Abstract
Goose meat is increasingly popular among consumers because of its good quality. The fiber characteristics have been well demonstrated to be key contributing factors of meat quality, and the marketable ages are also closely related to meat quality. However, little is known about the effect of different marketable ages on the quality of goose meat through its fiber characteristics. Here, fiber characteristics of Yangzhou geese of different marketable ages (70, 90, and 120 d) and their effect on meat quality were investigated. The results showed that only fast-twitch fibers were present in breast muscle, irrespective of age, and that few slow-twitch fibers could be identified in leg muscle, especially in gastrocnemius and extensor digitorum longus. Fiber diameter in breast muscle increased rapidly from age 70 d to 90 d, from 19.88 to 26.27 μm, and remained stable for 90 d thereafter. The diameter and cross-sectional area of muscle fiber continue to grow with day increasing in leg muscle. In addition, we measured the proximate composition and physical properties at different ages. Among the 3 marketable ages investigated, the 120-day-old geese had higher intramuscular fat and protein content, as well as lower moisture content, both in breast and leg meat. Greater lightness and pressing loss, with lower redness and shear force, were observed in the breast and leg meat of 70-day-old geese when compared with 90- or 120-day-old geese. Taken together, although older marketable age hardly affected muscle fiber type in geese, it would contribute to larger muscle fiber area, higher intramuscular fat and protein content, as well as redder and chewier meat. As a result, the reasonable marketable age should be taken into account to improve quality in goose meat production, and the marketable age of 90 or 120 d was recommended and it could potentially improve meat quality in goose meat production.

Abstract
Dietary fibre is a generic term describing non-absorbed plant carbohydrates and small amounts of associated non-carbohydrate components. The main contributors of fibre to the diet are the cell walls of plant tissues, which are supramolecular polymer networks containing variable proportions of cellulose, hemicelluloses, pectic substances, and non-carbohydrate components, such as lignin. Other contributors of fibre are the intracellular storage oligosaccharides, such as fructans. A distinction needs to be made between intrinsic sources of dietary fibre and purified forms of fibre, given that the three-dimensional matrix of the plant cell wall confers benefits beyond fibre isolates. Movement through the digestive tract modifies the cell wall structure and may affect the interactions with the colonic microbes (e.g., small intestinally non-absorbed carbohydrates are broken down by bacteria to short-chain fatty acids, absorbed by colonocytes). These aspects, combined with the fibre associated components (e.g., micronutrients, polyphenols, phytosterols, and phytoestrogens), may contribute to the health outcomes seen with the consumption of dietary fibre. Therefore, where possible, processing should minimise the degradation of the plant cell wall structures to preserve some of its benefits. Food labelling should include dietary fibre values and distinguish between intrinsic and added fibre. Labelling may also help achieve the recommended intake of 14 g/1000 kcal/day.

Abstract
BACKGROUND Several dietary factors have been reported to be associated with risk of breast cancer, but to date, unequivocal evidence only exists for alcohol consumption. We sought to systematically assess the association between intake of 92 foods and nutrients and breast cancer risk using a nutrient-wide association study. METHODS Using data from 272,098 women participating in the European Prospective Investigation into Cancer and Nutrition (EPIC) study, we assessed dietary intake of 92 foods and nutrients estimated by dietary questionnaires. Cox regression was used to quantify the association between each food/nutrient and risk of breast cancer. A false discovery rate (FDR) of 0.05 was used to select the set of foods and nutrients to be replicated in the independent Netherlands Cohort Study (NLCS). RESULTS Six foods and nutrients were identified as associated with risk of breast cancer in the EPIC study (10,979 cases). Higher intake of alcohol overall was associated with a higher risk of breast cancer (hazard ratio (HR) for a 1 SD increment in intake = 1.05, 95% CI 1.03-1.07), as was beer/cider intake and wine intake (HRs per 1 SD increment = 1.05, 95% CI 1.03-1.06 and 1.04, 95% CI 1.02-1.06, respectively), whereas higher intakes of fibre, apple/pear, and carbohydrates were associated with a lower risk of breast cancer (HRs per 1 SD increment = 0.96, 95% CI 0.94-0.98; 0.96, 95% CI 0.94-0.99; and 0.96, 95% CI 0.95-0.98, respectively). When evaluated in the NLCS (2368 cases), estimates for each of these foods and nutrients were similar in magnitude and direction, with the exception of beer/cider intake, which was not associated with risk in the NLCS. CONCLUSIONS Our findings confirm a positive association of alcohol consumption and suggest an inverse association of dietary fibre and possibly fruit intake with breast cancer risk.

Abstract
Diverticular disease is a common condition that is associated with variable presentations. For this review article, we performed a review of articles in PubMed through February 1, 2016, by using the following MeSH terms: colon diverticula, colonic diverticulitis, colonic diverticulosis, colonic diverticulum, colonic diverticula, and diverticula. Diverticula are structural alterations within the colonic wall that classically form "pockets" referred to as diverticula. Diverticula form from herniation of the colonic mucosa and submucosa through defects in the circular muscle layers within the colonic wall. Often this is at the sites of penetrating blood vessels in the colon. Diverticular disease is extremely common, which resulted in 2,682,168 outpatient visits and 283,355 hospitalization discharges for diverticulitis or diverticulosis in 2009. Diverticulosis is one of the most common detected conditions found incidentally on colonoscopy. Risk factors for the development of diverticulitis include obesity, smoking, nonsteroidal anti-inflammatory drugs, corticosteroids, and opiates. In contrast, fiber may be protective, but recent studies have questioned the role of fiber in developing diverticular disease. Most patients with diverticulosis will be asymptomatic, but a subset of patients may develop nonspecific abdominal pain (isolated or recurrent), diverticulitis, or segmental colitis associated with diverticulosis. Classically, the treatment of diverticulitis has included antibiotics for all patients. More recent evidence indicates that in mild to even moderate uncomplicated diverticulitis, antibiotics may not be as necessary as initially believed. In more complicated diverticulitis, intravenous antibiotics and surgery may be necessary. Once a patient has had an attack of diverticulitis, increasing fiber may help prevent future attacks. Other modalities such as 5-aminosalicylate products, antibiotics, and probiotics are still of unclear benefit in preventing future episodes of diverticulitis. Similarly, even when patients develop recurrent episodes of diverticulitis, surgery may not be necessary as a prophylactic treatment.

