, stability, and SERS activity by a series of characterizations. Also, this substrate combined excellent electromagnetic enhancement and chemical enhancement effects, which endowed it with good sensitivity and selectivity during SERS analysis. It achieved the integration of multitarget separation, enrichment, and in situ detection, which significantly improved the selectivity, sensitivity, accuracy, and detection throughput by membrane substrate coupling with SERS for real-sample analysis. Finally, this rapid SERS analysis strategy was successfully applied to the simultaneous quantification of trace nitrofurantoin (NFT) and ofloxacin (OFX) in aquatic samples. It was observed that trace NFT and OFX were actually detected and simultaneously quantified to be 8.0-13.7 and 42.6-49.1 μg/kg in aquatic samples, respectively, with good recoveries of 88.0-107% and relative standard deviations of 0.3-5.5%. The results were verified by a traditional high-performance liquid chromatography method with relative errors of -9.8 to 5.3%. This strategy provided a methodological reference for accurate SERS quantification of multiple targets in complex samples.

Abstract
Residual pesticides are one of the major food safety concerns around the world. There is a demand for simple and reliable methods to monitor pesticide residues in foods. In this study, a sensitive method for determination of pymetrozine in apple and cabbage samples using surface-enhanced Raman spectroscopy (SERS) based on decanethiol functionalized silver nanoparticles was established. The proposed method performed satisfactorily with the linear detection range of 0.01-1.00 mg/L and limit of detection (LOD) of 0.01 mg/L in methanol. In addition, it was successfully used to detect pymetrozine in apple and cabbage samples, the LOD was 0.02 and 0.03 mg/L, respectively, and the recoveries of spiked cabbage and apple ranged 70.40-104.00%, with relative standard deviations below 12.18% and 10.33% for intra-day and inter-day tests. Moreover, the results of the correlation test with real cabbage samples of liquid chromatography-tandem mass spectrometry showed that they were highly correlated (slope = 0.9895, R2 = 0.9953). This study provides a sensitive approach for detection of pymetrozine in apple and cabbage, which has great potential for determination of pymetrozine residues in food products.

Abstract
Pulsed electric field (PEF) and Ultrasound (US) are commonly used in food processing. We investigated the combined impact of pulsed electric field (PEF) and ultrasound (US) on the wheat plantlet juice. When compared with the individual treatments, the highest values of total phenolics, total flavonoids, chlorophyll, ORAC assay, and DPPH activities were obtained using the combined (US + PEF) methods. The US + PEF significantly decreased the peroxidase and polyphenol oxidase activities from 0.87 to 0.27 Abs min-1 and 0.031-0.016 Abs min-1. Also, the synergistic application significantly lowered the yeast and mold (3.92 to 2.11 log CFU/mL), E. coli/Coliform (1.95 to 0.96 log CFU/mL), and aerobics (4.41 to 2.01 log CFU/mL). Furthermore, Fourier Transform Infrared (FT-IR) and surface-enhanced Raman spectroscopy (SERS) was used to analyzing juice quality. Gold nanoparticles (AuNPs) were used as the SERS substrates, which provided stronger Raman peaks for the samples treated with US + PEF methods. The FT-IR analysis showed significant enhancement of the nutritional molecules. The enhanced quality of wheat plantlet juice combined with lower yeast and mold suggests the suitability of integrated methods for further research and applications.

Abstract
The conventional microbial cell analyses are mostly population-averaged methods that conceal the characteristics of single-cell in the community. Single-cell analysis can provide information on the functional and structural variation of each cell, resulting in the elimination of long and tedious microbial cultivation techniques. Raman spectroscopy is a label-free, noninvasive, and in-vivo method ideal for single-cell measurement to obtain spatially resolved chemical information. In the current review, recent developments in Raman spectroscopic techniques for microbial characterization at the single-cell level are presented, focusing on Raman imaging of single cells to study the intracellular distribution of different components. The review also discusses the limitation and challenges of each technique and put forward some future outlook for improving Raman spectroscopy-based techniques for single-cell analysis. Raman spectroscopic methods at the single-cell level have potential in precision measurements, metabolic analysis, antibiotic susceptibility testing, resuscitation capability, and correlating phenotypic information to genomics for cells, the integration of Raman spectroscopy with other techniques such as microfluidics, stable isotope probing (SIP), and atomic force microscope can further improve the resolution and provide extensive information. Future focuses should be given to advance algorithms for data analysis, standardized reference libraries, and automated cell isolation techniques in future.

Abstract
Modification of surface-enhanced Raman spectroscopy (SERS) substrates with thiol ligands is an emerging approach in enhancing the stability and sensitivity of metal substrates due to their good affinity with metals such as Au, Ag, and Cu. Thus, in the current study, 2-mercaptoethanol was used to modify the surface of silver-coated gold nanoparticles to develop a novel SERS substrate for the rapid assessment of fungicide residues in fruit samples. Results showed that the substrate could achieve the detection of ferbam and thiabendazole residues in apple puree with limits of detection of approximately 0.0042 and 0.0064 ppm, high coefficients of determination of 0.9946 and 0.9968, good recoveries ranging from 80 to 105 and 81 to 107% and relative standard deviations of 3.5-7.5 and 3.8-7.9 %, respectively. Therefore, the substrate developed could potentially be utilised to assess other toxic agrochemicals in future.