Abstract
OBJECTIVES To compare the energy and macronutrient content of main meals created by television chefs with ready meals sold by supermarkets, and to compare both with nutritional guidelines published by the World Health Organization and UK Food Standards Agency. DESIGN Cross sectional study. SETTING Three supermarkets with the largest share of the grocery market in the United Kingdom, 2010. SAMPLES 100 main meal recipes from five bestselling cookery books by UK television chefs and 100 own brand ready meals from the three leading UK supermarkets. MAIN OUTCOME MEASURES Number of meals for which the nutritional content complied with WHO recommendations, and the proportion of nutrients classified as red, amber, or green using the UK FSA's "traffic light" system for labelling food. RESULTS No recipe or ready meal fully complied with the WHO recommendations. The ready meals were more likely to comply with the recommended proportions of energy derived from carbohydrate (18% v 6%, P=0.01) and sugars (83% v 81%, P=0.05) and fibre density (56% v 14% P<0.01). The recipes were more likely to comply with the recommended sodium density (36% v 4%, P<0.01), although salt used for seasoning was not assessed. The distributions of traffic light colours under the FSA's food labelling recommendations differed: the modal traffic light was red for the recipes (47%) and green for ready meals (42%). Overall, the recipes contained significantly more energy (2530 kJ v 2067 kJ), protein (37.5 g v 27.9 g), fat (27.1 g v 17.2 g), and saturated fat (9.2 g v 6.8 g; P<0.01 for all) and significantly less fibre (3.3 g v 6.5 g, P<0.01) per portion than the ready meals. CONCLUSIONS Neither recipes created by television chefs nor ready meals sold by three of the leading UK supermarkets complied with WHO recommendations. Recipes were less healthy than ready meals, containing significantly more energy, protein, fat, and saturated fat, and less fibre per portion than the ready meals.

Abstract
Different formulations for chocolate pastries making (brownies) were prepared by substituting 15, 20, and 25% of the wheat flour by inulin. The batter characteristics of each formulation were evaluated and the batters were baked at 175 degrees C for 15 min. After baking, the brownies were allowed to cool, put into crystal polystyrene trays, and their texture after 1, 3, 7, and 15 days of storage at room temperature (25 degrees C) and 65% of relative humidity, was evaluated. Based on the evaluations of batter characteristics and brownies textural properties during storage, the formulation containing 20% of inulin was the best. Proximate analysis was determined, and total, soluble and insoluble dietary fiber were quantified for brownies control and 20% inulin ones, as well as commercial brownies. The brownies containing 20% inulin showed lower firmness, gumminess, and masticability than the control and higher protein and lower fat content (6,3 vs 26,3%) and caloric value (331,4 vs 467.9 kcal/100 g) in comparison to the commercial brownies. The brownie with 20% inulin had twice the total dietary fiber and 22 times more soluble fiber than the brownie control. The acceptability of the brownie with 20% inulin was similar to that of the control. The incorporation of inulin in the production of brownies allowed to reduce the caloric value and to increase the soluble fiber content without adverse effects in texture of the pastries.

Abstract
An interlaboratory study was conducted in China to validate the modified AOAC Official Method 2001.03 for the determination of total dietary fiber (TDF) in foods containing resistant maltodextrin (RMD), which will be adopted as the National Standard Method of China. The kind of buffer solution, the volume of filtrate evaporation, the volume of eluent for desalting and residual solution after evaporation, etc. were modified, which had been proved to have acceptable accuracy and precision in the routine assay. TDF contents in 3 representative foods and 2 kinds of RMD ingredient (i.e., NUTRIOSE 06 and NUTRIOSE 10) were measured using the modified method in 6 eligible laboratories representing commercial, industrial, and governmental laboratories in China. The results of the interlaboratory study indicated that the intralaboratory repeatability, interlaboratory reproducibility, and precision of the modified method are adequate for reliable analysis of TDF in food containing RMD, as well as resistant dextrin. Compared to AOAC Official Method 2001.03, the modified method is time- and cost-saving.

Abstract
A diet that includes 5 to 10 g/d of viscous soluble fiber reduces cardiovascular disease (CVD) events and death independent of baseline risk. Consuming foods rich in viscous soluble fiber reduces low-density lipoprotein cholesterol (LDL-C) blood levels 10% to 15% with expected reduction in CVD events by 10% to 15%. Routinely counsel adults at risk of CVD to promote a healthy diet: assess dietary fiber consumption; recommend specific foods rich in viscous soluble fiber; monitor LDL-C levels and encourage increased dietary fiber intake at follow-up visits; motivate patients to comply with recommendations.

Abstract
A review is presented describing the nature and evolving definition of dietary fiber. The historical development of the current definition is discussed as are the efforts to develop analytical methods to support food labeling regulations. Also considered are the characterization and quantitation of resistance starch, a dietary starch that does not digest in the small intestine, behaves like dietary fiber and therefore may have potential as a health-related ingredient in foods. The current status of AOAC methodology is discussed along with the possibility of updating the definition of dietary fiber. The potential impacts of changing the dietary fiber definition on analytical issues and on food composition databases are also considered.

Abstract
Objectives of this review are to define criteria for evaluating insoluble dietary fiber (IDF) methods, discuss their relevance in meeting the nutritional needs of ruminants and herbivores, describe problems with empirical IDF methods, and assess their relative merits. The challenge for the researcher, nutritionist, and analyst is to select fiber methods that are relevant and reproducible. Without relevance, there is no reason to measure IDF, and without reproducibility, there is no value in doing so. Insoluble dietary fiber is a complex matrix of chemical components, and there are no primary standards that can be used to establish the validity of methods. Thus, the definition of fiber is crucial in determining method relevance. For ruminants and nonruminant herbivores, the appropriate physiological definition for selecting IDF methods may be as follows: the organic fraction of the diet that is indigestible or slowly digesting and occupies space in the gastrointestinal tract. Crude fiber does not match this definition, and its use should be abandoned. Acid detergent fiber does not measure all IDF but is useful when included with other dietary fiber methods to describe some feeds. Several current methods, including amylase-treated neutral detergent fiber (aNDF) and enzymatic-gravimetric methods, are relevant for measuring IDF. In a collaborative study, aNDF obtained a standard deviation of reproducibility (SD(R)) of 1.3%. Enzymatic-gravimetric methods of measuring IDF have been evaluated using too few feed materials to make statistically valid conclusions, but the SD(R)f IDF, for the few feeds evaluated, were similar to aNDF (0.9 to 2.4%). The enzymatic-chemical method of measuring IDF as the sum of insoluble nonstarch polysaccharides and lignin agrees with NDF, but the SDR of neutral sugar analysis using acid hydrolysis and chromatography is greater (3.2%) than other dietary fiber methods. Empirical methods--such as those used to measure IDF, although based on nutritional concepts--actually define the fraction being measured and must be followed exactly, without modification. The selection of a suitable method for IDF depends on the purpose of analysis. Analysis of sugars in insoluble polysaccharides provides more information but is less reproducible and more expensive to obtain. For routine nutritive evaluation of feeds and formulation of rations, aNDF seems to be a reasonable choice for measuring IDF based on relevance and reproducibility.

Abstract
The concept of dietary fibre is a complex one that incorporates the physical and physiological functions of fibre and its effects both systemically and local to the gastro-intestinal tract. Dietary fibre can be usefully classified according to its solubility and fermentability, which allows rational clinical application. Fibres may act in several ways including by gel-forming effects in the stomach and small intestine, by its fermentation by colonic bacteria, by a 'mop and sponge' effect, and via concomitant changes in other aspects of the diet. These actions lead to potentially beneficial effects in the gastro-intestinal tract and systemically, such as lowering serum cholesterol and improving glycaemic control. Dietary fibre has been implicated in multiple clinical situations but, although an extensive literature on putative actions and proposed physiological bases is available, high-level evidence of efficacy is limited. Nevertheless, encouraging the intake of a high-fibre diet is likely to have a range of health benefits and physicians are encouraged to follow simple practical guidelines in their everyday practice.

Abstract
Establishing a definition for dietary fibre has historically been a balance between nutrition knowledge and analytical method capabilities. While the most widely accepted physiologically-based definitions have generally been accurate in defining the dietary fibre in foods, scientists and regulators have tended, in practice, to rely on analytical procedures as the definitional basis in fact. As a result, incongruities between theory and practice have resulted in confusion regarding the components that make up dietary fibre. In November 1998 the president of the American Association of Cereal Chemists (AACC) appointed an expert scientific review committee and charged it with the task of reviewing and, if necessary, updating the definition of dietary fibre. The committee was further charged with assessing the state of analytical methodology and making recommendations relevant to the updated definition. After due deliberation, an updated definition of dietary fibre was delivered to the AACC Board of Directors for consideration and adoption (Anon, 2000; Jones 2000b). The updated definition includes the same food components as the historical working definition used for approximately 30 years (a very important point, considering that the majority of the research of the past 30 years delineating the positive health effects of dietary fibre is based on that working definition). However, the updated definition more clearly delineates the make-up of dietary fibre and its physiological functionality. As a result, relatively few changes will be necessary in analytical methodology. Current methodologies, in particular AACC-approved method of analysis 32-05 (Grami, 2000), Association of Official Analytical Chemists' official method of analysis 985.29 (Horwitz, 2000a) or AACC 32-07 (Grami, 2000) Association of Official Analytical Chemists 991.43 (Horwitz, 2000a) will continue to be sufficient and used for most foods. A small number of additional methods will be necessary to quantify the dietary fibre levels in foods containing fibres such as fructans (polymers and oligomers of fructose, inulin), modified dextrins, and/or synthetic dietary fibre analogues.

Abstract
Rice bran, as a coproduct of the rice milling industry, is yet to be efficiently utilized for human consumption. Despite its excellent nutrition, its hypoallergenicity and recently claimed nutraceutical properties, it is mainly utilized for animal feed or simply discharged. It is of interest to incorporate this healthy ingredient back into our diet. In these studies, rice bran was processed by drum-drying and pin-milling. This processing step increased hydration capacity and removed grittiness by decreasing mean particle size from 444 to 72 microns and producing a desirable monomodal size distribution. There are no reported studies addressing differences in rice bran composition in food applications and specifically their effect on bread quality. Thus, we were interested in examining the functional properties of bread made with processed full-fat (FFRB) and defatted (DFRB) bran from three cultivars (long, medium and short grain rice) and to compare them to a control. For 10% and 20% replacements of wheat flour, respectively, loaf volume increased 2% for FFRB and decreased 6% for DFRB and decreased by 6% for FFRB and 17% for DFRB. Loaf volume was highest with medium rice bran and this was attributed to its lowest fiber content and highest starch content among three varieties. Texture profile analysis showed no significant differences as far as cohesiveness and springiness, but bread hardness, gumminess and chewiness increased with increased levels of rice bran and was higher for DFRB bread than for FFRB. Measurements of texture determined that there was no detrimental effect in adding 10% FFRB to the bread and a very slight hardening of the loaves with the 20% FFRB, when compared to the control. It was found that FFRB gave better textural characteristics than DFRB overall and differences amongst different rice bran varieties were not significant.

Abstract
ISO/IEC 17025 has an increased emphasis on traceability and estimation of uncertainty of measurement compared with ISO Guide 25. Demonstration of traceability is a new concept in analytical chemistry and depends on access to relevant reference materials or use of reference methods. Until now most reference materials used in New Zealand have been imported, because they offered international comparability. New Zealand is currently starting to develop the required infrastructure so that it will be able to produce unique reference materials that will contribute to the total international effort in improving the reliability of analytical chemistry.

Abstract
In developed nations, diet is related directly or indirectly to the most prevalent chronic diseases. Research has helped clarify diet-disease relationships and enabled the promulgation of dietary recommendations for chronic disease prevention. We reviewed epidemiologic study results, clinical trial data, and general dietary recommendations from various agencies to develop a set of overall dietary guidelines for the prevention of the most common chronic diseases in the United States, including coronary heart disease, hypertension, cancer, and osteoporosis. Intake of monounsaturated fats, fiber, calcium, vegetables and fruits, and whole grains should be promoted. Consumption of saturated and trans fats, sodium, and refined grains should be minimized. Moderation in alcohol and caloric intake should be encouraged. Although research into associations between diet and disease is constantly in flux, our guidelines are based on replicated findings and provide a starting point for assisting patients in improving their diets.