Abstract
A microcapillary grooved paper-based analytical device capable of dual-mode sensing (colorimetric and electrochemical detection) was demonstrated for analysis of viscous samples (e.g., human saliva). Herein, a hollow capillary channel was constructed via laser engraved micropatterning functions as a micropump to facilitate viscous fluidic transport, which would otherwise impede analysis on paper devices. Using salivary thiocyanate as a model analyte, the proposed device was found to exhibit a promising sensing ability on paper devices without the need for sample pretreatment or bulky instrumentation, as normally required in conventional methods used for saliva analysis. An extensive linear dynamic range covering detection of salivary thiocyanate for both high and trace level regimes (5 orders of magnitude working range) was collectively achieved using the dual-sensing modes. Under optimal conditions, the limit of detection was 6 μmol L-1 with a RSD of less than 5%. An excellent stability for the μpumpPAD was also observed for over 30 days. Real sample analysis using the proposed device was found to be in line with the standard chromatographic method. Benefitting from simple fabrication and operation, portability, disposability, low sample volume (20 μL), and low cost (< 1 USD), the μpumpPAD is an exceptional alternative tool for the detection of various biomarkers in saliva specimens.

Abstract
Making the substrates form highly dense, homogeneous, and stable hotspots regions is important for the sensitive detection of surface-enhanced Raman spectroscopy (SERS). A new strategy based on solvent-induced (SI) SERS substrate to form a stable interval of the hotspot for detection was explored and the enhancement factor (EF) of our SERS substrates could reach about 1.4 × 109. By preferential adsorption of alcohol solutions by Q-Sepharose microsphere (QSS) in mixed water and alcohol solutions, the size of QSS@AuNPs was dynamically adjusted and the spacing between gold nanoparticles (AuNPs) was adjusted to keep the substrate in the optimal hotspot mode for the sensitive detection of SERS in the liquid state. As a real application case, such a SI-SERS strategy was employed to determine SCN- in saliva and a limit of detection (LOD) of about 10-10 M could be achieved.

Abstract
Silver-coated gold nanoparticles (Au@AgNPs) were optimized with different gold (Au) core sizes and modified surface with mercaptooctane (MCO) to determine fungicide residues in pear fruit extracts. The developed MCO/Au@AgNPs with a gold core size of 28 nm and silver shell thickness of 6 nm exhibited high sensitivity and significant enhancement of Raman scattering in detecting tricyclazole (TCZ) and thiram fungicides in standard and pear fruit samples. The detection limits for TCZ and thiram in the pear fruit extracts were 0.005 and 0.003 ppm with coefficients of determination of (R2) of 0.9984 and 0.9971, percent recovery ranging from 82.7 to 107.4% and 80.7 to 109.8%, and relative standard deviation (RSD) of 1.5 to 7.9% and 3.7 to 9.5%, respectively. Results showed that this easily prepared method could be employed as SERS active platforms for the rapid assessment of trace contaminants of agrochemicals in agriculture production.

Abstract
Surface-enhanced Raman spectroscopy based on thioglycolic acid (TGA) functionalized silver-coated gold nanoparticles (Au@Ag-TGANPs) was developed for the facile screening of thiabendazole (TBZ) and ferbam (0.025-10 ppm) in liquid milk for the first time. Results showed that silver-coated gold nanoparticles (Au@AgNPs) with a core size of 32 nm and a shell thickness of 5 nm was successfully modified with 3 nm TGA. The sensitive Au@Ag-TGANPs could enhance TBZ and ferbam signals by factors of 6.4 × 104 and 9.8 × 104, respectively, and achieved the detection of TBZ and ferbam with limits of detection of 0.12 and 0.003 ppm, R2 of 0.988 and 0.9821, percent recoveries of 88-103% and of 87.2-103.5%, and relative standard deviations of 4.1-9.2% and 3.5-8.3%, respectively. The current simple and green method could thus be used to detect other unsafe chemicals in future studies.

Abstract
The development of substrate with high sensitivity and good reproducibility for surface-enhanced Raman scattering (SERS) detection of contaminants in foods has attracted more and more attention. Herein, a stable two-dimensional (2D) Au-Ag core-shell nanorods (Au@Ag NRs) nanoarray substrate with high-performance SERS activity was developed based on interface self-assembly strategy and successfully applied to the detection of thiram in apple sample. A broad linearity range of 0.01-10 mg/L and a low limit of detection of 0.018 mg/L were achieved for thiram solution. The substrate was stable and exhibited satisfactory sensitivity after preserving at ambient temperature for 4 weeks. Furthermore, this method presented the comparable result to that acquired from high-performance liquid chromatography (HPLC) with satisfactory recoveries of 93-116%. The study indicated that the prepared Au@Ag NRs nanoarray substrate was promising for SERS detection of contaminants such as pesticides in foods.