Abstract
We conducted two studies to assess the protein and energy value of pearl millet grain (Pennisetum glaucum [L.] R. Br.) for mature goats. In Exp. 1, 15 2-yr-old male castrated goats were gradually introduced over a 4-mo period to three all-grain diets consisting of 100% corn (Zea mays L.), 50:50 corn:pearl millet, and 100% pearl millet. After the adjustment to all-grain feeds, the goats were fed the diets in metabolism crates for 2-d adjustment and 7-d total collection periods. For Exp. 2, complete diets containing the three grain treatments (corn, 50:50 corn:pearl millet, and pearl millet) as 40% of the total DM as fed (the remainder was mainly alfalfa meal and mineral supplement) were balanced to contain 16% crude protein (CP) and 2.24 Mcal digestible energy (DE)/kg on an air-dry basis. Twelve mature (4- to 6-yr-old) buck goats were randomly assigned to diets and fed in pens for 14 d and then moved to metabolism crates for 10-d adjustment and 10-d total collection periods. In Exp. 1, DM intake was unaffected by dietary treatment, but digestibility of DM and organic matter was lowest (P < .10) in goats fed 100% pearl millet. Digestibility of complete diets also decreased (P < .10) as corn was replaced by 50 or 100% pearl millet, but DM intake increased (P < .10) on the 100% millet diet. In both experiments, substituting pearl millet for corn had no effect on nitrogen retained by the goats. Metabolizable energy of pearl millet was only 92% that of corn, but ME intake was similar when the grains were fed as 40% of the dietary DM. Pearl millet has potential as a major energy feed for goats in areas where it can be economically produced.

Abstract
Nutritional husbandry of captive wild ruminants often requires feeding these animals a supplemental diet to enhance their health, reproductive performance, and productivity. Although supplemental diets for wild ruminants are commercially available, few have been evaluated in controlled intake and digestion trials. Voluntary intake, digestive efficiency, nitrogen retention, and gross energy utilization of pronghorn (Antilocapra americana), mule deer (Odocoileus hemionus), mountain sheep (Ovis canadensis), mountain goats (Oreamnos americanus), and wapiti (Cervus elaphus) consuming a high-energy, high-protein pelleted supplement were compared. Voluntary intake of dry matter, energy, and nitrogen were similar (P > 0.34) between mountain goats and mountain sheep and consistently lower (P < 0.03) for these species than for pronghorn, mule deer, and wapiti. Differences in digestive efficiency among species were inversely related to dry matter intake rates. Apparent digestibility of dry matter, organic matter, and neutral-detergent fiber was 10-20% higher for mountain goats and mountain sheep than for the other species (P < 0.04). Although these findings suggest a superior digestive efficiency for mountain goats and mountain sheep, species comparisons are inconclusive because of the confounding effects of season and ambient temperature on voluntary intake and digestion. Under the conditions of this experiment, the diet tested was safe, nutritious, and highly palatable. Protein and energy concentrations appear to be sufficient to meet or exceed known nutritional requirements of captive wild ruminants.

Abstract
The production of milk by lactating females, and energy expenditure and foliage intake of their dependent young, were investigated in free-ranging koalas. Koalas had the lowest mass-specific daily milk-energy production at peak lactation so far recorded in a mammal, but the duration of reproduction was 58% longer than the combined marsupial and eutherian average. As a consequence, the total energy input to reproduction in koalas was similar to that in other mammals. We propose that the prolonged lactation and low daily rate of energy transfer to the young by female koalas is an adaptation to the low energy availability from their diet of Eucalyptus foliage. Energy requirements (field metabolic rates) of young koalas were lower than those expected for typical marsupials (only 60% at permanent pouch exit), which may be a necessary preadaptation that allows the low rate of maternal energy transfer. However, the energy requirements of the adult females were no lower than expected for marsupials. This pattern of energy requirements and age resulted in a linear relationship between field metabolic rate and mass for the koalas in this population. Differences in milk production between the years of the study coincided with fluctuations in the availability of preferred young foliage, which suggests that lactational output by koalas may be flexible and affected by diet quality. Despite the interannual differences in milk production, growth of the young was similar in the two years.

Abstract
We assessed diets in 16 Dene/Métis communities in the Canadian Arctic. We described nutrient intakes and identified nutrients at risk among adult Dene/Métis, evaluated the influence of traditional food on diet quality, and examined the direction of dietary change by comparing intergenerational and between-community differences in dietary intake. Diet varied according to sex, age and community. Nutrients of possibly inadequate intake (irrespective of subject sex, age or community) included calcium, vitamin A and folic acid. Dietary fiber intake was also of concern. Traditional food (animals and plants harvested from the local environment) was consumed on 65. 4% of interview days; on those days intakes of iron, zinc and potassium were higher (P < 0.05) and those of sodium, fat, saturated fat and sucrose were lower (P < 0.05) than on days when market food only was consumed. In this population, the shift away from traditional food towards a diet composed exclusively of market food was characterized by an increase (P < 0.05) in absolute energy intake and an increase (P < 0.01) in the relative contributions of carbohydrate (particularly sucrose), fat and saturated fat. This pattern of change calls for initiatives to document the current health status of this population and to prevent potential negative health consequences of dietary change.

Abstract
This study was conducted to determine the commercial feasibility of feeding a 15% ground flaxseed diet to finishing hogs for up to 42 d before slaughter and to compare the fatty acid composition of the resulting pork products with commercially produced haddock and mackerel. Eighty-seven pigs were fed a control diet (predominantly corn, soybean meal-based) and then a similar diet containing 15% flaxseed for the last 28 (FS28) or 42 d (FS42) before slaughter. Control pigs were continued on the control diet (CO28 and CO42). Percentages of saturated and monounsaturated fatty acids were decreased (P < .0001), and percentages of polyunsaturated fatty acids, most prominently alpha-linolenic acid [18:3(n-3)] and the sum of all (sigma) measured (n-3) fatty acids, were increased (P < .0001) in all pork tissues (backfat, liver, and longissimus thoracis) and products (lard, muffins, Braunschweiger, and bacon) due to dietary flaxseed. The percentage of arachidonic acid [20:4(n-6)] decreased in FS28 compared to CO28 liver (P < .0001) and in longissimus thoracis polar fraction FS42 compared to CO42. The percentage of 18:3(n-3) was similar in mackerel, CO bacon, and CO longissimus thoracis, and the percentage of 18:3(n-3) and sigma(n-3) in haddock was similar to that in FS bacon and FS longissimus thoracis. The percentage of 20:5 in FS42 longissimus thoracis, polar fraction, approached the level in haddock, but the percentages of 20:5 and 22:6 were greater (P < .0001) in mackerel than in haddock. The percentage of sigma(n-3) was greater (P < .0001) in mackerel than in haddock and sigma(n-6) was greater (P < .0001) in haddock than in mackerel. Commercial production of omega-3 enriched pork products can provide consumers a feasible alternative to a diet higher in fish than that normally consumed.

Abstract
We evaluated the effects of high- (HF) and moderate- (MF) forage diets on digestive and reproductive characteristics in beef heifers. Thirty primiparous beef heifers were allotted by weight and backfat thickness to receive either 80:20 (HF) or 50: 50 (MF) forage:concentrate ratio diets from parturition to at least 90 d postpartum. Alfalfa hay and wheat straw were the forage sources and barley was the concentrate source. Equal daily amounts of ME were provided to all heifers by restricting intake of the MF diet. Digestibility of DM was greater (P < .001) for MF compared with HF diets, whereas NDF digestibility was not different. Dry matter and NDF digested daily was lower (P < .001) for MF than for HF diets. Ruminal fluid pH was lower (P < .05) for MF diets; however, the acetate:propionate ratio was not different. Serum insulin concentrations were greater for MF diets for all hours (P < .001) and weeks (P < .05) of sampling. Changes in weight, backfat thickness, and body condition score at 90 d postpartum were not different between treatments. Calf gain to 30 d, however, was greater (P < .10) for the MF than for the HF treatment (25.5 vs 20.7 kg). Maximum size of the ovulatory follicle was greater (P < .10) for cows receiving the HF diet than for cows receiving the MF diet. However, other aspects of ovarian follicular growth and wave dynamics and the intervals from parturition to first and second ovulation, first estrus, first service, and conception were not different between treatments. Shifts in energy supply from forage to concentrate had minimal effect on digestion and reproduction in first-calf beef heifers in this study.

Abstract
Modification of dietary fat and fiber could help prevent cancers of the breast, endometrium, and ovary that are prevalent in African-American women. Dietary intervention programs aimed at reducing fat intake have had mixed results in this population. The transtheoretic model is proposed for achieving dietary change. Strategies for changing health behaviors in African-American women include heightening sensitivity to cultural values among health educators and the use of multiple strategies to reinforce messages. To stimulate healthier eating, it is important to incorporate the distinct habitual eating patterns into innovative intervention methods, using effective behavioral change methods.

Abstract
Two experiments were conducted to determine effects of diets containing n-3 fatty acids (n-3FA) from whole as well as ground flaxseed on the performance of broilers during coccidia infections. Diets were fed from 1 d of age through 3 wk of age. Chickens were infected with coccidia at 2 wk of age and the effects of infection assessed at 6 d postinfection. The first experiment contrasted effects of several high n-3FA-containing diets, including one supplemented with whole flaxseed, on infections with Eimeria tenella or Eimeria maxima. Infected chickens that consumed the flaxseed-supplemented diet had the lowest weight gains, but they were not significantly different from gains of infected chickens on the control diet. Diets supplemented with 5% menhaden oil or 15% flaxseed significantly reduced lesions caused by E. tenella, but had no effect on lesions caused by E. maxima. In a second experiment, diets supplemented with 5 or 10% ground flaxseed were assessed for effects on the performance of broilers infected with three dose levels (500, 5,000, or 50,000 oocysts) of E. maxima. Neither flaxseed diet protected weight gain during infection with 50,000 oocysts. However, a 5% flax diet protected weight gains in chickens infected with 500 or 5,000 oocysts. Diets supplemented with 5 or 10% ground flaxseed exacerbated lesions in chickens infected with 5,000 or 50,000 E. maxima oocysts compared to the control diet. Thus, diets containing high amounts of n-3 fatty acids do not affect the development of all Eimeria sp. in the same manner. The oxidative stress produced by these diets may more adversely affect development of E. tenella, which infects the relatively oxygen-poor ceca, whereas it does not affect development of E. maxima which parasitizes the middle portion of the small intestine.

Abstract
Five maturities of switchgrass hay harvested at 14-d intervals (vegetative through 20% heading) were fed to Hereford steers (297 kg) in a 5 x 5 Latin square. Relationships with switchgrass maturity were negative and quadratic (P < .05) for DMI and cubic (P < .05) for digestible DMI. Declines in apparent digestibilities of DM, ADF, and cellulose were cubic (P < .05), whereas these were quadratic (P < .05) for NDF, hemicellulose, and CP. Whole masticates from the least, mid, and most mature hays showed linear (P < .05) declines in DM concentration and IVDMD with increasing maturity, whereas NDF concentrations increased linearly (P < .05). Mean retention time of gastrointestinal DM increased linearly (P < .01) from 64 to 94 h from the least to the most mature hay, and the associated rate of passage declined linearly (P < .01) from 3.3 to 2.1%/h. Sieving of masticate DM showed a reduced proportion of large particles (> or = 2.8 mm) and an increased proportion of small particles (< or = .5 mm) with advancing forage maturity. More than 94% of the sieved fecal DM passed a 1.0-mm sieve, but particle sizes showed the same relationship with forage maturity as noted for masticate DM. This occurred despite the comminution from the rumination and digestive processes.

Abstract
Sixteen Holstein cows in midlactation were used in a 4 x 4 Latin square design to determine the effect of replacing alfalfa neutral detergent fiber (NDF), with NDF from a combination of whole linted cottonseed, dried distillers grains, and wheat middlings. The four diets were a basal control diet that was low in forage and fiber [(5.9 g of corn silage NDF and 6.1 g of alfalfa NDF/100 g of dry matter (DM)], a normal forage diet (low forage plus 10 g of additional alfalfa NDF/100 g of DM), and two low forage diets with either 5 or 10 g of NDF from the nonforage fiber sources added per 100 g of DM. Milk yield, milk protein yield, and milk protein percentage were higher, and milk fat percentage and fat yield were lower, for cows fed the low forage diets than for those fed the alfalfa control diet that was higher in fiber. Among the low forage diets, dry matter intake, milk fat percentage, and fat yield all increased linearly as NDF content increased. The ratio of acetate to propionate in the rumen and rumination times were greater for the normal forage control diet than for the high nonforage fiber diet. Added NDF from these nonforage fiber sources increased milk fat percentage and yield, but this increase was less than the NDF from alfalfa and less than predicted. In agreement with results of similar previous trials, milk protein yield and percentage were increased when alfalfa NDF was replaced with fiber from nonforage fiber sources.

Abstract
Flaxseed and its major mammalian lignan precursor secoisolariciresinol diglycoside have been shown to be protective against chemically induced carcinogenesis in animal models. Although flaxseed is the richest source of mammalian lignan precursors, it is not known whether these levels vary with source. Thus the objective of this study was to determine how lignan levels in flaxseed are affected by variety, growing location, harvest year, and seeding time. Ten varieties of flaxseed (AC Linora, Andro, Flanders, Linott, McGregor, Noralta, NorLin, NorMan, Somme, and Vimy) were subjected to 1) in vitro fermentation with human fecal inoculum for 24 hours under anaerobic conditions to assess mammalian lignan production and 2) high-performance liquid chromatography (HPLC) analysis for secoisolariciresinol levels. Three of these varieties (Linott, McGregor, and NorLin) were grown in four locations, seeded early (May) for three different years, and, in one year, seeded early (May) or late (June). Significant differences in lignan production were observed among the different varieties, ranging from 0.96 mumol/g for Linott to 3.15 mumol/g for Somme flaxseed (p < 0.05). Growing location had significant effects on lignan production from all three varieties. Harvest year significantly affected only the Linott variety (p < 0.05), whereas seeding time had no effect. A significant correlation (r = 0.572, p < 0.003) was observed between lignan values obtained from HPLC and in vitro fermentation methods, indicating that HPLC analysis of flaxseed may be used as a predictor of its lignan production levels. Differences due to variety, harvest location, and harvest year of flaxseed should be taken into consideration when tumorigenesis studies are designed.

Abstract
Dietary guidance recommends consumption of whole grains to reduce the risk of chronic diseases including cancer and cardiovascular disease. Epidemiologic studies support the belief that whole grains are protective against cancers, especially gastrointestinal cancers such as gastric and colonic, and cardiovascular disease. Components in whole grains that may be protective are diverse and include compounds that affect the gut environment, i.e., dietary fiber, resistant starch, and other undigestible compounds in whole grains, compounds that function as antioxidants such as trace minerals and phenolic compounds, and compounds that are phytoestrogens with potential hormonal effects. Many of the protective compounds in whole grains are also in fruits and vegetables, but some plant compounds are more concentrated in whole grains, such as phenolic compounds including ferulic and caffeic acid. Other potential mechanistic effects of whole grains include binding of carcinogens and modulation of glycemic index. Clearly, the range of protective substances in whole grains is impressive, and advice to consume additional whole grains is justifiable.

Abstract
Trial 1 tested the effects of ground vs whole flaxseed at dietary levels of 5, 10, or 15% compared to a corn-soybean or fish oil control on egg production of Leghorn hens over a period of 8 wk. Dietary flaxseed decreased feed consumption, weight gain, and egg weights compared to the control diets; however, flaxseed and fish oil significantly improved egg production (88.9 and 93.0%, respectively) compared to the control (83.1%). Incorporation of linolenic acid (C18:3n-3) into the egg increased linearly as the level of dietary flaxseed increased (2.31, 4.18, or 6.83% of the yolk fatty acids for 5, 10, and 15% flaxseed diets, respectively). In Trial 1, flaxseed and fish oil significantly increased percentage white and decreased percentage yolk compared to the control treatment but had no effects on egg cholesterol. Trial 2 was a factorial design of varieties of flaxseed (brown vs golden), types (ground vs whole), levels of dietary vitamin E (27 vs 50 IU/kg), and feed storage temperatures (4 vs 21 C) fed to hens for 6 wk. Brown flaxseed significantly increased egg weight and egg production compared to the golden variety. There was no difference in whole vs ground flaxseed for measured production variables. Vitamin E (50 IU) significantly improved egg production (96.1 vs 94.3%) compared to 27 IU. Storage temperature of flaxseed did not significantly affect any production variables. In conclusion, dietary flaxseed can be safely added whole to layer diets up to 15% without any detrimental effects on hen-day egg production. Levels of 10 to 15% flaxseed yield eggs with 4 to 7% yolk n-3 fatty acids, respectively, making these eggs rich sources of n-3 fatty acids.

Abstract
'Surrey' ryegrass (Lolium multiflorum Lam.) has produced well in clipping yield trials across Louisiana, but yield trials do not always predict how well the forage supports performance under grazing conditions. This trial compared Surrey ryegrass with 'Marshall' ryegrass grazed continuously or rotationally. Two pastures of Surrey and two pastures of Marshall that had been subdivided into six paddocks each were used in 2 yr. Yearling steers grazed the pastures. In the 1st yr, pastures within a cultivar were either continuously or rotationally grazed. Thus, animal performance on the rotationally grazed treatments was unreplicated and the data were not included in the statistical analysis. In the 2nd yr, each pasture contained both continuous and rotational groups of cattle. Cattle gains for the two cultivars were not different in either yr 1 (P > .26) or yr 2 (P > .17). In yr 2, continuous grazing allowed for greater individual animal gains (P = .03) than rotational grazing. However, the lower stocking rate of continuously grazed paddocks resulted in a decreased pasture gain (P = .001) of 301 compared with 403 kg/ha for the rotationally grazed paddocks. Forage quality was not different between Surrey and Marshall ryegrass, but there was a tendency (P = .12) for Surrey to have less forage mass during yr 1. Overall, continuously grazed paddocks had lower CP and NDF and higher in vitro true digestibility than rotationally grazed paddocks. Surrey was equivalent to Marshall ryegrass in animal performance and quality, and continuous grazing provided higher individual animal performance but lower performance on a gain per hectare basis than rotational grazing.

Abstract
Two varieties of mesta (Hibiscus sabdariffa) seeds were analysed for their proximal composition. Their protein (18.8-22.3%), fat (19.1-22.8%) and dietary fiber (39.5-42.6%) content were found to be high. The seeds were found to be a good source of minerals like phosphorus, magnesium and calcium. Their lysine and tryptophan contents were also high. Sulphur containing amino acids were limiting in this seed protein and the chemical score of mesta seed protein was 40 and 57 for AMV-2 and Bhimili-1 varieties respectively. Mesta seed oil is rich in unsaturate fatty acids (70%), of which linoleic acid constituted 44%. Weanling rats were fed with 10% mesta seed protein before and after cooking for 4 weeks. Food intake of animals receiving raw mesta seed diets was significantly lower than those receiving cooked mesta seed diets as well as the casein control diet. Protein and dry matter digestibilities of raw and cooked mesta seed diets were lower than that of casein control diet. Cooking improved the food intake, gain in body weight, dry matte and protein digestibility of mesta seed diets. PER and NPU of cooked mesta seed diets were significantly higher than the corresponding raw diets. These results indicate that cooked mesta seed protein is of relatively good quality.

Abstract
Green lentils are an increasingly popular food, but their effects on human colonic function and serum lipids have been studied little. Nine healthy males aged 19-38 y consumed for 3-wk periods a controlled Western diet and the same diet supplemented with 130 g dry lentils/d [which contained 11.8 g non-starch polysaccharide (NSP)] incorporated into loaves, cakes, and soups. Protein was equilibrated with soy protein isolate and carbohydrate with soft drinks. Radioopaque markers were used to calculate mean transit time (MTT) and to correct fecal weight for infrequency of bowel movements. Feces were collected throughout the study and blood was taken on 2 d at the end of each period. Lentils increased fecal weight from 131 +/- 12 g/d (means +/- SEM) to 189 +/- 17.4 g/d (44.9%) (P < 0.005). MTT was unchanged: 46 +/- 6 h for the control diet and 43 +/- 4 h for the lentils (NS). Fecal nitrogen was increased to 2.49 +/- 0.08 g/d for lentils compared with 1.74 +/- 0.09 g/d for the control diet (P < 0.001) and urine nitrogen decreased to 15.31 +/- 0.52 g/d with the lentils compared with 15.90 +/- 0.51 g/d for the control diet (P < 0.05); nitrogen balance was unaffected. Serum lipids were unchanged by addition of lentils to the diet. Green lentils were effective in increasing fecal weight and can therefore make a valuable contribution to a healthy diet.

Abstract
OBJECTIVE Reduced zinc intake has been reported when cholesterol-lowering diets are adopted. This study examined whether such diets compromise the zinc status of men with hypercholesterolemia. DESIGN Zinc intake on baseline 4-day food records and baseline plasma zinc levels were compared with intake and levels 12 and 24 months after subjects adopted a low-fat, increased-fiber diet. Dietary fiber intake, supplement use, alcohol intake, and exercise were evaluated as possible confounding variables. SUBJECTS Subjects were free-living men (n = 365) with baseline cholesterol level above the 75th percentile who were participants in a randomized trial comparing cholesterol-lowering diets with goals of 30%, 26%, 22%, and 18% of energy from fat and 300, 200, 100, and 100 mg cholesterol, respectively. STATISTICAL ANALYSES Data were analyzed using two sample t tests, multiple linear regression, and analysis of variance. RESULTS For all subjects combined, mean fat and cholesterol intakes approached or met the guidelines of the National Cholesterol Education Program step 2 diet, with approximately 30 g fiber per day. Density (mg/1,000 kcal) of zinc intake was unchanged from the baseline value. We found a slightly positive relationship between fiber and zinc intakes; no relationship between fiber intake and plasma zinc level; no effect of supplement use (category included all types of supplements), alcohol use, or level of exercise on plasma zinc levels; and no difference by dietary assignment in zinc intake or plasma zinc levels. APPLICATION Zinc status does not appear to be at risk in adult men who adopt cholesterol-lowering diets. These results may not be generalized to higher-risk population groups or situations in which dietary counseling is less comprehensive.

Abstract
Five ruminally and duodenally cannulated steers were used in a 5 x 5 Latin square design with a 2 x 2 + 1 arrangement of treatments to study the effects of barley variety and dietary barley content on digestive function in steers fed grass hay-based diets. Barley varities evaluated were Russell and Steptoe, which had bulk densities of 67.7 and 64.5 kg/hL, respectively. Supplemental treatments were as follows: corn, low Russell (Ru-lo), low Steptoe (St-lo), high Russell (Ru-hi), and high Steptoe (St-hi). Corn, Ru-lo, and St-lo were provided at 30% (DM basis) of grass hay-based diets, whereas Ru-hi and St-hi were provided at 35.5% of diet DM (equal starch content as the corn treatment). No treatment differences (P > .10) were observed for DMI, ruminal particulate passage rate, and NDF total tract digestibility. Ruminal DM and starch digestibility were greater (P < .01) for barley-containing diets than for the corn diet. Similarly, total tract DM (P < .10) and starch (P < .01) digestibility was greater for barley than for corn diets. Microbial protein and non-NH3 N flow to the small intestine were greater (P < .01) for the barley diets than for the corn diet. Starch intake (P < .01) and DM digestibility (P < .10) were greater for high- than for low-barley diets; however, differences due to barley variety were not observed (P > .10). In situ disappearance of grass hay NDF at 8 and 96 h of incubation was greater (P < .05) for barley than for corn diets. Rate of in situ disappearance of grain DM was greater (P < .01) for barley than for corn and for Russell than for Steptoe barley. Responses suggest that ruminal and total tract digestibility and protein flow to the small intestine can be increased with barley compared with corn as an energy supplement to grass hay-based diets.

Abstract
Dietary fiber has important health benefits in childhood, especially in promoting normal laxation. Currently, children consume amounts of dietary fiber that appear to be inadequate for optimal health promotion and disease prevention. It is prudent to recommend that children older than 2 years of age increase dietary fiber intake to an amount equal to or greater than their age + 5 g/day. According to the "age + 5" rule dietary fiber intake would increase from 8 g/day at age 3 years to 25 g/day by age 20 years. After age 20, dietary fiber levels of 25 to 35 g/day are recommended. Dietary fiber intake should be increased gradually in childhood by increasing consumption of a variety of fruits, vegetables, legumes, cereals, and other whole-grain products. Although very high fiber intake in childhood could have adverse effects, the potential health benefits of a moderate increase in dietary fiber substantially outweigh the possible risks, especially in highly industrialized countries such as the United States. A safe range of dietary fiber intake for children may be between age + 5 and age + 10 g/day. This range is considered safe even for children and adolescents with marginal intakes of some vitamins and minerals; should provide enough dietary fiber for normal laxation; and may provide enough added dietary fiber to help prevent chronic diseases.

Abstract
Even under the intensive concentrate feeding systems of ruminant animal production in the United States, forages continue to represent the single most important feed resource. Cell-wall concentration and digestibility limit the intake potential and energy availability of forage crops in beef and dairy production. Identification of cell-wall characteristics that should be targets of genetic modification is required if plant breeders and molecular biologists are to successfully improve forages for livestock feeding. As the forage plant cell develops, phenolic acids and lignin are deposited in the maturing cell wall in specific structural conformations, and in a strict developmental sequence. Lignin is the key element that limits cell-wall digestibility, but cross-linkage of lignin and wall polysaccharides by ferulic acid bridges may be a prerequisite for lignin to exert its affect. Lignin composition and p-coumaric acid in the wall are less likely to affect digestibility. Voluntary intake of forages is a critical determinant of animal performance and cell-wall concentration is negatively related to intake of ruminants consuming high-forage diets. Cell walls affect intake by contributing to ruminal fill. A simple model of cell-wall digestion and passage in which ruminal fill is a function of rates of digestion and passage, as well as the indigestible fraction of the cell-wall indicates that cell-wall concentration and rate of passage are the most critical parameters determining ruminal fill. Plant factors that affect rate of passage include those that affect particle size reduction by chewing and those that affect particle buoyancy in the rumen. The latter is primarily affected by 1) the ability of the particulate matter to retain gases, which is probably related to plant anatomy and rate of digestion of the plant tissue, and 2) the rate at which the gas is produced, which is affected by the potentially digestible fraction of the particulate matter and the rate of digestion of this fraction. Increasing rate of digestion should increase rate of passage by diminishing the gas produced and increasing density over time. A reduction in the indigestible cell-wall fraction is beneficial because this will decrease fill and increase digestibility. Animal production and economic benefits from reduced cell-wall concentration and increased digestibility are significant. Because of the high cell-wall concentration and large digestible cell-wall fraction of grasses, reduction in cell-wall concentration would probably be of greater value than improving digestibility in these species. Legumes represent the opposite situation and may benefit more from improvements in the digestibility of their cell walls.

Abstract
The possibility of producing bread from wheat (WF)/Breadfruit (BF), composite flour has been examined. Wheat flour was supplemented with up to 50% breadfruit flour. Chemical analysis of the breadfruit flour indicated a high starch content (80.9 +/- 0.9%), a fairly high crude fibre and ash contents (1.6 +/- 0.3; 4.2 +/- 0.3%) respectively and a low protein content (4.0 +/- 0.5%). Brabender amylograph pasting viscosity of the various flour and flour blends indicated that apart from the 100% WF, 10% BF/WF blends recorded the best pasting characteristics in terms of the starch stability, gelatinization index and set back values. While the 100% BF exhibited the poorest pasting characteristics. Physical characteristics indicated that only 100% WF and 10% BF/WF were free of cracks and crumbliness, 20% and 30% BF/WF had slight cracks, while others are dense and highly cracked. This was reflected on the panellist judgment during sensory evaluation. There was no significant difference at P < 0.05 between the control (100% WF) and the composite bread samples up to 30% level of breadfruit flour. Others differed significantly.

Abstract
Two experiments were conducted to evaluate the addition of single sources and blends of dietary fibers to cat diets. In Exp. 1, fermentability of selected fibrous substrates by cat fecal microflora was evaluated. After 24 h of fermentation, OM disappearance (OMD) and total short-chain fatty acid (SCFA) production were greatest (P < .05) for citrus pectin, guar gum, and locust bean gum, whereas Solka Floc resulted in the least (P < .05) OMD and total SCFA production. In Exp. 2, six diets were formulated based on results of Exp. 1. The highest (P < .05) digestibilities of DM and OM occurred when cats consumed the diet with no supplemental fiber, and the lowest (P < .05) digestibilities occurred when cats consumed the SCFA blend (SC) diet. Nitrogen and lipid digestibilities also were lowest (P < .05) for cats consuming the SC diet, whereas total dietary fiber (TDF) digestibility (P < .05) was greatest for cats consuming the beet pulp, SC, and combination blend diets. Fecal consistency scores were highest (P < .05) for cats consuming the SC diet, indicating liquid, unformed stools. In conclusion, the in vitro fermentation technique was reasonably accurate in predicting in vivo digestion of fiber. The SC diet, which contained the most fermentable fibers, severely decreased nutrient digestibility and resulted in poor stool characteristics. Diets that contain moderately fermentable fiber provide fermentation end products that may be important in maintaining the health of the gastrointestinal tract of the cat.

Abstract
The effect of Jew's mellow leaf powder and its water soluble viscous substance on cholesterol metabolism in rats fed a high cholesterol diet was examined. When compared to the controls, total serum and liver cholesterol concentrations were significantly decreased or tended to decrease in the groups given dry powder of fresh Jew's mellow leaves, dry powder purchased from the market or residual powder after extracting with ethanol, whereas no difference was observed in those given residual powder after extracting with water. There were significant increases or increasing tendencies in the fecal excretion of bile acids, total neutral sterols and cholesterol in those fed the experimental diets when compared to the control group. Rats fed a diet containing a water-soluble viscous substance (1.7%, about 1% as dietary fiber) obtained from the dry powder of Jew's mellow leaves showed significant decreases in serum and liver cholesterol concentrations and increases in fecal excretions of bile acids and neutral sterols. Based on the above, the component of dry powder of Jew's mellow leaves that is effective in decreasing serum and liver cholesterol concentrations was found to be a soluble dietary fiber, and the mechanism was assumed to be largely due to the increased excretion of bile acids and neutral sterols.
